Situated in Bangkok’s bustling Ratchaprasong shopping district and overlooking the revered Erawan Shrine, the Erawan Tea Room is a popular culinary spot for both locals and travelers. The restaurant is well-known for its Thai-inspired afternoon tea and authentic Thai cuisine, which has been recently enhanced with the use of premium, locally sourced produce and ingredients.

Unveiling Oxygen Dining Room: Where Gastronomy Meets Nature’s Embrace

Nestled within the sleek embrace of a modern glass and steel structure, Oxygen Dining Room at Cross Chiang Mai Riverside offers an enchanting setting that seamlessly merges contemporary design with the serenity of nature. Standing as sentinels of time, majestic 120-year-old tamarind trees flank one side of the restaurant, while the gentle waters of the Ping river grace the other. This award-winning culinary haven beckons to discerning diners seeking an elegant escape, where Thai fusion cuisine dances with a delightful twist of French technique.

Chef Wathit "Khem" Rungrojwattana’s journey into the culinary realm began during his childhood, when he stood side by side with his father in their humble Chinese restaurant in Nakhon Ratchasima. At the tender age of eight, while his peers carried textbooks in their backpacks, young Khem carried a hot wok, knives, and a cutting board, his unconventional school supplies. "Becoming a chef was not a decision I made; it was simply the path I was raised on. Growing up in the kitchen, helping my father, instilled in me a deep love for this craft. I owe my skills and passion to my first teachermy dad."

Equipped with a Bachelor's Degree in Management from Rajabhat University, Chef Khem embarked on a trans- formative journey that led him to train at the esteemed One-Michelin Star Het Gebaar Restaurant in Antwerp, Belgium, under the guidance of his inspiration, Chef Roger Van Damme. His culinary odyssey continued as he assumed increasingly demanding roles, starting as Commis Chef and Demi Chef at the prestigious Mandarin Oriental Dhara Dhevi Chiang Mai. Progressing further, he served as Sous Chef at Anantara Chiang Mai and U Nimman Chiangmai, until finally taking the helm of the kitchen at Cross Hotels & Resorts' captivating Cross Chiang Mai Riverside.

"For me, passion and skill must coexist harmoniously. I believe in an unyielding pursuit of improvement. I find joy in acquiring new knowledge, honing existing skills, and mastering the art of my craft. I thrive in a collaborative setting, as it allows me to learn from my peers and fellow chefs. A cooking philosophy, or rather, a food philosophy, acts as a compass that guides your approach to creating dishes. It influences your ingredient choices, favoring the purity of real foods over those laden with preservatives.”

"Embracing the Farm-to-Table and Head-to-Tail concepts holds great significance for me. By sourcing ingredients locally, we celebrate the efforts of the community and their devotion to quality. Exploring the neighborhood markets and discovering seasonal produce during different times of the year invigorates my creativity. We strive to integrate these locally sourced ingredients into our dishes, be it from the markets or nearby farms. Additionally, we place a strong emphasis on zero waste. Leftover vegetables find new life as flavorful stocks, and day-old bread takes on a new purpose as delectable breadcrumbs," Chef Khem shares, his eyes brimming with culinary fervor.

It is with great pride that Chef Khem extends a personal invitation to savor his signature dish, the captivating Sweet Corn Soup with Seared Scallops. This exquisite creation showcases the freshest corn sourced from the revered Royal Project, complemented by succulent scallops hailing from an esteemed organic farming collective. An epitome of culinary finesse, this menu item earned its rightful place in Thailand's Michelin Guide for 2022. Allow yourself to be transported on a gastronomic voyage as you indulge in this harmonious symphony of flavors, expertly prepared by Chef Khem himself, awaiting you at the esteemed Oxygen Dining Room, Cross Chiang Mai Riverside.
