Welcome The Holy month of Ramadan has always been special to me, having been born and bred in the UAE. The peace and calm, Suhoor gatherings, and decadent Ramadan specialties like kunafeh, are some of the aspects that have lured me in through the years. Being a true foodie, I love trying out Iftar buffets and menus in town, but even though indulging at restaurants is on top of my list, I enjoy home entertaining just as much. If you find yourself doing the same over an Iftar gathering, try our Modern Arabic recipes on page 38, for a contemporary twist to your spread. Now that summer is officially here it also means school’s out. While the children are away at camp during the day, redecorate their bedrooms to give it a fresh, contemporary look (page 20). Childproof your home Now that school’s almost out, take precaution and make sure your space is as child-friendly as possible
1. Try to use cordless window coverings wherever possible, and if you aren’t looking at replacing blinds anytime soon, hang window cords high out of their reach. Make sure their beds aren’t placed anywhere close to the window as well. 5. Cover your couch Forget about calling in upholsters, or scrubbing the couch to take off stains. Hummus di Pomodori Secchi con Focacia (Sundried tomato hummus with smoked paprika oil) Serves 6
45g paprika 200ml olive oil 750g chickpeas, cooked and soaked overnight 150g sundried tomatoes 40ml garlic, chopped 100g tahini paste 100ml lemon juice 50ml hot water 2 tsp salt and pepper, each Focaccia bread, to serve
FOR THE TOMATO SALSA
300g heirloom tomatoes, chopped 40g parsley, chopped 20g basil 150ml olive oil 100ml lemon juice Salt and pepper, to taste
1. Warm olive oil on the stove and when hot, stir in the paprika to make paprika oil. 2. Blend the chickpeas with the sundried tomatoes, garlic, tahini, lemon juice, water and seasoning. Gradually mix in the paprika oil, setting a little aside for garnish. 3. Combine all the tomato salsa ingredients and check seasoning. 4. In a bowl, place the hummus and make a well in the centre. Spoon the tomato salsa into the well, top with basil, and drizzle the remaining paprika oil all over. Serve with warm focaccia bread.

Lobster spaghetti with fragrant Bzar spices Serves 6
500g spaghetti 6 whole lobsters 500ml bisque seafood stock (store-bought) 800ml tomato sauce (Pomodoro)
50g fresh basil, chopped 25g garlic, chopped 50ml extra virgin olive oil 30g parsley, chopped
1. Cut the lobster in half length-wise. Take out the meat from the shell and roughly chop into cubes. Set the head and legs aside, and roast the shells in a pan with olive oil. 2. Blend all the spice mix ingredients, except the ginger, turmeric and liquids (lemon juice and oil). Gradually add in the ginger and turmeric, and mix well. 3. Mix a tablespoon of the spice mix with the lemon juice and olive oil. 4. SautĂŠ garlic in a heated pan with olive oil. Add the chopped lobster and cook with the parsley, dry bzar mix and salt and pepper. Remove the lobster chunks and set aside. bhomes.com

In the same pan, add the bisque and tomato sauce (keeping 2 tbsp aside of each), followed by the spaghetti. Season and simmer for a few mins. Add half of the cooked lobster back into this pan and simmer. 5. Mix the remaining half of the lobster meat in a pan with the leftover bisque and pomodoro sauce. Spoon the mixture into the roasted shell and garnish with basil. 6. Add the head and the legs to the pan with the pasta and drizzle a splash of extra virgin olive oil through the sauce. 7. Place a portion of spaghetti into a bowl, and top with the lobster shell. Spoon over the sauce and garnish with basil. June 2015

When they grow up we will no doubt need to upgrade but for now the open-plan living room and dining room and bedrooms are more than large enough. As a young family everything is very convenient for us; we have shops, cafés and restaurants within the complex, and in the wider Business Bay area; it’s close to Amir’s job as recruitment director in DIFC.
