One to watch

Realize your dream designs Do you think you could give Nada Debs a run for her money? If you’ve got a sketchbook of furniture designs scribbled away in your head then help is at hand to realize those ideas. A new bespoke furniture service has launched in the city, looking to create unique pieces in order to make clients’ homes truly individual, down to the last door handle. “Part of KnightsWood’s charm is that customers are able to design

their own bespoke furniture,” says managing director Simon Crossland. “By offering this additional service we can both see and appreciate how talented and creative the residents of Dubai can be.” Despite its fledging status the luxury furniture and joinery business is already equipped with a staggering 400+ employees, operating in Al Quoz and Dubai Investment Park. After the design team creates

the concept a crew of highly skilled carpenters bring the furniture and fittings to life, finishing details by hand, before they’re carefully installed in their new home. When did surfaces get so interesting? While my childhood was spent picking cheap anaglypta out from underneath my fingernails, I’m now surrounded by walls embellished with beauty, surfaces that ripple with innovation and floors that glitter with gold, quite literally. I’m standing in the office of Kens and Company, in Business Bay, which is packed with swatches, tiles and samples from designers dotted around the world. Kens Gourgue, the company director, describes himself as the middleman between the client and the artists and designers he’s affiliated with. Because of his relationship with them, he can connect a client in the Middle East to glass artists in America, metalworkers in Canada and carpet makers in Europe, holding many solutions in a hand that stretches around the world. “At the moment I’m working on a project where the client is in Kazakhstan, the interior designer and myself are here, and the solution is in Canada. In this instance, the project requires a Japanese feel so I served as an introduction to Gorman Studios, a Canadian company that specialises in glass surfaces. I’ve asked them to create some samples with chinoiserie and references to Turkey because the client is Turkish. “It’s much easier for everyone to have me in the middle making sure we’re all on the same page. I stay true to what the client wants by suggesting the materials, style and colours and working with the designer and the supplier to create samples with different colourways or patterns.” Kens and Company receives requests for all sorts of finishes and for all sorts of projects – which is not surprising for the Middle East, a market renowned for extrovert architecture, flamboyance and an abundant use of marble and gold. What has been a memorable project? “A client in Abu Dhabi asked for travertine tiles filled with gold glitter, to use on the walls and the floors,” he recalls, with a smile. I look dubiously at him – this does not sound sleek and sophisticated. “Gold glitter actually goes very well with bhomes.com

the warm colours of travertine, it can look very subtle and it’s durable,” he assures me, while reaching for the samples. I’m surprised – the colours really do complement each other and it’s tastefully done, with tiny specks of glitter covering small squares of travertine. Another surprise was Mihaela Damian’s signature pearl panels. Kens pulls out a slab of lightweight concrete adorned with large pearl balls, measuring about an inch wide. Ever the sceptic, I tell him I can’t visualise how this could be used. In many ways, as it turns out, including stunning art, hidden doors and floating headboards. Kens points to photographs from the

Romanian artist that display her pearl panels in situation: a shower of white pearls glow as they cascade down a bathroom partition; a painting of an African woman comes to life on a floating bedroom headboard, where her intricate headdress and necklaces are bejewelled with bronze balls; meanwhile, a library door is secretly hidden behind a galloping horse. “We work with a lot of artists but nowadays they are willing to customise where they can to suit the client’s requests,” he concludes. “Not only is this more creative for them but the client can achieve what they want, no matter how challenging it may seem.” kensandcompany.com September 2014

Where are you from? I’m Indian and have been in Dubai for almost three decades. It has been wonderful to watch the transformation of Dubai and the amalgamation of Eastern and Western cultures here.

Where do you live? I live in an airy four-bedroom apartment overlooking the beautiful Deira Creek. I live with my wife Maleka; our daughters are married and our sons are following their careers around the world.

Sum up your style: My home is a mix of classic and modern styles. We reflect various cultures in our space.

What inspires this? My travels and all the new experiences along the way. I enthusiastically enjoy exploring the world and learning about the different cultures I come across.

Ask the Italian experts

“My mother is Italian and I’d love to know how to make pasta from scratch.” Aldo Orsini Try these recipes, says Francesco Guarracino, executive chef at Bice Mare There are several variations of making pasta, for instance:

1. Classic fresh pasta, with the ingredients of 1kg ‘00’ flour and 10 whole eggs. This is the perfect recipe for filling pasta like ravioli, tortellini, cappelletti, cappellacci and lasagna sheets, as the pasta needs to be elastic.

2. My favourite recipe, with 1kg ‘00’ flour and 40 egg yolks. This is very rich in flavour and has a good texture that is great for long pasta like tagliatelle, pappardelle, fettuccine and tagliolini. 3. Fresh pasta with different flavours: Start with the classic recipe and then

add 100 grams of flavouring – try tomato paste, spinach puree, pumpkin squash puree or squid ink. Then reduce the initial 1kg by 100 grams. To make these pasta types follow this method: first, place the flour on a table. Make a well in the centre and break the eggs into it. Beat the eggs with a fork until smooth, and then incorporate the flour a little at a time until everything is combined. If you’re adding a flavour mix it in with the flour and eggs. Work it for 15 minutes – pulling and squashing it again and again – until you have a smooth lump of dough. Cover the dough and allow it to rest for about 30 minutes. Dust your work surface with some ‘00’ flour. Take a lump of pasta dough the size of a lemon and press it out flat

with your finger. Set the pasta machine to its widest setting and roll the lump of pasta dough through it. Lightly dust the pasta with flour if it sticks. Click the machine down a setting and roll the pasta dough through it again. Fold the pasta in half, click the pasta machine back up to the widest setting and roll the dough through once more. Work it through all the settings on the machine, from the widest down to the narrowest. Once you’ve rolled your pasta you need to shape it straight away for filling pasta – don’t leave it more than a minute or two before shaping it. You can lay the pasta over a damp tea towel to stop it from drying. For long pasta it’s better to let the pasta dry for one or two hours before cutting it into strips as it will cook better this way.

Regarding sofas, Italy is geographically well suited to source materials like leather from within Europe or Argentina. The quality of hides depends on the source. Fewer scars are found on a European source so the treatment done is to the minimum. This ensures

that the leather is softer to touch and richer in appearance. Treated leather has excellent durability so it is quite commonly used. In addition, Italian tanners are known to be the best. Fabrics created in Italy adhere to many mandatory standards, such as colourfastness to light, Martindale Abrasion (a method that tests the abrasion resistance and pilling properties of textiles) and cigarette tests – these are a few quality assurance tests to look for. The product’s fabric composition is very important as wool will not work well here in the Gulf. Furniture is similar to capital investment. When buying something that is a relatively high investment, one must ensure that the brand itself is trustworthy. A brand that offers warrantees is one that says,

“we are here for you”, and conveys confidence in the product. You may want to look at the after-sales support as well as certain manufacturing processes followed by the brand. ISO 9001 for processes and ISO 14001 for environmental protection are important certifications to consider. Other certifications may range from recycling water and other materials, reduced CO² emissions and non-use of child labour. A reputable company will adhere to most standards. Furniture has now become dynamic in its usage. Built-in music, screens, massage, reclining, temperature control and smart technology can feature in today’s innovative sofas. Lastly, different people have different needs. Look for a sofa that satisfies your preferences for style, comfort, material, ethics, warrantees or technology.

What’s en vogue Lina Helmer is head of design at En Vogue, a new luxury furniture store that opened in Jumeirah last month. Here, she reveals her top ten hits for the home this autumn/winter:

been a lot of beige and taupe in Dubai for a number of years but grey and charcoal will become the new neutral colours. They’re warm and add depth to a room, while beige has become a little boring. Black and white has been a popular micro trend for a while and we saw a lot of monochrome at Milan’s Salone del Mobile in April as well as art photography. These will focus on poolside pictures, which are perfect for homes in the UAE. Meanwhile, furniture will be inspired by the mid-century modern and art deco movements. We’ll see Mediterranean blue pair with crisp white, a look that’s quite Grecian and very fresh. Cobalt blue will be big next year, also teamed with white, as well as pastel colours from the 1980s and olive green. There will be a real mix of styles and periods, and the 1940s’ and 1950s’ looks that we’ve seen on the catwalks will influence home trends, too.

Studio Job for Moooi

The call of the wild Milan’s Salone Internazionale del Mobile offers an annual indicator of what will become fashionable for homeware, furniture, textiles, prints and patterns, materials, finishes and colours. Lina recalls black and white from her visit to the show in April, while BH Magazine touted overstatement and Africa in its post-show trend report. At the exhibition Moooi showcased a number of new collaborations from its Unexpected Welcome tour, which reflected five continents around the world. The L’Afrique carpet, designed by Studio Job for Moooi, is a colourful

swirl of African iconography, with tribal masks and deadly snakes swallowed up by dense jungle foliage. The husband-and-wife team behind Studio Job describe the carpet as a place to hide away, into the tropical jungle of your subconscious, with its intricate ramifications of feelings, fears and longing – a place where anything can happen. Since April the call of the wild has roared louder and louder. Over the summer we saw exotic

jungle themes sporting bright palm leaves and pop-art parrots. This has matured into animal prints, leather hides and safari colours. This sense of adventure is captured in the new autumn/winter collections launched by the likes of shopping-mall favourites Crate and Barrel and Zara Home. Tribal patterns and earthy colours dance across textiles, on cushions, rugs, throws and napkins. Crate and Barrel keeps wood untreated for a natural look that’s raw and tactile. Jungle explorers will be attracted to the baskets woven from plant fibres and rope at Zara Home, and the vases sporting giraffe patterns and leopard prints.

Damask is back In a recent interview with BH Magazine, Ethan Allen’s design team manager George Foster hinted at damask drapes making a comeback this autumn. Since then we haven’t been able to get away from the Byzantine weaves of flowers and fauna delicately woven into damask silks and satins. Wallpaper specialist Elanbach has released a new collection called Pardalote Damask 2014 as part of its eclectic Bohemia range. We can expect damask’s comeback to mix traditional and contemporary aesthetics with aplomb – in line with the new style of eclecticism that merges periods and styles to create a look that’s modern-antique. While damask patterns are traditionally found on wall coverings, this year they’ll also pop up on unexpected surfaces. Villeroy & Boch’s contemporary Memento bathroom collection has undergone a recent makeover, with the Memento Premium range sporting platinum damask-inspired patterns on its sinks – incorporating the trend for metallics, too. Taking this one step further is the flamboyant shoe-shaped bathtub from Sicis. In line with the overstatement micro-trend witnessed in Milan, the Audrey tub takes bathing to new heights. Its glass mosaic tiles have been arranged to form the outline of a large fern leaf, a signature damask motif.


The big micro-trends On the other side of the drawing board lie the micro trends – used in small quantities they’ll have a big impact in the home. Katherine Stealey Tranter, founder and interior designer at KST Interiors in Business Bay, picks her favourite micro trends to watch out for: Tartan This is the most surprising trend to come here from Europe. Colourways are either bright and clashing or neutral. The traditional wool weave isn’t ideal for the UAE but it can be incorporated through cushions, throws and a feature fabric used on small armchairs and poufs. Warwick Fabrics from Australia has a good range of non-scratchy tartans.

Indigo The hot colour from the summer, blue, is still trending in all its shades, but going into the cooler months the inky tones of Indigo will start to take a leading role. Neons Bright colours are still of the moment but instead of using multiple colours to clash you should use just one or two and pair with dark grey, which will complement the acidity of the neon tones. Think of this when choosing your bright tartans! Chevron A huge pattern in all the new fabric collections (see Osborne and Little, Designers Guild). No longer just two-tone it’s become much more

playful by using several colours and integrating stripes. A great and easy way to introduce both colour and pattern to your home. Ethnic prints This is still hanging in there as a design trend for A/W but with more fusion and hints of ethnicity rather than all-out tribal. Go for dark timbers, natural woods and kilim rugs. Natural neutrals Relaxed cottage meets the Hamptons – a look that’s more refined than shabby chic. Think painted plantation shutters, worn leathers and neutral colours with interest built up through layers of texture rather than colour.

However, this is changing. With more and more expats arriving that are used to buying with one click, e-boutiques are popping up to rival their physical counterparts.

The cookware specialist has an existing store presence in the malls where home cooks can buy everything they need for the kitchen. How has its online arm fared, one year later? “We have experienced healthy growth month after month,â€? reports Wakami Saab, deputy managing director at Tavola. “The main objective of tavolashop.com is to enrich our existing and new customers’ experiences. Although homeware products are not as fast moving as electronics, for example, we believe there is a customer base out there who appreciates having the option of purchasing homeware products online and having them delivered right to their homes.â€? Spicy lamb cutlets with herb labneh Serves: 10

30 (three each) lamb cutlets For the marinade: 60g ground cumin 60g smoked paprika 40g oregano 12g rosemary 40g garlic powder 12g shichimi pepper 80g Syrian chilli paste 12g ground coriander seed 12g ground ginger 12g ground cinnamon 80g soft brown sugar 20g Malden sea salt 4g turmeric powder 360ml extra virgin olive oil 120ml freshly squeezed lemon juice For the pickled vegetables: 30 baby carrots 20 baby onions 10 Lebanese cucumbers 20 black olives

1x30cm konbu 150g castor sugar 20g salt 20g black peppercorns 20g coriander seeds 200g salt 500ml rice vinegar For the herb labneh: 300g labneh 1/2 cup mint 1/2 cup coriander Soak the carrot batons and baby onions in a litre of water mixed with 200g salt. Remove the vegetables after 30 minutes and refresh under cold running water for about 15 minutes. Bring another litre of water, with table salt, vinegar, sugar, konbu, coriander seeds and pepper corns, to a simmer until the sugar has

dissolved. Then allow to cool. Marinate the Lebanese cucumbers and olives plus the salted baby onions and carrots in this pickling liquid for at least 72 hours. Finely chop the fresh herbs. Add these and the rest of the ingredients into a robot chef and blend to a paste. Trim and clean the lamb cutlets and marinade in this paste for 18 hours. Mix the labneh with freshly chopped mint and coriander. Wipe off all the marinade from the lamb cutlets. Grill depending on your preference for rare- or medium-done meat. To serve, arrange three cutlets on a warm plate with the mixed pickles and mint labneh.

Market Watch Dubai’s luxury property market continues to perform, reports Al Barari’s Dereck Hoogenkamp

Dubai has officially received the status of best performing luxury real estate in the Middle East, according to recent research by Knight Frank. We are now seeing buyers seeking more than just an upmarket home. They are becoming more discerning and taking into consideration factors such as integrity

of the product, customisation and enhanced quality of life. Luxury developments such as those at Al Barari are reflective of this positive upturn in the market: sales show that exclusive properties are still in demand and Al Barari witnessed instant success with the sell-out launch of two new developments. Feedback has shown that exclusive design and high-quality finishes are the main attractions for ultra-highnet-worth individuals. What makes Dubai’s luxury property market even more attractive to investors is that it continues to remain affordable in comparison to key global cities, as reported recently by Knight Frank’s Wealth Report 2014. Few modern cities in the world can offer high-quality property priced so reasonably. Property prices remain low compared to international standards and other similar trading hubs in the world. Additionally, the value for money in Dubai still remains far

greater than London or New York. As a result, the market is now reasserting itself on both a regional and global stage. Move to… Dubai Silicon Oasis DSO is like a quiet village, says Better Homes’ Wafaa Ghannam Ten years after Dubai Silicon Oasis Authority was set up 90% of the area is occupied and it’s become like a little village community. Just three years ago it was still half empty so demand has really grown in recent years. The community, which covers 7.2 square kilometres by the junction of Al Ain Road and Sheikh Mohammad Bin Zayed Road, has everything residents need. There are shopping areas, supermarkets, parking, nurseries, schools and the prestigious Zayed University. While there is no mall yet Mirdif City Centre mall and Dubai Outlet Mall are a short drive away. Dog owners find it easy to walk their pets around the parks in the complex, while children can enjoy the play areas there. Because of this built-in infrastructure families are very happy there. DSO is also a free zone with many high-tech companies so professionals tend to live and work in the area. You can also find a lot of Arabic students from Zayed

University renting studios and onebed apartments. It’s very convenient for people living and working there because it’s five minutes to the airport, Mirdif and the university. And while the Metro has not reached DSO the roads are finished, there’s a bus station and you can find taxis really easily – it’s not like you are stranded in the desert. However, its close proximity to unspoilt desertland is one of the reasons I like it so much. When you’re there the community feels very open as there are no tall towers crowding the view, which can stretch for miles depending on where you are. Many residences look out over land that has not yet been built on which is quite a novelty for Dubai. There are two villa communities, Cedre Villas and Semmer Villas, with three, four and five bedrooms, either private or shared swimming pools, and a good BUA. Both communities are in high demand and for the most

part you’ll only find four-beds on the market, with rents starting from AED210,000. They’re popular because they’re in very convenient locations, close to shops and the bus station. There are apartments in Silicon Residence and Silicon Plaza, ranging from studio size to four bedrooms. The buildings are low-rise with no more than ten floors on average – perhaps just one or two with more. The finishes and facilities are excellent, with swimming pools, gyms, shops and plenty of parking space nearby. Prices are good if you compare them with Downtown, which is only 15 to 20 minutes away. You can still find a studio apartment for AED50,000, which is equal to International City but with better quality finishes and a nicer atmosphere. A one-bed apartment will lease from AED65,000, a twobed from AED70,000, a three-bed from AED80,000 and a four-bed from AED150,000.
