Desert Palm Public Relations Director Sophie Toh shows us inside her beautiful home

Who do you share your villa with? It’s just myself, my husband Steve, our dog (a Teacup Pomeranian) and Baby − our house keeper. We have three bedrooms in the villa in total, one of which we decided to turn into a study. Why did you choose to live in this area? We were always coming here to visit friends and while driving back we always thought; why don’t we just live here? We’ve been in Dubai for two years now and we reached a stage where we wanted more space. I think it’s fun to live in busier areas when you first arrive in the city, but we felt as though we didn’t need to do as much sightseeing anymore because we’d already seen it all. What’s so special about Desert Palm? It’s the space. It doesn’t feel like anywhere

else in Dubai. It’s similar to The Meadows but you have the Desert Palm Hotel with its polo pitches and infinity pool which residents can use. We don’t play polo ourselves (I’ve only ever been on a horse once!) but we watch the games enthusiastically. What I also like about the community is that when you walk in, it’s instantly relaxing; you come here after work and you immediately feel at home. I was travelling twice a week before I moved here and now feel as though I’m living a proper life rather than out of a suitcase. I also love the evenings; it’s so quiet, you might hear a dog or a bird outside but otherwise it’s so peaceful – you can’t even hear a road. What are your neighbours like? Most people that live here are Western expats, mainly American, Australian and

British, and it’s a very family orientated area – everyone has pets and it has quite a laid back feel. There’s a good sense of community too – we have little parties and barbecues and we always go around to other people’s gardens. The neighbours here help you out, too. If, for example, your maid wanted to leave, people will say ‘oh I can help you with that’, or if you wanted someone to look after your dog there would be plenty of offers, it’s all very community minded. People are kind enough to check on your plants, too, little things like that. With so many families living here, is there a good school nearby? Yes, Repton is located just down the road. It’s a fee paying school and I hear it’s meant to be the best school in Dubai. Our friend’s kids go there and it’s literally only a fiveminute drive away.

What other facilities are there? There is a shop that sells basic groceries and a café called Epicure and a restaurant called Rare, both of which are based in the hotel. Then there’s the Desert Palm golf course which my husband constantly plays on. There is a gym in the hotel, too, but you have to pay for it, and that’s probably the one criticism that I have about this place. Residents do get discounts at the hotel, though, and they do tend to look after you when you’re there. How do you spend your leisure time? I’m currently in the unfortunate position of having to work six days a week and my husband works on Fridays, so Saturday is our one day together. We often hang out in the garden at home and do all of the usual Dubai activities; go out to dinner, go to the mall, the cinema and I sometimes try and

play golf – my husband plays such a crazy amount so I have to try and keep up! Talk me through your interiors; we love the living room’s nautical theme… Yes, I designed the chairs myself! I have always worked with property developers, interior designers and architects so that became a starting point for my own designs. I really like the nautical look, it’s a very simple and clean style. I’m sure many husbands may want something a bit more masculine, but luckily mine lets me go with my preferred style. I take inspiration from the other places too – we went to Cipriani in Abu Dhabi and copied their blue and white curtains. I use a fab furniture design company in Al Quoz called Everest Furniture – they recreate everything, down to the small details. For example, I designed a chair in our bedroom for my

husband. His birthday is on Valentine’s Day so it was a joint gift for both occasions. I had his initials woven on to it and it took around two weeks to make. Tell us about the artworks you have on your walls. The paintings you see were done by an Irish friend of my husband called Terry Bradley, who he met when he lived in Northern Ireland. The one of the woman is called Girl with Love Tattoo. He’s really getting quite big as an artist now and I love this piece. You’ve got some interesting Far Eastern twists in your home too… My husband is actually Chinese Malaysian and we both love this Oriental-style red side table, we bought it in the Marina. I’m even considering painting the wall grey as I think that would work nicely with it. The vases above it are great, too, one of them is, believe it or not, from a pound shop. I quite like the Ralph Lauren look, which definitely has an Oriental influence. Can you name your favourite room in the villa? I really like the lounge for the table we have there and the sofas are so comfy

for watching TV. My favourite items of all have to be the club chairs – though they’re probably not very practical in white. During social gatherings the garden is the real nerve centre of the house; we have a really cool barbecue out there (we put it together ourselves). It has hickory smoke. As someone who has only rented property in Dubai, what advice would you give to new would-be lessees? Don’t just consider the property. You need to ask extra questions: do the lifts work? Is the gym busy when you want to use it before or after work? Is the pool always busy? Is there a coffee shop nearby? (Unless there is a Starbucks around me I don’t feel very settled!) Does it fit your agenda or your way of life? Living in Dubai you get used to having so many extras but you need to be sure they work for you. Also, as everywhere can appear very similar you need to pick out the good developments, such as those that include parking. Perhaps you can’t park very easily, or may need an extra bay for guests. These are all things that you don’t need to consider in other cities like London, where you literally rent the house itself and that’s it, but here you need to think through every aspect carefully before signing on the dotted line.

Love Thy Neighbourhood

All you need to know about life in the city’s cluster of boutique villas possible to combine the two, by watching matches in the distance from the coolness of the infinity pool. The hotel’s squash courts, heath spa, hair salon and gym are all open to residents at an extra fee and other onsite services include dry cleaning and currency exchange. The vast open area offers ample opportunity to go desert exploring for drivers who own a 4x4. Take an afternoon to go over the dunes and watch the uninterrupted sunset set on the horizon.

Schooling

Renting and buying Attracting young affluent residents, many with young families, there is only one option in Desert Palm: renting. Enter the gated, green community and you’ll find a collection of low-rise, sandy-coloured villas each with sizeable gardens and private parking. The compound is set on the Al Awir Road heading towards Hatta, just past Dragon Mart and International City. Just 20 minutes from central Dubai, but set away from the hustle and bustle of the city centre, it makes for a secure, quiet and relaxing area in which to unwind after a busy day at work.

Shopping and a bite The neighbouring Desert Palm hotel (desertpalm.peraquum.com, pictured) includes the steakhouse Rare (04 323 8888) which serves a meat-heavy menu including Wagyu and Kobe beef and succulent game cuts. In addition, there’s the Epicure café (04 602 9333) which includes a deli, bakery, patisserie and July 2011

serves a great afternoon tea on the lounge terrace during the winter months. Alternatively, sit inside the café’s cool interior all year round at chunky, organic wooden tables while enjoying a wrap or coffee. At the hotel you’ll also find a lounge (with a full-sized pool table) where you can take your pick from over 500 beverages. Though shopping is scarce in the area, Desert Palm’s secluded location is all part of its attraction. You’ll find the nearest collection of shops at Dragon Mart, International City (04 368 7070) where a 1.2km stretch reveals some 3,000 markets, shopping areas, showrooms and enterprises dealing in all kinds of products made in China (which, let’s face it, is pretty much everything). Inside you can get lost for hours and find incredible bargains too.

Leisure time At the Desert Palm Hotel is an infinity pool that’s open to residents as well as a 150 acre polo estate (04 323 8888) with stables and a riding school. It’s actually

Pet Proof Your House Thinking of buying a furry friend for the family? The sweltering heat means your new pet will be inside more than ever. Jade Bremner looks at how to keep animal and home in tip top condition this summer... Keep him hydrated This season animals will be thirstier than any other time of year and the water you leave out will evaporate fast. To avoid leaving your pet with an empty water bowl, invest in a nifty gadget like an automatic water fountain or pet ‘waterer’ which filters tap water and tops up bowls automatically – just remember to refill the main tank when it’s running low.

Rid dangerous plants If you’re bringing home a new pet for the first time you need to be sure that no potentially harmful substances are within their reach. Animals can sniff out things even your toddler can’t dig out – and curious puppies are particularly vulnerable to this. Be aware of harmful house plants that are not poisonous to humans but are to your pet. These include dieffenbachia (or dumb cane), philodendron and caladium – to name a few. Hire a pet sitter With less time to go outside in the summer season, be sure to set aside time to walk your dog during cool mornings or evenings or employ a pet sitter to come and spend time with your pet while you’re out. radio on. Avoid loud head-banging music or action films with explosives which will distress your pet and instead try a chat show: listening to voices can calm your pet and make them think there are people in the house.

Put a lid on it Pests breed in the heat so to avoid pet food going off (and to prevent creepy critters roaming around your cupboards) store any dry food in air tight containers and wet food in sealed containers in the fridge. (Try your local Al Maya supermarket or Carrefour in Mall of the Emirates). Another lid to bear in mind is the toilet − keep it down! Your fluffy friends will use the loo as a source of water and potentially pick up diseases while they’re at it.

Clear away chocolate An innocent bag of Maltesers, for example, is actually poisonous for dogs; signs of chocolate poisoning include rapid heartbeat, muscle tremors, vomiting, and seizures. Without treatment, the dog can lapse into a coma and die. Some pooches are also allergic to macadamia nuts which can prove fatal. Take the same approach to medicines, from garden potions like snail bait, ant and rodent poisons, insecticides, and herbicides to medicines such as aspirin and cold and flu remedies. Use child safety locks on cupboards and doors to prevent them tucking in to packets.

Prevent chewing and scratching Hot and bothered pets may get agitated over the next couple of months: while cats could scratch your furniture to pieces, dogs may chew any items you leave on the floor. Avoid this by rubbing cat nip on a scratching post for your feline friend, making it more attracted to the post than your table leg. Alternatively, put double sided tape on your furniture – cats hate

Banish bacteria If you’ve got kids who may be crawling on the floor with your pets, or pets who are prone to jumping on work surfaces, you’ll need a specialist cleaning product to rid unwanted germs. Fruity Carrot salad Fruttato carota insalata Serves 4 carrots • 500g 1 Granny apple • Juice of oneSmith lemon • 40g pumpkin seeds • 2g chopped garlic • 100g raisins • 6 chopped chives • 50ml extra virgin olive oil • 1. Grate the carrots and apple and add the two together. 2. Mix in the lemon juice, pumpkin seeds, garlic, raisins, chives and olive oil. 3. Mix together thoroughly and season with salt to taste.

Vegetable Cous Cous salad Insalata di cous cous Serves 4 cous cous • 400g 200g vine tomatoes • 1 medium cucumber • 200g red onion • 2 celery stalks • 6 chives • Handful of mint leaves • Small bunch of flat leaf parsley • Juice of one lemon • 100ml extra virgin olive oil • 300ml boiling water • Pinch of salt • Pinch of pepper • 1. Place the cous cous into a very large bowl and pour boiling water over the top. Next add the extra virgin olive oil and lemon juice, stir, and allow the mixture to swell. 2. Meanwhile dice the tomatoes, (removing and discarding the seeds as you do), red onion, cucumber and celery into 1cm size pieces. 3. Add the vegetables to the cous cous and stir in well. 4. Finely chop the parsley, chives and mint leaves and add to the cous cous mix, seasoning to taste. 5. Allow the cous cous to sit for two hours before serving (it should be soft to the bite when ready). 6. Adjust the flavour with more lemon juice if required.

240g squid tubes, cleaned and prepared 240g cleaned, uncooked prawns 650g cleaned, uncooked black mussels 50ml of non-alcoholic white wine 200ml extra virgin olive oil 2 lemons Juice of 2 more lemons 2 red chills, seedless and sliced 1 garlic clove, sliced 200g frisee lettuce 120g radicchio lettuce Parsley, chopped to garnish One bundle of parsley stalks, bay leaves and thyme Salt to taste 1. Cut the squid into rings, just under one centimeter in width. 2. Fill a large pan with water, cut the two lemons in half and add to the pan. 3. Add the ‘bouquet garni’ – a tied bundle of parsley stalks, bay leaves and thyme – and bring to the boil. Poach the squid rings until cooked (this will take just one minute). Remove the squid rings and next poach the prawns for two minutes. Remove the prawns and set aside with the squid rings. 4. Place the mussels in a large pan with salt, pepper and the non-alcoholic white wine. Cover and cook until the mussels open. Allow the mussels to cool and

remove them from their shell, (half the mussels should be completely removed from their shell and the other half should be left with one side of the shell). 5. Put all the cooked seafood in a mixing bowl and add the extra virgin olive oil, juice from two lemons, sliced chills, sliced garlic and seasoning. 6. Add the frisee and radicchio lettuce and gently mix everything together. 7. Divide the salad between four plates and place a couple of prawns and mussels still in their shells sitting on top. Garnish with chopped parsley and serve.

4. For the dressing, add the juice of one lemon to the orange juice you have left in the mixing bowl. 5. Whisk in the in the extra virgin olive oil and add salt and pepper to taste. 6. Finely slice the fennel bulbs, cut the black olives in half (lengthways) and remove the seeds from the chilies before finely dicing them. 7. Place the above vegetables in another mixing bowl and add the orange segments. Lastly, add the dressing and mix well.

• 22 oranges fennel bulbs • Juice of one lemon • 150g black olives • 15g red chilies • 100ml extra virgin olive oil • Pinch of salt • Pinch of pepper • 1. Remove a slice from the top and bottom of each orange so that you can see its flesh and next cut away the skin, slice by slice, working your way around the fruit. 2. Remove any visible white pith. 3. Cut out the segments one by one over a mixing bowl (to catch the juice) and ensure that no white bits are left on any of the segments.
