ISLAND LIFE One painter captures Greece in all its glory at Etihad Towers

/7 A quick glance at a Takis Moraitis painting is enough to make you pack a bag and head to the Greek Cyclades. From the azure waters and whitewashed buildings to the cliff tops and serene bays, the fusion of colour and light in Moraitis’ work captures island life beautifully. From his studio in Plaka, Athens – an old building he is currently renovating to create an art space for the community – Moraitis uses his palette and easel to highlight the beauty of his home country: a simple olive tree in full bloom, an empty boat floating carelessly across the Mediterranean Sea, a family meandering along the beach. Dreamy and romantic, there’s little surprise that the Kefalonia-born painter’s pieces are sought after the world over, with his work adorning the walls of palaces in Cyprus, the Middle East and beyond. SHOP Bulgari’s latest accessories collection tells a fashionable story through craftsmanship and colour. Aptly named ‘A Mediterranean Journey’, the collection blends the brand’s Italian heritage with luxury in elegant, timeless fashion. The structure of the handbags – from shoulder to clutch – is classic with a modern twist, while the colour palette is made up of a series of sunset and classic hues – black and white representative of Rome, aqua and pastel nuances for Capri and the Aegean Sea. Take note
The pen is an instrument that has floated through the centuries: from quill to ink brush, moving onto the high-tech writing instruments that we see today. And while most writing these days is done on the computer, there are a significant number of traditionalists who prefer a pen in their hand to tapping a keyboard. It is the latter faction who will be pleasantly surprised with Montblanc’s latest range. More specifically, its new Starwalker Ultimate Carbon Collection. The collection, comprising a classic
ballpoint pen, fineliner and fountain pen, is made from carbon fibre, delivering a lighter yet robust writing experience to the user. The pen’s fittings are ruthenium-plated, a rare transition metal of the platinum group, while the gold nib is also plated with ruthenium and engraved with the Montblanc emblem. And with the 23rd Abu Dhabi International Book Fair taking place this April and May, it’s time to put pen to paper.

When Alber Elbaz sent his models careering down the runway in Lanvin’s spring/summer 2014 collection, he was taking a huge, very sparkly, risk. Thankfully, it paid off. 5 goes backstage to explore the label’s new, much edgier side to fashion
The collection Go big or go home is a phrase often used when encouraging somebody to reach his or her full potential. And Alber Elbaz certainly went big. Over the top in fact. His daring use of metallics – gold, bronze, raspberry, peach – in all manner of fabrics – tulles, lamé, silk, tweeds – made for a kaleidoscopic addition to the runway schedule. A double-breasted biker in gold leopard, for example, appeared fashionably next to a diamante tulle skirt, bronze boiler suit or twenties-inspired dress. “We all need something that sparkles,” said Alber Elbaz at the show’s opening. And sparkle it did – all the way to the top of 5’s wish list.
14 \ The bags This season’s bags add further pizzazz to Elbaz’s collection. First up is the Lanvin Beyond collection, encompassing a new take on the original 1950s pochette evening bag, a new tote and the Beyond clutch. Then there’s the Lanvin Paper Bag, which offers contrasting shapes and textures in four sizes and five colours. The accessories Elbaz has given his accessories a rebellious edge in his spring/ summer 2014 collection. The dresses and skirts Whether crumpled, pleated or treated, the skirts and dresses featured in this collection teeter on the edge of extravagance – in a good way. The skirts span multi-filled and sweeping to pinafore; while the dresses come strapless, ruffled and ruched. And like Lanvin’s androgynous metallic trouser-and-blazer combo, some dresses appear as a two-piece – adding structure and sensuality to the wearer.

FOOTS LIKE A GLOVE French master shoemaker J.M. Weston celebrates the sophistication of the black tie wardrobe with its latest collection.
J
.M. Weston has created five dapper designs capable of transporting fashion-forward gentleman from the office to the red carpet: two Derby shoes, two brogues and a pair of beaded loafers. Across the collection you will see that the shoe design is classy with a hollowed-out front and extended toe, ending in a soft square shape. The markings on the sides and cushioned insole create a leather receptacle into which the foot fits like a glove. And in true J.M. Weston style, each shoe has been tailored using the famous Blake stitch, a unique type of assembly sewn on leather soles. And the man responsible for the collection is Michel Perry, the artistic director who has been at the creative helm of the French label since 2001. THE COLLECTION: The seven-eyelet brogue features elegant curves and a rounded shape interlace with straight lines. The cycling brogue – famously made from a single piece of leather – features cotton grosgrain beading. The same details can be found on the beaded loafers, with the ‘black tie’ version adorned with leather pompoms. From classic and vertiginous to embellished, the stiletto has served as a status shoe for centuries. And no designer knows the heel better than Manolo Blahnik. 5 takes a peek at the shoemaker’s latest collection… The collection: Art and 20th century elegance inspired many of the styles featured in Manolo Blahnik’s spring/summer 2014 collection. Made in lush and ornamented fabrics – a nod to turn of the century embroidery – and featuring bold colours
– something Blahnik does so well – the collection is sumptuous and stand-out. The Spanish designer, too, incorporated his fondness for Giovanni Boldini paintings into his designs, especially the portraits of decadently dressed, sophisticated women.

5 picks its favourite timepieces from this year’s SIHH
Hybris Mechanica 11 Jaeger-LeCoultre The slimmest minute repeater in its category at just 7.9 mm thin, this Master Ultra Thin Minute Repeater Flying Tourbillon watch is the first ultra-thin Grand Complication in the Hybris Mechanica series. Its ingenuity is highlighted by the fact that eight separate patents, six of which are entirely new, were issued to enable its making. So innovative is the watch, a think-tank was set up to discuss its development and delivery. Crafted in ultra-white 18-carat gold, the timepiece marks the eleventh piece of haute horology in the Hybris Mechanica series, and is available as part of a 75-piece limited edition collection.

Midnight Planétarium Poetic Complication Van Cleef & Arpels
Montblanc is billing this as a world premiere in the world of watches, comprising a large balance positioned outside the tourbillon’s rotating cage, a chronograph with split-second function, and a three-dimensional regulator dial. The extraordinary mechanical complexity behind the watch, which comes as a limited edition of 18 watches, required almost 70 per cent more components than that used for a conventional chronograph mechanism. And rather than offering a mere chronograph, the new model encases a split-second chronograph with two columnwheels and a classical double clamp.
Planets and constellations were the inspiration behind Van Cleef & Arpels’ Midnight Planétarium Poetic Complication, made using 396 parts. This fascinating timepiece provides a miniature representation of the movement of six planets around the sun and their position at any given time – Earth, Mercury, Venus, Mars, Jupiter and Saturn. What’s incredible is that the representation is true, and so it will take Saturn over 29 years to make a complete circuit of the dial, while Jupiter will take almost 12 years.

The P.2004/9 mechanical movement, see-through sapphire crystal back and domed sapphire crystal protecting the dial reunite the characteristics of the Panerai watches from the thirties and forties. Made using 329 components, the new special edition is limited to 300 pieces.

A. Lange & Söhne makes horological history with its grandest design yet
I
n recent years, the world’s finest watchmakers have strived to create timepieces that are increasingly extreme in function and appearance. But few could have envisaged A. Lange & Söhne’s latest tour de force. The venerable German watchmaker has created a complication that pushes its technical abilities and creativity to the limit. The Grand Complication features seven of the most elaborate complications, including five functions never before seen in one timepiece, and is believed to be the most expensive timepiece ever to be produced. “It is not only the most complex, intricate and technical timepiece that we have ever crafted – but one of the most complicated in the world,” says Matthieu Dupont, the company’s Middle East brand director. Indeed, it took A. Lange’s product developers seven years to master all of the technical challenges involved in its design. Limited to a mere six pieces and priced at almost €2 million, the timepiece is already highly coveted among collectors across the globe. Patience is required, though. Each watch takes a year to make, and its 876 parts are assembled from start to finish by a single master watchmaker. With the first timepiece due at the end of this year, the company has confirmed that the number of serious collectors interested in the Grand Complication is higher than the supply, making it one of the most exclusive timepieces on the planet. “It has not been decided yet which of the potential buyers will eventually receive one,” says director of product development Anthony de Haas. “Unfortunately, we cannot
produce more as it would tie up capacities that we need for our new projects.” Those fortunate enough to secure one will discover a truly exceptional timepiece. The L1902 movement features a chiming mechanism with grand strike (grande sonnerie) or small strike (petite sonnerie) modes. The grande sonnerie is considered to be the most challenging of all complications in watchmaking, due to its mechanical intricacy and the difficulty of creating a crisp, clear sound. The timepiece also includes a chronograph with a rare supplementary function that ensures the timepiece is accurate to one-fifth of a second. The perpetual calendar with moon-phase display accounts for leap years and –

All this complex machinery is housed in a 50mm diameter, 20.3mm-thick, rose gold case. The face is a white enamel dial with Arabic numerals, a railway-track minute scale and four subsidiary dials. A glass back allows the exquisitely finished movement, which features a lever and escape wheel made from 18-carat gold, 67 jewel bearings and extensive hand engraving, to be seen in all its glory. While watch connoisseurs will undoubtedly appreciate the craftsmanship behind the Grand Complication, some recent exceptional auction results bode well for the investment value of A. Lange & Söhne’s latest masterpiece. The company’s watchmaking pedigree dates back to 1845. Founded in Glashütte by Ferdinand Lange, A. Lange & Söhne built an enviable reputation for making some of the finest watches in the world, before being expropriated by the East German state in 1948. Walter Lange, the founder’s great grandson, revived the brand in December 1990 and the Grand Complication marks a pinnacle of achievement for the modern-day company. “There is an unrelenting demand for timepieces with sophisticated complications,” says de Haas. “We will continue our product policy of watchmaking excellence and unmatched craftsmanship.” « Shop at A.

DESIGN Etihad Towers, you could argue, is the jewel in Abu Dhabi’s skyline. Standing tall in the Ras Al Akhdar neighbourhood of the city, the impeccably designed, state-of-the-art towers have proved a captivating sight for visitors and UHVLGHQWV DOLNH $QG WKH ÊUP EHKLQG WKLV architectural gem is the venerable DBI Design. téphane Rolland is a man who knows what he wants. A man who works with the best in order to deliver the best. And one man who knows this better than most is Thierry Lemaire, the Parisian architect tasked with designing his flagship prêt-à-porter boutique in Avenue at Etihad Towers. The store, described by Rolland as “1970s-inspired” because this decade was “one of the most creative in fashion and art”, reflects the designer’s world to fashionable effect. “Stéphane Rolland knows his clientele perfectly and he wished for a space that looked like his creations,” says Lemaire. “His style is a mixture of vintage and of elegant contemporary, and we worked together in this direction.” Marking Rolland’s first prêt-à-porter store, the décor is modern and minimalist. From Lemaire’s use of space and imposing columns to the clean colour palette and materials, the boutique creates a homogenous, sophisticated environment fit for the modern-day shopper. “The decoration is situated between the atmosphere of a shop and an apartment so that the buyer feels good,” says Lemaire. “We used luxurious and original materials such as brushed stainless steel, brass, velvet, mirrors and rare marble. I also designed original furniture especially for Stéphane – sofas, display stands, cabins and lamps.” For Lemaire, what part does the décor play in the shopping experience? “The buyer will not go into the

It is necessary to be very creative and original while at the same time understanding the consumers.” And how did Lemaire capture the spirit of the boutique’s creator? “The relationship between the decorator and the creator is fascinating and the work is a success only if they understand each other perfectly,” he says. “A project of this type is a success only if the osmosis is total.” With the store celebrating its first anniversary this May, what next for Lemaire? “Working with Stéphane on his Abu Dhabi store is an experiment which will certainly not be the last one. ART IN THE CITY The Abu Dhabi Art Hub is transforming how local artists create and curate their work. Its founder, Ahmed Al Yafei, tells 5 how he plans to take the capital’s art scene to the world I’m not an artist, I’m an engineer, but I have a very strong passion for art – I collect, I digest, I encourage and I support. That is why I have set up this initiative: Abu Dhabi Art Hub, an art centre intended to serve the community. It is a place where different artists from all over the world can exchange, interact and explore our culture in the best way – which is by living. In addition, we have many facilities that the community within Abu Dhabi and the UAE can enjoy, interact, participate and attend. Our slogan is ‘live, create, and exhibit’. So when the artists come, they have a place to live, a space to work and a gallery to exhibit. I learnt from my experience in real estate and other sectors that the best way to do something is not to reinvent the wheel. It is to start where previous, similar ventures end. And in order to understand where they end is to conduct studies. So we conducted three studies about what will be the best business model for this project. The first study was to explore the regional experience of the private sector and art – and when we talk about regional we’re talking about the Gulf region ISSUE FIVE / 2014
mainly. The second study was to study the same elements but worldwide, from the Far East to Europe to America – again, private sector investing in art. The third study was done about history, to learn about why art at different times was booming. From our findings we created six elements that we felt were important to put into this art project. The first element, and the most important one, is to create a community of artists. And to create a community of artists you need to have living space. So on site we have nine apartments. We also felt that many artists in the town needed space to work so the second element was to create seven individual studios that people from Abu Dhabi can rent and use as a working studio. The third one is to create some space for crafts as fine art – so pottery, glass blowing and so on. The fourth element is to have a place where people can give lectures and seminars. So we made a separate two-storey building where people can host workshops and seminars. The fifth one is businesses: we want to bring businesses to the Art Hub. So we have 16 offices where you can get a trade license to encourage art-related business. Finally, the sixth element
is of course the gallery, where the artwork is exhibited. And when we celebrated Art Hub’s first birthday in November 2013, we were able to count 62 artists (now 72 artists) who have participated in our residency programs. These artists represent 27 different countries and the body of work numbers close to 800 individual pieces of artwork. We have since opened another hub in the Liwa area where we have the same thing – so a living area for the artists, a working area and exhibiting space. Here we have nine bedrooms, there we have 17; here we have eight galleries, there we have 14 galleries. Five years from now I’m thinking of taking this unique concept worldwide – regionally and internationally. In addition to this we will have the first UAE art bank. What this means is that we can manage and handle all the artwork on behalf of organisations, such as the government. Secondly, we want to create applied art. Applied art means to put art in every part of life. Let’s say your office, why not have every aspect custom-made by an artist? Why not, in public areas such as beaches, create some kind of functional art?” Watch this space.

STARS IN THEIR KNIVES Peep under Michael Caines’ torque and you’ll find a constellation of Michelin stars, a string of restaurants and countless awards. The British-born chef tells 5 how – despite losing his right arm in an accident – he has gone on to become one of Britain’s greatest chefs…
M
ichael Caines was definitely set to become a fixture in the world of food. Ever since he started experimenting in the kitchen using homegrown ingredients from his father’s garden he was hooked. The kitchen quickly became his haven, a sanctuary, the place to put his culinary ideas into practice. A career in it, however, wasn’t fully realised until he was well into his late teens. “Cooking has always been a part of my life but I never really thought of it as a career,” he says. “In fact, up until very late I wanted to be a soldier in the army or the marines. When I realised you could become a chef that was it for me. I’ve never really looked back since.” I speak to the two-Michelin starred chef during his time at Abu Dhabi Gourmet, where he cooked up a storm in the kitchens at Jumeirah at Etihad Towers. His appearance marks his third trip to the capital and his first year participating in the festival. “In terms of what I’ve got here on my menus, I’ve brought dishes that I thought would appeal to the tastes of the market – wild mushroom risotto with quail, duck with five spice jus, passion

fruit mousse, and banana parfait,” says Caines. And like his restaurants in England – the two-Michelin starred Gidleigh Park in Devon (about which more in a moment) and the Michael Caines Restaurants in ABode Hotels around England – scarcely a single detail hasn’t been thought about. This attention to detail is thanks, in part, to his training in classical French cuisine. Training which saw him, upon graduating, work alongside some of the world’s culinary
“What I love about Abu Dhabi is you get that mix of culture, that integration of culture” greats – from London’s Grosvenor House he went on to work with Raymond Blanc at Belmond Le Manoir aux Quat’Saisons in Oxfordshire, the late Bernard Loiseau in Saulieu and Joël Robuchon in Paris. “I guess when I started all I wanted to do was cook to the best of my abilities and I realised that to get the best you have to work with the best,” says Caines. “Which I did.”

48 \ And from each chef, what skills did Caines acquire? “Raymond is a visionary and a free spirit who knows no boundaries. He taught me above all to be completely open to new ideas. The late Bernard Loiseau, like Raymond, was very charismatic, larger than life. His greatest gift was the ability to extract intensity and purity of flavours from the simplest cooking, always utilising the finest local ingredients from his native Burgundy. And then when I went to Paris to work with Joël Robuchon it was all about technique. Robuchon’s technical ability was unsurpassed. A strict disciplinarian and a stern taskmaster, he sought – and demanded – precision and perfection in every way.” Raymond and the French culinary masters were not the only ones to spot Caines’ talent. Over the years he’s cooked in 10 Downing Street for the Prime Minister, been awarded an MBE for services to the hospitality industry and been named Chef of the Year countless times. What’s more impressive is that he achieved all this despite losing his right arm in a road accident in 1994. He fell asleep at the wheel, hit the central reservation and rolled over. But rather than let it stop him in his culinary tracks, he was back in the kitchen at Gildleigh Park – where he’s been for 20 years – two week’s after the accident. “There’s two peoples in life:
‘Perhaps there are opportunities to expand; perhaps somewhere like Abu Dhabi’ people who dwell on things and feel sorry for themselves, and people who say ‘get up and go’. And I’m very much the latter. I’m reminded every day what happened that day – you’ve only got to look in the mirror to see the loss of limb – and sure psychologically, mentally and physically it was a huge thing to deal with but equally I could’ve lost my life. It could’ve ended my career that day but it didn’t. I didn’t want to let the accident end my career and I thought the only way to find out if I can do this was to get back in and keep going.” His can-do spirit is infectious. Heck, he leaves you feeling like you can take on the world. And it is this can-do attitude which leads us to our next subject: Caines’ future plans. He tells me that the best is yet to come. Really? Two Michelin stars, a bag full of awards, a culinary academy, a cookbook, numerous television appearances and a chain of restaurants isn’t enough for the ISSUE FIVE / 2014
forty-something chef? “I’m at a stage in my career where I want to move forward and perhaps there are opportunities to expand; perhaps to do something in London and of course somewhere like Abu Dhabi would be fantastic. I’m also hoping to be a little bit more independent in terms of what I want to do with regards to my restaurants in the future, and that’s why London is important and this region.” In fact Caines tells me that part of his reason for visiting the capital is to explore potential opportunities here. “What I love about Abu Dhabi is you get that mix of culture, that integration of culture, and then you also get the opportunity then to sample different types of cuisine. There seems to be a real interest in developing the whole area for its culinary elements, which is really exciting.” And with that, our interview is over and Caines is off to wow the crowds at Brasserie Angélique one last time.

Michael Caines shares one delectable dish from his exclusive menu for Jumeirah at Etihad Towers CURRIED CARROT SOUP Serves 4 Ingredients 150g unsalted butter 150g onions, chopped 2 cloves of garlic, peeled and lightly crushed 500g carrots, peeled and chopped 1 pinch salt 4g cumin spice, whole 2g Madras curry powder 300ml chicken Stock 500ml water Bouquet garni (including parsley stalks, coriander stalks, thyme, bay leaf) Fresh coriander leaves Method 1) Melt the butter in a saucepan and sweat the onion, garlic and carrots with a pinch of salt for around 5 minutes. 2) Whilst sweating the vegetables place the cumin in a separate dry pan and toast. 3) Add the toasted cumin and Madras curry powder to the vegetables and sweat for a further 2 minutes. 4) Add the chicken stock, water and bouquet garni. Bring to the boil and add a little salt. 5) Reduce to a simmer and leave to cook slowly for 30 minutes. 6) Place the mixture into a blender and blend to a fine purĂŠe. Finally, pass it through a sieve and return the soup to a clean pan. Adjust the seasoning and serve with some freshly chopped coriander leaves.
