Christmas is coming and many of us have either pony mad children or an equestrian partner who is horse crazy. It can be daunting choosing a horsey gift, so we have put together some ideas we know will be useful and appreciated not only by the equestrian in your home but also by the four legged apple of their eye. Fill a feed bucket to the brim with fresh apples and carrots. Wrap the bucket in brown paper (eco-friendly Christmas wrapping) and tie is shut with a bright bow. Remember it’s a red bow for a horse that kicks, a yellow bow for a stallion, a green bow for a young horse and pink for a moody mare. Put together a “horsey bath day bag”, include horse shampoo, conditioner, a big sponge, a small towel, a sweat scraper, tail bandage and pop them all in a fun coloured waterproof type drawstring bag. Purchase some riding lessons. If it is for your pony mad child, find a riding school, with qualified instructors that is offering a Pony Camp. A lot of riding schools offer really great packages where your budding equestrian can have fun lessons and also learn how to

handle, care and be safe around horses. If the lessons are for your partner, find out who their favourite instructor is and book them in for a series of lessons. Long socks! An equestrian can never have too many pairs of long socks. Don’t think hiking socks, they are too thick, think slender socks. Think socks that match their personality or their horses’ personality. Horsey colouring in books are great, throw in a set of coloured pencils and remember, age is but a number. Every pony mad girl loves unicorns. There are loads of unicorn themed gifts out there, pens, t-shirts, socks, hats, tog bags and even sweets (unicorn poo sweets were spotted for sale at Pony Club Interbranch!). Christmas means summer, which means riding is sweaty business and what better way to cool off than leaping in the pool but you can go one better and float about on an inflatable giant buckin’ bronco or unicorn pool floatie. Even the nonhorsey peeps in your family will enjoy them.

Put together some summer relief. Create a gift pack consisting of fly repellent wipes and a fly mask for the horse and sunscreen and a UV resistant sports shirt for the rider. Make some horse treats, there are loads of delicious recipes to be found on the internet Pop them in jars or brown paper packets, stencil their favourite horses name on the front and tie up with a coloured ribbon. Book a professional equestrian photographer to take a super portrait of their favourite horse and have it beautifully framed. It will be cherished forever. Horse print scarves are great, they are many stylish and fun ones to be found. They look great on the yard and can add some class or humour to any look. They make a useful stocking filler. Put together a plaiting kit. This can be really handy for younger riders learning to plait or be used for the fun of learning a new type of braiding method when its raining and you still want to hang out with your horse. Pop a mane comb or plaiting divider, plaiting elastics (choose the same colour as the horses mane) and hair gel, (glitter is optional) into a drawstring bag. Add in a Christmas card with a list of all the sites offering plaiting demos on youtube. Go google, you will be amazed at the creative and beautiful plaits and braids that you can try your hand at. Think Matchy Matchy. If you choose to buy a numnah, leg wraps, earmuffs, headcollar, lead ropes. #matchymatchy is a must!

Ramblings on Chocolate... with Charlie Lakin
W
Well well well, self-employment didn’t last long KZN’s resident Yorkshire chef is back in full time employment 'n heading back down the hill into Durban infact probably the farest part right on the end of Point Road, it’s so weird to be there and a massive cruise liner goes floating by only 100m away. More details will follow next month but let me tell you it’s going to be a very exciting couple of years to come. To start with I’m mainly going to be running a range of tasty baked goods n got me thinking that’s one ingredient that’s pretty hard to avoid, n ain't local, n that’s chocolate. Easy when you’re doing a set tasting menu but otherwise it’s a pretty much standard to see it appear on most menus. Even with my over the top localness I can go to it, it was impossible for me not to go back to chocolate, even on the Great British Menu the infamous dog poo starter had chocolate on it (duck, blue cheese, pickled damsons, bitter chocolate and pineapple weed). A lot of afternoon teas, to your average British tourist on a day out at the seaside, always sees someone asking for a chocolate dish. So, you have got to give them what they want. Now xmas is knocking on the door, n we all know them random blocks of Lindt with 70% and higher percentage chocolate, start being given out in secret Santa’s and weird relatives gift packs. No one ever really knows what to do with them as they a very acquired taste and the 98% version is just bloody horrid to eat but amazing to bake with, with serious flavour kicking home. So, it made me think chocolate, I have never touched on chocolate, I don’t think, but ya never know I have the worst memory. Well maybe not the worst memory, but maybe self-doubt, because when it comes to chocolate there’s a lot of memories that come flooding back, like canisters of warm chocolate mousse

exploding all over the kitchen, gagging on a chunk of 99% chocolate or even the curious waitress that unfornuatly was vegetarian taking a big spoonful of black pudding puree thinking it was chocolate sauce, suppose there’s a lesson to be learnt there. There was also the time where I completely went off chocolate after doing a stage in a top pastry kitchen in London. I was 18 n I spent every morning for weeks making 3000 chocolate truffles, which was a true nightmare especially if you didn’t work the chocolate properly on the last coating and it blooms. When this happened, they all had to be rolled again and working in the pastry kitchen, it was mainly sweet stuff, n chocolate. It was too much, it took me about 5 years before I would eat chocolate again. I will give one warning, don’t ever put a bowl of chocolate in the microwave to melt and leave the room to go and have a smoke, as Gaz n I learnt, stood outside one afternoon sneaking a quick ciggie in during our pastry class. All of a sudden there was a bellow of thick black smoke coming out of the pastry kitchen window, luckily the lecturer had taken it out. Not so much luck for Sprout, the pastry chef at the Star Inn, who had been taking advantage of being in the back pastry kitchen during service, while Pernie n I was smashing out service in the main kitchen, he was ducking out for a smoke. Well one night he did this, forgetting a big bowl of chocolate in the microwave, which caught fire and the microwave as well, Pernie went mental. Actually, it was at the Star Inn at Harome in Yorkshire that I learnt the importance of a good chocolate cake recipe. It’s the get out of jail card from last minute birthday cakes to a main part of a dish, to serve some local great limited seasoned ingredient with, as a garnish. N yeah I’m going to share mine with you, well it’s a bit more my staple chocolate dessert, which is great for when all the family are around but it can be broken down into separate dishes for smaller dinning occasions or as elements to more complicated dishes.
The base is a great dense, rich chocolate mousse cake on its own but with the addition of some nuts and chunks of chocolate you have the most decadent brownie ever. The mousse topping can be served in slices, as a set mousse or frozen and served as a parfait. If you replace the butter with nut oil, it makes a very nice spooning mousse. Now this is ideal for them secret Santa Lindt bars as this recipe does require a minimum of 70% chocolate, anything less and the mix has too much sugar and fat and goes very sticky n not so pleasant to eat.
Dark Chocolate Marquis Serves between 8 & 12 Base 300g 70% dark chocolate (I get my everyday chocolate from Bake-a-ton in Pinetown) 275g caster sugar 165g butter 5 eggs Topping 250g 70% dark chocolate 100g icing sugar 175g butter 5 eggs 150ml cream Lightly grease a 30cm spring form cake tin and preheat the oven 160c. For the base, over a pan of boiling water melt the chocolate, butter and sugar in a bowl, lightly whisk the eggs together and beat into the chocolate mix. Pour onto the tin and bake for 30/40 mins you are looking for a crispy crust and a gooey inside while warm. Remove from the oven and leave to cool.
For the top, gently melt the chocolate and butter in a bowl over a pan of hot water. Separate the eggs, cream the yolks with half of the icing sugar and whisk the whites up to soft peak and quickly whisk in the remaining icing sugar. Whip the cream to a soft peak (the topping creates a lot of washing up). Once the chocolate mix is about blood temp, beat in the eggs yolks, then gradually fold in the egg whites, gently to avoid losing to much air, then lastly fold in the cream, pour over the chocolate cake base and smooth with palette knife and place in the fridge for at least 6 hours to set. This will keep well for a couple of days so can be made a day or so in advance. To serve take it out of the fridge one hour before serving to warm up, remove the mould and cut into wedges and serve with a compote of local fruits, a sorbet or your favourite ice-cream. It really works with most things. My next recipe is probably two of my stock recipes due to their uses. The most popular version is with an addition of whipped cream, for filling to a profiterole, topped with salt caramel sauce but can be used to make a roasted white chocolate and strawberry gateaux on Christmas day or as an alternative to a filling for a vanilla slice. The roast white chocolate is just good as it is, grated over a bowl of ice cream. The one I loved at Ninth Avenue Bistro was a warm roast white chocolate sauce, just the chocolate melted with hot cream and served straight away, it is the dogs.
Roast white chocolate crème patisserie 175g white chocolate good quality not baking chocolate 3 egg yolks 20g corn flour 300g milk
First up you need to roast the white chocolate, you can either vacuum seal the chocolate and gently simmer in a pot of water for 1.5 hours and then turn and cook it for another 1.5 hours. By this stage it will have caramelised n gone golden on the sides, you can also cook it in a non-stick frying pan. Break the chocolate into small pieces and gently melt in the pan stirring occasionally to avoid sticking once it’s all melted slightly increase the heat and continuously stir until it develops a caramel malty scent and a golden colour, place in a container to cool. This is a great store cupboard treat. For the crème patisserie, gently warm the milk, cream the egg yolks and corn flour and gently add a few small ladles of the warm milk to the egg yolks and whisk until smooth, then add this back to the milk and whisk, to guarantee even distribution. Gently bring it to the boil, stirring continuously, then reduce the heat and keep cooking for 2 mins. Break the roast white chocolate into small pieces and add to the custard and cook for another minute. Pass through a fine sieve into a bowl and tightly cover with cling film to avoid a crust forming and place in the fridge this will keep for up to a week, if it lasts that long.

CANINE Myth Buster Walking your Dog is Essential

The images are splattered all over advertising and media – happy people walking happy dogs. Pretty young ladies dressed in flimsy white skirts, joyfully skipping along the beach with an equally pretty dog, enjoying all that nature has to offer. Some adverts feature families with cute dogs, picnicking and living the dream, laughing and smiling. The reality is however, less than fun and more likely to be about barking dogs, foaming at the mouth, dragging a hapless owner down the road, and flicking up mud as they go. Or dogs running off to terrorise other picnickers and their dogs, and knocking over your elderly gran while she is trying to feed the ducks – which of course are not immune to this trail of insanity and will be chased into the water, resulting in only a wet and dirty dog, who will then shake off any excess algae on your lunch!
You will be told to keep socialising your dog, and you will hold onto the dream of this walking heaven you have so longed for. But the truth is that walking your dog may not only be bad for you, but bad for your dog too.
(Brachycephalic dogs) like French and English Bulldogs, Boxers, Pugs and Boston Terriers, can really be affected by serious exercise and suffer from heat stroke, causing distress and at times, even fatalities.
Of course, dogs LOVE exploring and walking, they love to run, swim and sniff, and SOME dogs really enjoy meeting other dogs and playing with them. But not all. And the not all sector is much larger than you have been led to believe.
If you have ever watched a movie where the hero is taken to jail, you will know the scene where the new intake walks down the row of inmates, with the sneering, jeering, cup bashing threats of death and worse. You will understand that this would be scary for any human, and so, think of how your dog feels walking down the road, with every second home’s dogs dashing at the gate, fighting and threatening to kill you, your dog, and any relatives. It isn’t always pleasant. Don’t put your dog through that! Of course, with street walking, there is always the chance that a gate will open, and dogs may rush out.
Although some dogs enjoy dog parks, day care play dates, activities that revolve around barking, running and bashing into other dogs, not all do. Just like some humans really don’t like night clubs, and prefer to opt for lazy days at the library, some dogs prefer relaxed entertainment. Owners are embarrassed and think that they have a problem dog, but they actually have a normal, and happy dog – who just prefers less busy fun. Another great myths around dogs is the one about exercise. Although exercise IS important, marathon running is best left to humans and you need not run 20km with your dog, or buy him a treadmill. Dogs are mostly built for short spurts of running, and general casual loping, with a large portion of life being spent sniffing, and reading doggie emails along the trees and lamp posts of life. Excessive exercise may actually harm some breeds, damage puppy bones, and cause unnecessary strain on ligaments. In addition to this, turning a busy, active dog into a lean running machine only results in a busy, active dog with MORE energy for digging than before, as soon as you let off on the exercise. Short nosed breeds
So HOW do you walk your dog then you may be thinking? The best ways are to find safe, on lead venues where everyone sticks to the rules, there is shade, water, and safe distances to pass other dogs. Allowing your dog to stroll and sniff, and take in new sights is much more relaxing as well as mentally stimulating. Another idea is to find an enclosed school field, a secluded park, or specialised fenced dog parks, with sections for small and large dogs, and on and off lead places. Spend some time learning when your dog is happy and comfortable and when they are shut down and afraid. Perhaps your dog has a special friend he can have play dates with at each other’s homes too. Find games to play at home, fetching a ball or finding hidden treats. Remember to work WITH what works for YOUR dog and not to expect all dogs to fit into one mould. Always use a poop bag on walks to pick up after your dog and take along water for washing down pee and a bowl for your dog’s water too.

The wonderful thing about buying presents for a keen gardener is that there is such a wide variety of inexpensive gifts from which to choose. If you select just one item from the following list, you will have enough ideas for the next eight years! Gloves Gardening gloves today are designed to fit snugly so that even the most delicate work can be carried out while wearing them. The gloves have a strong nitrile palm and breathable upper surface, so they last for ages and the hands don’t sweat inside them. There is a pretty range of colours available, with darker colours such as navy and black especially for male gardeners. Herb planters Small to medium terracotta herb pots are available at most garden centres, homeware and hardware stores. A few of these pots, planted up with culinary herbs, make the ideal gift for anyone who enjoys cooking with herbs such as basil, thyme and parsley. The planters can be placed on a bright windowsill or counter top inside the kitchen or outside the kitchen in a sunny spot.

Indoor planters Interior plants are trending once more and a lovely ceramic, metal or woven planter is always such a lovely gift. Instead of choosing the plant as well, which can be quite a personal choice, pop a gift voucher into the planter and allow the recipient to choose their own plant. Seeds If the person for whom you are buying the gift enjoys planting their own seeds, then the perfect gift is a few inexpensive plastic seedling trays, a small bag of seedling mix which goes a long way and a few packets of seeds that are easy to grow and can be sown in most seasons. All of these items are available at leading hardware stores. Hand tools Hand tools do eventually deteriorate and are often misplaced so a trowel, a scoop for that

seedling mix or reasonably priced pair of secateurs will delight any gardener. Protection for the gardener’s hands There are so many products on the market that offer protection for gardeners’ hands from hand scrubs to lotions and protective barrier creams.
These, paired with gardening gloves, make a thoughtful gift for any gardener. Rain gauge Every gardener should own a rain gauge. Our seasonal rain is fluctuating at such a rate that we can no longer rely on memory as to what the ‘average annual rainfall’ is. A rain gauge can be purchased at any hardware store and is a really inexpensive gift. Gardening Journal A gardening journal is a perpetual journal in which you record the activities in your garden. This wonderful gift allows the gardener to record monthly chores, what’s in flower in any month, birds in the garden, daily weather patterns and any other valuable information.

KZNs’ Dressage riders shine at the 2019 SA Dressage Championships Kzns’ Dressage riders showed everyone how it’s done with at the SA Champs in Stokkiesdraai. The Combined Elementary/ElementaryMedium Team swept the boards to take the team win. Jocelyn Constant & Helsinki (E), Prudence Rogers & Neapolitano Nanczi (E), Catherine Berning & MidasTouch Bravado (E) and Gen McNeill & Pirata De Susaeta (EM) rode super tests and did KZN proud.
The Open team of Katie Keller & Gert Van Smitsvlei (ADV), Megan Berning & Ciroc R (ADV), Sarah Perkin & Faris of Milford (ADV) and Andre La Conte & Zucca Dice (ST) narrowly placed 2nd with 196.999 to the Northwest team on 198.065.
Beryl Johnston was on fire and won the Big Tour Freestyle with Rivervales Ultimo and the Elementary Championship with Hotlines Harry. Leanne Cutting and Arco 360 Cinderella placed 3rd in the Big Tour Championships. Katie Keller and Gert Van Smitsvlei placed a credible 6th in a tough class in the Advanced Freestyle class and 5th in the Advanced Championships. Catherine Berning and Kuda Insurance Compton House Quantico placed 3rd in the Medium Championships. Debra Lemmer rode a fabulous test on Mossandi Lexington and took the win in the Elementary Freestyle, with Catherine Berning and Midas Touch Bravado placing 3rd. Jocelyn Constant and Gunstone placed second in the Novice Freestyle. An awesome result for KZN !

CADBURY is a friendly girl who is around 10 months old. She is gentle & small Collie type X who weighs in at only 10kgs. She is good with other dogs & will make the most amazing addition to any home.
