Keeping your Pet for LIFE Taking Your Pets Overseas
C A N I N E Myth Buster
W MYTH BUSTED
We have all seen the messages…..the desperate pleas sent around via urgent texts, usually interspersed with flaming icons and sobbing emoticons, begging that “Such and Such” and “So and So” be homed, TODAY, before their parents fly off to another country, or move into a new home. The sad reality is that South African emigration statistics are breaking records, with the trend set to continue. Added to this, is the downscaling of family properties as people scramble to live in safer, pet unfriendly, gated communities. Sadly, as surrenders to animal rescuers accelerate, adoption rates drop as less and less people are able to take on more pets. A statistical data initiative, run by concerned citizens, collecting data on welfare organisations’ intakes and adoption rates, shows frightening figures, with the amounts of dogs and cats being surrendered soaring into the thousands. Adoption rates are very low, leaving over 70% of these animals either faced with euthanasia or a life time of confinement. The hard facts indicate that leaving your pets behind, and last minute scrambling to find homes, when you move or emigrate may just be the worst possible fate for them. Surprisingly, although costly, emigrating with your pets is actually not anywhere as hard as it used to be.
by Mandy Barrett
Most countries have dropped the strict quarantine laws, enabling animals to spend only short, if any periods in kennels. There are several pet travel agencies offering services to assist. Cost and quality of services are well discussed and rated on the internet. Although some effort and planning is required, and there are some risks associated with travel, as the recent tragic death of a Boston Terrier at King Shaka airport shows, with careful planning, your animals will be able to travel to those new pastures right along with you. The steps required are not as complicated as one would believe and there are several information groups available in order to assist you every step of the way. Most of these chat groups are filled with tips and personal stories and you can ask almost real time questions. A quick visit to the Facebook Group “South Africans Emigrating with Pets” shows that there are many ways to get your pets safely to almost anywhere. Costs vary, with some being as low as R8000 and some reaching much higher.
· Ensure that you are up to date on all required vaccinations, medications and other requirements. · Train your pets to enjoy being in a crate long before any intended travel. · Spend time taking your pets out and about in a crate, and the car as much as possible. · Make sure you have suitable, animal friendly accommodation on the other side. Should you decide not to take your animals with you, do not leave rehoming to the last minute. Visit all the shelters in your area, and ensure that you can contribute financially to your animal’s welfare until homed, as this is not the responsibility of the shelter. Next month – moving into a smaller place – should your pets come with? Site to visit for more info: https://web.facebook.com/groups/ southafricansemigratingwithpets/ The Dog Guru Behaviorist and Trainer
Planning is essential – · Start planning for your pets as soon as you decide to leave · Check out the laws and requirements of your intended new home carefully · Contact as many pet travel agencies as you can for quotes, questions on care during transit and the safety of your pets along the way

A Cut Above The Rest

Well, it’s been a year that I have been writing my little foodie wander down memory lane and a few recipes. Up till the present I have always stuck to mainly vegetarian and this month was going to be the same. Butternut, as we had just harvested a couple of hundred kilo, so there was a lot for me to tinker with but that’s a good one for me to come back to another month.
aint always the actual ingredients but more a time, place and a connection to the land. I saw some amazing views, wildlife and plants, not a human around, just Dad and us lads. We might be out with ferrets, hound or the gun we needed. I was maybe not so well behaved when I was out by myself and the ferret, I might have got confused as to whose land I was on sometimes, which is the story of my life in my wild food gathering antics.
The reason for the change was as normal I have left it to the last minute to write my bit. I made a start but with no conviction, but then I had the nice surprise of 3 buck hanging in my walk in fridge. Well this was it, so I am sorry to my non meat eating friends this month. Growing up like I did living off the land, game was common meat at our table, often rabbit, pheasant or pigeon, but the real treat was the occasional deer my dad had shot. Still to this day, a whole venison carcass excites me, especially when it has the offal with it, stunningly fresh (yes there is going to be a recipe, as much as I love working with fresh fruit and veg, my other love is offal). With a lot of my other wild food happy memories, it
Now at home it was the good old fashioned dishes of venison, roast loin in bacon, stews, pot roast, that were generally the payment for borrowing the hanging space in the fridge, I can’t ever remember getting a request for offal. I often get asked over here for ideas of what to do with venison, be it wors, potjie or to put on the braai. This is where the chef in me kicks in. Game season for me was the happiest time of the year, the variations of proteins were amazing and venison was pretty much a mainstay, often taking the main course on the tasting menu. So recipes would start flying out, from Wellingtons, salads, cured, raw, oh the fun I’ve had. Big Phil from Godmersham Game used to bring me

the best carcasses ever, he always hung them in the fur to preserve the flesh from drying, (not that they needed it), they came in with a big cooking of fat and made the best ribs for a braai. Now everyone always thinks restaurant things are complicated but generally they are just basic home cooking with fancy garnish. So for this month’s recipes I am sharing some of my gems which have served me well. First up is Venison Bresaola, a variation on the traditional beef, in fact this works on a lot of red meat. I have used pigeon and hare, I once did duck breast bresaola on the Great British Menu and even cooked duck hearts by the same method at the Royal Natal Yacht Club. Now for this recipe you either use the loin or the hind leg, boned and trimmed of large tendons and tied (think of the hip leg as a tip after this recipe). The spice can be changed to your pleasing but I find the wine to salt ratio to be perfect. I have also often used wild pink peppercorns and pines to flavour mine.
Venison Bresaola
Last up is a variation on a fantastic northern British dish, the braised faggot. This is traditionally made with pork offal but over the years I have developed a recipe to use a variety of different meats to maximise the use of the whole animal. This recipe is great for them cold nights, served with some bubble and squeak and some onion gravy, (made with the cooking liquor) or as a garnish to a seared loin at a dinner party. The word faggot by the way is an old English word meaning bundle as in faggot of fire wood or hay.
1 bottle red wine 325g sea salt 8 cloves garlic 12 black peppercorns 1tspn of chilli flakes 12 juniper berries 4 strips of orange zest 8 good sprigs of rosemary 8 bay leaves
Venison Faggot
2 kg’s leg or loin of venison
Heart, kidney and liver of 1 duck (If you would prefer it milder, use only half a liver)
Mix all the ingredients together excluding the venison. I find it best to give this a day to infuse the flavours and dissolve the salt. If using leg I find a 5 litre bucket works well and a glass roasting dish for the loin. Place the meat in the marinade and put in the fridge, turning it each day. The loin will only need 3 to 4 days depending on the thickness. The leg I generally leave for 7 to 10 days, again depending on size, it would go for 8 days for a 2kg piece but 10 for a nearly 3kg piece. Once the venison has had its required time, hang it in the fridge or a wire fridge. The loin will be ready in about 2-3 weeks, for a soft cure and 4-5 for a firmer, more biltong like cure. The leg I like to leave for at least 2 months, to firm up nicely, develop flavour and becomes easier to slice thinly.
Venison Meat (add to offal, to make I kg of meat and offal combined) 1 large onion finely diced 4 cloves garlic ½ a tsp nutmeg ½ a tsp ground black peeper 2 tbsps of chopped Thyme 2 tbsps of chopped Rosemary Zest of 1 orange 6 crushed Juniper berries, crushed. 250ml red wine
A quick and easy one is Carpaccio of Venison. It is very simple and makes a great light lunch when served with some crusty sour dough bread. Carpaccio of Venison Simply season a piece of off the bone loin and sear in a red hot frying pan, to form a crust on the outside of the meat. Chill in the fridge until fridge temperature, then finely slice and lay flat on a plate and drizzle with a little balsamic, olive oil and scatter some fresh rocket and shavings of parmesan or crumble with gorgonzola. As I mentioned earlier when butchering your buck, if you take the hind leg on the bone and remove the large muscle piece, (topside) from the leg and cut 4 to 6 nice steaks from the middle, this cut is what I know as haunch steak and is often used in restaurants.
Pig or lamb caul fat ½ Litre beef stock Place the onion, garlic, spices and herbs and red wine into a heavy based pan, bring to the boil and reduce until the wine has evaporated, then mix into the minced meat with a large pinch of salt and leave to set in the fridge for 1 hour. Once the mix has firmed up, divide it into 20 equal balls and wrap each in caul fat and then chill for an hour. In a heavy based pan gently colour the faggots in a little oil until golden brown all over, transfer them to an oven proof dish and cover with beef stock. Place in the oven and set at 180 and braise for 30 mins. The faggots can be kept in the liquor for up to a week or frozen in smaller batches and be used as and when needed.

be a total pain. All dog owners have experienced run away soapy dogs or been drenched in the obligatory after bath doggy shake! Here are 5 tips to make bathing your dog a cake-walk. 1. Set yourself up for success Place a non-slip surface on the floor of your bath or tub. A mat or an old towel will do and will save your dog from slipping about. Give your pooch a good brush beforehand to remove loose hair and tangles. Place a filter over the plughole or drain to prevent doggy hairs from clogging your plumbing 2. Phone a friend to help It is always handy to have a helper at hand especially if it is your pooches first time or they are scared. Have them feed your dog treats during the bath and comfort them. This will help give your dog a positive bath experience.
3. Avoid getting water in eyes & ears It is best not to pour water directly over your dog’s head. Use a sponge or facecloth for this. They will help keep moisture-induced infection out of ears and no-one likes shampoo in their eyes. 4. Rinse, lather, rinse Completely wet your dog from neck to paws, before shampooing. Lather up in the same manner and follow with a rinse. Ensure you rinse out all the shampoo as residue in the coat can cause skin irritation. 5. Towel dry Dry your dog off after to avoid chills, especially during the winter. The best method is to towel dry. If it’s cold and your dog is happy with a hair drier, then it’s even okay to consider a light blowdry. If your dog doesn’t like the hair drier, don’t use it, as it will only make him dread bath time more. Each dog is different. Take note of their likes and dislikes and ensure they are comfortable at all times during bath time. This way you will have a happy and clean dog!

The Benefits of Garden Weeds
I
by Lindsay Gray
I don’t know about you, but my gardener and I are still battling the plethora of weeds that took hold of the garden over December. Each year I vow that I will never again allow the situation to get this bad – and each year I am defeated! Of course, weeds aren’t all bad news other than they spoil our carefully thought-out designs. Many weeds are beneficial for a number of reasons (more about this shortly) and the ground-hugging species such as purslane not only have beneficial health properties, they also help to keep the soil moist and other weed species at bay. Weeds are terrifically efficient at propagating themselves. Assisted by the wind, water courses such as streams and rivers that dissect many of our suburbs and transportation on human clothing and animal fur (my Maltese does a fabulous job!), their seed is spread far and wide.
make their way into natural areas, the war is all but lost. Many man-hours and hundreds of thousands of rand each year – which comes out of our pockets - are wasted on trying to keep these aggressive weeds at bay. Beneficial weeds But let’s not be all gloomy about the situation – let’s chat first about just a few of the beneficial weeds that you might find in your garden. Blackjack (Bidens Pilosa) – my all-time favourite and one that has turned me into a skilled dog-groomer – if you don’t allow them to go to seed, they can be picked and fed to pet rabbits, added as green matter to your compost heap and they are also cooked by some as a spinach substitute.
10 •
MARCH
Purslane (Portulacaria family) – this creeping weed keeps other weeds at bay and is used herbally as an immune booster. Wild spinach – another favourite with my staff, but it is less than desirable in an herbaceous border. It also sows rapidly by seed unlike the spinach we plant in our vegetable gardens. There are many more and you could spend some time researching weeds that we find in our area and how to put them to good use.
Another extremely successful method of propagation is for the seed to just ‘lay low’. Any seed that falls to the ground bides its time until the weather is favourable and then up they come – again! “One year’s seed, SEVEN years’ weed”, a farmer once told me! This is why conservationists make such a noise about harbouring invasive plants in your garden, whether they are large trees or delicate creeping species. Once these undesirable seeds leave your garden and

This is the most crucial part of land management. We know already that weeds – more so than decorative garden plants – are extremely efficient at multiplying so here are a couple of handy tips to stay on top of the situation: 1. Do not, under any circumstances, allow your weeds to set seed. If you don’t have
time to pull them, ask your gardener to brushcut their tops which will retard the growth for a short while; 2. If you see a crop of weeds emerging on new worked soil, turn them back into the soil immediately. They will then decompose and add organic matter to the soil.
spaces, you will always be battling certain weeds, irrespective of how diligent you are at removing them in your own garden, but if religiously employ these various methods of eradication, you will eventually get a handle on the situation.
3. Another effective way of dealing with ‘teenage’ weeds (ie. no seed yet) is to pull them before they set seed and either lay them down on the soil until you can dispose of them or add them to your compost heap as green matter. 4. For new beds, you can layer newspaper, cardboard or black plastic over the space so that dormant weed seedlings receive no light, but some will soon emerge, sooner or later. 5. Very important – highly invasive and undesirable weeds such as the golliwog weed, the Tradescantia family, the creeping Madeira vine with its potatolike nodules, the Cats-claw creeper and this nasty new species of American chickweed that sticks to your hands and clothing, must either be buried in pits (or graves as my gardener calls them – yes, I have a few) in your garden, or bagged immediately and left in the sun to rot. They should not be transported to landfill sites in their viable state otherwise you are literally making your problem someone else’s.

Ask Ginny Scooper Dear Ginny,
I would love to take my horse swimming. Do you have any tips? Yours
Sun & Sea, Summerveld Dear Sun & Sea
Swimming with horses is a great activity and many horses love it. Here are a few tips to make your day safe and memorable. Permission Check municipality rules or contact the landowner. Ensure that you have permission to access the beautiful lake or beach you have in mind. Check the footing underneath the water before you take your horse in. At some beaches the water can suddenly get very deep or there may be rocks that are not obvious from the shoreline. Lakes often have clay bottoms which are fine for human weight but a horse can sink into them and become stuck. Avoid huge waves Choose a beach with small waves. The sound and sight of them can terrify horses at first sight. Take an experienced horse to lead the way Take an experienced horse with to help lead the way and show your horse there is nothing to fear. Wear shoes Wear old running shoes. If you are leading your horse, definitely wear them. They will also protect your feet from rocks and shells. Wear your helmet It feels great to have the wind in your hair but horses can spook because of the waves and you will be riding bareback, so it’s easier to slip off. Look after your head. Ride bareback Swimming is not recommended for saddles, it ruins them. Go bareback or use a washable pad. Be patient. The last thing you want is a bolting horse on the beach or one that swims away. You DO NOT want to be looking for a boat to catch your horse as it swims to the horizon. Don't force your horse into the water, give them time to settle. Shower your horse after a sea swim to get rid of the salt. Yours Ever Ginny PS: If your horses does a dropping, pick it up or you may face the wrath of beachgoers.
