WORDS WORTH REPEATING

These words by Lilly Pulitzer may be easier said than done, especially when you live in Michigan. I’m watching the snow fall out my window as I write this, while a space heater warms my toes.

Instead of trying to wish away the days until March 20, the first official day of spring, what if we allow ourselves to believe that spring can be more than just a season, and instead, a state of mind? Even if the temperatures don’t agree, there’s no reason to wait until the spring season or warmer days to pursue growth or new beginnings.

I hope this issue of Urban St. inspires you to let spring into your life a little early this year. There’s so much happening in our lakeshore communities right now — and you can learn about all the new developments on page 8. And speaking of new beginnings, our special wedding section is a great resource for future brides and grooms. Page 10.

For those of you staying close to home for Spring Break this year, we’ve gathered some fun staycation ideas for the whole family (page 28). And, we know that spring days can still come with a chill — warm up with our list of local coffee roasters on page 56.

Happy Birthday, Herrick!

This year marks Herrick District Library’s 25th anniversary. In May 1997, Holland Township, Laketown Township, Park Township and the City of Holland voted in a millage referendum to establish and support a district library to serve the greater Holland community. And what a great 25 years it has been! There are many ways to celebrate and use HDL, one of which is to visit The Book Nook, where Friends of the Library volunteers sell gently used books at both library locations (300 South River Ave. and 155 Riley St.) — all proceeds are used to support the library.

The inventory is constantly changing, so you’ll never know what treasures you’ll find.

The Book Nook features an Unusual Books section, with titles that’ll intrigue and inspire your love of reading. You might find a book about making and flying kites, a book containing Buddhist art or even a book about famous diamonds. The possibilities are endless.

You can find a well-stocked bookstore at the Main Library on the lower level; and at the newly renovated North Branch, you will find a book cart at the entrance. Most titles are $2 or less! n

Doebs Pizzeria opened its doors at 503 W. 17th St. in Holland in January. The pizzeria offers artisan pizza, flatbread, focaccia, Detroit-style pizza, sandwiches and salads. Doebs features an open kitchen, so customers can watch the magic happen.

Goog’s returns.

A cherished Holland burger restaurant is coming back in a new way. Goog’s Pub will return in a scaled-down format in a 14,000-square-foot mixed-use development at 667 Hastings Ave. The building is located at the site of the former Goog’s Pub and Grub, and will also feature a boutique grocery and beverage market called MGB Market and nine residential apartments.

Dine near the greens.

Savor Chicago street food.

Nadine’s Fish Tip & Wings will open soon at 1111 S. Washington Ave., in Holland. The eatery will serve Chicago-style food with counter service and seating for 15–20 people.

Got barbecue?

Dickey’s Barbecue Pit plans to open at 12579 Felch St. in Holland Township, the former storefront of Pet Supplies Plus. The franchise is a counter-service eatery that focuses on authentic Texas barbecue, with pulled pork sandwiches, ribs, wings, giant baked potatoes, corn muffins, chili, mac and cheese and potato salad.

Lake Bluff Grille at Muskegon Country Club will open this spring at 2801 Lakeshore Drive. The new restaurant and renovated event venue will have outstanding views of the golf course and Muskegon Lake from an expansive covered deck. Lake Bluff Grille will be open to the public and have a modern and contemporary interior design with an inviting, warm feel, serving New American-style. Lake Bluff Grill is part of RedWater Restaurant Group.

Beer and pizza? Yes please!

Rake Beer Project and Rolling Stone Wood Fired Pizza Co. are teaming up to open a “food and beverage collective” in downtown Muskegon. The venture will be located on the first floor of The Leonard, a six-story development being constructed on the corner of Western Avenue and Second Street. The Rake Beer Project and Rolling Stone Wood Fired Pizza Co. will occupy 3,500 square feet of street level space with an outdoor patio and is slated to open this spring.

Nurture your inner plant lover.

Plant Lady Plant Shop recently opened at The Holland Town Center at 12330 James St., Suite B40. The store welcomes plant lovers of all skill levels and features a variety of houseplants, terrarium building, a potting station and rare plants.

Taco-bout it.

Playa Tacos & Tequilas will open this May at the former location of Ottawa Beach Inn, at 2155 Ottawa Beach Road in Holland. The restaurant will be open year-round and will serve craft cocktails and Mexican street food, offering items like diablo shrimp, chorizo tacos and carne asada. It will have a large outdoor patio, a fireplace wall and an extended full bar.

But first, coffee.

Ziggi’s Coffee will open its first Michigan location in Zeeland at 8317 Westpark Way this summer. The franchise features handcrafted drinks; locally made breakfast, lunch and snack options; and kid-friendly menu items.

Food truck turned restaurant.

A popular Muskegon food truck, Tiki Boiz Island Grindz, recently opened as a brick-andmortar restaurant at 2445 Lakeshore Drive, in the former Lott on the Lakeshore. Tiki Boiz Island Grindz serves Hawaiian street food fused with Japanese flavors.

Advice from a bride-to-be

1. Don’t procrastinate.

My fiancé proposed in October 2020. Looking back, I’m so grateful we started planning right away. Now that it’s the year of our wedding, we feel little to no stress — and our vendors say the same. I immediately created a to-do list in the order of what needed to be planned and purchased first, like booking our venue and caterer — all the way through music, flowers and cake. Include the small, easily forgotten items in your list, like pens for your guest book and black socks for the groom.

So, you’re getting married — or a confidant to someone who is. It’s likely one of the most exciting times in your life, but also one of the busiest. These five tidbits helped my fiancé and I survive the planning madness while we organized our “I dos.”

2. Personalize your wedding to you.

It’s the 21st century, meaning many old-time traditions are no longer standard. Maybe you prefer double-chocolate brownies over a classic white wedding cake, or you’re just not feeling a garter toss. Ditch the traditions that don’t speak to you and your fiancé’s personalities, and opt for vendors who go the extra mile in customization. Remember, it’s your wedding — not Great Aunt Susie’s.

3. Ask and you might receive.

Some vendors offer products and services you wouldn’t expect. For example, our florist rents out card boxes, chair coverings and ceiling drapery. They even offer day-of coordinators who keep the timeline on track. Even if your vendor doesn’t offer the service you’re looking for, they can probably connect you to a business that does.

4. Be realistic with your time. Soak in all the main events of your engagement, like the bridal shower, bachelorette party and rehearsal dinner, but also recognize you may not have time to bake cookies for all your welcome bags. Eliminate minor tasks like hand-painting signs and focus on big-ticket priorities, such as coordinating a timeline with your photographer. After all, those photos will last a lifetime!

5. Take care of yourself.

You love spending time with your fiancé and planning with your bridal party, but every happy couple needs to unwind with some alone time. Booking a spa day, trying a hot-yoga class or even going for a mid-day walk can release pent-up energy and excitement. Don’t worry about what might happen and make a choice to focus on everything that’s going right — and your love for your partner. n

Even though school’s out for Spring Break doesn’t mean the family can’t learn something new! The Holland Museum tells the story of Holland, from its Dutch immigrants to today’s innovative, successful and diverse community. The museum features thousands of historic objects.

“New activities have made their way to the Spark!Lab Smithsonian exhibit, just in time for Spring Break,” said Katie Baker, development and communications associate director. “Invent a solution to plastic pollution during our Help Clean Up The Ocean activity. Explore Michigan animal habitats and create your very own during our Build A Habitat activity. Finally, test your inventor skills during our Now What challenge.”

Baker said during Spring Break visitors can explore the museum’s galleries and participate in a family-friendly scavenger hunt to learn about scientists whose inventions have helped clean up the planet.

On view through June 20, “Contemporary Portraits of Native Americans by James Cook” will share a glimpse into the faces of native people from across the United States. The collection of 25 color photographs explores the varied lives of Native Americans in the modernday through the lens of photographer James Cook.

You can see a life-sized Mastodon and lumbering tools. The STEM Center combines academic concepts with real-world applied activities, like building sturdy bridges and racing Hot Wheels.

On view through April 23, “L’Dor V’Dor” celebrates the history of the Jewish Community in Muskegon, exemplified by Congregation B’nai Israel, which was founded in 1888. The exhibit invites visitors to learn about Judaism and Congregation B’nai Israel by exploring three major elements of Judaism in daily life: education, religious practices and family. n

The Only Cannoli fills pastry needs in Muskegon

Bethany Bauer could not find a cannoli to buy in all of Muskegon. At least not an “authentic” cannoli like her mother’s.

So, she’s opened a little bakery on Third Street. It specializes in her from-scratchfamily-recipe cannoli as well as cakes and cookies. Because no cannoli is like hers, the little bakery is named The Only Cannoli.

The business began in 2018 at the Muskegon farmers market. Bauer used Kitchen 242, Muskegon’s incubation kitchen, to get the business started. At first, she sold her products just at festivals and the farmers market “to build a following.”

“We were super busy,” she said, so in 2019 she transitioned to a brick-and-mortar presence. Road construction there began the day she opened. She has since moved to Third Street, and the bakery is open from 11 a.m. to 6 p.m. Tuesday through Saturday.

“I grew up with cannolis,” she said. Bauer was raised in the Detroit area, where there’s a greater Italian presence than in Muskegon. “Cannolis were always around us,” not only at home but also in bakeries. Bauer learned to make them from her mother. And her mother’s grandmother, from Sicily.

Cannolis are always available at The Only Cannoli. The shells await customer requests; they’re filled with fresh ricotta and toppings upon ordering. When customers ask how long they’ll last, Bauer responds, “You should eat them now.”

Jarod Peterson — known as the chaos coordinator because he jumps in wherever he’s needed — masterminded the Choclava Chip Cookie. “If a chocolate chip cookie and baklava had a baby — that’s what it is,” Bauer said.

“Everybody knows something about baking,” she added. “As long as you’ve got a creative mind, you’ll fit in here.”

She said she wants the staff to have fun. “When they have fun, it doesn’t feel like work,” she said.

Vegan options are growing — with no butter or eggs. There are vegan shells and monthly vegan fillings. There’s also three flavors of vegan shortbread cookies and vegan carrot cake. Because staff members are continually designing new items, vegan options on the menu read, “Ask an artist!”

That’s because the crisp shells soften with time. Still delicious, but they’re typically eaten as soon as they’re filled. The bakery has a few tables where customers can sit down and enjoy immediately.

There’s not only the traditional pistachio but also more Americanized versions that include chocolate chip, cookies and cream with Oreo crumbles, and black magic with dark chocolate. New cannoli fillings are spotlighted each month.

Directions

Step 1. Cut muffin in half and toast. Place a poached egg on half of a muffin and spoon sauce over top. Garnish with Red Pepper Brunoise.

Step 2. Florentine Sauce

Melt butter with olive oil in a mediumsize pot. Add flour and cook, stirring, for several minutes. Bring milk to simmer in a small pot. Add simmering milk to flour and whisk. Turn heat to low and continue whisking until thick and creamy. Add additional milk if it becomes to thick. Season with salt, pepper, and nutmeg and remove from heat. Whisk in cheese and then spinach. Use immediately.

Red pepper brunoise (small diced)

2 tablespoons butter

2 tablespoons Fustini’s Robust SELECT olive oil

4 tablespoons flour

2 cups milk, plus more if needed

Pinch salt

White pepper

Pinch nutmeg

6 ounces grated Emmenthaler or Jarlsberg cheese

1 cup spinach, lightly chopped

Step 3. To poach an egg

Bring a large pot of water to a boil, then reduce to low. Crack the egg in a fine-mesh sieve (over a small bowl) and remove the liquidy whites. Transfer the egg to a small ramekin or bowl. Add one tablespoon of balsamic vinegar to the pot and stir to create a vortex. Pour the ramekin with the egg into the middle of the vortex and set a timer for 3 minutes. Once the egg is done, use a slotted spoon to remove the poached egg. Dab with a paper towel to remove excess water and eat immediately.

5 ounces Boursin cheese

5 ounces goat cheese

Pomegranate gastrique

Start out by mixing Boursin cheese and goat cheese together by hand or with a mixer. When mixture is smooth let sit out at room temperature to warm up while preparing the beets, tomatoes and gastrique.

Cleaning and peeling a raw beet

Step 1: Run the beets under cold water and remove any dirt using your fingertips. Handle them gently, being careful not to break the skin.

Step 2: Put on a pair of latex gloves if you do not want to scrub stains from the beet juice off of your hands when you are finished.

Step 3: Hold the beet firmly in your nondominant hand. Using your dominant hand, grip the peeler and peel the beet the same as you would peel an apple or carrot. Use the vegetable peeler slowly and methodically, always peeling away from your hands, to avoid cuts.

Step 4: Dispose of the peelings and continue your preparation of the beets for your recipe.

Pomegranate gastrique

½ cup of sugar

½ cup of white wine vinegar

½ cup of pomegranate juice

Start with a stainless steel pan, heat sugar over medium heat until sugar dissolves and begins to caramelize.

Once sugar has dissolved, add remaining ingredients. (the sugar will hiss,crackle, and harden, let sugar re-dissolve).

Reduce heat to a low-medium and let liquid reduce to ½ cup or until syrup-like.

Remove from heat and cool for 1-hour.

Preparation:

-Take a cleaned beet, and slice as thinly as possible with as many pieces as possible (if a mandolin is available, it makes the process a little easier). Set aside in a water bath.

-Prepare heirloom tomatoes by cutting ¼ inch thick slices and set aside.

-Building the ravioli (If a piping bag is available, this eases the process);

-Pipe or spoon boursin cheese mixture onto heirloom tomato. Layer with a sliced beet, and continue the cheese and beet layering until materials run out. Drizzle with pomegranate gastrique over top of ravioli. Drizzle with Fustini’s fig vinegar and pomegranate vinegar.

JALAPEÑO FIZZ FOR TWO

Two servings (in 10 ounce rocks glasses filled halfway with ice)

For the Spicy Syrup:

½ cup honey

½ cup water

¼ cup lemon juice

1 small jalapeño pepper, cut in ¼ inch slices (about 4 slices total, one more for garnish). Cut more if you enjoy more than mild heat.

Shake and mix! Chill in refrigerator (covered) overnight (but not any longer than that or the mixture will be too spicy to drink). Remove jalapeños with a fine mesh sieve before adding sparkling wine.

To the Spicy Syrup add:

1 small (split) bottle 187 mL sparkling wine

After mixing the sparkling wine with the Spicy Syrup, serve and garnish with a quarter-inch slice of jalapeño over ice in a rocks glass.

Bowerman’s on 8th brings blueberry-inspired dishes to downtown Holland

Two expansions in less than a year were nothing short of divine for Bowerman Blueberries in Holland.

Owners of the more than 90-acre blueberry farm, which began in 1954, had already started work to double the size of their on-site bakery and farm store in early 2021.

But soon, after being approached with an idea, they sensed even more work was in store for 2021: developing a restaurant in downtown Holland.

That idea was scary, especially during a global pandemic. So, co-owners Andrew VanTil, Kassie Grasmanis and Tom Parker came together to seek answers from above.

Parker said from a table in their sparkling new restaurant, Bowerman’s on 8th, located at 2 E. Eighth St. “Things just lined up. We had to take a chance.”

And from the looks of its soft opening in early February 2022, the risk is paying off.

When I walked though the front door on a cold Wednesday morning, I was surprised how open, bright and inviting the space was. The cafe was full of diners. It felt like the perfect escape from the wind and the snow outside. The calm instrumental music in the background offered a wonderful

comfortable. It’s inviting.”

Not only that, it’s unique, too. The U.S. Highbush Blueberry Council (USHBC), a federal agriculture research and promotion program, worked with Bowerman’s on 8th to incorporate blueberries into dishes people don’t normally think about.

“We are the first blueberry-themed restaurant that they know about in the country,” Parker said. “It was nice to have them as a tool.”

For now, the restaurant is open for breakfast and lunch.

Parker said signature items on the breakfast menu include Pig in a Pocket, a twist on the traditional pig in the blanket. It features breakfast sausage wrapped in a flaky, all-butter pie crust, served with gravy and blueberry rosemary coulis, which is a thin sauce. He also enjoys the Buttermilk Pancakes — three blueberry pancakes with almond drizzle and candied citrus peel.

On the lunch side, Parker highlights the Blueberry Smoked Brisket, 5 ounces of brisket with blueberry slaw, horseradish aioli and blueberry barbecue sauce.

“Everything here I can vouch for because I ate it,” Parker said with a laugh.

Looking ahead, Bowerman’s on 8th may stay open later for dinner and drinks.

“First we want to master breakfast and lunch,” he said.

Parker said they combined two spaces — the former Alpenrose Restaurant bakery and the former Sandcastle for Kids toy store — into one space. The choice of wood, lights and antiques all blend into an upscale-barn feel inspired by Magnolia, the Chip and Joanna Gaines experience in Waco, Texas.

YOU GOTTA TRY THIS! CUBI MARKET

During the pandemic, I’ve leaned heavily on grocery pick-up and delivery. With a busy schedule and a toddler at home, the convenience of ordering online is paramount. So, when I heard about the new Cubi Market in Holland, dubbed a “farmers market for busy people,” I was intrigued.

Cubi Market (pronounced cube-e) offers a broad selection of locally grown and produced products — meat, baked goods, personal care items, produce, etc. and lets customers order those products from the comfort of their homes. The premise seemed simple enough — place your order, choose a pick-up date and then pick up the goods at the Cubi Station on 17th Street at your convenience. The Cubi Station is made up of temperature-controlled compartments that store orders until you’re ready.

I decided to place my first Cubi order a few days before hosting visitors at my home. While browsing the selections on cubi.com, I loved seeing all the familiar local merchants that I recognized from the farmers markets as well as some new ones. It didn’t take long to fill up my cart —Fresh Chips from Mike’s Famous Bean Dip; Peach Mango Salsa from Bowerman’s Blueberries; a DIY Pepperoni Pizza Kit from Crust 54; Jalapeno Jack Cheese from MOOville Creamery; and Smoky Bacon Cheese Spread from Oh So Cheesy. By signing up for Cubi Market’s email newsletters, I received $20 off my first order. At checkout, I was told my order would be ready the next day and could be

picked up anytime between 11 a.m. and 11 p.m.

The next day, promptly at 11 a.m., I received an email telling me my order was ready. During my lunch break, I headed to the Cubi Station, phone in hand. I entered the building and read my email again, where I found an “Unlock Cubi” button. A prompt appeared telling me my order was in Cubi No. 8. I pressed the “Unlock” button again and heard an audible “click” as my Cubi unlocked, just like that!

I grabbed my items and headed toward the door, but not before noticing that there was another room that housed an actual Cubi Market store. I saw displays with local chocolates and baked goods, soaps and lotions, and coffee beans and other beverages. Refrigerated areas held beautiful leafy greens, dairy products, and fresh meat and produce. I took a few minutes to browse the market items, many of which I had seen on its website.

For anyone looking to support local, I highly recommend Cubi Market. Whether you’re looking for a convenient and quick grocery pickup or to leisurely browse the store’s offerings, you can’t go wrong at Cubi Market. Current store hours are Monday though Friday, 10 a.m.–6 p.m.; and Saturday, 10 a.m.–3 p.m. The Cubi Station remain accessible until 11 p.m. daily.

Date night holds the promise of something a little special, even after 22 years together. Our most recent date night dinner at the new OI Asian Bistro was a great dining adventure.

My boyfriend Bob and I shared the evening with my sister, Cheryl and her husband Bruce. Upon arrival, the four of us felt welcomed by the modern, fresh design of the restaurant. There are different seating areas within the restaurant: the main dining area, where we sat, and a more intimate seating area in the back. I found the colorful parasol decorations to be cheery on a cold, winter evening.

The menu at OI Asian Bistro is like a tour of the best Thai, Chinese, Japanese and Vietnamese fare. Each dish is made-to-order, just like at OI’s sister restaurant Mizu Sushi down the road. The best thing about going to OI Asian Bistro with a few people is that you get the opportunity to try different dishes. The

hardest thing is narrowing down what you want! I guarantee repeat visits will be necessary.

We started by sharing three appetizers: Vegetable Egg Rolls, Crab Rangoons and Chicken Satay. For the entrees, I chose my hands-down favorite, which is Red Curry. The savory flavor of the coconut milk base over the shrimp and vegetables is like the warm hug of your favorite comfort food. The other dishes we ordered were: Mongolian Beef, General Tso’s Chicken and Pineapple Fried Rice, and each was unique and delicious.

The next time you want a date night that’s sure to impress, you gotta try OI Asian Bistro!

Giving Back with Step Up

About the organization

The Step Up program at Hope College provides academic and cultural enrichment for 40 local middle school students (grades 6–8). The program, which began in the fall of 2010, helps students succeed in school and develop their future potential by caring for their social, emotional and academic needs within a mentoring context. Hope College students volunteer to provide after-school mentoring and fun enrichment activities.

Q. Why do these organizations and their goals matter?

A. Step Up matters because we are providing crucial services to both local middle school students and Hope College students. In 2021–2022, 100% of Step Up middle school students came from an underrepresented background or received some sort of state aid. They are brilliant, funny, kind and resourceful students who just need a little extra support to get where they want to go. Step Up provides that support and encouragement to help them get to high school, graduate and, hopefully, attend college. Hope College education majors need experiences working with students from a variety of backgrounds.

Q. How can locals help or get involved?

A. Locals can give Step Up either in-kind donations such as educational materials, books, etc., or monetary donations. Volunteers also make presentations to the students or take them on field trips to area museums, businesses, etc.

A. I love seeing the relationships that the kids build with their mentors and the differences they make in each other’s lives! n
