VOTERS SPOKE: CLIMATE ACTION IS HERE TO STAY By Ben Jealous, National Political Commentator
T
his month’s election results should be a wakeup call to any politician who had been unsure of Americans’ desire for robust climate action and support for a green economy. In states and counties that are red, blue, and everywhere in between, voters favored forward-looking candidates who embraced both the need for and the economic benefits of aggressive climate action. As much of the reporting on this election cycle has already pointed out, reproductive freedom was clearly a heavy driver of Democratic performance on Election Day. That shouldn’t overshadow the fact that, in marquee races, well-funded attacks against strong climate policies from the Far Right and fossil fuel interests were ignored or rejected by the voters they hoped to sway. And it doesn’t diminish the role that issues like clean energy and a healthy future for our planet and our communities played in galvanizing voters. The climate crisis is here. It’s not politely knocking at our door; it’s banging it down. Americans in every corner of this country are hyperaware of it, especially after the dangerous and deadly heat waves and wildfires many of us experienced this year. What we’re seeing in our backyards is connected to a larger, global crisis that is affecting all life on this planet we call home. Just-released research shows that the past 12 months were the hottest on record. This fight has always been about our future but increasingly it’s also about our present. Voters get it. This was especially evident in Virginia, where voters forcefully denied the Republican governor’s bid for full control of the state government. The electoral rebuke of Gov. Glenn Youngkin and his views – in which Democrats didn’t just protect their state Senate majority but also gained control of the state House – effectively ends his push to undo the climate progress enacted under his predecessor.

Youngkin sought to roll back emissions standards aimed at moving Virginia away from the sale of new vehicles with internal combustion engines as of 2035. And he has been waging an effort to withdraw Virginia from the Regional Greenhouse Gas Initiative cap-and-trade program. LaTwyla Mathias, who leads Progress Virginia and worked to mobilize voters in this year’s election, said that among her organization’s digital ads this cycle – which were shown to voters of color, young voters, and women – the ads focused on climate were the top performers. “Our research shows that climate voters care about freedom: the freedom to breathe clean air, the freedom to live in a healthy environment, and the freedom to make decisions for themselves,” Ms. Mathi-

as said. “Black and brown voters showed up on Tuesday because they know we’ve fought too long and too hard to let special interests take these freedoms from us.” “By electing climate champions, we can fight back on growing health risks and pollution in marginalized neighborhoods, defend our neighbors with severe medical conditions, make sure that our communities have an opportunity to get trained in new jobs so that the transition to clean energy doesn’t leave anyone behind, and protect the progress we’ve made with the Regional Greenhouse Gas Initiative.” So, as we discuss all the fundamental rights that were on the ballot this year and will be in 2024 – abortion, the right to vote, gender equality, workers’ rights, and more – let’s not forget that the results of

this week’s elections prove that the right to a clean environment and a habitable planet is a major election issue an ever growing number of Americans – especially those communities on the frontlines of the climate crisis. (HBCUs) and institutions primarily serving Latino students. The call-to-action mandates Governor Greg Abbott to prioritize Prairie View A&M University's funding in the Legislature’s ongoing special session. This directive aligns with the Biden Administration's alert regarding Texas's substantial financial shortfall, exceeding $1.1 billion, to this eminent land-grant university. Moreover, the resolution implores a comprehensive evaluation of the funding structures at public HBCUs and Hispanic Serving Institutions, aiming to dismantle any remnants of biased financial distribution. Commissioner Ellis passionately remarked, "Our resolution is a stand against the persistent oversight and potential racially biased financial strategies affecting our HBCUs and Hispanic Serving Institutions. It's crucial to acknowledge the financial imbalances at other educational pillars like Texas Southern University and possibly at the University of Houston-Downtown." The statistical decline in funding since 2009 is alarming, with Prairie View experiencing a 5% drop, Texas Southern University a 14.6% reduction, and University of Houston-Downtown a 15% decrease.
This trend signals a possible breach of Texas's commitment under an agreement to correct historical segregation in educational funding. Rewinding to 2001, the Texas Legislature, backed by the governor, allocated an additional $50 million to Prairie View and TSU to eradicate historical prejudice. Nevertheless, the financial support has remained unchanged since the 2010-2011 biennium, while funding for flagship universities has surged significantly. Emphasizing the critical financial plight of HBCUs, Commissioner Ellis's resolution demands prompt and decisive action from Texas's leadership. The resolution highlights a worrisome trend in state funding, which adversely affects the educational services provided by esteemed institutions like Prairie View, Texas Southern, and the University of Houston-Downtown. Commissioner Ellis's advocacy reaffirms Harris County's commitment to equity and justice in higher education, echoing the aspirations of students and communities striving for a fair academic landscape.

A
merica's biggest food holiday is almost here, and the U.S. Department of Agriculture (USDA) wants to remind consumers to avoid habits that increase the risk of harmful bacteria in their Thanksgiving meal. “Unsafe handling and undercooking your turkey can cause foodborne illness,” said USDA Under Secretary for Food Safety Dr. Emilio Esteban. “To ensure your Thanksgiving meal is wholesome and memorable without the illness, follow the four steps to food safety: clean, separate, cook and chill, and avoid risky food handling habits that go against USDA guidelines.” Here are seven dangerous habits USDA would like consumers to drop: #1 Not washing your hands or kitchen surfaces before, during and after food prep: Handwashing is the first step to avoiding foodborne illness. Wash your hands for at least 20 seconds with soap and water before, during and after handling food. Clean and sanitize any surfaces that have touched raw turkey and its juices and will later touch food, such as kitchen counters, sinks, stoves, tabletops, etc. Cleaning with soap and water physically removes the germs, and sanitizing kills any remaining. Many different sanitizers can be used: an easy homemade version is to make a solution of one tablespoon of liquid chlorine bleach per gallon of water, or you

can use a commercial sanitizer or sanitizing wipe. Thorough handwashing remains a concern for the USDA. The most recent USDA study shows that 87% of participants self-reported they washed their hands before starting to cook in the test kitchen. However, only 44% of participants were observed doing so before meal preparation. Additionally, handwashing was not attempted 83% of the time when it should have been done (after handling raw meat or touching contaminated surfaces). Throughout the study, 96% of handwashing attempts did not contain all necessary steps. #2 Using the same cutting boards and utensils for raw and ready-to-eat foods: Cross-contamination is the spread of bacteria from raw meat and poultry onto ready-toeat food, surfaces, and utensils. Avoid this by using separate cutting boards — one for raw meat and poultry and another for readyto-eat foods like fruits and vegetables that will be served raw. #3 Defrosting your turkey on the kitchen counter: Leaving any frozen package of meat or poultry for more than two hours on the counter at room temperature is dangerous. Even though the center of the package may still be frozen, the outer layer of the food is in the “Danger Zone” between 40 and 140 F — a temperature where food-

borne bacteria multiply rapidly. You can safely thaw a turkey using the following methods: Refrigerator Thawing: When thawing in a fridge, allow roughly 24 hours for every four to five pounds of turkey. After thawing, a turkey is safe in a refrigerator for one to two days. Cold Water Thawing: When thawing in a cold-water bath, allow 30 minutes per pound and submerge the turkey in its original wrapping to avoid cross-contamination. Change the water every half hour until the turkey is thawed. Cook it immediately after thawing. #4 Cooking your turkey overnight at a low temperature: It is not safe to cook any meat or poultry in an oven set lower than 325 F. At lower temperatures, meat stays in the Danger Zone for too long. Cook

your turkey at 325 F or above and ensure all parts of the turkey reach a safe internal temperature of 165 F. #5 Relying only on a pop-up temperature indicator: While the pop-up timers found in many turkeys tend to be fairly accurate, they only check the internal temperature in one spot when we recommend three. Always use a food thermometer to ensure your turkey has reached a safe internal temperature of 165 F in the thickest part of the breast, the innermost part of the wing, and the innermost part of the thigh to check its internal temperature.
