love summer, and who wouldn’t? It’s bright, warm and, of course, there’s the bonus of Christmas! In this edition of inplace we bring you the best in current design news along with some great organising solutions from Howards Storage World. unky, sustainable and cheap” says Kevin McCloud of Grand Designs about the latest trend to sweep architectural circles. Container architecture is exactly as it sounds, with houses, apartments, exhibition-spaces and restaurants being put up in a flash, thanks to reinvented shipping containers. Life inside a steel box might, at first glance, sound a bit rough – but with the loving touch of some of the world’s best architects, these rusting metal marvels are being pulled from the scrap heap, patched up and turned into the ultimate in affordable, sustainable living. Designed to withstand a rolling deck, massive waves and the occasional tumble overboard, shipping containers are just about the perfect frame to build on. They’re even strong enough to be child-proof, as evidenced by the Children’s Activity Centre in Skinners Playground, South Melbourne, pictured above. It’s a building concept that’s being embraced by the world. The UK boasts a student housing
project called Container City, while New York has a pop-up Puma shop that travels as a container. A favourite has got to be the Hamburg Cruise Container Centre by RHW Architekten, essentially a shipping terminal made of shipping containers in the same traditional yellow and blue as the containers being delivered – pity the poor captain who unloads at the wrong spot… For the record, Australia’s largest building made from shipping containers can be found at Canberra’s Australian National University. Designed by Australian company Quicksmart Homes, the project was completed six months after the materials were ordered. Following a modular design, the building is made from prefabricated shipping containers built in China and shipped to Australia, before being transported by road to the site in Canberra. Quicksmart describe their system as a “fusion of prefabricated construction, intermodal transportation and modern architecture.” We call it the ultimate storage solution! ■ inplace

Matthew Eastwell, Executive Chef at Accor Hotels, reveals the restaurant secrets you can use to whip your home kitchen into shape at Christmas.
W
e may never see Gordon Ramsay sorting his pantry or Jamie Oliver cleaning out his fridge, but kitchen organisation is as fundamental to the success of a restaurant as a aming ambĂŠ or the perfect souÊ. Just ask Matthew Eastwell. As Executive Chef at Accor Hotels, he runs not one, but two busy hotel kitchens in Sydney’s Darling Harbour tourism district. His team of six chefs are split between restaurants at the Ibis and Novotel hotels, serving more than 100 people nightly; and then there’s the room service orders at the 520 room Novotel to contend with. “The two restaurants have dierent menus and dierent styles so it can get quite manic,â€? says Eastwell. “It doesn’t matter if our guests are from overseas, interstate or just down from the Blue Mountains for the weekend – they all expect a very high standard, so we have to be on our game at all times.â€? For Eastwell, that means running a tight ship. He believes that a good kitchen is an organised kitchen and says that applying some key rules common to successful restaurants to your home kitchen can improve the cooking experience for all – especially at Christmas. “I love cooking at home. I have a wife and daughter who are my biggest fans; or at least I hope they are,â€? he laughs. “It might sound a little strange but, for me, cooking at home is a great way to unwind at the end of a busy day. As long as you’re organised, the cooking process can be really quite peaceful.â€?
CHOOSE YOUR WEAPONS
A poor tradesman may indeed blame his tools, but for a chef the job begins with the tools of the
trade. Eastwell divides each of his professional kitchens into three sections where each chef has a list of dishes to prepare. Before so much as a potato is peeled, at the beginning of every shift they must identify the utensils they need and organise them in order of importance. “Space is at a minimum in a busy kitchen environment, so it’s all about organisation,� he says. “Each chef collects the utensils they’ll need before food preparation begins and organises them in trays on the bench top so they’re not searching through drawers every time they need something. Obviously, the most heavily used utensils are kept closest to hand. A home cook should do exactly the same thing.� A solution as simple as equipping your kitchen drawers with good organisers can save you plenty of time at the stove.
SLICE AND DICE
The best chefs, says Eastwell, know their menus inside and out. He explains many chefs write detailed ingredient lists of their dishes to ensure everything is prepared before service. To be eective in your own kitchen, get all your chopping done before you start the stove. It’s also a good idea to divide ingredients into the proper portion sizes before you begin and store them in air-tight containers ready for use. This can be particularly helpful when preparing for a dinner party. “Preparation is everything,â€? says Eastwell. “Cooking is all about getting the process right. If you don’t have all your ingredients prepared and ready to go before you start, that’s when you’ll have things burning and boiling over because you’re trying to chop an onion or some garlic that you forgot to prepare before you started.â€?

So your kitchen is a shrine to organisation – now it’s time to put it to the ultimate test and cook Christmas lunch. Here are some tips to help you survive:
1.
Spend Christmas Eve in the kitchen. Take the stress out of Christmas lunch and get as much preparation as possible done the day before.
2.
Don’t be scared to delegate the cooking duties. Pro chefs call on a team of workers to get the job done – and if it all goes pear-shaped, you can share the blame.
3.
Ask your mum. They’ve been cooking Christmas lunch since you were in nappies and will be bursting with helpful hints.
4.
Save time and cook your turkey without the stuďŹƒng. The turkey will roast much quicker without it and stuďŹƒng freezes well so you can prepare it in advance – just don’t forget to thaw it out.
5.
Better still, ask your butcher to spatchcock your turkey and throw it on the barbeque with some lemon, garlic and thyme for an Aussie touch.
6.
If all else fails, forget the turkey and put some prawns on ice. Buy them fresh from your ďŹ sh monger for a true blue Christmas.

Being prepared in the kitchen makes Christmas run smoothly and nothing will make the day better than a calm and happy you. Start early on anything you can. Puddings, cakes, biscuits, meringues and chocolates can be made ahead of time and stored. Party food like chips, nuts and softdrinks can also be bought well ahead of time. Always keep a few extra packets of crackers on hand. Pre-made Pavlova shells are a great festive pantry item and can be transformed into a dessert with ingredients as simple as strawberries and cream in a matter of minutes. A great option when you suddenly realise there are 10 guests instead of six! Planning for success! As the big day approaches, sit down with a cup of tea and make a list of everything you will be cooking. Break this down into ingredients and check the pantry for what you need to buy. If you are going to try a new recipe, give it a trial run now. Check your bakeware and make sure you have enough storage containers for all the goodies you are preparing. Next, break your menu down into what can be prepared in advance or on the day before, and then what must be done on the day. This will help you plan your pantry storage so that raw ingredients are accessible, while premade treats can remain hidden from eager ďŹ ngers! Lastly, make a list of everything you need to do on the day with a rough timeline. On the day, have a light breakfast and stick to your plan. Eastwell also demands that all his chefs clean down their work spaces between tasks. “The prime reason is to prevent cross-contamination – you don’t want to be transferring any germs across your chopping board, especially where raw meat is involved,â€? he says. “But it’s also easier to work on a clear bench space. If you’re working among scraps and general mess, it’s much easier to become confused and lose focus on the vital steps in the process of cooking your dish.â€? At home, it’s a good idea to use several chopping boards and assign each to a dierent task – preparing red meat, chicken, ďŹ sh or vegetables – to avoid contamination. And make clean-up a lot easier with a bench-top rubbish bin and recycling station.
# DITCH THE CLING FILM
“When it comes to food storage, you can’t rely on cling ďŹ lm,â€? says Eastwell. “Cling ďŹ lm is okay in the very short term, but it often falls o after you’ve moved the covered plate or container around a few times, and it doesn’t provide a good seal. Keeping food in an air-tight container locks in the freshness. That means you can prepare more in advance. For example, you can wash and trim most of your vegetables and 14 inplace magazine

they’ll be ďŹ ne in the fridge for a few days. And choose plastic containers that are easy to stack to optimise your storage space.â€? Use clear plastic cupboard caddies to group similar ingredients for ease of use – for example, olive oil, salt and pepper are often used together, as are soy sauce and honey – and use pantry racks to double your shelf space and prevent items from getting buried out of sight.
# KEEP YOUR COOL
Keeping your cool in the kitchen comes down to the state of your fridge. Roll-out fridge shelves, condiment caddies and even a Lazy Susan help keep your fridge in order, but Eastwell recommends a labelling system to eliminate wastage and save you time – and money. “Our cool rooms are obviously bigger than your standard domestic fridge, but we face the same problems,� he says. “Whenever we produce something, we label it and date it. There are two reasons why. Firstly, it allows us to quickly identify everything in the cool room when we need it. And secondly, it makes it much easier to keep track of what is fresh and what is not. “It’s the same in a professional kitchen and in your kitchen at home – wastage is money down the drain.� ■inplace www.hsw.com.au

t’s a frosty zero degrees Celsius and a veil of snow reflects a glimmering light as Vienna wakens to the aromas of a new gourmet sensibility. We’re a world away from the summer heat of Australia and a ‘traditional’ Christmas is very much alive in this beautiful city of baroque cupolas and roaring fireplaces. It’s the perfect escape – a chance to relax. Vienna epitomises the winter of European romance. Horse-drawn carriages (known as Fiakers), their passengers swathed in furs and blankets, clip along medieval alleyways as they jostle between the neo-gothic Vienna City Hall, the fine spires of St Stephens Cathedral and the ultra modernist architecture of Adolf Loos. It is also a city of extraordinary culture, with museums around every corner and the sounds of Strauss continually drifting on the breeze. Food is a major Christmas consideration for the Viennese and few cities indulge so splendidly in bountiful excess.
Forget the cholesterol and do as the Viennese do: indulge in Wiener schnitzel at Figlmüler; gorge on goulash at Gulaschmuseum; or savour the delicious Sasher-tortes and strudels Vienna is famous for. Contemporary Viennese cuisine is taking the world by storm with innovative variations on traditional flavours being championed by Helmut Österreicher. he run up to Christmas is the perfect time to archive the items you have accumulated during the year. It’s important to create a feeling of space and ow in your home by clearing the decks and getting things organised. Keep in mind that archiving doesn’t mean forgotten or gone and you will need to make your archiving work for you. An area we often overlook for archiving is the study. It’s the logical place to tuck away paid bills, receipts, certiďŹ cates and other paperwork. The truth is many of the papers and pictures we keep are not actually needed on a daily basis. Making a plan is the starting point. Take some time with this by sitting down and having a really good look through what you are dealing with: correspondence; photos; household receipts; memorabilia; university or work related documents you might need one day; and so on. If everything is jumbled together you may need to make a preliminary sort to get a good grasp on what you are storing. Once you have determined what needs to be stored, make a plan for the most

eďŹƒcient way to organise these items and sort everything into appropriate groups. The groups can then be broken down further. Photographs, for example, might be broken down into particular holidays or years. Using clearly labelled storage boxes suits large amounts of a single type of material. File boxes are available in a number of sizes and allow for more speciďŹ c storage, but either option is great for documents. Letterboxes are perfect for correspondence, but also make terriďŹ c storage for memorabilia. The photo boxes are (as the name suggests) ideal for photos and work well with the letterboxes if you want to separate your photos into smaller groupings before archiving. hristmas is always exciting and sometimes a little crazy with all the family, parties and catching up. To help you through this busy time we have put together 24 pre-Christmas tips to get your kitchen organised before the big day on December 25. Let’s face it, we spend oodles of time in the kitchen, so making it functional and welcoming is going to make Christmas preparations a more peaceful and rewarding time. Remember: if it’s organised well, everything just works! Get your pantry ready for Christmas with a good clear out and reorganisation. To get started, make a plan. Think about what you need to change to make your pantry more functional. Start this process by prioritising everything into order of use. For example, breakfast cereal should be on the most convenient shelf, while excess sports drinks can sit on the bottom shelf. This might be the time to get your spices in order so think about which ones you use most frequently. You will be amazed at how much more use you will get out of your spices just by putting them into uniform containers with easy to read labels. The kitchen is a personal space so no one set of rules will apply to everyone, but do use logic and don’t put the salt at the back of a top shelf!

When selecting your kitchen wall unit, make sure it hugs the ceiling and you’ll have useful storage where the average home can only boast dead space.

Try to keep your counter uncluttered to give yourself maximum space for food preparation – especially important when you have Christmas dinner on the go! Remove anything you don’t use on a daily or weekly basis as the more stu you have on the counter, the more often you have to clean and wipe down.

It might not always be possible to store everything away o your kitchen counter top, so when choosing items and appliances that will be in view on a permanent basis, go for something that will look good, and act as a focal point in the kitchen.

Keep things where you use them. When your utensils are stored too far from your stove you’ll spend a lot of time going back and forth, putting things down along the way. That’s when your kitchen starts getting disorganised.

Throw out food that is past its ‘useby’ date. Okay, it sounds obvious, but you’ll be amazed at how many tins and packets you have been accidentally hoarding simply because you can’t see them (that can of tomatoes, for example!). A clear-out works wonders and opens up space.

Now that you have everything out of the pantry give those shelves a good clean. It’s simple, quick and much easier to do with everything out. Wash the insides with warm soapy water. Rinse, let dry and replace any cupboard and drawer liners.

Think about what you store on high shelves. Put things children should not use – such as sharp tools, alcohol and cleaning chemicals – well out of reach, but also make sure that nothing you use regularly requires tippy-toes to get it down. Additionally, keep the things you use every day within reach. Try moving the soft drinks to a wheeled stacking basket to free up some space.

The Plan
The plan was to rearrange everything so that each item was visible and accessible according to frequency of use (we live by the mantra: ‘if you can see it, you will use it!’).
Sort We sorted into four main groups: everyday items, cleaning, heavy duty cleaning and plastic bags. These were then lined up according to frequency of use with the items that get used most often placed at the front.
Store â– Everything you need at your fingertips.
Our browse through the Orgo collection drew to a close with their stackable spice canisters, which make good sense for a busy cook. With Christmas on the way, cloves, cinnamon and nutmeg are three useful spices to have at hand (Orgo Set of 3 Spice Jars UNE112908 $19.95). Chopping boards were the next issue. Used all the time they usually have their own cupboard space but for a designer look we selected the Joseph Joseph Index Chopping Board IDS2019 for $99 – a fabulous solution to multiple stacked chopping boards. It has its own stainless steel storage and the boards are colour coded to make them food safe. Of course, there’s no point having the perfect kitchen without some recipes to play with. The Stainless Steel Cookbook Holder ZLS4339 for $49.95 is arguably the best cookbook holder available. The height and angle are adjustable and it can handle everything from a magazine cutting to The Cook’s Companion! Finally, by moving the wine from the pantry we were able to store the bowls out of sight and properly store up to 10 bottles of wine. Poisons like ant killer were placed under the top basket. The remainder of the cleaning products were then placed in the lower basket with the heavy cleaning products at the back. Meanwhile, the plastic bags were put into a dispenser – the simplehuman Upright Bag Holder ALB10130 for $49.95 which holds up to 50 bags – a quick solution that made a huge dierence!

We chose the Expandable Cutlery Tray with Grip Base ($39.95) as it had suďŹƒcient channels for the amount of objects we wanted to store and a good sized front compartment for frequent use items. This really had a stylish look and was able to accommodate all the items our cook used. The areas were divided in a way that allowed us to put the frequently used items at the front and less important items towards the back. And that’s it: one hour, a whole new look and a more organised life for $600. Easy!

9. Properly store your shoes and boots. These are expensive, quality items and deserve more than being piled together at the bottom of the wardrobe. Shoe storage boxes make it much more likely that you will actually wear your shoes by keeping them clean, un-squashed and visible. Another great tip when storing shoes is to think high. are reasonably narrow, four were used. This allowed an extra box for the day’s homework books to be ďŹ led after class and retrieved at the end of the day. The large white boxes were a robust choice and suďŹƒciently wide for the larger books older students use. We also like the labelling system; it makes it instantly clear what goes where. Only one storage box was used on the bottom shelf to leave room for both a bag and lunch. The school’s Principal, Dr Nancy Hillier, is right behind Max’s eorts, “I think it is important for students to keep a tidy locker. IIn M Max’s words‌ Max Player has found hiss new locker layout to be a huge help: “Actually being able to see what books I have makes it way easier to get to them. Another quick storage solution that has worked well for Max has been the addition of a hook for his school hat: “I’m glad it’s not oating around the locker getting squashed!â€? In fact, Max wouldn’t mind a second hook for his science goggles as well.
