I
n 2002, a small group of impassioned Hualālai Homeowners set out to establish a first-of-its-kind, luxury residential resort foundation to benefit employees and their families. Today, the non-profit Hualālai ‘Ohana Foundation remains committed to its original philosophy, vision and values, raising hundreds of thousands of dollars each year.

I’ve never experienced anything like this, I’m privileged to be a part of it,” she says. Uncovered medical expenses include airfare, accommodations and living costs for those individuals who require treatment at major medical facilities on O‘ahu and/or the mainland, Price says.
An annual donation campaign and once a year fundraiser, golf tournament, silent auction and awards dinner, account for most of those dollars, although Junior Members have contributed through their own special events and programs over the years. Starting with a golf cart wash in 2003, their efforts have grown to include everything from recycling campaigns and customized Hualālai board game sales to recreational events such as a Paint Run.
Educational support ranges from preschool learning tools such as Leapfrog products and books; Honor Roll Awards for middle and high school students; and higher education scholarships for employees and/or their children to attend trade schools, community colleges and universities on-island and on the mainland.
“Hualālai was established with the goal of creating an exclusive family resort with a genuine sense of community. As with the majority of their neighbors, this founding group of Members clearly recognized that it’s the employees who have and continue to make that goal a success,” Foundation Executive Director, Cara Price, says.
Managed and administrated by Homeowners who serve as volunteer Officers and Board Members, the Foundation provides 100% of the funds donated and raised annually to support these two objectives, according to Price.

“Donating more than just valuable time and expertise to the cause, Foundation Board Members and Officers write a check to cover all annual overhead costs, including the salaries of three paid staff,” Board Member Bill McDowell says. McDowell, a three-year Board veteran, also serves on its Medical Committee, sharing his knowledge as the owner of a health care facility on the mainland and his personal experience as a caregiver to his wife of 10 years who lost her battle to cancer. He and his partner Julie Wrigley joined the Resort community as Homeowners six years ago and McDowell says, “We’ve never been involved in a community that’s this interesting and so much fun – we love it for the people here, the staff is just spectacular. For us, it’s always been important to give back to the community we live in – to return a little bit of what the employees give us, love and care,” he says. "The commitment is heartfelt and truly a win-win for both recipients and donors who, through the Foundation as a vehicle for giving, have an opportunity to contribute to the well-being and aloha spirit of our unique community," current President, Donna Chipps, says. Meet the President Vibrant and energetic with a smile that lights up whatever space she’s in, Donna Chipps is the current President of the Hualālai ‘Ohana Foundation. A dedicated supporter from the time she joined the Hualālai Resort community in 2003, Chipps is in her third term as President and prior to that served seven years on the Board of Directors. “From day one, I was drawn to participating in Foundation events and donating annually. I was so happy to be here, and I wanted to contribute back to this wonderful community. I’m a big believer in paying it forward to employees who are so welcoming and gracious, who take such great care of all of us,” Chipps says. She is quick to acknowledge the Foundations founders, “They came up with a concise mission statement, little of that has changed.” Fortunately, what has changed over the years is the growth of educational programs and medical benefits available to employees and their families. Chipps says she hopes to have every Member contribute, whether it’s writing a check or donating time and expertise. “The joy of contributing to this Foundation in this relatively small, close-knit community is having the chance to experience the relief and joy in the recipients' smile, receive a hug and perhaps a handmade lei of flowers grown in their garden.”

Today Sophia is attending Cal Poly University in Pomona, CA, thanks to a higher education scholarship from the Foundation, while Noelani is attending community college here on Hawai‘i Island.”

F
ollowing a 12-year journey, Hualālai Resort’s Director of Natural Resources, David Chai, debuted one of his team’s most delicious projects – organically grown oysters cultivated and harvested on-property. This latest nod to sustainability is a reflection of the Resort’s commitment not only to culinary excellence, but to the preservation and enhancement of the natural resources found in this historic region known as Ka‘ūpūlehu. Chai, a marine biologist, led the charge in making the cultivation of oysters on-site a reality. It began, with research, and the support of the Resort Owners.
“I’ve been with Hualālai since 1990, the first six years as a consulting marine biologist and the past 21 as a full-time employee. My initial role consisted of restoration of the natural anchialine ponds found throughout the property and development of a marine management plan, a condition required by the County prior to approval of resort development. From the beginning and through a change in Resort Ownership in 2006, support for our natural resource projects, and stewardship of the land and ocean here has never wavered,” Chai says. Several years were spent testing 8
numerous varieties of oysters to determine the species best suited for the pristine, slightly warm waters of Pūnāwai Lake which is centrally located on the resort. This award-winning, man-made lake also serves as a unique and attractive water feature on the fifth hole of the Members’ only Ke‘olu Golf Course. Nicknamed the “Living Machine”, the three-million-gallon, 2.3 acre lake earned the name for its use of floating islands of plants to filter the water and to remove pollution and excess nutrients. Chai, who was instrumental in the overall design of the energy-efficient filtering system says, "We
basically built a mini-ecosystem to clean the fully self-contained lake.” Shortly after its construction, Hualālai Resort was rewarded for Chai’s efforts when the Environmental Protection Agency named it a recipient of its annual awards for environmental responsibility. The source of water for Pūnāwai Lake comes from a subterranean seawater aquifer which is tapped from wells deep within the lava. The lake, Chai says, is completely surrounded by a food-grade quality liner made from material that prevents contaminants from entering the lake and which doesn’t leach any of its own composite materials into the water. “Initially, inspection and testing of ponds and lakes on Hawai‘i Island was extremely expensive and actually cost prohibitive for our Health Department,” Chai says. “Finally, just in the past few years, more efficient and less costly methods have been developed and now we welcome health inspectors here once a month for rigorous testing that proves our lake water is absolutely clean and pure, and our oysters are healthy.” Following years of oyster research, Chai finally found the perfect mollusk for Pūnāwai Lake water conditions in late 2015– an East Coast oyster from Chesapeake Bay. “This particular species doesn’t mind low salinity and higher water temperatures, and the meat quality

The lake water is comprised of both brackish water and ocean seawater, he adds, resulting in our ability to adjust the salinity or brininess of the oyster. Soon after that discovery, Chai and his team of five marine specialists provided some 6,000 oysters to three of six resort restaurants. Since then tens of thousands of these home-grown oysters have been consumed at the Resort. In 2017, with the addition of another species found to be just as ideally suited to the lake’s conditions (the Pacific Oyster aka Kumamoto) Chai’s team anticipates fulfilling demand for oysters to most resort dining venues – ‘ULU Ocean Grill + Sushi, Beach Tree, Hualālai Grille and, for the first time, the Residents’ Beach House. “We currently have 40,000 juvenile Pacific Oysters at Pūnāwai
Lake which should be ready for harvesting this summer,” he says. “The demand from our restaurants for fresh, resort-grown organic oysters is extremely high, so at this point they are all reserved exclusively for our chefs,” Chai says. That may change soon, however, as Chai is working with food and beverage executives now to develop an easy and efficient program to make the oysters available to Members for at-home consumption. Meanwhile, earlier this year Chef Joseph Dircks, who oversees the kitchens at the Residents' Beach House and Ke‘olu Clubhouse, worked with Residents' Beach House Sous Chef Eric Garrett to create a handful of dishes featuring the succulent crustaceans for the restaurant’s summer menu. The duo wasn’t ready to disclose exactly what those tasty treats will be as of press time; check them out when you’re here for the summer season and beyond! Currently, ‘ULU Ocean Grill + Sushi features Hualālai Oysters on the Half Shell with Hot Damskey and Yuzu Ponzu Sauce; a fried Hualālai Oyster Po’Boy with Arugula, WOW Tomatoes and Traditional Louisiana Remoulade is served at Beach Tree; and Hualālai Grille offers Hualālai Oysters on the Half Shell with both a Spicy Maui Onion and Ogo mignonette, and a traditional house-made Cocktail Sauce.

oseph Dircks (Chef Joe) has been managing the stoves at the Members' only Ke ‘olu Clubhouse since 2015, and when he’s not in the kitchen you’ll find him hosting hands-on cooking demonstrations, planning exciting culinary events and preparing special in-home dinners for Hualālai Resort Homeowners. At once humble and witty, he insists not all of his ideas are winners but it doesn’t stop him from trying out new things to keep the energy and offerings fresh, and the diners happy. “None of this would be possible, without the tremendous team I have here. The appreciation and respect I have for my veteran kitchen ‘ohana allows me the freedom to step away from time to time to develop new menus, participate in Resort-wide special events, offer cooking demonstrations and more,” Chef Joe says.

Introducing his two go-to cooks, Brendan Uchida and Kazu-san (one of Hawai‘i’s most respected sushi masters) the bond among the three is undeniable. They are immediately recognized as kindred spirits united by their passion for great food, good times and nurturing others.
And more includes overseeing culinary operations at the Residents’ Beach House, working closely with longtime Sous Chef, Eric Garrett.
At 74, Kazu-san brings spirit and fun to the Friday Night Seafood Fests with his impeccable skills, quick smile and contagious sense of humor, while Hawai‘i Island native, Uchida, brings a calm, confident demeanor to managing the kitchen when the “boss” is away.

The move was an easy golf cart ride up the hill from his post as Sous Chef at Four Seasons Resort Hualālai’s Beach Tree Restaurant. With several years’ experience prior to that, and following studies at the Culinary Arts Institute in New York, his bio reads like a list of that city’s most sensational restaurants: Union Square Café, Gotham Bar & Grill, Nobu’s and Morimoto’s in Chelsea Market. With a career filled with such monumental food and diverse cuisine experiences, Chef Joe says his inspiration for Ke‘olu’s food concept – contemporary bistro – was the Members themselves. “One important lesson I’ve learned over the years is to listen and respond to what your guests really want to eat. We achieve that by using the very best local ingredients available – many of them grown right here in our gardens adjacent to the kitchen – prepared with simple execution.”
Ke‘olu’s Fresh Catch Special Serves four
Ingredients
1 lb. Heirloom Tomatoes (about 3 medium-sized) 1 lb. Local French Green Beans 2 Cloves Minced Garlic .25 oz. Fresh Basil Chiffonade .25 oz. Sherry Vinegar Sea Salt to taste for blanching Green Beans Water & Ice 1.5 lbs. Local White Fish 1 oz. Unsalted Butter .5 oz. Virgin Olive Oil .1 oz. Chili Flakes Black Pepper to taste
Method
Dice tomatoes and place in bowl. Remove stem tips from the green beans. Combine water and salt in a medium-sized sauce pot. Bring the water to a boil and have your ice bath ready to go! Add beans to boiling water for about 1 minute, shock them in the ice bath for about 1 minute; set aside on paper towel. Heat a 12-inch sauté pan and add the butter and olive oil. Then add the minced garlic, basil and chili flakes to the pan. Add green beans and simmer for 2 minutes. Pour Sherry vinegar into pan and add the diced tomatoes. Simmer on low for 3 to 5 minutes. Prepare fish on grill or in sauté pan to your heat preference. Pepper to taste. Place green beans on plate, top with the fish and then finish it off with the warm tomato sauce.

Today, however, and for the past 14 years, she finds herself operating Willman Interiors in a chic studio space set within a Quonset hut in sleepy Waimea town on Hawai‘i Island. Foot Golf: Juniors Just Wanna Have Fun! Director of Golf Operations Brendan Moynahan and his team of golf professionals (Jake Belveal, Matt Hasegawa, Scott Bridges and Dakota Smith) are constantly coming up with engaging and fun activities to bring more and more Junior Members into the game. Of course, private lessons and
clinics have always been a big part of the mix with pitching, chipping and bunker play being among the most popular specialty clinics, according to Moynahan. Seasonal special events such as Night Glow Golf (9 holes) and Night Glow Putting (5 holes) put the emphasis more on family fun
than learning. Foot Golf, introduced in 2016, is the latest in junior fun on the course. It’s a hybrid of soccer and golf with pop-up soccer goals appearing on the 9 holes that are played late in the day. Upcoming in 2017, Moynahan says, is Night Glow Bocce Ball on the Hualālai Golf Course.
Who Let the Dogs Out? With more and more furry “Members” on Resort property these days, we needed to find a place for them to run free with their human “parents”, Brendan Moynahan says.

We can always count on Bella’s owner, John Ryan, to provide canine cocktails and pupus for all,” Skeen says.
“Looking for a safe environment for the pooches and their owners which has zero impact on Members’ homes or environs, we designated the fairways on Hole 2 of the Hualālai Course and Hole 14 of the Ke‘olu Course as late afternoon dog playgrounds,” he says.
All this fun does come with a few rules. Owners must accompany and be in control of their dogs at all times, and are required to clean up after their pets. At all other times, dogs must be on-leash while in public areas of the Resort property.
Every day from 5pm to 6pm is “Canine Yappy Hour” on these specific fairways, according to Member John Skeen who, along

n late 2015, Four Seasons Resort Hualālai formed a partnership with legendary six-time IRONMAN World Champion Dave Scott (aka “The Man” for his super hero powers on the course) to offer a unique, fiveday Triathlon Experience training camp for Homeowners and hotel guests.
Introduced with great success in early 2016, the full-immersion training camps are offered four times a year. In 2017, the final session is set for August 28 through September 1. I don’t teach just how to train for triathlons,” Scott says. “I share ideas on how to optimize health and fitness, which makes this training valuable for everyone, not only triathletes and aspiring triathletes."

Meet "The Man" up in Davis, California, Scott excelled at football, basketball, swimming and water polo. He studied exercise physiology at the University of California, Davis, which provided expertise key to successful performance in extreme endurance competitions.
Six-time IRONMAN World Champion, Dave Scott, admits to being “born a jock” but insists he believes he’s an even better teacher. Let’s just agree he is both a tremendous athlete and, most likely, the most outstanding trainer on the planet! Growing
So, by the time the IRONMAN was created on O‘ahu by U.S. Navy Commander John Collins in 1978, Scott was not only intrigued by the concept, but encouraged by Collins to “do this thing”. In 1980, he did just that, winning his first event on his first attempt. It was the same year the Triathlon moved to Hawai‘i Island where it continues to take place each October. This initial win was 38
followed by 5 more in 1982, 1983, 1984, 1986 and 1987. In 1993, Scott became the first inductee into the IRONMAN Hall of Fame. To celebrate, he came out of retirement at the age of 40, following a five-year absence and raced again. In one of his proudest moments, he beat an impressive field of professional athletes, many in their twenties, placing second overall. Scott competed in his last IRONMAN World Championship in 2001 at age 47, taking fifth place before retiring. Since then he has authored books, served as a motivational speaker and commentator, while creating unique training programs.
