Top 5 Dominique Portet Winery You Must Try in 2021 A family whose winemaking history dates back to the 1700s must have sustained in the business because of their quality produce and ethics. Carrying this long and remarkable legacy of winemaking, Dominique Portet established his own winery brand in 2000 with his own name. His introduction to wines happened at the world’s most illustrious wine properties - Château Lafite-Rothschild where his father served as vineyard & winery manager. He studied at the Montpellier University of Oenology and served as a wine-buying adviser. This passion and interest made him a pioneer of the renaissance of Australia’s cool-climate wine industry, founding renowned sparkling wine house Taltarni in the Pyrenees and Clover Hill in Tasmania. The new journey started in the Yarra Valley with this eponymous winery. At present, Dominique Portet winery is taken care of by the tenth-generation winemaker of the family, Ben Portet who heads the winemaking team. Utilising his wisdom and learnings that began with four vintages at the renowned Adelaide University finishing school of Brian Croser and Con Moshos at Petaluma in the Adelaide Hills, Ben is adding his “new world" experiences to this old legacy. Dominique Portet Fontaine Cabernet Sauvignon 2019 Yarra Valley This bright, pure fruited Cabernet Sauvignon is tightly knit with generosity, concentration and a red fruit spectrum. You can think of raspberries, cherries, plum with some darker brooding, brambly structure coming through on the palate. Balancing the fruit are mineral notes like graphite/ pencil shavings, refreshing acidity and tannins that are long and silky.
