Aloo Tikki Chole Recipe
Spiced potato patties served with spicy north indian chickpea curry and chutney.
Ingredients: 1. 4 medium size potatoes 2. 1 tsp cumin powder 3. 1 tsp coriander powder 4. 1 tsp fennel 5. ½ tsp red chili powder 6. 1 tsp dry mango powder 7. ¼ tsp dry ginger powder 8. ½ tsp chaat masala powder 9. 2 tbsp corn flour 10. 2 tbsp oil for frying the tikkis 11. Salt to taste 12. other accompaniments & garnishing 13. 1 bowl of amritsari chole or punjabi chole 14. ½ cup chopped onions 15. ¼ cup chopped coriander 16. ½ cup mint coriander chutney 17. ½ cup tamarind dates chutney
18. chaat masala to taste 19. red chili powder (optional) 20. lemon juice (optional)

Boil or steam the potatoes first till they are cooked till soft. Peel the potatoes when they are still warm and then mash them. Add all the spice powders including salt. Add the corn flour as well and mix well. Make medium sized patties from the potato mixture. Shallow fry or pan fry till the patties are crisp and browned. Serve with chole topped with both the mint-coriander chutney and tamarinddates chutney. 8. Also add some chopped onions, chaat masala and sev. 9. You can also add some yogurt if you want.
