Curing Salt is a propor tionate measure of salt and nitrite regulated by the Federal Food and Drug Administration and the Meat Inspection Division of the United States Department of Agriculture. Individual cure manufacturers are responsible for maintaining the appropriate measures, thus insuring a finished sausage or jerky has no more than 200 parts per million of residual nitrite. Cures are necessary to sausage making because they help to prevent food poisoning. Botulism spores, found in all meats, are harmless and cause no problems by themselves.
