ell, we’ve survived the busiest and hottest month on record – not only here at SOCIETY Towers, but Málaga has just recorded its highest number of arrivals ever. But that hasn’t stopped us from knocking out one of the freshest, summeriest and funkiest issues yet! Party, party, party! It’s been a month of opening parties, summer galas, beach parties, polo parties, art exhibitions and secret garden parties… in fact, I doubt there’s been a party in Marbella that we haven’t attended. The SOCIETY team has been out and about in force and we’re delighted to welcome so many fabulous new businesses to the coast – and onto our pages! From the exclusive, members only Barber Club, which offers the ultimate male grooming experience; complete with wet shaves, beauty treatments, massages and coffees or beers served in its über-funky surroundings, to the stunning new Sutton restaurant on the Golden Mile, where every dish looks like a work of art. We also welcomed the wonderful Timeless art gallery and had a sensational night at Timeless’ Secret Garden Party, set in a stunning villa where the sculptures and artwork truly came to life. Another fantastic addition to the coast’s dining spots is the newly revamped and reopened De Medici restaurant – and let’s just say that their opening party was nothing short of spectacular! We also welcomed some charismatic personalities this month, including our gorgeous cover model, Georgia Salpa. Before hopping down to the beach for our summer shoot, she took time to share her beauty secrets, tips and tricks with us so that we can let you all in on how she looks so damn hot and how you ladies can get that bikini body this August.
We also caught up with the charismatic rock star, Rick Parfitt, from Status Quo who told us a little about his life here in Spain, his family, career and plans for the future. From Rock stars to DJs – We are thrilled to have Marbella’s own superstar DJ brothers on board the SOCIETY team. The Wallem Brothers are our new resident music columnists and they’re going to be giving us a heads up on the latest tunes and coolest music acts around. Our food and nutrition expert, Bettina Campolucci Bordi, has long been rocking our world with her delicious and healthy meals and creations, BUT NOW – Even Jamie Oliver has started to take notice and this little lady is on track to do great things in the world of food! Talking of eating healthily, we’ve been spending a lot of time at the newly opened bar and restaurant Santé. This stylish venue is a gem of a find, dishing out tasty healthy meals and whizzing up some phenomenal cocktails. As always, we’ve got Ian Kuah on hand to rev up the engines for us gentlemen as he takes the Audi R8 for a spin. Of course we’ve got all the usual features – and plenty of new ones and our events section is brimming with fabulous parties and beautiful people. I’d like to say we’re going to calm down this coming month, but as Marbella is fast becoming the HOTTEST place to be (in both senses of the word!) we’re only just getting started! eorgia Salpa only exploded onto the modelling scene a little more than five years ago but has already become a household name in her native Ireland and is rapidly gaining an international fan base and worldwide exposure as she now has close to two million followers on her combined social networks sites.
Rihanna to name a few, ranking higher than some of the most famous women in the world.
She’s arrived with a small hair and make-up team, styling assistant and photographer, and they all move into the dressing room to begin preparations for the shoot.
Georgia has also put pen to paper with her extremely popular weekly column in one of Ireland’s national newspapers over the past five years and has appeared on numerous television shows, her most popular and regular role was on comedy show Republic of Telly, as well as appearing on the hugely popular television shows Celebrity Big Brother and Celebrity Salon.
So, when I found out that Georgia was going to be visiting us at SOCIETY Towers before her photo shoot I suddenly wished I’d done my hair, joined a gym, and hadn’t been eating my way around Marbella for the past month - as meeting with someone THIS HOT was bound to make me feel small, ugly and inadequate. I smeared a little rouge over my lips and cheeks ran my fingers through my hair attempting to comb out the knots and sat gazing upon photo after photo of Georgia’s teeny-tiny waist, endlessly long legs and luscious bouncy hair, toying with the idea of skipping lunch so that I could appear a little more svelte.
The international cover model currently boasts fifty international magazine covers under her belt and now, with SOCIETY’s August cover, it’s 51! Georgia has graced the cover of FHM magazine a whopping eight times and has also made it into the top ten of FHM’s highly published ‘100 Sexiest Women in the World’ competition twice, along side Cheryl Cole and
As I sat, still debating whether or not to have lunch and if I’d have to settle for a salad in order to not feel like a big blob in front of this sexual siren, I heard chattering voices and jovial laughter coming up the stairs and soon a gaggle of smiley faces rounded the door beaming at me. Georgia is delightful; sweet, friendly and ridiculously gorgeous.
After landing illustrious endorsement deals and a string of huge commercial campaigns such as Lynx, Pepsi, Vodafone, Lipsy, Panach and Gold Fever Hair - and most recently taking over from Megan Fox as the new face of the Cadburys StarBar campaign. SOCIETY magazine has decided that Georgia is the perfect person to give us tips on how to get that ultimate summer body for bikini season, ‘cause with this current heat wave in Marbella, we’re not planning on wearing much else!
Tell me a little about your diet Georgia. What do you eat and what diets do you follow?
What about desserts and puddings? How do you treat yourself?
Do you have any secret diet tips to share with our readers?
I have a sweet tooth; I love chocolate and ice cream. My absolute favourites are sprinkles red velvet cupcakes, but you can only get them in America thank god! Or else I’d have about five a day.
I try and drink about 2/3 litres of water a day, which is great for your skin and body. I also very rarely drink alcohol, only if I’m at a party or night out. I would never have a glass of wine at home. I think if you can cut that out its very helpful for losing weight.
I love food. I generally eat quite healthily. I’m really into cooking and spend a lot of the day in the kitchen trying out new recipes. I’ve been making a lot of paleo meals lately. I eat a lot of fish, vegetables, rice, salads. Are you careful about the food you consume? Not really I eat a lot! Ha! I love food; most of my day is spent thinking about what to eat. I eat healthy food and I very rarely eat processed or fried food so I think then you can get away with eating a lot more, well at least I hope so.

What foods do you think are good for keeping you in such tip-top shape? Any recommendations for our readers? I think if you can stick to a clean diet of just fresh fish, vegetable, salads, grilled chicken you can become leaner. Although my trainer lee has told me to eat carbs, as I need them because I work out which is great. So I eat rice potatoes, quinoa etc.
Georgia’s bone structure and skin are flawless, even without make-up and her legs are even longer than they appear in pictures. We take a seat as the team scurry about us with hairdryers and make-up brushes and Georgia tells me a little about how she keeps her cracking body in shape!
Tell me a little about your beauty regime. What beauty treatments do you indulge in regularly? I always have to have my nails done, I get a mani-pedi every week, and always get a blow-dry once or twice a week. I do a facemask at home once a week.
What products do you use? I love Strvectal beauty products, face creams, facemasks and eye creams. I use all their products - you can buy them in El Corte Ingles they are my favourite. I’m a beauty product junkie and I have to say these are the best. I travel a lot and these are amazing for my skin. What would you say is your best feature? I like my lips. I love full lips. I hear you’ve recently become the global ambassador for Gold Fever hair extensions. Your hair looks amazing! Yes, Gold Fever is an amazing product. Quite unlike any of the hair extensions I’ve had before. They offer beautiful, natural-looking, thick, bouncy hair – what’s not to love about them! They’re also great for beach holidays because you can let them dry naturally and they don’t frizz they just dry curly. Gold Fever are the best hair extensions I’ve ever had. Are you naturally blessed with this body or do you have to work out? I take my dogs out for a walk every day. They’re small so it’s not a very long walk. I also do mostly weights in the gym. Not much cardio because I have a high metabolism and lose weight very easily. I work out in the gym with my husband most days and I really enjoy doing Pilates classes once or twice a week. Ok, so she eats super healthily, she doesn’t drink (barely), she hardly has to do any cardio ‘cause she’s got such a high metabolism and she is naturally just plain beautiful… You want to hate her, but she’s fun, amusing and so down to earth that you can’t possibly. With a body that stops traffic and a smile that melts hearts, Georgia Selpa really is the whole package.

here do you start when trying to evaluate the career of a man who has taken on parts so diverse that they range from a modern saint to one of TV’s most troubled detectives and is the first black actor who is being seriously considered for the coveted role of James Bond? KJ Elsdon considers the impressive career trajectory of Idrissa Akuna Elba. Someone really needs to tell Idris Elba that most actors are finding it increasingly difficult to land decent parts and not to be so greedy, because this Hackney lad seems to have been snaffling all the finest roles for more than a decade. From a relatively modest beginning as Patsy Stone’s gigolo in a 1995 episode of Absolutely Fabulous, Elba’s career path has been on a trajectory that would make Neil Armstrong feel dizzy. Joining the cast of Channel 5’s ill-fated soap Family Affairs for seven episodes might have seemed like a coup for an aspiring thesp back in 1997, but how could he – or we – know what the future would hold? Fast forward a few years to 2010 and Elba would be taking on the distressed coat of John Luther, a man so troubled he made John Shaft look like Pollyanna. By this time, of course, he had gained a sprinkle of stardust and a loyal fan-base after his brilliant turn as Russell “Stringer” Bell in HBO’s well regarded crime series, The Wire. Unlike his next great role, Bell was an out-and-out hard case and even Elba was moved to name the episode in which he is killed off as his favourite, “... because Stringer dies in it. I celebrate the fact that he dies. I have a problem with the glorification of a drug dealer and America is fascinated with that world. We’re celebrating the very f*****g problem that America has in its hood. But Stringer Bell was no role model. He ruled the people who worked for him through fear. So it was good that Stringer died.”

In the first episode Luther encounters an attractive psychopath, Alice Morgan (played by Ruth Wilson) with whom he enjoyed a long-running cat and mouse game: did she want to kiss him – or kill him? Viewers were immediately hooked and the first series attracted healthy ratings and the type of critical acclaim that defines a major hit. Nobody was surprised when Hollywood came knocking on Elba’s door and his imposing physique meant that he was also top of action movie directors’ mostwanted lists. In 2013 he not only saved the world from bloody apocalypse as Stacker Pentecost in Guillermo del Toro’s Pacific Rim, a loud, explosive refashioning of the old ‘monster rising from the sea and bent on global destruction’ theme (Godzilla, anyone?) but also took on the mantle of Nelson Mandela in Mandela: Long Walk to Freedom. This eagerly anticipated film adaptation of Mandela’s bestselling autobiography presented Elba with a whole new set of challenges; he had to persuade the world that he could not only physically resemble the most famous political figure in the world throughout most of his life, but that he could also nail his idiosyncratic way of speaking.

When my headstrong six-year-old turned to me in the kitchen one afternoon and told me “Mummy, I’ve decided I’m a vegetarian now ‘cause I don’t want to eat animals anymore” I wasn’t fazed. Truth be told, I was almost relieved. I knew he had the determination, sheer will and strength of character that I lacked. I had already begun small steps in

bringing about changes to our diets; cutting down processed foods, sugar and meat, reading labels, checking air miles and generally becoming more conscientious and aware of what we were putting in our bodies and where it was coming from. The time for ignorance regarding food has long gone and, any of us with Internet access and half a brain, are now confronted daily with the harsh realities

of our food industry - from the atrocities of the slaughterhouses to the chemicals pumped into our bodies through processed food - and we can no longer hide our heads in the sand in ignorance. My mother and sister watched the documentary ‘If slaughterhouses had glass walls” one evening - and by the next morning they were both vegetarians and have not looked back since. I didn’t watch the film. I still haven’t. I don’t know why I find it so hard to commit to anything. From diets to ways of life and relationships, I always tend to waver in uncertainty, one foot in the door in case I change my mind and want out!

A fabulous contraption fitted to either end of a courgette was spun around manually and long spaghetti-like strands of courgette piled high in a bowl ready to be cooked as pasta with ‘Bettina’s secret recipe tomato sauce’, which was simmering on the hob. The piece de resistance was possibly one of the most delicious curries I have ever tasted. I’ve long been reading up on spices’ fantastic health benefits and use them liberally at every opportunity... But the use of all my favourites, cardamom, ginger and cinnamon had my taste buds tingling! What Bettina does is make food come alive! She makes it fun and exciting and reels out dishes that look like works of art. Welcome to my second column, I really hope you enjoyed reading my introduction in July´s Society Magazine, and I’m hoping that you made time to complete my two superb Booty exercises and you are feeling the benefits, If not, stop reading, grab last month’s edition and try them now! With this issue girls, I would like to continue on our quest towards developing a ‘Bootylicous Booty’, as it is summer here in Marbella, and we definitely spend more time with our clothes off than on!

But are you aware that a similar phenomenon can happen to your bones called Osteoporosis? Oh the joys of getting older hey? By working your muscles against resistance you also increase your bone mineral density (stronger bones) therefore helping to prevent this degenerative bone disease. It’s not all bad news!
I am going to start with a little explanation as to WHY you really want to be including resistance based exercises into your weekly work out routine and not just cardiovascular training like walking, running, cycling etc. So firstly, picture in your mind, a super sleek, red, fast, sexy Ferrari, whose engine you can hear before you actually see the car! Now within our own body, muscle is like this Ferrari engine, it requires constant fuel and a lot of it, meaning that with more muscle, your body’s engine will burn loads more calories. You turn
your body into a super charged calorie-burning machine when you add more lean muscle to it.
The increased muscle you add to your body from strength training, will increase your metabolism and this also means you will naturally burn more calories even when you are asleep! Now that is a real bonus right? ☺ I hope you are getting tempted, as I promise it has massive benefits for you. Even more importantly, if you train hard enough you will continue to burn calories (and fat) after your workout has finished. YEAH! I really cannot stress enough the importance of building muscle and maintaining muscle, particularly as you get older as it naturally depletes. This

Strength training is also especially important if you are dieting or cutting calories, as when you lose weight fast, much of the loss can come from muscle, which can slow down your metabolism considerably. And of course there is the KEY POINT why most people start lifting weights, because lean muscle tissue looks damn HOT and SEXY on both females and males! Here are a few more of my favourite exercises to shape, sculpt and lift your butt. Before completing any exercises, you should consult your physician or other health professional to determine if it is right for your needs. Always ensure your body is warm prior to completing resistance-based exercises. You can walk up and down the stairs or why not take your dog for a brisk walk. If you ever feel dizzy or unwell stop immediately and consult your physician. Remember to breathe comfortably throughout the exercises and make sure you control all movements.

This is in essence the same, but you are going backwards. Stand with your feet hip width apart, toes facing forward. Place your hands behind your lower back (this helps with good posture). Take a big step backward so your front knee is a 90 degree angle and bend both knees, taking the back knee towards the floor. fter having had such a successful and amazing experience last year, it was an absolute honour to be called back to Head RUNWAY 2015. Each year is always so different, due to the set up, expectation and designers. This year RUNWAY was held outside the King Bastion Leisure Centre, Shideh, Director and Producer of RUNWAY - had always wanted to do a show outside and it is safe to say it was the perfect decision, the catwalk stretched for 20 meters on a white carpet and the whole set was stunning. As the head of the Make-up team, I was asked to select three or four make-up artists to work alongside me and, with no hesitation, I called on my top three talented girls to form my team. Each and every one of these girls preformed to a high standard and professional level and it was such a pleasure to work with them.
MEET MY TEAM Sinead Mallon Dominique Larde @ Golden Tarts Scally Torres As much as we love seeing and recreating big, bold experimental make-up on runway shows, I could really appreciate when a beauty look is something that’s easy to recreate at home and, in that regard, the latest RUNWAY 2015 designers’ choices did not disappoint. From berry lips to flushed cheeks, these are the top trends from Fall 2015. The collections were all very sexy and dramatic but in an easy way. Getting the make-up looks right to compliment it was important. Each designer had their own look and vision on how they wanted the make-up to be. I was given a reference as to what type of make-up they were after and it was up to me and my team to tweak these looks into our style. As there were twelve models and six designers, I wanted to keep make up quite simple this time and follow international catwalk standards. So more contouring and less make up. This work out well with our International designer and the New designers looks were just simplified a bit in order to help with the makeup changes between designers. Big Thank you to Shideh and Naomi of RUNWAY for giving Me and my team such a memorable experience and to Sinead, Dominique and Scally for making it a very successful show. This month Daniel dishes the dirt on the controversial subject of hair extensions, debunks the myths and misunderstandings surrounded them and explains how to add length to your locks without causing damage to your own hair.

DO YOUR RESEARCH The specialist who will apply your extensions may be called a hair designer, an extensionist, or simply a hairdresser. No matter what title they use, make sure they are experienced. Ask to see their before and after photos. Also make sure you understand how they will be removed, and how damage to your natural hair will be minimised. (Several stars - including Kate Beckinsale and Victoria Beckham - have had problems with bald spots after their extensions were taken out.) The consultation is key – this is where we stylists come alive. Being a colour specialist I can tell the colour number that would work with my clients hair before they even tell me the look they are after. You will also need to make an investment of time, usually two to four hours, for the initial setup. Patience is a virtue for myself and the client, I mean why would you want to rush perfection? So for goodness sake bring a book with you. I have known stylists do a full head of extensions in an hour and a half. This is where problems arise and I can guarantee hair will start falling out in under month. This is when the stylist has used extensions that are too long for the client’s hair. The extension should be at the longest double the length from the layer at the crown. If you go longer then you are going into redneck territory and I am not rolling out any mullets on my clients let me tell you that. Avoid extensions that are heavier than your own hair. If extensions are too heavy, they will damage and break off hair. You also shouldn’t be able to see them, if applied correctly, you can still put your hair up, down, in a bun, you name it you can do it and you won’t see the extensions or bonds.

PARTY PLANNING PERFECTION AT DE MEDICI We attended the spectacular ‘White and Grey’ party to celebrate the opening of the De Medici restaurant.
We ate a fantastic selection of canapes and light bites - from mini fish balls with tartare sauce to crispy spring rolls with sweet chilli and scrummy potato latka
We listened to the melodic tones of Janyssha Iyon, of the television show, The Voice, who belted out some classic anthems and had the audience shouting for more.
We loved the super smiley DJ and saxophonist, whose energy and enthusiasm kept the crowds on their feet - and even the more elderly guests were still singing and dancing until the wee hours of the morning.

the soft opening of Santé Boutique Restaurant for a night of great fun and revelry.
We munched
on delicious appetisers and hors d’oevres, which were served at a steady pace throughout the night by the pretty, stylish waitresses who wore masculine shirts and ties with funky oversized braces.
We loved
Santé’s hip modern décor, with its fabulous lighting features, stunning plush furnishings and fashionable design features - especially the signs for the lavatories; ‘Men to the left because Women are always right’
We danced
the night away as top DJs spun dance and house tunes and kept the partygoers bopping and grinding until the early hours of the morning.
We can’t wait to
go back and enjoy a meal from their delicious, healthy menu and to sip on some of Santé scrumptious cocktails mixed by their superstar barmen.

WHAT HAPPENS IN VEGAS… We enjoyed a fantastic Las Vegas themed night at The Beach House - with superb food, amazing entertainment – and of course The Beach House’s magical setting and surroundings.
We listened to live music from The Rat Pack, The Masquerade and Elvis Tribute – who crooned away and had us singing and dancing along all night.
We ate some fabulous dishes from The Beach House’s specially created ‘Vegas Nights’ menu.
We loved the whole night’s entertainment and excitement – from a live casino to dancing showgirls. The singing was fantastic and we were all on our feet and bopping along by the end of the night!

PARTYING AT THE POLO We attended the 4th edition of the Sotogrande Polo Club low-handicap tournament. This tournament grows larger every year, with more sponsors and a bigger turnout. The matches were held at the Rio de Santa Maria Polo Club fields and La Quinta Restaurant Sotogrande – and as such it’s known as ‘The Restaurant Tournament’
We enjoyed the fantastic gastronomic and festive event of over 500 people, where we tucked into a big Argentinian “Asado” (BBQ) by La Quinta Restaurant Sotogrande and we enjoyed wonderful live music from the New Orleans Jump Band and Freak da Funk, who had us all bopping along to a medley of floorfillers.
We watched some fantastic polo matches and it was an afternoon of great fun and entertainment. The teams that took part were; La Quinta Restaurante, Restaurante Midas de Sotogrande + TENIS EL OCTOGONO, Trocadero Dragones, Puratapa Restaurante, Chambao Beach Bar Restaurante Asador Cancha II The winners were - Trocadero – Dragones.
We loved people watching and admiring all the beautiful outfits and elegant outfits and simply lapping up the delightful atmosphere.

SECRET GARDEN PARTY We attended an exclusive cocktail garden party in a secret villa located in Benahavis, where we were able to see Timeless Gallery’s art come to life in the villa’s beautiful surroundings.
We enjoyed delicious cocktails and appetizers as we perused the art and toured the gardens.
We gazed upon the wonderful artwork by international artists Peter Mandl, Rieke Van Der Stoep, Eric Goede and Kieta Nuij.
We listened to a fantastic jazz band that played a repertoire of upbeat numbers and soulful sounds, and sounded magical under the starry night sky.
We loved the sculptures that were dotted around the gardens, the candles lining the swimming pool and watching the sunset over the hills.

PUTTING OUR BEST FOOT FORWARD! We attended the opening party of the fabulous new Pedicure studio in the Kempinski Spa. The exclusive Bastien Gonzalez PEDI: MANI: CURE STUDIO is the first Bastien studio in Spain and we are delighted that, with a presence in more than 15 countries worldwide, this internationally recognized and award winning brand has now arrived in Marbella.
We toured the stunning spa, marveling at the luxury treatment rooms, sampling hand creams and some of the gorgeous products available at the spa.
We sipped on glasses of Bucks Fizz and munched on platters of cured meats, cheeses, breads and salsa as we meandered about the pretty gardens.
We watched an amazing pedicure demonstration with a full explanation and talk by internationally acclaimed chiropodist, Bastien Gonzalez. Famous for his unique approach to foot treatments due to his professional expertise and experience, he designed and developed exclusive treatments for the feet, nails and hands, whose uniqueness lies in the fusion of well-being and beauty.
We loved our wonderful goody bags filled with magic potions, creams and serums for hands, feet and nails. They smell divine! We can’t wait to go back for our very own pedicure treatments, which promise to offer us the prettiest, softest feet in Marbella!

A PASSION FOR FASHION We attended the international fashion festival, Runway, which returned for the third year running to Gibraltar. As the rock’s only international fashion event, Runway has been instrumental in launching the careers of some of the region’s up and coming designers as well as bringing over internationals to showcase their collections.
We watched runway shows, which featured British designers Romero Bryan and Sadie Clayton, as well as Gibraltarian designer and winner of the New Designer Competition 2014, Paul Perez showing his latest collection.
We were entertained by funky ukulele fusion band The Hula Hulas and The Voice competitor, Daniel May.
We loved seeing all the beautiful, colourful collections and the stunning hair and make-up work Well done to Runway on yet another fantastic show!

We gazed as a steady flow of super cars from Lamborghinis to Ferraris pulled up outside and the uber-trendy guests arrived.
We were entertained as the cast and crew of “Life on Marbs” filmed an episode of the reality tv show at the party.
We loved the super slick monochrome decor and the friendly, furry barbers, who all donned the most spectacular beards.

ROTARY CLUB’S STUNNING SUMMER GALA We attended the wonderful Summer Gala of The Rotary Club Marbella, which was held at the magical location of Finca la Concepción.
We dressed in our finest evening robes and the gentlemen were looking fabulous in their smart tuxedoes.
We enjoyed excellent food, great music, fantastic singing and of course, the famous ‘tombola’, which made the event a huge success - not least, because more than 340 guests gave generously to support various projects of the Rotary Club Marbella for those in need of our solidarity.
We were thrilled with the turnout and the success of the event and it was another of those perfect summer nights of music, dancing and entertainment under Marbella’s starry sky.

money for the charity DEBRA Spain. The Butterfly Children Charity works towards improving the quality of life for children affected by butterfly skin and is a charity dedicated to helping young people living with Epidermolysis Bullosa (EB), known as ‘Butterfly Children’.
We watched
and congratulated as Team Pinker won the team event and Stephen Godfrey, once again, had a fantastic win at his home course in the individual competition.
We all headed back
to La Sala, Puerto Banus, for well-deserved drinks and canapés after another wonderful yet challenging game. We can’t wait for the next event, which is at Mijas Lagos golf course on the 15th August. Well done to everyone who took part. Another 1.905€ was raised for DEBRA.

hen Audi launched the first generation R8 in early 2007, the supercar world was astounded. Powered by a 420hp V8, the mid-engine R8 was a shot across the bows of Ferrari, Lamborghini and Porsche, but like the equally exotic Honda NSX from the decade before, it was an outsider. Not anymore. Thanks to Audi’s clever stage managing of its exclusive handbuilt, aluminium construction image, underpinned by a reasonable price tag and adequate supply, the R8 soon caught on in a big way with enthusiasts. The successful R8 LMS customer racing programme that resulted in wins against established rivals did the cars street cred no harm either, and by the time the final curtain went down on the first generation R8, Audi had a wellestablished icon on their hands. Every new car goes through the design proposal stage, and Audi experimented with even more radical styling before coming to the conclusion that part of the original R8’s success story was due to its unique looks. Thus, the Board came to the conclusion that an evolution of

the iconic shape, with more up-to-theminute detailing was the best way to proceed.
stakes over its more expensive and flamboyant cousin from Sant’Agata Bolognese.
While the crisper new front looks good, its more angular grille and lights in keeping with current Audi fashion, the R8’s best view is from the rear three quarters. Follow the car down the road and it looks low, wide and mean in the Ferrari Testarossa idiom.
The new flat-bottomed sports steering wheel is exactly the right diameter and rim thickness and helps you keep a good grip on things. It takes a leaf from the racecar book in having the Stop/ Start and exhaust flap control buttons mounted on the right and the Drive Select and Performance buttons on the left. The infotainment and telephone buttons are mounted on the horizontal spokes as on other Audi models.
In fact, in the course of refining the lines of the second generation R8’s, the design team co-incidentally achieved a similar relationship of C-pillar to rear deck as on the Ferrari F355. No bad thing really as the F355 has proven to be one of Pininfarina’s most enduring design high points. From the look of the sleek and modern cabin architecture to the pleasing feel of control operations, the sense of quality in the new R8’s cabin is absolute. With the optional full leather package, every surface is covered with high quality hides. There is no plastic on show here, and in visual and tactile terms, the new R8 scores heavily in the perceived quality
As a counterpoint to the traditional leather craftsmanship, the virtual cockpit display first seen on the new TT last year has so many functions that it takes a while to learn what is there. The cargo area behind the supportive, figure hugging sports seats swallows 226-litres of luggage. This about double what you can place in the 112-litre front luggage compartment. A nice touch is the illuminated R8 logo on the doorsill kick plates. It all adds up to an interior full of surprise and delight for you to slowly discover as you live with the car.
TORQUE TALK If you have driven most of the current supercar crop, you might think that even the R8 V10 Plus does not feel quite as fast as its advertised 610hp implies. Certainly, if you have been weaned on a diet of the twin-turbo fare from the likes of the Porsche Turbo S or McLaren 650S, you might miss that ground swell of boosted torque. But make no mistake, both the stopwatch and the speedometer show that the naturally aspirated Audi is well on the pace. No matter how responsive rival manufacturers claim their forced aspirated engines are, they are still not on the same page as the razor sharp Audi V10. Instant throttle response throws open the 70mm throttle body on each intake plenum, and sets the engine’s lightweight internals flying towards the 8,500rpm redline in the first four gears. The rush towards the red paint in each gear ratio is barely punctuated by a lightening fast and smooth upshift, and its overall intensity hardly gives you time to catch your breath. Underpinning the action, the V10’s signature growling and warbling soundtrack offers a more visceral kind of speed trip than the sheer g-forces created by a big dollop of torque. The primal scream of the motor as it covers the final 2,000rpm of its working range fills the cabin and drills into your very being like it is wired to send pure adrenalin straight to your synapses. The speed of the seven-speed S-tronic dual-clutch gearbox firing off upshifts never ceases to impress. Each upshift takes just 120m/s; 70m/s for the signal to reach the engine and 50m/s for the dualclutch gearbox to shift ratios. In reality such numbers are splitting hairs as you are governed by mechanical limit, but it is all grist for the marketing mill. Where the old R8 V10 motor was from a different engine family than the Lamborghini Gallardo, this time, the Huracán and new R8 share the same 5,204cc V10 motor. Control software apart, they are nearly identical mechanically. The entry-level V10 has 540hp at 8,250rpm, with 540Nm of torque at 6,500rpm. The V10 Plus ramps these numbers up to 610hp for a specific output of 117.2hp per litre. The V10 Plus weights 1,555kg with fluids and 1,454kg dry, so it has a power-to-weight ratio of 2.38kg/hp. Peak torque is 560Nm, and the rev limit is 8,700rpm. This makes the R8 V10 Plus the fastest accelerating production Audi ever with

TORQUE TALK 0-100km/h in 3.2 sec, 0-200km/h in 9.9 sec and a 330km/h Vmax. The standard version reaches 100km/h in 3.5 sec and tops out at 320km/h. The flipside is fuel economy and emissions, which are helped by the Cylinder On Demand (COD) system. Naturally this cylinder deactivation system only works when you are running in Economy mode and has a unique
running protocol that activates and shuts down the cylinder banks alternately to even out their running temperature. An additional economy feature is the coasting mode, which works when the driver comes off the throttle at over 55km/h. Fuel injection uses a combination of Multi-Point and Direct Injection. The former helps emissions at low crankshaft
speeds, while the DI system is most effective under high load conditions. If the temperature in the catalytic convertor drops below 350°C on the deactivated cylinder bank, the computer will start it up again and shut down the other bank. This is of course beneficial to engine life as differential expansion and wear from cold starting are not good for an engine. More of an update than a radical redesign, the double wishbone suspension takes the 610 horses in its stride, and on the demanding Portimão Circuit, it felt like it could easily absorb even more power. What makes the cars handling so much better than before is the 40-percent stiffer shell, which keeps the suspension geometry honest under high loadings, the new magnetic ride settings for the dampers, and the new front differential.
There is no plastic on show here, and in visual and tactile terms, the new R8 scores heavily in the perceived quality stakes over its more expensive and flamboyant cousin from Sant’Agata Bolognese. 100
TORQUE TALK With the shell stiffness a given, I am tempted to say that the new differential, which allows much more power to be sent to the front axle makes a huge difference to the way the new R8 goes through and out of a given bend. Rewind to 1981, and the original urquattro came with a fixed 50/50 power split. While that was not always ideal in a car whose in-line five-cylinder moor was hung out over the front wheels, once you had the car stabilised in a bend, it was indeed stable.
V10 Plus and an option on the base car. With driver selectable Dry, Wet and Snow settings, this allows the driver to tailor the engine, gearbox and (optional) magnetic ride suspension settings to available grip conditions. On track, the V10 Plus is simply brilliant. Trail braking into bends, the front end exhibits plenty of turn-in grip, and the car feels stable rolling off its powerful ceramic brakes onto stabilising constant throttle. Go in a bit hot and the back end steps out, but a quick flick of opposite lock collects it up easily enough.
“The viscous couple front differential in the outgoing R8 had a torque capacity of 160Nm,” explained Sebastian Strasser, engineer from the quattro drivetrain department. “In practical terms this meant that a maximum of 160Nm, or about one third of the 540Nm generated by the old V10 Plus motor, could be sent to the front wheels.” While that made the car handle more like a RWD machine, the short wheelbase and wide tracks meant that it felt very rear biased in slippery conditions, so you really had to keep on top of things with the throttle and steering.
Thanks to the new front differential, the new R8 Plus can take more throttle earlier than the old car. You can feel the front wheels helping to pull the car through the bend as you open the throttle and steering, and it just rockets you out of bends in situations where the older car might have transitioned into power oversteer.
“The new R8 uses an electro-hydraulic multi-plate clutch in front with a 550Nm capacity, so almost all the engine output can be shunted to the front wheels if required for traction or driving stability,” said Sebastian. “The electronic sensors check what the driver is doing every 10 milliseconds, shifting the power between axles to maintain optimum stability.”
At a canter on public roads, the R8 feels hewn from the solid. The original R8 always felt structurally solid over bumps and ramps, but the new car is an astonishing 40-percent stiffer.
Power oversteer is still there for the asking if you want that kind of entertainment, and here again the greater possible torque split to the front axle helps to stabilise the car in a drift. With a weight distribution of 48/52 front/rear, the R8 is very nicely balanced indeed.
I asked Jürgen Gebrand, the development engineer in charge of body structure, to put a number to this and he told me that torsional rigidity is now an impressive 35,600Nm/degree.
In parenthesis, the McLaren 12C and Pagani Zonda, both of which have a carbon-fibre centre tub, are 23,000 and 25,500Nm/degree respectively. Pick up the pace on a challenging road, or indeed on track, and you can feel that this very stiff structure benefits the geometrical integrity of the suspension, and is thus good for handling. Its ride is firm but never uncomfortable and suspension control is absolute. One of the best tests of this is the big uphill crest on the fast straight between Turns 9 (Samsung) and 10 (Craig Jones) at Portimão. Many well-sorted cars, even the Cayman GT4 and C63 AMG, catch air here, but the R8 felt nicely bolted down and perfectly stable. With the addition of carbon-fibre, the Audi Space Frame (ASF) is now more of a multi-material construction, with 79-percent aluminium and 13-percent carbon-fibre. At 200kg, it is 15-percent lighter than before. However, this percentage number begs an explanation since it is a relative one used by the engineers to compare absolutes. It means that while the weight of the original ASF was 206kg, Jürgen explained that making it as rigid as the new one would have resulted in a 230kg structure, which would be 30kg, or 15-percent over the target weight. Many new weight saving and assembly techniques were used in the design of this stronger and lighter structure, including a handful of revolutionary fasteners never before used in any Audi product.
The new differential weights 4.0kg more at 25.5kg, but it is literally worth its weight in gold for the performance edge it brings. To ensure it continues working under the most arduous conditions, it has active water-cooling. The rear differential is largely unchanged from before, and has a passive limited slip differential with a 25/45-percent locking action on acceleration and over-run. As far as gear ratios are concerned, the spread is greater than on the old R8 V10 - 4.63 compared to 5.96. Where the old R8 V10 reached its top speed in seventh gear, the new one tops out in sixth, with seventh now an over-drive ratio for better cruising and economy. A new feature is the Performance mode. Accessed by a button on the steering wheel, it is standard on the

TORQUE TALK Most car enthusiasts are aware of the galvanic corrosion that emanates from dissimilar metals like aluminium and steel being placed together, but it was a surprise to learn that carbon-fibre also triggers such a reaction in aluminium, hence the careful design of the areas where these two materials meet. As well as the 610hp dry-sump V10 motor, the R8 and Lamborghini Huracán share the same structural core, which is made of aluminium and carbon-fibre. That said, the Lambo has a 30mm shorter wheelbase and it is a more cab-forward design, so beyond that carbon core, the two cars diverge completely. Carbon-fibre is used for the rear bulkhead and the vertical section that emanates from the sill to the top of the B-Pillar. It is also used for the central tunnel that forms the cars backbone.

of the original going on sale. As has become common in the motor industry, early R & D work was carried out with computer simulations to save time, and the results compared with early predevelopment mules. On the original R8 for instance, the front structure consisted of square section aluminium tubes into which a plastic insert was placed to form the luggage compartment. On the new car, sheet aluminium is fixed to the tubular sections with special fasteners to form a fivesided box. This creates the luggage bay structure as well as forming a metal box that makes the front end far more rigid in all planes.
Apart from being lighter, the new shell is also much better at protecting occupants in a crash. Thanks to the new A-pillars and cant rails made from hollow cross sections, the new roof structure can take twice the load in a roll-over situation, while the hollow sills with internal ‘chambers’ are better at resisting side impacts.
It is hard to get ‘crisp’ design lines in relatively soft aluminium body panels, especially after painting, so for the large clamshell bonnet section, Audi use AA6016 grade curable alloy. The 6000 family of aluminium alloys have a unique property that makes them undergo a chemical change and harder when heat is applied. In this application, the whole structure undergoes electrophoretic dipping for corrosion protection, and is then spray-painted before being baked in a curing oven at 185°C to harden both paint and panel.
Development of the new R8 began seven years ago, literally within months
Aerodynamics also plays a big part in high-speed stability. The R8 has a flat
bottom with rear diffuser, and together with the front splitter and fixed rear wing on the V10 Plus. At top speed, this produces 40kg of down force over the front axle and 100kg over the rear axle. While LED headlamps are standard, the optional LED headlamps with laser spots double the effective distance of the high beam. Our session at Portimão went on until past sunset, Audi keen to show us how effective their new LED lights with laser spot are. I got a good taste of how it must feel like to do a night stint at Le Mans, although I have to say the these lights, indeed any lights do not work too well when you are driving flat out up a blind crest! Shades of Petit Le Mans at Road Atlanta, and only my reasonable knowledge of Portimão enabled me to maintain most of my normal daytime pace. I came away from the new R8 V10 Plus with a very big smile on my face. Audi clearly have a huge amount of confidence to use the same 610hp V10 as Lamborghini, but they have pulled it off with panache and the R8 V10 Plus looks and feels highly covetable. Hi Rick! Thank you for meeting with SOCIETY magazine. It’s lovely to see you making the Costa del Sol your home. Why did you first choose to move to Spain? Initially, after Lyndsay and I were married, we both felt like a change of lifestyle. Why this particular part of southern Spain? We chose southern Spain as we already had a Holiday Villa here, which we have now converted into a full family home and the Marbella area with the sun and the sea is a lovely place to be. What do you love most about the Spanish lifestyle? The thing I like about the Spanish lifestyle is that compared to England lets say, it is very laid back, there are no traffic jams, its not overly crowded with people, you can move, you can breathe and any given lunchtime to be able to nip to the beach and have fresh fish or menu del dia is just wonderful. What made you become interested in the property market? I became interested in the property market when Lyndsay and i were searching for a second home in Marbella itself and having met Julian Hall, whom I found to be a charming sales person and spending a lot of time together talking and looking at in the region of a 100 Villa’s, I started to get an idea of what was on offer at what price and was intrigued by what I saw and discovered. Not so long after this, Julian became a free agent and we simply decided to team up and create Status Homes. Its good for me because I have a man who has 20 years experience in the business and its good for him to have me to add some profile to the business. What are your thoughts on the current property market? We are definitely seeing that the property prices are starting to go up
now around the Marbella area and there seems to be a nice little buzz in the market, and judging by the way our business is going so far, it seems as though property is really moving again. What about music? I hear you’re still touring- where are you heading to and how long for? I will carry on touring certainly for the next couple of years, we have a world tour to complete next year and I will then review it after that and see how everything looks. Do you like being on the road? How long to you plan to keep touring for? I still enjoy being on the road, its such a
contrast to the laid back lifestyle I lead when Im at home in Spain and it keeps me feeling young at heart and keeps me fit at the same time. Do you have plans to make any more music? I think there are some plans in the pipeline to produce one more original Quo album but at the moment that is only talk, we haven’t started writing for it as yet but I will attach my musically creative head when I need to. You have two young children, what’s it like being a father again? Having said that I love the laid back lifestyle that Spain gives to me, coming home to Tommy and Lily is like stepping from one world into another - from the
sometimes rainy, cold and bustling lifestyle on the road into the sunshine and being a Dad to them both and keeping up with them at my age, I’m not sure what is more taxing - doing an hour and a half on stage or spending a day with the children - but they are beautiful and I cannot imagine life without them. What do you miss most when you’re on the road? The family. When you’re at home, what does your daily life/ routine consist of? Up early, children washed, dressed and fed, 08:45 leave for school, drop children, go off for coffee sometimes with Lyndsay, sometimes with my mates, address everyday life, admin etc. 15:00 pick up children, sometimes go to the beach for dinner with them or have a family night in and do some cooking and TRY to get them bathed and to bed by 9pm (not easy!) especially when its still sunny outside at that time of the evening during the summer months. What does the future have in store for you? Rick - Nobody knows what the future holds, but a little bit of Rock and Roll, a little bit of being an Estate Agent, a little bit of being Dad and Husband... What more is there? Have you set some new dreams or goals or are you just enjoying your life now? Status Homes is a new venture which I am enjoying learning and its somehow a pleasure to sell to - rather than buy from - for the first time in my life and fingers crossed, when I’m too old to rock anymore I can sit behind a desk in a nice suit and make people happy in another way - by giving them whatever they need and finding them whatever they want - and you know, you can’t get better than that… Can you?

S
pain is currently going through an extraordinary heat wave and yes, it’s summer in Marbella and the heat is to be expected, but this is just ridiculous! As I pull up outside Sutton at 7.30 pm the temperature is 40 degrees (and rising!) I’m sweltering, perspiring (or glowing as ladies do!) and thirsty, so the last thing on my mind is tucking into a hearty meal. I enter the restaurant and ahhhhhhh the fans hit me with a delicious cool breeze and at once I feel reassured and a little less fatigued. Sutton is the newest restaurant from the owners of celebrated eatery Momo’s and the successful Lima, and is situated in an excellent location on the Golden Mile. It has only been open for a week and I’m already hearing rave reviews so I’ve decided to find out for myself if it’s as good as they say it is.
The restaurant is large, spacious and breezy, with a chic modern interior and some gorgeous classic finishes; wooden ceiling fans,
Japanese lanterns, modern art, black and white framed iconic images, glass and gunmetal hanging lamps imported from France and a long mirrored bar at the end of the room, lined with shiny bottles and brightly coloured cocktails that are being mixed and shaken by two dapper-looking barmen. Sutton’s decor is a real mix-match of styles and ethnicities that you can’t quite put your finger on but, as I approach the bar, it reminds me of a modern boutique cocktail bar in London or perhaps Dubai. The owner, Katrin, greets me with a beaming smile and an air of ease and efficiency that makes it hard to believe that she’s pregnant - and in this heat! “I intend to work until the end,” she tells me and, as I observe her instructing the staff and managing the restaurant’s activity throughout the evening, I can very well believe her. I hesitate for a while, pondering whether to opt for a table inside the cool, airy restaurant or whether to brave the heat on the attractive decked terrace and,

as I glance outside at the jolly parties enjoying the setting sun under a shady canopy, I am sold – terrace it is. The tables are elegantly set, with wine glasses sparkling in the sunlight and fresh peonies on every table, and I’ve barely sat down before water is brought to me – they must have noted my parched expression! The menu is an
eclectic mix of contemporary international cuisine with a distinctively Asian feel. From Miso
Soups and Thai Fishcakes to Rib-Eyed Steaks, Racks of Lamb and French Duck – there really is something to suit all palates and appetites. As well as these well-known favourites there are some intriguing-looking dishes such as a Japanese Tuna Pizza with Rare Tuna, Fresh Cream Cheese, Red Onions and Truffle Oil or the Pan-fried Scallops with Coriander and Tarragon crust and Chardonnay Cajun Sauce. It may be 40 degrees but with a menu this exciting and diverse I can’t help but be enticed – my appetite has officially been whetted. My waiter comes out to pour more water and tells me that the barmen are going to whizz me up an assortment of Sutton’s signature cocktails to sample, followed by a selection of the chef’s specialities as a tasting menu. I scan the a la carte menu and eagerly await the surprises. The waiting staff are meticulous; immaculately presented and efficient without being overbearing and I can hear from the chatter on the other tables that they all speak fluent English and Spanish (and no doubt a variety of other languages also) The cocktails arrive and my! What a feast for the eyes! A tall yellow one with artichoke leaves, a pink one in a tumbler, brimming with ice and a huge pomegranate and a dainty one in a martini glass with a slice of Pomegranate and fresh red chilli. The barman talks me through each carefully created concoction and my eyes widen; a Mojito Royale, a Passolino, a Passion fruit Mojito, a Cucumber Martini with fresh Apple and Cucumber and a Devil in Love.

I tasted all of them – each one more surprising and delicious than the last; sweet, sharp and even spicy! The Devil in Love, with its yummy Pomegranate and kick of chilli packed a punch that was so startling and tasty, quite unlike anything I’d ever savoured before. As I sat sipping and scribbling away, my waiter placed a plate down before me announcing “A little appetiser – California Roll” it was a perfect Sushi dish with Crabstick, a dab of Wasabi, Pea and Soy and a drizzle of Sesame Seed Oil. It was delicious, fresh and full of flavour. Next came another immaculately presented dish – Pork Gyoza (gyoza are dumplings filled with ground Meat and Vegetables, wrapped in a thin dough, that originated in China but in recent years are often more associated with Japan) with Chinese Cabbage and garlic. I dipped the Gyoza in a little Soy before lifting the chopsticks to my mouth and was surprised by the lightness of the parcel. I’ve had many gyoza of late and the dough was always been too thick, leaving very little filling inside. This one had a light exterior with a moist and succulent concoction inside. The next dish was a brightly coloured combination of Red and Yellow Peppers, Spring Onion, Salmon and Wild Seabass decorated with Edible Wild Flowers – Sutton’s signature Ceviche. It was delicious. Fresh and chilled - the vegetables crunchy and the fish melted in my mouth. In weather like this, this dish is the ultimate summer meal, not too heavy yet tasty and full of flavor. Sutton was beginning to get busy, with jovial parties, couples and small families filling up the terrace and there was a cheerful, relaxed atmosphere that reminded me that although its décor is diverse and its service, faultless Sutton retains that quintessentially
Spanish quality of being laid-back and comfortable enough to spend hours leisurely enjoying a meal. The two next plates were equally divine. First Tempura Tiger Prawns with Mango, Sweet Chili, Coriander Sauce and Strawberry Salad – the Tempura batter was light and crispy and the prawn inside was succulent and tender, and the accompanying salad was fruity and zingy. The second dish, a Salmon
Tartare with Avocado, garnished with Sesame seeds and drizzled with Sesame Oil, was absolutely delectable.
Finally a creamy Limoncello Mint Pannacotta with fresh Strawberries and Lemon Sorbet, served with a Red Berry Coulis was the perfect finale to this light and enchanting meal; fruity, not too sweet and with a sharp lemon zest to cleanse the palate, it really was the icing on the cake (or should I say panacotta!) As I finish my meal and enjoy the last of my chilled water, I take a glance at my phone and observe that the temperature had dropped to a mere 37 degrees, and am quite astounded that I have managed to devour six courses in such heat. But the beauty of Sutton is that each dish is so diverse, full of flavor and exciting and none of the plates are too rich or heavy so, as long as this heat wave continues, there is nowhere better to enjoy a delicious, light, easy-going meal – and with such pretty design features, a cool breeze and a wonderfully friendly and competent staff, Sutton’s terrace is the ideal spot to while the evening away in absolute style and satisfaction… Sutton Urb. o carolled Louis Carroll in 1872 “Through the Looking Glass” to a somewhat bemused Alice. But the only attested occasion in culinary history where we have definite proof of a link between the leafy vegetable and a crowned head occurred in the 14th century at the court of Charles V of France, where the “First Squire and Master of the Kitchen Garrisons” persuaded his master to eat his first cabbage. This worthy was Guillaume Tirel, who called himself “Taillevent”, perhaps best translated from mediæval French as “Slice or Break Wind”. At the risk of causing any disquiet amongst our more gentle readers, it must be explained that the mediæval diet was such that often aids were necessary to assist in relieving the stomach and bowels. The beans

so beloved by a million housewives were not readily available, and so the remedies offered by men like Guillaume Tirel were eagerly sought after.(As late as the sixteenth century, John Aubrey reported in his “Brief Lives”that when the Earl of Oxford bowed deeply to Queen Elizabeth he accidentally broke wind. Overcome with shame he left the court and spent seven years travelling. On his hesitant return, the queen greeted him with: “My Lord, I had forgott the Fart.” It is for this reason that today the “Court Bow” is from the neck only!) When in 1375 Taillevent wrote his monumental work “Le Viandier” it became an instant best seller. It was one of the first books ever to be printed, and is the oldest French cookery book on record.
It is one of the culinary historian’s greatest sources regarding the tastes and manners of the mediæval nobility. As in much of French cookery, a great emphasis is placed on the making of fine sauces, including a first mention of Sauce Robert amongst the seventeen described. All this was achieved without the use of flour, which was then unknown as a thickening ingredient. Instead, bread was used, either plain or toasted. Ragoûts and Hotpots make a first appearance, together with recipes for vegetables. Unfortunately, it is not on record how Charles V ate his first cabbage, but he clearly enjoyed it so much that when in 1395 Taillevent went to the Great Kitchen in the Sky, at the great age of 69, he was buried in a tomb depicting him as a Sergeantat-Arms, with three cooking pots emblazoned on his shield.

Men like Taillevent were eagerly sought after amongst the courts of Europe, and poaching cooks was common! These men were a hardy breed. At the start of Taillevent’s career the kitchen was even more of a hellhole than it was at the height of Carême’s fame in the nineteenth century. The kitchen consisted of a huge open fire, before which were to be found a few iron and copper pots suspended by chains, and a couple of turnspits.
The practice of placing all the dishes on the table at once prevailed for many centuries until the court of Russia grew tired of eating cold food, and the practice of serving individual dishes at each course came into being. This is known as “Service à la Russe”.
Food was viciously boiled or stuck on spits. (Army cooking at the time of the Crimean War had not greatly improved. Each platoon threw its ration of meat into one large boiling pot, with something attached to denote ownership; on one occasion an army boot!)
Between each “remove” (so called because all the dishes were placed on the table at one and the same time, before being removed as the next course was served up) a “soteltie” would be served, much as a sorbet might be today.
Red wine came mainly from France. King John “Lackland” of England in 1212 imported eight casks of Anjou wine for his table, together with twenty six casks of wine from Auxerre. He was clearly a wine buff, but generally speaking the taste of the time was very sweet, and it was the wines of southern Europe which were the most sought after. Chief amongst these were the wines from Málaga and Jerez (where the Moors produced wine as “food”, thereby avoiding the prohibitions of the Qur’an). Portugal contributed Algarbe, the ancestor of Port, whilst Malmsey from Malmasia in Crete was so popular that the unfortunate Duke of Clarence was drowned in a butt of it. In a thirteenth century poem called the “Bataille de Vins” various wines stake their claim to fame.
During Taillevent’s career ovens were gradually introduced into the kitchen from the bakery, with methods of controlling the heat being adopted. It thus became possible for Taillevent to serve up a formal dinner consisting of “capons with cinnamon broth, chickens with herbs, and venison” as a first “remove”, followed by “roast beef, peacocks, capon pies” as a second, then “partridges, stewed pigeons, venison pâté and sugared tarts” as a third.

Such gigantic feasts required copious draughts of liquid to wash it all down. In the early days mead, ale and beer sufficed, but gradually tastes improved. Wine increasingly makes an appearance. This was a fairly early phenomenon. The Domesday Book lists thirty-nine vineyards in England, some of which dated from before the Conquest. Irish monks were producing wine (necessary for Holy Communion) in the eighth century, whilst in the twelfth German merchants were regularly

In 1234 this wine was probably heavily spiced and sugared to make it drinkable, but in 1855 it was, of course, crowned as the finest wine in the world. Be that as it may, this accolade resulted in the seventy hectare vineyard being sold shortly afterwards to the Rothschild family at an equivalent price today of about two million euros. Pass the port…!

OCIETY attended the opening party of the stunning new De Medici restaurant in Benavista for a dazzling party that had the jet-set crowd and uber-fashionable socialites of Marbella on their feet and dancing until the early hours of the morning, so it was with great anticipation that we accepted a lunch invitation to sample the food at this new hot spot. De Medici has been reopened by the celebrated Sobell family, whose reputation for excellence in the world of food, catering and gastronomy precedes it. After years of working tirelessly turning around other restaurants and catering for some of the world’s most prestigious events and parties (their clients have included Michael Jackson, Lionel Richie and Bill Clinton) the Sobells’ decided it was finally time to open a restaurant of their own.

The name remains the same, but apart from that De Medici has
undergone a transformation so spectacular that it’s barely recognisable from its former drab and dreary self. The restaurant is
set in a traditional Andalusian villa, with abundant gardens, palm trees and flowers lining the large terrace area, where a few tables are enjoying leisurely lunches under the shade of giant parasols. The interior is white, modern and minimal, with a high vaulted ceiling, a chill-out area at the back with sleek white leather sofa and coffee table for post dinner drinks, or aperitifs. To one side a small flight of stairs leads to a bar area, where a barman is enthusiastically mixing drinks and some iconic artwork by renowned artist, Charlotte Posner, decorates one wall.

Carole Sobell is waiting for me in the outside lounge area, where comfortable sofas and armchairs are dotted about under a shaded canopy. Sitting there with tanned legs, effortless style and sipping on a cool drink, she is the epitome of Marbella glamour - chic, sophisticated and stylish - and so is her restaurant. Jonny and Bianca, Carole’s son and daughter, come out to greet me and an accommodating waiter makes up a large table for all of us to dine in comfort. It’s 2pm and the terrace is rapidly filling up for lunch with locals and holidaymakers alike. Carole chooses a selection of De Medici’s signature dishes and, although the name suggests it’s an Italian eatery, the choice is varied and offers truly international cuisine. First come two marvelous-looking starters; both presented in glasses. A mouth-watering tuna tartar in a martini glass and a colourful pink and green concoction served in a large glass, which I’m told is a prawn cocktail. I haven’t had a prawn cocktail for as long as I can remember. I always associate it with the 80s, along with blue mascara and legwarmers - a kind of kitsch dish that people whip up for dinner parties but that I would actually never think to order. I am pleasantly surprised! The prawns are plump and juicy, the
avocado ripe and delicious and the Marie-Rose sauce is just enough and not drenching the plate as I’ve had in the past. Next comes a wonderful assortment of plates and bowls; a beef burger and chips, a veal Milanese topped with spaghetti, a yummy looking salad, bursting with fresh vegetables and some accompaniments and sauces. I sit devouring the table’s gastronomic display with my eyes, unsure where to begin. I commence gingerly tasting a little of each plate and everything is delicious! The marriage of flavours of each dish is faultless and before long I am tucking in wholeheartedly, munching my way through the entire menu!
The Sobell family are delightful. They call themselves ‘The Dream Team’ and I can see why. From
finishing each other’s sentences to replenishing each other’s drinks – they are close, loving and hardworking. Their passion for food is evident and they each chat away about plans, projects and ideas with great fervour and support of each other. Each has their own forte and they intend to use their combined strengths to create a family legacy with De Medici. Carole is straight talking, direct and honest “I’ve been referred to as the female Gordon Ramsey” she tells me and, although her language
is not quite as colourful and I’ve yet to witness her using any profanities, her no-nonsense approach is evident. Jonathan is the hands on charismatic manager whose cheeky chappy smile and charming manner are an indispensable ingredient in making you feel truly welcomed, with the assurance that you are going to have a great time. Bianca is efficiency embodied and her networking skills and bubbly personality are a winning combination for getting De Medici on everybody’s lips and the talk of the town. Combined, they make a formidable team and I’m enchanted by their fascinating stories and great plans. Puddings are served and, once again, my eyes light up. Profiteroles drizzled with chocolate, tiramisu, ice cream, strawberries – all my favourite things – and all of them delicious. But the very best dish was a plate of frozen red berries served with a jug of warm white chocolate sauce. The mixture of the ice cold sharp berries with the sweet, warm and creamy sauce was a mouthwatering medley and the perfect end to an enthralling afternoon. D-Wine’s Dish of the Month
This month we are bringing to Marbella’s Gourmet Society, Koh Samui Mussels. The name chosen by our chef to give our clients an idea of the essential flavours of the dish, Koh Samui is a tropical beach paradise unique among Thailand´s islands, just as cosmopolitan as Marbella itself, a melting pot alive with international residents and discerning holidaymakers dropping in for a week or two, to bronze their skin, quench their thirst and amuse their palate. Koh Samui Mussels are our take on the original French recipe “Moules Mariniere” with a Thai twist, which in our opinion is a perfectly balanced and moreish dish.

Thai herbs and spices, such as kaffir lime leaf, fresh coriander and ginger, create a mind-blowing broth that marries perfectly with the taste of the mussels without ever overpowering them. D-WINE ADVICE The distinctive exotic perfume smell of the dish, and its stimulating sourspicy-hot taste just screams, fresh and dry white wine, with acidity, vibrantly aromatic with tropical fruit notes, solidly structured and carrying a distinct spiciness unto itself. Pair it with a dry, crisp white for the ultimate summer meal. That is the case of Spanish Dry Muscat, Austria’s Grüner Veltliner, Alsace´s Gewurztraminer, German´s Riesling, Italy´s Fiano or New Zealand´s Sauvignon Blanc.

La Sala’s Smilestone Leisure group La Sala, which trades in three countries, passed a significant marker las month, as it reached €100,000 raised for charities. The brand recently opened their sixth business on-board the luxury yacht hotel Sunborn in Ocean Village, Gibraltar. Events in Puerto Banús as well as in Chigwell last month further added to the contributions to local charities. Spanish Chairman, Ian Radford, was keen to thank the celebrities who make auction donations and offer services to help and the participants who take part. “We raise money in two ways - through offering our venues for charity events or through our golf tournaments. We set out to have fun and we are lucky to have such great benefactors as Michael Campbell and Miguel Angel Jimenez. They give their time or memorabilia and help a lot of people who really need it.” Miguel Angel Jimenez, who is currently competing in The Open at St Andrews said: “It’s nice to see that La Sala and
my professional colleagues (sic) are interested in the well-being of the most unfortunate ones in our society.” The next charity event in aid of AVOI, which is a volunteer charity which provides summer camps and a trip to EuroDisney for children with cancer, takes place already on Saturday, 15th August. It will be Sala Super League golf tournament at Mijas Golf followed by the prize giving at La Sala, Puerto Banús.
