rooklyn Beckham and girlfriend, Nicola Peltz have announced their engagement. Posting a photo on his Instagram page, which was taken by his younger sister, Harper, Brooklyn wrote, “I am the luckiest man in the world. I promise to be the best husband and the best daddy one day. I love you baby xx.” Posting the same photo Nicola wrote: “You’ve made me the luckiest girl in the world. I can’t wait to spend the rest of my life by your side. Your love is the most precious gift. I love you so so much baby and thank you harper for this pic,” the US actor added. The couple went public with their relationship back in January, posting a black-and-white picture of themselves wearing towels. Brooklyn and Nicola – who has starred in films such as Transformers and Back Roads and is the daughter of billionaire businessman Nelson Peltz and model Claudia Heffner – had spent lockdown in the US together. -year-old actress, Naya Rivera, best known for playing cheerleader Santana Lopez in Glee, was found dead in Lake Piru following a boat trip with her four-year-old son, Josey. After a long search, divers found her body in the lake with the cause of death announced as drowning and the manner of death declared an accident. Her son was found alive sleeping in the boat, the boy told the police Naya pushed him back into the boat before disappearing beneath the surface. Authorities revealed the actress ´mustered enough energy to rescue her son, ´but not enough to save herself. ´ In another shocking twist, Rivera´s body was found exactly seven years after her Glee co-star, Cory Monteith was found dead in a Vancouver hotel room of an overdose of heroin and alcohol. Marc Salling, who played ´Puck´ on the show and dated Rivera during filming also committed suicide following pleading guilty to being in possession of child pornography in 2018. Following her death many of her co-stars shared their condolences online. ¨Rest sweet, Naya. What a force you were,” Rivera’s Glee co-star Jane Lynch wrote on Twitter. “Love and peace to your family. ¨ Another Glee co-star, Josh Sussman, tweeted: “Naya, you will be missed so much.” RIP Naya Rivera.
ANOTHER LOSS FOR THE PRESLEY’S The 27-year-old grandson of the late Elvis Presley, Benjamin Keough, was found dead in Calabasas, California following a self-inflicted shotgun wound which was later revealed as suicide. Following his death, Lisa Marie’s manager said she was “heartbroken, inconsolable and beyond devastated”. “She adored that boy. He was the love of her life,” Roger Widynowski said, adding that she was “trying to stay strong” for her three daughters. Benjamin was the younger of the two children Lisa Marie Presley had with her first husband, musician Danny Keough, before their divorce in 1994. The other is Mad Max actress
Riley Keough. Lisa Marie had previously described Keough’s resemblance to her famous father as “just uncanny”. Footage of Keough and his siblings featured in the 2012 music video for Lisa Marie Presley’s posthumous “duet” with Elvis, I Love You Because. Her close relationship with her son, whose middle name was Storm, also apparently inspired the title track on her third album, Storm & Grace, released in 2012. According to a friend, the pressure of carrying on the Elvis Presley family legacy was just too much to bear for the legendary rocker´s grandson.

Heroes come in all shapes and sizes. And apparently, all ages. Our hero this month is Bridger Walker, a 6-year-old boy who jumped in to save his 4-year-old sister from a vicious dog attack at the cost of his own safety. The young boy stepped in-front of the German Shephard mix and absorbed the bites to save his younger sister while the two were visiting a friend’s house. The attack left him with huge bite marks on his face and major bruising, Bridger underwent two hours of surgery and sustained more than 90 stitches following the attack.

Asked by his father why he jumped between his sister and the dog, the family quoted him as stating, “If someone had to die, I thought it should be me.” Following the attack, Bridger’s aunt started an Instagram page and posted about his recovery, explaining he was an Avengers fan tagging several actors from the Marvel franchise, in hopes of making her nephew’s act of courage known to the actors. The post caught actress Anne Hathaway’s attention, “I’m not an Avenger, but I know a superhero when I see one,” Hathaway wrote on Instagram alongside photos of Bridger and his sister. “I can only hope I’m half as brave in my life as you are in yours, Bridger. Wishing you an easeful recovery, and many cool looking rocks. Hey @markruffalo, do you need a teammate??”
“We are so appreciative of all the kind words, love and prayers extended,” said the family of the recent support. “May we each actively strive to bear one another’s burdens; stand up for and protect those that are weak, oppressed or those whom the world might forsake; mourn with those that mourn, comfort those that need comfort and love one another. May we follow Bridger’s example, approach the world as a child and bring greater peace to our own homes, communities, states and countries,” said the family in their statement.
Your friendly neighbourhood superhero was one of the first to answer the call, as SpiderMan Tom Holland Facetimed Bridger and commended the boy for being “such a brave little kid” and saying he “should be very proud of himself.” Captain America actor Chris Evans also hailed Bridger a hero, rewarding him with a replica of Cap’s shield because “he deserves it.” “Captain America here, so I read your story, I saw what you did and I’m sure you heard a lot of this over the last couple days, but let me be the next one to tell you, pal, you’re a hero, what you did was so brave, so selfless, your sister is so lucky to have you as a big brother. Your parents must be so proud of you,” Evans shared in a video message. “I’m going to track down your address and I’m going to send you an authentic Captain America shield because pal, you deserve it.” The 6-yearold was wearing his Captain America costume while watching Chris’s video message praising him for his laudable act.
Chris Hemsworth joined his famous friends support for the young boy stating, “You’re an absolute inspiration. Your courage is beyond belief, and we are all so impressed by you. We’re thinking of you. I know you’re an Avengers fan — and so, myself and all the team, we’d be honored to have you on the team.”
Robert Downey Jr. also reached out via Instagram calling the little boy a ´rockstar´ and in true Tony Stark fashion, Downey also promised to send a “better” shield than Evans, and a special gift for Bridger’s next birthday.
So far, Anne Hathaway, Chris Evans, Mark Ruffalo, Tom Holland, Hugh Jackman, Zachary Levi, the Russo brothers, and Robbie Amell have reached out in various ways to the Walker family.
Bridger Walker is certainly proof that heroes don’t always wear capes or masks.

Teenage years can be tricky, but what exactly is going on inside your adolescent? A look at the reasons behind why you might feel like you no longer know your own child! The changes we all experience during adolescence, a time which varies vastly from person to person, are an undeniable part of life. For some it is an extremely difficult phase, others simply breeze through it, but whatever the intensity levels, it is something we all have to go through. I have heard from countless friends and family members, whose children were making the natural progression from childhood to adulthood, that they were struggling with the fact that their child was becoming someone else, someone they barely recognised and they didn’t mean physically!
Victoria Wood is a freelance writer and mother of three based in the south of Spain. Life for her is primarily based around a healthy diet, lifestyle and educating herself and those around her how to live well. Victoria has been a writer for the past twenty years and her work includes an environmental column, journalistic editorials and social media management. She is also a proofreader and editor, and is currently working on her first novel.
So who is this stranger living in your house, and what is really happening to them? If we understand more about the science, the reality of what is altering and why, then perhaps we can relate better to the person that is developing before our eyes. Rather than get upset, lose our temper or end up feeling estranged from our own offspring, let’s try to get to the bottom of how they’re feeling, empathise with them, and have a better knowledge of what’s actually occurring in their probably quite confused and disrupted minds. They may act like it, but they don’t know it all, yet neither do we!
Before you lose the plot, faith in your own parenting, or a connection with your adult-to-be, let’s take a look at the science of adolescence and what is behind the changes that are occurring. There are actually four specific structural changes in the brain during adolescence that can help us to get a better understanding of the process.

In the prefrontal area of the brain the grey matter decreases - unused or unnecessary neuron connections are deleted if you like. This occurs during the early stages of adolescence and the result can be the improvements in their reasoning, logic, and mental ability. It is as though the brain takes away some of the childish thoughts to allow space for more mature reckoning. When puberty hits, there are changes in dopamine activity; the happy hormone - the receptors responsible for the distribution of dopamine in the regions where emotion, reward, and punishment happen are on a different mode meaning that the person is experiencing new levels of pleasure and sensation seeking. This activity during adolescence is more intense than at any other time in our development.

As well as a decrease in grey matter, we experience an increase in white matter in the prefrontal cortex - this improves the efficiency of the circuits in our brain and happens continuously throughout adolescence and into early adulthood. This efficiency allows more ability to plan ahead, weigh up risks, determine rewards, and make more complicated decisions, and so on. Our brain is developing and working better to allow more variables and considerations.
The connection strengthens between the prefrontal cortex and the limbic system (a set of structures in the brain that deal with emotions and memory. It regulates autonomic or endocrine function in response to emotional stimuli and also is involved in reinforcing behaviour), this change supports how we regulate our emotions and self control allowing the different systems within the brain to communicate more effectively.

It has all become less simple and more open to exploration as to what now makes that person tick. It is as though the adolescent’s reward centre is on overdrive, it is far more active than a child’s or an adult’s. An adolescent is far more sensitive to rewards in terms of anticipation; they are utterly excitable when they are expecting something they are seeking; this can result in poor decision making as the expectation of pleasure can be associated with activities they would normally not partake in higher risk is often on the cards at this stage. And bear in mind that this is all in process, it is happening and is not complete so there are always teething problems. The brain is opening up far more possibilities and as this occurs the adolescent is trying out these new regions, however the communication between them is brand new and needs wearing in, often the areas that are responsible for decision making and pleasure are not yet used to each other and neglect to speak. This explains irrational behaviour and impulsive decisions, and an apparent disregard for reason that is uncharacteristic to the child. This can explain how some crumble under peer pressure but then as adolescence progresses they begin to work out how to resist this and contemplate outcomes more effectively.
This process, and the question of when it is complete, is different for each child as they convert to adulthood, but one thing is clear - studies show that the adolescent brain matures intellectually before it matures socially or emotionally - they’re on a different timetable if you like, so this can give us a decent explanation for how they can be so clever, yet so incredibly stupid sometimes! This time in life is also when we become sexually active, another behaviour that is in line with that pleasure seeking we have spoken of. It is the time when the mammal flies the nest, goes out into the wild to hunt, and begins to procreate. In us humans we don’t quite have such responsibilities at this age and so the reckless, or out of character behaviour manifests in different ways. These points outline just a few things that are going on in the brain of an adolescent, anatomical changes which in turn affect the behaviour and emotions of the person in question. And that is just what is going on up top…the physical changes are also happening before our very eyes.

Physical changes that are occurring come in the form of obvious growth spurts, body hair growth, sexual maturation, voice change, skin variations, all due to hormonal change during this time. These changes occur at different speeds and times for the individual but as an example these are the stages a teenager will endure:
• Puberty begins: 9-14 years • First puberty changes: testicle growth, followed by penis growth after approx. 1 year • Pubic hair: around 12-14 years • Hair under arms and on face, voice change, acne, wet dreams: around 13-15 years.
• Usually girls puberty begins before boys but again it all comes down to the individual • Puberty begins: 8-13 years • First puberty change: breast development • Pubic hair: shortly after breast development • Hair under the arms: around 10-13 years • Menstrual periods: between 10 -16 years.

All is not lost to the human process of adolescence, there is strong evidence pointing towards nurture having a definitive effect on a teenage brain’s activity. We can lead by experience and the adolescent brain is potentially modifiable in this respect. In this way we can see that yes, biology is determining their behaviour at this stage, but, it is not impossible to mould the biology of the brain by example.
WE NEED TO S U P P O R T T H E M , S TA N D BY THEM AND A B OV E A L L , AT T E M P T TO E M PAT H I S E WITH THEM.
We need to encourage them to make good decisions and lead by example. It is a very difficult time in life to recall, do you really remember your teenage self? But we were all there once and we need to recognise that this is an extremely intense period which overwhelms all bases; emotionally, physically and cognitively. It is a LOT! As your child progresses into adulthood through this confusing and intense period they will begin the transition with a struggle for independence and control over their own lives which, as we can see by looking at the scientific development of the brain, we will feel like they’re not quite prepared for. We do need to give them more responsibility, trust and respect as they progress and so this can be done by reward. They need to earn our respect and trust and we can reward them with further allowances.
We can encourage them to try new things, as well as find ways to speak about how they’re feeling. They’ll need to talk about what is happening to them, but it is quite likely that they will be reluctant to, especially with parents, and so an outside adult that you trust could be a good option. For them to hear recollections of other adults that have been through adolescence and survived, will help them to see that how they are feeling is normal, they are not crazy or different. We can try to make sure that they have a good social life; being with others their own age is paramount during these times, you just need to try to keep an eye on what they get up to as those sensation seeking neurotransmitters are hard at work and peer pressure can override rationale. A good trusting relationship with your child will go a long way. Being there for them, showing them you believe in them, and reciprocally, their need to maintain the respect between you may well be a huge saving grace. Help them to set goals, support their choices and be there when they need you. Only involve yourself if it isn’t bordering on interfering, show them you believe they are ca-pable but let them know you are there to offer help if it is needed. They are desperate for their independence from you, but they are not yet ready to free themselves. It is a delicate balance and not at all easy from either side of the fence!

Amazon announced last month they will be introducing smart trolleys to the grocery shopping experience, rolling out the so-called “Dash Carts” in their soon to be open Los Angeles store. (That’s right; as well as being able to ship just about anything to just about anywhere, Amazon now have actual stores in the US – 25 at present, with up to 3000 planned for the next year. At this rate we won’t be able to refer to them as a “mom and pop business” much longer...) Having entered the store and scanned a QR code in the Amazon App, the techy trolleys use a combination of computer vision algorithms and sensor fusion to identify products as you place them in the basket, automatically charging your Amazon-linked payment as you leave the store. Where items such as wonky fresh produce might otherwise fox the AI, customers can still use the handle mounted touch screens to manually input price look up codes and confirm weights from the in-built scales. Anyone struggling with the tech will find Amazon’s own Alexa on hand to help / confuse and frustrate as she recites your shopping lists and misunderstands every other thing you say. The current iteration of the dash carts will not accommodate a large family shop, with space for only two bags of shopping, but technology leaps forwards

between design generations and the potential is there for Bezos to sell the road-tested concept of smart trolleys to countless other retailers (if Amazon’s steamrolling success leaves any still operating!)

Whilst their current efficacy is already being questioned by online detractors, many have bet against Bezos before and he probably owns them now. The richest person in the world, an estimated net worth of 172 billion dollars, Bezos plans to invest his entire fortune into space exploration and cosmic colonisation through his venture Blue Origins. As a result of Amazon’s outrageous success, a future is actually possible where space shuttles ferry us between far flung spots in the solar system, where human colonies thrive on planets whose ecosystems have not yet been ravaged by the sort of rampant capitalism which made Bezos rich enough to start grasping for the stars in the first place. Amazon Go are totally cashier-less commercial premises, attempting to
out-convenience other convenience stores by allowing customers to “just walk out” with their shopping. It’s definitely not something most other shops encourage, but then most other shops aren’t comprehensively rigged with sophisticated face-recognition cameras, countless sensors and AI tech to log every customer’s individual product choices. Pick a bottle of red off the shelf and the app instantly adds the item to your virtual cart... concede it’s been a particularly rough day, put the wine back and grab a bottle of gin instead and the app makes the necessary adjustments in real time. No doubt Alexa will soon be prompting you on limes and suggesting you buy paracetamol and bacon for the morning after... To consumers already accustomed to self-scanning and those who hate taking their headphones out to momentarily deal with a cashier, this new normal could prove to be just the tonic (goes well with that gin), but for technophobes, surveillance state critics and laid-off shop workers not equipped or willing to pivot into IT, one person’s convenience is another’s hardship. Despite its costly set up, the Amazon Go model seems legit, with RBC Capital Markets analysis determining their revenue to be some 50% higher on average than comparable traditional convenience stores, so expect to see

Personally, any time I receive a “quality” check (aka an “are you thieving?” check) of my trolley’s contents from an Asda employee at the scan and go section, my heart beats a little faster. Was there anything I accidentally bagged without bleeping, distracted as I usually am by my 4 year old pleading for one more Babybel from the not-yet-purchased, already decimated packet?? Luckily, we’ve not been caught out yet because I’ve either become a subconscious scanner or the checks aren’t particularly “quality” but I’ve got my bumbling patter semi-rehearsed for the day a
spotty teen in green raises an outraged eyebrow whilst wielding some unscanned hummus.
“It was a genuine mistake. I’m...I’m 38. I’m a dad. Look, this is my son. He’s real. He’s not stolen... I wouldn’t try to steal hummus... it’s 95p a tub, it’s the cheap shit. If I was a thief, I’d have left off the Babybel cos they’re 2 quid and he’s eaten them all anyway....and i’d have nicked the Ecover dishwasher tablets - £7 for 50??! It’s an outrage....” I think i’d probably get away with it against a human foil, but trying to explain myself to an angrily buzzing security drone that’s followed me to my car, I might come unstuck - that nagging fear that if you tell it to piss off, your credit history gets wiped and a Terminator turns up on your doorstep... ….a TERMINATOR?! ….because of hummus??!!

Hemp milk, relatively new to the market, is gaining popularity because it is a highly nutritious milk alternative containing omega-6 and omega-3 essential fatty acids, specifically linoleic acid, and alpha-linolenic acid, making hemp milk a great way to obtain these nutrients which the body can not make on its own. Additionally, it contains good amounts of calcium, magnesium, phosphorus, and B vitamins as well as all essential amino acids, commonly rare among non-animal products. Hemp milk even contains more plant-based protein than almond milk.
Soy milk is the most nutritionally similar to cow’s milk. It contains sufficient levels of protein, as well as other important nutrients like manganese, selenium, copper, and magnesium. However, most soy products in the U.S. are sourced from genetically modified crops making it extremely important to choose organic. Soy can also affect hormone levels because it is a phytoestrogen, meaning it mimics the effects of estrogen in the body. When purchasing soy milk, I recommend selecting milk with whole organic soybeans as the only ingredient aside from water whenever possible. Make sure your soy milk contains no “soy protein isolate” or “soy concentrate”.
Oat milk, which has become exceedingly popular as of late, is very nutrient-dense, high in calories, carbs, protein, and fiber, and includes many beneficial micronutrients such as calcium, riboflavin, vitamin D, and A. Oats are often processed in facilities that also process glutencontaining grains, so although they are technically gluten-free, it is important to be aware of potential contamination.

THE KEY TO COPING WITH YOUR MIND
The human brain is hardware for the mind. It provides us with the ability to use the mind in all it’s variety of forms. It is a phenomenal wonder but it has little animation of its own. When we die, the brain dies too, in just a short while. Just as with our other organs, the brain can not function without the rest of the body. The mind is something else. It electrifies our existence through our senses and our brain. Every perception happens through the mind. It shimmers and twinkles like a spiders web on a dewy morning and provides us with a network of connectedness that we are able to make sense of things within. Without mind, we are mundane. Whether it is individual or collective is highly debatable but certainly we use our individual brains in combination with our senses to interpret, translate and utilise the mind within our environment. Everything we have built around us is a result of mind in its most basic form of thought. We can all think and many of us can not stop. We are born with everything we need to develop the faculty of thought and without it we would not be able to care for ourselves, which is the purest and true purpose for thinking. Thought is self-serving and can be used in the most dignifying ways, but it can also destroy lives, even our own.

One of the results of the global shift in consciousness we are going through is that many of us are now aware of our thoughts. The constant narration in our heads, that we feed by giving it our attention can be considered untrained awareness. If we choose to, we can develop our faculty of thought into its higher form that we call awareness, by acute and persistent observation of our own thought processes in a disassociated manner. We have all experienced the perspicacity of our own awareness for example... When the sound of a twig snapping close-by breaks the silence of darkness and jolts us into a perfect state of presence that is both penetrative and diamond-like - this is us in awareness. Attention is the key, it is very, very valuable. Our energy flows towards and into, whatever our attention is on and this becomes our contribution to the world. If we give our attention to engines, we will become a great
engine expert. If we give our attention to our kids, we will be a great parent. If we make our inner world the object of our attention, self-awareness is the result and if we pay all our attention to our fake identity or “brand”, we will become a great big ego! Attention breeds awareness which we experience when we are rapt by someone or something and we “forget ourselves” for a while. Because it is the false ego that we are actually “forgetting”, when we pay attention and move into awareness, we are really remembering our true self. Just as a cloth covers a table, thoughts conceal our awareness. No matter how beautiful a table might be, as soon as we cover it, our attention shifts to the cloth and the table is essentially lost to us and yet without the table, there would be no cloth.
Similarly when we read, we focus on the words and are largely unaware of the platform they are written on. There is actually much more white space than words on a page, much more “nothing” than something, but we hardly notice this because our attention is on the meaning of the words. As with the table and the cloth, without the white space, the words couldn’t exist and yet however we alter the words and whatever we say, the white space remains. It is the same with thoughts and awareness. While one of the advantages of developing our awareness is the quietening of normal thought, it can be difficult without a solid foundation, and a connection and “handle” on our emotions. On a higher level the physical body, emotions and mind are not really separate but for development, it can be useful to address them in this order. Some good nutrition and catharsis may be necessary before one is able to begin observing thoughts without getting wrapped up in them and if you’ve tried and been disheartened or frustrated in the past, this is quite normal and understandable. This is how the popular phrase, “I tried meditation and it wasn’t for me” was born. If this is you, kick all meditation cushions under the table, switch up the loud music and try dancing around like a mad witch! Go to your bedroom and kill the nearest pillow with your bare hands and then go swimming, get under the water (to avoid being institutionalized) and scream like an

Used worldwide by many cultures and communities as a purifying ritual, it is not without foundation. Using the physical body as the device, the icy water forces our attention onto the body and shocks the natural thinking processes into silence, revealing our awareness for a few moments, which revitalises and refreshes the mind of anyone crazy enough to jump in. Plunge pools, the oceans, swimming pools, cold showers are all everyday replacements we can use to gain the same or similar effects. It has been almost 30 years since I have not finished a bath or shower with a cold shower. Along with a good diet and meditation practise, cold water is one of the most important tools we can use daily to keep us in awareness.

Here are ten practical and useful tips we can use to help increase awareness;
2 Turn off the television
1 Avoid processed food
Our brains work within particular frequencies and can be affected by other transmissions. All electrical devices affect us and while our eyes are on the potentially harmful effects of 5G technology right now, television still remains the worst culprit.
Choosing to eat processed foods can lead to all sorts of mental and physical problems and generally, these concoctions cost us more energy to digest and assimilate than we obtain from them in nutrient value. A diet of processed food is really like slow suicide. Attempting to stay present and in awareness or trying to practise meditation while living on a diet of processed food is like trying to concentrate with toothache. It’s possible, but very difficult. It is much easier to eat fresh organic food.
It is not called programming by accident. Watching TV slows the mind down to about the same rate as a practised meditator in just a few minutes. The difference is the input and the results of course, are opposite.
3 Don’t drink tap water
4 Listen carefully
Unless we are fortunate enough to have our own water source in the mountains, it is almost impossible to obtain the kind of structured, nutrient-dense water that directly aids our awareness. Of the remaining options, tap water comes bottom of the list and it barely resembles the original, untainted fluid.
We are taught to talk, walk, read, eat and go to sleep but when it comes to listening our teachers usually shouted at us or threw the board rubber at us. We spend a high percentage of our time listening to others and generally, we are not very good at it. Listening is a golden opportunity to consciously put ourselves aside and be in awareness by focussing intently without “phasing out” or mentally preparing our input for the conversations sake.
5 Get into the body It is much easier to practise awareness of the body than the emotions or thought. When we are tired of over-thinking and need a break, exercising like running, swimming, dancing, walking or stretching gets us out of the head and into the body for a while.
If you’re unfortunate enough to be in an area where fluoride is one of the added ingredients in your tap water, bear in mind a Harvard study which showed the consumption of fluoride is linked to the lowering of IQ levels of a population by between 15-20 points. To move into and remain in awareness, a clear and capable mind is essential.

6. Cease needlessly chattering Blah blah blah!! Drop the story! Everyone has a story, but day to day “idle chatter” about past events, future dreams or gossip scatters the mind, dissipates its penetrative qualities and strengthens identification with the false self or ego.

7 Immerse yourself in cold water Go on – throw yourself in the icy lake! For a gentler version, while in the shower, try running hot water down the spine for 30 seconds, followed by cold for 30 seconds and repeat this two more times, finishing off with a warm shower. If you wish to simply clear or refresh the mind, try cold water on the back of the neck for 30 seconds.
8 Snap the band To train the brain out of involuntary over-thinking, try wearing an elastic band around the wrist, making sure it is not too tight and whenever you catch yourself too much in the head, pull and snap the band. You can then use the little sting to allow your attention to move into the body, away from your thoughts and into the present moment, into awareness. A gentle but definite self-tap or slap on the forehead head also does the trick.
9 Memory triggers The present, where awareness is, is most commonly forgotten to thought. It is very helpful to place memory triggers within our daily routine to remind ourselves that we are lost in thought. Standing in queues, going to the bathroom and washing up are good examples of times when a memory trigger can help us replace thought with attention, either onto the breath, one of our energy centres or onto the job in hand.
10 Meditation Meditation is the ultimate tool for increasing awareness but it has its time and place. As Osho explained to us meditation begins where psychotherapy ends. Before we can comfortably observe our own thoughts we must be detached enough from our ideas of who we think we are. This sometimes requires some physical detoxification and nutrition, catharsis and/or psychotherapy before we can begin. Meditation is sitting quietly, everything else is practise. Remember this simple truth as you seek out practises that resonate with you. Meditation practise is a de-construction process. Whatever we seek is already here. Any ideas and beliefs you have of yourself must be suspended and replaced with an inner curiosity and openness, because it is in this willing state that realisations occur which dissolve painful perceptions and reveal fresh ones. It is this process that gives us the feeling of spiritual development and should be encouraged. Meditation practise is an adventure so do not expect results, Always be implacably honest with yourself and be wary of listening to advice from others unless they are a true master, who are rare.
Most important of all, whenever approaching your inner world, tread lightly and keep your sense of humour, despondency or seriousness are of no help internally. 59

Arlo Hudson was formed out of frustration with the current state of play in men’s underwear.
“FOR TOO LONG WE HAVE BEEN PAYING A PREMIUM PRICE, FOR NOTHING MORE THAN A PRINTED WAISTBAND.” After finding it so difficult to buy daily essential clothing, Elliot Vickerstaff decided to make his own. Having met Elliot during one of his visits to Marbella, the SOCIETY MARBELLA team decided to learn a little more about the brand currently shaking up the men’s underwear world. Arlo Hudson’s ethos is based around doing things properly - using sustainably sourced fabrics that are fit for purpose, designing products that are both functional and aesthetically pleasing, and working with specialist factories in their respective craft. Their first product is made from Tencel, a brand of Lyocell, which is a sustainably sourced material from eucalyptus plant. The material is naturally biodegradable and uses 20x less water to produce than cotton (with the added benefit of being super-soft and comfortable).

The products are produced in an underwear specialist, family-owned factory in northern Portugal, which is 100% GOTS (Global Organic Textile Standard) accredited and holds OEKOTEX certification. 100% GOTS means the factory avoids the use of toxic substances, uses at least 95% organic fibres and treat their employees (and the earth) with deep respect – Arlo Hudson doesn’t compromise today, for tomorrow.

So, Elliot, can you share with us a little more about how you started the brand?
Then in terms of the materials used, the vast majority of underwear is made from conventional cotton with an element of elastane/lycra, much like a t-shirt. Yet the functionality and requirements of t-shirts and underwear differ drastically… sweat being a key factor! So, I looked into different fabrics I could use, I wanted something that was not just aesthetically pleasing and functional, but also ethical.
It was Christmas 2017, I received a pair of “designer” underwear as a present from my Mum (haven’t we all!). However, I was appalled when after 2-3 months the “designer” underwear became entirely dishevelled, faded and shrunk. This got me thinking; all of my so-called “designer” underwear has been exactly
I then did a lot of research into the materials used in underwear, how and where products are made. This further instilled my desire to do something, after I realised many big brands simply license their name to third parties for underwear production, they really do see it as a waistband printing money machine!
RAISING THE BAR DOWN BELOW WITH SUSTAINABLE FABRICS, INNOVATIVE DESIGN AND TRADITIONAL CRAFT
So, what happened next? How did you begin production? After sampling countless pairs of underwear, made from various materials and made in several countries, I set my sights on Portugal (not a bad place to visit either!). I then settled on Tencel for our first product due to its soft and silky feel (it really does feel like silk), but also its durability, sweat-busting fibers and the fact that it blows cotton out of the water in terms of the environment. Water production is a huge problem within fashion. The stats vary from where they are published, but a pair of jeans can require up to 20,000 litres of water to produce! Tencel uses 20x less water to produce garments than cotton and is biodegradable. I went over to Portugal, visited three factories and finally found the one. A great team who oddly enough started producing underwear 30 years ago for M&S! The factory has been great with supporting me on this journey; their attention to detail and approach to quality is fantastic. I am very much looking forward to expanding the range and building the brand with them over the next few years. Finally, if you could sum up your mission in one sentence what would it be? Saint Tropez One of the annual jet set highlights on the French Riviera is the glossy Super Yacht Regatta “Les Voiles De Saint Tropez.” The event has been given the go ahead to take place with racing starting on the 28th of September and finishing on the 3rd of October with The Rolex Trophy as the highlight. This regatta is a magnificent sight, with over 300 yachts up to 100 years old tacking and jibing across the bay in the first winds of autumn. It’s an actionpacked race as yachts bear down on each other with only meters to spare, sails snapping and billowing and crew
racing about on deck. In the evenings, the yachts return to the colourful fishing port of Saint Tropez and the sailors, yacht owners and guests paint the town red – of course 2020 will have to adhere to Covid-19 directives. With direct flights from Málaga to Marseille combined with only one and half hour limousine drive to Saint Tropez this is a fabulous vacation option for our

The Problem with Plastic The Impact On Our Ecosystems Plastic is polluting every corner of the planet. It has found its way to the depths of our oceans, to remote forest paths, to the ice of the Arctic, and onto the island beaches where turtles nest. We don’t know exactly how long oilbased plastic will take to degrade (or even if it ever will), but we do know that once it’s in our soil, rivers, and oceans, it is impossible to clean up. The plastic we see washing up on shores and floating on the water’s surface is only the tip of the trashberg. Over twothirds of the plastic in our oceans ends up on the sea floor, creating an evergrowing wasteland beneath the waves. To make matters worse, bottles, bags, and other plastic junk gradually break into smaller and smaller pieces known as microplastics, which further damage ecosystems even as they’re invisible to the naked eye. Plastic waste is an equally big problem away from the high seas, filling up landfill sites, clogging rivers, and generating pollution through open burning or incineration. Some plastics also contain and leach out hazardous chemicals, posing further risks to wildlife and people.

The Recycling Myth
A Problem Exported
Globally, only 9% of plastic gets recycled. Even in developed countries, the recycling rate for plastics collected by households is often far less than 50%, with very little of that converted back into packaging. Most “‘recycled”’ packaging waste is downcycled into lower value or unrecycable products, meaning that the process is only delaying the plastic’s inevitable journey to the landfill.
Even worse, much of the packaging collected for “recycling” in the Global North is exported to the Global South. Before it banned the trade in 2018, China alone imported nearly 8 million tonnes of plastic waste a year. Now the top destination for this waste is Southeast Asia, where the lack of infrastructure and regulations make it difficult to manage the influx of trash from both domestic and foreign sources.
Bad packaging design, a lack of infrastructure, and the absence of a means to track plastic waste all limit the effectiveness of recycling, and ensure that most plastic packaging will continue to become waste for the foreseeable future.
In the meantime, the companies that produce fast-moving consumer goods (FMCGs) are opening up new markets in the Global South, pushing more products packaged in single-use and singleportion plastics.
SOLUTIONS Where do we go from here? Shortterm goals could include eliminating unnecessary packaging that is difficult or impossible to recycle, and expanding the use of reusable and refillable systems for transporting and storing goods. In the long term, we’ll need to change our consumption habits. We must, for example, buy fewer of the processed products and ready meals that leave behind so much waste.
Plastic and Climate Change Greenhouse gas emissions from the plastic lifecycle threaten the ability of the global community to keep global temperature rise below 1.5°C. More than 90% of plastic is made from fossil fuel, and a recent report by CIEL estimates that in 2019 alone, the pollution from global plastic production and incineration will equal the emissions of 189 coal-fired power plants. The same report estimates that by 2050, the greenhouse gas emissions from plastic could make up as much as 10-13% of the entire remaining carbon budget. If the overproduction and consumption of plastic continues uninterrupted, it could account for 20% of the total global oil consumption by midcentury.

By Ian Greenland Elon Musk recently expanded the definition of social distancing when he publicly committed to send a rocket carrying people to Mars by 2025. The flight would represent the symbolic culmination of Musk’s efforts to establish a human colony on our neighbouring planet – something he says is achievable by the year 2050. The awe, excitement and boundless optimism of adventure is somewhat tempered by a pragmatic rationale behind seeking new frontiers.
The engineer, designer, tech entrepreneur and 21st richest person on Earth no doubt recognises that collectively we’ve not just s#!£ on our own doorstep, but traipsed it through the whole house, set fire to the beds and put a few windows in to boot. No matter how many electric cars his company Tesla, Inc. shift, the world’s still warming rapidly, so it could be his other racket, SpaceX we finally turn to when the rising sea levels bring tsunamis of discarded plastic pouring in through those broken panes. Of course, we’ve dreamed of going to the Red Planet for decades, long before the notion we might actually need to reared its frankly ridiculous head. The fourth rock from the sun, second smallest in our solar system, Mars, like Earth, is a terrestrial planet. It has a thin atmosphere and surface features akin to our own topography – valleys, desserts, mountains and polar ice caps. In the ‘50s scientists studying Mars’ nearinfrared spectra of light concluded this suggested chlorophyll – the existence of vegetation, potentially a plant-like lichen. The glimmer of possibility that Mars might be capable of supporting an intelligent population lodged it even more firmly in the human psyche. Public interest already inflamed by decades of Mars-centric speculation and science fiction in film, radio and writing, the academic confirmation of water and life so tantalisingly close (in cosmic terms at least) heralded a whole new wave of stories. With ‘50s America already gripped by anti-communist paranoia, the general state of anxiety manifested in increased alien hysteria. Movies spewed forth containing little green men, terrifying cosmic creatures, space-wizards and malevolent martian robots, though it’s generally agreed our imaginations didn’t reach “peak-Mars” until 1990’s Total Recall saw Arnold Shwarzenegger propositioned by a threeboobed martian prostitute... It may be

the screenwriters (I’m not googling it but a tenner says they were male) were daring to dream once again, soaring on wings of optimism which refused to be clipped by reality since the Mariner missions of the ‘60s had long ago provided images of a dead, heavily cratered rock that contradicted scientific assumptions of the previous decade and forced us to walk back our expectations of the fantastical possibilities of the planet. Far from increasing our wonder, seeing photos for the first time of its barren, moon-like, completely boob-free surfaces had left the inhabitants of our incredibly lush world a little demoralized, its mystic romanticism peeled back to allow the creeping existential fear that perhaps we’re all alone here after all. To this day, there’s no proof of life present or past on the Red Planet, though cumulative evidence, much of it gathered by rovers such as Curiosity and Opportunity reveals that the surface once had liquid water and may have been viable as a habitat for microorganisms. By “once”, we’re talking some 4 billion years ago in what is referred to as Mars’ Noachian time period. Although today the planet’s surface is bathed in radiation, its soil rich in perchlorates (for simplicity’s sake, salts) toxic to microorganisms, it’s possible any life existent or preserved will be found in Mars’ substructure, shielded from
brutal surface processes. Bolstered by the discovery of subterranean water sources, the search for evidence of further habitability such as fossils and indicative organic compounds remains a primary objective of both NASA and the European Space Agency. If we really are to colonise Mars, be it in the spirit of adventure or for the preservation of our very species, SpaceX is currently our best hope. Comprised of a central rocket derived from Musk’s Falcon 9 with two similar “sidecar” boosters totalling 27 simultaneously firing engines, at 230 ft in length, weighing 1400 tonnes and with a low Earth orbit payload capacity of around 63 tonnes, Falcon Heavy is the most powerful operational rocket in the world. It represents a hugely symbolic leap forward against the grain of reduced national efforts for the stars. Half a century since man stepped on the moon, at a time when our technology was a shadow of today’s, we still haven’t surpassed or even matched that achievement. Why? Cost. Space exploration isn’t cheap. It takes hundreds of tons of rocket fuel to lift a machine the size of a building out of Earth’s gravitational pull but that cost is a fraction of the investment involved when your hardware’s not even coming back. It’s expensive enough filling the petrol tank of your car these days, but imagine each time you needed to go to London, designing a car from scratch, building it, testing it exhaustively, inviting
everyone in the street to witness you either set off safely or blow a hole in the driveway, only to leave it orbiting the M25 for the rest of eternity....or at least until some prick in a beamer crashes into it whilst talking on their phone (reverse engineering the analogy, BMW drivers would have to be meteors. Just ask the dinosaurs what they think of meteors). The central tenet of SpaceX’s endeavours and their ultimate mission to colonise Mars is reusability, championing the role of private companies in driving tech forwards whilst lowering costs. Falcon Heavy’s core rocket and side boosters are designed to separate during the ascent, then land vertically back on Earth or floating drone ships (yep, Musk has drone ships but that’s a whole other article). This is in itself an awe inspiring feat of engineering, the unmanned rockets deploying multidirectional bursts of propulsion to counteract their spinning descents, a gigantic final-seconds burn perfectly balancing the effects of gravity on hundreds of tonnes of falling metal as they touch down with a deftness that belies the fiery forces at play. On February 6, 2018, departing from the same legendary site that saw Armstrong, Aldrin and errr... the other bloke, cement their place in history, Falcon Heavy’s maiden voyage successfully delivered Musk’s own Tesla Roadster car (playing Bowie’s Life on Mars) into an orbit of the sun, to later coincide with Mars’ own
trajectory. Watching both boosters come to rest simultaneously upright and intact having fallen many miles back to Earth as the primary core continued rocketing its payload to the heavens resembled, as many noted, a magnificent “ballet”. They’ve since repeated the trick twice, each time vastly lowering the relative cost of investment in their production whilst refining SpaceX’s control and understanding of the process. To reach Mars, the importance of reusability becomes fundamental - perhaps if everyone on earth remembered that, our need to do so would be less pressing. It’s like my nan always said – “Simply recycle your cardboard, sort your plastics and ride a bike to work and you won’t have to wave your home goodbye, choose your three favourite items and make the 144 million mile journey through space to live in a cramped, hermetically sealed pod on a cold, barren, toxic planet.” Hyperbolic as Musk’s ultimate goals may seem as we race around, dealing with more terrestrial issues, too distracted to truly look UP, witnessing what him and his team have already achieved, seeing their expertise, hearing their selfbelief and commitment, you realise the seemingly ludicrous is in fact possible – as they put it, Mars is just another engineering problem to be solved. Might be a good time to buy stocks in rocket fuel.

Where the Boxster really broke the mould in the affordable production car world was in its mid-engine, two-seat roadster concept. This is the quintessential layout for a racecar, which up to then had only been used by exotic supercar manufacturers like Ferrari and Lamborghini. To this day all the Boxster’s marketplace rivals still use the traditional front-engine layout. The Cayman coupe version of the Boxster joined the Porsche range nearly a decade later in 2006, and was derived from the second and third generation Boxster. The original Cayman was designed by Pinky Lai, who worked for Ford, BMW, and then Porsche where he was responsible for the exterior design of the 996 Carrera and the 987 series Boxster and Cayman. Having a considerably stiffer bodyshell than the Boxster the Cayman soon carved a reputation for itself as the finest handling sportscar for reasonable money. If anything it suffered from engines that were simply not powerful enough for its excellent chassis. Of course this was no surprise as Porsche could not make its entry level sportscar faster than the mighty 911 flagship. Times have changed though, and by the time the turbocharged 3.0 litre 991.2 Carrera arrived on the scene in 2016, Porsche had also launched the 718 Boxster and Cayman powered by 2.0 and 2.5 litre turbocharged flat-four engines with more power and torque than the outgoing 3.4 litre flat-six. The fundamental reason for this was to improve exhaust emissions and fuel economy. However, there was just one problem with this and it had nothing to do with straightline performance, which was more than adequate. The issue was that the flat-six engine’s charismatic soundtrack, a vital part of Porsche’s rich tradition, was missing. In its place was an off-beat noise reminiscent of the Subaru engine that shares the same flatfour layout.

The Boxster/Cayman T line in particular, with the sweet entry-level motor and great value for money spec are particularly fine cars. Fast forward to February 2020 and the soundtrack problem is fixed. In fact it is more than fixed. Today we are at the Estoril Circuit near Lisbon, Portugal to drive the new Boxster and Cayman GTS 4.0, powered by the 400hp naturally-aspirated motorsport derived flat-six first seen in the 420hp 718 Cayman GT4 and 718 Spyder last summer. Jan Roth, Director of the 718 Model Line explained that the 3,995cc flat-six motor is mechanically identical to the unit
that powers the 718 Cayman GT4 and 718 Spyder. “The 20hp power reduction comes from different engine mapping that also gives the GTS models a slightly softer character, in line with their role as a halfway house between the S and GT4,” he explained. “The exhaust system with one exit pipe per side is shared with the 718 Spyder and integrates perfectly with the lower rear valance design of the GTS.” The less hard-core character is certainly reflected by the slightly lower revving nature of this engine. Where the 420hp of the GT4 spec motor peaks at 7,600rpm with an 8,000rpm limiter, the GTS spec motor puts out 400hp at just 7,000rpm, with the limiter set at 7,800rpm. And while a maximum torque of 420Nm beginning at 5,000rpm is common to both engine specs, where the GT4 engine maintains that figure till 6,800rpm, the GTS begins to drop away 300rpm earlier.

In the grand scheme of things the 20hp drop, slightly less aggressive throttle response and reduced peak revving ability are hardly noticeable in daily road use. The essential character of this engine as a potent and free-revving motive force that satisfies the keen driver is carried over intact, and unless you drive the GTS in anger back-to-back with the GT4 you will not miss those last few percentage points of top end urgency. At the other end of the scale, despite the high gear ratios, cantering along at town speeds in third gear is very civilised. Even from 50km/h there is crisp response and strong pickup on tap when you want to get moving in a hurry. On that score, despite the fact that the 2.0 and 2.5 litre flat four engines have a turbocharger and intercooler the 50hp more powerful 4.0 litre naturally aspirated flat six and its ancillaries weighs around 25kg more as a package. While this places a tad more weight over the rear axle, it also benefits traction away from rest and acceleration out of bends so no complaints here. As you would expect considering their shared flat-six motor, the performance numbers for the GTS are closer to the GT4 than the S. In parenthesis the 0-100km/h time of 4.5 sec and 293km/h

top speed are within spitting distance of the GT4’s 4.4 sec and 301km/h, while the 718 Cayman S records 4.9 sec and 285km/h. Porsche engineers are well schooled in the art of finely balancing the engine and chassis character of their individual models, and the GTS 4.0 recipe aimed at bridging the gulf between the S and GT4 achieves just that. That is on paper however, and from the drivers’ seat the GTS models sound and feel far closer to the GT4 than the S. The chassis set-up is drawn from the deep Porsche parts bin, and sits closer to the 718 Cayman/Boxster S than the 718 GT4/Spyder, which use some bespoke GT3 style motorsport components such as adjustable suspension links and solid bushes. Since it shares the flat six and its gearbox with the GT4, the rear subframe of the GTS is carried over too. Beyond that its suspension arms, springs, dampers and anti-roll bar hardware is largely S spec, albeit with unique ratings that take care of the different loads over the axles. The PASM damping that is optional on the S is standard on the GTS 4.0. The 350mm brake discs and six-pot callipers needed to cope with the extra power are borrowed from the 992 Carrera.

The rear sub-frame is carried over from the GT4/Spyder. Apart from being physically larger this uses three mounting points for the flat six motor and its gearbox compared to the four that support the turbocharged four-cylinder package. The 330mm rear vented discs and four pot callipers are shared with the GT4/Spyder, while the optional PCCB ceramic brakes are from the 991.2 Carrera. The PASM based GTS suspension brings these cars 20mm closer to the tarmac than a stock 718 Boxster/Cayman, but they remain 10mm further from the deck than the hardcore GT4/Spyder models. This endorses the fact that these GTS models are daily drivers rather than Sunday morning specials.
recommend ticking the box for this expensive option if you do a lot of track days. The black painted GTS wheels are 8.5J and 10.5J x 20-inch shod with 235/35ZR20 and 265/35ZR20 Pirellis. These are normal high performance street tyres developed for this suspension set-up and there is no optional track day compound available to match the Michelin Cup 2
rubber of the 718 Cayman GT4. The new six-cylinder GTS will be rolled out in every market apart from China, where high local taxes will see the existing GTS continue with the 2.5 litre turbocharged flat four. At launch the GTS models only come with a six-speed manual gearbox, but a PDK option will be available in the summer, and will also be offered on the 718 Cayman GT4 and Spyder.
Visually the new 4.0 litre models share the usual GTS cues of darkened front and rear light units, along with unique front and rear bumper valances. Inside, the cabin trim is in leather and Alcantara with GTS logos on the seat headrests. The high sided 918 Spyder style bucket seats look great but are difficult to get in and out of, and I only

BOXSTER GTS With a similar kerb weight to deal with the performance numbers of the 718 Boxster GTS 4.0 are nearly identical. At 19,000Nm/degree of twist the roadster has just under half the structural stiffness of its Coupe sister, but in reality it is one of the stiffest open non-carbon-fibre tub production cars on sale today, with absolutely no signs of scuttle shake even on bumpy roads.

Thus, while the 992 Carrera Cabriolet might approach the Boxster’s torsional rigidity number on paper the fact is that you can feel some structural movement over bumps from behind the wheel of the longer, larger four-seater.
A Boxster is always at its very best in al fresco mode with a blue sky above and the open road stretching out in front. When the sun returned in the afternoon I took to the hilly roads leading down to Cascais and along the coastal roads.

CAYMAN GTS The promised cloudy weather with intermittent sunshine did not materialise and we were rained on quite heavily in the morning at the racetrack. While this was far from the desired weather for our test it was also the first time I have ever driven a Cayman in anger on other than a bone-dry racetrack. With standing water on the ideal line through many of the corners you have to look for the driest line in the search for maximum grip. It is in such conditions that the fine balance and consistency of a car’s handling counts massively towards fast and safe laps. Fine handling always starts with a stiff bodyshell able to resist twisting forces imposed by hard cornering and bumps. With a torsional rigidity figure of 41,000Nm/degree of twist the 718 Cayman shell is one of the stiffest in the business, resisting twist better even than some cars made from carbon-fibre. This helps keep the suspension geometry as close as possible to ideal under load, and in these slippery conditions with significantly less load being fed to the shell via the tyres than in
the dry the Cayman really excels. Porsche is the grand master of electric power steering to the point where you don’t even think about it anymore, and in these treacherous conditions the Cayman feels like an extension of your fingertips. Driving with the super smooth, measured inputs required by these slippery conditions the steering and seat of your pants relays all the messages you need to dance along the fine line between grip and slip. Slow in fast out is the mantra here, and using trail braking to settle the nose the grip of the front Pirellis proves impressive on the way in to a bend. And on the way out when you dispense enough throttle to make the big rear tyres let go the slide is progressive and easy to catch thanks to that linear characteristic velocity. The more linear build-up of torque from the naturally aspirated 4.0-litre motor, and the fine metering possible with the responsive throttle certainly helps here too. Recovery from a slide is instinctive with no unpleasant surprises, so it is easy to indulge in drifting through bends if you so wish.

ou see a lot on the Costa del Sol, and when your job is to review restaurants, hotels, bars and events, it becomes a rarer and rarer occurrence to be truly impressed. However, I can safely say my expectations were met, exceeded and exceeded again when I visited the newly refurbished Max Beach. The authentic boho style and laid-back atmosphere of the venue, all in harmony with the natural environment, makes it the perfect place to share plates and drinks with friends. My visit with my colleagues soon turned into a long afternoon of taking in everything that this remarkable venue has to offer. The menu was created by the chef’s Lawrence Otterburn and Daniel Kozak. Imagine the freshest sushi and sashimi overlooking the beach in the most stylish of surroundings. The chefs’ goal is to deliver a taste experience inspired by the East and they succeeded in transporting us on a gastronomic vacation. We started off with Smoked Haddock Carpaccio served with soft quail eggs,

charred spring onions and mustard saffron oil along with Max Beach’s Koftas with preserved Lemon Yogurt, Tahini, Harissa, Fresh Mint. You can opt for the vegetarian option of Zucchini and Pumpkin or try their meat variations made up of Lamb and Pistachio, or both, which, you guessed it, was our selection! Beautifully fragrant, rich in herbs and spices, we fell in love with both variations, all fighting over the last bite! After our divine starters, we couldn’t wait to see what the chefs had in store for us next. The Charred Teriyaki King Prawns perfectly illustrated the creativeness of this unique establishment. Served with Bok choy, Tempura Asparagus and Candied Peppers, each bite left us wanting more. We opted for the Hot Roll from the Asian Bar which boasts all the favourites including the classic California Roll, the Shrimp Tempura Nagasaki Roll with Black Sesame, Wasabi Truffle and Sweet Chilli Sauce and Max´s Poke Bowls with variations including Citrus Salmon, Schezwan Prawn and Spicy Red Tuna. The Hot Roll featured Spicy Tuna, Jalapeno, Cucumber, Sesame and Cream Cheese, and was, as it says on the tin… hot! But just the right amount of heat and bursting with flavour.

We were feeling pretty full by this point! However, somehow, we found a little room for the Expresso Martini Panna Cotta served with Honeycomb. The sweet touch of the honeycomb mixed with the cool Expresso freshness was simply brilliant! And last, but certainly not least, we finished with the Coconut Custard Tart with Roasted Pineapple. Presentation-wise this one deserved the first-place prize! While the food continued to excel itself as each dish arrives, what really made our experience first-class was the service. As many of you will know, customer service can be very hit and miss along the coast, with a few more misses, than hits! So, when you find somewhere that excels in every way imaginable, you know you have hit the jackpot. And it’s not only the restaurant that shines, Max Beach offers one of the world’s best beach concepts. From the valet parking on arrival everything oozes excellence. If you prefer a light bite they even have a dedicated menu for the pool and beach areas, ideal for enjoying as you top up your tan.

Gnudi with Tomato & Basil

This recipe was inspired by a lovely client who reminded me of my long lost love of gnudi which, basically, are large pillowy gnocchi. These are totally gluten free. They are also a great way to use up leftover mash.
FOR THE TOMATO SAUCE 1⁄2 onion 3 garlic cloves 3 large tomatoes, blitzed in a blender 1 tablespoon tomato purée (paste) sprinkle of brown sugar sprig of thyme basil leaves olive oil, for frying salt and freshly cracked black pepper nut-free parmesan to serve
MAKES 2 PORTIONS 450 g (1 lb) potatoes, peeled and chopped 100 g (31⁄2 oz/heaped3⁄4 cup) fine cornflour (cornstarch) salt and freshly cracked black pepper
Start off by boiling your potatoes until nice and soft, then drain until dry. In a large bowl, mash the potatoes and add the cornflour, salt and pepper to taste and knead until you have a nice dough. Divide up into balls by using a small-size cookie scoop and set aside.
METHOD. Heat a little olive oil in a pan and fry the onion and garlic until nice and soft. Add a sprinkle of brown sugar a tablespoon tomato purée and three large fresh tomatoes that have been blitzed in a blender and let the sauce simmer for 5 minutes. Finish off with salt, pepper, fresh thyme and basil and set aside. Bring a large pot to a boil with a teaspoon of salt and gently ladle in the potato gnudi. They will be ready when they come off the bottom of the pan and float up. Once ready gently add to the saucepan with the tomato sauce and cover. Sprinkle with a few sprigs of fresh basil and eat straight away while still warm.

MAKES 6 FRITTERS, ENOUGH FOR 3 PORTIONS FOR THE VEGAN EGG 60 g (2 oz/scant 1⁄2 cup) chickpea (gram) flour 1⁄8 teaspoon bicarbonate of soda (baking soda) 1 teaspoon apple cider vinegar 125 ml (4 fl oz/1⁄2 cup) water olive oil, for frying FOR THE FILLING 1⁄4 courgette (zucchini), cut into ribbons with a vegetable peeler 1 teaspoon Jamaican jerk spice 1 red or yellow (bell) pepper, thinly sliced 1⁄2 carrot, cut into ribbons 1 spring onion (scallion), green and all, sliced 1 bunch of fresh Spinach, chopped salt and freshly cracked black pepper chilli jam and vegetables or green salad, to serve Method. Mix the flour, bicarbonate of soda, cider vinegar and water in a large mixing bowl and leave to stand. Squeeze the courgette of excess liquid and add to the vegan egg mix with the rest of the vegetables. Heat a splash of olive oil in a large frying pan (skillet) and spoon out the fritters four at a time. I then gently press down the fritters with a saucepan lid that is smaller than the pan. Fry for 3–5 minutes on each side until golden brown and crisp. Repeat with the rest of the mixture and serve immediately with chilli jam and extra fresh greens or seed sprinkles.

If that wasn’t enough, this year, NOBU celebrates the tenth anniversary of Chef Eleni Manousou, the first female executive Chef named by Chef Nobu Matsuhisa. To honour this achievement SOCIETY MARBELLA grabbed ten minutes of Chef Eleni’s time to talk soya, sushi and rise of women chefs through social media.
How did your Nobu venture begin?
I’m Greek, so I started working with Matsuhisa Athens. It’s the same company as Nobu, but different partners. Matsuhisa is the personal company of the founder and chef, Nobuyuki Matsuhisa, and Nobu is the company he has with Robert de Niro and other partners all over the world, like here in Puente Romano Beach Resort. I began in Matsuhisa Athens, then I moved to Dubai, and from Dubai I moved here to Spain. During those ten years I did a lot of promotions for the company, in Morocco, Turkey, Paris, Slovakia… all around the world.
How did you end up in Nobu?
By luck! (laughs) I was supposed to start working with another company, but a friend suggested a trial with Matsuhisa. A few days later I was offered to work in Nobu on a starter/bottom position. This was in 2010. From my previous culinary work with a German chain I was intrigued by the Asian cuisine, when I was offered Nobu I was delighted, even though I didn’t even know what soya was! As soon as I began at Nobu I started researching the cuisine and did all my homework to learn everything I could.

It’s true. It’s getting harder for him because there are now so many locations, but he always tries to visit at least once a year and spends a lot of time with us inside the kitchen, cancelling interviews and other appointments so he can stay with us and teach us new things. He also allows us to put our personal touch in the food, so each location he also learns something new, which he then teaches in the next location. That’s why all of us are so creative, and we are gaining a lot of experience thanks to Nobuyuki. We need to be very focused with regards to the signature dishes, the standard of Nobu, but apart from that, he gives us creative freedom with all the dishes. I’m extremely strict when it comes to upholding the standards of Nobu.
You are the first woman to be an executive chef with the company, a great honour, another big achievement. How has it been
for a woman to work in such a masculine environment?
It’s definitely difficult for women in the kitchen. The kitchen is still a man’s world. I always tell my team we are working in a place that makes no sex distinction, we are one. And everyone needs to work the same way. When I started it was more difficult to be accepted as a woman in a high position. In Greece, they “joke” saying women should only be washing the dishes. I rebelled against this and felt challenged. Being a woman gave me even more motivation to succeed. If you work hard and do a good job, you will definitely grow. I think women can handle more things at the same time, multi-tasking. This is not to say a man cannot do it, but the way a woman thinks is different… so it has its advantages!
Are things changing in this regard?
Yes, definitely, especially with the growth of social media. If you search the hashtag
#womanchef you will find thousands of women chefs and this has helped. Society is a lot more open these days, we are going the right way. Slowly things are changing. However, another challenge that women face is the fact that this line of work takes over your life so there is no time to even think of having a family. For now, my kids and my family are in the kitchen. My team in Dubai used to call me “mamma” (laughs).
When did you first realise that you wanted to become a chef?
Cooking was my hobby; I didn’t consider it professionally when I was younger. I was trying to enter the army. I also used to be an athlete, but I had problems with back injuries that forced my retirement and so I started to think about entering the navy. The idea of following strict standards always appealed to me. I did the exams, and during this period, my mother asked me what I wanted to do, so I decided to take up “Chef Nobu allows my hobby and become a chef.
