Our Christmas cover features the inimitable philanthropist, DJ, businesswoman and socialité Natasha Benillouche. Here we get to discuss her links to Marbella, what 2020 has taught her and how loyalty and love always come out on top.
I like to keep all my projects a secret.
How would you describe your 2020? How, and where have you spent this year? How have you found the lockdown experience?
How have you helped your local community during the pandemic?
The year was interesting, some would say, ´non-standard´ but despite this, I did have wonderful experiences that fundamentally changed my life. This year I spent almost the entire year at my parents’ house in Marbella with some time spent in Ibiza for work. The first month was a nightmare as everything was new and unknown due to the lack of true information in the media. The second month I felt very stressed but by month four, it became more fun and I learnt to be alone, which was an amazing experience.
First of all, I am grateful to the doctors who have treated each and every patient. I sent money directly to the clinics, a friend shared with me the account numbers of the hospital to make a transfer, which I did immediately. I also helped people in Russia. People who work for me received their money properly despite the closure. My aim was understanding the whole situation and trying to share some funds with those who did not have them.
What has been the biggest challenge you have faced and your biggest accomplishment this year?
I have had the time to devote myself entirely to my music which has been a plus, as well as updating the instruments at home, something I don’t normally have time to focus on.
What can I say, I dreadfully missed all my loved ones this year, as I am sure you all did too. I think this was the biggest challenge of the year. What I did learn through this experience was patience and endurance. Loyalty and love are tested by time, aren’t they? I realised that at a distance you can love even more. This is worth paying attention to. I have also been hugely touched by my friends. The virus brought us together, despite the distance of several thousand kilometres but we supported each other by phone and are now closer than ever before.
Talk us through a-day-in-the-life of Natasha… My schedule is stable when there are no performances, I go to bed quite early - like a child. I like to be lying down no later than 11pm and I wake up no later than 7am. I love spending time with my cat and dog, feeding and walking them. I make sure to get my intake of vitamins each morning through fresh fruits followed by easy stretching exercise. A little later, official business calls begin. Closer to lunch time, I try to prepare a meal for everyone who is nearby. Later in the day, I love watching soap operas lying on the couch. Then during the evening calls from the United States begin due to the time difference.
How has your DJing been affected?
What do you love most about Marbella? I think my favourite thing about Marbella is the incredible atmosphere. One of my favourite places is my beloved Nobu Hotel and the beachfront community. I have been living in this wonderful place for twenty years and it holds a very special place in my heart.
What are your plans for 2021? At the moment, I have extended several contracts. I plan to work only at private parties. For example, this winter there are several events planned at ski resorts such as Courchevel and St. Moritz. These will feature lounge music and a pleasant atmosphere considering the current circumstances. By spring, I plan to see my friends on my birthday. And I will definitely spend the summer in Marbella.
What’s next for your music career? The next step for my career is to become a legend and leave the stage beautifully. In the future I plan to become a producer for young talented people, but I still like to keep all my projects a secret.
How have you adapted your life to fit the new-normal? How do you find working with the Covid safety protocols? I have adapted easily. It feels like it used to ten years ago. The times where I slept more at night, not during the day. These changes are undoubtedly pleasing. I have found I can devote more time to the people I love.
What challenges do you expect to face in 2021? It is difficult to say specifically, but I think the world has completely changed. I do not know whether it is for better or for worse but this year has given us the opportunity to reflect.
Your charity work is obviously very close to your heart. Please tell us about the foundations you have been supporting. My path as a benefactor began 10 years ago, having met two girls. One now lives in London, the other works in Moscow, both help children who are seriously ill with cancer. Gradually I began to help them, not only financially, but also with toys and personal attention. I also work with the World Vision Gala.
How and where will you be spending Christmas? This year I plan to celebrate Christmas with my good friend from Stockholm, we are flying to Courchevel, where her husband was able to find a stunning house where our two families can enjoy the festivities together.
What are your predictions for 2021? I don’t like to make predictions, I only look to be positive and surrounded by positivity and hope the same for others.
What is next for you? I can sum up where is next on my journey in two words… Los Angeles. I have friends in LA and there is a musical community there that will allow me to develop creatively and mentally.

With a COVID-19 vaccine reported as 95% effective there is an unexpected name we need to partially thank. The Dolly Parton Covid-19 Research Fund was listed as one of the major donors in the latest breakthrough in a new article published by The New England Journal of Medicine. Earlier this year the country singer donated 1 million dollars to the Vanderbilt Institute for Infection, Immunology and Inflammation at Vanderbilt University in Tennessee after being advised by her friend Naji Abumrad, a general surgeon, that there were some exciting advancements in the search for a cure. The $1 million donation went towards a convalescent plasma study at Vanderbilt, which looks into treating COVID-19-infected people with the plasma of others who have antibodies, and several other research papers related to the virus.

NO MORE HOLMES Ruth and Eamonn Holmes have been axed as regular presenters of This Morning. The couple who have worked on the show for 14 years host Fridays and during the school holidays when Holly & Phil take an annual break. The duo are set to be replaced with Big Brother legend Alison Hammond and Dermot O’Leary who impressed ITV bosses when they took over hosting duties this summer. Former Big Brother contestant Alison has also been hosting segments for the show since 2003 and presented her own documentary Back To School earlier this year. Dermot is most famous as the face of the X Factor which is now temporarily off our screens.

A source close to the couple shared that the ‘beginning of the end’ was when the couple moved out of their Brooklyn home and to Los Angeles last year. There has been no drama or scandal, they just didn’t work as a couple anymore.

Lil Wayne has received a federal weapons charge and could face serious prison time if convicted. The U.S. Attorney for the Southern District of Florida charged the rapper with 1 count of possession of a firearm and ammunition by a convicted felon. Wayne faces up to 10 years in prison if convicted. The charge is for a December 2019 incident where federal agents searched Wayne’s plane at Miami-Opa Locka Executive Airport. He was a passenger on the plane, which made a stop in Florida on its way to California. At the time, Wayne’s attorney, Howard Srebnick had said his client was “cleared” to leave even though guns and drugs were reportedly found on the plane. It appears now the feds believe Wayne was wrongfully in possession of a weapon and ammunition. Srebnick shared,’ Carter was charged for possessing a gold-plated handgun in his luggage back in December.’ The lawyer said, “There is no allegation that he ever fired it, brandished it, used it or threatened to use it. There is no allegation that he is a dangerous person.” He added, “The charge is that because he was convicted of a felony in the past, he is prohibited from possessing a firearm.” Wayne’s scheduled to appear in court next month.
TIME OUT Little Mix’s Jesy Nelson is taking extended time off from the band due to a private medical condition. The news comes after Nelson missed the MTV EMA’s which Little Mix hosted last month. Jesy also missed Little Mix: The Search’s competition show final. Nelson, who is normally very active on Instagram, hasn’t posted since Halloween. Last year Jesy released her documentary Odd One Out addressing her issues with body image, eating disorders and the prevalence of online bullying as well as depression and an attempted overdose after the group won The X Factor in 2011.

ou may recognise Holly’s infectious smile from fronting shows such as ITV’s This Morning and Dancing on Ice, but did you know the bubbly presenter has amassed a 10-million-pound fortune along the way?. Holly started her career early and by 14 years old was modelling and appearing on the cover of teen magazines. It all began in 1995 when she was spotted by talent scouts at ‘The Clothes Show’ Live exhibition, who then signed her to Storm Model Management. At 19 Holly had her first TV job on the CITV show, S Club TV before moving to S Club 7: Artistic Differences. She went on to work on CBBC and programmes including Xchange, X-perimental and CBBC at the Fame Academy. As her popularity soared, she landed a selftitled show alongside Stephen Mulhern named Holly & Stephen’s Saturday Showdown. While working on the

Three years later, This Morning,

What’s your full name? My full name is Alexandra Pocsik and it is funny because I actually got my name after my grandfather, Alexander Pocsik.
Your top Instagram tip? Never compare yourself to anyone, and always stay authentic and humble. How long does a standard photo on your grid really take to shoot? It’s hard to say because I try not to spend too much time on making my pictures but when it’s a sponsored work of course I will take my time to make it look perfect.
Where are you from? I was born in Budapest, Hungary but I have Russian/ Ukrainian roots. What is your background and how did you become an influencer? My family always moved around a lot but when I was 16, we moved to Marbella and I have lived here ever since. I finished my high school and university educations here. First, I studied to become a graphic designer but after I gained my bachelor’s degree I realized, that it was not the right path for me. I started doing my master’s in marketing but 2 weeks later I transferred to an online university to become a psychologist/relationship therapist. Even though, I would call myself an introvert, I’ve always been a people person. I always loved helping people and couples with their problems. And I have to say, I’m also a little obsessed with the human mind. About becoming an influencer, it was never planned. Even growing up, it never once crossed my mind to become a celebrity, influencer or someone who people talk about. It is true that I started modeling at an early age, but it was nothing too serious in my head. I always looked at it as a hobby or a free-time activity. I think I’m more of an entrepreneur spirit then an influencer. I think the whole influencer thing started taking off 5-6 years ago when I made a massive lifestyle change. Before that I had a very unhealthy lifestyle. I was working in the nightlife industry to cover my costs for university and I was abusing alcohol, tobacco and other drugs. At one point I found myself in a very dark place and I didn’t see the light anymore. That’s when I decided to turn my life around. I quit smoking, became sober and changed to a full plant-based diet. I started sharing my food, and exercise routines on Instagram and more and more people started reaching out to me saying that I ‘inspired’ them to become sober and healthy. What three things does anyone starting in your industry need to know? Patience, consistency and authenticity will bring you forward. Who inspires you? I can find inspiration in anyone. I believe that everyone in this world is unique with their unique trades and personalities. There is something

Positive, Motivating, Playful What does a typical day in your week look like? I wake up between 6:30-7:00 am every morning. I’m definitely an early bird, but you know the saying: “Early bird, catches the worm”. I make myself a nice hot tea and I drink my celery juice and then I go for a run with my dogs. (I never skip this ritual.) Usually after I do some yoga at home and then I get ready for the day. The second half of my morning usually I spend it on my laptop and phone, just replying to emails, planning/creating content and preparing myself for the day. Most of the time from midday till late afternoon I have some counselling sessions with my patients and meeting with new clients and brands. Recently I started my own activewear/swimwear brand called @ active.marbella and I also teamed up with some of the best interior designers in the Costa del sol to create a whole new design experience: @great.spaces. Days have been definitely busy lately, but I actually enjoy it. My mind is always racing about how to create something new and purposeful. And after a long day I just like to stay home and relax. Your favourite fashion brand? Alo Yoga, Saboskirt and 320dtla
The best gift you have ever received since becoming an influencer… It would be impossible for me to pick one thing. I always appreciate everything I get, and every gift has a different purpose. I love receiving anything edible though. I’m a big foodie. Favourite hotspots on the coast? I would say, Beity, Manuka, Miss Matcha café and Playa Padre. Crammed indoors with your family for prolonged periods. Tensions running high. An increasingly inescapable sense of claustrophobia looms as passive aggression gradually drops any pretence of passivity and verges into outright confrontation. Nevertheless, the frankly bonkers world outside the door is even less inviting. Routine visits to shops have become intimidating exercises in crowd management and proximity paranoia, store workers frazzled, ransacked shelves half empty... Experts assure us this is a temporary situation. Normal life will resume in due course. You just have to get through it. We all do. So you stay in and you binge. Ohhhh how you binge. If your mouth doesn’t have a dig at a family member coming out of it, it’s got alcohol or food going in. You’ll get back to the gym when the dust’s settled you tell yourself. “It’s probably closed right now anyway” you tell yourself. “It’s out of my hands” you tell yourself.... Those hands are opening a second tub of Pringles. “It’s not my fault; once I ‘popped’...” ...And your eyeballs are hungrier than ever. Starved of their normal diet outside the house - daylight, the park, beach,

factory, office or worksite... Anyone who doesn’t share your DNA or your bed they go seeking easy prey. Thank God for Netflix, Amazon Prime, Hulu, HBO, Disney +.... You haven’t seen your closest friends in ages. They’re similarly hunkered down with their nearest and (increasingly questionably) dearest. What would we have done a few years back to pass a time like this together with some semblance of unity? Conversation?!? Boardgames probably. Fuck me. ...but then some of us enjoy the Christmas holidays, or “Lockdown, with tinsel.” Pre on-demand TV, Christmas scheduling was a highlight of the year, especially for those who grew up with just four terrestrial channels. (Channel 5 came out when I was 15 but our area didn’t
get reception so I missed out on a plethora of mediocre erotic thrillers that would’ve been catnip to me and my particular demographic. Instead my friends and I had to make do with borrowing James Gaunt’s VHS copy of Basic Instinct but it got passed round school so much it went fuzzy on all the racy bits...) Christmas was when the programmers pulled their finger out and actually put stuff worth watching on, including films which had in some cases, been released in cinemas just three or four years earlier. You could crawl out of bed on Christmas Eve, catch a James Bond accompanied by smoked salmon and scrambled eggs, followed by The Goonies, apple pie and ice cream, an hour-long Xmas Eastenders with your gammon and Iceland canapés, rolling straight into Terminator 2 and a late-night cheeseboard. You’d traipse to bed, exhausted, stuffed, giddy at the thought of doing it all again tomorrow
(but with added PRESENTS!) and ready to dream about a tux-wearing, Martinidrinking Santa Claus’s desperate last stand against an army of unstoppable pirate-cyborgs from the future. “Unstoppable” that is until the Mitchell brothers turn up, all red and round and bald and just start NUTTING everyone!!.... Christmas was the BEST! With today’s smart phones, smart TV’s, tablets and lightning fast broadband, streaming has become the unrivalled norm for home entertainment and every day is effectively Christmas. Whether you’ve been good and paid your subscription or bad and hit the dodgy pirating sites, classic films, awardwinning drama or latest releases - you can watch whatever’s on your list day in, day out. Whilst that’s great, if every day’s Christmas, then what makes Christmas special? Where once the prestige broadcasting peppered with that Coca-cola ad with the lorries (“Holidays are coming, holidays are...”) unquestionably told us something special was afoot, today we increasingly curate our own content (with a little ‘help’ from the algorithms), so the onus is on us now to inject a little holiday spirit into proceedings, lest Christmas becomes just the food and presents.... and, errr, family togetherness, peace and good will or whatever. To help, here’s three Christmas crackers you simply have to (re)watch this year.
Gremlins
Everyone’s favourite light-dodging troublemakers, this 1984 classic was the first produced under Spielberg’s Amblin studio banner and heralded the dawn of the PG-13 rating as a necessary halfway house between kid-friendly PG and “definitely bloody not”, R. Whilst the great bearded one successfully toned down far darker elements of director Joe Dante’s bloody first draft, the finished film still earned that 13 appendix with numerous scenes of horror, violence and general chaos. The performances and practical creature effects are still top notch and the anti-capitalist messaging refreshingly subversive in a Christmas offering.... Plus Gizmo!

The very essence of Christmas. An ode to uninhibited juvenile freedom and familial sentimentality... with a heavy dose of looney tunes violence. It’s wish fulfilment for kids. My kind, gentle, nearly-five year old watched it last week and laughed like a lunatic when the silly man got hit in the face with an iron... I’ve now hidden our iron.
Featuring Joe Pesci and the late John Candy in fine form, it’s the movie that put Macaulay Culkin on the map. He later fell off the map quite hard.... then sold the map to buy drugs.
Die Hard
The quintessential Christmas movie, even if star Bruce Willis says in interviews it’s not a Christmas movie. He’s so grumpy these day he probably doesn’t celebrate Christmas. If it’s not a Christmas movie, why did he write “HO HO HO” on that terrorists jumper just after killing him and taking his machine gun? It doesn’t get more Christmassy than writing “HO HO HO”.... on a dead terrorist. Whichever side you fall on the argument, it’s a taut, sublimely executed action thriller with Willis pitch perfect as the reluctant hero dogging Alan Rickman’s scenery chewing bad guy... at Christmas.

I have always been a big fan of quinoa for its taste - I love that it is slightly nutty and earthy because it pairs so well with many different kinds of plant foods. But once I learned about all of quinoa’s amazing health benefits, I started including it as a main ingredient in my cooking as often as possible! Read on to discover all of quinoa’s impressive health benefits as one some of my favorite quinoa-based recipes.
What is so special about quinoa? Besides the fact that quinoa is tasty and highly versatile (think warm cereals, burgers, side dishes, salads, and even chili), it is also really good for you. This pseudo-grain is rich in fiber and phytonutrients and is low-glycemic, celiac-friendly, anti-inflammatory, and gluten-free. It is even a complete source of protein! That means it provides all nine of the essential amino acids our bodies cannot produce on their own. And it is loaded with vitamins and nutrients such as manganese, phosphorus, magnesium, copper, and folate. But what is it? Quinoa is often referred to as pseudograin or pseudocereal because the identity of this complex carbohydrate is difficult to pinpoint. In its raw form, it’s more like a seed, but once it’s cooked it seems to masquerade as a grain. This explains why it is often used to replace rice in many kinds of dishes.
Why quinoa is superior to rice Like rice, there is more than one variety of quinoa: there
is white, red, and black. White is the fluffiest most commonly used type and takes the least amount of time to cook. Red holds its shape best and is the preferred option in cold salads and recipes that call for a bit more of a crunch. And black tastes earthier and a bit sweeter—and takes the longest to cook. But what sets quinoa apart from white, wild, and even brown rice is that it is a complete protein. Not only is rice not a complete protein, but it also has only four or five grams of protein per cooked cup while its quinoa counterpart packs eight grams. Quinoa is also lower in carbohydrates than rice, with about 39 grams compared to brown rice’s 45 grams. In rice’s defense, both grains are a good source of micronutrients, but quinoa again outperforms rice in copper, calcium, and zinc levels, and has 3-4 times the nutrients of brown rice! Lastly, most rice contains arsenic … quinoa consistently tests significantly lower for arsenic than any type of rice.
The incredible health benefits of eating quinoa The health benefits of quinoa go beyond the noteworthy vitamins and protein as quinoa may also have anti-cancer properties. The antioxidants found in quinoa can help keep harmful free radicals at bay. And it contains other powerful healing compounds such as saponin, lunasin, and quercetin, which are all known to help protect against cancer. Its anti-inflammatory properties (oleic acid, alpha-linolenic acid, potassium, and magnesium) may help stave off heart disease and promote heart health. And quinoa is known to help regulate blood sugar, promote regular bowel-movements, support weightmanagement, increase bone and gut health, reduce the risk of diabetes, boost the immune system, and enhance liver function. It is somewhat of a miracle food!
How do you prepare quinoa? It is not unheard of for little bits of debris and pebbles to infiltrate quinoa during harvest, so you may want to do a quick check before you start cooking it. I do this by digging through it with my hands while I rinse it under the faucet in a fine mesh strainer and removing any micro-rubble. Rinsing quinoa also removes the coating of saponins which can taste bitter as it is nature’s very own natural pesticide (isn’t quinoa cool?). To thoroughly remove the coating, soak the quinoa seeds for at least five minutes before rinsing them. This step is not required but can be useful for those with sensitive tummies. If you develop an upset stomach, diarrhea, or bloating, after eating quinoa that you prepared at home, try washing your future quinoa seeds more thoroughly before cooking them to see if that helps. If you have cooked rice before then you already know how to cook quinoa. The easiest way is in a pot on the stove with a

SMOKEY QUINOA-CHICKPEA BURGER This veggie burger is seriously one of the best I have EVER had. It’s so tasty (and beneficial for the gut!) when paired with Dark Horse’s fermented ketchup and a dollop of fermented mustard. The quinoa and chickpeas make these burgers a fantastic source of protein. Plus, walnuts have shown to have anti-cancer properties – especially when it comes to colon cancer. Wrap these savory patties in some leafy greens and you’ve got yourself a super yummy, balanced, and nutrient-dense snack. Ingredients: 1 cup red quinoa 1 medium yellow onion (chopped) 2 tsp. chili powder 1 tsp. dried oregano 1 cup cooked chickpeas (rinsed & drained) 1 tsp white wine vinegar 1 cup diced carrots ½ cup coarse gluten-free bread crumbs ¾ cup toasted walnuts (toasted & crushed) Juice of 1 lemon 2 T. chopped fresh flat-leaf parsley 2 T. red chili paste 2 T. fermented ketchup ½ tsp. liquid smoke 2 Tbsp non-modified potato starch Avocado, coconut, or olive oil (for searing patties) Lettuce (for bun)
Mix the chickpea mash by hand with the cooled quinoa. Roast the carrots in the oven until dark around the edges and soft (about 25 mins). Add to the chickpea-quinoa mixture. Add the breadcrumbs, walnuts, lemons, parsley, chile sauce, fermented ketchup and liquid smoke and season again with salt and pepper.
Toppings of your choice: Pickle slices (marinate your own cukes in some vinegar!), Heirloom tomatoes, Red onion Fermented ketchup, Fermented mustard
Mix the potato starch with 1 Tbsp water to make a cloudy, thick mixture. Stir it into the burger mix as a binding agent.
Instructions:
Form the mixture into 8 to 10 patties and sear them in the oil on a hot saute pan until fully browned (about 4 minutes on each side).
Preheat oven to 425 degrees F. Cook quinoa in 1 ½ cups salted water until fluffy (about 45 mins). Cool and reserve. In a separate pan, sauté the onion until translucent and browned. Season with salt, pepper, oregano, and chile powder. Add chickpeas and cook for 5 to 10 mins, stirring constantly. Deglaze the hot pan with white wine vinegar and scrape everything from the bottom of the pan back into the mix. Using a potato masher, smash the onion-chickpea mixture.

Guilt Free FESTIVE SEASON
FEEL-GOOD FACTOR
Whilst it might feel as if the indulgence of the festive period goes on for weeks, and the waistline effects last longer, there’s research to prove that’s largely an illusion. Contrary to popular belief about people adding five pounds of weight over the festive period, the New England Journal of Medicine decided to investigate and found the average person puts on more or less a pound. So while you might feel bloated to the size of a whale, the reality is your weight gain is going to be negligible. However it’s no wonder so many people start the new year wanting to lose weight. Wouldn’t it be great if you kept the pounds off through the festive season so you hit the new year literally running? Like success in most things it comes down to two things: preparation and consistency. Now, in most normal festive periods, aside from the family gatherings at Christmas, there are loads of social events with free flowing booze and usually free flowing food. Who knows what this Christmas will look like in terms of those nights out, but forewarned is forearmed, so let’s look at some strategies.
CONTRARY TO POPULAR BELIEF ABOUT PEOPLE ADDING FIVE POUNDS OF WEIGHT OVER THE FESTIVE PERIOD, THE NEW ENGLAND JOURNAL OF MEDICINE DECIDED TO INVESTIGATE AND FOUND THE AVERAGE PERSON PUTS ON MORE OR LESS A POUND.
First of all, if you are heading for a social event, try and eat a healthy meal high in protein before you go. Protein triggers the hormone leptin, which sends an “I’m full,” signal to the brain. What you don’t want to do is turn up already hungry and jump on the vol-au-vents as they appear in front of you. Prime your stomach with a protein high meal, and you’re less likely to snack. Remember that alcohol makes you crave salty and sugary carbohydrates, and compounding the effect of these on your body is the fact that your body will prioritise the metabolism of alcohol over food, in order to clear it from the
body. What this means is that the late night kebab is much more likely to go straight to body fat as it’s down the queue for processing. When it comes to drinks, obviously, alcohol is not great for your health goals, but hey, it’s the festive season. Aim for beverages lower in sugar: dry white wines, dry sparkling wines, clear spirits with diet tonic or soda water with a squeeze of lime all have less calories and less sugar than beers and cocktails. When you’re not out and about, ensure your diet is as healthy as possible to minimise the impact of that overindulgence. If you know you’re going to have a big meal, then go lighter on your meals a day either side so the total calories even out over the three days. Finally, don’t neglect your exercise. It’s really easy to let it slide. Plan your evenings out, and then work in your workouts around them. There’s no point planning a record breaking treadmill attempt the day after the office party. On days where you’re not out the evening before, take it up a notch and aim to train at least twice a week. Even if workouts aren’t your thing, your likely to be a lot more sedentary than in everyday life, so plan in some movement. This could be long walks, a few runs, a gym session, even a short high intensity training session of 15 to 20 minutes a few times over the holidays will make a difference, and make you feel great. It might sound obvious, but if you end up sitting around drinking and eating, you could well add more than that average pound. Being more mindful about what you consume and moving your body might mean you even end up lighter - wouldn’t that be a great gift? A final word, remember to enjoy yourself! It’s once a year after all.

The magic time of Christmas has arrived again and I love it. With two Christmas trees in the office decorated and one at home, the Yuletide has definately arrived and in these curfew times, the twinkle of lights and lit candles makes staying at home cosy and as we call it in Denmark, gives us “Hygge”. Christmas for me this year will be held in Marbella with flights to Copenhagen nearly impossible to find, so time to make Danish traditions meet sunny Marbella with duck and Ris-ala-mant being savoured on the 24th, Christmas Eve and Smorgasboard dishes served on the 26th. I wish SOCIETY Magazine readers a very Merry Christmas and a Happy New Year and I look forward to continuing Tine’s Corner in 2021.
From Rags to Riches What joy our ‘Duffle Coat’ has brought my firm. We have all loved watching him race, especially when he won the JCB Triumph Trial Juvenile Hurdle at Cheltenham making it four wins out of four races. In these not-sointeresting times, top Irish Trainer Gordon Elliott decided to give us a little much-deserved excitement by turning our “little donkey” into a true prince. I always watch the races at the Aloha Tennis Club with many of my fellow neighbours joining in, cheering him on. What will the future bring for our young boy? For sure there will be many more cheerful moments egging on the jockey in his blue & white
colours. As a fabulous gesture of Duffle Coat’s abilities, the infamous race cartoonist, Birdie graced us with a drawing... I hope it brings a smile to your face.

A NEW National Park for Spain, close to Marbella! by Vivion O’Kelly
Spain will soon have a total of 16 National Parks, three of which are now in Andalucía. These are Doñana National Park, Sierra Nevada National Park and the soon to be officially declared Sierra de las Nieves National Park. Four of them are located in the Canary Islands and one in the Balearic Islands. The oldest are the mountain ranges of the Ordesa
Valley in Aragon and the Picos de Europa in the regions of Asturias, León and Cantabria, established just over a century ago, and the newest is the Sierra de Las Nieves, right here on Marbella’s doorstep. Sixteen is not a huge number: relative to size, Ireland, for example, has almost twice as many, although Spain’s are much bigger.
The principal advantage of becoming a National Park is environmental, in that further exploitation of natural resources and destruction of natural habitat is limited. There are more than 160,000 such protected spaces in the world, including marine parks, covering almost 15 percent of the earth’s surface.

The new Sierra de las Nieves National Park The new national park will cover an area of almost 23,000 hectares (about a third the size of Exmoor in England), and was first declared a lessercategory Nature Park in 1989, although much bigger than the newly-declared National Park, becoming a UNESCO Biosphere Reserve in 1995. It is entirely in the province of MĂĄlaga, specifically in the SerranĂa de Ronda, and it is
home to 65 % of the rare pinsapo fir trees in Spain, along with valuable formations of quejigals, holm oaks and Mediterranean forest. There are no towns within the new park, although both IstĂĄn and Tolox border it, but it has numerous mountain tracks that have traditionally been used by offroad vehicles and horseback riders for many years. More or less in its centre
is the mountain peak of La Torrecilla, at almost 2,000 metres high and accessible in about three hours by foot, and in the same area are seven of the deepest caves in the region and some of the deepest in Europe, used widely for potholing. The practice of this sport is, however, strictly controlled by the local authorities.

Public and private investment But there is a lot more that will be permitted in the new National Park that does not involve risking life and limb in the bowels of the earth. This is prime rambling country, as is the rest of the Nature Park, which encompasses many of the so-called White Villages of the region, including Monda, Istán, Tolox and Ojén. The new park is essentially an area rich in flora and fauna but largely devoid of human habitation, and while its protected status as a National Park will ensure it can be enjoyed by many generations to come, that does not means it will not be developed to some small extent for tourism purposes. New access and rambling routes will be built, with tourist accommodation and necessary infrastructure for the rapidly increasing number of people who will wish to visit the area. Both private and public investment is expected, with approximately 80 million euros of initial investment needed.

Easy access to the park will be through the towns closest to it, which include Istán, Tolox, El Burgo and Yunquera to the east, and various routes from the upper section of the Ronda road to the west. There are not many natural reserves of fresh water anywhere in Andalucía, but there are some rivers and streams running through the new park, keeping in mind what is defined as a river in Southern Spain. The main one would be the Río de Los Caballos, where a fairly short ramble from the village of Tolox brings one to the Charco de la Virgen (a small pool), just a few kilometres south west. A quick search on the Internet will bring up a host of suggested rambling routes in this area, many of them in English.

The artist Massimo Cedrini was born in Novafeltria (RN), a little town in Rimini (ITALY). Passionate about art since he was a child, he started painting at the age of seven. He moved with his family to Turin where he graduated from the Municipal Institute of Art in 1974, with a Design & Advertising degree. The Marbella-based interior design and architecture firm, UDesign, have just won the 5-Star award for “Best Interior Design” for the design of the apartment “Maison Lumière” in Tangier, Morocco in the African Property Awards (2020-2021). ast year UDesign were also award winners in the ‘Architecture Single Residence’ category for the design of the fabulous Villa Alcuzcuz on the Ronda Road. They won ‘Best in Spain’ and then went on to win ‘Best in Europe’. We’re looking forward to seeing them triumph again, but this time in the Interior Design category.
Maison Lumière, is located in the new urban marina of Tangier – Tanja Marina Bay. This corner apartment started life as two separate apartments, one with a view to the coastline of Tangier and one with a view out to sea. UDesign gutted both apartments taking out the doors, walls and floors and completely redesigned the space.
The bright and spacious finished apartment has 3 bedrooms, two guest bedrooms and an extensive master bedroom. The decor is full of Moroccan references expressed in a very contemporary style. Aside from a few carefully selected brand name pieces, all the doors, cabinets, shelving, kitchen cupboards, coffee tables, dining table, sofas, beds, bedside tables and wardrobes were designed and custom-made by UDesign.

The client had very specific requests in the design brief and one of these was to create a “jaima�, a classical element of Berber culture. A Berber desert camp would have a designated space around the fire, or secluded by a tent, where men could congregate to discuss important business matters and smoke shisha. The circular nature of elements in this area evoke the spirit of the past, where elders and guests of the tribe sat in a circle around the fire, under the desert stars.

While the design of this jaima is far from its origins, it is clearly set up to encourage quality conversation. The porthole style Sovet Italia mirrors are reminiscent of cruise liners and allow someone standing in the kitchen to see the boats entering the port. The positioning of the space also helped the client to alleviate the stress of a busy lifestyle. His work takes him constantly back and forth from Spain to Tangier, so not only can he sit here and look out
at a beautiful bay with its busy maritime traffic, but he can also see when a ferry is arriving. There are 72 of them every day between Spain and Tangier, and they can be spotted approximately 30 minutes before arrival in Tangier port. So rather than look at his watch, or the
internet, for ferry times, he now looks out the window and knows that he has just over half an hour from that moment to catch the same ferry heading out again. This is easily achieved as the walk from the apartment to the ferry terminal takes just ten minutes.

“IMPRESS ME� Of all the requests made by the client, this was the most difficult to achieve, both in its creation and application. UDesign finally concluded that lighting, sound and technology would impress most, so they set out to create a spectacular smart home system. LEDs offer many advantages over traditional light bulbs, lasting longer, being more energy efficient, having a high brightness level and coming in an exceptional range of colours, along with many other features. A selection of white and RGB colour schemes allows the client to set the mood for the entire common area at the touch of a button. The result is that this apartment is a masterpiece in domotic solutions. Domotic software is only as good as the lighting and appliances that complement it, and in this case there are approximately 200 metres of LED lighting, along with various pendant and floor lamps.

When the client first saw this lighting he said it was “beyond anything he had ever imagined”.
The system can be programmed to slowly change from one colour scheme to another, creating a relaxing flow of coloured light throughout the entire apartment. The lighting can be controlled by the clients phone (or any of his personal devices) and also by voice command. MASTER BEDROOM SUITE It was very important for the client that the bedroom be an independent suite, on par with that of any five-star hotel. Consisting of a lounge, walk-in wardrobe, bathroom and bedroom itself, the space is divided into areas by a smoked eucalyptus panel holding the TV and the LED fireplace. As expected in a suite of this quality, there is a TV on both sides of the central panel.
Anyone getting out of bed during the night (on either side of the bed) will activate a sensor which will turn on very low level LED lighting, marking an easy path to the bathroom without awaking the other partner. The grooved eucalyptus wooden panel above the bed has integrated LED lights, just in case the client feels like adding a twist to his alarm clock routine! RETHINK. RESKILL. REBOOT. AS OUR GOVERNMENT WOULD SAY... With demand for oil shrinking some 20% through the pandemic, the barrel price collapsed to around $40. This was bad news for petrostates like Saudi Arabia who need a base of $70-80 to balance the books. Remember some years ago when the news reported supermarket price wars had hardworking British farmers losing money on every pint of milk they sold? Well this is similar, but substitute Barbour wellies for Armani sunnies, 20 year old tractors caked in mud for brand new Rolls Royces plated in gold, chickens for diamonds, cows for gold-plated diamonds and pigs for ANYTHING but pigs you insensitive dolt; this is Saudi Arabia! ...Substitute sympathy for smirking. Smirking might seem harsh but at this late stage of our assault on the planet it legitimately qualifies as gallows humour. Big oil is anything but the downtrodden underdog in this story.
MASS JOB LOSSES ARE REGRETTABLE BUT IN THE LONG RUN, PREFERABLE TO MASS EXTINCTION.
Renewables commercially overtaking the black stuff is a significant milestone on our path towards a sustainable planet – a passing of the torch (always take care when passing burning torches round billions of tons of fuel) whose stock market reckoning will undoubtedly catalyse further investment, innovation and restructuring of the industry towards wind and solar. In the words of Daniel Plainview, There Will Be Blood’s sociopathic oil tycoon, NextEra just reached across the room with their straw and drank Exxon’s milkshake. And with any luck, NextEra’s own milkshake will bring all the boys to the yard. It’s a process which seems to be under way in earnest. In February of this year, analysts predicted renewable energy capacity set to increase by 50% between 2019 and 2024, based on the recent acceleration of wind, solar and hydropower project rollouts. Of course that prediction was made before the entire world got turned on its head and chucked into a reality blender (again, I’m talking about the pandemic here, not Boris saying sorry for something), but
if the new global energy pecking order can weather these storms of uncertainty (and turn storms both figurative and literal into clean power), we may even see that estimate exceeded. Of course, a rapidly shrinking oil industry means unfortunate redundancy (Exxon has some 74,000 employees around the world and they’re clearly not all driving gold-plated Rollers) but with estimates stating our current fossil fuel reserves will be dry by 2060 - not long from now, but long after our current consumption trajectory blasts us past the relatively safe 2C level, irreversibly affecting the climate - we can’t afford to be too sentimental. Seismic change is often uncomfortable, but then so are seismic waves, hurricanes and tsunamis. Mass job losses are regrettable but in the long run, preferable to mass extinction. Rethink. Reskill. Reboot. as our Government would say. If the reboot comes in the form of renewable energy, from a utilitarian perspective, we have to consider that a good thing.

Leeks are one of my absolute favourite ingredients to cook with. Sweet, sticky and softer around the edges than onions, they make a great base for stews and curries.
Bettina, our resident foodie, offers her insider knowledge on plant based cuisine and takes us on a culinary journey as she travels the world in search of gastronomic inspiration
Leeks vary a bit according to the season. The winter harvest begins in October and produces a larger, stronger-flavoured vegetable than the leeks you find in warmer months. They can keep for up to two weeks in the refrigerator, and will even do well frozen. I also often get the smaller ones, which are great sliced and scattered over salads. Of course, leek is the main ingredient in leek and potato soup – and more surprisingly, it’s also tasty chopped as part of a vinaigrette, or simply braised and enjoyed as a side dish.
KOREAN PANCAKES WITH TAMARI DRESSING One of my dearest friends, Soljee, is from South Korea, and I have spent quite a lot of time there eating my way through some delicious food and sipping on matcha lattes. One of my favourite and quickest dishes to make is the Korean pancake. It’s pleasingly crispy on the outside and filled with veggie goodness on the inside – and leeks take centre stage in this more-ish treat. It’s wonderful dipped in the best tamari dressing ever!
Ingredients MAKES 1 BIG PANCAKE (SERVES 2) 70 g (3 oz / 1/2 cup) gluten-free flour mix (any shop bought will do) 160 ml (5 fl oz / 2/3 cup) water A pinch of bicarbonate of soda (baking soda) Olive oil, for frying 100 g (31/2 oz) asparagus spears, (1/2 bunch), sliced lengthways 1/2 leek, sliced lengthways 1 carrot, chopped into thin sticks FOR THE DRESSING 60 ml (2 fl oz / 1/4 cup) tamari soy sauce Juice of 1/2 lime 1 tablespoon sesame oil 1 teaspoon maple syrup 1/2 garlic clove, peeled and grated
TO SERVE 2 spring onions (scallions) Chopped black or white sesame seeds Coriander (cilantro), optional
Method Start by mixing all the ingredients for the dressing in a small jar. Pop the lid on, give it a shake and set aside. In a bowl, mix the flour, water and bicarbonate of soda and set aside. Heat some oil in a frying pan (skillet) over medium heat. Add all the veggies and fry for 5 minutes until brown. Spread the veggies out evenly in the pan and pour over the batter until you have a big pancake. Cook for 5 minutes on each side until crispy and golden brown. Serve immediately, cut into slices, topped off with the spring onions, sesame seeds, coriander and the amazing dressing alongside. This is such an easy dish to serve as a starter, sharing platter or quick solo meal after a long day at work.

Leek top tips You can use the whole leek, tops and all. If you peel off the dry outer layers, thinly slice the rest and cook low and slow, you’ll get a delicious sweetness from them. One of the downsides to leeks is that they can be pretty laden with soil between the layers. I cut them into 10 cm sections and slice them horizontally, then give them a bath in the sink in warm water while separating the layers. It’s an easy way to get them clean before they’re diced or chopped into half-moons.
