We are all massively indebted to the amazing team at FOC Design for their input and assistance with our office renovations – the new place is now looking a treat and has proved a great venue for thinking about what our collective New Year’s resolutions should be. It would be remiss of us to end 2014 without offering a very big “thank you” to our advertisers; this has been a bumper year for us, with even more new clients signing up to join us at the beginning of next year. Dispatches
For many years Channel 4 has been praised for its cutting edge documentaries. The Dispatches series is particularly fascinating; the team does an incredible job in continuing to uncover little known occurrences throughout the world, whether this means exposing the alarming levels of naturally occurring arsenic present in packaged food or questioning whether banks can be trusted. Last month another ground-breaking set of episodes aired on Channel 4, all of which are certainly worth viewing for new perspectives on accepted versions of events.
Downton Abbey The Missing
This relationship thriller aired on BBC 1 last month and had me gripped from Episode One. In 2006, young Oliver goes missing whilst on holiday with his parents in France. The programme deals with the varying impacts of losing a child on a mother and father. Oliver’s father, played by the massively talented James Nesbitt, returns to the northern French town eight years later when new evidence emerges and battles with the police and the town's mayor to re-open the case to find his missing son. A compelling watch.

Another series of the hugely successful period drama is over and if you missed this season’s instalments of Downton Abbey, they are definitely worth a watch on catch up. The series picked up on many of the storylines that had the nation captivated during Series Four, including Lady Edith dealing with the aftermath of her pregnancy and Mary Crawley’s relationship with Anthony Foyle and Charles Blake. If that’s not enough to tempt you into watching the show, it has just recently been confirmed that George Clooney will be making a guest appearance on Downton Abbey for ITV’s Text Santa. The specially-written sketch has already been filmed and will appear in December along with many other exciting surprises in ITV’s annual charity appeal show.

Lady Gaga hits Marbella The international superstar, Lady Gaga has published photos of her recent short break in Marbella on her Instagram account. The multi-millionaire singer stayed at the exquisite Villa del Mar, Marbella Club Hotel to chill out after performing in Portugal during the week as part of her artRave world tour. The superstar was accompanied on her short break by her French bulldog, Asia. The Poker Face singer also posted a message that read: “Goodbye Marbella, your beautiful oceans, sunshine and friendliness have rejuvenated me and Asia.”

Rihanna is back
Rihanna has returned to Instagram, six months after shutting down her photo blog over a dispute about the site’s nudity rules. The ‘Umbrella’ hitmaker disabled her “badgalriri” account in May after coming under fire from website bosses for breaking their terms of agreement by posting risque shots from her sexy covershoot for French men’s magazine Lui, in which she was snapped exposing her bare breasts and her nipple piercing. She was forced to remove the saucy pictures from the photo-sharing site and subsequently decided to shut down her page, which had amassed 12 million followers.
Just when we all felt safe and the Internet was put back together, Paper magazine released more photos from Kim Kardashian’s sexy photo shoot. There was absolutely nothing that was left to the imagination. Not one single thing. And, as expected, the Internet went crazy. People lost their minds over Kim’s glistening full-frontal pics. The reality star herself is no exception. “I’m never one to preach, but I felt really positive and really good about myself,” she said on the Australian show, The Project Tuesday. “I love the photos, I did it for me, I hope other people like them.”
Adele snubs Christmas single Considering the superstar-heavy line-up for Band Aid 30, we can’t help but wonder why Adele is missing. Apparently Sir Bob Geldof invited the ‘Rolling in the Deep’ songstress to add her glorious vocals to the updated version of ‘Do They Know It’s Christmas?’ Given the participation of the likes of One Direction, Chris Martin, Bono, Rita Ora, and Ed Sheeran, her absence was baffling. Geldof admitted that he contacted Adele but he, “couldn’t get her to commit to the project” which aims to raise millions to combat Ebola. Before the recording of the famous Christmas song took place, Bob told the gathering of the world’s biggest and brightest musical stars: “This is so much bigger than us.”

Prenatal yoga classes focus of specific muscle groups designed to aid the birthing process.” Margaret started her training in Thailand with the Absolute Yoga Group in Koh Samui where she studied Hot Yoga before continuing her studies in Vinyasa Flow at The Power of Now Oasis Yoga and Meditation Centre in Bali, Indonesia. She then went on to study Pre-Natal Yoga with the Yoga Education Institute. Margaret currently teaches Hot Yoga at Radiant Yoga in Nueva Andalucia but also offers group classes in Hatha Yoga and Gentle Vinyasa Flow on Marbella Beach in front of The Boardwalk Restaurant and private lessons within the comfort of your own home. emember the 1990s television series The X-Files? For those who don’t it was a sci-fi series in which an FBI agent, Agent Mulder, was convinced of the existence of extra-terrestrial mischief and a government plot to cover it up. He was assigned a sidekick, Agent Scully who, as a forensic scientist, was asked to disprove Mulder’s theories by providing scientific evidence for the strange goings on. As the series progresses Scully is less and less convinced by her own findings and more and more convinced by Mulder’s theories, that she becomes a problem for the very people that employed her in the first place. All very interesting, I hear you muse; but what has this got to do with real estate? As I have delved into the workings of the real estate market on your behalf here on the Costa del Sol and in particular Marbella, I wanted to examine the sticky topic of property valuation and in particular how agencies arrive at property values in the choppy waters of the economic climate in which we now find ourselves. During my quest I have discovered more questions than answers, despite starting our as a Scully, certain that I would be able to see through all the bluff and blarney and come up with scientific evidence of an easily applied formula, a formula we all could use to see if what was “out there” was in fact worth what we are being told or not? I have, in fact, ended up more like Mulder, inasmuch as I don’t know who to trust as too much of the property market simply doesn’t make any sense whatsoever. In my piece last month I spoke about Marbella bucking the national trend when it comes to house prices stabilising and in some cases - rising slightly in 2014, with location and the availability of good stock being the principal factors. My focus this month is how and by what formula do the vendor and the agent representing them arrive at a valuation of their respective property when putting it on the market? Perhaps even more importantly, how
can you, as a buyer, gauge if the property is in or around the market value?
You could get a professional evaluation (Certificado de Tasación) from a bank; any bank lending you money wouldn’t take the buyers or an agent’s word for it so why should you? A bank will offer this service for a fee. Before doing this, though, you would probably want to have a look around and just compare prices and get a feel for the market.
I took an example I found a property in Elviria with a price tag of 650K, it has a build size is 300 sq meters, and the plot size is 1200 sq meters in reasonable condition, nice views and a pool.
If we use the UK as an example you would use the post as your starting point and then add in the general type of build (terrace house, semi detached etc.) this then can be used to compare like for like by surrounding properties, thus making it fairly simple to get an idea of value. So what about here in Marbella? With obvious exceptions (urbanisations) this rule of thumb doesn’t appear to apply as quite so readily. Thrown in to the mix here are individually bespoke villas of varying build styles, ages, orientations, layouts, plot sizes, furnishings and conditions. So given it is far less obvious to compare build for build that easily, how does any prospective buyer value properties? What formula is applied to the valuation of any villa or non urbanisation type property? Victor J. Sola is an architect with over 20 years’ experience, a fully qualified project manager and API (Real Estate agent) based in Marbella since 2004. Victor tells me that the real estate business, when he was working in Madrid, used a mixture of the land registry, local architects, notary office, surveyors and lawyers and combine variables such as historic prices paid, (PSM) price per square meter, location, average (PSM) for the area, estimated build cost (PSM) to arrive at a market valuation. Victor warns, “Now it would seem the owner and the agent between them arrive at a market value with no real formula for their result.” Oh dear! So let’s assume you have had a good look around and the asking price for the property you are interested in seems to be about right: I must stress at this point there are many variables to be considered but, for this example let’s assume you have settled on a location, building requirements (number of bedrooms, pool etc.) and what you are willing to or can afford to pay. You have found a property that meets most of your requirements and before you go any further you want to make sure the price asked stacks up. What should you do? Why not try comparing what it would cost you to build the property you are about to buy yourself?
According to the latest construction prices published in the “Boletin Economico de la Construcción” the recession has caused building prices to drop by some 12 per cent compared to last year. This now gives a consolidation of a drop in construction prices of around 20 per cent since 20072009! The GDV or (Gross Development Value) of a project in recent years has been subject to considerable drops. Land now has typically experienced a 40 to 50 per cent reduction from 2007. A plot of land used to be over 40 per cent of the GDV in the Marbella area. For plots today (including the architect’s fee and licenses) expect to pay between 25 to 30 per cenr of the GDV. Victor tells me you can expect to pay anywhere between 1000–1300€ per square metre for a good to high-end build quality. This includes a pool and good quality fixtures and fittings, kitchen, bathrooms and landscaping etc. Add about 12 per cent for building licences and projects; this makes our 300 square metre build cost around 369’600€ for this area, similarly a 1200 square metre plot would cost typically 300’000, the result being you could expect to pay around 670’000K to build it yourself. So, on the face of it, our property would appear to represent its market value. Not necessarily, as you would need to consider whether, if you were willing to wait six months for 20K more, you would have a brand new build totally suited to your requirements? It is extremely unlikely your property is going to be a perfect match for you and you probably plan to make some refurbishments yourself to make your dream home. If your refurbishment is anything more than painting and decorating, you can expect it to cost you around 1300-1600€ per square metre, as all sorts of new legislations about wiring and building requirements have probably come into force since the villa was built. In short the older the build the more costly the reform! Last month we interviewed several female members of El Paraíso Golf Club to find out what exactly has earned the club’s place as one of the most popular courses on the Coast. Why did you choose to become a member of El Paraiso Golf Club? Nancy: We looked into the cost of joining some of the clubs located on the Costa del Sol but were hesitant because they were so expensive. Then a friend of ours told us about the great deal at El Paraíso Golf. At the time, El Paraíso was very active in trying to attract new members and had various interesting pricing formulas on offer. We had played the course and liked the layout (designed by Gary Player). Plus it’s a walkable course, which was important to us. Our first impression of the club was friendly and convivial, not snobbish and formal, and we already knew a few members - so we joined!
Christine: My husband and I planned to retire from business and were looking for a golf course we both enjoyed playing. We bought a share and never looked back! It was a real bonus to find not only competitive golf, but mixed and social golf as well. Stephanie: I had played as a guest of members and really enjoyed the atmosphere and welcome I received so, on that basis, I decided to become a member myself.
What is the general atmosphere at the club like? Nancy: The members were very friendly when we joined. Everyone was welcoming and interested in getting to know us, including the staff. Plus El Paraíso has a great teaching pro, Daniel Westermark, who is Swedish and the most patient and passionate teacher. He champions a great team of juniors, and doesn’t do too badly on the Seniors’ Tour himself.
There is a palpable ‘family’ feeling about the group of people who play and work at El Paraíso. There are no ‘clans’ or groups of nationalities. All the members seem to know each other well and support each other in times of trouble. There are lots of organised competitions: some fun formats, and some more serious and Away Days. There are also inter-club competitions, for all levels of play, between other local golf clubs. All of these are managed by different club members, who are all volunteers. There are lots of extra-golf activities organized by the members too: dinner evenings with live entertainment, quiz nights, BBQs on the terrace, even plays and a pantomime at Christmas time. So many members treat El Paraíso as they would their own garden, tending the flowerbeds and getting involved in the landscaping, or feeding the ducks and fish! For most, El Paraíso is much more that just playing golf, it is a ‘way of life’. Christine: The Ladies Section is very welcoming and inclusive. There’s always someone around to help. Everyone is so friendly that you feel as though you’ve been a member for ages! Stephanie: The club is extremely friendly and very supportive of its new members. How does it compare value wise with other clubs along the Coast? Nancy: My husband takes care of our finances, but I do know that it is affordable to us and the price of buying two shares was not outlandish compared to a lot of other golf courses.
Christine: It may not be the cheapest of all, but it is excellent value for money. There’s no restriction on tee times and the staff are extremely helpful; they speak English as well as Spanish and other languages. Stephanie: It is excellent value for money but, more importantly, it has a reputation as the friendliest club on the Coast, which is rightly deserved. Sum up El Paraiso Golf Course in three words. Nancy: Fun, friendly and challenging. Christine: Golf, friends, enjoyment. Stephanie: Challenging, spectacular, immaculate.

hile the French will no doubt vehemently disagree, of the five main ‘romance’ languages based on Latin, Italian is, to my ears at least, the most romantic and expressive sounding of the lot. After all, what other language can consistently make common words sound sexy? Bentley Four-Doors or Renault Quatre-portes does not have quite the same ring as Maserati Quattroporte. Even ‘speciale’, the Italian word for ‘special’ sounds, well, special. Speciale is the tag that Ferrari quite appropriately attaches to the lightest, most powerful and best looking derivative of their already frighteningly good 458 Italia. From the moment you press the big Red Start button on its steering wheel, this car does exactly what it says on the tin. Out of the box, the Ferrari Speciale looks far more purposeful compared to the common or garden 458 Italia, and it has weapons-grade all-round performance to match.
However, despite its relative rarity there will always be people for whom a limited edition of 100 cars is 99 too many. And Ferrari has not put a cap on the number of these cars that they will build. The lucky ones to face this exclusivity dilemma have little choice in the way they can court a significant degree of greater individuality. If you are very extrovert, you could knock on the door at Hamann or Mansory, where your car will receive radical surgery, usually involving large amounts of carbon-fibre. However, those who are not that way inclined will find a far more subtle approach to personalisation at Novitec Rosso, who began tuning Ferraris in 2003 an adjunct to the then four-year old Novitec Fiat and Alfa Romeo tuning business they later sold. Novitec Rosso ply their trade with simple but classy aero styling, ultra-light fivespoke alloy wheels, and technically excellent suspension and engine upgrades. Carbon-fibre detailing in the cabin and engine bay adds the finishing touch.

This low key, ultra high quality approach has gone down very well with their customers all over the globe, and Ferrari itself has nothing to say, which is a good thing in this case. “Not better, but different,� is how Novitec Rosso describes their conversions. Certainly their interpretation of the Speciale engaged my interest more than any one of their current conversions, short of the bombastic looking F12-based N-Largo.
the basic design decisively into the masculine realm. The Novitec Rosso Speciale takes that look to the next level, creating a demeanour akin to a perfectly groomed tiger. Appearing fast even when
standing still, it exudes a level of gravitas and latent power missing from the 458 Italia. In a world where image and first impressions are everything, the Novitec Rosso Speciale has its opening gambit nailed down tight.
Why? Because Novitec Rosso’s take on the Speciale clearly possesses that rare je ne sais quoi that stops car enthusiasts dead in their tracks and makes them swoon. The standard 458 Italia is a very attractive car, but just standing there on the tarmac, it looks dainty, almost feminine. Thanks to its more rugged and aggressive appearance reminiscent of outstanding Ferraris of the past like the 288 GTO, F360 Challenge Stradale and F430 Scuderia, to name but three, the more purposeful looking Speciale moves

With its unique alloy wheels, lower ride height and subtle carbon-fibre front lip spoiler, side skirts and rear wing, Novitec Rosso takes the Speciale one step closer to the image of a racecar for the road. But importantly, they stop short of any visual excess in the masterful way their designs have been from day one. A prod on the red button instantly fires up the naturally aspirated 4,497cc flat-plane crank V8 motor. It’s awakening bark and rock steady idle are no different from stock, but where the Italia’s 570hp has become 605hp at 9,000rpm in a factory fresh Speciale, Novitec Rosso’s Stage 2 conversion pushes output up to 634hp at 9,250rpm. Torque is commensurately improved, rising from 540 Nm at 6,000rpm, the same as a normal Italia’s, to 569 Nm at 5,550rpm. In conjunction with remapped fuel, ignition and valve timing curves, and the higher 9,250rpm rev limit that allows the 5km/h higher Vmax, new

hardware includes an all-new Inconel exhaust system with headers, 100-cell free-flow metal cats and tailpipes. The base Novitec exhaust system has no flap regulation, but you can also have a flap-regulated version controlled from the steering wheel Manettino. Importantly, this low backpressure exhaust system shaves 18kg from the tail
of the car, which has a positive effect on handling. As it is not legal to run a new car without cats on the street in Europe, this customer car has the Stage 2 conversion. In countries like the Middle East where it does not matter, the Stage 1 conversion has a cat bypass pipe that releases a further 2hp and 3Nm of torque, while saving a further 2kg. Relatively inconsequential in the overall scheme of things, this miniscule improvement simply shows how efficient sports cats have become in recent years. If you are every so slightly confused over Novitec Rosso’s nomenclature, I should point out that unlike most aftermarket tuners whose conversion menus read from Stage 1 as the mildest upwards, this German Ferrari fettler offers four stages of tune that go in the opposite direction from the norm. Of course this requires a clear idea from the outset of what will
TORQUE TALK be offered, since, while you can add a Stage 5 and more to a conventional tuning menu afterwards, once you hit Stage 1 with Novitec’s system, that’s all folks. The entry-level conversion bears no Stage number as such, and involves a remapped ECU with 9,250rpm limiter, and exhaust flap switching at the Manettino. This is good for 619hp, 552 Nm of torque and a 5km/h Vmax increase. Stage 4 adds Novitec Rosso’s stainlesssteel exhaust system with or without flap regulation, and results in 622hp at 9,250rpm, 555Nm of torque at 6,100rpm, that 5km/h Vmax increase, and a weight saving of 5 kg. With the 100-cell sports cats in place, Stage 3 works out at 626hp at 9,250rpm, 558Nm at 6,000rpm, along with a 9kg weight saving.
According to Novitec Rosso’s menu system, you can have any of these engine power upgrades on the stock car, but few customers stop there, and with good reason. The typical Ferrari Speciale owners will take one look at the stunning aesthetics of the Novitec Rosso car and start ticking the boxes. The stock footwear is 9.0J and 11.0J x 20-inch shod with 245/35R20 and 305/30R20 Michelins Pilot Sport Cup 2 rubber. Following their usual Plus One route, Novitec Ross offer 9.0J and 12.0J x 21-inch NF4 five double-spoke forged alloy wheels, painted gold in this case, and wrapped in 255/30R21 and 325/25R21 Pirelli P-Zero rubber. These are purely street tyres, so if you want to do trackdays, Novitec Rosso suggests you use the standard wheels with their trackday biased Cup 2 tyres.
In conjunction with the lowered ride height facilitated by sports springs that work with the factory active dampers, and the factory lift system if specified, the car takes on an appealingly lower and wider stance. If your car does not have the factory lifter, Novitec Rosso can supply their own hydraulic lift system that raises the nose by 40mm at a touch of a button to clear ramps and speed bumps. As the active damping works just fine, providing a decent ride even on the larger wheels and their ultra low profile tyres, the only other suspension upgrade on offer is a larger anti-roll bar kit to further decrease the roll angle. Novitec Rosso also offer 10mm, 15mm and 20mm spacers to bring the standard wheels closer to the edges of the arches.

Every part of the Aero kit is made from top quality visible carbon-fibre. To my eyes, part of the appeal of this particular car is how perfectly this complements the ‘grigio ferro’ metallic paintwork. The list of carbon-fibre exterior parts is long, and includes the front spoiler lip, front intake flaps, front bonnet air-guide, mirror covers, side sill panels with double fins, side window intake louvres, engine compartment ventilation louvres, rear wing, diffusor and fins, rear fog-light cover, tail-light cover and triangular door window cover.
A fraction faster to spin up, the tuned motor in the Novitec Rosso Speciale delivers an enhanced sharpness, a slightly greater enthusiasm to rev and an even deeper exhaust note that ends in a primal scream as the red and white needle touches the redline. The experience is as close as such a driving blade can come to your nerve endings without severing your celebral cortex with sheer pleasure.
More high-quality visible carbon-fibre is used in the cabin for the instrument panel and upper dashboard covers in the cabin, as well as the longer paddle shift levers. You can also have a full leather interior to order. With all that information duly digested, it is time to see how all these changes affect the way the car drives. The stock Speciale impressed me like no other V8 Ferrari has since the Scuderia. Its blend of high revs, seamless acceleration and other world chassis dynamics is so visceral, they leave your brain trying to pick up the pieces for a few minutes

Visibility is great on the fast, sweeping Bavarian country roads around Novitec Rosso’s headquarters, and it is safe to use the whole road through both individual and S-bends. Here, the perfect feedback through the thick-rimmed steering wheel allows you to place the car with inch perfect precision. The Speciale’s poise and grip are such that it simply goes where it is pointed with total composure, and you are hard pressed to even approach any semblance of its limits are on a public road. A racetrack is most definitely the right place for more detailed exploration.
Some cars are hard work to drive quickly, others make the business of going quickly seem too easy. For a mid-engined supercar the Novitec Rosso Speciale turns out to be an easygoing partner at normal road speeds, but it is as rapid as anything when prodded. The interesting thing is that its behavior is very linear and consistent. Unlike some past Ferraris that are civilized up to nine tenths, and then become fire-breathing monsters that will fling you off the road when you reach their limit, this car remains user friendly to the end. Even when you exit a low speed bend in second gear in Race mode with an armful of opposite lock dialed in to hold it all together, you just know that this is a car you can trust. In a world where ‘special’ is an overused marketing term, the Speciale is the best drivers’ car from Maranello short of the unobtainable LaFerrari. Novitec Rosso simply adds icing to an already very rich cake by offering their customers a bespoke version of the Speciale that really is one to covet. Local Ferrari dealer: Salamanca

here’s no shortage of Asian restaurants in Marbella and the surrounding area. In fact, there are so many that it takes something really special for an eatery to stand out from the crowd: Top Thai is one such place. The Top Thai team quite simply believes in good health and uses quality ingredients and a dizzying array of Thai herbs and spices to serve up dishes that are both tasty but - most importantly - good for you. What a far-flung cry from the MSG packed Chinese food that seems to dominate in way too many places. Like we said, Top Thai really does stand apart from the rest. On a recent visit to Top Thai, we chose to sample a selection of dishes
that would give us an insight into the ingenious ways the culinary team uses such a massive variety of Thai herbs and spices to serve up tasty and healthy dishes. Restaurant owner Rudi was also on hand to inform us of the many ways in which these special ingredients provide goodness to the body. et’s face it, while winter on the good old Costa del Sol is far less painful that it would be in the UK – or even in parts of northern Spain – it is still generally colder and wetter than it is at any other time of the year. But does that stop us from enjoying a good old get-together on a Friday night? Of course it doesn’t! However, it does affect our choice of venue as some of our summer favourites, while wonderful on light, bright July evenings, lack the necessary feeling of cosiness that we enjoy when the days are shorter. December and January are the months in which we are most likely to get in the Societymobile and head for an authentic Indian restaurant. Fortunately there is an excellent one not too far away; the latest addition to the Masala stable is situated beneath Bar 6 in Aloha, Nueva Andalucía but there are also branches in Marbella’s Golden Mile, Elviria and Estepona. We could witter on for ages about what our

Our most recent outing was planned several days in advance and we all fasted to ensure that we would be able to manage some of the dishes that we had not previously managed to sample. favourite things are about Masala, but here are a few of the most salient points for anyone looking for a truly world-class Indian restaurant:

Masala imports a lot of its spices from India. Its chefs are all from India and Pakistan and are all meticulously trained before they qualify to cook in the restaurants’ kitchens.
Luckily there is plenty of room inside Masala Aloha, because on the night that we visited the team was busy and the place was filling up fast. We managed to find a table large enough to accommodate our party and counted ourselves lucky that we had arrived before the real rush started. Our starters consisted of Masala Coin (battered, spicy mashed potato) and

an Assorted Platter which incorporated Lamb Tikka, Chicken Tikka, Malai Kebab, Poppadom Roll, Gold Coin and Onion Bhaji. Also, how could we refuse the Fried Prawns and the fantastic Stuffed Tandoori Mushrooms? This latter choice was a personal recommendation by the waiter, who told us that it was one of the recipes that was especially popular, due to its relative rarity. If you have a vegetarian in your party then this is one not to miss – the mushrooms are stuffed with other vegetables before being cooked to perfection in a tandoor. Delicious! Having given our taste buds a proper Masala work-out with our starters (the Assorted Platter is a particularly great way for newbies to find out exactly what this restaurant is all about), we moved on to the Big Beasts of Asian cuisine. The Prawn Balti showed the chef’s skill at preparing this type of dish, which takes its name from a cooking pot and Baltistan, an area of northern Pakistan. The prawns were cooked perfectly and the onion, ginger and spices used in the sauce were blended to perfection. We decided to listen to the chef and also chose one of his special dishes: the Garlic Chilli Chicken was just fabulous and comprised diced chicken, coated with chickpea flour, deep fried and served with a gorgeous garlic and sweet chilli sauce. We had also been helpfully pointed in the direction of the Chicken
sauce, this turned up the heat and introduced us to another of the great traditions of Asian cooking. Masala is a delight for non-meat eaters, since it actually includes a Vegetarian Menu with many mouth-watering dishes. We opted for the Paneer Palak, which consisted of spinach with homemade cottage cheese cooked with onions and tomatoes and was a real treat after all the meat dishes we had chosen.
Pasanda and, given the description on the menu (“served at the palace of Mughal emperors”) it would have been rude not to have ordered it. This regal dish consisted of marinated chicken fillets stuffed with a special blend of spices and served in a mild – but extremely tasty – cream and almond sauce. Also featuring on the list of Chef’s Specialities was Lamb Handi, one of the lesser known Asian recipes but, to our minds, certainly one of the most delicious. Cooked with a blend of spices, onions, tomatoes and peppers and served with a characteristically spicy
To accompany our main dishes we also ordered Pilau Rice, Spinach Rice, Peshwari Nan and Garlic Nan. Sadly, none of our party had the nerve to order the Mirchi Wali Rice, which was described as being, “VERY HOT”. Spicy rice – seriously?! It seems that some of the Masala clientele prides itself on its fortitude, but we were not so brave; or should that be ‘foolhardy’? This is such a great venue; the staff members are very friendly and are on hand to offer recommendations and advice, whichever end of the Scoville scale you are hoping to explore and the menu is so vast and extensive that there is bound to be something suitable for every member of the party. Born in Marbella, Nick grew up moments from The Boardwalk site before moving to Scotland in his teens. “Growing up in Marbella, I have a great passion for the local cuisine and in particular local produce,” shared Nick. “The Boardwalk enables me to combine my love for Spanish specialities and also traditional British delights such as Afternoon Tea and Sunday Roast. Previous to The Boardwalk I worked at The Marcliffe Hotel and Spa, the only five star hotel in Aberdeen. I love offering the quintessentially British tradition of Afternoon Tea in beachside surroundings
and enabling customers to enjoy fresh scones, dainty sandwiches and homemade cakes just moments from the sea, its a unique combination!” Whilst all the favourites including the soft, crunchy rolls, Afternoon Tea and the Trio of Pork have remained on The Boardwalk’s Winter menu there are some new additions including Baked Dough Balls with Garlic Butter, Honey and Soy Chicken with Rice Noodles, Water Chestnuts, Bamboo Shoots, Roasted Peppers and Baby Sweetcorn, Oak Smoked Salmon and Prawn Cocktail and BBQ Spare Ribs. “We decided to add

some further choices to the Winter menu, with the weather turning colder, fresh homemade soup with our warm baked on-site bread is the ideal dish to enjoy on a Winter afternoon on the terrace,” explained Nick. It’s not just the winter dishes that create a cosy ambiance at The Boardwalk, the pink and white blankets on each chair and the stunning white and silver Christmas decorations also add an inviting touch. In October The Boardwalk launched ‘Sundays by the Sea’ offering a choice of the finest Prime Rib of Beef or Honey Roast Gammon with Crispy Roast Potatoes, Yorkshire Puddings, Sautéed Seasonal Vegetables, Roast Parsnips, Cauliflower Cheese and Rich Gravy. A selection of the coast’s talented singers including Peet Rothwell, La Negra Mayte, Thomas John Henry, Sam Oliver and Zoe Hughes perform from 3pm - 9pm every Sunday creating an unrivalled ambiance through into the early evening. Due to the success of Sundays by the Sea, The Boardwalk has decided to extend their live music and roast dinner

antabria and Galicia are very similar in character to Asturias; a region dealt with in a previous article. Cantabria’s cooking, however, is more refined than that of Asturias. Despite it being a land of meadows and pastures, with verdant hills, its food is based very much upon the sea. Merluza (hake) predominates, but other seafood is by no means neglected. Here one will find cabracho al ajillo, which is scorpion fish cooked with garlic, alongside the more normal, not to say ubiquitous, tuna, whilst rabas make an excellent tapa, being little bits of battered squid, deep fried. Galicia was once known as the end of the world (“Fisterra” in Gallego, the language of the region, from which Portugese derives). It is a land lashed with Atlantic gales, and the fishing fleets have to shelter in deep inlets, where the crews can rest whilst being regaled with the sound of the bagpipes; perhaps the only instrument capable of making itself heard above the storm. It is not
a Mediterranean country, and its cuisine mirrors this fact. It has also been influenced by the steady stream of pilgrims wending their way to Santiago de Compostela, where the body
of Saint James rests, having made its own way there by sea from the Holy Land in a concrete coffin. The Vieira, or sea scallop, is a popular dish, and the shell has become a sign of pilgrimage. The most famous dishes of the region, however, are lacón con grelos, pote gallego and caldo gallego. Lacón is cured fat pork, and this is combined with the slightly bitter grelos (turnip greens) to counteract the fattiness. The dish also contains a pig’s ear and chorizo. This sausage is also to be found in the pote, which also contains beans, greens, potatoes and morcilla. Morcilla, a form of blood sausage, is found in many guises throughout the whole of Spain, and each area will have its own variety. This may also be said of empanada,

although here in Galicia it is far from being the rather thin and somewhat disappointing variety one often finds. Here it is a pastry made from yeast dough, generously filled with sliced meat or fish in a rich tomato sauce. Like the Cornish pasty, it was designed to be carried around and eaten by men hard at manual work.
home of Cervantes, the deathbed of Columbus, and the great El Cid, Rodrigo Diaz de Vivar, born in Burgos, who, before his death in 1099, carved out for himself a minor principality in Valencia. Moving across Spain, he may well have yearned for the crisp roast suckling pig for which Segovia is still rightly renowned. Some pigs survive their youth to be fattened into the hams and sausages for which the area is famous. Here the empanada of Galicia is replaced by the hornazo de Salamanca, a flaky pastry stuffed with roast meat, chorizo, and chopped egg. Many a student over the centuries must have hurried through the narrow streets munching his snack on the way to lectures! This is the home of the garbanzo, the chick-pea, once known as the “potato of Spain”, and it is the tierra de pan, as it is from this region
Galicia shares a boundary with CastileLeón. This is just about all it shares. The kingdom of Castile and the kingdom of León were once the heart of Spain. Castile gave the country its language, whilst León, once the capital of Christian Spain, has a cathedral boasting some of the finest stained glass in Europe. Salamanca houses Spain’s oldest university, founded in 1218. This is also the country of Saint Teresa of Avila, the

of rolling wheatfields that Spain derives much of its grain. All kinds of game are found here, whilst pigeons form the basis of the delectable pichones a la abulense, which may even have graced the table of Saint Teresa herself. Another of the ancient kingdoms now making up the Kingdom of Spain, is Catalonia. It stretched into parts of France, and encompassed the Balearic Islands. It had, indeed, has, its own language and customs, and with its proud seafaring tradition imported many different culinary styles, with, perhaps, a distinct French Provençal emphasis, as in its saffron coloured fish soups. The first cookery book to appear in what is now Spain was written in Catalan in 1477 by Ruperto de Nola. This was designed to introduce Italian cuisine to the country,
as at that time the Italians were preeminent in the culinary arts. The Catalans adapted and adopted these recipes and made them all their own. Many are based upon the sauces contained in de Nola’s book. Sofrito, a tomato sauce flavoured with onions and garlic, may be found tinned on many a supermarket’s shelves; alioli, a thick mayonnaise type garlic sauce, is delicious when correctly made, but is found in a bastardised form in many a restaurant; romesco is a sweetish sauce made from pimientos; picada is a nutty paste made from almonds and hazlenuts with garlic and parsley; and samfaina, delicious with bacalao, is compounded from aubergines, courgettes and peppers. Snails feature in a number of regional dishes, combined both with meat and

The province also gives its name to a variety of wine, now with its own denominación and utterly unlike the sweetish red wine of about 17° alcoholic strength, so beloved by Victorian ladies of a certain ancient profession, by whom it was known as “red biddy”.

he Marbella Montessori School is truly a one of a kind place. Marbella Montessori differs from all other international schools located on the Coast in its personalised approach to each of its children. Here we tell the tale of principal Ann-Marie Garrett who exudes a passion for the Montessori philosophy and a dedication to education. There is a saying that our destiny is made for us even before we are born. It was in 1995 that Ann-Marie’s destiny began to reveal itself when, following a visit to a Montessori kindergarten set amongst an apple orchard in rural Suffolk as she looked for a suitable place for her three year-old son, she discovered what a truly amazing start this was for children. Instead of a normal busy - and often chaotic - nursery school where children play with plastic toys, only the smallest degree of learning took place and where the staff would

deliver their every need, she observed a calm and purposeful environment. The children used special pieces of wooden equipment for learning and were encouraged to be independent, whether it be at lunch time or putting on their shoes for outside playtime. With a desire to learn more about this wonderful approach to learning, Ann-Marie enrolled on the diploma course at the prestigious St. Nicholas Montessori College in Kensington, London, graduating in early 1996 and, in the same year, opening Barn Hall Montessori Kindergarten in a small hamlet close to Chelmsford, Essex. Situated in a Grade Two listed thatched
barn that had previously formed part of an estate owned by King Henry VIII it required an extensive conversion and renovation project in order to transform it into a truly unique place for children. As word rapidly spread about its success and ‘outstanding’ Ofsted report, AnnMarie opened a second kindergarten the following year, Sunflower Montessori in Hutton, Brentwood, now infamous as the setting for The Only Way Is Essex. As well as operating two successful businesses, Ann-Marie also worked for St Nicholas College, both as a tutor and as an assessor at other Montessori
establishments throughout London and south-east England. In 2001, following a devastating fire at their thatched cottage in Suffolk, Ann-Marie and her family took the life changing decision to move to Marbella where, following a brief spell working at a local Guardia and an international school, acquired an existing business now known as Marbella Montessori Nursery, situated close to the beach in San Pedro. It was as a result of a growing awareness of Montessori education in Spain and a desire not only from expats, who were already familiar with the astounding benefits that it offered, but also increasingly from Spanish parents who wanted to find a different type of start for their children away from the constraints of both their own educational system and from the many generic international schools on the coast, that Marbella Montessori School opened its doors early this year.
Similar to a small private independent preparatory school in England, the roll includes a maximum of 60 children aged three to 11 years-old, who are provided with personalised learning of the English National Curriculum by UK qualified teachers. Through the Montessori ethos, each boy and girl acquires the qualities of self-confidence, independence and the ability to manage time. They are also encouraged to adopt responsibility for their own behaviour, learn respect and take pleasure in learning and discovery. It is a truly happy and friendly community of like-minded parents, whose ambition for their children extends far beyond the ordinary mainstream school environment, where childhood memories will be made and which can

ith such a warm, happy atmosphere throughout the country, Spain’s Christmas Markets activate the festive spirit in everyone. During the first week of December most towns in Andalucía switch on their Christmas lights and begin their pre-Christmas activities which, if you are lucky, include a market or two.
