B

orn Heather Renee Sweet, Dita von Teese, began her career in a local strip club at the age of 19. Disappointed with the lack of originality in her fellow strippers’ acts, Dita created a vintage-inspired outfit, with beehive hairstyle and elbow-length gloves, piquing the interest of the clientele. The vintage beauty caught the public’s attention in 1997 when Playboy began to feature her in their pictorials. She became known as a burlesque and fetish queen, an authentic pinup model. This allure filled a niche and Dita made an astounding 30 Playboy appearances, including her first cover in December 2002. Growing up in Rochester, Michigan, Dita’s fascination with the 1940’s era and classic retro style developed from her mother’s interest in golden-era Hollywood films. It was from here that she fell in love with the actresses of that day, especially Betty Garble. Alongside modelling, Dita became widely known for her live burlesque shows with their extravagant sets, sensual music and wonderfully raunchy costumes. Over the years Dita´s performances have created some unforgettable moments, including once performing at a benefit for the New York Academy of Art wearing nothing but $5 million worth of diamonds. Additionally, Von Teese became the first ever guest star to perform at the Parisian Crazy Horse cabaret club in the show’s history when she appeared there in 2006. In 2011, Dita brought burlesque to US prime time television when she appeared as a guest star on CSI and performed her classic Martini glass show in an episode described as “too hot to handle.” It wasn’t just her career that placed Dita in the headlines, her highly controversial relationship with rocker, Marilyn Manson significantly increased her time in the spotlight. On Manson’s 32nd birthday, in 2001, Dita arrived with a bottle of absinthe, and they became a couple. Manson proposed on March 22, 2004 and gave her a 1930s, 7-carat, European round-cut diamond engagement ring. On November 28, 2005, the couple married in a secluded, non-denominational ceremony in their home in Los Angeles. A larger ceremony was held on December 3rd at Gurteen Castle in Kilsheelan, Ireland, the home of their friend, Gottfried Helnwein. They reportedly exchanged vows in front of approximately 60 guests, including burlesque sensation Catherine D’lish, Lisa Marie Presley, Eric Szmanda, Jessicka of Jack Off Jill and Christian Hejnal of Scarling. Dita wore royal purple silk taffeta gown designed by Vivienne Westwood, a tri-corned hat designed by Stephen Jones and matching Mr. Pearl corset.

CELEBRITY SPOTLIGHT A year later Dita filed for divorce citing, ‘irreconcilable differences.’ Manson’s relationship with actress Evan Rachel Wood was believed to be one of the paramount problems. In an interview with The Daily Telegraph, Von Teese declared, “I wasn’t supportive of his partying or his relationship with another girl. As much as I loved him I wasn’t going to be part of that.” Von Teese also stated that she gave Manson an ultimatum, and that “it didn’t work. Instead it made me the enemy.” This month Christie Holland had the opportunity to interview Dita von Teese and find out the truth behind the world’s most famous stripper. Tell us your story? How did you become involved in burlesque? I was obsessed with films from the 30’s and 40’s from a young age, and when I was a teenager, I was working in a lingerie store, and so I became very interested in the history of lingerie, and began collecting vintage lingerie and clothes. I wore my hair and makeup in vintage style, and later, when I was 18, I wanted to be photographed in pinup style for my boyfriend, so I started recreating vintage style pinup photos, which became a hobby for me, then little by little, a career. At that time no one was doing it yet, so I became quite known for it all over the world amongst fetishists and Bettie Page fans for recreating these pinups. At the time, I was also working in a strip club, and of course, wearing my corsets and stockings. It wasn’t until I really started learning more about the history of striptease that I learned of this word “burlesque”, and even then it wasn’t even important to me to call myself a “burlesque dancer”, because there wasn’t really a burlesque scene like there is now, and to say “burlesque” was even more confusing to people. Now almost twenty years into my career, I usually still cut to the chase and say I’m a stripper so I don’t have to explain what burlesque is, mainly because I feel a bit silly explaining it all, because it sounds pretentious to talk about burlesque vs. stripping, I think. I started creating my shows because I didn’t ever feel I easily fit into the mainstream image of American beauty, so I liked the idea of creating glamour, and emulating the look of my classic Hollywood icons and vintage pinups, then finding ways of bringing the pinup to life onstage. And early on, when I started looking at the vintage pinup magazines from the 30s and 40s like “Eyeful”, “Titter”, etc., there I found that almost every model posing in lingerie back then was also a striptease dancer in burlesque shows. So this was the parallel I saw between pinup and striptease, and you know, it’s a little like it is today, with lots of the Playboy

“People always ask me what my main occupation is. It’s not actress; it’s not model. I guess burlesque dancer is my favorite title because I get the most satisfaction out of that…” and men’s magazine models headlining strip clubs. I enjoy creating my shows, I’m very hands on, and then presenting them to an audience to remind people of a time when striptease was a real form of entertainment in theatres, with mainstream stars, like Gypsy Rose Lee and Lili St Cyr. So throughout my career, my goal was to change people’s minds about what it actually is to be a stripper, to tribute the daring ladies that came before me, and to dispel the modern myth that burlesque is just retro-style dancing. The stars of burlesque were striptease stars, and much has been done to try to commercialize that fact by sanitizing it for the masses, which I don’t think is fair to the women that made this burlesque revival possible. You initially trained as a ballerina, why did you not pursue classical dance? I just wasn’t good enough, that’s all. I knew by the time I was 16 that I wasn’t up to par to be a professional ballerina. I’ve always been very realistic with regard to everything I do. You have modelled for Playboy, was your vintage style embraced by the publication? Yes, I became very popular appearing in their monthly newsstand special editions, and became a reader favorite. Initially, they would try to soften my look, and have hair and makeup people try to make me seem more “approachable”, but I always wore my own wardrobe for the shoots, and the corsetry, stockings and nostalgic fetishistic style really made a big impact with Playboy fans. It was brought to Hugh Hefner’s attention what I was doing, and he came to a few of my shows in LA and offered me the biggest issue of the year, the Christmas cover. How would you clarify your occupation? I’m an entertainer. But more specifically, what I do is create lavish striptease spectacles. I am my own producer, director,

CELEBRITY SPOTLIGHT choreographer... I even design and sometimes make my props, I work on the music, I design the lighting and am very involved with the costumes. I don’t just step on stage and do the show that was designed for me; I do the same work that a team of people usually does. I’m kind of my own art-piece, self created, self-made. How did you decide on your unique name? I was working in a strip club in the early 90’s and naturally, I used a stage name, which was all part of the fun of it. At that time when I started, I was really into the silent film era, and I had just seen a film with an actress called Dita Parlo, so I used that name on a whim. It wasn’t calculated, because in my mind I was just secretly moonlighting in this strip club in addition to my two other jobs. Then a few years later, around 1994, I was still dancing, but I was becoming quite known for my pinup photos, and I posed for Playboy the first time. The editor told me I had to have a full name, so I found this name “Von Treese” in the phone book and they misprinted it “Von Teese”. I didn’t really care much about it, because again, in my mind it was all just my hobby, so I just left it and it started to stick. But I always liked the idea of having a stage name; it’s such a classic old Hollywood thing to do. None of the classic icons of Hollywood used their real names. The creation of a name was all part of the big Hollywood makeover, which I love. But I had no idea it would be a name I would go on to use all these years later, globally trademarked and all. I might have done things differently if I had ever thought it was going to stick...I was just a 20-year old girl moonlighting in a strip joint with a peach flavored winecooler in one hand and a telephone book in the other. What inspired your signature look? My style is something that I developed over the past 20-some years, I’ve been dressing in vintage style since high school, and originally it was because I couldn’t afford designer or new clothes. 1940s and 50s clothes were pretty cheap in the late 80s. I went through different era-obsessions. I would become enthralled with the 20’s, then the 60’s then the 50s, the 30s the 40s... I would study each era of fashion that I liked, and emulate it. When I was really into the 40’s, which is still my favorite era, I would refine my look down to the YEAR. I was dressing head-to-toe in vintage, with the perfect hair, lingerie, stockings, everything. I even drove a 40s car. At one point I was dressing in 40’s-era menswear, Dietrich-style, and I even took up pipe-smoking for a while. Now 20 years later, my look is a combination of all the things I love all coming to-

Keds sneakers. I have about thirty pairs of opera length black leather gloves, because I wear them with just about everything. I have my skirts and dresses tailored so the hemline falls just below the knee, because I don’t like awkward hemlines. I’ve got a whole list of style rules for myself that probably don’t make sense to most people, and might even seem neurotic, but I’m extremely specific about my style. I’m an aesthetic control freak.

My usual marcel-waved long-pageboy sideparted hairstyle is a sort of an invented/ modified 1940’s-meets-50s style that I can’t even find an exact reference for. I tried to find a photo of a hairstyle exactly like mine from the past, and I couldn’t really. There isn’t one particular person I’ve modeled my look after, it’s really a combination of all these different details of beauty that have influenced me from different times. For instance, my eyeliner is 1950’s style, and I started painting that on when I was 17. My half-moon nail polish I’ve worn since ‘94 is taken from an obscure 1930’s style which I’ve modified, my beauty mark tattoo was done around the time when I was wearing my hair in a 20s style bob-haircut with bangs, and I liked how a beauty mark looked painted by my eye, so I had it tattooed one night. I wear clothes from the Victorian era to the 60’s. I still will only wear trousers that Dietrich would approve of, and I don’t wear vintage shoes anymore. I won’t wear seamed stockings that have lycra or faux seams, they must be fully-fashioned, and I’ve been so obsessed with the ultimate vintage stockings for so long that I have my own brand of them that are made on the original mills. What attracted you to the 1940’s era? I grew up watching films of that era and it was also a time of great glamour and of created beauty; the hairdos, clothing, and makeup captured the spirit of feminine elegance in a way that I don’t think other eras do, plus it’s very wearable in modern times. There were many other eras I love for fashion and beauty, but one cannot exactly go walking around in enormous hats, corsets, bustles and petticoats very easily. The 40’s has high drama but can still be emulated and is still emulated by many great modern fashion designers, so there are lots of options too. You are naturally a blonde, why did you choose to dye your hair black? Originally it was because I was playing with lots of different hair colors, from my blonde, to red, then deeper shades, and finally there was nowhere else to go but black! And I loved it because I liked the contrast with my pale skin and red lips. Red, black and white has become a “beauty code” of sorts for me. How long do you take to prepare for a show? I spend about two-three hours in the dressing room, because I like to have fun with my cast before the show, and warm up and think through everything and feel calm and centered. When I’m just doing a one off performance at a special event, I only spend about an hour and half doing hair and makeup and getting dressed. What products do you use to maintain your flawless skin? I use sunscreen diligently, and I see a dermatologist for any skincare concerns. I use a light retinol a few times a week before bed, and I use various different moisturizers depending on what my skin needs at the time. How do you rehearse? How much of what we see onstage is improvised? It depends on the act, some of my acts are very precise and more tightly choreographed than others, but others are not so much apart from hitting certain marks and parts of the song, because a lot of times the sizes of my stage vary so much that I have to be


CELEBRITY SPOTLIGHT ready for anything, to work with a new space. Plus with the complexity of most the costumes and the way they come off, there’s got to be a little leeway in the choreography. Obviously you body is a very important element of your work, how do your maintain your physique? I do Pilates between 3-5 times a week, and I eat fairly healthily when I’m not on holiday. I follow the regime of Kimberly Snyder who wrote a book called The Beauty Detox solution, which is based on having a smoothie each morning that is 70% greens and 30% fruit. Basically though, with regard to eating, I use common sense and have taken time to really learn what is healthy and what isn’t. There are ways of moving that erotic dancers engage in that are hard to imagine you doing. Where do you draw the line? Oh, I don’t know, I guess now I have found my own successful formula of combining eroticism and elegance, and these days, with the way my performing style is established, I don’t really have to think much about what I will and won’t do. I really enjoy the challenge of making something risqué or taboo something that is glamorous and beautiful. So there aren’t really many boundaries, if I think about it. I’ve done some very racy things in the past with my signature touch of glamour, and so these days I just don’t see the point in reverting to some things mainly because I’ve already done it. Where did you learn your business knowledge? Do you have business advice for artists and performers? I learned from making mistakes here and there along the way. I’ve been doing my shows for 20 years, so I haven’t always made the right choices, but I have been pretty protective over my image, which people definitely try to prey on. One must be very, very careful of what one signs. Model and photo releases are very, very evil and always skewed to get more than they deserve. Mine are always modified to protect me these days! What inspired you to launch your makeup collection? I do my own makeup, and used to work in makeup, so I’m quite knowledgeable about makeup, plus I felt there were things missing from the marketplace. I have always been mixing colors to get the perfect shades of red, and finally I was able to create colors I could use straight from the tube that didn’t exist before. My ART DECO collection is available for a limited time in Debenhams. What are your signature products? My lipstick colors are beautiful and unique, I have scoured the world for cer-

tain colors I haven’t been able to find, and so I am very proud to have been able to create unique colors that are vibrant and special versions of brilliant red, orange, magenta, and fuchsia tones. The face powder is also lovely, one of my famous makeup artist friends was marveling at the fine texture, and also loves the rich pigments of our eye shadows. Tell us about your clothing and lingerie line? The dress collection is comprised of five pieces which are all based on the things in my vintage collection that I believe are timeless. I wanted to keep it very simple for each season, so I can stay focused and make sure each piece is perfect. Some of the dresses are based on favorite vintage pieces that I have worn for 12 years, over and over, and that’s a testament to a dress that transcends trends. I have also made them more wearable by changing little things like necklines, hemlines, etc, and making them out of the best quality fabrics so they will be made to last, both physically and style-wise. And we are doing these in plus sizes too. This isn’t a retro clothing line, it’s really about classic glamour that doesn’t fade with time. (shopdecadesinc.com/shop/dita-vonteese-collection) For my Von Follies Lingerie collection, I was inspired by vintage pieces in my collection, and also from photos of lingerie from my archives of vintage books and magazines. There are so many vintage lingerie pieces that I love that I haven’t ever been able to find in all my years of collecting, and so I wanted to design things that are tributes to my obsessions, and make them wearable and functional, and to modernize them for every day wear. I’ve had a longtime obsession with these 50s era “overwire” bras. It’s something that has been quite a task to create and modernize, but the end result is so chic, and so unique, I’m very proud of it, it’s a statement piece meant to be seen. I am also very happy with the beautiful panties we’ve made; I can’t wait to have them in my lingerie drawer! They are so comfortable and sexy, flattering on any shape! I don’t really have a typical day, it depends on what work I have, where I am, whether I am traveling, which IS typical for me. On a normal day off at home in Lo Angeles, I wake up, go to pilates, come home and make myself something to eat, then maybe drive one of my vintage cars to the stable to take a dressage (horse riding) lesson. I might meet a friend for lunch, or dinner. But sometimes I spend the entire day and night at home, catching up on emails and work. It just depends. How would you describe yourself in three words? Detail-orientated, ambitious, conscientious. Who is your inspiration? I can’t really say there is one person who inspires me. I enjoy what I do for a living, and I like to keep trying new things and challenging myself. I don’t have trouble finding inspiration, it’s just finding ways to execute the ideas! That’s usually where the frustration lies. As far as happiness, well, I think of it as being like the weather, sometimes it’s good, sometimes it’s bad, and you can’t appreciate the good weather without the bad. It’s easy for me to stay passionate, it’s real for me, I have worked twenty years to get where I am, and even when burlesque wasn’t chic, I was doing it for the love of it, never expecting any fame or money from it. That is what I think is the key to my success. I watch people fail at what they do because they give up too soon, and maybe it’s because they do something because they see someone else’s success with it, and then when they don’t get success as soon as they want it, they move onto the next thing. I’ve never been that person; I’ve always had my rewards just in the “doing” of it. I didn’t listen to people that said what I was doing was silly or too racy or not commercial enough. If you had not become famous what do you believe you would be doing? Probably a stylist, that’s basically what I do, I am my own work of art. I play the part of makeup artist, hair stylist, wardrobe, producer, prop maker and lighting designer and more. I think I would be an overall image-creator. I know what looks good; I am obsessed with the details of things. As I said, I am an aesthetic control-freak.

What are your plans over the next 12 months? I’m really focused on performing my hour-long full-length show ‘Strip Strip Hooray’. I am performing four of my most lavish acts with a cast of the crème de la crème of the international burlesque scene. We have the hilarious Murray Hill as our MC, and an amazing lineup of diverse burlesque performers, each of them revered in the neo-burlesque scene. This is the first time I’ve put all of my most-loved numbers all in one revue, and I have personally invested over a million dollars into those four acts alone, so this is a chance to see what I’ve been working on for all these years,

I have worked twenty years to get where I am, and even when burlesque wasn’t chic, I was doing it for the love of it

and what my show has evolved into, and to see burlesque on a grand level. I’m also launching my third perfume this spring, and another one in the fall. I really love the process of creating fragrance and designing the bottles and coming up with ideas for the campaign image, and the names. Where do you see yourself professionally in 20 years? In twenty years I will be turning 60. I have no idea what’s in store for me. But I would like to imagine that I will be more focused on designing my lingerie and dresses fulltime and also writing my autobiography.

Produced by McGraw and Byron Gallimore, Two Lanes of Freedom is McGraw’s 12th studio effort, “I think you can feel the horses gallop on this record, and where I might go and what I might do when my engines are revving.” says McGraw of the album.

4. PERFECT REPLACEMENT BY EXAMPLE: This month sees the release of Perfect Replacement by British singer, Elliot John Gleave, better known as Example. The single will be the third track lifted from his fourth studio album, The Evolution of Man. Gleave, along with British drum and bass producer Feed Me, who also produced the single, wrote the raw and gritty track. The duo previously collaborated on Example’s 2011 single, Midnight Run.

LEARN TO LOVE AGAIN BY LAWSON: British rock pop band Lawson, who catapulted into the spotlight after supporting The Wanted on tour in 2011, are back with their fourth single, Learn to Love Again. “It’s a bit different to previous singles and it’s one we love performing live. It’s got our usual guitars and drums sound but with a dance element – we hope that it will appeal to everyone.” explained bass player Ryan Fletcher. The track was cowritten by Carl Falk and Rami Yacoub (who has previously worked with superstars Britney Spears, One Direction and Nicki Minaj), along with frontman Andy Brown. 6. PLEASE DON’T SAY YOU LOVE ME BY GABRIELLE APLIN 19 year old, English singer songwriter Gabrielle Aplin gained a following online after uploading a series of acoustic covers to YouTube. Last Year, Aplin signed to Parlophone to begin recording her debut album. This will be Gabrielle’s first major single, however she did reach number one with a cover of Frankie Goes to Hollywood for the 2012 John Lewis Christmas advert.

The girls face a mammoth legal bill following make-up artist Lee Tillett’s claims that the reality TV stars stole the name of their new cosmetics range, Khroma Beauty, from her. “I developed the Kroma line myself, built my business through my own hard work, and took the legal steps necessary to protect it,” revealed Tillett. “And yet I have now been forced into legal battle with the Kardashians simply because they have decided to take something that doesn’t belong to them.” The Kardashians are also currently entangled in a lawsuit with Los Angeles-based Chroma Makeup Studio.

After being treated for substance abuse issues and bulimia in 2011, Demi Lovato has been serious about her recovery and staying on track. So serious that the former Disney star has moved into a sober living home in the LA area, even though she has a home in Los Angeles. Sources revealed that Lovato felt it was in her best interest to live at the facility during the entire run as a judge on X Factor. Given that stress is often a trigger for those who battle addiction, it was a smart move for Lovato to seek a safe environment that would be conducive to her ongoing recovery.

As if the news that Justin Timberlake was returning to the studio wasn’t enough, we have now learnt that Destiny’s Child have reunited for their first track in eight years. Their new compilation album, Love Songs, also features the all-new record, Nuclear, produced by Pharrell and co-written by Pharrell Williams, James Fauntleroy and Lonny Bereal. The album, which is the first since 2004’s Destiny Fulfilled, is comprised of songs recorded between 1997 and 2004 and features some of Destiny’s Child’s hit love songs including, ‘Cater 2 U,’ ‘Say My Name’ and ‘Emotion.’

It’s a trick I’ve taught clients who prefer the wave, not the bouffant, to make the statement. 48 hour lock in: This time gap between a salon colour and washing at home is important. It allows the hair to settle in the hair strands so that the gloss achieved is locked in. I say to clients “get the gloss, keep the gloss” it’s a simple rule that really protects the end result.

A healthy scalp helps promote healthy roots which are the scaffolding to any high volume style. All day oomph? All in the way you spray: Use a light but volumising hairspray. Once dry, spray up and into the style, since spraying from above will weigh the roots down.

JESSICA SPEECHLY, Head of Colour Embrace a 2013 colour trend: “Hair Veiling” was spotted on the SS13 catwalks and it’s a great way to make a statement through colour. “Veiling” creates hidden panels of colour so that, when the hair is flipped from side to the other, it exposes contrasting colour; instant edge that’s also easily hidden. Give hair some air: I always advise clients to allow freshly washed hair to air dry a while once a week. Half natural dry followed by a finish with a blow dry halves the heat styling impact without compromise on finish. Small change, big difference over a year.

JADE BLACKLEY, Colour Master Frame yourself: I’ve use a technique I call ‘face framing’ - subtle colours I literally paint on selected parts of the hair around the face to warm and attune with shape, tone and complexion. Can you tell me a bit about Paul Isaacs Personal Training? We provide tailor-made exercise and nutrition programmes, predominantly within the privacy of our clients’ own homes. Let’s face it, it’s often a real hassle to force ourselves to go to the gym… and that’s even before thinking about the journey or looking the part! Most of our clients don’t really feel comfortable exercising in a commercial gym – it’s just not the right environment for them. But it doesn’t mean that they don’t want to get in shape. They simply prefer the convenience and discretion that we provide. What are the most common reasons for people to seek your help? There are so many reasons, whether it’s to improve their general body shape and muscle tone, to lose a few kilos ahead of a special event, to be able to walk along the beach with confidence, to be able to fit back into a favourite pair of jeans… or simply to just ‘feel’ fitter and healthier or to improve their body image and self-esteem. What are the main reasons why clients prefer to work out at home? Very simple. Our clients appreciate the privacy and discretion that our service provides. How has the business developed? Over recent years, Personal Training in London and Bath has brought me into contact with many interesting and famous people who increasingly preferred to train in their own homes, either one-to-one or with a friend or partner. We were also chosen by LK Bennett to advise their clients during Fashion Week in 2012, as well as enjoying an exclusive partnership with the nutrition advisers who won the contract to feed the GB Olympic squad. On an average working day, what do you do? There really is no such thing as an ‘average’ day. One of the great appeals is the variety. For instance, tomorrow I’m spending the morning in Nueva Andalucía where I have two clients, after lunch I’m training a retired couple at home in Benahavis, I then have a Skype meeting with our nutrition partners to discuss some co-marketing, and then at 6pm I’m with a fabulous lady who’s looking to get back into shape before her 40th birthday in May. What do you find most challenging about your role? Each of my clients is working to a tailored

programme, so I need to ensure that all of them are progressing well in pursuit of their own targets. I also need to be highly creative when working in clients’ homes, keeping clients stimulated and focused in every session. And what is most rewarding? Simple. Working hand-in-hand with clients to achieve their goals. The husband of one of my clients is due home at Easter after a 4-month stint abroad. His wife has been working with me to shed 2 dress sizes in time for his homecoming. He’s not going to believe his eyes when he gets off that plane! How does your Personal Training ethos differ from others? First and foremost, it’s essential to understand my clients’ lifestyles and motivations so we always conduct a free initial consultation in which we discuss the options and answer any questions that a client may have. For the majority of these metals, an intravenous solution of vitamins, minerals, and the chelator EDTA is prepared. EDTA is a substance known for its ability to pull heavy metals out of the body. This is infused into the bloodstream through a vein. EDTA leaves the body in the same form by which it entered, but on its way out, it chelates metals and minerals from the body. Patients usually undergo between 10 and 20 chelation treatments over a period of weeks or months. Each treatment lasts 30-90min, during which patients can read or watch a movie. Beyond its effects on heavy metals, chelation with EDTA also helps to remove inappropriate accumulations of calcium from tissue. Calcium gravitates to ath-

erosclerotic plaque in blood vessels, leading to arterial narrowing and blockage. Chelation gently and gradually mobilizes calcium from plaque, restoring elasticity and flow to blood vessels. There is a marked improvement in high blood pressure, angina, leg cramps and diabetic leg ulcers as well as improvement in mental alertness and memory due to improved blood flow to all areas of the body.

Society Marbella’s Katja Mond reviews the martial arts class Thai Boxing at Dynamic Marbella

have wanted to try out martial arts for ages, so when I was offered the chance to test out a women’s only Thai Boxing class, I jumped at the chance. If you don’t know your Taekwondo from your Jiu-Jitsu then let me tell you a little more about this particular ancient combat sport. Thai Boxing is also known as the ‘Art and Science of Eight Limbs’ and is one of the most effective striking arts of all Martial Arts. Punches, elbows, knees and kicks are used in offence and defence combinations, combined with fitness and cardio routines aimed at all levels of ability. Dynamic Marbella offers “ladies only” classes because they realised that for some women, training with men can be quite daunting. The instructors pride themselves on helping women develop the spirit of strength and agility, teaching female students of mixed nationalities, aged from six to 60. On arrival I received a professional welcome at reception, before heading downstairs to the martial arts classroom, which featured padded floors, hanging training punch bags, skipping ropes and training protection gear. Thai boxing is practised with bare feet, so after taking off my trainers I was raring to go. The class began with a warm up consisting of skipping and abdominal exercises performed to energetic up-beat modern tracks. This was followed by three different combinations of punches and kicks, which teach students how to block and position themselves. All routines were demonstrated by our instructor Pepe and an experienced partner, before we were let loose to practise in pairs, repeating sequences of punches and kicks until we got it right. I was impressed with the fact that we were constantly checked by Pepe on our body positioning and footwork. We were also taught straight punches, leg front and side kicks combinations, while continuing to learn how to block. Trainer José, known to everyone as Pepe, has had 14 years’ experience in martial arts. He was the Málaga and Andalucía champion and has trained with professional competitors at a European national level, having studied under a former champion and master. Pepe explained to me that at Dynamic they train with K-1 Rules. These are very similar to regular kickboxing rules but are geared towards

women, (British, Brazilian, German, Russian and Spanish). I also liked the fact that Thai Boxing is one of the most effective systems of self- defence and Dynamic’s training programme is designed to teach students what works best. Thai Boxing is a very strong defence art that enables practitioners to defend themselves from attack and counter with weapons like elbows and Thai Boxing’s infamous and deadly leg kicks. the ultimate ending of a fight, a knockout. I found Pepe an inspiring and motivating trainer who takes the sport seriously. So what did I think of the class? It was enjoyable, challenging and extremely effective; I could DEFINITELY feel the benefits for days afterwards. Thai boxing is great for toning the whole body, especially the legs. It is a hard work out, so do be prepared to sweat. I found the training environment friendly and motivating. It was also great to meet such a fun, diverse, mixture of

Línea Directa has launched its new website for mobiles, which makes it the first insurance company to distribute its products via smartphones. The new site, which uses xhtml technology, is compatible with the iOS, Android and Blackberry operating systems and is capable of offering customers a price in under 3 minutes while asking them no more than ten questions. In addition, unlike other websites, which use “masks” in their mobile versions, Línea Directa’s new quoting system is 100% adapted to smartphone technology.

The website will initially be available for offering car insurance quotes and will then be extended to cover the company’s motorbike and home insurance sectors. Andrea Böck, interior designer and founder of Ambience Home Design S.L. has, over the last decade, worked on a variety of projects throughout Europe, the Caribbean Islands and Middle East, assisting her clients in the very challenging task of refurbishing, decorating and furnishing their homes down to the very last detail.

Take a Seat

I

n this issue I’d like to show you a variety of beautiful accent chairs. I find chairs to be some of the most powerful objects to turn any room into something special.

Whether it be a quirky chair in the corner of a simple bathroom, a theatrical chaise-longue in a stark bedroom or a daring armchair in a poised living room. I love to play with two main ingredients in design: simplicity and drama. By finding the right balance between the two, each element of a design-scheme will rise to the opportunity of finding its own voice. I’ve witnessed designs where each piece is outstandingly different, all squeezed into one room and on top of each other. Instead of creating the right “accent” or statement, it all gets lost in a very confusing story, and in the end, nothing stands

out, and you wont be able to remember anything in particular. Relate this to fashion – it’s all about the accessories. In this case the chairs accessorize the room. It is essential that a comfortable sofa is chosen for the sitting room area, it can still be aesthetically pleasing, but think comfort first! For the most part, comfort is not provided by the different-shaped so-called ‘accent sofas’. They are great for offices or areas where they are more for show rather then for long-hour leisure time. Keeping that in mind, I will introduce you to some of my favorite pieces, from classic accent chairs to other remarkably daring, experimental and probably not so well known seating.

Lets start with Knoll’s “Platner” chair. An Icon. This stylish chair combines it’s fabulously designed cold-metal structure with warmth that emanates through its feminine shape. On this chair I’d suggest a very plain fabric or leather.


ALICE Jacopo Foggini stunned the design world by proposing luminous creatures, with organic forms and brilliant colors made of translucent plastic cord. Today, Foggini revives this style, re-proposing the plastic cord in a form that seems to tangle and unwind to create a seemingly tremulous armchair, but which is absolutely solid; apparently made by hand and left unfinished; characterized by colors like lemon yellow, petroleum green and fuchsia pink, all mixed together. Below, a light source, so that Alice is lit from within.

THE ROAD AHEAD

hat awaits the financial markets in 2013? From a global perspective, the early part of the year is expected to continue to be relatively weak as far as growth is concerned, before picking up towards the second half. This may not hold true for the eurozone, however, where the ongoing recession is set to continue, and where recent data do not yet suggest an end to the region’s downturn. Interest rates are generally expected to remain at exceptionally low levels for an indeterminate period, but at least until growth and/or inflation advance to levels where tighter monetary policy is appropriate, which may be sooner in some economies than in others; early indications of this will no doubt be reflected in the bond markets. Before that, more accommodation may be forthcoming in the form of further quantitative easing or other unorthodox stimulus measures. Despite the ongoing political impasse, the US economy seems to

have turned the corner. In particular, the housing sector appears to be stabilising, which bodes well for the eventual resumption of normal lending conditions. The eurozone, however, will probably remain vulnerable to further economic deterioration in individual countries, such as Spain, or to political uncertainty (e.g. from February’s Italian general election). Elsewhere, China is expected to stabilise in 2013, although the days of 10%-plus annual growth have now likely been consigned to history.

THE JOKER IN THE PACK

While the overall consensus for 2013 is cautiously optimistic, one potential ‘game-changer’ stands out: Japan. In addition to two decades of deflationary stagnation, the Japanese economy has latterly endured the impact of the Fukuyama catastrophe, the fallout from a territorial dispute that has hit Japanese companies operating in China hard and an overvalued currency that has severely undermined the all-important

export sector. Add to this the country’s demographic problems, notably a rapidly ageing population, and a debt pile representing 230% of GDP, and the need for action becomes obvious. The election of a new Japanese government last November coincided with increased calls for the central bank to act more decisively in eradicating domestic deflation. Last year, an inflation target of 1% was introduced; this may now be raised to 2% or even 3%. The policy required to achieve this would be very aggressive indeed by Japanese standards, as indicated by the new government’s decision to increase stimulus spending by a further ¥10.3 trillion. If Japan does manipulate the yen’s exchange rate to undervalued levels, there could be severe deflationary consequences for other exporters: historically, yen devaluations have had a significant downward effect on prices; yen weakness was also a key determinant of the 1997 Asian economic crisis.

Motoring author, racing driver and photo-journalist Ian Kuah reports on the BMW M6 Coupe & Convertible

O

ver the years, I have come to know a lot of big name professional racing drivers, and learned that few of them are good at drifting. This is no surprise really since the fastest way around a given corner balances the car just short of the point where it starts to slide.

Fast and smooth equals speed. However, since rally drivers need to pitch their mounts sideways to negotiate bends on loose or slippery surfaces as a matter of course, they tend to have better car control than race drivers.

TORQUE TALK Back in the summer, I met Martin Tomcyk, the 2011 DTM Champion with Audi, at the Ascari Race Resort in Ronda, Spain whilst putting the new BMW M6 through its paces. Speaking with Martin in the pit lane, I learned that he had joined BMW Team RMG for the 2012 season, and started well with two second-place finishes and a fastest lap at the Brands Hatch round. Unfortunately, he had a run of bad luck towards the end of the season, finishing eighth, with teammate Bruno Spengler taking the title. It transpired that he was something of a drift master, and an impromptu plan formed in my mind. In quick succession, I asked Martin and then the track controller if we could perform a ‘big drift’ photo through the long left downhill corner after the pit straight. Martin was up for it, and with raised eyebrows followed by a cheeky grin, the track controller said yes too, which stirred everyone else into action. One of the BMW staff promptly volunteered to drive the 330Ci Convertible camera car, and we were good to go. After a quick briefing on the best way to get the shot, I braced myself in the back of the Convertible as

we exited the pit lane. We quickly hit about 80km/h (50mph) two thirds of the way through the first curve, the lateral g-forces putting more stress on my leg and arm muscles than I normally encounter in a car-to-car shoot. The next few seconds passed in a blur. First, the red M6 appeared at the top of the curve, all its electronic safety systems disengaged and the car pitched sideways, its biturbo V8 screaming in third gear. Then the rear tyres began to pull a plume of rubber smoke as they spun up, reminding me of the Red Arrows aerobatic team calling ‘smoke on!’ With a closing speed of about 15mph to our camera car, Martin had the M6 in a perfect drift. By now, he had the M6 at about 45 degrees to our direction of travel, scrubbing off enough speed for the car to seemingly hang in space behind us for a few seconds as I triggered the camera shutter. It was all over in about five seconds, and Martin flicked the car straight before rocketing past. Job done. Analysing the photo sequence, it is clear to see that the new M6 is a perfect drift machine. It has ample power and torque to first break traction and maintain a slide. And thanks to the M

Active Differential it is easy to control and comes back cleanly when you want to recover it. And Martin Tomcyk is the consummate drift meister. The previous M6 Coupe was launched at Ascari in 2005, almost to the month and I remember is was a quick machine that had deficiencies in its braking. I had the chance to drive one again here earlier this year and it felt very old and ponderous. Its replacement is a far better car all round. For starters, it looks gorgeous. Adrian van Hooydonk’s team have done a great job on the new 6-Series, and the M version with its more purposeful front bumper/spoiler, carbon-fibre roof panel, subtle bootlid spoiler, new rear valence and four big chromed tailpipes looks even better. Happily, the Coupe’s carbon roof is not just for show. As a professional designer in my past life I get very annoyed when materials like carbon-fibre are used ‘dishonestly’ for decoration rather than structural reasons. BMW uses this carbon-fibre panel structurally, saving 4.0 kg over the steel panel. And apart from the inherently better torsional stiffness of this material, the fact that it is bonded all round rather than spot-welded helps in itself. Further weight saving comes from the


TORQUE TALK use of aluminium for the doors and bonnet, so the M6 Coupe tips the scales at 1,850kg, 130kg less than its Convertible sister. Another significant contribution to the torsional stiffness of both Coupe (F12) and Convertible (F13) M6 variants comes from the aluminium plates bolted to the bottoms of their front and rear subframes. Apart from helping aerodynamics by creating an even flatter underbody profile, these plates, each of which is attached by four bolts, also torsionally stiffen the subframes by acting as the bottom of a ‘box’. The drag coefficient is the same 0.32 as the basic 6-Series despite the wider wheels, the slight increase being offset by the M6’s flat bottom and lower ride height. Given that the subframes hold the suspension in place under vertical and lateral loads, the better the bodyshell resists external loads the more true the suspension geometry remains, and the better the car will handle. BMW told us the new M6 Coupe and Convertible are around 18 to 20 percent stiffer than their predecessors, and while this notional increase on paper seems impressive, it makes a huge

difference in both everyday driving as well as on track. For starters, a stiff bodyshell means that the spring and damper rates can be backed off to the benefit of ride quality. The stock 6-Series rides very well, but is a bit too vague at the helm to be considered an enjoyable trackday steer. BMW M GmbH know how to fix that however, and their changes to the subframes, springs, dampers, anti-roll bars, bushes, steering and ditching the Runflat tyres, all make a world of difference. BMW had a specific test route mapped out for us for the journey from our hotel near Estepona up to the Ascari circuit near Ronda. However, my local knowledge found us on more demanding back roads instead, where the innumerable bumps, dips, crests and off cambers really tested the open version in particular, to the limit. The extra structural reinforcement makes the M6 Convertible a whopping 120kg heavier than the Coupe, denting the acceleration against the stopwatch. On the fly however, this is not felt to a noticeable extent.

Open cars are meant to be driven al fresco wherever possible, and with the side windows raised and rear deflector in place, the 2+2 cabin of the M6 Convertible is relatively draught free, and a comfortable place from which to hear the engine and exhaust playing out their tuneful repertoire. The improved torsional stiffness was immediately obvious on the broken tarmac that flung just about every nasty surprise you can imagine at the suspension. Despite being faced with these arduous road surfaces, there was absolutely no sign of body stress, even when the front suspension felt close to hitting its bump stops. And not once did the car bottom out, despite some ambitious approach speeds to corners on the seriously bumpy surface. Although our test cars wore the optional 20-inch wheels, thanks to a welljudged comfort setting for the active damping, the secondary and tertiary ride quality proved cossetting when just loping along. But step up the pace and you can feel the rebound component of the damping starting to struggle as the 560hp bi-turbo motor ramps up velocity.


TORQUE TALK Switch to Sport mode and the chassis tightens up nicely, without inflicting too much damaging on the ride quality. Press on with the M2 mode in the Dynamic Drive system selected, and the firmer bounce and rebound settings come together nicely. In this setting, the DSC traction control intervention relaxes enough for you to throttle steer the back end within reason if you are smooth with accelerator and steering inputs. Feedback to your fingertips benefits from the fact that BMW have backed off the artificial steering feel that made the M5’s helm over-heavy and opaque in Sport mode. Thanks to its unique firing order and exhaust design, BMW’s bent-crank V8 TwinPower Turbo creates a distinctive soundtrack. Cylinders One and Six fire 360 degrees out of phase, and their gases come together in the collector at the same time. This happens with the other three pairs of cylinders too, with the exhaust gases being channeled across to the other bank via the common exhaust manifold.

This contains one pipe from each bank travelling in the opposite direction at the same time, to balance out the exhaust pulses. This results in a situation where instead of the uneven pulses that give a normal bent-crank V8 its offbeat rumble, you have a continuous, unbroken exhaust gas stream instead. Apart from enhancing smoothness, this sees the turbine wheels in the twin-scroll turbochargers turning at a

constant speed rather than spinning up and slowing down when hit by separate exhaust gas pulses. The result is less stress on the turbine blades and bearings, faster throttle response and more progressive boost. In addition, the harmonic pulses create a unique soundtrack that is totally unlike any other V8 on the planet, past or present. If anything, it sounds like two four-cylinder motors, firing slightly out of phase!

Behind its unique soundtrack, the TwinPower Turbo V8 makes 560hp from 6,000-7,000rpm with a whopping 680Nm of torque on tap from a low 1,500rpm. This beats the power and torque outputs of the old V10 motor by 10 percent and 30 percent respectively. Put the stopwatch on the new M6 Coupe and you will see a 4.2 sec 0-100km/h sprint with 200km/h (124mph) coming up in 12.6 sec. Top speed is electronically governed to 250km/h unless you have specified the optional M Drivers’ Package that raises this to 305km/h. On the racetrack, the new M6 Coupe felt significantly superior to both its predecessor and the new M5. The

seven-speed M DCT gearbox it shares with the M5 works flawlessly on track in its M2 mode, firing off perfect up and downshifts, and blipping the throttle perfectly during the latter.

Train spotters will be happy to know that the calipers on cars with these carbon-ceramic brakes are painted gold for ease of identification.

However, where the M5 was struggling with understeer in the slower corners, its higher centre of gravity and weight in fast bends, and felt in danger of running out of brakes at times, the lower slung and slightly lighter M6 with its new carbon-ceramic brake option felt like a proper weapon.

Yes, the M6 still a big, heavy car best suited to the autobahn, but unlike the M5, it does not feel out of its depth on track. I chased a well driven M5 for a couple of laps, and he was visibly struggling under braking as well as in the bends, while the M6 felt like it still had something in hand on both counts.

These are the largest brakes ever offered on a BMW 6-Series, with 410mm vented discs and monoblock six-pot calipers in front, and 396mm vented discs clamped by single-pot floating calipers at the rear.

In a class where its only direct rivals wear the Jaguar and Maserati badges, the new M6 successfully combines good looks with performance and comfort on a level that should seriously worry the opposition. Local Dealer: Guarnieri

T

he Spanish Jewish community (historically known as ‘Sephardic’ Jews) is growing both in numbers and activity, and contributing much to the Spanish way of life. An awareness of the rôle that Spanish Jews played in the history of the country is gradually increasing, and the government is anxious that such awareness should continue. Maimonides (Moseh ben Maimon 1135-1204) remains one of the greatest European philosophers and theologians, while Christopher Columbus himself is often suspected of being a Marrano (‘ostensibly Christian but actually Jewish’). Today

about 12,000 Jews live in Spain, with some 600 in Gibraltar. In 1713 at the Treaty of Utrecht, the Spanish added the clause: “Her Britannic Majesty, at the request of the Catholic King, does consent and agree that no leave shall be given, under any pretext whatsoever, either to Jews or Moors to reside or have their dwellings in the said town of Gibraltar.” The British ignored it, but it remains a niggling bone of contention! In both cases neither in Spain or Gibraltar are these necessarily ‘Sephardic’ in the ethnic sense. They are, however, still bound by the rules that govern what they eat. These come under that body

of Jewish law known as ‘Kashrut’, which, coming from the Hebrew ‘KafShin-Resh’, also gives us the more commonly known word, ‘Kosher’.

Kosher is not a style of cooking. It is a system of dealing

with what foods may or may not be eaten, and how these foods must be prepared or produced. A Rabbi is normally required to be present at every stage of the process to ensure that the laws are being complied with. Once approved, you can have kosher Indian food if necessary, and

COSTA CUISINE On March 31st, 1492 a royal edict issued by Los Reyes Catolicos formally expelled the Jews from Spain. It was not until 1924 that Juan Antonio Primo de Rivera granted Spanish citizenship to all the Sephardic Jews scattered through the world (and during the Second World War Spain became a haven for thousands of Jews fleeing the Holocaust). The mediæval expulsion had dire effects upon the Spanish economy, as with religious tolerance having been the norm under kings like Alfonso XI (‘The Wise’, 1221-1284) the contribution of Jews to the cultural, social, political and economic life of the country had been immense. It had also made an impact in the culinary world. Jewish religious culture lays down strict rules regarding how foodstuffs must be prepared, and the manner in which it may be eaten. This may mean that two sets of utensils are required, as it is never permissible to mix dairy products and meat or fish. Several hours must elapse between the consumption of either.

must be produced itself only by a Sabbath-observing male Jew. Care will be taken with regard to such additions as casein or gelatin, which are the product of animal slaughter and which therefore render the wine unfit for consumption with dairy products, whilst lactic acid, being a dairy product, precludes the use of the wine with meat. Thus, wines which contain such additives are not kosher, and if their vinegar is used in the production of olives, these are also rendered unfit for Jewish consumption. And any wine used at the Passover must have been kept free from contact with grain, bread and dough! For the observant Jew, the Sabbath is a day upon which all work must cease. In order to have a hot meal, therefore, the observant Jew must either employ a gentile to do the cooking, or produce a dish the day before which can remain quietly cooking overnight. It is here that the

Spanish cocido may have had its origin in the form of the Jewish Adafina. This

is a stew of chickpeas and mutton, traditionally made in a clay pot on the eve of the Sabbath, left amongst the glowing coals of an open fire. It also includes onions, garlic, turnips, beans, cinnamon and cloves, and sometimes rice. Another method is to heat the pot, and then enwrap it in several thicknesses of blankets to complete the cooking overnight. The word itself is Arabic in origin, testifying to the close links which once existed between the two communities, and which means ‘hidden treasure’. The liquid is eaten first as soup, followed by the more substantial ingredients. In this, of course, it is akin to the traditional Olla Podrida which many regard as the national dish of Spain.

Blood is strictly forbidden,

and for this reason when the animal is slaughtered all blood must be drained from it. Only poultry and cloven hoofed ruminants are permitted (pigs, for example, are thus precluded) and their throats must be cut and the carotid artery severed so that the blood can be drained completely. The carcass must then be thoroughly washed, and hung covered with salt for an hour. It is then washed again for three consecutive times. With fish, only those with fins, gills and scales are permitted. Shellfish and molluscs are strictly forbidden. Mention of the exportation of kosher olives is not as strange as it may seem. In general terms vegetables are, by their very nature, kosher. However, the Torah forbids the consumption of insects. It mentions this no fewer than five times. In recent times variations in the use of pesticides and the growth of organic crops has made a number of insect species more resistant and therefore more prevalent. It is essential, therefore, that all vegetables, fruits and nuts must be thoroughly checked before consumption. How this is done depends upon the vegetable involved, but olives have an added problem. Basically, olive curing is a fairly simple process. But it involves brine, and then for green olives the addition of lactic and citric acid. Wine vinegar may be used. Any additive used must be certifiably kosher in its own right. And so the wine from which the vinegar is produced

otel in-house restaurants can often disappoint, where you are invariably paying for the location and the caché rather than the food itself. This is not the case at Namazake in the Puente Romano hotel. Probably the best Japanese food I have ever tasted in Spain, this restaurant holds its own in terms of quality, service and atmosphere. We then sampled a fillet of butterfish in saiko miso sauce, presented in a beautifully wrapped parcel of shiso leaves – this was also delicious; melt in the mouth tenderness with the omnipresent miso which packs a tasty punch but has a chameleon-

like quality which allows it to adapt to each dish, bringing out the flavours in just the right way. We were then lucky enough to try some kobe beef, the famous Japanese delicacy, and a benchmark dish in any Asian restaurant worth its salt. The meat was exquisitely presented, almost as a carpaccio, and did not disappoint – with a spicy sesame sauce that complemented the subtle flavours of the beef perfectly. This amazingly orchestrated meal was finished off with a light and subtle coconut ice cream lollipop with warm

s Sancho Panza once remarked to his host “What the steward can do is to set an olla podrida before me more often, full of things like cabbage and turnips all mixed up together, and the more they are mixed up the better it tastes…” Don Quixote himself was very fond of this dish, and his judgement sums up all that there is to be said about it: “The huge dish steaming there at the front looks to me as though it might be olla podrida, and such a great diversity of comestibles is contained in such dishes that I cannot fail to discover in it something both palatable and wholesome”. Words put into their mouths, of course, by their creator Miguel de Cervantes (1547-1616), who clearly savoured this culinary crea-

tion, but knight and squire are not alone in their approbation. When the American Congressional Cooks’ Club published a huge book of national recipes during the presidency of Calvin Coolidge (1923-1929), Spain’s entry arrived signed by none other than King Alfonso XIII, grandfather to the present king. It was for Olla Podrida, produced by the chef to his daughter the Infanta Isabel. Such an expensive and elaborate stew bears a name which begs the question of how exactly it came to be so called. Olla means ‘pot’ and Lévi-Strauss (‘The Father of modern Anthropology’, 1908-2009) held the opinion that the use of the term ‘podrida’ (literally rotten, spoilt or stinking) derived from the fact that the dish evokes the primæval slime from which all

life emerged. He saw it as a symbol of fecundity and maternity. However that may be, and whatever may have been Sancho Panza’s view, the dish should not simply be a mere mishmash ‘all mixed up together’.

Every single ingredient should be capable of being tasted individually. And every single ingredient

should be of the highest quality. For this reason it belongs to the cuisine of the prince rather than that of the pauper, and it is likely that the name is in fact a derivation not of the word podrir, but of poderida (from poder, meaning to be able, powerful or potent). The recipe first saw the light of day in a book written by Francisco Martínez Montiño, cook to Felipe III


COSTA CUISINE

(1578-1621), which was further developed in 1599 by Diego Granado in his Libro de Arte de Cocina and which included, inter alia; gullet of pork, pig’s head and trotters, wild boar, tripe, sausages, lamb, calves’ kidneys, fat beef, capons, pigeons, hare, partridges, pheasants, mallards, thrushes, chick peas, garlic, onions, chestnuts, beans, cabbage, and turnips. Over the ages the recipe has been somewhat modified, but it remains a formidable task for a cook. The one time that I produced it, it took two days! The dish is normally served in three parts; sota, caballo, and rey (knave, horse and king). The broth is served first, followed by the vegetables, and then the meat. There is one exception to this. In the village of Castrillo de los Polvazares in Castilla, the dish is served in reverse. This has been the case for centuries, and the original reason has been lost, although it is possible that during the reconquista, the Christian army occupying Astorga had only time to eat the most nutritious part of the dish before engaging with the Moors. In ignoring the liquid part of the dish, however, they ignored something which inspired the great French chef Antonin Carême (1784-1833) to develop no fewer than eight different soups, including his ‘potage national espagnol.’ Another French chef, Louis-Eustache Audot (17831870), (who included olla podrida in his recipe book, supplying two versions), commented: “As you see, the olla podrida is an encyclopædia of good food, and whoever

invented it also solved the problem of how to create a banquet with a single recipe”! It is rarely produced today, but its place has been taken by a variety of

derivative stews; pucheros, cocidos and escudellas. Even cosmopolitan and urban Madrid produces ‘Cocido Madrileño’, traditionally served on Mondays and Tuesdays. This dish managed to make it into the ‘hit’ charts of the 1950s with the lines: “Porque es que a mí sin discusión me quita el sueño y es mi alimento y mi placer, la gracia y sal que al cocidito madrilène le echa el amor de una mujer!” (“Because what undoubtedly keeps me awake, and is my food and pleasure, is the charm and wit that the love of a woman puts into a little cocido madrilèno”). Not since Lewis Carroll’s Mock Turtle serenaded Alice with “Soup of the evening, beautiful soup” has soup been so lauded! And rightly so! For it is capable of infinite variations. When the Conquistadores voyaged to the Americas, they naturally took with them their ollas. They then introduced potatoes into their national dish. These, however, did not

displace the traditional chick peas without which no Spanish stew should see the light of day, and which link the cuisines of Spain, north Africa and south America. In Burgos, however, red beans take the place of the garbanzo, and in the Canary Islands, pears, sweet corn, and mirliton (a type of squash) make an appearance. In Colombia one encounters ‘Sancocho’, with ingredients similar to olla podrida, but including also chillies, yams, plantains (including the skins), and sweet potatoes. In the Caribbean, the Jamaican ‘Pepper Pot’ and Haitian ‘Poivrière’, both close relatives, differ only slightly in that they are enormously spicy, but as such spices are also preservatives this has the effect of making them live up to the original name. As food is served from the pot, so more ingredients are added to it. The cooking is long and slow. If one looks at this from the point of view of the bodega principle, it is possible that as one ladles portions from the olla, one could be ladling food that started cooking at the hands of one’s greatgrandmother!

The author, a Worker-Priest, is a Maître Conseil en Gastronomie Française, and holds the Palmes Culinaires and Mâitrise Escoffier of the Conseil Culinaire de Grande Bretagne. He is a former Maître de Table de la Chaîne des Rôtisseurs, a member of the Craft Guild of Chefs of Great Britain, and was for many years National Secretary of the Association Culinaire Française de Grande Bretagne. In 1978 he was a Runner-up in the “Chef of the Year” competition at Hotelympia. He holds the Silver Medal of the Cookery and Food Association.

N Sushi chef, Samuel Pinazo, draws upon his rich culinary background and applies his passion for superior cuisine to achieve perfection in every dish he creates. Society Marbella catches up with this rising star. Sushi restaurants have boomed in recent years in Spain. Why do you think it has become so popular? I think we are finally becoming aware of how important is to have a healthy diet. We could say that sushi, due to its ingredients and its preparation, is one of the healthiest foods nowadays. What made you decide to become a professional cook? I was born just a hundred meters from the sea. My father owned seafood restaurants for as long as I can remember and I used to accompany him to buy the fish and watch him prepare it. In the late nineties, I had my first experience of a Japanese restaurant while in Madrid. I was impressed with how different their preparation of the fish was, and I loved the original and exquisite dishes they were able to create. Immediately I bought a few tools and began to experiment, developing the simplest dishes for me and my friends at home. They were delighted and I began to take it seriously. It’s obvious that you’re passionate about what you do. How did you first start your career in sushi? I ended up becoming friend of the owner of the Japanese restaurant. He allowed me watch him work, while sharing interesting stories and facts about the importance of sushi in Japan. Finally he allowed me to start working with him, almost for free, but that was how I began my career, and there wasn’t a day that past where I didn’t learn something new.

What do you think has been key to your success? I guess I found something in the Japanese cuisine that connected with my personality. I was particularly impressed that it was basically a manual job, where you need to be very careful yet it still allows you to be extremely creative. When you are lucky enough to dedicate yourself to something that you love, you have a lot of time to get it right. Favourite dish to make at work? I don’t know if I have a specific favorite dish, but I have a special affection for the Uramaki in its unlimited combinations. I think that the Uramaki, more any other roll, shows the skill and standard of the chef. Favourite food to cook with? Rice has a world of possibilities and variations. Patience and good feel are the keys to get a perfect rice, which is the basis of all sushi. Combining texture, temperature and flavor is what every chef must find for himself. Everyone varies subtly this combination to achieve a personal touch. What’s your preferred sushi fish? Definitely a good red tuna, fresh and in the most natural way: Sishimi Are there any sushi table manners that you wish to share with you customers? Haha… yes, there are some recommendations for a “more correct way” than what we are used to in the West, if we really want to enjoy a good sushi. For example, ginger should always be used between different kinds of fish, because it cleans the palate and prevents you mixing uncomplimentary flavours. The wasabi, had the historical function of killing the bacteria in the raw fish. So, if you eat sushi in a place that you are not sure about, or if you are someone who is ultra-cautious, it would be a good idea if you add a gentle portion

of wasabi on each piece of raw fish. As for “sushi table manners”, you shouldn´t click the food with the chopsticks or bite a piece in half, or mix the wasabi with soy… and never blow your nose! Any new trends in sushi? There are always new trends in sushi since it arrived to the West. People began to experiment, adding avocado and other local products from the USA, and today those rolls, like the Californian roll, have become a classic. Today, the use of seasonal fruits from each region are being introduced, sweetening a meal. It is all about the concept of “fusion cuisine” nowadays. What the most difficult things to master as a sushi chef in order to make perfect nigiri sushi (hand pressed sushi)? There are different ways to prepare a good nigiri. Within Japan itself, the idea of the “perfect nigiri” varies depending on the region. But once you have achieved the correct rice, and performed the clean cut to the fish, you need to add the exact portion of rice required for the nigiri. A well prepared nigiri emerges from between the fingers practically by itself, and it is like the fish and rice are almost one. This can only be achieved with experience. What makes ÔN Sushi different? At ÔN, we have created something called “Special Tataki”, where the guests cook their own fish on a hot slate on the table. It is a very nice idea, because cooking on a stone is the oldest form of cooking known. We also work with certain vegetables and fruits that are not common in Japanese cuisine, like dried tomatoes, basil, roasted peppers, hearts of palms, mangos… making original combinations, constantly surprising our clients. What’s next for ÔN? The idea is to maintain a dynamic menu where you can always find a selection of experimental dishes. We are also working on a cocktail menu based on sake, and looking forward to the arrival of spring so that our customers can enjoy dining and drinks on our beautiful terrace while listening to live music. We only opened two months ago and since then we haven´t stopped innovating at ÔN. I think that is a good philosophy…. dynamicmarbella.com

CUDECA visit SEALIFE Fundraising Volunteers from Cudeca Cancer Care Hospice, who helped organise and participated in the annual Light a Light event, were invited by SEA LIFE Benalmádena to spend the day with their family at their acquariam. Every year Cudeca cares for more than 750 patients with advanced and non-curable illnesses, with support to their family. This service is given totally without cost. Throughout these years, Cudeca has cared for more than 7,500 people with advanced and non-curable illnesses via the cost-free multidisciplinary programs; Homecare, In-patient Unit, Day Care Centre, Rehabilitation and Psycho social care, all coordinated from our Hospice Centre. Cudeca is wholeheartedly grateful to SEA LIFE for their generosity and support.

More than 190 people took part in the Diamond Resorts 2nd Walk and completed 4 kilometres along the Benalmádena sea front, starting and finishing at Castle Bil-Bil. The total raised from the event was €1,850 and this will go towards covering part of the costs of patient care. Feb 2012 another abandoned, and unwanted dog looking for a good home, he was found wandering the campo lost and hungry, luckily he was brought into FAMA where he has been cared for since.
