PARENTAL GUIDANCE
Old school grandfather Artie (Billy Crystal), who is accustomed to calling the shots, meets his match when he and his eager-to-please wife Diane (Bette Midler) agree to babysit their three grandkids when their type-A helicopter parents go away for work. But when 21st century problems collide with Artie and Diane’s old school methods of tough rules, lots of love and old-fashioned games, it’s learning to bend (and not holding your ground) that binds a family together.
THIS IS 40
THE IMPOSSIBLE
Maria (Naomi Watts), Henry (Ewan McGregor) and their three sons begin their winter vacation in Thailand, looking forward to a few days in tropical paradise. However on the morning of December 26th, as the family relaxes around the pool after their Christmas festivities the night before, a terrifying roar rises up from the center of the earth. As Maria freezes in fear, a huge wall of black water races across the hotel grounds toward her. Based on a true story, The Impossible is the unforgettable account of a family caught, with tens of thousands of strangers, in the mayhem of one of the worst natural catastrophes of our time. The true-life terror is tempered by the unexpected displays of compassion, courage and simple kindness that Maria and her family encounter during the darkest hours of their lives.
This Is 40 follows the adventures of Knocked Up couple Pete (Paul Rudd) and Debbie (Leslie Mann) as they reach the milestone that is 40 years of age, while grappling with common struggles that come with being responsible adults and raising kids.

THE HOBBIT: AN UNEXPECTED JOURNEY
The Hobbit: An Unexpected Journey follows title character Bilbo Baggins, who is swept into an epic quest to reclaim the lost Dwarf Kingdom of Erebor, which was long ago conquered by the dragon Smaug. Approached out of the blue by the wizard Gandalf the Grey, Bilbo finds himself joining a company of thirteen dwarves led by the legendary warrior Thorin Oakenshield. Although their goal lies to the East and the wastelands of the Lonely Mountain, first they must escape the goblin tunnels, where Bilbo meets the creature that will change his life forever... Gollum. Here, alone with Gollum, on the shores of an underground lake, the unassuming Bilbo Baggins not only discovers depths of guile and courage that surprise even him, he also gains possession of Gollum’s “precious” ... a simple, gold ring that is tied to the fate of all Middle-earth in ways Bilbo cannot begin to know.
FUNNY BY JAMES PATTERSON
Jamie Grimm is a middle schooler on a mission: he wants to become the world’s greatest stand-up comedian, even if he always seems to ‘choke’ in the spotlight. When Jamie finds out about a contest called the Funniest Kid on the Planet, he knows it’s time to face his fears and enter, but are the judges rewarding him out of pity because he happens to be in a wheelchair, like his bullying cousin Stevie suggests? Will Jamie ever share the secret of his troubled past, and reason for his disability, instead of hiding behind his comedy act?

Society Marbella brings you all the gossip and glamour straight from Hollywood By Christie Holland
Miley Cyrus can sleep
soundly again! Following a trespassing incident earlier this year, a judge has now granted the pop star a restraining order to protect her against the intruder. Jason Luis Rivera was convicted of the crime back in October and sentenced to 18 months in jail. At the time of the arrest, the 40-year-old was reportedly carrying scissors and ran into the wall of Miss Cyrus’ home in an attempt to break in.
He has wowed the music world and now Chris Brown is looking to turn his hand to modeling. Rihanna’s famous ex-beau has signed a contract with Wilhelmina Modeling Agency and is en route to score a stream of lucrative deals and fashion contracts. Chris explained, “Art and style has always played a significant role in my life - it’s evolved with me throughout my career.” Wilhelmina Men director Taylor Hendrich added, “Chris Brown is a multifaceted artist with a unique take on style, and we are excited to translate and extend his brand.” Prepare to see Mr. Brown on a billboard near you soon!
It’s something more likely to appear in one of her movies but this time it’s happening in real life! Lindsay Lohan has just discovered she has another sister! Seventeen-year-old Ashley Horn, an aspiring singer, is the daughter of Michael Lohan and appeared on The Trisha Goddard Show to break the news about her famous family ties. Michael and Ashley’s mom Kristi Horn were lovers back in the 1990s while he was on one of his breaks from Lindsay’s mother, Dina. No doubt Miss Horn is delighted with her new-found spotlight and will be using every chance she can to boost her budding music career! Let’s see what Lindsay has to say about this!

If they are hooking up or breaking up, we know about it!
Congratulations are in order; Lara Stone, the beautiful wife of comedian David Walliams has revealed she is expecting their first child. In keeping with the times, David chose to announce the couples news via Twitter, tweeting, “Some wonderful news. My beautiful wife Lara is pregnant. We are having a baby! It is due next year and we both couldn’t be happier.” We have all known for a while Mr Walliams hopes of having a child; back in September, the star told British Vogue, “Turning 40 has made me think I should probably have kids soon. By the time they leave school I’ll be about 60. I’ll be at the school gates waiting for them and it’ll be embarrassing because the other kids will ask, ‘Is that your granddad?’” You know you have made it in the world of Hollywood when you get your own wax statue and Twilight’s Taylor Lautner is the latest young star to be unveiled at Madame Tussauds in New York City. Hundreds of girls headed to the iconic museum for the chance to have their picture taken next to the statue of their crush! While they flocked to see the wax version, the real Taylor was busy promoting the final installment of the Twilight series, Breaking Dawn: Part 2. Lautner told press that the end of the series in no way means he’ll lose touch with his costars, especially Robert Pattinson and Kristen Stewart. “They’re some of my best friends and that won’t go away at all. It will be more difficult because we don’t have the excuse to spend months and months, day after day, with each other. But our friendships will go on forever.”
We can breathe a sigh of relief; Kris Jenner has revealed the divorce rumours worrying Kardashian fans are… FALSE! “We just laugh it off,” ‘mom-ager,’ Kris revealed. “We love each other and just laugh about it. These kind of stories have been circulating for the last couple of years,” adds the Keeping Up With the Kardashians star. “We’re absolutely not filing for divorce. Everything is great. We feel very blessed as a family.”
Does it get much better than this? One Direction hottie, Harry Styles was spotted cosying up to Taylor Swift as she prepared for her performance on the X Factor. A witness revealed that duo seemed to really enjoy spending time together and after Taylor finished rehearsing Harry went up to the stage, picked her up and threw her over his shoulder and playfully carried her off. The world better watch out... is this the biggest pop couple ever? Let the couple name predictions commence!

THE FINAL CHAPTER
MARBELLA MADEOVER The time has come… our twelve month journey has come to and end and Helen’s transformation is complete, and what a journey it has been. This month we reveal the all-new Helen and take a moment to talk to everyone involved in transforming her life forever. saudrifat.com

“ I now have my self-confidence and self esteem
back, and have learnt to love myself again, when I look in the mirror I love what I see now. When a camera is in the room I am now in front of it, loving the photo opportunity. I feel good about myself inside and out. Miracles do happen as I am living proof, thank you to everyone I am truly grateful, I am the true yummy mummy now. ” HELEN POWELL Society Marbella talks to…
Advanced Hair Studio What have you enjoyed most about being part of Marbella Makeover? The best bit has been seeing Helen’s transformation and her reaction to having hair that she has always dreamt of.
anced Hair Studio,
the team at Adv “To long I would like to thank you for my fabulous
ted locks, I have very fine hair and always wan and long thick locks and now thanks to you like feel I hair, lous fabu long have Charlie I now a superstar and my friends are ‘well jel.’ you. k than Once again ” Kindest regards Helen
“
How do you feel Helen’s new hair has affected her confidence? Helen is such a lovely person anyway but she readily admits she wasn’t happy with herself prior to Marbella Makeover so I think this entire experience has really increased her confidence and her hair has topped it all off.
Since Helen has had the makeover she has become more confident in herself and the way she looks. Helen had a hard few years with things going on in her life and this has given her the lift that she needed you can always see her with a huge smile on her face showing off her new white teeth, her hair, her figure and her face all look brilliant and given her the boost she needed.
What would your advice be to women looking to transform their hairstyle with extensions? The way to find out if this is something for you is to arrange a free consultation and see for yourself. We can discuss the style, look and what you’d like to achieve without any obligation.

Why did you decide on a longer length for Helen’s hair? Once Helen had the hair fitted she couldn’t bare to have it cut, so it was her decision to leave it longer than initially planned and I’m glad we did, as it looks beautiful.

Ocean Clinic What has been the most rewarding part of the Marbella Makeover experience for you? Seeing Helen light up more and more as the procedures finalised bit by bit, and really feeling that we made her a happier woman. Have you seen an increase in confidence in Helen since your first meeting? Definitely, she is much more confident and I think she feels like a beautiful woman again.
If other women look at Helen’s inspirational story and are considering plastic surgery, what advice would you give them? If you really want to change something regarding your appearance, think about it carefully and thoroughly, don’t do it out of the mood of a day. Seek professional advice; see somebody specialized in the procedure(s) you are looking at. Bring your partner, discuss together with the surgeon what is possible and what is not. Be open, and whatever you want to do, don’t overdo it.
I can say is that this couldn’t have come at a “All better time after the last four years with our son
battling for his life she stood strong and never gave in but it took a major toll on her then just when we thought we turned the corner Helen became ill too for some time. Life just hasn’t been fair but she never grumbled or complained just soldiered on and this year has been amazing for her and I would like to thank SOCIETY MARBELLA and the gang that made this dream come true for her. She is a special person to me and my best friend.
saudrifat.com
As a professional, what element of Helen’s surgery do you feel has changed her physical appearance most significantly? All procedures were subtle and adapted to Helens wish not to be to drastic, but I think the rhinoplasty evidently changed her face the most, as all the body shaping procedures only enhanced (Breasts) or redefined existing shapes, but not altered them completely. What aspect of the surgery do you think has increased her confidence the most? That is really hard to say, I think the magic really lies in the combination, but this is for Helen to answer

Mark Dental Clinic What has been the most rewarding part of the Marbella Makeover experience for you? The most rewarding part of this entire process has been seeing Helen’s growing confidence and knowing that she is very pleased with the results of her new teeth. Why do you feel teeth make such a difference to peoples’ appearance? Teeth transform your appearance as they are the first thing people lay their eyes on, a nice and clean smile make a big difference to a person’s overall look. If other women look at Helen’s inspirational story and are considering dental surgery, what advice would you give them? If you are unhappy with the appearance and colour of your teeth and feel that it is bringing down your confidence, then consider seeing a dentist for an initial consultation, sometimes even a small change on a single tooth or having your teeth whitened can make a big difference. You don’t necessarily have to make a large change like Helen to make a difference to your smile.

A MOMENT IN
FEEL-GOOD FACTOR
solarpix.com
What do Camilla, Duchess of Cornwall, Kate Middleton and Victoria Beckham have in common? They
are all fans of Deborah Mitchell’s holistic beauty treatments and her award winning ‘Heaven’ products, which are now available for the first time in Spain.
Jacquie Fowler, an experienced, specially trained holistic beauty therapist and the managing director of The Sanctuary, decided to bring ‘Heaven’ to our shores after being personally trained by Deborah Mitchell as a ‘Heaven’ therapist. “We are now launching Heaven in Spain,” she explained. “ We are looking for high end, luxury salons that would like either to complement their current range with this prestigious anti-ageing, all natural skincare line containing organic ingredients or stock ‘Heaven’ as their exclusive range. ” Heaven by Deborah Mitchell offers you the potent power of nature in perfect harmony with the latest breakthroughs in beauty technology. The range has been developed for a radiant, flawless complexion and to help heal skin conditions from blemishes to eczema.
32
Throughout the years Heaven’s award winning skincare has amassed a celebrity following, including Emilia Fox, Dannii Minogue, Michelle Pfeiffer, Katie Price and various Royals, who love the products. The brand has grown at an amazing rate and has rapidly expanded worldwide; it is now available in Taiwan, Dubai, Japan, the Netherlands and, most recently, the USA. But it is the bee venom mask that has put Deborah Mitchell on the map. Containing about one per cent bee venom, it tricks the skin’s surface into thinking it has been stung, increasing its blood flow, collagen and elasticity. Mixed with manuka honey, shea butter, rose and lavender essential oils and a ‘secret ingredient’, it has become the must-have product for celebrities. Now available online in Spain for the first time, this ground breaking mask would make an ideal Christmas gift. Other perfect pressies would be the absolutely gorgeous gift sets: each comes with a heaven scented candle in Waterford crystal glass and stunning presentation box. Who wouldn’t be delighted when opening one of these little beauties on Christmas day? “As well as being the sole distributor of the products in Spain,” Jacquie continued. “I am now one of a select few, personally chosen to train other therapists to Deborah Mitchell’s exceptionally high standard. In December I am training therapists in Ibiza, where Heaven will be launching in the
spring. I would like to offer therapists on the Costa del Sol the chance to learn these unique anti-ageing and spiritual treatments, which are a mix of modern and ancient eastern techniques and join our growing team. This course also includes ‘Slim and Lymph’ drainage massage, where you can lose up to six inches and four pounds of toxins.” Whether you wish to change career or simply your beauty routine, Jacquie is happy to answer any questions and offer advice. “By using Heaven’s all-natural organic range of products you will see spots and blemishes improve while keeping a youthful complexion. Feel the difference immediately and check your complexion after five days - the results are remarkable. With Heaven, you can realise your own natural beauty.” For more information please contact: The Sanctuary Tell. + 34 966 864 605 / + 34 616 056 268 info@thesactuaryspain.com thesanctuaryspain.com

HOLIDAY SEASON
Glamour Photos by Ruth Jones

f you are stuck in a style rut and want to shine at this year’s Christmas soirees, then why not let the experts at Wood Hairdressing Salon perfect your party look? ‘Tis the season to stress, but by letting the talented team at Wood’s take care of your hair, makeup and nail needs you’ll look party-pretty in no time. Whether it’s your office do, a family gathering or a New Year’s Eve get together, they will transform you and make you the envy of all your friends. Whatever your style, they can create a look which is as unique as you are. Head hair technician and owner, Zoe Woods, gives us the low down on this season’s trends. “Old style Hollywood glamour is what I think people will be going for this party season, with Dita von Teese’s glamorous, retro waves being one of the most requested looks. For up-do’s it’s all about simplicity and elegance. The look that we created for this shoot is the most versatile
style and will go with everything from a LBD to a long sequinned gown. With plaits being such a popular feature on the catwalk, we wanted to add our own twist on this trend, and used extensions to add a pop of colour.” “As for the makeup - forget the natural look. Ditch boring beige and brown and say no to those nude shades. The party season is all about daring to have fun with colour and flair. One of the newest elements of glamour is a really bright lip. This look works well against a clean face with a feline lined eye.” Of course one of the main elements of the glamour look is luscious lashes. The trend for false eyelashes is still going strong, but they are not ideal for everyone. “Many of our clients can’t wear false eyelashes, whether it’s because they find them uncomfortable, or they are of a certain age group where it simply doesn’t suit them.” Zoe explains. “We have been searching the market for a while to find an alternative that will still give you that Lauren Bacall look, where you’re gazing through a veil of lashes. At a recent
hair show in London we were introduced to Relian Mascara which extends your eyes lashes by 300 per cent, giving a false lash effect. We were so impressed with the results, that each member of the team bought one there and then. The combination of fibre and gel lengthens and thickens the lashes, with immediate results. It is smooth and gentle to apply and very easy to remove. Many of our more mature clients, who have lost the majority of their lashes, were a bit sceptical to say the least, but after a quick demonstration they couldn’t believe the results. To say that the mascara has flown out of the salon would be an understatement - I have already a waiting list! The Relian Mascara Black box series also comes in a gorgeous gift box making it the perfect Christmas present.” So what are you waiting for? Book into Wood Hairdressing Salon to make sure you stand out from the crowd this Christmas and out-dazzle the tinsel. ACCIDENT BLACK SPOTS: THE 15 MOST DANGEROUS SPANISH ROADS provincial capital cities in the last six years were analysed.
Drivers on the M-40 in Madrid, the Avenida Diagonal de Barcelona or the Puente del V Centenario in Seville, must be aware of the fact that they are travelling on one of the three most dangerous urban areas in the country. This is the main conclusion of the study “Black spots: traffic accidents in Spanish capitals” carried out by Línea Directa Aseguradora in which more than 1.2 million motor vehicle accidents in
The main aim of the report, which has attracted a great deal of media attention, is to analyse a phenomenon causing 18% more fatal accidents than on interurban roads. To this end, the areas of the Spanish capital cities in which Línea Directa has registered the highest number of accidents, have been identified,
which has made it possible to create, for the first time, a map of accident black spots, i.e. those streets and roads on which over 100 accidents a year have been recorded. According to the list of black spots, Barcelona, Madrid and Seville head the Top 15 of provincial capitals. Madrid also has three of the five most dangerous areas in the whole country.

Hi Guys, On my travels to Marbella, I found this fantastic brand; Essence of Sofia. Check out their beautiful jewellery pieces on my website. One of my favourite places to hunt for fashion pics is Paris, my first visit was a few years ago during Paris Fashion Week. I fell in love with it instantly especially exploring the back streets. It was whilst exploring I found Alice Hubert’s in her workshop. Every piece is made by hand and some of it is a little risque but I think that is the beauty of Alice Hubert and I sure like them and I think you will too! The USA is one of the coolest, outgoing and lively places on earth! From cities such as Los Angeles, New York, Miami
and Boston to the chilled, laid-back country folk in the Mid-West, the USA has it all! I have found some of the coolest brands for you from all over the USA from brands such as Catherine Michiels from L.A worn by A-Listers such as Johnny Depp, Angelina Jolie and many more, Beach Bunny from California supported by the Kardashians and modelled by supermodel, Kate Upton, to Spirit Hoods from L.A, another celebrity favourite! Hope you enjoy my globe-trotting finds!

This month, in her new column for SOCIETY MARBELLA, Andrea Bรถck, Managing Director of Ambience Home Design, predicts which interior design and furniture trends will dominate 2013.

Chic
Andrea Bรถck, interior designer and founder of Ambience Home Design S.L. has, over the last decade, worked on a variety of projects throughout Europe, the Caribbean Islands and Middle East, assisting her clients in the very challenging task of refurbishing, decorating and furnishing their homes down to the very last detail.
A RIOT OF COLOR Many interior design inspirations sprout from trends seen on the runways and bright colours were very much in evidence during the S/S 13 collections. Adding colour is best achieved through clever use of accessories and accents. Yellow will be the dominant colour in 2013 and it is a particular favourite of mine, as you get a big bang even in a small application. I recommend using black and white tones or even neutrals as palette cleansers with this vibrant colour.

FEELING BOLD? If colour is not for you and you desire a more of a Kelly Hoppen kind of look then add a new lease of life to a neutral colour scheme with bold patterns. Choose soft furnishings and wallpaper in taupe, beige, champagne or any other earth colour with a geometric or psychedelic print. This will create a bit of drama and simply stimulates your senses. If you aren’t shy of a bold pattern, a standout carpet is a must to complete the look!
WALL TO WALL STYLE Wallpaper isn’t just for stuffy formal dining rooms or outdated powder rooms. Papered walls have been given a modern update in recent years and 2013 sees the revival of using it on your ceiling. In the past, people have tended to overlook that there is a “fifth wall” in a room, but many of today’s designers are incorporating the use of wallpaper on the ceiling in new and exciting ways. Celebrity interior designer, Kelly Wearstler leads the way by using this look in the drawing room of her Beverly Hills house. Choose matching paper for a cosy, cohesive look or go with contrasting paper to make a statement. And the best bit? Ceiling wallpaper covers a multitude of cracks and defects.

MIX AND MATCH Pattern will stop being so matchy-matchy and instead patterns and colours will clash to make beautiful interiors that stimulate your senses. Have fun with your palette and throw together stripes, florals and dots. Patterns have been inspired by catwalk trends, think African, Mexican, folklore and animals. At Disegno Casa, in Marbella the mix and match trend included injected mosaic feature walls, which really creates a wow factor. Silver and gold are also being used together, which is usually a big no-no. However, when handled correctly it can look simply beautiful. disegnocasa.com

ROMANCING THE STONE Over the past few years I have seen marble in many applications and next year I predict marble is going to get even more attention. We are definitely moving away from traditional cream marble and leaning more towards white and off-white. Mauro Tiberi, Managing Director of Disegno Casa in Marbella, told me that 2013 will see a huge rise in marble designed to mimic hardwood flooring. Other trends will be heavily veined marble and statement walls fashioned wholly or in part from marble. Disegno Casa is also creating unusual marble accessories such as seating and lighting, turning convention on its head.

IN THE SPOTLIGHT

Lighting has evolved from dainty to dashing; think functional sculptures for the home. Setting and scale are crucial when making a statement with lighting. You can even use just one crazy light and keep the rest of the lighting simple. One of my favourites of the season is this ‘Amy’ reading lamp by ‘Delightfull Unique Lamps’, a tribute to the great British singer and songwriter. Outlined by the black of her hair and the round earring it is a real showstopper. Available in a table lamp or a floor lamp.
FEELING CRAFTY delightfull.eu
The taste for the homely and the craftbased is on the rise in interior design; think large scale knits and macramé increasingly being incorporated into decor and furniture. From cushions, rugs, and furniture, to lighting, storage, clocks and wall coverings, it seems that nothing has escaped this year’s trend for needle craft in interior design.
SHAPE UP Continuing with the trend towards strong patterns, you will notice an influx of geometric prints. Vibrant, bold, dramatic pieces are a great addition to any design aesthetic. Geometric wallpaper used to decorate a feature wall, whether matched with minimal styling or contrasting patterns will definitely get people talking. To make your room sing, choose soft furnishings with geometric designs or a rug with abstract shapes in bright hues. Remember, a rug doesn’t have JUST to serve a function but can also be an object of art for the floor.

he launch of Ambience Construction unites a team of dedicated specialists in the fields of building and design. Providing a unique service when it comes to house renovation, refurbishment or new builds, they deliver a service that pushes the limits of what should be expected from the industry. This year has certainly been eventful for German born, Andrea Böck, managing director of Ambience Home Design. Not only has she just celebrated the ten year anniversary of her interior design company, Ambience Home Design S.L, but has also co-founded Ambience Construction. Since 2006, Ambience has been heavily involved in project management and refurbishment. Always a perfectionist, Andrea knew that the only way to control the building side and make sure that it matched her high standards, was to offer an in-house service. “I wanted the designer and builders to be on the same team, because too often things fall through the cracks,” she explains. “Sometimes the builder will blame the designer and sometimes the designer will blame the builder, but when they are part of the same unit, no one can blame anyone else. Working from the same office allows a constant communication which is vital for avoiding mistakes and problems, which would inevitably cost time, and time costs money. This will immediately put the client at ease.” Having worked alongside Valencia born Pablo Hernández for many years, a mutual respect soon developed. Both Andrea and
56
Pablo were of the same mind, being hardworking perfectionists, traits which are hard to find on the Coast, and Pablo’s love for his work made him the obvious choice to join Ambience Construction. Pablo, who is fluent in English, comes from three generations of highly skilled builders, with a vast experience in new builds and refurbishment of residential and commercial properties. Having worked on site for his family’s company alongside his father since he was 15, he has more than simply passion for what he does; it is in his blood. With a keen eye for detail and strong ambitious streak it was only going to be a matter of time before he decided to start his own company. “Currently we are working on two refurbishments,” reveals Pablo. “Both properties are over 30 years old, meaning they will need to be completely stripped of their walls, kitchen, bathrooms etc. Basically we will be starting from scratch. This work is extremely complex, as design and construction are undertaken over a relatively short time scale. An extensive knowledge of materials’ use, services, structural elements and construction has to be blended with design to offer an imaginative, practical and reliable service. Our site experience is essential in overcoming any problems as they arise, ensuring programmes are adhered to and cost projections met.” In the New Year, Ambience Construction will be completing a 10 year old, half finished villa. The team’s creative vision and aesthetic skills, combined with flawless construction techniques and craftsmanship,
“If a client has already contracted a building company, we can also offer our dynamic and professional project management service to meet the needs of our clients,” Andrea explains. “We act as a specialist extension of the client’s in-house management team, bringing rigour and process to ensure projects reach a successful conclusion. Our job is to listen to and understand our clients and exceed their expectations by demonstrating creativity and delivering imaginatively in all stages of the project” “Ambience Construction gives our clients something quite unique. Our talented, ever expanding team has access to highly professional builders and, at the same time, the eyes of interior architects and designers who can keep a close watch on the project for no extra fee. This not only represents a large potential saving for clients, but also peace of mind. Our fully integrated service means improved delivery times and reduced cost with a quality, consistency and accuracy. Our services include the initial concept, planning alongside architects, putting together a detailed and itemised quotation, arranging all necessary building licences and paperwork, providing AutoCAD drawings and if the client wishes 3D images and 3D animations, meaning our clients can really see what the project will look like when finished. Factors such as attention to detail, accessibility and rapid response make clients feel comfortable and confident every step of the way as their project proceeds on-time and within budget; all they need to do is sit back, relax, and let our team do all the work.” Ambience Construction Ctra Ronda, La Cancela de la Quinta Edificio 3 Local 3.2b 29670 San Pedro de Alcántara Tel. +34 616 488 181 / +34 952 788 691 info@ambienceconstruction.biz ambienceconstruction.biz

DECISIVE CRUNCH TIME
T
FOR GROWTH
he International Monetary Fund’s latest World Economic Outlook, issued in October, paints a rather gloomy picture. The IMF has reduced its growth expectations further, forecasting global growth of 3.3% in 2012 and 3.6% in 2013, vs. previous estimates of 3.5% and 3.9%, respectively. The IMF expects most economic areas, developed and developing alike, to perform worse than hitherto, with the largest impact, in nominal percentage terms, being in Brazil and India. The only data item to be revised upwards is this year’s US growth estimate, from 2.0% to 2.2% (the 2013 US forecast is cut to 2.1% from 2.3%). The phrasing of the IMF report is typically neutral; reading between the lines, however, one detects a certain scepticism regarding the readiness
of governments to act. But the report clearly observes that measures adopted so far to address the lower growth outlook have been inadequate. Heading the IMF’s eurozone wish list is the active use of the European Stability Mechanism, the region’s new bailout fund for financially distressed nations and banks. The IMF also favours greater integration of eurozone fiscal/budgetary policies. In the US, the short-term imperatives for the IMF are avoiding the “fiscal cliff” (growth-threatening spending cuts and tax hikes that will automatically come into force at the beginning of 2013 under prevailing legislation) and addressing the nation’s debt ceiling. Among general issues, the IMF stresses that greater efforts are required to reduce indebtedness, tighten financial sector regulations and tackle long-term unemployment.
WILL GOVERNMENTS DELIVER? The US economic outlook has brightened latterly. Going forward, however, bipartisan agreements will be essential

to pass new legislation, as the ruling Democrats lack a majority in the House of Representatives. This will inevitably require compromises that may ultimately render such legislation ineffective. In the eurozone, meanwhile, internal wrangling threatens to undermine the positive impact of both the ECB’s new bailout plan and the creation of a European banking union. And, within the EU itself, recent divisive rhetoric from the UK, where the idea of exiting the EU is gathering support, hardly bodes well for the effective implementation of pro-growth regional policies. As the IMF report emphasises, the world’s future prosperity depends on the willingness of governments to embrace policies that ensure sustainable economic growth. Sadly, the outlook may not yet be grim enough for individual countries to act in the collective interests of the world economy; for this to happen, prospects would likely need to worsen considerably – a distinct possibility if the IMF’s policy recommendations are ignored because of political expediency or national self-interest. nordeaprivatebanking.com

Giles Brown, Society’s man standing hopefully under the mistletoe, on the perils of the Christmas Party
I
t may well be the season of Peace and Goodwill to all Men, but believe me Christmas can be a spiritual, emotional and financial minefield to the uninitiated. I have already written about the benefits of avoiding Christmas altogether in previous issues of this publication (moving to Iran seems a safe bet) and how to deal with the annual seasonal invasion of your home. All this pales into insignificance however when you consider the biggest festive mantrap for the unwary – the office Christmas party. Now I’ve never been backwards in coming forwards when there is a social occasion in the offing, but I try and avoid office parties whenever possible. As I may have mentioned before, the festive season in general is full of amateurs getting out of their tiny skulls in the shortest possible time while wearing silly hats, and I pride myself on being a professional lunch guest. If you were looking at the one social occasion in the year that leads to relationship breakups, underlying workplace tensions to boil to the surface, unbridled Alpha male bragging, uncoordinated dancing as well as dry humping in the stationary cupboard, then the office party offers all this and more. And I speak from experience in these matters, trust me. In the early 90s I was working for a contract publishing firm based in the City of London. One of the distinguishing features of this particular company was its “aggressive” telesales team. In reality they were a motley bunch of cut price Gordon Gecko alikes, delusionals, coke fiends and the otherwise unemployable that were paid in cash each Friday evening and were normally

needing subs on Monday. (In one memorable instance one of the sales team was marched into reception by a couple of huge Yardies, who less than politely explained that said salesman had racked up a large debt in their crack house and that they were expecting payment then and there). The plain clothes drugs squad raid that followed lead to a vigorous flushing of the office toilet system on the sales floor. So the office Christmas party was always going to be a lively affair… Just for once I’ll draw a veil over the proceedings, just to mention that the queue for the toilets was longer than the one for the bar, very few people seemed to be interested in the starters and most of us decamped to the infamous Turnmills Club and then onto the all night Smithfield Market, where you could get a pint at five in the morning if you looked like meat market traders. Which we did, if you were buying your bacon in Bogotá… One of the joys of having spent a career in the publishing industry is Christmas lunch with your printer. I’ve had lunch with Spanish printers and British printers and the remarkable similarity between them is the huge amounts of booze involved. On one infamous occasion I lunched with my printer and, a little “over-refreshed” headed back into London where I was due to attend a Christmas Cocktail Party at the Houses of Parliament. Beaming merrily at the assembled MPs, VIPs and my managing director, all was going well until I went to lean casually on the canapés table and missed, catching the ledge of said table with elbow. My flailing weight acted as a fulcrum and shot a volley of volovents over the startled guests.
In the deathly hush that fell over the room, my managing director walked over to where I lay and, in a masterstroke of understatement said “I think you’d better leave…” Then of course there are the office parties where someone tries to be humorous. A (now defunct) Marbella Real Estate firm once held a Christmas bash at a Five Star hotel, were a section of the sales force decided to do a comedy version of YMCA on the dance floor before the MD. All was fine, although they were obviously a little tipsy, until the next song, “Sex Bomb”, came on. One member of the team had to be dragged off the startled boss and a tablecloth flung over her. There were wide scale sackings the day after. Even worse is if your boss tries to be one of the boys and encourages you to speak freely. I still vividly remember one occasion when one salesman declared that the Irish “were a nation of tinkers” (the MD was from Cork) while another drunkenly sang “Deutschland uber Alles” at the table in front of the Jewish Boss. In both cases P45s were issued the next day… And then there’s sex. If you have long had the hidden hots for the receptionist, then the Christmas party, when normally partners are not invited, can be the catalyst for a bout of frenzied festive fumbling. My advice, learned the hard earned way, is the following. What happens on
the photocopier, stays on the photocopier, un-
less you’ve pressed ‘Copy’ halfway through…

TORQUE TALK
Motoring author, racing driver and photo-journalist Ian Kuah reports on the McLAREN 12C SPIDER
T
he touch, feel and balance of a car’s control weights are a major part of the supercar driving experience, particularly for a hard-core enthusiast’s machine like the McLaren MP4-12C. As you use the paddle shifters and steering all the time, the interaction you have with these two major controls is as critical to the overall driving experience as engine response and the way the car goes down the road. On the pre-production MP4-12C Coupe I drove last year, I found that the ‘trigger’ force required to initiate an up or downshift required a bit too much conscious effort.
75
TORQUE TALK
There is absolutely no difference in the Spider’s dynamic abilities compared to the Coupe... car would talk to me as it neared and reached the limit of adhesion. Turn the Spider into a bend, and your fingertips relay exactly the same beautifully weighted and precise feedback as the Coupe.
The actuation force required is now significantly lower and feels very smooth and intuitive to the fingertips. A good analogy would be the difference between the trigger pull of a good off-the-shelf gun versus a precision sniper rifle. In the intervening months, the rest of the MP4-12C Coupe, and the 12C Spider, as the open version is officially tagged, has been honed to perfection in a similar way. As far as driver engagement is concerned, the effect of these improvements is magnified by the open version.
76
tual or perceived rigidity over its Coupe sister. Both versions were developed alongside each other so that the Spider would be totally uncompromised in every aspect of its dynamic performance. Despite its sophisticated electronic helpers in the form of the active damping and Brake Steer system, the 12C Spider is extremely tactile on the limit in terms of how the front end talks to you through the steering wheel and the back end through the seat of your pants.
The steering, ride, handling and grip of any car are directly linked to its structural rigidity. Make a car rigid enough, and you don’t need as stiff a suspension, which benefits ride and handling.
After a glorious summer, the Spanish climate decided to throw a wet morning at us on the day I drove the Spider at the Ascari Race Resort. When I first ventured out on the circuit, the tarmac was drying out quickly but it was still quite slippery.
With a torsional stiffness of 23,000Nm/degree, the 12C Spider shows no loss of ac-
After a lap to warm the tyres, I started to push, looking to explore the way the
The transparency of feedback allows you to clearly feel the onset of slip in the form of progressively increasing understeer and lightness at the helm as the front Pirellis approach the limit of their mechanical grip. At that point, removing a few degrees of steering lock and adding a fraction more power is all that is required to balance things out and exit the corner as quickly as possible in these conditions. If you want to be more exuberant, the Track mode setting allows you to add yet more power and bring the tail round in a power-on drift. Breakaway at the rear is so progressive, so well telegraphed compared to other mid-engined cars, you would have to be fast asleep to not catch it. Later on, when the track was completely dry, I found the level of sheer mechanical grip to be very impressive indeed. Just as McLaren’s engineers said, there is abso-
TORQUE TALK lutely no difference in the Spider’s dynamic abilities compared to the Coupe, which is a first for an open car of this type. A 2013 model by the time it reaches the first customers, the 12C Spider benefits from a number of the on going upgrades McLaren will make available free-ofcharge to existing MP4-12C owners. The most significant of these is the horsepower increase. At launch, the 3.8-litre, twin-turbocharged, flat-plane crank V8 motor was rated at 592bhp at 7,000rpm and 600Nm (443 lb ft) Nm of torque between 3,000 and 7,000rpm. Richard Farquhar, Head of Powertrain at McLaren, told me that for the 2013 model year, the new big number is 616bhp (625PS) at 7,500rpm, with the peak torque of 600Nm unchanged.
Part of this remap has altered the parameters in Track mode so that the aural effect of the ‘blip’ on downshifting from the Intake Sound Generator (ISG) is improved. At the same time, the driver’s
choice from a variable menu means you can even set the car in the mild Normal modes together with maximum sound effects, or in Track mode in combination the quietest road setting for circuits with extra stringent noise limitations. Incidentally, the car has a total of 36 ECUs in its on-board CAN-BUS network. The main engine ECU is made by Bosch, but the Powertrain Chassis Control Unit (PCCU) system and its interface to the Bosch ECU, are designed, built and calibrated inhouse by McLaren. The increased power almost makes up for the 40kg additional weight of the 12C Spider, but as its drag coefficient is marginally worse than the Coupe’s 0.32, top speed is down by 3.0 km/h.
“Although the power increase is at the top end of the rev range, thanks to subtle remapping of the ECU’s fuelling and ignition timing, we have also improved response through the whole rev range, and maximum boost pressure is increased by 0.1 bar to 2.3 bar, with no over-boost facility,” he explained. “The remap is a software upgrade uploaded via the diagnostic port at an official dealer.”
77
TORQUE TALK
Under rapidly improving skies, the al fresco 12C was in its element. The two-piece solid roof goes from open to closed, or vice versa in 17 seconds, and can be operated up to 30km/h. This is fast enough for you to button up on the fly in slow moving traffic if a dark cloud decides to dump its contents on you.
Also, while the 0-100km/h sprint takes the same 3.1 sec as the Coupe, utilising the extra grip of the optional Pirelli Corsa rubber, the 0-200km/h sprint now takes 9.0 sec rather than 8.8 sec. Real world performance is also helped by the McLaren’s relatively low weight. While it now tips the scales at 1,474kg, 40kg more than its Coupe sister, the 12C Spider remains about 55kg lighter than its less powerful Italian rival. The Spider’s extra weight is made up of the pumps, motors and struts of the electro-hydraulic roof operating mechanism, and the steel roll-over protection
78
hoops, all of which raise the cars centre of gravity very slightly. However, as the extra weight is contained within the centre mass area between the cabin and engine, the front/rear weight distribution remains 42/58 percent, with no bearing on the all-important polar moment of inertia and consequent handling balance. Just as I had found on some familiar test roads in the UK when I drove the 12C Coupe last year, the 12C Spider quickly proved its supreme abilities as a practical supercar on Spanish country roads.
Unlike other convertible cars, McLaren have built in a ‘check’ interlock mechanism to the system to prevent inadvertent operation. When you press the button to open the roof, a warning buzzer and an alert on the instrument cluster prompts you to press the OK button on the end of the left steering column stalk to confirm you actually want to open the roof and then clears it for operation. With the roof stowed, and the side windows and rear glass up, buffeting in the cabin is very much a function of speed. This can be adjusted to some extent by the chosen height of the rear glass panel that acts as a wind deflector when the side windows are up. This vertical heated rear glass panel can also be opened for extra ventilation with the roof closed, or if you just want to hear more of the engine’s tuneful soundtrack. With is revised intake and exhaust the latest 12C motor makes all the right inspira-

tional noises missing from the debut test cars. The throaty intake roar and deeper bass of the exhaust conspire with the twin turbochargers to make a serious supercar sound that becomes increasingly exotic as crankshaft speeds rise. The potent torque curve means that you don’t actually need a lot of revs to move down the road rapidly in normal driving. But once you have the open road in front of you and minimal traffic, it is hard to resist the urge to open the taps all the way through the gears. Drop the hammer and the deep growl of the low-end morphs into a flat plane crank V8 howl as the rev counter need passes the 4,000rpm mark, and then turns into a racecar-like scream as it approaches 6,000rpm and beyond. With the sound coming from behind your head as well as bouncing off bits of the landscape, the wind roar picks up too, and the aural experience becomes almost overwhelming. It reaches visceral levels just as you trigger an upshift at 7,500rpm. You pick up the ‘psst, psst’ of the wastegates blowing off excess boost in the periphery of your hearing, before the motor hunkers down and resumes its upward charge.
The mid-range thrust is deeply impressive, even if it stops short of turning the superlight alloy wheels within their tyres. But as the big rear Pirellis deuce it out with the tarmac, you definitely sense that your forward motion is a struggle between rubber, tarmac, metal, driveshaft strength and a force whose intensity is barely restrained by selection of the next ratio up in the superfast seven-speed SSG gearbox. This is far and away a more engaging physical and mental experience compared to the competent but rather detached one I encountered with the pre-production Coupe last year. It is everything I had hoped for from the 12C Spider, and stirs the emotions like a major league supercar should. Our test cars had the lightweight steel brakes rather than the optional carbonceramics, but they are extremely effective and confidence inspiring, washing off big speeds rapidly on both road and track with no signs of fade. You do have to get used to the immediacy and bite of these brakes, so initially, the limiting factor is lack of driver confidence to really push the pedal down hard until you get used to their characteristics.
TORQUE TALK
Their raw ability is aided and abetted by the active front damping that resists dive under braking, and the rear spoiler that shoots up to maximum extension, creating down force over the rear axle to mitigate weight transfer. All this means that you can lean on the brakes very hard indeed before triggering the ABS. Practical issues with supercars come down to three major questions. How fresh will you be at the end of a trans-Continental dash, how much luggage can you take with you, and how you avoid damaging the front spoiler on car park ramps and speed humps? On the first score, the McLaren 12C Spider shares its Coupe sister’s fine ride quality, which is as comfortable as a BMW M5s on real world roads. On the second, both the 12C Coupe and Spider share the same 144-litre front luggage compartment that swallows a couple of airline carry-on bags, with space around them for small oddments. However, the Spider has a trump card in the form of a small additional compartment under the roof’s rear deck cover that offers 52-litres of additional stowage space when the roof is up. The cover panel has two small rolled up fitted bags for oddments attached to its
79
TORQUE TALK underside cover, and these ensure that what you put into the bags will fit the available space. You also have to check that the rear glass panel will clear the full bags should you want to lower it. Last but not least, McLaren have made full use of the capabilities of their Active Ride suspension to add in a Vehicle Lift feature that can raise all four corners of the car by 40mm to clear ramps. I asked Richard Farquhar why his team chose to raise all four corners and not just the front axle like rival manufacturers. “The McLaren ProActive Chassis Control,
(MPCC) system has the capability so we thought it best to use it,” he explained. “In addition, because the 12C has a compete flat bottom, there is always the chance that the rear end might meet the ground departing a ramp, so raising the whole car was the best option.” With a solid, coupe-like roof when it is in place, but a much more engaging personality when running open, the 12C Spider is everything the Coupe is and more. And in the overall scheme of things, the extra £19,500 that McLaren asks for the Spider in the UK is small beer over the Coupe’s £178,000 base price.
80
This is also significantly less than the premium Ferrari requires for their Italia Spider over the Berlinetta. It is no surprise that McLaren has 12C Spiders orders coming in with a ratio of three to one to the Coupe. From the point of view of theatre when you park up and get out, McLaren also scores brownie points for retaining the MP4-12C Coupe’s butterfly door configuration on the Spider. In comparison, the SLS AMG loses its gullwing doors in favour of a conventional solution on its Roadster. This also gives the McLaren a leg up over its rivals from Ferrari and Lamborghini.
To their credit, McLaren have been extremely receptive to comments from both owners and the press about the lack of soundtrack in the early cars, and have moved to address these points with the speed and energy expected of a World Championship F1 team. More than that, seemingly without the ego and arrogance of their chief rival from Italy, McLaren has undertaken to upgrade all existing cars to the latest engine and exhaust spec at no cost to their owners. This free upgrade scheme includes the latest generation of sat-nav system, if specified as an option on a 2012 model year car.
Supercar manufacturers are well known for foisting unfinished and unresolved products on their customers, supported by a brand myth that the machinery mostly does not match. In this respect, McLaren have broken the mould by showing a previously unheard of level of customer commitment. It may seem ridiculous to state that the McLaren 12C Spider is good value for money in the face of the biggest financial crisis the world has ever seen. But when you look at the tremendous technical achievement this car repre-
sents, and the all round excellence of the driving experience it offers, it is an indisputable fact.
So is the McLaren 12C Spider the best allround reasonably priced supercar ever? When the MP412C Coupe was launched last year, it stood a good chance of winning on points, but lost out because it felt and sounded too detached. With the 12C Spider able to embrace and live up to the original McLaren promise, the answer is now an unequivocal yes. Spanish concessionaire: Guarnieri

somewhat nerdy friend was recently expounding with great enthusiasm, not to say gusto, on the subject of ‘TAPAS’. As it was late, and at the tail end of a somewhat bibulous gathering, it was some time before it dawned upon the assembled company that all was not as it should be. It became apparent that the toothsome little edibles which constitute the average person’s conception of ‘tapas’ were far from his imaginings. Further investigation revealed that he had been privileged to attend the first international conference in Rome dealing with the ‘Theory And Practice of Algorithms in Systems’, and that he was anxious to share his new found knowledge with his friends. Having thrown him into the street, the conversation rightly turned to the all important subject so dear to the average bar-fly’s heart – Tapas.
COSTA CUISINE the siesta totally blotto. He therefore enacted that no alcoholic refreshment was to be taken without some food to absorb the alcohol. Alfonso XII “El Pacificador” (the Peacemaker – educated at the Royal Military Academy, Sandhurst!) registers his claim to be the originator of this little snack on account of the fact that whilst travelling one day in the Cádiz region of Andalusia, he stopped at an inn where he was served a slice of bread with some ham to accompany his glass of wine. The wind, as usual, was in full strength, and in order to stop the tiny Spanish fruit flies being blown into his glass the king slipped his snack on top of it. When he ordered his second glass, he ordered a tapa (cover) to go with it. It may be that he enjoyed his bread and ham covered in fruit flies (which Cambridge

the country these are called “pinchos”, whether or not they are skewered, whilst in Valencia they tend to take the form of “montaditos” as they are served on bread rather than with it). The discussion regarding origins may continue for some considerable time. Was it Alfonso X (1221-1284), Felipe III (1578-1621) or Alfonso XII (1857-1885)? Alfonso X was nicknamed ‘El Sabio’ (The Wise), and perhaps showed his wisdom when he wrote “Spain is rich in honeys, abundant with fruits, teeming with fish, well provided with milk… filled with deer and game, covered with cattle, merry with good wine, happy with an abundance of bread and sugar… well stocked with oil and fragrant with saffron”. Could he also add “Covered with Tapas”? (Did you enjoy the pun?!) His constitution was such that he could not eat vast quantities of food at a sitting, and so on the advice of his doctors resorted to a “little and often” diet. Felipe III, nicknamed ‘El Piadoso’ (The Pious) was a true son of his father, the somewhat taciturn and killjoy Felipe II (of “Invincible Armada” fame), who noticed with considerable concern that the peasantry had a distressing tendency to return to work after
With such a provision of food and drink it is possible, as Alfonso El Sabio found, to live entirely on tapas; and the writer knows of a travelling salesman who does just this, consuming eighteen tapas a day (he draws a delicate veil over his alcoholic intake!). Consumption of this nature is called a tapeo or chiquiteo and is a typically Span-

Throughout Spain each “tasca” (bar) will have its own speciality, and each tends to mirror the locality (and, indeed, the micro climate) in which the bar is situated, and each tends to be served with a small portion of the local bread. Indeed, no meal or snack worthy of the name is possible in Spain with a serving of the Staff of Life! If, however, one partakes of more than one drink, it is very rare to find that one is served with the same tapa twice. The varieties are endless. Age-old regional recipes using local ingredients and coming from differing traditions may be found. It was the Romans who introduced olives into the peninsula; the Moors followed up with almonds, citrus fruits, and spices. The Conquistadores gave more to posterity than the easily and readily squandered gold and silver
research has shown actually rank high in intelligence in the insect world). A coaster might have been a more practical solution. As with so much else, Sevilla likes to lay claim to being the “Tapas” capital of Spain, but nowadays the practice of automatically serving tapas with drinks is virtually confined to the province of Granada. Here the old tradition is zealously maintained, and the tapas can range from a few olives or salted almonds, to a small concha or cazuelita (plate) of magro con tomate or paella. In “the old days” these were served accompanied by a glass of fino sherry or the local wine. Now, however, it is just as common to find a glass of beer (caña) as an accompaniment.
from “The New World”. They introduced tomatoes, pimientos, chillis, beans and potatoes to their compatriots. Whilst along the immense coastline of Iberia, fisherman have been harvesting the sea from time immemorial. All these ingredients, treated simply, may be found in the composition of a tapa. One of the great advantages of the tapa from the point of view either of the private hostess or the busy bar owner, is that such snacks can be prepared well in advance and either served cold or swiftly reheated. Only fritos need to be served sizzling from the hot (hopefully olive) oil. It doesn’t particularly matter what is in it. What is important is that it is tasty – and free!

n Catalonia they maintain that Turrón was invented by a man called Pablo Turrons during the War of the Spanish Succession (17011714). A nice conceit, but one totally at variance with the facts. It was
the Moors, once again, who were responsible for giving to Spain the sweetmeat without which Christmas would not be Christmas. It was in the province of
Valencia that Moors and Jews, living in harmony, first concocted what they called ‘halvo’ (a variant of which is still to be found in Turkey and the Near East as halva). It may be eaten in a hard crunchy form (Turron Alicante) or as a soft comforting mass (Turron Jijona). These two Valencian towns are the only places where manufacture of the genuine article may take place (they hold a ‘Denominación de Origen’), although other centres are to be found (even in Catalonia!). The name, Turrón, may derive from an eleventh century arab treatise which speaks of ‘turun’. On the other hand, the name may equally derive from the latin ‘torrere’ (to toast), but this is probably less likely as the Roman equivalent of ‘turron’, mentioned with approbation by several Roman poets, was known as ‘cupedia’ or ‘cupeto’. It was not until the fifteenth century that the sweet became popular, due to an increase in living standards (at least amongst the upper classes). So popular did it become that it formed the main plot of the play ‘Los lacayos

Eye Candy By Padre Peter
ladrones’, written in 1541 by Lope de Rueda, where two footmen are accused of stealing turron from their master. In the same century it became the custom in Alicante to pay part of the Christmas wages a bushel of turron (perhaps the footmen hadn’t been paid!). This practice clearly got out of hand, as the city received a stern rebuke from Philip II in 1595, ordering that nobody should receive turron or fig bread in excess of a value of fifty livres. The Guild of Bakers in Alicante, responsible for the production of turron, began to exercise greater and greater control over the producers, with
more and more restrictions, until many confectioners removed themselves to Jijona during the reign of Charles II (1665-1700). Here, free from interference, they developed a soft version of what had been, until then, a hard sweetmeat. They began to use sugar from the Americas instead of honey, and this in turn helped towards the development of the great sugarcane plantations in Andalusia. The first extant recipe for turron in the sixteenth century ‘Manual de Mujeres’ calls for honey, almonds (or pine nuts or hazelnuts), and egg whites. In Alicante, traditionally, the honey was cooked in a double bottomed pot called a ‘malaxadora’. Sugar and egg whites were added, then whole skinned toasted almonds. When the melero point was reached, the mixture was moulded, cut into bars, covered in wafers, and stored for a year. This method is still largely used today, although in a mechanised form. In Jijona, in order to soften the product, the cooled block of turron is ground up with almond oil into a paste, reheated in what are called ‘boixets’, and beaten for several hours with a paddle to form a smooth paste. Egg whites are then added. Nowadays it is possible
to find variations on the traditional mixtures, with the addition of candied fruits, coconut (turron de nieve), chocolate, strawberries and cream… you name it! You may even find turron made especially for diabetics or in a

low calorie variety; although this begins to stretch the traditional methods rather too far! The candied fruits used in this variety of turron come mainly from Aragon. In 1603 Bartolomé Joly, an intrepid French traveller, found himself in Calatayud, a small town in that province. He had noticed the superb fruit grown (even today) in the equable climate on the banks of the local rivers. What came as a surprise to him, however, was the fact that the inhabitants of the town boiled their fruit in sugar in order to preserve it. They obtained this rare commodity from the sugar plantations of the Canary Islands and Andalusia, where production flourished between the 16th and 18th centuries. The resultant ‘candied’ fruit was then given as presents at fiestas, particu-
More recently the local confectioners have hit on the idea of coating such fruit in chocolate, and so ‘Frutas de Aragón’ have made their appearance. This has proved so highly

successful that it has been copied elsewhere, not always successfully. It is not always easy to ensure that the chocolate remains cohered to the fruit! True ‘Frutas de Aragón’ are marked with a ‘C’ (‘calidad’) to denote their quality, and may only be made from oranges, peaches, apricots, figs, cherries, plums, apples and pears. No artificial colourings or
preservatives are allowed, and the chocolate must be made with cocoa butter (which precludes most British chocolate!).
Another Aragonese sweetmeat is, of course, guirlache, made from almonds and caramelised sugar. It may perhaps be regarded as a regional variant of Turron Alicante, in that it is crunchy and contains whole almonds. It has a history certainly as old as that of turron. Whole almonds are also used in the production of peladillas. This confection is produced in one of the centres of turron production in Valencia, Casinos. These are the sugared almonds so necessary as gifts at baptisms in Spain, Greece, and many other countries. The trade developed as a result of the vast number of almond trees to be found in the region, coupled with the import of American sugar through the port of Alicante. Canary Island sugar, already mentioned, is no longer the profitable commodity that it once was, and the trade has all but vanished, save for the production of very acceptable rum. The islands also produce ‘miel de palma’ which is not only delectable drizzled over fried aubergines, pastries or cheese, but is also a tried and tested specific against throat and mouth infections!

COSTA CUISINE
A NEW TAKE ON
Tradition
T
he Nermans experience starts the minute you walk in the door. Personally greeted by the staff and the owner himself, we are shown to our table accompanied by smiles and welcoming words. Tucked away in the beautiful enclave of the Los Naranjos golf club in Nueva Andalucía, this small but perfectly formed restaurant feels like the best dinner party you have ever given. The food is described by owner Joakim Nerman as “fancy home cooking” and the intimate and welcoming setting all contribute to a real sense of belonging. There is a palpable sense of passion here – the owner tells us that 80% of his business is repeat, always the surest indication that something is being done correctly. He seems genuinely delighted to have discovered his talented new Head Chef, Tomas Matu, only 26 years old but with an impressive CV under his culinary belt. After completing his training in his native Poland, Tomas went to Ireland and worked under the wonderful Richard Corrigan at Bentleys Oyster Bar & Grill in Dublin and then with Dutch chef Martijn Kajuiter at the Cliff House in Ardmore, both Michelinstarred chefs.
86
COSTA CUISINE was presented in a cleaned and hollowed out bone, and we were encouraged to use our silver marrow spoons to scoop the mixture out. This was a fun touch and redolent of 18th century European dining. Returning to his Irish training roots, the chef had prepared a grilled fillet of Irish Angus beef for the main course. This was accompanied by beautiful bread and butter pudding fused with wild mushroom and a hint of black truffle. The meat had clearly been cooked with great care, something that Richard Corrigan had taught him; respect the animal by cooking the meat rare and bringing out its true flavour. The dishes were accompanied by a well-thought out selection of Spanish wines – a beautiful Chardonnay from Navarra, and two contrasting but delicious reds from Ribera del Duero. There was a touch of El Bulli with the dessert; a smooth and creamy dark chocolate mousse with lemon fused olive oil drops; mini meringues that melted in your mouth revealing a surprising and beautiful taste of virgin olive oil at the end. The dish was stunningly accompanied by a 20-year-old Osborne Port, that was sweet and rich and the perfect companion to the light dessert. Finally, we were presented with a cheese plate like no other. An amazing crème brulee made with Brie, a soft French Chaume wrapped in blanched leeks and a very aromatic blue cheese that had been soaked in a liquidised Madeira marinade. This was a strong and impressive fusion of taste and originality, and a real talking point at the table. The chef joined us for a glass of Port and told us about his dedication to developing his skills– he changes the menu on a weekly basis and offers a popular tasting menu for €49 for 5 courses, 5 matching wines and a predinner drink.
Nermans had prepared a tasting menu for us to showcase their flair for traditional food with a twist. We started with a variation of scallops accompanied by a trio of asparagus and crispy beetroot. The scallops had been sautéed and also prepared as a ceviche, alongside a Carpaccio of asparagus as well as a smooth paste. The experi-
mentation with texture and flavour was simple but effective and immediately introduced us to the chef´s focus on simple but flavourful cooking. This was followed but something slightly braver; roasted bone marrow with prawn and herb filling. Not for the faint-hearted, this classic French dish
Nermans will be closed for Christmas but is offering a New Year’s Eve menu for €95 p.p including 6 courses and champagne. I would highly recommend this restaurant to anyone who loves their food and enjoys being made to feel part of the family. Nermans Restaurant Av. del Prado Urb. FEELING RAW? November saw the opening of Sushi Ôn by Dynamic Marbella, which offers diners a completely sensory Japanese experience. From traditional Japanese food with modern twists to classic cocktails with Sake in a serene, stylish interior. After dinner drinks can be enjoyed on the chill terrace whilst relaxing to music. From January, live music will also be available. Sushi Ôn provides a refreshing mixture of aspiration and affordability. Situated adjacent to the popular Dynamic Training Centre, the restaurant is open to the general public, with easy access and private parking. Everything at Sushi Ôn is prepared by their experienced sushi chef. Taking the best from a craft practised for centuries, the chef still hand roll and creates all of the dishes using only the finest ingredients. Whether or not you know your sushi from your sashimi, there is something for everyone. Starters include Nigirizushi, Uramaki and seaweed salads. Sushi Ôn is the only place on the coast that gives you the option to cook the fish of your choice at your own table - Tataki fans will love this experience. Why not begin with Sashimi, as the delicate flavour of the fish is best enjoyed when your palette is fresh. Then follow with the ever popular Maki, a roll-form of sushi, wrapped in Nori or maybe the California Roll is more your thing? Uramaki or inverted rolls are also available in a multitude of fillings, combining fish and vegetables. Whether you opt for the in house dining experience, take away or a special party for Christmas, Dynamic Ôn Sushi will help you celebrate the spirit of oriental cuisine in style. Open Tuesday – Sunday 19:30 – 23:30 Ctra. De Istán Km0,900 C.C. Le Village Tel: +34 952 775 021
