After waving goodbye to the X Factor USA panel, the Pussycat Doll joined the UK team taking her place as head judge alongside reigning champion Tulisa, exhead judge, Gary Barlow and X Factor veteran, Louis Walsh. She won the audience and the public over with her hilarious comments, committed work ethic and contagious humour and went on to be crowned the winning judge AND the only judge to ever have two contestants in the final.

CELEBRITY SPOTLIGHT This month we turn the spotlight on the recordbreaking Nicole Scherzinger.

Nicole Scherzinger She wowed us on the X Factor with not only her ‘schamazing’ comments but also her impeccable style, stunning beauty and incredible talent. For a first timer, Nicole set the bar high and ended up going down in X Factor history by becoming the first judge to ever have two acts in the final. It ended up being a battle of the boys, and while James Arthur took home the first place prize, the whole world fell head over heels in love with the truly ‘schamazing’ Nicole Scherzinger. Following her triumphant win, SOCIETY MARBELLA’s Christie Holland caught up with the Hawaiian born superstar to discuss her X Factor glory, her upcoming releases and what lies ahead…

CH: Hi Nicole, thank you for taking the time to talk to us; it was brilliant having you on X Factor UK, did you enjoy yourself? NS: Oh my god! I loved every second of it. I always throw myself into whatever I do 110% and I feel like the results showed that. It’s been a blessing, rewarding and such a schamazing experience! CH: The British public really seem to have fallen for you, how does that feel? NS: Overwhelming. I love the British people and feel like they have really taken me under their wing; they get me and my crazy sense of humour, but they also get my heart and my passion as well, I love and appreciate them so much for that. CH: So tell us, how do you come up with your ‘schamazing’ vocabulary? NS: From my schamazing and fantastical mind! It’s either a fun spur of the moment thing or they come to me in the shower. We need to get schamazing into the dictionary! CH: We’ve heard you have been invited back for another series, would you like to do it all again? NS: I couldn’t have asked for a better X factor UK debut. I’ve had a schamazing time and me and my boys even made history! But I haven’t even been asked yet! That would be the first step… CH: You started out on a similar style show yourself, (Popstars USA) did that give you an advantage when mentoring your acts? NS: Absolutely it’s all about the experi-

he’s the best and he’s a class act! All the judges have got on really well this year, we’re like a little family, we love each other, but we have our moments!! CH: Was Simon Cowell in touch with you throughout the series? NS: It’s his show so of course. He texts me regularly to check in and to tell me to keep killing it! CH: Your debut album received a fantastic response in the UK, do you feel like the UK has become your second home? NS: Yes! I’m fitting in pretty good here, I love the UK and feel like they get me, my personality, my sense of humour and they’ve always been so supportive of my music. I’ve got an itch to maybe even move here next year! CH: You’ve had the opportunity to collaborate with so many stars, who has been your favourite and who have you felt most privileged to work with? NS: It was an honour collaborating with three of ence and being able to give advice. Also I think being a current artist gives me an edge, as I can see things from that point of view and of course, I know what they’re going through and what the pressures are but also how they need to perform to be successful. I came from the same place as these contestants; I am an artist ambassador and artist communicator. I empathise and feel the same way as they do. CH: You sat in the head judges seat next to Gary, is he as grumpy as he appears on TV? NS: Haha yes!!! I’m kidding, I love Gary,

my favourite Englishmen. Working with Sting was unbelievable, so was working with Jason Bonham on Black Dog and Andrew Lloyd Webber. Aside from them, performing with my boys on stage completed my X Factor experience this year. CH: So after you wowed on Popstars USA and gained a place in girl band Eden’s Crush, how did the Pussycat Dolls come about? I was shopping my solo package and I heard about The Pussycat Dolls audition. I sang and razzle-dazzled Jimmy Lovine and Robin Antin and the rest is history!


CH: Is it true Gwen Stefani helped the Pussycat Dolls transfer into the music world? NS: The Pussycat Dolls had a show at Johnny Depp’s nightclub on The Sunset Strip called the Viper Room where they brought in many celebrities to perform and Gwen Stefani was one of them. When she performed she brought her record label and they decided they wanted to make The Pussycat Dolls into a group and so they held auditions for a lead singer. CH: How does your life differ now to the Pussycat Dolls? NS: I loved my PCD run with my girls but now it is a new and exciting chapter in my life. It’s a very liberating time for me and I’ve learned how to balance and enjoy my life more. CH: Did you watch Ashley on ‘I’m A Celebrity’? NS: It clashed with the X Factor so I didn’t get to see a lot of it but I did watch a handful of episodes... and I was rooting for her to win, I supported her all the way. She was schamazing! CH: Can you please tell us the secret to your incredible figure? NS: Everything in moderation and it’s always best not to eat too late at night. Try to exercise a couple of times a week, for me that is jogging, dancing and Bikram yoga. CH: What about your diet? Are you going to tell us you eat burgers and fries all day? NS: You shouldn’t deprive yourself too much of one thing, because eventually the body will crave it and then you will binge and it will mess up the balance of your metabolism. I love

British people get me and my crazy sense of humour, but they also get my heart and my passion... food, but I’m healthy. Breakfast is usually 6-minute eggs and some wheat toast, Lunch could be soup and a toastie or a chicken salad wrap and dinner might be whole-wheat pasta or sushi. CH: So what’s your plans now, what is in store for Nicole in 2013? NS: I have new music coming out early in 2013 so I’m focusing on that right now. I’m sooooo… excited for people to hear it. Plus whatever fun creative and challenging things I can get my hands on! 2013 is going to be schamaaazeballs!!!

1 Justin Bieber’s new acoustic album

He is returning to his roots; Justin Bieber has announced he is releasing a new acoustic album this month, “It’s something the fans really like,” announced the teen star, “because I started out on YouTube just playing my guitar, just singing without all the production, so I like to just put out acoustic albums. I think it’s more intimate.”

2 Animal by Connor Maynard ft. Wiley With a number one album, 135 million YouTube hits and over half a million singles sold in the UK alone, Conor Maynard has successfully proved why he won MTV’s Best Newcomer earlier this year. January sees the release of the young pop star’s fourth single, a brand new version of ‘Animal’, the opening track from ‘Contrast’, Conor’s debut album. This up-tempo pop track is fused with an urban twist by the name of Wiley, making this new hit, darker, harder and even more addictive.

3 BraveHeart by Ashanti She’s back; pop and R&B superstar Ashanti has returned with her first album in five years. BraveHeart will also serve as the singer’s first album with her own record label, Written Entertainment. The Oscar winning film with the same title inspired Ashanti’s latest release. “The metaphor that I took was basically in the movie you have the Europeans, you have the soldiers from London and the U.K.,” she explained. “They have the big horses, they have the shields, the guns, the weapons… They’re all armored up. And then you have the Scots. They’re all raggedy, homemade weapons, and paint on their faces. It’s not an even playing ground, so I feel like with the [major labels], they’re bossed up. They have the big engine and all the artists signed to them and with the indies, it’s depending. It’s homemade. It’s a lesser engine. So the metaphor I was using was being brave and putting your blood and guts into it and fighting passionately to win.”

4 True by Solange Beyonce’s sister Solange release a new 7-track EP this month continuing with the successful sound of the retro-soul adventure, ‘Sol-Angel and the Hadley St. Dreams.’ To create ‘True’ Solange collaborated with British musician Devonte Hynes, who has also worked with The Chemical Brothers and Diana Vickers. Easy listening and addictive, the album finds Miss Knowles dreamy vocals reporting on heartbreak and the struggles of relationships. 5 Lose Control by Courteeners

English indie rock band, Courteeners are back with their new single, Lose Control, preceding their new album ANNA out next month. ‘Lose Control’ opens with an addictive hook followed by Liam’s distinctive vocals which then catapults into a huge chorus of drums and melody; the perfect introduction to the new sound of the band’s third album.

Supermodel Gisele Bundchen and Tom Brady welcomed their second child into the world last month despite never officially revealing she was pregnant. Vivian Lake is the newest addition to the family joining big brother Ben, aged four. Tom also has a five-year-old son with his ex, Bridget Moynahan. The proud mum posted on her Facebook page, “We feel so lucky to have been able to experience the miracle of birth once again and are forever grateful for the opportunity to be parents of another little angel.”

Xtra Factor presenter, Caroline Flack, is rumored to have fallen for another contestant, the uber-talented, X Factor king James Arthur. This duo have been spotted together on numerous occasions, despite Caroline revealing that she was not allowed to date within the show following her fling with One Direction hottie, Harry Styles. Looks like she didn’t stick to her word!

Just days after the world rejoiced over the news of a Royal baby, a tragedy was revealed. Whilst the Duchess of Cambridge lay in hospital suffering from a severe form of morning sickness, an ill-advised prank by two Australian DJ’s took a tragic turn when the nurse whom the duo tricked into believing they were Queen Elizabeth II and Prince Charles committed suicide. Jacintha Saldanha, a nurse at King Edward VII Hospital, where Kate Middleton was being treated took her own life just days after the cruel joke took place. The Royal Family released a statement shortly afterward, expressing their sorrow, “The Duke and Duchess of Cambridge are deeply saddened to learn of the death of Jacintha Saldanha. Their Royal Highnesses were looked after so wonderfully well at all times by everybody at King Edward VII Hospital, and their thoughts and prayers are with Jacintha Saldanha’s family, friends and colleagues at this very sad time.” Mel Greig and Michael Christian, the DJ’s involved, who apologized for the prank the following day, have deleted their Twitter accounts due to negative abuse.

Congratulations are in order for ‘90210’ actress Shenae Grimes who recently accepted a proposal from her British model/musician boyfriend, Josh Beech. The gorgeous couple have revealed they will be getting married in England in the summer of 2013. Invite please!

TROUBLE AHEAD

It appears Cheryl Cole is still a little bitter about her firing from the X Factor USA as last month she filed a lawsuit against one of the producers claiming they still owe her $2.3 million. Cheryl exclaims within the complaint that she is still owed her $2 million season two paycheck, (despite only appearing in a couple of episodes of season one,) plus wardrobe allowances; a $25,000 stylist allowance; $15,000-per-month to rent in Los Angeles; and a $2,500-per-month living allowance. If that wasn’t enough, Cole also wants to be reimbursed her for her personal security expenses and the first-class flights she took from London to L.A. as well as three round-trip economy tickets for her entourage!

What feels like only minutes since he broke off his engagement to Coronation Street’s Michelle Keegan, The Wanted’s Max George has been caught hooking up with no other than Lindsay Lohan. “We met her on a night out and she was really cool and she really liked our music so she came on the tour bus and Ed Sheeran came on and we had one big messy week,” explained the singer. When asked if him and the troubled actress hooked up when they partied in LA with mutual friend Ed Sheeran, he responded, “did I snog her or him? Me and Ed were getting it on all the time” before adding “she’s just a friend to all of us now.” Of course we believe you Max!

So how do you get started?

Abbreviated from Quick Response Codes, QR codes are the representatives of the Matrix Barcode. The difference between a normal barcode and a QR Code is that the latter holds more data per unit area. In short, it’s a bar code you can scan with a smartphone and be taken directly to a website; no pen, no paper, you don’t even need to type anything into your phone.

The only technical bit is getting the QR Code reader software on your mobile browser. However, don’t panic, there are loads of sites that offer this for free, with just a few simple and easy instructions. Why not take your pick from the sites we recommend below and get ahead of the game;

Toyota component manufacturer Denso Wave originally invented the QR code in Japan in 1994. It was initially used to track vehicles during the manufacturing process and was designed to scan components at high speed. In today’s society, this system has become very popular outside it’s original industry due to it being a quick reader and big holder of information. It has become so popular that it is now possible to create our own QR code for our business or personal use. The composition of this mechanical amazement is simply: dots placed in a square on a white background. Customarily, the information is made up of four different types of data: Numeric, Alphanumeric, Byte/Binary and Kanji (Japanese writing system), but today, extensions of this can virtually hold any type of data. Nowadays, QR codes enable us to retrieve information via our smartphones allowing us to do everything from Internet shopping to secure online banking.

An obvious point, but so important. Drinking your daily dose of H2O keeps your body running properly, your skin clear and may even help you lose weight. Aim for eight glasses a day. I have a two litre bottle with which I start the day and use this for all my drinks. That way I know exactly how much I am drinking. If you don’t like the taste of plain water, try jazzing it up by adding lemon, lime or a slice of orange. Drink herbal teas - I love camomile, ginger and lemon, peppermint and also fennel, all of which have additional healing properties. Nothing with caffeine in it, please! Look on the upside; water is cheap and has no calories or added ingredients. What’s not to love?

It may also be a better strategy for weight loss than grazing on several smaller ‘mini-meals’, according to a U.S. study. I live by the old motto that states, “Eat breakfast like a King, lunch like a prince and dine like a pauper.” Make sure that you include your five portions of fruit and vegetables, eat oily fish, opt for white meat over red and choose brown grains instead of white.

In addition to the personal details of the drivers and their vehicles, the document includes a jointly agreed description of the manoeuvres carried out by the drivers when the accident took place, which plays a key role in determining who is responsible for a traffic accident.

In section 12, (Circumstances) the numbered column on the left describes the manoeuvres of car A and the one on the right those of car B. If you are unsure which box to mark, leave it blank. Make a drawing of the accident in section 13 indicating the manoeuvre of each car. If anybody has been injured or if you think they might have been injured, complete section 24. DESIGN DECADENCE FROM ANDREW MARTIN We spoke to Martin Waller, Founder and Chairman of Andrew Martin and asked him a few questions about El Lodge and their redesign. Thanks for speaking to us Martin, tell us, what were you looking to achieve with the look of El Lodge? We were looking to create a stylish, luxurious and comfortable setting with a hint of old school glamour.

How would you sum up the finished project? I would say a rich and cool mix of vintage and modern, comfortable, yet multi-layered with an easy living style. Did you take inspiration from the mountain setting? If so how was this reflected? It would be impossible not to be inspired by such an incredible location, we retained the natural beauty of the log cabin and worked the Andrew Martin magic to create a glamorous and elegant space.

Are there any particular materials you have used that you really like? We used a combination of scrumptious fabrics; velvet, fur throws and leather, alongside materials such as zinc, old wine crates and vintage mirrors giving the overall feeling of rich decadent space. What’s your favourite room and why? The lounge is our favourite room as it epitomizes the essence of Andrew Martin. We created a cool yet fun relaxing playful space for every age group. We are very pleased we can offer a professional building service through Ambience Construction S.L. in addition to interior design. This completes us! I personally love refurbishment projects - the before and after. Our team of builders know exactly how we want things done and they are very keen to get everything right. We use traditional and innovative technology. Pablo Hernandez who is my co–founder is as pedantic when it comes to details as I am.” Andrea laughs and says “This is why it works so perfectly.” One of the projects they are currently working on is a refurbishment in Cabopino Port. The property is about 30 years old and is in need of a new kitchen, floors, bathrooms and furniture. Not to mention the electricity and water supplies. “Once we took out the kitchen walls we realised that we could bring up the ceiling by a meter.” Andrea explains. Andrea convinced Paul, the owner of the property, to do so and the outcome looks amazing. “Paul didn’t tell his wife as he wanted to surprise her. Both were so excited when they came from England on a three-day visit to see the transformation.” Andrea continues “They were so pleased with the outcome, and were quite astonished at all the new space they now have.”

We decided to do a complete refurbishment of our apartment this year. This involved structural alterations, new kitchen and bathrooms, new floor finishes and a complete re-vamp of the whole apartment. As a surveyor in the UK, and experienced with this type of project, the thought of doing such a project in Spain and on my own filled me with dread. We commissioned Ambience to do the design and build. We are over the moon with the transformation to our apartment. It looks fantastic. Both Andrea and Pablo obviously take huge pride in their work and are extremely enthusiastic. Andrea has a great flair for design and we now trust her sufficiently to ask her to sort the completion of the project without even referring to us. We know it will look lovely. All in all we have thoroughly enjoyed working with Ambience and would not hesitate to recommend their excellent work.” Leaving soon for the big furniture fair Maison&Objet in Paris, Andrea is excited to see new collections and trends for 2013. “Whenever I can, I like to travel, it opens up one’s senses in so many ways. Walls: they are all around us, they are vertical structures, solid curtains that surround and separate our living space, delineating every room in our home. So what do we do with these flat tall surfaces? How do we make them unique? Usually, paint is the simplest form of adding colour or texture, but let’s get a little daring! Here are some of my favourite trends for walls. Each of these hold a special place in my designs. I like to apply them in my concepts taking into consideration the space, style, light and effect I’m looking to achieve! Impress in One of the highlights in 2012 for me were the 3D wall coverings. This trend continues to go from strength to strength with more impressive designs and textures readily available. From a lush and fabulous faux crocodile skin, to elegant fabric pleats and tweed, even linen with metallic threads, in a variety of exotic tones and colours as well as the 3D wall moldings, so classic and inviting. This option is a great choice for an accent wall in a bedroom, office, or living room. Upcoming design fairs in Paris and Cologne, promise to spark new trends to combine “old-meets-new” design ideas.

Be creative! There are of course so many more options to make a statement on one of your walls. For example, on my travels, I have seen in a restaurant a wall decorated full of turtles shells. It may sound strange but it looked striking. Great tip: if you have a smaller room you can have one entire wall fixed with mirror panels, my favourite! Choose aged mirror panels for an effective vintage look. Use the smaller wall. Not only does it look stunning but it creates more light and a feeling of space. Alternatively you can have a feature wall full of picture frames and mirrors different colour frames, sizes and shapes. This will add a very personal touch.

Or be more creative, without adding too much cost. For example, if you collect hats, hang them all next to each other on en empty wall in your entrance or bedroom. If you have some spare wallpaper, which is beautiful, but not enough for en entire wall, make use of it by wallpapering a small square behind a sideboard, for example, and finish the edge with a decorative wooden frame.

SEARCHING FOR THE WINNERS To find the best fund managers to invest your money with is a core investment decision for all of us. You need a sophisticated and tested method to scrutinise the investment funds available. Nordea’s Portfolio Management team in Luxembourg has devised such a method.

T

o invest in today’s markets takes a considerable amount of time and effort. To leave the investment decisions to the professionals allows your wealth to grow without having to make every decision yourself. In 2008, Nordea developed the Multi-Manager portfolio management investment solution as a way to offer investors convenient access to the best investment funds in the world. To learn more about this investment solution, we talked to Andrea Arata, one of the portfolio managers in the team at Nordea in Luxembourg. Finding the best fund managers in the world is easier said than done. How do you pick the winners? - We select the best fund managers from a universe of more than 60,000 investment funds. We do not focus on, or limit ourselves to one country or legal framework, but are internationally oriented. We look for managers who can beat the benchmarks in the respective asset classes consistently over time. What do you look for when selecting a fund manager? - The fund manager selection is based on both quantitative analysis and qualitative evaluation. Our quantitative analysis is based on a rating system graded by historical performance. But, as past performance does not guarantee future results, the final selection of managers is also subject to a qualitative evaluation of the investment philosophy, process and management team for each prospective fund.

How many funds are you normally invested in? - Generally, around 20 funds. This allows an appropriate diversification in terms of managers. It may happen that a manager underperforms the benchmark for a period of time, but this would normally be compensated by the outperformance of another manager in the same asset class. How can you be sure that yesterday’s winners will also be tomorrow’s bestperforming investments? - We look to see whether the investment team has a competitive advantage that will increase the probability of their fund being best-in-class in the future. Before we determine whether or not to invest in a particular fund, we talk in detail to the managers to make sure that we understand their strategy and investment process, and that they understand our mandate. The investment process must be maintainable and the skills that have created outperformance in the past must remain in the team. That is why we constantly monitor the funds in the portfolio to insure that the right elements are still in place. How often do you change funds in your portfolio? - Some changes are due to an asset allocation decision, whereby we might change the weight of the asset classes represented in the portfolio, or its geographical allocation and currency exposure. Other changes occur when we decide that a manager might no longer be able to deliver consistent outperformance, or if we identify a

manager who we deem able to deliver superior results What are the typical reasons for pulling out of a fund? - If a fund manager is not true to the strategy that has been communicated or starts to change the strategy, then we pull out. Also, if key members of the team leave, and it is not clear that continuity with the results obtained previously can be assured, we would sell the fund concerned. Do you offer different risk classes? - There are three risk categories available: conservative, balanced and aggressive, each of which contains an appropriate mix of funds that invest in a variety of securities and markets. How do you control the risk in the portfolio? - Risk is defined by the category in question. For each category, this corresponds to a variable, asset-class target allocation of the portfolio between relatively “safe” investments (typically bonds) and relatively “risky” investments (typically stocks). We can deviate from these targets, in order to add value with active management, but not in a way that significantly alters the specific risk profile. What has the performance been since the launch of Multi-Manager? - As of 30 June, since inception, accumulated returns have been 24.29% for the conservative portfolio, 34.38% for the balanced portfolio and 43.67% for the aggressive portfolio.

F1 Immo Car Gallery opened its doors to their new Real Estate office at their Christmas Party last moth. The idea for the project ‘All Under One Roof’ was borne out of the desire of customers to search and maintain their car and property from ONE competent partner. Mr. Walter Fischer has put this request into action and expanded the level of services for his customers. For the inauguration, Mr. Manfred Kappler spoilt the guests with Bratwurst and Glühwein at the Christmas stand. In addition, a brand new white Lamborghini Murcielago was presented with 640 PS for the price of €320.000. Over 180 dear guests helped the evening become a great success. The party also marks the beggining of the Christmasdiscount-weeks in the F1 garage in Marbella. erformance with practicality, are the watchwords of Audi RS model range, and while Audi may have expanded its reach in recent years with the RS5 and RS6, the RS4 Avant is undoubtedly still the iconic Audi RS model.

The original five-cylinder turbocharged RS2 Avant of 1994 was codeveloped with Porsche, and was the founding father in conceptual terms. The latest B8 model launched this summer represents the fourth generation of Audi’s high performance compact estate car concept. The new RS4 Avant looks terrific with a mean and hungry look that starts with distinctive wheel arch flares that echo those on the rally winning Audi ur-quattro from the early 1980s. On

my test car, these were crammed to the brim with the optional 10-spoke 20-inch wheels shod with ultra low profile 265/30ZR20 rubber. The lowered, uprated suspension further helps to give the car its broad and aggressive stance. That said, on these big wheels, the RS4’s secondary ride is not as absorbent as the BMW M3 or C63 AMG on their 19-inch wheels, and it would be interesting to see how the Audi rides on its standard 19s and 265/35ZR19

tyres. This test car was also equipped with the optional firmer Sport Suspension Plus, which would have further stiffened the ride. What the chassis gives up in low speed ride finesse it makes up for with sheer mechanical grip when pushed hard into a bend, and Audi took us to the Red Bull Circuit on Austria to find out. owner, Dietrich Mateschitz, in 2004 and extensively remodelled before being re-opened in 2011 for a round of the DTM. With its combination of fast and medium speed bends and some elevation changes, the Red Bull Ring proved to be the perfect track to showcase the new RS4’s impressive straight line speed and cornering prowess. Coming out of the pit lane, with the 4.2 litre four-cam V8’s hearty growl echoing off the walls, the combination of good torque and a freerevving nature that happily sings right round to the 8,200rpm cut-out, makes for an engine with real charisma. With its 84.5 x 92.8mm bore x stroke, the naturally aspirated, direct-injected motor’s undersquare dimensions give it good torque characteristics. The 450 horses arrive at a heady 8,250rpm, with peak torque of 430Nm from 4,000 to 6,000rpm. Paddle-shifters give you full manual control over the seven-speed Stronic dual-clutch transmission, whose lightening fast and seamless shifts just slur one ratio into the next, keeping the rev happy motor on the boil in an adrenalin pumping rush of forward thrust and NASCAR grade V8 soundtrack. With the quattro 4WD system perfectly deploying every one of the rampant horses to the asphalt the RS4 takes 4.7 sec to reach 100km/h. Top speed is an electronically limited 250km/h, and can be raised to 280km/h on request. The cars immense stability gave me total confidence to hold the throttle pinned its stop in fourth gear through the long left-hand curve after the pit straight, and my terminal speed at the braking threshold for the subsequent tight right-hander was an indicated 200km/h, just short of the rev limiter.

Washing off substantial speed to take the second or third-gear 180-degree right-hander gave me insights into two things. First of all, the new RS4 has very effective brakes. Secondly, unlike the previous generation RS4, the new car does not suffer from significant weight transfer to the front under hard braking from high speeds. This was a characteristic that made the previous model go all light at the tail, making it feel twitchy at the rear under hard braking, especially on a damp or wet surface. It was not a nice feeling if you had to apply some steering lock at the same time. Audi are using a distinctive ‘wave’ like outer contour on their new vent-

TORQUE TALK ed, cross-drilled brake discs, which shaves 2.5kg across the 365mm front and 324mm rear discs. The discs are isolated from the hubs by stainless steel pins to reduce heat transfer and clamped hard by eight-pot front and single-pot rear aluminium monoblock calipers. 380mm carbon-ceramic front discs are optional. Although it still has some nose weight bias, the latest RS4 stays pretty flat under hard braking, and its 40/60 front-rear torque split makes a huge difference to the way the car turns into a bend. Where the old RS4 would tend to run wide at the front when pushed aggressively into a slow bend, the new RS4 responds to such inputs with mild stabilising understeer and a clearly felt rear torque bias, thanks in part to the optional Sport Differential that was fitted to our test cars on the day.

You can feel the differentials working away smoothly the moment you turn in. Come in hot with some power on and you feel the torque being shifted aft, rotating the tail to counter the tendency of the heavy motor up front to push the front axle into understeer. As you finally broach the very high limits of adhesion, the torque vectoring system will dab the brake on an inside wheel, creating a moment that further helps the car go where you have pointed it. By and large, the system works very well, but your seat of the pants can just feel the differential switching the torque to the rear and the brakes adding their penny’s worth to the handling mix on the bald limit. This is the big hint that the electronic nanny is helping you to look like a hero, and from my experience on snow and ice

with the RS5, I know that the system is much more transparent on low friction surfaces. Dial the proceedings back a notch to 9.5 tenths however, and the RS4 Avant feels absolutely brilliant with good feedback from the electromechanical steering, crisp handling, sharp throttle response, power aplenty and an engine note to die for. When the family arrives, and a sports car is off the table, it is not the end of the world because cars like this exist to fill the enthusiasts void. As we noted at the start,

WHAT SAUCE! By Padre Peter

A

country’s cuisine is its landscape in a cooking pot”. So said the Catalan

writer Josep Pla (1897-1981). If one goes by the average menu in the average venta in Spain, the landscape is rather average. Flattened chicken breasts or pork fillets, meatballs, oxtail… I suspect that the reader will be able to complete the menu. This is particularly true when it comes to postre; ‘flan’, ‘arroz con leche’, ‘natillas’ - wonderful sounding names for crème caramel, rice pudding, or custard. And enough paella is produced in tourist haunts to sink a battleship, often of a markedly inferior quality, washed down with oceans of watery sangria. Yet this need not be the case. Spain has countless facets of nature, culture and cuisine. The north of the country is markedly different to the south. The climate is different. The

people are different. The food they eat is different. Phoenicians, Byzantines, Romans, Moors, Jews, not to mention the products of the Americas, have all left an indelible mark upon true Spanish cooking. This is certainly true when it comes to a consideration of sauces. Was it Brillat-Savarin (1755-1826) who remarked that a good sauce can

enhance a dish, but it can never disguise a bad one? Possibly not, but

many a Spanish dish (like the ubiquitous solomillo de cerdo) would be plain indeed without its sauce, often originating many centuries ago. Sometimes the provenance can only be described as bizarre. Who, for instance, could ever imagine that one of the most archetypal of all Spanish sauces, ‘Alioli’, was invented by the Emperor Nero? Not even the name is Spanish! We have to thank the Catalans for that (all – garlic, oli – oil). True alioli is produced simply by pounding garlic in a mortar, with a pinch of salt and possibly a little lemon juice, and then beating in a trickle of

good olive oil. In the hands of an expert, the bowl can then be inverted, and not a drop of sauce will fall out. (I once demonstrated this point to a group of students. It took some time to clear up the resultant mess.) Nowadays egg yolks are sometimes added, but this produces a somewhat greasy garlic mayonnaise, rather than the genuine article. Another Catalan sauce, not widely known outside Catalonia, is ‘Salbitxada’. This is a piquant sauce concocted from almonds, tomatoes, garlic, bitxos (fiery little chilli peppers), vinegar and oil. This sauce accompanies ‘Calçotada’, grilled green onions. These are produced in advance on a flaming barbeque, and then wrapped in newspaper to preserve the heat and finish the internal cooking. They are served on a terracotta roof tile, when the diner tears away the blackened outside before dipping the onion into the sauce. When eating, it is wise to have a napkin tied around one’s neck! In Valls, a Catalan town, an annual ‘Colçotada’ is held each year on the last Sunday in January. An eating contest is held, in which participants stuff themselves with green onions dipped in ‘salbitxada’. It has been known for three kilograms (about two hundred onions) to disappear into gaping maws in the space of forty five minutes. ‘Romesco’, which originated amongst the fishermen of Tarragona, can substitute for ‘salbitxada’, as the ingredients and method are virtually identical, but hazelnuts may be used instead of almonds, and roasted red pimientos take the place of chillis. As befits its origins, this sauce was served with fish or seafood rather than grilled onions, but is now found also accompanying meat. Each region, sometimes each town, produced its own sauce, based upon the ingredients to hand, and the purpose for which it was intended. Some spread throughout the country and became the basis for other sauces, as in the case of ‘sofrito’; a simple tomato sauce now

COSTA CUISINE often found in bricks on supermarket shelves. Another such sauce, española, even travelled north across the Pyrenees to become one of the most important ‘mother’ sauces in French classical cuisine. Containing stock, ham bones, and tomatoes, amongst other ingredients, ‘Sauce Espagnole’ was eventually codified by Auguste Escoffier (1846-1935) in his Guide Culinaire. It is the basis of such classics as Bourguignonne, Bigarade, Charcutière, Chasseur, Demi-glace; it is a long list for a very important Spanish sauce! It is, however, rarely if ever eaten by itself. Another sauce often considered as French, is also Spanish in origin. When Louis François Armand de Vignerot du Plessis (1696-1788) defeated the British at Mahon in Minorca in 1756, the French found little other than eggs and oil in the town. It is said that an enterprising chef in the French army then produced what became known as ‘salsa mahonesa’. As it was then claimed to be a French invention, it became more popularly known as mayonnaise (not to be confused with the Marseillaise, which is something altogether different, although Bessie Bunter typically confused the two). The French Larousse Gastronomique, however, notes: “Mayonnaise, in our view, is a popular corruption of moyeunaise, derived from the very old French word moyeu, which means yolk of egg.” But they would say that, wouldn’t they?

The Canaries have also produced a series of cold sauces without a French invasion. These are known as ‘Mojos’. They may be either red or green, and in La Gomera we find one containing ripe goats’ cheese, which is excellent spread on bread, or served with ‘papas arrugadas‘ (small potatoes boiled in their skins in heavily salted water. When cooked, pour off the water and return to the stove shaking several times until a layer of salt has formed on the dry skins). ‘Mojo Colorado’ is based on mild red bell peppers, but this can be transformed into ‘Mojo Picón’ with the addition of chillies. There are two green mojos. ‘Mojo verde’ is coloured with parsley, and ‘Mojo de cilantro’, which is flavoured with coriander leaves. In all cases the basic sauce is prepared by pounding garlic and salt in a mortar and adding oil and vinegar. Nero was certainly on to something!

O

riginally part of the gym Dynamic Marbella, Ôn Sushi has now opened as an independent restaurant and is more than capable of standing on its own two feet. The owners of Dynamic were originally attracted to sushi because of its high protein low fat properties, and felt it was the perfect way to complement the healthy active lifestyle that the centre promotes. They are now focused on promoting the restaurant as nighttime venue as well as a daytime café, with its large terrace and live music nights planned for the summer. We started with some Edamame beans; beautiful steamed soy beans sprinkled with the Japanese sea salt arajio. Known as a snack with a “nutritional punch”, these beans are filled with useful minerals and high in protein and are a popular and filling way to start an Asian meal. These were followed by a selection of stunning dumplings filled with seafood called Gyozas. The thinly rolled dough was beautifully delicate containing an aromatic blend of crunchy seafood and

chopped vegetables. This dish is a real delicacy and also eaten by the Chinese for their New Year. The chef, Samuel Pinazo, wanted to show us a few of his specialities and twists on tradition. We were served some beautiful tataki, slices of fish cut thicker than sashimi, and as a break from the norm we were also presented with a hot slate to seal the fish if we preferred. Unique to Dynamic, this was a way to bring some warmth to the meal and worked well as a sharing experience. The main event was the selection of sushi, which was a showcase of the variety that the restaurant offers. We tried tempuraki; a tempura style sushi roll with red tuna and avocado. The crunch of the tempura surrounding the rice was a pleasant surprise and provided some welcome texture. Vegetarians and vegans are often not very well catered for at Japanese restaurant but not here. We tried some beautiful vegetarian Uramakis with a stunning selection of fillings: roast peppers, sun dried tomatoes and asapargus. These were actually a highlight and a great alternative to fish. Finally we sampled some futomaki; a sweet and savoury combination of tuna, mango and rocket, this was delicious and yet again, a twist on the usual strong and salty taste of sushi. The service here was notable attentive and friendly, and the owner is charming, a real believer in a healthy lifestyle and inspiring in his vision of combining diet with exercise as a social and enjoyable experience. テ馬 Sushi Ctra. de Istテ。n Km0,9 C.C. he Dark Ages were lit up by Muslim Spain” – so avers

Andrew Marr in his ‘History of the World’. Not that the indigenous inhabitants of the peninsula were always welcoming to the invaders. Indeed,

to this day, to say “the coast is clear!” in Spanish, one says “¡no hay moros en la costa!” (“There are no Moors on the coast!”) Having arrived, there can be no doubt but that the Moors developed a civilisation which far out-

stripped that of their northern neighbours. In, for example, the ninth and tenth centuries, when both London and Paris were little more than festering collections of wooden huts, in Córdoba there were ten miles of paved

streets, lit by street lighting, with over two hundred thousand houses, six hundred mosques, nine hundred public baths, fifty hospitals, and several large markets employing fifteen thousand weavers. Al-Hakam (796-822 AD) established a university there, while the rest of Europe was plunged in darkness, illuminated only by pockets of monastic learning in isolated places like Ireland. As Professor Lane-Poole (1854-1931) wrote, quoting an earlier Arabic author: To Cordoba belong all the beauty and ornaments that delight the eye or dazzle the sight. Her long line of Sultans form her crown of glory; her necklace is strung with the pearls which her poets have gathered from the ocean of language; her dress is of the banners of learning, well-knit together by her men of science; and the masters of every art and industry are the hem of her garments. Averroes (Ibn Rushd 1126-1198) the great Aristotelian philosopher, and Maimonedes (Mosheh ben Maimon 1135-1204) the Jewish scholar and philosopher - whose Mishneh Torah is still regarded as a canonical authority and whose synagogue still stands - were but two of the great galaxy of scholars, scientists, statesmen and poets produced by this city alone. Until the Moors arrived, the glory that was Rome had been dimmed if not altogether extinguished. Men like Seneca, Trajan, Hadrian and Vespasian who were born here, and Julius Caesar himself who once was a governor, were long forgotten as Vandals and Visigoths fought over the country. As the invaders settled, so places were named, and many such names have survived. Alhambra is said to mean ‘the red palace’; Almería means ‘the mirror of the sea’; Algeciras (aljazeera khadraa) is ‘the green island’; and Gibraltar is still recognisable as ‘Jabal Tariq’, named after its conqueror Tariq ibn Ziyad (d. 720 AD).

The language itself is peppered with Arabic. When shouts of olé ring out, the good Catholic Spanish invoke the name of Allah. And when we move into the culinary realm, gazpacho, originally made of bits and pieces of stale bread and vegetable scraps crushed in cold water, oil and vinegar, takes its name from an Arabic word meaning ‘almsbox’. Everything from coins to chunks of bread and cheese were deposited in such boxes to feed the poor. The coins were, of course, removed before the soup was prepared, and this dish remained a staple for the Spanish poor for centuries to some. Now, of course, it finds a home in the grandest of establishments, as its great nutritive value has been discovered! Moorish cuisine depended to a great extent upon their systems of agriculture. They resurrected the Roman system of irrigation and fertilisation, and this enabled them to produce types of produce which would not otherwise have been possible. Rice, sugarcane and aubergines arrived from India through Persia. Melons arrived from Africa, and figs from Byzantium. Oranges and lemons, peaches and apricots, quinces and carobs, almonds and pistachios; fruits which we regard as quintessentially Spanish, were introduced, and later came dates from Iraq and coffee from the Yemen. And in many cases the names of the commodities remain largely unchanged; naranja, berenjena, albaricoque, almendra, azucar, arroz, aceite, even the humble zanahoria (carrot)! Being in origin a nomadic people (Berbers rather than Arabs) the Moors were greatly influenced by the cultures around them. They were inspired by the Persians, Egyptians and Turks, and developed dishes such as tuna with sour cherries, mutton with apricots, and let us not forget lamb cooked with mint! When, in a venta or

restaurante, you are offered arroz con leche as a postre (as you undoubtedly will be) spare a thought for the Moors who first introduced it to Spain! And bear in mind that whilst many of the cultural achievements of the Moors were lost or forgotten after the Reconquista, as excitement over the ‘New World’ began to obliterate many memories of the old, in one area the legacy remained. This was the art of making sweet dishes, where the tradition was kept alive in convents. It was, perhaps, a sinful tradition. Wine is forbidden in the Qur’an, but the Moors produced it for medicinal purposes and regarded it as ‘food’. They used egg whites in the process of clarification, which resulted in a large number of egg yolks being available for other purposes. Some were used in painting, but the vast majority ended up in the manufacture of sweetmeats. This process was adopted by the good Christian sisters, and so it is today. In the convent at San Leandro in Sevilla, for example, the famous ‘Yemas’ are produced from egg yolks according to a recipe which goes back to the 15th century. The methods remain unchanged, although the nuns have introduced an automatic mixer into their kitchen to save labour as their numbers are dwindling. Other convents have their own specialities, including the delicious tomato jam from Santa Paula. In many of these establishments the sisters shelter behind a “torno” and so are not seen by visitors. As the drum revolves, visitors place their orders and money in the aperture provided. These are received on the other side, and in reverse the products requested make their appearance. Often the customer will hear a soft ‘Deo gratias’ (‘Thanks be to God’) murmured in greeting, to which the reply should be made ‘Ave María purísima’ (‘Hail most pure Mary’).

SANTA MARIA GIVES BACK Santa María Golf & Country Club hosted a golf tournament to raise funds for the Spanish Cancer Association based in Marbella (AECC) and the Spanish palliative care unit based in Málaga (FBB), in honour of Terry Wills (2011 Santa Maria captain who died last December).

POSITIVELY PINK Last month, the Pink Ladies dance class organised their first fundraising event in aid of Cudeca at Tikitano Restaurant. This small group of friends and exercise enthusiasts have all been touched by cancer and wanted to make a difference and create a great event for their friends and local community to enjoy. The event included a three course meal and entertainment by the Rat Pack and was a resounding success. The 200 tickets sold out within just a week and many local businesses supported the cause, through sponsorship and donating gifts to the wish trees on each table. Specsavers Opticas in Fuengirola and Marbella each donated a 200€ voucher to be used to buy glasses or contact

lenses in their stores. These were part of the auction which raised 1,500€ for the cause. Judy Borland, Director of Specsavers Fuengirola said “It was great to be able to support this fundraising event and contribute to this important cause. Specsavers is committed to giving to charity and we look forward to taking part in more events like this.’’ In total the event raised 8,500€ and they want to make the event an annual affair. The Pink Ladies will be arranging a monthly Strictly Ballroom Tea Dance at Tikitano which will include a fundraising raffle for Cudeca.
