ell, we’ve made it to November, you could say it’s been touch-and-go at times, or strange to say the least, but 2020 has taught us what is truly important and never to take the simple things for granted. As we bid a fond farewell to October, and welcome some much-needed rainfall, we turn our attention to November. The days may be shorter and the weather not so warm, but Christmas and the end of this challenging year is in sight. This issue’s cover star is the unique, beautiful and talented Billie Eilish. At just 18 years old, Billie’s achievements are beyond most people’s imagination. Not only is she the youngest person to ever record a James Bond theme song she is also the youngest person to ever win in the four main Grammy categories, but it’s her honesty about her personal experiences with body dysmorphic disorder, depression and Tourette’s syndrome that make her a popstar to be proud of. i l l i B Eil I just hated my body. I would have done anything to be in a different one... I really wanted to be a model, really bad, and I was chubby and short. I developed really early. I had boobs at nine. I got my period at 11. So, my body was going faster than my brain. It’s funny because when you are a little kid you don’t think of your body at all. And all of a sudden you look down and you’re like whoa. What can I do to make this go away?

orn and raised in Los Angeles, but of Irish and Scottish descent, Billie Eilish Pirate Baird O’Connell grew up in a household of actors, her parents are actors Patrick O’Connell and Maggie Baird. Her older brother is musician and producer Finneas O’Connell from the band The Slightleys. Home-schooled growing up, her parents, both amateur musicians, taught her about music and the basics of song writing, encouraging her to explore whatever she loved to do. At the age of eight, she joined the Los Angeles Children’s Choir developing the soulful vocals that would later appear on her early singles. She started off doing background vocal work for several movies growing up but gained attention in her teens for her track, ‘Ocean Eyes’ which she uploaded to her SoundCloud page. The song was written and produced by her brother and originally intended for his band. However, when the song went live it was picked up by an array of outlets, radio stations and music supervisors such as BBC, Sane Lowe, Jason Kramer, Annie Mac and Chris Douridas. Her brother then assisted Billie in signing with Apple Music through A&R company, Platoon who help up-and-coming artists before they get their first major deal. In 2016, when the music video for ‘Ocean Eyes’ was released, Billie signed with The Darkroom, a record label and artist-management company. She went onto release her debut EP in August 2017, ‘Don’t Smile At Me’ with her debut album followed in March 2019 ‘When We All Fall Asleep, Where Do We Go?’, for which she won five Grammy Awards. The album became the best-selling album of 2019 in the U.S and six of the singles became Billboard Hot 100 top 40 songs. As of September 2020, Billie has more than 4.9 million followers on Twitter, 6.9 million followers on Facebook, 33.7 million subscribers on YouTube, and 66.6 million followers on Instagram. This year Billie was selected to write and record the new theme

When people ask me what I’d say to somebody looking for advice on mental health, the only thing I can say is patience. I had patience with myself. I didn’t song for the latest James Bond film. The take the last step. I waited. song, “No Time to Die,” became her first Things fade. number one single in the U.K. She was

the youngest person to ever record a James Bond theme song. But, that’s not where her accolades cease, since her rise to fame, Billie has received a number of prestigious awards: five Grammy Awards, two American Music Awards, two Guinness World Records, three MTV Video Music Awards, and one Brit Award… not bad for an 18 year old. In addition to her awards, Billie has broken a number of records. She was the youngest person to ever win the four main Grammy categories — Best New Artist, Record of the Year, Song of the Year and Album of the Year — in the same year. She was the only person to win all four of these awards ever. Her music is one-of-a-kind, her outfit style is unique, and her songs are unforgettable but it’s her honesty about her personal experiences with Tourette syndrome, body dysmorphic disorder and depression that make her the pop star this generation is proud of.

I genuinely didn’t think I would make it to 17,¨ admitted Eilish. The star encourages fans who are struggling with similar thoughts not to take that extra step.

Ed Sheeran has been building and adding to his estate, nicknamed, Sheeranville, for the past five years and most recently has spent tens of thousands of pounds to build his own forest on his sprawling 3.7 million plot, to make it more sustainable. Ed now has a pub, swimming pool and hot tub, orchard, walled kitchen garden, greenhouses, an underground cinema, a gym, a recording studio, a wildlife pond and an area for goats, sheep and chickens on the estate. The forest will assist with privacy and reduce his carbon footprint. A win-win!

ROSIE RETURNS She’s been Emilia Clarke’s body double on Game of Thrones, a Society Marbella cover star and now she has a new role, on Little Mix’s new BBC show, The Search. Marbella regular, Rosie Mac, sang a tear-jerking rendition of Alessia Cara’s Scars to Your Beautiful when auditioning for a place in the Mixed Group category. Popstars and judges, Little Mix adored her moving audition and she made it through to the group alongside fellow auditionees Melina, Jordan and Liam. Kim Kardashian has had (and attended!) her fair share of weddings and now she is taking things a step further announcing the launch of SKIMS bridal shapewear. The collection has already attracted a celebrity follower with Hayley Bieber announcing she wore SKIMS under her bridal gown when she wed Justin Bieber in 2019. The AFFAIR It seems The Affair actor, Dominic West decided to take his work home with him this month. The 50-year-old was spotted kissing actress Lily James on a recent trip to Rome. Caught nuzzling her neck at dinner and stroking her hair… this one is going to be hard to explain. Days later the actor returned home to face the music and endure ‘showdown talks’ with his wife of ten years, Irish landscaper, Catherine Fitzgerald. Telling the media, the following day that their marriage is ‘strong and were very much together’, the actor become a viral meme. Cheeky posts followed his smug show of unity with his wife in the wake of being caught in the passionate clinch.

Devastating DIAGNOSIS At the age of just 32, Tom Parker from British band, The Wanted, has been diagnosed with an inoperable brain tumour. The singer, who has been previously fit and healthy has begun radiotherapy and chemotherapy treatment in an effort to prolong his life. Following weeks of bizarre and unexplained seizures, Tom finally got the tests he needed where doctors informed him he had a grade four glioblastoma and it was the ‘worst case scenario.’ Devastatingly the life expectancy on average for such illness ranges from three months to 18 months from diagnosis. Tom is married to actor Kelsey Hardwick and the couple have a 16-month-old daughter, Aurelia, and are expecting their second child in the coming weeks.

What’s your full name? Cassie Anne Rowan Where are you from? My parents are Scottish, but I was raised in Marbella from a baby, so I guess I’m from Marbella! What is your background and how did you increase your following? I was on a TV show and gained a small following from that but when it finished, I put my account on private and never really did anything on my Instagram. When my daughter was born a couple of years ago I decided to take it off private and start documenting motherhood honestly and light-heartedly, I was so bored of seeing mums pretending everything was picture perfect so I really just made my stories about my day to day life, warts and all! I had nearly four stone of baby weight to lose, spent most of the day covered in baby sick but I just had a laugh about it. As the weight came off I started to document my love for fashion and my outfits on my feed, there was a lot of me getting trapped in dresses too small for me on my stories and people started reposting both my stories and feed posts; I guess people found the struggle and honesty refreshing and the following grew from there. What 3 pieces of advice would you give anyone looking to enhance their career using social media? 1- Be yourself. 2- Don’t care what people think. 3- Enjoy it. Who inspires you? My best friend & business partner, Leah. Although I am very creative and very driven, I don’t always know how to put our ideas into place, Leah can make ideas a reality. She can also make me laugh until I cry, and she pushes me to strive for more every day. I adore her. Describe your content in three words? The good, the bad & the ugly. (Maths clearly isn’t my forte).

What does a typical day in your week look like? Pulling up late to the nursey drop off in my gym gear (with the intention of going to the gym), Zoom business calls, or business meetings, tidy my house after my toddler’s ransacked it in the 2 hours she’s been awake before nursery, get dressed up to get some outfit inspo content for my Instagram, back into my gym gear (still not having gone to the gym), and back on the business calls or doing some beauty clients, pick my daughter up from nursery, and then it’s the usual evening routine. Hectic & boring but I wouldn’t have it any other way... Your favourite fashion brand? For high street its always Zara, you can get almost everything in there, they’re always on trend, the prices are amazing, and their website and crazy shots keep me entertained for hours! As for designer brands it changes so often! So many of them have upped their game and I love different pieces from different ones! So tough to decide but Bottega Veneta and Fendi bags have me drooling at the moment! Your top Instagram tip? Again, just be yourself!! I know I drive people up the wall with my how outspoken I am but that’s who I am and I’m not going to change it. I’m sure people may look at my outfits and hate them, but I like them and that’s all that matters. It’s just an app, it’s not real life and if it got deleted tomorrow, I know the people following me and my close friends & family got the exact same version of me. If people don’t like it, then that’s fine, I don’t take Instagram too seriously. Favourite travel destination? Oh gosh there are so many places I’ve loved but recently we went to Amsterdam, I’d never really fancied it, but I totally fell in love with it! The place, the people, everything! We had sunshine the entire time, so we really got to enjoy the city, we went to the supper club for dinner and I cried tears of laughter the entire night. It’s the craziest, most outrageous restaurant I’ve ever been to!

The best gift you have ever received?… This sounds so cliché but my daughter. I lost 4 babies before her and even now she’s 2 I look at her and I just can’t believe she’s mine! I literally cannot believe how lucky I am! She came as a complete shock, a little miracle and nothing will ever compare. Favourite hotspots on the coast? Links Bar for the best home-made food on the coast and perfect for all the family. Casanis for a perfect date night in the beautiful old town. Rosas Cafe for cake and tea with my daughter. Monkey Club for cocktails and dinner. Top five Instagram accounts to follo? Obviously, mine @casarella21, @emilyshak for outfits and body envy, @ohmyvogue because her outfits are just wow, @alexsimpson_x because her and her stories crack me up and she can pull any outfit off, @lissyroddyy for the amazing outfits and accessories. What do you love most about Marbella? You can live a millionaire’s lifestyle on any wage... it doesn’t matter how many zeros your bank account has, we all share the same beaches, the same views and mix in the same places. McFLY Young Dumb Thrills

McFly are back with ´Young Dumb Thrills´ their first studio album since ´Above the Noise´ in 2010, featuring the brand new singles, ´Happiness´, ´Growing Up´ and ´Tonight is the Night.´ The band revealed the album was fully recorded between January and March 2020, before the Coronavirus lockdown started. Dougie confessed, ´It´s hard to fit into one genre, it definitely has a pop sensibility, but we were really open to pretty much any approach to making a song.´ The bass guitarist went on to reveal that the early part of this year when they were in the studio recording was, ´honestly one of the most favourite times in the band. I still feel like it sounds like us, but its explored different routes’, continued Dougie.

BIRDIE Piano Sketches

British singer and songwriter Birdy is back with her fifth EP ´Piano Sketches.´ This is her first project in four years since her third studio album, ´Beautiful Lies´. The EP comprises of 4-track, written and produced independently during her time away from the spotlight. On September 4th, she unveiled the first single, ´Open Your Heart´. “I’ve spent the last few years recording a new album coming next year which I’m super-excited to share,” Birdy reveals in the press release. “I wrote a load of music I’m so proud of that might not normally have seen the light of day — I’ll be releasing the tracks stripped back over the coming months ahead of the album.”

hen I was 9 or 10, there was a kid in my class called ___________ who said he had a sword in his desk. He refused to show us, saying if the teacher caught him they’d call the police. Earning himself some newfound peer points (at least from the boys), our initial fascination soon turned to niggling suspicion when he outright refused to let anyone so much as peek, despite a steady stream of cajoling. Eventually we overwhelmed his protestations and forced his desk open. Nothing. To his credit ___________ knew how to pivot and without missing a beat, met our semi-unsurprised but still disappointed expressions with “IT’S INVISIBLE!”. Whilst the majority heckled his shameless attempt at social climbing or peeled off disinterested, one or two suckers were even more intrigued than before. “An invisible sword?! Woh!” ___________ had all the answers – He got it from his uncle who’d trained with Bruce Lee.... It could cut through TEN bricks in one go.... Of course no one else could touch it – you wouldn’t know where the handle was and you’d cut your hand off.... He was able to parlay his bizarre lies into classroom notoriety, which ultimately

he found preferable to obscurity. If nothing else, his boasts were fitfully entertaining and held sway with a select few younguns too free of guile to completely rule out the possibility a 10 year old boy in Dover had an invisible sword. At a time when every last one of us desperately wanted a Super Nintendo, ___________ convinced Barry Townsend he’d built himself one.... out of Micro Machines. Barry’s disappointment was palpable when he returned from a playdate which featured neither Micro Machines nor a Super Nintendo, let alone one made from the other. I look back fondly now on that golden age of dishonesty, years before we’d even heard of the internet. “Fake news” didn’t routinely undermine democracy or incite widespread social polarization; it just left Barry Townsend heartbroken he didn’t get to play Super Mario Bros on a 1/87th scale Ford Mustang. Our world’s an altogether different place now, in part because so much

Our data is mined and sold to advertisers whose popups, notifications, sidebars, banners, search results and “suggestions” are ultimately designed to influence us towards spending. We’re numbers on a spreadsheet, calculations in an algorithm. WE are the product. Businesses understand this. From influencers to start ups to online entertainment and information platforms, more clicks equate, at least superficially, to increased clout. More sponsorship, more advertising revenue, more online cache with potential customers.

Looks good.Website’s slick. Customer reviews are on point... But now we can’t help but doubt everything online. Are those reviews real?? Is “Stacy M.” an actual person who will “definitely be continuing” with the ClickCease

service or is Stacy M actually Rob in programming? Surely they couldn’t just LIE??.... Why the hell not? The Prime Minister does. The President does. Look what’s happened - honesty’s become a naïve ideal. Organised criminal bots are running things and impoverished humans are being farmed for clicks. Bet you an invisible sword they’re not free range either. Of course not everyone’s peddling bullshit but it can’t hurt to have your detector on next time you invest your time or money online. We are amidst a global pandemic which we are all working through, finding ways to continue to live and work, and trying to stay healthy. Children are having to adapt to a whole new way of life, schooling, socialising, etc. We are assuming (hoping) that this will soon pass and life will resume to a less volatile and disrupted normal. However, learning to live with, battle against, and adapt our lives around ‘that’ virus has given us a grave yet poignant platform by which to look at a far bigger threat to our existence. I recently watched the latest David Attenborough documentary - David Attenborough: A Life on Our Planet, which spans the destruction that we (humans) have been a party to, and the cause of, throughout his extraordinary ninety-three years on this earth. Attenborough has explored most of our planet during the course of his career and “experienced the living world in all its variety and wonder” due to his passion for adventure and learning about the wild. The loss of the planet’s biodiversity is the key point made; we are deforesting and destroying the world at a rate whereby, if we continue as we are, the entire planet will become uninhabitable. Yes, that means it will no longer be a place in which humans can survive. Our lives rely on the world’s biodiversity, so if that is no longer, or has declined further due to human error, we will no longer be able to live on earth. The human species will plunder and become extinct. If you watch this documentary you will feel this realisation as truth and it shocks you to the core. Since 1937 the understanding of how the living world has increased dramatically. We are incredible beings that have studied, researched and

analysed that which we inhabit and sadly destroy. But at least that awareness is available to us all, the facts are presentable and visible. The earth is supposed to change, it is used to catastrophic situations - within four billion years the planet has endured five mass extinctions - whereby a multitude of species are wiped out and replaced by a few. Nature then takes its course having no option but to rebuild.

SINCE THE END OF T H E AG E O F T H E DINOSAUR THE WO R L D H A S B E E N R E B U I L D I N G TO M A K E THE PLANET AS IT HAS BEEN DURING T H E L I F E S PA N O F HUMANS. The temperature on earth, for the past 10,000 years has not wavered up or down more than 1ºC on average since. It is the most stable era the planet has ever experienced - the rich, thriving variety of the living world being key to this stability. Due to the stable life we were given, the seasons, we learned to use this for our own benefit in the form of farming. Seasonal produce. Following this came civilisation, development and progression. Culture, tradition, language, housing, industry, technology, electricity, travel, air travel - life became a dream, until we recognised that there were problems with this dream. At the post-war time when Attenborough began his career it did not seem feasible or remotely possible that we, one single species, could one day be the cause of the downfall of the natural world on which we relied.

Space travel defined this for humanity when we were shown pictures of our planet live from the Apollo spacecraft, depicting that we are not a limitless life source, our existence has an edge to it, we are bound by the natural world that surrounds us. A visit to a remote tribe shows how the human race could simply live off the land, in a sustainable fashion, only taking what was necessary - a far cry from the increased demands of the western civilisation. If only we had been gracious enough to realise that we had everything we needed in the first place. For as these so called needs shifted and increased, we continued on a path of greed, power and our own unwitting downfall; the path to our own extinction. We have poached, pillaged, ravaged, deforested, slaughtered, hunted, fought over, claimed, forced extinction upon, overpopulated, and blown up the natural world incessantly to our own demise. Have the feeling that we aren’t as intelligent a

species as we give ourselves credit for? The planet, the natural world, will clamber its way back from our destruction and thrive once more after we are gone, so the fight we need to take part in is not simply to help save the planet, it is to help save our place on it before it is too late. We are talking about a few generations time. During watching this documentary (whilst in floods of tears at the evidence of our mistakes) I almost felt like there was no hope, that our children’s future is so bleak that they ought not to reproduce so as not to put their children and grandchildren in danger of what is to come. This is why I think this programme is so important for them to watch. Not to place this fear and all the problems of the world on their shoulders, but to educate them and allow them to realise that, although they are watching a programme on Netflix, this is real life. When that hit home to me, it did so very hard. We are basically being

shown hard scientific evidence that if our destructive ways continue nature will chew us up and spit us out, reject us from earth and rebuild itself without us. This is a terrifying situation, and one that is not just going to go away when we switch off the TV. It is only subject to a change in how humans treat the planet. David Attenborough, after suspending us in a state of anxiety, fear and hopelessness kindly reveals to us, using all his wisdom, knowledge, and experience alongside scientific evidence, how we can work towards a planet that will allow us to continue living. It is not as simple as doing the recycling and reducing our individual carbon footprints, there are huge mountains to climb here. But, as an extremely powerful and highly-intelligent race with a new mindset in force, there are real options, actions that we can take on to secure a better future for the next generations.

The main issues contributing to the decline of the natural world are the consistent deforestation causing a decline in biodiversity, the increase in human population, and the continuous growth of carbon in the atmosphere - here we compare the numbers from 1937 to present day. NEVER BEFORE HAS THE E A R T H B E E N AT TA C K E D FROM WITHIN LIKE THIS, BY O N E O F I T S OW N S P E C I E S . We have become apart from the natural world, rather than a part of it. And this ultimately is what needs to be stopped. We need to desist what we are doing of our own accord, as there is nothing left that can restrict us. We could simply consume the earth until we have used it all up. Rainforests have been halved, coral reefs have become vast wastelands, the earth has been stripped to produce and process meat - half of the fertile land on earth now being farmland, the carbon levels are causing the ice to melt and therefore temperatures to rise, extinction is rife, overfishing - 90% of the large fish in the sea are gone causing the oceanic nutrient cycle to stutter, freshwater populations have been reduced by over 80%, the ocean can no longer absorb the excess heat produced by human activity on earth (burning of fossil fuels and producing greenhouse gases) and so now the ice is melting - 40% in 40 years, the global temperature has risen faster since Attenborough was born than in the last 10,000 years, all of which cause instability to (our) life on this planet. Our imprint, our impact, our global assault has caused irreversible damage. In the words of Attenborough himself and his own witness statement, “human beings have overrun the world, we have completely destroyed that wild world, the non-human world”.

The only thing to do now is to begin to live harmoniously with the natural world. Instead of running the planet wrongly we need to live sustainably, ethically and once again find our place in it as natural beings… STABILISE THE POPULATION - One very straightforward way to slow down our negative impact is to stop and stabilise population growth. If we do this resources will eventually reach a balance once again. If not we will reach a population of 11 billion within this century! To achieve this, we need to educate the current population (girls in particular) for as long as possible, reduce poverty, provide access to healthcare for everyone, produce fewer children and more opportunity raise the standard of living but at the same time reducing our impact on the world. USE RENEWABLE ENERGY - We absolutely must start phasing out fossil fuels and utilise what we have that will not run out - sunlight, water, wind and geothermal. This is essential to the health of the planet and our position on it. Renewable energy should become the only source of

REDUCE FARMLAND - We need to drastically reduce the amount of area we use to farm in order to be able to improve the world’s biodiversity - to make space for the wild to return. We haven’t got room to support billions of meat-eaters, so to do this we can simply begin to change our diet and live a more natural, plant-based life. This would reduce farmed land by half! Sustainable systems can be put in place to grow these plants with less water, space, and pesticides, plus emitting less carbon. Plants can help save the world! STOP DEFORESTATION - With the free land that would no longer be needed

natural power. We need to invest in this rather than that which can kill our future - fossil fuels. Energy will be more affordable, it will never expire, our world will be a far cleaner and quieter place. ENFORCE OCEAN REGENERATION Diversity in the oceans is essential in the battle against elevated carbon levels in the atmosphere, as well as being an important source of food. As we close off areas and make them unavailable for fishing, these areas will bloom again and be healthy enough to spill over into areas available for fishing. The no-fish zones will pass on their wealth, and the reefs can also recover. If we do this globally over one third of the oceans, we could restore fish supplies forever.

for farming, we need to reforest and improve biodiversity, redeveloping the wild and ecosystems. Deforestation MUST stop. Oil palm and soya must only be grown on land which was cleared many many years ago. Take a look at how Costa Rica managed to reforest itself by replanting native trees through government grants, making the rainforests cover half of the country once again. This will aid with reducing carbon levels in the atmosphere. BOTTOM LINE - Nature is our friend, we need to follow its path and instinctive plan, one species only thrives when in balance with the rest of the world. We must embrace this, recreate that balance and take care of nature so it can take care of us. Let’s teach our children that we need to become a part of nature once again so that we can secure our place, and their future, on this incredible planet.

e’re living in a crazy world right now with lots of uncertainty. For many of us our daily routines as we knew them are gone - our interactions, our commutes, our work and social structures. As humans we’re hardwired for certainty (even if it’s only perceived) and routine, so it’s no surprise that many people are struggling mentally, emotionally and physically as a result. Once we start to lose our sense of order over one or more aspects of our lives, it can be really easy to let everything else start to slide. What follows is that motivation dips, we loose our connection to our sense of purpose, indulge in sabotaging behaviours - even fall into anxiety and depression. One way we can help ourselves is to take control over the aspects of our lives that we can influence - in particular, our health and wellness, because there are strong scientific links between exercise

and reducing stress. In fact exercise has been called nature’s anti-depressant. When we give ourselves the perception that we’re establishing some sort of control and routine, it soothes our subconscious and reduces our alarm state. We thrive in the familiar, so setting up routines works on a deep neurological level. If we let things drift, we slide into unhealthy habits and get locked in a vicious cycle - believing that we have no capability of reinstating direction or purpose in our lives. This lack of responsibility leads to demotivation, poor outcomes and eventually, a decrease in self confidence and self belief. So, what are practical tips for building healthy routines into our lives to reestablish our sense of purpose and boost positivity and health?

WELLNESS ESCAPADE By Sabrina Raven

5-star beach resort Puente Romano Beach Resort does leisure properly, hence why it’s status as the luxurious landmark of Marbella’s Golden Mile remains unfaltering. Most recently, July saw the opening of a new state-of-the-art-gym and the launch of an impressive 53ft sailing boat. Included in its repertoire one can find 15 different restaurants, heated swimming pools, tennis courts, botanical gardens, and an alluring Six-Senses Spa: leaving almost no need to venture out of the hotel at all. I was invited to spend a weekend exploring the health & fitness activities the hotel has to offer, followed by meals at some of Marbella’s finest restaurants all located on the resort or at sister hotel Marbella Club. With international travel so uncertain, Puente Romano proves to be a top destination for those craving a stay-cation to escape their usual routine. The biggest takeaway I got from the weekend is that there is something on offer for everyone.

The Ultimate Health & Fitness Itinerary Day 1 Blessed with fine October weather, we set sail on Puente Romano’s new eco-friendly boat. Fully-crewed with attentive staff who are more than happy to show passengers the ropes, the boat gives for a unique way to see Marbella and Puerto Banus. Aside from taking in the view, passengers can enjoy a whole host of activities such us water-sports and paddle boarding. Just when the experience couldn’t get any more idyllic, a pod of dolphins circle the boat. The crew told us they had seen a lot more wildlife in the waters this year compared to others due to reduced shipping activity. The boat itself is ecologically clean protecting seas at a time when the environment is so close to breaking point. Only for hotel guests, the full sailing boat experience with food on board is available in four or eight-hour packages. Later that evening, we enjoyed a meal at BiBo restaurant by Michelin star chef Dani García. Considered his most ‘alive’ cuisine, the menu is influenced by García’s hometown of Andalusia with mouth-watering dishes such as ink croquetas and cherry gazpacho.

Day 2 The day kicked-off with a Martial Arts lesson from gym manager and former Kung Fu champion, Mario Simón García. A master at what he does, Mario spent two years training in China and one in Taiwan. Guests can learn from his expertise with one-on-one Judo, Kung Fu, Kickboxing and Muay Thai classes, as well as personal training. The class was followed by a session at the gym, highly advanced it offers biomechanical analysis using biomarkers. There’s also a spin studio with virtual routes, a cardio and strengthening area equipped with the latest Technogym technology, a boxing area, and a restorative room for barre, yoga and aerial yoga, Pilates, Qigong and Tai Chi. Clearly, the possibilities to move your body and find balance at Puente Romano are endless. Next on the agenda was a lesson at their world-famous tennis courts, this was

given by head coach Juanjo Nieto. My skills were nowhere near up to match with tennis stars like Novak Djokovic who had once played on the same courts, nor did that matter as Juanjo had that special talent only the best teachers have to make every single hit feel like a huge accomplishment. For dinner, we were treated to a healthy tasting menu curated by Chef Eleni Manousou – the first female Executive Chef to work under Nobu Matsuhisa. Mostly vegan or pescatarian dishes,

we enjoyed baby corn in a truffle butter sauce, truffle spinach salad, a green salad with goma dressing and crispy shitake for starters. For mains, we devoured a dish called ‘Vegan Garden’, followed by tempura mushroom, a selection of sushi and Chilean seabass. Dessert proved to be one of the most impressive dishes of them all, mixed berries toban with raspberry wasabi sorbet. I’m already planning my next trip back to Nobu and fully intend to order the same food.

Day 3 No Marbella fitness itinerary would be complete without a hike up La Concha. We were up and out the reception doors at 8.30 fuelling up on Celicioso protein balls. Our guide was a man named Leo from Vive Aventura (viveaventura.es), he took us up the most scenic route whilst sharing his knowledge of local wildlife, along with stories about the mountain itself. By 11.05 we had made it to the top, filled with a strong sense of achievement, we enjoyed spectacular views of the coast. In order to unwind, I previewed a new CBD oil treatment in partnership with Dr Ed at the hotel’s Six Senses Spa. This therapy is designed to relieve achy muscles, sore joints or any other chronic pain. Furthermore, the benefits go beyond the physical as it is known to treat stress, anxiousness and sleepless nights. After the treatment, it outlook where nutrition, spa, fitness and wellbeing take a front seat. Even seemed as though both my mind and body were in a the cocktails at the Summer Bar are healthy. What a hilarious day! Having been invited to be Ambassador for IJet private Jet Charter I was asked to produce a promotional video for their firm to be used in their marketing campaign. To be efficient, we decided to join forces and create the filming in the style of our ‘Agents of Luxury’ videos, enabling us to combine both and create season III. I am not sure if you have watched the previous two, but as always, it is our tongue-in-cheek corporate marketing style which was originally started to stray away from the standard slick imaging used and add a smile to potential clients’ faces. The day started in the office with full blown make-up done by my professional make-up artist, Wiktoria including false bamby-eyelashes. Off the three of us, Josephine, Laura and I, went in the direction of the private VIP airport lounge at Málaga airport with a selection of the mandatory stiletto heels, black outfits and MI5 sunglasses.

Arriving at the tucked away private lounges, we were instantly met by welcoming staff inviting us into the small elegant sections and offering us an abundance of refreshments to make us feel pampered. Going through security was a doddle with a kind officer guiding Boxy and his “girls”. The process took a mere 2 minutes before being led to a Mercedes car taking us to the private plane. Here the filming began. Well, I must admit the toughest part was trying to elegantly carry a Chanel handbag and an overweight dog up the steps to the jet, but I managed with a bit of creative editing! The hardest part of the day was persuading Boxy that his day of private jet travel was over and it was time to go home! Do you think you’d like to live in a house surrounded by a high wall? Of course not, because that would spoil the views. But what if you don’t have any views? 70

Sometimes the most brilliant ideas are the simplest, and the brilliance of this idea is designing the views as an integral part of the villa, capable of being located on any plot that may not actually have any decent views to begin with. Add to that the concept of inside/ out living – which blurs the line between the gardens and the house itself – and you have a formula that is quite unique. Welcome to the Garden Villa!

We spoke to Jason Harris, CEO and Creative Director of UDesign, about where the idea for his latest masterpiece, the Garden Villa, came from, and what exactly it is. “The inspiration for the Garden Villa concept comes from my conviction that there must be a solution to the problem of designing a house without good exterior views. Most people

simply do not have the kind of views from a luxury dwelling that only a great deal of money can buy: uninterrupted views of the sea, the mountains, spacious golf courses and what have you. Most people are overlooked by neighbours, or have partial views that are, in the end, unsatisfactory. This raises privacy issues, and so it occurred to me, why not come up

with a design concept that solves this problem by internalising the view, so to speak. A house or villa that you can build anywhere, whatever the view. In the suburbs of a town or city, or bang in the centre of town, if a plot is available. It shouldn’t matter where the house is: if properly designed according to this concept, the house will have its own views.”

Concept apart, we’re left with a villa that, even without its own views, would be a masterpiece of contemporary architecture. The pictures do not do it justice, for two reasons. The first is the difficulty most of us would have in looking behind the muted, minimalist façade of the main entrance and imagining the wild and joyful exuberance of the interior. The best chocolates always come in a muted and elegant box.

The second difficulty we have is making sense of the interior by simply looking at the pictures. What we see is a huge compendium of architectural and interior design, seemingly incapable of being contained within a relatively small space. The villa is not that small, at 500 square metres, but it is certainly a lot smaller than it appears in the photographs, and as Jason points out, it could be much smaller, if required. Architects love to speak of space, and how great architecture, taking full and creative advantage of the spaces available, can make a smaller space look big, and this is a classic example. “The interior architecture and design has a distinctive Japanese flavour to it, almost Zen-like. Nature is our drawing board. Trees, flowers, plants, rocks, sand and architectural elements, all using nature as the vital ingredient, all designed with precision and attention to detail, all put together in many different ways with absolute respect for nature. We used lighting, furniture, fittings and some elements that may seem playful, such as the giant stainless steel spheres in the pool or the

water feature as projector, but they all form an integral part of the whole. They all have a purpose. The result is what you see: a beautiful villa with wonderful views on a plot that might not necessarily have any.” The design of the main building is fairly simple, despite initial appearances. The flat roof is a garden with moss and flowers, the master bedroom occupying the top floor. On the ground floor are the open-plan living/dining/kitchen areas, along with bathrooms and open central courtyard, while the two other bedrooms are situated behind the large paintings on each side of the central patio. Fairly simple, but deceptively so, nevertheless, because the concept of living in this villa goes way beyond what would be considered normal.

“It took over two months to design this concept, because of the detail involved, and because we allowed ideas to evolve and extend in many different directions. The living, eating and cooking areas are all very impressive in different ways, with the same contrast of surface area – the softness of some natural materials against the hardness of others – as we have on the outside. I really enjoyed working on it.” And it shows. The now standard exquisite and creative interior design and decoration from this design studio, the perfect symmetry in some areas against the asymmetrical beauty of other areas, minimalism used to maximum effect, with splashes of colour accentuating the overall soothing blend of shape and colour that spells absolute comfort and liveability.

When it rains, you not only see and hear the rain, but experience it, but you don’t get wet: the floor tiles slope imperceptibly towards the centre. In the rain, it’s part of the garden. When the sun shines, it’s part of the house... Warm weather residents are often night hawks, and this villa takes on a whole new personality when night falls. The various architectural features such as the pool, the interactive wall with recessed seating, the pagoda and so on, are illuminated to a standard expected in such a luxury villa, but given the importance of nature in the design, both in the outside gardens and the interior patio, every part of the enclosed plot has been illuminated. The red maple tree and other plants, trees and rocks, are picked out by hidden lighting, and the exterior walls, made from large tiles to give a black lava effect, help to merge the gardens into the night sky and create the effect of even greater distance and space.

This interactive white wall has herbs growing out from it, making a vertical kitchen herb garden, but the really great idea here is the eating alcoves set into the wall with a pair of tables with two chairs. The stainless steel balls in the pool are fountains positioned on underwater platforms that you can rest on. Underwater LED lighting defines the outlines of the pool.

A MASTER OF

HIS CRAFT Carpentry is an ancient practice dating all the way back to the Egyptians, Romans and Greeks. It’s a craft that takes years to develop through persistence and hard work, something Christopher Rea has mastered over the years. Despite the inspiring work he has already done, this is just the beginning for Chris, along with business partner and wife, Brit. A carpenter with vision, each time the aim is to take a slab of wood and turn it into a unique piece of art in the most sustainable way possible.

For many tradesmen, passion for a particular craft is something that is inherited. Similarly, carpentry runs in Chris’ blood; it all started in Belfast where he grew up, his grandfather built his very own workshop in the back garden where he traded from. From a young age, Chris would spend time there watching his grandad work, then at age 16 he took the decision to follow in the same footsteps to learn

the trade and hasn’t looked back since. In 2011 Chris made the move to the South of Spain, and with the help of his other grandfather, who had lent out his garage to use as a workshop, he had his own business by 2014. Having quickly outgrown the garage, the magic now happens at a large

warehouse in Fuengirola where all the machinery and wood is stored. As the business grows, so does the team, Brit plays a significant role in growing the company and helping out with administrative tasks. Together they have a gorgeous toddler who perhaps one day he’ll also take part in the family business…

Christopher Rea’s trademark is probably the incorporation of Epoxy resin into custom builds, making for one-of-a-kind pieces. Chris provides all forms of household carpentry services, such as coffee or dining tables, walk in wardrobes, bespoke furniture – you name it!

Sustainability is a core value in the company, this is one of the reasons Chris imports from where he does, for every tree cut down twelve are planted. Furthermore, making live edge tables and bar tops means there is a lot less wastage since there is no need to cut much wood off. It’s clear, the vision is never to go for a quick fix, instead it’s to create something long-lasting with minimal damage to the environment.

Reminiscent of true artisanship, Chris’ work can be characterised by having a hands-on approach to create the finest bespoke pieces. He is able to give clients an expert opinion on what type of wood and design will work best for the project they have in mind. Each piece he creates is unique, whether it be a coffee table or a walk-in wardrobe, it’s always different and made especially with the clients need and desires in mind. ‘My true passion is creating something bespoke from scratch and bringing out the real beauty of natural wood’, Chris told us.

In order to get to where he is now, Chris went through a careful selection process to acquire the best materials to work with. To create his pieces, Chris imports hardwood from Europe available for other carpenters or anyone else interested to buy. Before arriving at a perfect product from Northern Italy, Chris had tried and tested different woods from all over Spain and found the product didn’t always meet his standards. The quality wasn’t quite what he was looking for. He decided to take matters into his own hands and do some proper research, travelling wood mills across Europe until he finally found what he was looking for.

As the next logs are prepared to be cut and shipped over for Italy, we can’t help but think what the future holds for Christopher Rea. These are exciting times as the team plan to launch an online shop selling special pieces, such as personalised chopping boards and stunning dining tables. CLUTTER-SNIPE By Ian Greenland

W

hilst redecorating our place last week, I enlisted my partner Gemma to help me drag our monolithic corner sofa away from the lounge wall and in doing so inadvertently discovered masses of built-in storage space, accessible by lightly lifting a hinge-sprung base. You can literally do it with one finger. For nearly five years it’s sat there and we’ve sat there and often slept there and occasionally got spontaneously jiggy there - Quite recently soundtracked by a sudden roar of approval and loud round of applause just as things drew to an... errr... logical conclusion. Gemma’s face shone pure terror as she desperately snatched at bed covers that weren’t there, irrationally panicking the entire street was somehow copping a look in through our first floor window. As her terror quickly turned to relief, my own initial surprise turned to disappointment - it was a Thursday at 8pm during lockdown... the neighbours weren’t cheering me on, just the bloody NHS! :-( Digressions aside, there’s literally a wardrobe’s worth of storage space in our giant sofa I knew nothing about. I’ve spent the last half-a-decade traipsing up and down to the loft on a rickety ladder, laden with life’s paraphernalia at least twice a week in an effort to keep us from drowning in clutter. If

you think that sounds melodramatic, spend a day with my (ANY) four year old and you’ll know how much time you lose just picking shit up and moving it somewhere it’s slightly less likely to be stepped on. To kids, the floor is just a canvas and every one of them thinks they’re Jackson Pollock. We’ve just bought him Lego – what the fuck were we thinking?! Humans have wholeheartedly subscribed to the religion of consumerism. While the planet’s buckling with the strain of the resources we’re pulling out of it, the existential itch we’ve convinced ourselves is there continues to work its way towards our pockets. Shopping is one of many ways we seek pleasure and self-validation. Society’s geared towards encouraging this. The result? – we got a whole lotta stuff!

AMERICANS SPEND MORE EACH YEAR ON WATCHES, JEWELLERY AND SHOES THAN HIGHER EDUCATION...


AROUND $1.2 TRILLION ANNUALLY SPENT ON NONESSENTIAL GOODS. Holding America up as the poster-child for modern dysfunction as we so often do, author and proponent for minimalist living Joshua Becker has compiled these startling statistics:

IN GOING THROUGH OUR POSSESSIONS AND RELEGATING WHAT WE RECOGNISE WE DON’T NEED, WE CAN ALSO GAIN A CLEARER PICTURE OF WHAT WE DO

The average American home is nearly three times the size of its 1960s counterpart and contains some 300,000 items (Many of them presumably edible or semi-automatic). A quarter of people with two-car garages don’t have enough room left sans-crap for even one car. Even so, more than 10% of Americans rent additional offsite storage. The fastest growing sector of the commercial real estate industry for several decades, the US has an estimated 60,000 self storage facilities. Americans spend more each year on watches, jewellery and shoes than higher education and the average American woman owns 30 outfits, in contrast to just nine in 1930. America contains approx 3% of the world’s kiddy population but consumes 40% of the world’s toys (makes it a bit easier for Santa’s rounds at least....) Americans spend around $1.2 TRILLION annually on nonessential goods.... then each spend approx two days per year searching for misplaced items such as car keys, phones and paperwork. In fairness, the original statistic estimates an average of 3680 hours / 153 days over “the course of a lifetime” rather than any given year so if two days annually sounds exaggerated, know that that average is heavily skewed by senior folks passing sizeable chunks of their twilight years hunting for their glasses (I know it keeps my dad busy) Young people don’t lose their car keys because they don’t have cars. They don’’t misplace their phones because that would involve putting down their phones. They don’t have paperwork, because what even is paper?? - They’ve got phones!.... They still buy a lot of useless crap though. There now exists a multi-million dollar American industry built around paying professionals to come into your home and remove your possessions because you’re too lazy/weak-willed/ brainwashed/involved in a foot-long sub/gunfight, to do it yourself. Progress.

If this year’s reminded me of anything, it’s the absolute soul-enriching joy of the great outdoors... or any outdoors! The privilege to be able to access nature when society goes bonkers. The inner balance brought about by fresh air and open spaces and the paradoxical potential for claustrophobia of homeworking, home-schooling and collective quarantine. Personally, we’ve discovered so many green spaces practically on our doorstep we were previously oblivious to or simply took for granted before they became an essential buffer against stir craziness. We’ve been fortunate in the UK so much of the crisis has been accompanied by stunning weather but with the cold nights now drawing in and the R number back on the rise, we’re not the only ones feeling the walls closing in. And If we can’t expand the boundaries of our four walls, we should at least make sure there’s a bit less between them. Studies show experiences fulfil us more than the accumulation of items which eventually break, tarnish or get rendered obsolete by the whims of fashion, culture and technology. Whilst it’s definitely tougher to seek out new experiences during a global pandemic (wearing a hazmat suit to Aldi is an “experience” but not quite what we’re aiming for...), simply decluttering can be extremely cathartic, cost effective and ultimately fulfilling. Japanese author Marie Kondo’s “KonMari” method is simple and intuitive. Essentially, shed yourself of anything that doesn’t bring you joy today. We hang onto all sorts of things through attachment to the past and uncertainty or fear about the future. In going through our possessions and relegating what we recognise we don’t need, we can also gain a clearer picture of what we do; that which is important to us or truly enriches our lives. In that respect, this crazy year has been a real eye opener, For most of us it’s genuine human connection we crave, not the material possessions we constantly distract ourselves with. FOOD SOVEREIGNTY By Food Strategist at Greenpeace International Éric Darier. Recently the UN warned of disruption to food supplies and further loss of incomes and livelihoods – up to 1.6 billion workers affected in the formal economy alone. Food banks and community organisations are doing their best to help those in immediate need. But as the pandemic collides with inequality and climate emergency, it’s clear we need major changes in our approach to food and agriculture. The food system was broken long before coronavirus came along. The current crisis has exposed the fault-lines and renewed urgency to tackle root causes. This means asking hard questions and digging deeper for solutions.

Farmers in Kenya are effectively applying ecological farming practices that are increasing their ability to build resilience to and cope with climate change.

How is it that 30% of food is wasted globally and unhealthy food is fuelling obesity and diabetes, while 820 million people don’t have enough to eat? The industrial and commodity-based food system has failed to adequately feed many people in this world. This isn’t due to a lack of food but to the conditions of extreme inequality, and the wrong type of food being produced, traded or promoted by powerful corporate interests that control the food and agriculture sectors. COVID-19 has once again shown us just how risky it is to let corporations be in charge of feeding people.


OUR RIGHT TO FOOD We need a system that protects human rights, such as access to food and fair treatment and recognition for workers, and respects the ecological boundaries we depend on. It’s called food sovereignty , and we all — local and national governments, international agencies and cities — must support the shift towards a sustainable food system. CHANGING OUR FOOD SYSTEM An alternative vision is gaining momentum — of a more collaborative, socially just and ecological food system, where communities have control and power over how it’s shaped. As public money goes into economic recovery packages, some governments and organisations are pushing for systemic changes, so that communities can build back with greater resilience, better able to cope with future shocks. A resilient food system is an ecological food system, designed to help people and the environment rather than make profits for multinational corporations. It supports food justice - with “communities exercising their right to grow, sell, and eat healthy food” and acknowledging differences such as class, ethnicity, and gender in shaping solutions to meet their food needs. 1. Food is a common good. Food should be considered an essential common good, not just another commodity, with principles like food sovereignty a part of all crisis recovery packages. The transition to ecological food systems, away from industrial agriculture, is already happening in some parts of the planet — now it must be funded, amplified and mainstreamed. 2. All levels of government have a role. Countries and cities need to be proactive in making sure that people have access to food so no-one is left behind. For example, Victoria, Canada has assigned parks staff to start growing food for residents. Let’s encourage city networks, like Milan Urban Food Policy Pact , CityFood and C40, to make access to nutritious food better for all. 3. Food justice. Food insecurity is linked to inequality, not lack of production. It’s a question of justice. To ensure the right to healthy food for all, we

need to adopt social measures like universal basic income to help tackle poverty and redistribute wealth. 4. Essential workers are valued and compensated. To strengthen our capacity to cope with current and future shocks, we need to value all in the food industry as essential workers. People growing, producing, sharing, and distributing food should receive a decent income proportionate to their vital functions. Policies and rescue packages must invest in farmers, farm workers and other people who feed us, to enable a just transition to a more ecologically and socially resilient food system. Taxes, subsidies, and procurement policies must be redirected to achieve these goals. 5. We use our power to accelerate change. In addition to holding governments to account, the changes we make at household level can shift how society values food and those producing food for the better.

Here are practical actions we can take now as individual citizens for better food: • Reduce food waste and shift our diet towards more local ecological, in season, and mainly plant-based food • When preparing meals at home, use raw and fresh ingredients rather than purchasing convenient but packaging-heavy, highly-processed pre-made food. • Get our hands dirty and appreciate how difficult, but also rewarding, it is to grow food. There is already a vibrant urban agriculture movement which cities need to support more and help amplify further. • Connect more directly with local farmers and share with them the risks and rewards of growing food through community supported agriculture. Let’s make sure that any recovery plan also includes meaningful investment for such systems to make them even more mainstream. Let’s buy more food directly from farmers who are already transitioning to a better food system.

GLUTEN-FREE FLOUR ALTERNATIVES

Bettina, our resident foodie, offers her insider knowledge on plant based cuisine and takes us on a culinary journey as she travels the world in search of gastronomic inspiration

My journey to glutenfree cooking began the same way as my love for cooking with plantbased food – namely, as an experiment. And while my own particular road to better health came after a fair number of little dietary tweaks and changes, I’m pretty sure that giving up gluten was a game-changer when I realised I was intolerant to it.

Here are my top tips for success: I’ll be the first to admit that I had more than a couple of minor baking disasters when I first started out. Rookie mistake numero uno: trying to simply substitute like for like. Swapping exactly the same amount of, say, coconut flour for plain flour will lead to baked goods as dry as the Sahara! But with the knowledge of a few basic ‘rules’, and a little insight into which flour will best suit whatever you’re baking, you can safely go forth and conquer.

Mix things up

There isn’t a single flour that can fully replace wheat flour – and that means it’s a great idea to blend multiple types, rather than just one. Grain-free flours such as coconut or almond can taste bland and dry when they’re used alone. Instead, mix different flours and starches together to create a more rounded all-purpose.

Practice makes perfect

Don’t be afraid to experiment a bit! Try adapting your favourite old recipes to make them gluten-free. It may take several goes to figure out the right blend and balance of gluten-free flours.

If you’re making bread, always use a mix of gluten-free flours. Start with at least two, and you can even try as many as four. Ideally, each flour will cover an element of what wheat flour does, to hopefully deliver a balanced, rounded loaf.

So now you’ve got the basics sorted, without further ado, here are my top 9 picks for the best gluten-free flour alternatives: 1

ALMOND FLOUR (also known as almond meal)

Almond flour could well be the most widely-used gluten-free flour choice. It’s jam-packed with nutrients like magnesium, calcium, potassium, and manganese, and it’s also full of both dietary fiber and protein. Adding almond flour to cakes results in dense, chewy baked goods. That makes it spot on for creating those moist, chewy brownies loved by so many! It’s also a welcome surprise in some savoury dishes, being a fantastic substitute for breadcrumbs in things like cauliflower gratin or eggplant Parmigiana. To use it, mix a ratio of about twice as much almond flour with regular gluten-free all purpose (or your choice of alt-flour).

COCONUT FLOUR

Coconut flour is another good choice. It’s not my favourite, but it’s good in small amounts. That’s because it’s easy to get it wrong with this husky little minx! It’s highly absorbent and very porous, so a little goes a long way – and it’s often better mixed with another type of flour, or even in a multi-flour blend. On the plus side, it’s rich in dietary fiber and healthy fats, super- low in carbs and positively packed with nutrients.

BUCKWHEAT FLOUR

Contrary to the name, buckwheat is definitely not made of wheat! Instead it’s a protein-rich seed that comes from a plant similar to rhubarb. Buckwheat’s rich in fiber and antioxidants, as well as iron, magnesium, folate, zinc, and manganese – and it’s got a rich, earthy flavour and a moist texture that works well in breads and, of course, pancakes! You can make a direct 1:1 substitution of buckwheat flour for wheat flour – but it’s got quite a crumbly texture, so it’s a good idea to combine it with other gluten-free options. Try adding brown rice flour into the mix, to help round it out.

BROWN AND WHITE RICE FLOUR

Rice flour is one of my regular go-to’s. It binds well, tastes good and is easy to use. In terms of nutritional value, it’s pretty close to wheat flour, but just slightly higher in calories. Combined with other flours, rice flour adds really good nutritional balance to breads, and it creates an amazing crust for pizza.

OAT FLOUR

Oat flour adds weight and flavour to cookies and breads, resulting in a chewier, crumblier texture. Baking with oat flour will likely make your end product more moist (sometimes a little bit too moist)! So be careful how much you use. Oats are highly nutritious, being full of iron and magnesium, and their fiber also feeds your gut cells. Making your own is a cinch. Just pop them in a blender and grind 1 ¼ cups of organic rolled oats for every 1 cup of oat flour you need.

TAPIOCA FLOUR

Tapioca flour adds a nice crisp, chewy texture to baking. Because the cassava root has little sugar or fat, it’s great for healthy baking – and it’s also easily combined with cornstarch and soy flour. Tapioca flour is also a great thickener for everything from pies and gravies to puddings, dough and sauces, and it won’t change the flavour of the dish.

MILLET FLOUR

Millet comes from a small seeded grass that’s cultivated around the world. It’s known for being dense and highly nutritious, and it’s really good for your gut.

CHICKPEA FLOUR

Chickpea is my favourite flour of all! This nutritionally dense flour is made from ground-up chickpeas. It’s extremely rich in protein, fiber and essential nutrients. And with its nutty flavour and slightly grainy texture, it works really well in things like tortillas, crepes, and flatbreads. Just remember that it’s highly absorbent, and it can have a slightly sticky texture, so be mindful of the moisture content of your recipe. Chickpea flour is also great as a natural thickener in soups and curries, and even in some desserts and pastries. It also works really well as a binding agent. Try it in falafels instead of breadcrumbs – and for vegans it also works very well as an egg substitute.

As a flour, it’s nutty and grassy – and just like rice flour, it adds a great crisp texture, but with a slightly sweeter, almost cornlike flavour.

We were seated at an intimate table towards the back of the restaurant, for larger groups long tables are available in the centre which

Starters consisted of beef carpaccio, burrata with cherry tomatoes and basil, and fried chilli squid. These are dishes that many of us may have tasted before but are done with a slight twist at Supperclub: for example, instead of your usual parmesan and rocket combination, the carpaccio was topped with a medley of finely chopped tomatoes and herbs – delicious!

ucked away in the village of Puente Romano is the latest addition to their restaurant repertoire – Supperclub. This month, my partner and I were kindly invited to attend dinner at the venue. First opened in March, it is quite unlike any other dining experience within the vicinity. We left feeling energised, our stomach’s content and it absolutely made up for the lack of nightlife in recent months.

Confident that the night’s entertainment was in good hands, we ordered from their Mediterranean fusion menu, created by Liam Smith-Laing – Executive Chef, La Petite Maison. The kitchen is now overseen by Executive Chef Thomas Stork – also very good hands.

Feeling full, we relaxed further and enjoyed the entertainment. The place was buzzing with almost every table filled up, the atmosphere throughout the courtyard was energetic. Once the dancer made her way off the stage, I noticed a trio of street dancers prepare to get on. The music slightly changed again as the three got into position and started their routine. No moment is dull at Supperclub as the variation between performances help keep the evening exciting throughout.

Between dishes, the atmosphere slowly started to shift. The band left the stage as more up-tempo music filled the space. Supperclub is not just a restaurant, it is a one-of-a-kind dining experience with spectacular performances and an inhouse DJ. The next act was a fire-dancer who stole everyone’s attention, totally transfixed we barely noticed the waiter approach with a second aperitive. Again, it was something I have tried before but done differently – pisco-sour oysters. Next came the mains, King Crab’s leg au gratin with kimchi sauce, lamb cutlets with olive oil and smoked aubergine, and a potato gratin. All three dishes had that melt in your mouth feel, soft and tasty in their own way. We were not disappointed, other options on the menu include Seabass cooked in salt crust, Cod Provençal, parmesan gnocchi, Galician Entrecôte and free range Coquelet.

Choosing from the dessert menu was not easy as each option is as enticing as the last, we went big and opted for three all-time favourites: a warm chocolate mousse with vanilla ice cream that would satisfy even the strongest chocolate cravings, vanilla crème brûlée (something no menu would be complete without) and vanilla cheesecake that was sweet but equally light. Every last morsel was gone. The menu is reasonably priced and more accessible than most restaurants on the Golden Mile, especially considering guests are paying for entertainment too. Cocktails range between €14 €16, whereas the smallest starter costs €16. There is the opportunity to opt for something a little more extravagant for the first course, like the 125g of Iranian Beluga Imperial Caviar for €750. Mains start from €16 and all desserts are priced at €13,5. As last plates were being cleared throughout the restaurant, we spot other tables receive bottle service to enjoy with music from the resident DJ. This truly is the closest thing we can get to clubbing right now and it sure did feel good. The venue of course closes at 01:00 but if you head there at around 20:00 you can have a perfectly long night ahead of you if desired. It’s easy to see why this is a popular spot for groups every weekend, booking ahead is advisable.

As La Sala approaches its 10th anniversary this month, we thought it would be the perfect opportunity to have a chat with the man himself – Chairman Ian Radford. We talk about how things have been going at Sala Group, plans for the future and despite all the chaos this year how they have managed to stay open. Tough times are ahead but Ian remains optimistic for the future.

I guess this wasn’t what you had in mind for your 10th anniversary... We’ve had a great journey and it’s hard to believe 10 years have gone by. Earlier in the year we had planned to host some great acts and make it a special few days for our loyal customers, that will have to go on hold now. Instead of celebrating, we have some major challenges to overcome in order to protect the

business and all the great people we have working for us.

What has been your personal highlight of the last ten years? There have been so many special times in La Sala, but if I had to pick one it would be ‘An Evening With Ronan Keating’. He played an intimate set for around 80 guests in our live lounge, a very special night attended and in aid of The Eva Longoria Foundation… If I could add one more highlight, it would be the ‘La Sala in the Sky’ event.

Where do you see the immediate and long term future of marbella nightlife? Right now, everything lies in the hands of the politicians. It’s very hard to forecast business at this time, the situation changes daily with the implementation of new restrictions. All we can do is keep adjusting our rules and be creative with the cards we are dealt. Long term, I don’t really see our business model changing much, it works and people generally love the vibe we create at La Sala… I don’t see that changing. Our biggest challenge now is managing the finances of the business, create the most cost-

circumstances but normally around 70% of our customers are holidaymakers, which of course we lost this year. Luckily, La Sala by the Sea has been supported well by the locals. I believe this is thanks to the many special offers we put out this year in the restaurant, and of course the amazing Thai kitchen located there. As soon as the state of alarm ended on June 21st, one of the first things we did was take one of our Defender Jeeps to search for a mysterious waterfall in Marbella, on the way up to La Sierra de las Nieves.
