The beat goes on As we enter the home straight and see summer’s finishing line looming large in the ever decreasing distance, we reflect on the incredibly busy peak months enjoyed by most Marbella businesses. From hotels to supermarkets and all in between, the coast’s venues were full, as was our events agenda, with charity dinners, networking soirées and grand unveilings of the latest developments. September is usually when things start to quieten down, but after months of being ‘locked up’, it looks like Marbella isn’t ready to go back into hibernation just yet, there is still so much happening and long may this continue… Keeping us entertained throughout the month are the uber popular beach clubs like Max Beach, who have taken over our front cover. People come from all over the Costa del Sol for their illustrious weekend pool parties. The Caped Crusader By Katherine Brook
A
ntonio Banderas has it all; looks, charm, energy, charisma, drive. He’s loyal, caring, and funny without even realising it, but most of all, Banderas is a delight to watch on screen. It all started back in the early 80’s, when the Malaga-born actor moved from his family home, in Fuengirola, to Madrid, to study at the Spanish National Theatre. Until then, his dream was to be a professional football player, but an ankle injury when he was 14 brought it to a rather abrupt end.

Listen, I think movies serve many different purposes, from those movies that are frivolous and just an entertainment, to movies that just go to exploring the complexities of the human soul. Everything is valid if it’s done with honesty and dignity, and I actually do both of those types of movies in my career.

So, aged 19, with just a few pesetas in his pocket, Banderas embarked on his new adventure in Madrid. After five years of intense studying, he met young, ambitious movie director, Pedro Almodóvar. The Oscar-award winner offered him a role in his 1982 low-budget comedy, Labyrinth Of Passion. Under the direction of the Almodóvar, Banderas was able to grow as an actor, taking on challenging roles such as rapists, mental patients, gay Islamic terrorists, and a kidnaper. Over the next 10 years, he quickly became known as the one to watch, especially after his leading part in Almodóvar’s Tie Me Up! Tie Me Down!, which saw success in the US, rocketing the aspiring actor beyond Spanish borders.

By the 90’s Banderas was ready for something new and moved to Los Angeles, where he took on his first ever English-speaking part in The Mambo Kings. Although he spoke almost no English, Banderas was able to learn his lines phonetically and later took intensive English courses, which is what helped him land his role as Tom Hanks’s lover in Philadelphia (1993). The 61-year-old actor continued to create a name for himself, starring in a variety of hit movies. Many will remember Two Much, where he starred alongside Melanie Griffith, who he later married in 1996 (both Banderas and Griffith were already married to other partners when they met…), and shares daughter Stella with. His next truly monumental role was in The Mask of Zorro. Banderas captured our attention as he fought villains and swept Catherine Zeta-Jones off her feet. He had to train 10-hours a day with fight choreographer Bob Anderson perfecting his every move. His hard work paid off though, with Anderson saying he had ‘the best natural talent he’d ever worked with’. After playing some rather intense parts, Banderas’s more light-hearted roles in Spy Kids, Shrek and subsequently Puss in Boots, came as a delight to many. Even in the form of a cartoon cat in oversized boots this Spanish stud still melted hearts - which is probably why he ended up getting a film all of his own! But even as he climbed the ladder of fame, Banderas never forgot his roots. He and Almodóvar had formed a close relationship, a bond. Which is probably why Almodóvar chose the Spanish actor to play himself, in the critically-acclaimed Pain and Glory, in 2019. The film offers a window into Almodóvar’s troubled private life, and details a reunion with a lost love after several decades. Banderas said that he used his heart attack in 2017 to fuel his performance, drawing on the neardeath experience to encapsulate the emotion of his character. The actor won several awards for the role, including Cannes Film Festival, the Hollywood Film Awards, the New York Film Critics Circle, the Goyas, and the European Film Awards. He also received his first Oscar nomination, and his fifth Golden Globe nomination. With Spain holding such a huge place in his heart, Banderas had always dreamed of opening a theatre in the country. And in 2017, his dream finally became a reality. Banderas invested €2 million euros in the development of the old Alameda Theatre in Malaga, reopening it as Teatro del Soho in 2019, with a production of
the musical, A Chorus Line. The sell-out show ran until March 2020, but of course the theatre was forced to close due to the pandemic. Those who have spent the last year in the Costa del Sol, may have spotted the caped crusader in their local bar, restaurant or beach. Or maybe on stage at the Starlite festival, which he presents annually, every August. Well, you’ll be glad to know Banderas will soon become a true local once again, as last month he announced he’s selling his £2.95 million (3.4 m euros) British mansion in Surrey, which he lived in with girlfriend Nicole Kimpel, and moving back to Malaga. Who knows where Banderas may pop up next. As the doe-eyed Puss in Boots says: “My thirst for adventure will never be quenched!”.

Love for Sale is the second and final collaborative album between American singers Tony Bennett and Lady Gaga, following Cheek to Cheek in 2014. Due to be released on October 1, the album is a compilation of covers, including some true jazz classics by American composer Cole Porter, who the record is a tribute to.

The band first gained popularity with the release of their single ‘It’s Time’, followed by their award-winning debut album, Night Visions (2012), which resulted in the chart-topping singles ‘Radioactive’ and ‘Demons’. Mercury – Act 1 is the fifth album from American alt-rock band, expected to be released on September 3, and executively produced by legendary producer Rick Rubin. This album is divided into two parts.

hey’re back! Jennifer Lopez and Ben Afflict are officially dating again. It’s been almost 20 years since the love birds have been seen hand in hand but they’re now back together. Snaps of them on a recent holiday together show them draped over each other on a yacht, almost like no time has passed. Lopez and Afflict last dated in 2002 and were due to get married the following year but sadly there were no wedding bells for this couple. Instead, they went their separate ways, continuing their hunt for ‘the one’. Jennifer thought she’d found it in Latin Grammy winner Marc Anthony, who she shares her twins Esme and Max with, but they divorced seven years later. Ben tied the knot with actress Jennifer Garner, who he has three children with, but they too split up in 2018. At the speed these two move, maybe there will be wedding bells after all…

orld renowned singer, Rihanna, has just reached billionaire status, making her officially the world’s richest female musician. Forbes magazine recently estimated her fortune to be $1.7bn (£1.2bn), which is thanks to more than just her incredible music career. The Umbrella singer launched Fenty Beauty in 2017, (named after her real name Robyn Fenty), and in its first year achieved sales of $550m - far more than most other celebrity-endorsed makeup ranges. The company is now estimated to be worth $2.8bn. This, combined with her stakes in lingerie line Savage X Fenty and her 16-year music career, makes Rhianna the wealthiest female musician and second wealthiest female entertainer on the planet, after Oprah Winfrey, who’s sitting on a fortune estimated at $2.7bn.

his year’s I’m a Celebrity 2021 is still a few months away but rumours are already hotting up about who’s going to be on the show. A little different from the tropics contestants are used to, this year the team will be heading to Gwrych Castle in Wales once again amid the unpredictability of the pandemic. Apparently, the news of a few weeks in the usually rainy UK didn’t go down too well with contestants and one huge star has already dropped out. or the last 20 years Saturday night television has been dominated by the X Factor. Some performances had us glued to the telly, others had us pressing mute as fast as possible. But now, Simon Cowell has made the decision to axe the show and many believe this is due to the threat it could pose on contestants’ mental health. Apparently, producers were becoming increasingly confined in what they could and couldn’t air, over fear it could lead to trolling on social media. But in all honesty, it’s probably about time. The show’s gone downhill in recent years, with Cowell’s ‘Mr Nasty’ act getting softer and softer, and other judges following suit. It’s a no from us.

yson Fury and his wife Paris were left distraught after their newborn baby daughter, Athena, was rushed straight into intensive care following her birth. The professional boxer said she ‘died for three minutes before miracle hospital workers resuscitated her’. After a week of being hooked up to machines, little Athena is now said to be ‘doing fantastic’, and will hopefully be able to go home and join the rest of the family soon. Tyson and Paris already have five children, Venezuela, 11, Prince John James, 9, Prince Tyson Fury II, 4, Valencia Amber, 3, and Prince Adonis Amaziah, 2.

f you’ve been following the Britney Spears story, you’ll know she’s been battling for her father to step down as conservator for months, and finally, after filing for a petition, he has agreed to do so. The singer’s career has been in the hands of legal guardians since 2008, with her father overlooking both her financial affairs and personal estate. This year, the 39-year-old has been in a legal battle to remove her father from his role, saying he ‘abused’ his position. She even said she’s been ‘drugged, forced to perform against her will and prevented from having children’. If you haven’t seen the documentary, Framing Britney, it’s well worth a watch. A truly eye-opening story about her rise to fame and ‘abusive conservatorship’.

The 16th edition of the Marbella Film Festival opens its doors on the 8th of September, and we can assure you it won’t be lacking glamour. Apart from film screenings and networking opportunities, there are also various red carpet premieres lined up. The five-day event ends with the prestigious gala dinner and awards ceremony on the 12th, to be held at the H10 Andalucia Plaza hotel. In the past few years, students of the Marbella Film School have also been involved with the festival, including myself. Besides taking part in the behind-the-scenes organisational process, I’ve had the opportunity to do TV, radio and red carpet interviews as well. We all enjoyed meeting guests and filmmakers from all over the world and watching films that otherwise we may not have access to. The festival definitely provides the right atmosphere to make valuable connections.

WITH FESTIVAL DIRECTOR, MAC CHAKAVEH: l What made you start a film festival in Marbella?
Marbella is a lovely place, due to its versatile landscape, making it an ideal location for shooting films. We wanted to promote Marbella for making movies, and bring in high-net-worth individuals who would invest in the area. What better way to turn it into a filmmaking paradise than to bring in filmmakers from all over the world!
l You’ve met hundreds of filmmakers and actors over the years. Can you mention a few names that have attended the festival?
We have had the privilege of welcoming numerous film stars at MIFF in the past 15 years, such as William Shatner, Larry Lamb, Kris Marshall, Frances Barber, Craig Fairbrass, Steven Berkoff, Michelle Collins, and Timothy Spall. Every year we have a good number of film directors, producers, and actors from the UK and the USA, as well as other parts of the world.
l How do you think MIFF is different from other festivals?
Given that MIFF is not as huge as some other festivals, it has proved to be a far better place for networking and gatherings. Many of the indie filmmakers who visited over the years were able to find their investors here. While at massive festivals, many of these film industry professionals would get lost in the crowd, here we make sure that everybody is treated like a celebrity.
l What is your vision for the film industry in Marbella?

Our idea is to bring the film industry to Marbella and increase the number of films being made here every year. We are working with the Marbella Film School and the town hall, to bring all aspects of the industry together. We encourage more local talents and technicians to join us and have their work introduced abroad. Each year MIFF goes on a world tour, which includes attending the Cannes Film Festival as well as other important events in London.

The topic of mental health has never been more relevant than today. 18 months into a global pandemic which has seen vast numbers of lives lost, irredeemably altered or effectively put on hold, for many it’s been nothing short of devastating. For those of us privileged enough to have enough agency to do so, it’s led to a reevaluation of how we’re living and what’s most important.
According to the teaching of the ancient Greek philosopher Epicurus, ultimately life is about the pursuit of happiness. Through scientific research we now know happier people live longer on average and Epicurus made it to his 70s some 2000 years before we began regularly brushing our teeth, let alone shouting about your 5-a-day, so he must have been on to something. Then, in

to others has been scientifically proven to promote happiness even more productively than kindness to ourselves, at least in terms of our own sense of wellbeing. When we give to others, be it compassion, a gift or the benefit of our time and energy, we typically see a reduction in the stress hormone cortisol and an increase in the “love hormone” oxytocin, well documented in its ability to lower blood pressure and improve heart health. Depression and anxiety are curbed and life expectancy is increased and both recipients and benefactors of kindness report reduction in pain and even increases in strength and energy. Kindness is a super power. We all probably recognise we selfmedicate our own stressors by treating ourselves, whether that’s a bottle of wine, a trip to the nail salon or another soon to be forgotten gadget. But the science tells us our intuitions of what’s best for us are actually misplaced. Research shows our sense of wellbeing and happiness are more greatly enhanced when we turn the giving outwards, donating our time, money or kindness to others. We’re social primates and ultimately we need the warmth of connection, not immaculate nails. With so many of our fellow humans trying to keep their heads above water right now, there’s never been a better time to test that science. Another area the science proves our intuitions deceive us is in our interactions with others. Most of us avoid engaging with strangers, particularly in busy, urban settings. We perceive the risk of awkwardness as too great or overestimate the mental “start-up costs” of interactions with others. Nevertheless, we’re social primates and studies show that chatting to the Uber driver or, hang

Of course, some intuitions are well founded so perhaps avoid chatting to the dribbling guy on the night bus, but the lesson is that letting our walls down, despite our misgivings, generally benefits us. Of course there’s no better “wall” these days than the small one in your pocket (only occasionally...) which beeps every time it wants your attention. We’ve all unwittingly entered a potentially dangerous psychological experiment with the advent of the internet, particularly once it became mobile. Depression and anxiety have certainly skyrocketed in the last two decades, particularly in the young. We evolved relying on physical and vocal cues to engage with one another healthily – eye contact, facial expressions, body language. In short, “nuance”. Nuance is something sorely lacking as we use sad face emoticons to console mourning friends online or hurl abuse at “the other side” in tweets of 280 characters or less. It’s also hard to practise mindfulness or “be present” when your phone allows you to escape the bus or the train, the queue or even that boring dinner table. Experts worry at the unconscious strain on our concentration and attention spans. How can your partner’s office anecdote compete when you have the sum of
human knowledge / funny cat videos, facebook and of course porn at your fingertips? The mere presence of a phone, even unused, affects the mood of a room. An experiment with strangers sat together in a waiting area recorded on average 30% less mutual smiling when one was given a phone to merely hold. Research into family dynamics during group activities reveals the presence of phones, again even when unused, reduces feelings of connectedness and enjoyment for both adults and kids. Tech can be a wonderful tool for happiness – The isolation of a pandemic would certainly have been more keenly felt without social platforms such as Zoom, but ultimately real connectedness comes face to face. As powerfully demonstrated by a Harvard study which has been running since 1938, our relationships and how happy we are in them also play a crucial rule in our physical health and longevity. Beginning by tracking the health of 268 Harvard sophomores in 1938, but expanding to include hundreds of other participants of all demographics, a longitudinal data set exists which concludes those who reported the strongest social bonds, in romantic relationships as well as with friends and family, generally experience better health and longer lives. More than money or fame, it’s the close relationships in our lives which are shown to promote the most happiness, insulating us against life’s worst barbs and delaying mental and physical decline. Those close social bonds have been shown to be better predictors of long and happy lives than social class, intellect or even genes, so make time for those around you and you may find you get more time.

Ever since, she has gained a huge audience on several social media platforms, not just because of the popularity of her music but due to her extraordinary style in fashion - which certainly makes sure she stands out from the crowd.
Madison Beer is an uber talented artist, dancer and songwriter. She first shared her music on YouTube, posting videos of herself singing. But it wasn’t until Justin Bieber shared one of her videos on Twitter in 2013, that she gained national recognition. Soon after, Beer signed with a record label and began releasing her own music. Earlier this year, she released a cosmetic line with High School Musical star, Vanessa Hudgens, and it’s already proving a massive hit with the public.

Dating apps: online shopping for partners According to social researchers, online dating has produced some of the most profound and widespread changes to traditional courtship that have been seen in decades. It can bring out insecurities in many of us that we never knew existed, not to mention make us realise how shallow we are when we swipe left because of the type of shoes someone’s wearing... Online dating coach and founder of ProfileHelper.com, Eric Resnick, thinks we should look at online dating as more of a ‘video game’ than a viable way of making a real connection.
Resnick says to use it as ‘just another way to meet people’; if we give it any more power than that he says we’ll ‘burn out’. “If you are spending more than 20 minutes of your day on dating sites or apps, you are doing it wrong and you need to reassess your strategy.” - Is that 20 minutes per app or altogether..?
Whether selecting a life partner or a dinner location, having too many available options can be consuming and draining (maybe it’s time to cut down from three apps to one). This is something psychologist Barry Schwartz has taken a deep dive into in his book Paradox of Choice. He looks at why having an abundance of choices can increase the level of anxiety and depression...not to mention being a waste of time. He says: “At some point, choice no longer liberates but debilitates.” People place so much importance on planning the perfect date they often forget that a true connection doesn’t need a tight agenda of pre-drinks followed by a fun activity and a fancy dinner. If it’s meant to be, it will be. We need to stop putting so much pressure on ourselves - if we don’t it will drive us mad. Romance isn’t dead and the world of online dating has proven to be a hit with many, you just need to learn how to navigate it.
A new dating language It’s not as simple as asking someone for a drink and then riding off into the sunset anymore, partly because such chivalry died a long time ago, but also because actually having a conversation with someone new is clearly far too terrifying a prospect. Now, we hide behind dating profiles, sending messages like teenagers that have us giggling at the screen. And

just as we’re about to meet up, someone gets ghosted (the person you’re seeing blocks, deletes and erases all records that you ever spoke, with no explanation).

This new phenomenon is just one of the toxic dating behaviours that have emerged as a result of online dating. Here’s a few more:
SWIPING LEFT: Dismissing someone as a romantic opportunity in less than the time it takes to sneeze, judging only by the cover. COOKIE-JARRING: Keeping someone as a back-up in case it doesn’t work out with your current partner. Apparently, this is an insecurity that stems from the desire to feel safe and wanted. ORBITING: When somebody is not quite a part of your life but makes sure to keep themselves relevant to you by popping up on social media or text for example. BREADCRUMBING: Sending sporadic but noncommittal messages as a way of keeping a dating prospect on hold.

This month we’re going to dive into some good old research, because let’s face it, if the methodology you’re following to get fit, change your mindset, whatever, isn’t backed by solid research, you’re really just guessing. And why guess when there is so much great research out there? We’ve spent a lot of months (and years of accumulated knowledge and experience with thousands of clients) researching the best approach for our own and our clients’ physical training at midlife, and we’re always checking the latest studies.
No, I’m not talking about your waist, but your height. A new study by the University of Gothenburg found that women who shrink in height by more than an inch in their 50s are more than twice as likely to die of a stroke than someone that doesn’t lose any height. The study looked at 2500 women over 19 years, and found an average height loss of 0.8cm. A height loss of over 2cm was deemed to be a major reduction and incredibly women in this group were between 74-80% more likely to have died during the study follow up. Interestingly the biggest mortality risk factor was a stroke, followed by heart disease, and the researcher hypothesised that, “regular
physical activity may be beneficial not only in prevention of cardiovascular disease, but also in prevention of height loss.” Both men and women can experience shrinkage in midlife, and it’s mainly down to our changing hormones, and the physiological changes that result. We start to lose muscle mass, and our bone density decreases, at the same time we produce less collagen, meaning our ligaments and tendons are less elastic, so we lose flexibility. Combine all those and you have loss of strength, body shape, posture, flexibility and bone density, the result of which is shrinkage.
Start resistance training if you’re not already, and start stretching regularly, something like yoga is great for flexibility. Move your body more - a sedentary body means a weak core, get up and move around regularly and start going for long walks if you’re not doing any other exercise. Clean up your diet and get the right supplements - vitamin D plays a key role in our immune system, hormone production, and bone density, for women vitamin K is useful. If that alone isn’t a good enough reason to start resistance training (and no, that doesn’t necessarily mean the gym, you can work out at home with your bodyweight, resistance bands and simple, inexpensive bits of kit like dumbbells and kettlebells and get great results), another recent study has also shown great results for midlifers from resistance training.

Iowa State University looked at the health of 12000 mostly midlife adults and found that resistance training two to three times a week lowered obesity risk by 20 to 30 percent over two decades. If that resistance training time hit between one and two hours a week, the obesity risk reduction was 30 to 40 percent.
AT MIDLIFE ONE OF OUR GOLDEN RULES IS LESS IS MORE (DUE TO HORMONAL AND PHYSIOLOGICAL CHANGES WE NEED MORE RECOVERY), SO TWO HOURS OF RESISTANCE SPLIT OVER THREE TO FOUR SESSIONS A WEEK IS NOT ONLY DO-ABLE FROM A TIME PERSPECTIVE, BUT WILL GET YOU GREAT RESULTS. Let’s not forget that these figures are only looking at obesity, but if you’re resistance training regularly you’re going to have more lean muscle (so look better, and be stronger), have better bone density, and a higher metabolic rate (since muscle is highly metabolically active). The study also showed beneficial effects on reduction in cholesterol, inflammation, blood pressure and reduced risk of diabetes and heart disease. Of course, we not only want to be healthier, but we want to live longer, with a good quality of life. There are a couple of UK studies which looked at large cohort numbers over a couple of decades with the headline finding that those who’d reported regular strength training had their mortality risk reduced by around a third! Resistance training has also been linked to boosting the brain areas vulnerable to Alzheimers, can boost confidence, and reduce feelings of anxiety and depression. Of course, just doing resistance training, while great, isn’t the whole picture for optimising midlife (and beyond) health. We also need to work on our cardiovascular fitness, and combine our cardio and resistance in a way that optimises results and allows sufficient recovery. A final word… training is only part of the picture. At all stages of life but particularly midlife we need to also work on our:

This has been challenging for us as a team but even more so for those that need the tests. It has been difficult to always enact change as quickly as is required when a country goes from green to amber or amber to red. This leaves providers with challenges that leave customers feeling dissatisfied. The revelations around delayed results, misrepresented prices and lack of regulation have not helped those providers trying to give an excellent service to customers and contribute to the management of the pandemic.
DAM Health’s services have expanded and adapted incredibly well during the pandemic and into summer 2021 – what do you think are the key reasons for this success? The key has been the openness and willingness to take criticism when things haven’t gone right and then act on them with a team that are agile and committed to making the customer journey an excellent one. The need and willingness to respond in real time to fast changes in rules, and provide additional capacity to provide earlier and timely results has been the foundation of success.
What do you think the key changes are for people travelling in 2021? And especially for business travellers? Be prepared for testing, and check the rules and regulations regularly as they are constantly changing. While it’s best to plan as, this is not always possible, so ensure you use services that give you more guaranteed and safe turnarounds including same day rapid turnaround if needed. Also be prepared for changes from amber to red whilst out in a foreign location, as this may have implications for your return.

I
f you’ve had a loved one suffer from a stroke, you’ll know just how debilitating they can be. One minute your friend or family member is their bright, happy self, and the next, they’re struggling to speak, remember your name, and in some of the worst case scenarios, paralized. Unfortunately, strokes are becoming more common than we’d like to admit. According to Joaquín Gómez Canga-Argüelles, founder of Instituto Chárbel, in the next three years, one in every six Spaniards will suffer from a stroke.

Joaquín went to the clinic every day for 10 months until he recovered, and today he is fully functional and independent. This was his motivation for founding Instituto Chárbel. During the patient’s time at the clinic, Joaquín’s team will support both them and the family every step of the way. “The family is incredibly important in the recovery process,” said Joaquín. “In some cases, if the patient cannot speak, they may need to make decisions for them.” The new Malaga clinic is the only stroke and brain injury specific clinic in the area - a place of trust, a place of hope. The Mojo boys are back with their real estate top tips Starting a journey in the property market without the right support is like entering a maze with no plan. You’ll go around in circles, hitting multiple dead ends, and probably meet a few untrustworthy characters along the way who will point you in the wrong direction. Before you know it, you’ll be paying someone to airlift you out of the maze, €10,000 down and no further forward. Not very hot…
To help you navigate the property market, for the next few months, Per and Jacob, the charismatic duo behind The House of Mojo, will be sharing their tricks of the trade. From buying to selling, financing to lawyers, with years of experience in the real estate market, these boys really know what they’re talking about.
HOT INVEST NOW! Now’s the time to invest. Prices are low, people are willing to negotiate and this year the Property Transfer Tax (ITP) is offering a flat rate of 7% - that’s a up to a 3% saving. Taking out a 70% loan is also more attractive, with interest roughly under 2%. “It’s a smart time to invest,” Per tells me. “Take the low interest rate and use it to your advantage, it won’t be long before the market starts moving again and you’ve missed your chance.” Instead of finance your dream home 100% yourself, you reinvest the 70% mortgage with a much higher return then the 2% interest rate on your loan – And BOOM you are making money.

NOT HOT REGULATIONS There’s no regulation when it comes to how much someone can sell a property for. You can do your research, negotiate if you want to, but depending on how quick of a sale the seller wants, they may just wait two years until the right person comes along with more money than brains. It’s also not obligatory to have your house evaluated by the bank - though Per and Jacob will always recommend you do. “Why buy a house if you don’t know if you can even get a mortgage approved on it?,” says Per. It costs €500, so it’s understandable why some people may want to skip this step. And there’s so many agents on the Costa del Sol, sellers are bound to find one who’s happy to sell their house without it...
HOT VILLAS AND THE RIGHT NEW DEVELOPMENTS Villas are moving fast. Downtime during the pandemic meant a lot of people actually saved money, not to mention they’re more hungry for sun than ever before - especially the Brits, who have an 11% share of the total market, and the Nordics aren’t far behind. “Big windows, open plan living, large terraces, pools and sea views - that’s where the money is,” smiles Per. There’s over 200 new developments in the Costa del Sol at the moment and the boys put a lot of emphasis on how important finding the ‘right’ new development is. “Investing in property when it’s just a drawing and piece of land can be risky,” says Per, “but that’s when you’ll get the best deal.” As the development progresses, the prices will go up. Investing when developments are in stage one is one of the best things to do if you’re looking for capital appreciation, Per tells me - basically, are you buying with a view of selling in a few years? “It’s about making smart moves. And the right real estate agent will be able to help you make those moves with confidence,” says Per.

HOT FINDING THE RIGHT AGENT The Spanish market is hard to navigate, especially if you’re new to the area. How does a sustainable home help the environment? These days there is a lot of talk about “living sustainably” but what does it actually mean in practical terms? What does a sustainable home have that other homes don’t have? Article by Vivion O’Kelly. Images courtesy of BRIGHT.

hut The doors. Turn off the lights. Make sure the immersion heater is switched off. That was about it in days gone by, the full extent of our commitment to energy saving in the home, and we thought of these measures only when going on holidays. And as far as conservation and sustainability was concerned, we hardly thought about it at all. We knew little of passive home construction, and ecology was a word beloved of hippies, earth mothers and their kind. How times have changed. Not just because the price of heating, cooling and maintaining a home has gone up, but because we have all become more aware of the vital importance of conserving what’s left of our natural
environment. It may test personal commitment to see factories still spew out tonnes of dangerous substances into the air in many parts of the world, but we do what we can. And it starts in the home.
Every time a resident washes their hands or has a shower, they can be certain that water used is not being wasted.
In the case of Vista Lago Residences, it started on the drawing board. Right from the start, BRIGHT, the development company behind this unique and sustainable community of villas in the hills above Marbella, decided to go the full nine yards in ensuring that this project would be one of the most innovatively sustainable luxury developments in Southern Europe. They also wanted proof that they had done so, and this comes in the shape of BREEAM certification, which is a universally recognised badge of excellence in sustainability and conservation technology. This affects both the way Vista Lago villas are built and the functionality of their supporting systems.
For a start, sustainable homes need to be exceptionally well insulated, to a degree unusual in residential properties up to recent times. The thermal insulation of a Vista Lago building envelope has been thickened and thermal bridges have been reduced, to achieve a higher Spanish regulations rating for nonrenewable energy consumption and carbon emissions. An indoor ventilation system with both exhaust and intake heat recovery system is in place in all rooms, contributing to both indoor air quality and energy saving. Each villa will have an 8kW photovoltaic panel installation to contribute to the electrical consumption of the home, including the production of hot water. These will produce approximately 14000kWh per year. This is more than enough to cover the cooling and heating requirements of each villa,

Long before the architects sat at their drawing boards, the Vista Lago developers had taken a close look at the terrain in its natural state and determined that it would stay in this state as much as was humanly possible. Their aim was twofold: to reduce the visual impact of the buildings on the environment and to take advantage of their better adaptation to the Mediterranean climate. All Vista Lago homes will have Class A energy levels with regard to primary energy use and carbon dioxide emissions. Storage of rainwater and grey water will exceed 75 percent of toilet, irrigation and

washdown water use, with grey water and rainwater made suitable for irrigation re-use, a highly effective dual-flush systems in place, pressurised water-saving systems in the taps and a rainwater harvesting system capable of meeting 50 percent of irrigation demand. Every time a resident washes their hands or has a shower, they can be certain that water used is not being wasted. And when the rain falls, they can be sure the moisture sensors in the soil will detect the rain and adjust the automated irrigation accordingly. Climate control is an essential factor in comfortable living, and with heating and cooling systems that allow for independent adjustment of temperature settings for each of the main living areas, the temperature of the air in the
home does not have to rely fully on the excellent ventilation resulting from stateof-the-art architectural design, by which at least 80% of the working area in every kitchen, living room, lounge and study will benefit from direct daylight from the outside (quite apart from the numerous other measures taken to ensure savings in artificial light energy). While these homes have thus been designed to take full advantage of natural airflow, they also have an intelligent climate control system that optimises electricity consumption and includes monitoring of the system by mobile device or a thermostat. Add to this heat pumps and an aerothermal heat recovery system for both the HVAC system and the domestic hot water system, underfloor heating systems, photovoltaic panels and a renewable energy system to heat the swimming

pool, and one has, in very simple terms, a comfortable and care-free home. In short, the “excellence” level in BREEAM Sustainability Certification means following numerous and strict environmental guidelines, from the environmental footprint of the materials used throughout the home life cycle to the impact of the home, both inside and outside each villa, on the environment. There are no shortcuts to excellence. Attaining such a degree of environmental friendliness has been a long and arduous road, built up bit by bit over many decades by dedicated pioneers in the protection and conservation of the natural world. How far we are from full-percentage sustainability in home construction we do not yet know, but we can rest assured, in a Vista Lago villa, that we are closer to it than in almost any other part of the world. SAVE TIME When your home is not in order, it becomes easy to slide into the habit of tossing items in random places. While this might feel like a minor concern, the consequences are more significant than what they might at first seem. Rather than enjoying a cup of tea and a moment of quiet reflection at the breakfast table, you might instead find yourself frantically scrambling for the car keys, which can really affect the flow of energy throughout those first morning hours.

Coffee tables anchor the room and are the central points around which family and friends gather, therefore it’s an element that should be selected and accessorised with care. A coffee bar can be a fun, functional and beautiful space to have in your kitchen, particularly if you love to entertain. People always seem to gather in the kitchen, whether it’s family or friends. he name says it all, and speaks to different people in different ways, depending largely on age. But to everybody who knows it, the island of Ibiza speaks a kind of natural beauty found in few other places in the world. To design and build a luxury villa there, or anywhere else with a similar climate and natural beauty, is to compete with nature itself. If done at this level of excellence, it’s a win win for both the villa and its natural surroundings.
Look out from any part of the house and see a large body of water blending into the blue horizon… As in all UDesign homes, the views must be almost as good in any direction, inside the house or out. The overall design is thus as simple as possible while also being stylish, elegant, exciting and functional. A big ask, one might think, but years of experience in the field has resulted in a distinct UDesign style that is eminently suited to the Mediterranean climate. Clean cantilevered shapes,
broad areas of glass, natural materials, plenty of reflecting water just in front of the house and gardens designed to slip in unobtrusively with the landscape all around. “The pool feels like it’s wrapped around the villa,” says Jason Harris, Creative Director and CEO of UDesign. “You look out from any part of the house and see

this large body of water blending into the blue horizon, because it’s a true infinity pool. And it’s right up against the house, as part of the terraces, because that’s where it has to be, as all our pools are. There’s not much point in having to walk distance to a swimming pool, or to have to shout to people in the water from the terrace. Main terrace and pool have almost got to be a single entity.” Looking at the image of the exterior of the villa, one sees that the basement is situated directly under the pool. The still water reflects the front of the villa, while the lightly tinted glass wall to the right throws back an image of the view from the front, looking towards the sea. One can also see that one side of the pool is glassed, making a visual block of water that provides people sitting in or wandering around the firepit area with an underwater view of swimmers. Walking into the villa, one first sees a kind of “conversation lounge” located in the centre of the villa, from which one can look in all directions. “For this reason the chairs swivel, so that you can look around the house in any direction, or out to the sea or back to the entrance,” Jason tells us. “Traditional sofas would not do this. If you want good conversation, you need to create spaces to have it, and being able to swivel very comfortably and look at the view is an important part of this.” “The colour scheme is based on our philosophy of just enough and no more. Flanking the stairs is a large-format porcelain tile installation, while in front is what looks like a floating shelf but is in fact a glass-walled cabinet that does not block any light. One can see through to the three sculptural figures chatting in one corner of the room, reminding us that in this part of the world, people actually talk to each other all the time.
A nice touch is the high vertical wood pile seen on the left of the large central wall panel. The simple round Henge ceiling lights are just right for the space. On the other side of this open space is the kitchen/dining room area, with comfortable seating for ten people.
Again, as in most UDesign kitchens, one hardly recognises it as such. The view from the far end looks out through a wall of glass to the trees and the hills beyond, the basic layout having the kitchen island, complete with elegant transparent stools, running parallel to the dining table.

This was a race that saw its accomplishment cemented for posterity as the “Fastest Production Saloon” of its era by the Guinness Book of Records. IN THE NEW MILLENNIUM, BRABUS BEGAN ASSIGNING EVOCATIVE NAMES TO ITS V12-POWERED RECORD BREAKERS, AND THE HAND-BUILT, LIMITED EDITION BRABUS BULLIT AND ROCKET MODELS, BASED ON THE C-CLASS AND CLS PLATFORMS RESPECTIVELY, SOON BECAME LEGENDS IN THEIR OWN TIME.
With ever tightening emission laws curtailing the lifespan of the mighty M275 V12 bi-turbo motor, the baton has been passed to AMG’s M177 and M178 biturbo 4.0 litre V8. The inherent potential of this engine family has now been fully exploited to take the latest line of Brabus autobahn stormers to the next level. Almost exactly nine years after we drove the ridiculously fast Brabus Rocket 800 based on the second generation CLS, we are back in Germany to experience its spiritual successor.

Many owners of the previous generation CLS63 AMG were disappointed to learn that the third generation fourdoor coupe range tops out at the CLS 53 AMG. With the advent of the AMG GT4, another four-door coupe sharing the same engine would have been confusing for customers. And of course the stand-alone GT4 is able to command a price premium that no CLS or E-Classbased model could justify. The natural environment for the Brabus Rocket 900 is the unrestricted autobahn
where it can really stretch its legs. But that will have to wait for another day in more normal times. For today the COVID-19 pandemic and the need to be away from the general public meant that Brabus opted for the closed environment of the Racepark Meppen, about 150km from their Bottrop HQ. The significance of the engine specification data stands out like a beacon in the darkness. The new Brabus Rocket 900 boasts 100hp more from an engine with 2.0 litres less displacement and four fewer cylinders than its predecessor! Given that the Brabus Rocket 800 of 2011 had 6.5 litres under its carbon-fibre bonnet, this means that the 2020 car has 4.5 litres! “The spark of the idea for the Rocket 900 was born during a brainstorming session in February 2019,” explained Jörn Gander, Brabus’ newly appointed Head of Development. “However, we had already begun preliminary work on the

THE ENGINE IS UNQUESTIONABLY THE CORE AND THE LARGEST PART OF THIS CONVERSION, Jörn explained “The first major obstacle we encountered when we started work on the enlarged displacement engine in late 2018 was the cylinder bore finishing process. The cylinder bores of the standard 4.0 litre motor are reinforced by an arc spraying process called ‘Nanoslide’, which confers low friction and long term wear resistance. As this is applied to the engine block on a Heller MC20 machining centre set up for volume production, we could not use this for our very low volume, hand-built engines and so had to explore alternatives.” Jörn is a dyed-in-the-wool Porsche enthusiast, and was a technical team member for Patrick Dempsey’s Porsche Le Mans efforts in his spare time. He remembered the Nikasil cylinder bore coating that Porsche used to good effect for many years and contacted Mahle Motorsport in Fellbach. “Mahle were happy to help with a Nikasil coating for our 4.5 litre engine, so it was game on!” The standard M177 and M178 AMG biturbo V8 motor family displaces 3,982cc from a bore x stroke of 83.0 x 92mm. Brabus use their computer controlled 5-axis machine to modify the stock crankcases before dispatching them
to Mahle where the bores are Nikasil coated and honed to 83.75mm. Back at Brabus a set of motorsport grade low compression forged pistons is married to the bespoke steel billet crankshaft with tungsten in its counterbalance weights, by billet connecting-rods from Arrow in the UK. These pistons describe a stroke of 100mm for an under-square engine with a swept displacement of 4,407cc. In typical Mercedes tradition this is rounded up to 4.5 litres on paper. The flat-topped pistons achieve the lower compression ratio of 8.6:1 with a 28.5mm deck height when you measure the middle of the wrist pin to the top of the combustion chamber. In parenthesis the base 510hp C63 S motor with IHI turbochargers has a 10.5:1 c/r, while the more powerful 600+hp versions in the G63 and GT4 63 use larger Borg Warner turbos with an 8.8:1 c/r. The piston deck heights of these variants are 32.1mm and 29.1mm respectively. The lower compression ratio is required because the Brabus motor runs bigger turbochargers and higher boost. Multi-layer metal gaskets designed to cope with high boost pressures and temperatures seal the cylinder-heads to the block.
4.5 litre V8 bi-turbo engine project during the last quarter of 2018.” “We took the advanced study to the Board in June 2019, and the car was immediately given the ‘Rocket 2020’ moniker,” he continued. “In our minds the new Rocket had to justify its lineage and be a brutal, aggressive looking car along the lines of our Widestar SUVs.” The Rocket 900 is the first major model that Brabus has developed since Bodo Buschmann passed away in April 2018, and the reaction from the Board was interesting. Constantin who took over as CEO loved the car at first sight, while his sister Theresa thought it was too aggressive. The upshot of the meeting was a development mandate for the Rocket 2020 project, with work beginning in earnest in September with the arrival of the base car. The first step for the engineers was investigating the proposed wider tracks and new body components.

Engines of this power and heat output require more oil cooling and while Brabus usually modify the factory oil spray system this engine has a bespoke oil spray system for the underside of the pistons. “The biggest challenge here was the sheer lack of space,” says Gander. If you think the larger lungs of this more powerful Brabus motor need a lot more air fuel you would be right. It might come as surprise therefore to learn that the stock air intake, boxes and filters are well up to the job and did not need to be modified. In fact even the stock intercooler system was adequate. Downstream of the intake however, the turbochargers that sit between the Vee of the cylinder-heads came in for some serious reworking with larger compressor wheels in modified housings. The turbine wheel geometry is altered for greater efficiency, but as they are not any larger, their housings and the intake manifolds remain untouched. The bigger turbos and extra boost require feeding, and while the stock intake system can supply the oxygen the fuelling system required serious upgrading. The fuel system in a modern fuel-injected car has a low-pressure side, which is the feed from the tank, while the high-pressure side is made up of the engine-driven pumps that supply the fuel rails and injectors on the engine under very high pressure. If you have too much differential between the low- and high-pressure systems, you end up with lag when the driver demands full power. Thus Brabus installed an ECU-controlled booster pump in the tank and a pair of high-pressure fuel pumps in front to ensure a lag-free fuel supply under all load conditions. As this is the latest generation AMG designed to meet EU6 WLTM regulations, a particle filter is part of the factory exhaust system. This also mean that the days of 200-cell high-flow metal catalysts is over when tuning the latest cars. Thus, the Rocket 2020 uses a high-flow 400-cell catalyst system and a highperformance particulate filter to help reduce back-pressure. This feeds 75mm diameter downpipes into the Brabus valve control sports exhaust system that terminates in four 76mm exit pipes with carbon-fibre covers. This is the same system used on the Brabus 800 4.0 litre. With remapped engine and gearbox ECUs the bigger capacity motor makes a headline 900hp at 6,200rpm, with the 1,250Nm of torque at 2,900rpm shown on the dyno electronically limited to 1,000Nm to preserve the twin-clutch AMG gearbox. The Rocket 900 is not a light car, tipping the scales at an S-Class

heavy 2,120kg. But the earth moving grunt from this bombastic engine and 4WD helps it to defy physics with a supercar killing 2.8 sec 0-100km/h sprint followed by the 200km/h (124mph) and 300km/h (186mph) intervals falling in 9.7 sec and 23.9 sec respectively.
one is very significant as it is the first Brabus engine to feature Jörn Gander’s signature. Having been with Brabus practically from the start in 1977, Uli is retiring this year and Jörn, a Brabus veteran of 25 years, has earned the seat of development chief. The stance of the Rocket 900 is greatly toughened up by the pre-preg carbon-fibre front section and wings that boost the cars width by 7.8 cm in total. The body modifications to the rear are in metal with carbon-fibre add-ons for the doors and flanks with a big rear wing to reduce lift at speed.
“WE ELECTRONICALLY CAPPED TOP SPEED AT 330KM/H (205MPH) DUE TO THE SPEED AND WEIGHT LIMITATIONS OF THE TYRES,” explained Jörn Gander. “The tyres are speed limited to 340km/h, which we attained in testing, but Pirelli does not make these anymore so the existing supply out there will soon run out.” We asked Jörn what the car would do totally unfettered if the right tyres were available? “Our calculations say 365km/h (228mph),” he replied. Brabus has trained four of its engine builders to assemble this very special motor. We are used to seeing Uli Gaufre’s signature on Brabus engines, so this

ALL LIMITED EDITION BRABUS CARS HAVE BESPOKE INTERIORS AND THE ROCKET 900 IS NO EXCEPTION Trimmed in exquisite soft Brabus leather with Alcantara inserts on the seat squabs and bolsters, the grey Rocket 900 has light grey stitching and piping highlights against black leather. The black car that was also present at the launch event had red trim highlights and an Alcantara covered dashtop with red stitching. Just as the 5.5 litre AMG version of the old M113 V8 had a deeper, more purposeful voice than the 5.0 litre M113 Mercedes engine the Brabus 4.5 litre motor has a more basso profondo singing voice that you notice from start-up to shut-down. If you have driven the stock AMG GT4 or even the Brabus 800, which retains the factory 4.0 litre displacement you will immediately notice it at idle, and when you pull away. Yet that thought does not linger long because the car lives up to its name and overloads your senses by rocketing away with a relentless wave of torque hit that keeps you pinned into your plush sports seat. Thanks to the 4WD system there are no wheelspin histrionics in sight, just a mighty shove towards the first corner. As with the standard GT4 you have to respect the cars weight, and the slow in, fast out method works best. Better still if you settle the nose by trail braking to rotate the nose into the corner, use the 4WD grip to balance the car and then go into the throttle progressively past the apex. The big hit of torque seems to neutralise the 2.1 tonnes of GT4 with a mighty V8 growl as you are hurled down the straight bit towards the next corner. This is when the massive 402 x 39mm and 360 x 32mm vented carbon-ceramic discs do their best work at slowing the charge of this wheeled bull elephant.
Aiming such a big, heavy car into the curves of this small circuit made it feel like a racehorse locked in a small pasture. Thus we barely scratched the surface of the cars capabilities at the real task it was designed for - blitzing the autobahn in supreme comfort. While only six each were made of the first two generation Rockets, this time there will be ten on offer with a price tag of a mere 435,000 euros plus tax a copy, and a build time of three months. Significantly larger than the previous CLS-based Rocket 800 in cabin and luggage room and with less weight in its nose, the excellence of the basic allwheel-drive AMG GT4 package makes this new 900

A NIGHT TO REMEMBER For the last nine years, Puente Romano has partnered one of the world’s largest international children’s charities, World Vision, to raise money to help children, families and their communities overcome poverty and injustice. This year’s World Vision Gala took place at the famous Sea Grill restaurant, on August 12th. It was a sellout event, with a delicious three course menu and performances from an array of musicians including Gypsies, Mr Maph, and Justin Bieber tribute act, Trevis, who certainly got the crowd up on their feet! During the evening, artists, fashion designers and jewellers auctioned off some stunning pieces with some raising over €8,000. All proceeds will go towards the economic empowerment of children across Uganda.

But artist Debbie Wingham has taken a deeper dive into what it really means, in her latest exhibition at the Kempinski Hotel Bahía, Estepona. Best known as the ‘Queen of the World’s Most Expensive’, Wingham used her downtime during the pandemic to get creative, painting celebrities who had suffered with mental wellbeing or learning difficulties- from Jane Fonda to Nicky Minaj. I
n 2017 the New York Times reported on a $22 million allocation of funds by the Department of Defense for a program known as the Advanced Aerospace Threat Identification Program. Designed to examine military encounters with UAPs (unidentified aerial phenomena), this being the DoD and that word “Threat” being present, we’re talking about money spent ensuring they detect, understand and neutralise danger from extraterrestrials before it gets to the stage where Will Smith is called upon to punch one in the face. Scary stuff, though $22 million is a relatively trifling amount, especially stateside - at home, Boris spaffed more than 2000 times that on a failed Test and Trace system (presumably Richard Blackwood was unavailable to simply lamp Covid in the chops... though I can’t imagine he was too busy??) Despite the sensationalist implications of the NYT’s reveal, even in a country where more tin foil is expended on hats than sandwiches, the story caused little stir, failing to make a splash in the turbulent waters of Trump’s first year. In the daily news cycle, little green men from other planets were simply no match for an orange one with little hands who merely behaved as such. Four years later, the media once more latched onto the story in unison as June saw a Pentagon report released confirming government investigations into several military-observed UAPs proved “inconclusive”. Nevertheless, the scientific community’s phones rang off the hook as perennially fringe concerns were temporarily mainstreamed. Might it once again be time to seriously ask ourselves whether we are truly alone in the universe? Like, more than two metre levels of separation alone!

Fermi’s paradox is the seeming contradiction between the lack of real evidence extraterrestrials exist and the implicit likeliness they do, given the known vastness of the universe. At the end of a long lunch date with fellow physicists Edward Teller, Emil Konopinski and Herbert York in the 50s, during which they discussed UFO reports and the probability of light-speed travel, Enrico Fermi is credited as asking, “But where is everybody?”. Whilst he may well have been talking about some people’s propensity to disappear to the toilet when the bill’s due, the somewhat grander interpretation that he was ruminating on the confounding absence of interstellar visitors is what he’s now famous for. On Earth (4.5 billion years old) we went from early organic molecules to selfreplicating life in 100-200 million years. Not long later, that self replicating life had evolved to ride electric scooters, wield selfie sticks and build nuclear bombs. In a cosmic blink of an eye, this particular planet’s (apparently) intelligent life has already achieved a level of technological advancement at least adequate enough to end its own existence. Given there are at least 100 billion planets orbiting starts in our galaxy (the Milky Way) and at least 200 BILLION other galaxies out there, even conservative scientific calculations place the likelihood of “intelligent” life occurring elsewhere in the essentially certain camp.
Of course, our own perceived intelligence is a quirk of fate as opposed to an inevitable consequence or evolutionary requirement of life on Earth. If the meteorite which wiped out the dinos 65 million years ago hadn’t prised open an evolutionary niche for the small rodents science now knows we’re descended from, today we’d still be scurrying around beneath the feet of gigantic reptiles with small brains, nary a selfie stick in sight. Whilst our own journey towards sentience and technological mastery was undoubtedly dependent on a fluke, when you think of the universe in similar terms as the infinite monkey theorem, its mind-boggling vastness running trillions upon trillions of simultaneous experiments in the formation or otherwise of life, it’s totally rational to assume the emergence of countless civilizations at myriad levels of sophistication. Assuming just one of these developed interstellar capabilities, travelling at even 1/10th the speed of light, replicating and diverging at each planetary stop, they could traverse and theoretically colonise the entire galaxy in just tens of millions of years. Still sounds a lot? Factored into the 13.6 billion year age of the Milky Way and that infinite monkey theorem, it’s nothing. Which brings us back to the question, “Where is everybody?” Why is our best record of UAPs grainy, underwhelming, military footage of erratically moving dots when three billion smartphones are in nearconstant operation around the world, just itching to create the next viral video sensation? Imagine the likes you’d get for a selfie with E.T.
Perhaps we have been deemed unworthy of engagement. The answer may be an extraterrestrial slap in the face for a species that’s already been facepalming pretty hard of late - Perhaps we’ve been deemed unworthy of engagement. Comparing the DNA of a human and a chimp, it’s 99% identical, yet that 1% difference has us flying in planes and writing articles on our laptops whilst they throw faeces at each other and wank in tyres at London Zoo. We might think that gulf in behaviour and intellect is huge, but it’s been manifested in a cosmic
minute. Extrapolate that forcing vector for intelligence to a complex life form which got a billion year head start on us and it’s easy to assume they’d laugh at notions we consider complex or human milestones we laud in our hubris. Viewed through the eyes (if that’s what they use) of greater intelligences, our best efforts at civilization might be akin to ants scurrying back and forth with bits of leaves. Presented to our cosmic elders as evidence of our achievements, 5G, microprocessors and The Large Hadron Collider wouldn’t even make the fridge. God knows what they’d make of Brexit...

HOW SHOULD I BE STORING THAT? Bettina, our resident foodie, offers her insider knowledge on plant based cuisine and takes us on a culinary journey as she travels the world in search of gastronomic inspiration.
Ever wondered why certain products are stored in certain areas of a supermarket compared to where you store them at home? If you have ever questioned where to store a certain product – you are not alone, and a lot of people, chefs, home cooks and foodie novices will all have their own say on where a product should go. Especially when it comes to fresh produce, it’s not as simple as a pre-made packaged product, that comes complete with a manufacturer’s label on where best to store. But even then, some of the places may contradict those of a different company. So where does that leave you? Standing in the middle of your kitchen, wondering whether to shove your potatoes in a dark cupboard where no light will ever leak, or to grace them with a bit of daybreak every now and again. So, to make it a little bit easier, here are my top five plant-based products I use every day and how best to store them for longevity and quality.
BREAD Now this actually depends on where you got the loaf from to start with. If you got it from a supermarket already packaged in an air-tight bag, make sure to keep it in said packaging and store at room temperature – keep it in a cool and dry space, and never place it in the fridge. For store brought products that come in a brown paper bag or ones you have made yourself (although make sure are completely cool before storing) stored uncovered in a bread bin is the best place for it to be. Make sure your bin has ventilation holes so don’t place directly in an airtight container. Bread bins have the right amount of air flow to stop the bread from going too hard, or mouldy too quickly. For sliced bread – the best place to be, is in the freezer. It’s super simple to defrost per slice and keeps it from turning too quickly.

HERBS
Different potatoes last longer than others. So, if you are stocking up and want them kept for a longer period of time choose potatoes that have this capability. Yukon Gold, Fingerling and Maris Piper are your friends here. The larger or older potato varieties tend to withstand the time much better than their younger and smaller brethren. The main basic comes down to this, however - keep them in a cool and dry place and they will be fine. It’s more about the storing space than the place for these. Just like your bread, they need a free circulation of air to stay in tip top shape, so opt for a brown box, mesh bag or brown paper bag that isn’t closed air-tight and never store near bulbous produce. Inspect your potatoes regularly and remove any sprouting, bruised or softened ones to keep the rest happy. But don’t throw these away – cook them up in your favourite recipes.
The crisper drawer is there for a reason – so make sure to use it. Leafy greens such as lettuce, chard, kale and spinach need the cold to thrive. If your crisper is full, place on the shelf above and as far to the back of the fridge as you can. Just like your herbs, you’ll want to rinse and thoroughly dry your greens before refrigerating. This helps remove any debris or bacteria that could encourage spoiling before its time. Keep your produce separated in different containers, glass works the best, and with a cloth on the bottom to catch any additional moisture and then another on top in replacement of a lid to protect the leaves. Make sure to replace these regularly and don’t squash them down. Lightly place in a container to ensure air flow and no pockets to encourage rot.
Following along with the same pattern, different herbs require different storage. Wooden stemmed herbs such as rosemary, thyme and oregano work best when given a little extra moisture to stop them drying out. Wrap in a slightly damp cloth and seal in an air-tight container. Bundle smaller bunches together and remember to remoisten the cloth when needed to keep them as fresh as possible. Softer herbs such as coriander, basil and mint need a bit more attention. Treat them as you would a freshly cut bunch of flowers and place their stems in a jar that’s got a splash of water in the bottom (you want the stems engulfed but the leaves kept dry), cover loosely with a cloth and an elastic band to keep the tops and tips both happy and store in the door or on the top shelf and for both types, make sure to wash and dry before moving to their storage facility.
APPLES
Apples actually hate their brothers, so make sure to store apples on a tray, spaced out rather than in a bowl all atop one and another. If you don’t have the space, add a layer of cardboard between the stacks and only place one layer above. Apples love the cold but nothing that is going to be too bitter and
actually quite like a bit of humidity, so try and store in a cool place rather than directly in the fridge. A garage, cellar or shed are ideal. Apples actually don’t get along with anyone from the fruit and veg family so keeping them locked in the shed is the best place they can be. Just don’t forget about them.

Have you even been to Marbella if you haven’t visited La Sala by the Sea? Sun, cocktails, exciting gastronomy, a pool to take a dip in when the heat gets too much, and a DJ playing beats that will have your foot tapping (or hips moving) - I can now officially say, ‘I’ve been to Marbs’. After being closed for so long due to the pandemic, it was great to see the beach club thriving once again. Beds were full, with friends and families soaking up the sunshine, enjoying the music and relaxed vibe of the beach club. In the restaurant, guests were taking respite under the canopies, sipping on fancy cocktails or enjoying food from La Sala’s extensive menu. My friend and I were seated at a table in the middle of the restaurant, perfectly placed between the DJ and the bar, with views of the sea. The nice thing about coming to a beach club for lunch is that it’s much more relaxed than some other restaurants and this feeling captures you the moment you walk in; you wouldn’t feel out of place in flip flops or over-dressed in heels - I went for wedges.

The menu is strongly influenced by Asian and Thai food, with a few typical hearty dishes too like the Club Sandwich, Beer Battered Fish and Chips, and Buddha Burger they may sound mainstream but expect only the best from La Sala. To start, we shared the Sala Prawn Shots, tempura prawns served with three dipping sauces: soy and ginger, sweet chilli, and cucumber vinegar. They were lightly coated in panko breadcrumbs and you could tell they were fresh from the day’s catch - it was hard to share. Other starters include Grilled Chicken Satay, traditional Prawns Pil Pil and of course the famous SHWINGS Chicken Wings, whose secret recipe comes all the way from the UK.
Larger plates range from sharing salads to platters of sushi. We decided to go for the Pad Thai, with chicken and prawns, Crispy Duck Pancakes, and Mixed Sushi Platter - the perfect sharing spread. The Pad Thai was both sweet and sour at the same time, with the delicate heat of chilli running through. The vegetables were crunchy, prawns juicy and the

I was pleasantly surprised by the duck pancakes, which arrived deconstructed, with the soft pancakes served in a wicker box and crispy duck on the side.
Our platter had a mixture of tuna, salmon and crab, mostly rolls and some nigiri - it was a fight for the last piece. Pudding was a mashup of two of my favourite things: cookies and brownies. La Sala calls it the ‘Brookie’. Basically, a warm gooey brownie with a soft chocolate chip cookie baked onto the top.
We piled the pancakes high, drowning the duck in the homemade hoisin sauce, before topping them with finely sliced cucumber and spring onions for a refreshing crunch. The sushi was up there with some of the best, delicately sliced fish, perfectly rolled rice and of course, fresh wasabi

A few spoonfuls of this and a little vanilla ice cream (which came on the side), and you’re ready to spend the next few hours in a delightful food coma on the sunbeds - but maybe a cocktail for the ‘road’ isn’t a bad idea either. Made fresh by the talented mixologists, you can get everything from a Strawberry Daiquiri to a Porn Star Martini. Or try their unique specialties like the Sala Cosmopolitan or BUDDHA on the Beach.

BOHO CLUB There’s no pool bar quite like the Boho Club, because this one’s claimed by Bernie. And Bernie doesn’t mess around when it comes to food. Often, pool bar menus are a little basic but this one (although small) features only the best dishes. Try the salmon tartar with kimchi, sesame and yuzu to start, followed by the prawn and tomato pesto linguine or boho burger with truffle, and enjoy the sumptuous flavours while admiring the mountain of La Concha. The fine dining experience continues in the main restaurant, where head chef Diego’s talent really shines. If you’re visiting on the weekend, stick around for the party at Bernies - the pool may be closed for swimming but the live music plays on late into the night.

Earlier this month, the Excellence Art Gallery by Massimo Cedrini opened its doors to display ‘SUR’, an exhibition of Jose Rivas’s work.
