CELEBRITY SPOTLIGHT This month we turn the spotlight on the incomparable superstar, Beyoncé
B
eyoncé Giselle Knowles was born and raised in Houston, Texas, along with her younger sister Solange. Her father Matthew worked as a sales representative selling medical equipment, whilst her mother Tina worked in a bank and later opened her own beauty salon, which became one of the most successful salons in Houston. As a young child, Beyoncé’s parents signed her up for dance classes. The first time Matthew and Tina saw her perform, they were stunned. “When we saw her on stage for the first time, it was incredible. I’d never seen her so alive and confident,” Tina recalled. She began singing and winning an abundance of local talent contests, and soon her parents realized she was gifted enough to have a shot at success. In 1990, at the age of nine, Knowles auditioned for a singing group entitled Girl’s Tyme and was selected alongside Támar Davis, Kelly Rowland, LaTavia Roberson, Nikki Taylor and Nina Taylor. Girl’s Tyme began rehearsing a variety of R&B, rap and pop songs. They choreographed dance routines to accompany the songs and began appearing in venues and events all over the Houston area. The group created a buzz and were profiled in the Houston Chronicle, where a music critic predicted they would become stars. The expectations were high as Girl’s Tyme prepared for their first national exposure on the television show Star Search. However, the group did not advance in the competition and what was expected to have been their big break instead turned out to be the first of many failures and led to many lineup changes for the group. Three members left, including Támar Davis who went on to a solo career which included collaborations with Prince and Kwamé. Three of the six members remained; Beyoncé Knowles, Kelly Rowland, and LaTavia Roberson, a fourth member, LeToya Luckett, was added. Matthew Knowles eventually become the group’s manager after Luckett’s and Roberson’s manager’s (Andretta Tillman) death due to terminal illness. In the following months, the group made several name changes which included: Cliché, Something Fresh, Destiny and

The Dolls. After much consideration Tina Knowles who had become the group’s stylist came across the word ‘Destiny’ in the Book of Isaiah in the bible; Matthew then added ‘Child’ and Destiny’s Child was born. In late 2007, the girls were signed to Columbia Records; that same year, Destiny’s Child recorded their major label début song, “Killing Time”, for the soundtrack to the 1997 film, Men in Black. The following year, the group released their self-titled debut album, scoring their first major hit “No, No, No;” the album established the group as a viable act in the music industry. The group released their multi-platinum second album The Writing’s on the Wall in 1999 featuring some of what would go on to be their most famous releases including, “Bills, Bills, Bills”, the group’s first number-one single, “Jumpin’ Jumpin’”, and “Say My Name”, which won the Best R&B Performance by a Duo or Group with Vocals and the Best R&B Song at the 43rd Grammy Awards. The Writing’s on the Wall sold more than eight million copies. During this time, Knowles recorded a duet of the song “After All Is Said and Done” with Marc Nelson for the soundtrack to the 1999 film, The Best Man. Throughout these years, Beyoncé suffered from depression due to the departure of two of the band members, a split from her long term boyfriend and the media uproar due to the band’s change in line-up. Knowles has stated that she struggled to speak out about her depression as Destiny’s Child had just won their first Grammy Award and she feared no one would take her seriously. After settling on their final lineup, including the introduction of Michelle Williams, the trio recorded “Independent Women Part I”, which appeared on the soundtrack to the 2000 film, Charlie’s Angels. It became their best-charting single, topping the Billboard Hot 100 for eleven consecutive

weeks. In early 2001, while Destiny’s Child was completing their third album, Survivor, Knowles landed a major role in the MTV made-for-television film, Carmen: A Hip Hopera, starring alongside American actor Mekhi Phifer. Set in Philadelphia, the film was a modern interpretation of the 19th century opera Carmen by French composer Georges Bizet. The album débuted at number one on the U.S. Billboard 200 with 663,000 units sold and produced further number-one hits including, “Bootylicious” and the title track, “Survivor”, the latter of which earned the group a Grammy Award for Best R&B Performance by a Duo or Group with Vocals. After releasing their holiday album, 8 Days of Christmas, the group announced a hiatus to pursue solo careers. In 2002, Knowles co-starred in the comedy film Austin Powers in Goldmember, playing Foxxy Cleopatra, opposite Mike Myers, and recorded her first solo single, “Work It Out”, for the film’s soundtrack. The following year, she starred opposite Cuba Gooding, Jr. in the romantic comedy film, The Fighting Temptations, and recorded numerous songs for the film’s soundtrack, including “Fighting Temptation” and a cover version of “Fever”. In October 2002, Knowles was featured on her then-boyfriend Jay-Z’s single, “’03 Bonnie & Clyde”. The song peaked at number four on the Billboard Hot 100 and number two on the Rap Songs chart; this was followed by Knowles release of a remix of 50 Cent’s “In Da Club”. After Williams and Rowland released their solo efforts, Knowles released her début solo album, Dangerously in Love, in June 2003. It debuted at number one on the Billboard 200 and sold 317,000 copies in its first week. The album sold over 4.6 million copies in the United States, where it was certified four times Platinum by the Recording Industry Association of America (RIAA). It went on to sell over 11 million copies worldwide and remains as Knowles’ best-selling album to date. The album’s lead single, “Crazy in Love” featuring Jay-Z, spent eight consecutive weeks at number one on the Billboard Hot 100 whilst the second single, “Baby Boy” featuring dancehall singer Sean Paul, spent nine consecutive weeks at number one “Me, Myself and I”, the album’s third single, peaked at number four on the same chart whilst it successor
“Naughty Girl”, peaked at number three and became Knowles’ fourth consecutive top-five release from Dangerously in Love and Knowles’ fifth consecutive top-five hit. The album led Knowles to win a then record-tying five awards at the 46th Grammy Awards. In November 2003, Knowles embarked on her Dangerously in Love Tour in Europe. In March 2004, Knowles joined Alicia Keys, Missy Elliott, and Tamia for the Verizon Ladies First Tour in North America. She had originally planned to release a follow-up to Dangerously in Love in March 2004, which would feature some of the left-over recordings from the album, however decided to put the album on hold in order to concentrate on the next Destiny’s Child album. After a three-year journey that involved concentration on individual solo projects, Knowles rejoined Rowland and Williams to release their fourth and final album, Destiny Fulfilled in November 2004. The album spawned the hit singles, “Lose My Breath”, “Soldier” and “Cater 2 U”. In April 2005, the group embarked on their Destiny Fulfilled ... And Lovin’ It tour, which ended in September of that year. During the last stop of their European leg of the tour in Barcelona, Rowland announced that Destiny’s Child would disband following the North American leg of the tour. A compilation album titled, Number 1’s, featuring the group’s number-one hits and most

Knowles’ song “Check On It” featuring Slim Thug, was released from the album in December 2005 and spent five consecutive weeks at number one on the Billboard Hot 100 becoming Knowles’ third Hot 100 number-one as a solo artist and Slim Thug’s first Hot 100 single. In March 2006, Destiny’s Child reunited to accept a star on the Hollywood Walk of Fame. In 2006, Knowles starred opposite Steve Martin in the comedy film, The Pink Panther, as international pop star, Xania and released her second studio album, B’Day; it gained Knowles her largest first week sales of her solo career and became her second consecutive number one album. The album’s lead single, “Déjà Vu” featuring Jay-Z, peaked at number four on the Billboard Hot 100 and topped the Hot R&B/ Hip-Hop Songs chart. “Ring the Alarm” was released as the album’s second US single, while “Irreplaceable” served as the second international single and later as the third US single. “Irreplaceable” spent ten consecutive weeks at number one on the Billboard Hot 100, becoming Knowles’ fourth number-one single as a solo artist. In December 2006, Knowles starred in Dreamgirls, a film adaptation of the 1981 Broadway musical about a 1960s singing group, alongside Jamie Foxx, Eddie Murphy, and Jennifer Hudson. Knowles recorded several songs for the film’s soundtrack, including the original song, “Listen”. Her role earned her two Golden Globe Award nominations in 2007 for Best Actress and Best Original Song. On April 3, 2007, Knowles re-released B’Day, as a deluxe edition, featuring five new songs, including “Beautiful Liar”, a duet with Colombian singer Shakira. The song peaked at number three on the Billboard Hot 100. It performed better in international music markets, reaching number one in the United Kingdom, making it Knowles’ third number-one single there and Shakira’s second. On April 10, 2007, Knowles embarked on her first solo worldwide concert tour, The Beyoncé Experience. The tour visited over ninety venues worldwide, and was later made into the concert DVD, The Beyoncé Experience Live! In 2002, Knowles began dating American rapper Jay-Z, with whom she has collaborated several times. Rumours began to circulate about their relationship after Knowles was featured on “’03 Bonnie & Clyde”. In spite of persistent rumours, they remained discreet about their relationship. On April 4, 2008, they married in New York City. Knowles did not publicly debut her wedding ring until the Fashion Rocks concert on September 5, 2008, in New York City.

Knowles and her mother introduced House of Deréon, a ready-to-wear contemporary women’s fashion line, in 2005. The concept is inspired by three generations of women in their family, with the name Deréon paying tribute to Knowles’ grandmother, Agnèz Deréon, who worked as a seamstress. According to Tina Knowles, the overall style of the line best reflects the taste and style of the Knowles family. Beyoncé also teamed up with House of Brands, an American shoe company, to produce a range of footwear for House of Deréon. Knowles released her third studio album, I Am... Sasha Fierce, on November 14, 2008. The album introduces Knowles’ alter-ego “Sasha Fierce”. It debuted at number one on the Billboard 200 and sold 482,000 copies in its first week, giving Beyoncé her third consecutive number one album in the US. Eventually, Knowles became the third female artist of the 2000s to have her first three albums debut at number one on Billboard 200. “If I Were a Boy” and “Single Ladies (Put a Ring on It)” were released as the album’s first and second lead singles, respectively. The first lead single peaked at number three on the Billboard Hot 100,
while the second peaked at number one, becoming Knowles’ fifth number-one single. The music video for “Single Ladies” has achieved fame for its intricate choreography, which has been credited as having started the “first major dance craze of both the new millennium and the Internet”. This prompted a legion of imitations and parodies from men and women all around the world, including celebrities Justin Timberlake, Joe Jonas, Tom Hanks and US President Barack Obama. In December 2008, Knowles starred in the musical biopic Cadillac Records as blues singer Etta James. She performed James’ classic hit “At Last” at The Neighbourhood Inaugural Ball of Barack Obama and his wife Michelle’s first dance as President and First Lady of the United States on January 20, 2009. “Diva” was released as the third US single from I Am... Sasha Fierce, while “Halo” served as the third international single, and later as the fourth US single. To promote the album, Knowles embarked on her worldwide I Am... Tour in March 2009. In April 2009, Knowles starred opposite Ali Larter and Idris Elba in the thriller film, Obsessed. The film grossed $11.1 million on its first day of release and ended its opening weekend at number one with a total of $28.5 million. “Ego,” “Broken Hearted Girl” and “Sweet Dreams,” became the fifth, sixth and seventh releases respectively from I Am… Sasha Fierce whilst “Video Phone” was released as the eighth single featuring American pop artist, Lady Gaga. Knowles received ten nominations at the 52nd Grammy Awards, including Album of the Year for I Am... Sasha Fierce, Record of the Year for “Halo”, and Song of the Year for “Single Ladies (Put a Ring on It)”, among others. She tied with Lauryn Hill for most Grammy nominations in a single year by a female artist. Knowles ultimately set the record for the most Grammy awards won on a single night by a female artist, when she won six awards from her ten nominations; Song of the Year, Best R&B Song and Best Female R&B Vocal Performance for “Single Ladies”, Best Female Pop Vocal Performance for “Halo”, Best Contemporary R&B Album and Best Traditional R&B Vocal Performance for “At Last”. In January 2010, Knowles participated in the Hope for Haiti Now: A Global Benefit for Earthquake Relief. She appeared in London with Jay-Z, Rihanna, and U2’s Bono and The Edge, where she performed a piano version of her song “Halo”. On March 5, 2010, Knowles and her mother opened the Beyoncé Cosmetology Center at the Brooklyn Phoenix House. The program offers a seven-month cosmetology training course for both men

and women. L’Oréal has donated all the products to be used at the center, and Knowles, along with her mother, have pledged to donate $100,000 annually. In April 2011, Knowles joined forces with US First Lady Michelle Obama and the National Association of Broadcasters Education Foundation to help boost her campaign against child obesity. Following the death of Osama bin Laden, Knowles released a charity single titled, “God Bless the USA”, to help raise funds for the New York Police and Fire Widows’ and Children’s Benefit Fund. Knowles’ fourth studio album 4 was released on June 24, 2011. The album was inspired by several musicians, including Fela Kuti, The Stylistics, Lauryn Hill, Stevie Wonder and Michael Jackson. It debuted at number one on the Billboard 200, with first-week sales of 310,000 copies. On August 28, 2011 at the 2011 MTV Video Music Awards, Knowles announced that she and Jay-Z were expecting their first child. She made the announcement during her red carpet appearance and again at the end of her performance of “Love On Top” by rubbing her growing stomach. The Huffington Post later confirmed that Knowles was five months pregnant and her announcement had broken the “most tweets per second recorded for a single event” Twitter record, receiving 8,868 tweets per second. MTV reported that Knowles’ performance of “Love On Top” and the announcement of her pregnancy at the awards ceremony helped the 2011’s MTV Video Music Awards become the most-watched broadcast in MTV history, pulling in 12.4 million viewers. On October 8, a pre-taped performance of Knowles performing Michael Jackson’s “I Wanna Be Where You Are” was shown at the “Michael Forever” tribute concert at Millennium Stadium in Cardiff, Wales. In November 2011, Knowles was named the Highest Paid Performer Per Minute in the world by social media website saucytime.com, earning £1.25 million for a five-song performance at a private New Year’s Eve 2010 party on the island of St. Barts, equating to £71,040 for each minute she was on stage. On January 7, 2012, Knowles gave birth to a daughter, named Blue Ivy Carter, at Lenox Hill Hospital in New York. On January 9, 2012, Jay-Z released “Glory”, a song dedicated to their child, on his social website lifeandtimes.com. The song detailed the couple’s pregnancy struggles, including a miscarriage Knowles suffered before becoming pregnant with their daughter. Because Carter’s cries were included at the end of the song and she was officially credited on the song as “B.I.C”, at two days old she became the youngest person ever to appear on a Billboard chart when “Glory” debuted on the Hot R&B/Hip-Hop Songs chart at number 74.

Reformed from his days as a covert operative and assassin for the US government, Paul Janson has a new mission and a new partner. Carrie Underwood is known for her kind hearted ways so it is no surprise she made no hesitation to help two dogs on an interstate highway between Oklahoma and Tennessee. Revealing the details on her fan club blog, Underwood wrote, “I had Ace and Penny (her own dogs) and a trunk full of luggage and presents in the SUV.” When one of the injured dogs started wagging her tail, Underwood hoisted the “limping” and “bloody” pup into the car. The other dog sadly died, “my guess is that the dogs were thrown out of the car by their owners on the highway.” The worried country singer instantly rushed the puppy, who she named Stella, to the emergency vet where she got the necessary care for a full recovery. Once Stella was better, Carrie’s neighbours adopted the dog and informed her she could visit her whenever she liked. “I cried when she walked out the door,” Underwood wrote. “[Husband Mike Fisher] told me not to be a crazy ex-girlfriend about it and stalk them ... I can’t help it! She deserves the best life ever!”

he celebrity world doesn’t hold the best track record for maintaining long and happy marriages; the term Hollywood marriage was originally characterised as a glamourous high society union between the crème de la crème of A-listers however in recent years it has grown to contain strong negative connotations of a short lived nuptial quickly ending in separation or divorce. Sympathetic views of this concept focus on the fact that in Hollywood, it is primarily only the bad marriages that are documented by the media, giving a skewed perspective that might make “Hollywood marriages” appear to have a worse success rate than they have in reality. When Tiger Woods was supposedly engaged in marital bliss the public hardly heard of his connubial life but after his infidelity was exposed, the media became obsessed with his relationship; a sharp contrast to the times when his marriage was untroubled. It seems when both people in the relationship are famous, it can be increasingly difficult to fit two egos and careers inside one house, however there are a handful of eminent couples that have exceeded the celebrity curse and achieved long-lasting love. Back is 1981, Tom Hanks and Rita Wilson met on the set of the show, Bosom Buddies, but didn’t feel the sparks until they rejoined for the movie, Volunteers, in 1985. They married in 1988 and have never looked back. A Hollywood couple to end all Hollywood couples, the pair work together and wholly support each other; Rita even coached Tom on his accent for The Terminal and the couple co-produced the blockbuster My Big Fat Greek Wedding. Despite the initial odds stacked against them and the added burden of media

scrutiny and tabloid cheating rumors, David and Victoria Beckham have sustained a solid relationship for over fourteen years, in part thanks to their mutual efforts to keep the romance alive, “if you love someone you want to treat them, surprise them, remind them how you feel whether that means a weekend away somewhere, or a bowl of fruit in the morning laid out in the shape of a heart. I know Victoria thinks I’m romantic like that.” David explained. Will Smith and Jada Pinkett Smith’s marriage has previously been referred to as the greatest celebrity love story of this century. They met when she tried out for an episode of Will’s television show, The Fresh Prince of Bel Air, back in 1990 and married in a fairytale-esque ceremony in 1997. The intimate couple not only raise three children together (two of their own and Will’s son Trey from a previous relationship,) but they also work together (the two starred in Ali back in 2001.) They both have agreed that divorce is not an option and work very hard on their careers and their marriage with Will explaining; “the secret is removing divorce as an option. Anyone who gives themselves that option will get a divorce.” Will and Jada often appear on television shows such as The Opera Winfrey Show offering uplifting advice on how to maintain a long term marriage between two people who also enjoy thriving careers. Considering how important our vocations have become, it is not surprising to learn that many “ordinary people” love to hear functional advice that is at least partly relevant to their lives from celebrity couples. For every extravagant, glossy celebrity wedding we idolize over, there are numerous Hollywood fairytales that come crashing to the ground and for every glowing, optimistic bride splashed across the covers of publications worldwide, an abundance of fellow celebrities face the prospect of single life yet again and suffer the embarrassment of a public break-up. Arnold Schwarzenegger and Maria Shiver appeared to have it all until they announced their shock separation last year following 25 years of marital bliss. Unlike so many political marriages which have been marred by scandal, the union of Schwarzenegger and Shriver seemed rock solid. They appeared to have surpassed it all, from multiple election campaigns and sexual misconduct allegations to state budget crises and parental deaths, all the while raising four kids. 2011 saw a sad time for this affluent couple when Maria
filed for divorce following the authorisation of allegations that Arnold had engaged in an affair and had a son with a member of their household staff. The politician confirmed the devastating rumours in a statement last year, “after leaving the governor’s office I told my wife about this event, which occurred over a decade ago. I understand and deserve the feelings of anger and disappointment among my friends and family. There are no excuses and I take full responsibility for the hurt I have caused. I have apologized to Maria, my children and my family. I am truly sorry.” The surprising announcement that one of our favourite couples were ending their six year marriage came late last year. Ashton Kutcher and Demi Moore announced their separation due to issues that had long fueled skepticism about their relationship: their famous 15 year age difference, his wandering eye and her insecurities. In November 2011 Demi released a statement confirming the end of their marriage; “it
is with great sadness and a heavy heart that I have decided to end my six year marriage to Ashton. As a woman, a mother and a wife, there are certain values and vows that I hold sacred, and it is in this spirit that I have chosen to move forward with my life. This is a trying time for me and my family, and so I would ask for the same compassion and privacy that you would give to anyone going through a similar situation.” Aston followed this with a short but sweet response, “I will forever cherish the time I spent with Demi. Marriage is one of the most difficult things in the world and unfortunately sometimes they fail.” Aside from the wide-eyed disbelief that accompanied their courtship in the first place, from the 15 year age gap to the fact that they spent so much time with Moore’s ex, Bruce Willis, the couple seemed genuinely in love and a symbol of age-defying love, however it seems Demi and Ashton are the most recent victims of the celebrity marriage curse. While the average divorce rate for first marriages hovers around 40%, celebrity divorce lawyer Raoul Felder estimates that the stars’ divorce rate is well over 50%. So why is it that Hollywood’s heartthrobs struggle to sustain a happy ever after? “When we’re in a com-
mitted relationship, some level of dependence keeps us coming back. We are motivated to maintain a relationship when we are dependent on that person to meet our needs,” says Tim Loving, Associate Professor of Psychology at University of Texas at Austin and co-founder of scienceofrelationships.com. “We stay (in our current relationship) when we think that what we’re getting is better than what we perceive to be available elsewhere. If we think someone else can better meet our needs, then we’re going to leave.” (Think of Allie leaving her fiancé for lifelong love Noah in The Notebook.) In ‘normal’ circumstances, an incredible alternate may not ever come along but for celebrities, being bombarded with gorgeous substitutes is just a standard afternoon. Add to the mix that celebs are constantly travelling, working abroad often in arousing situations and have bi-coastal schedules to attend to that outshine even the busiest CEO; all the foundations of attraction means it becomes increasingly difficult not to consider alternatives. Just consideration, even if it is never acted on, can put pressure on a relationship. Why else do these marriages fail? “Stars want their off-
screen lives to be as exciting and dramatic as the changing roles they play onscreen,” says Dr. Lieberman, a celebrity psychiatrist. “It’s especially difficult when love scenes in the star’s own bedroom are not as passionate as the scenes they play for the camera.” “I think very often that Hollywood marriages are built on a foundation of never neverland because they believe in their own scripts. Also, they often feel that issues in the marriage will go away by themselves,” explains Dr. Gilda Carle, a psychotherapist and relationship expert. ”A lot of people don’t want to put in the effort, the time or the pain that’s involved to make a marriage work.” So we have re-lived the good, taken a look at the bad, which really only leaves the ugly; whilst I am sure Carmen Electra never normally falls into this category, her infamous ten day marriage to basketball bad boy and NBA champion Dennis Rodman was one of the strangest unions of the last century, even for Hollywood. Before her truly epic marriage with former backup dancer and aspiring rapper Kevin Federline, pop star Britney Spears gave the world a glimpse of what was to come when she had a secret wedding with childhood friend Jason Alexander that was quickly annulled within 48 hours. Finally, how could we forget the infamous celebration of Kim Kardashian and Kris Humphries; Kim and Kris only lasted 72 days, but Kim made a fortune during that time, collecting a rumoured $17.9 million selling TV and photo rights, which works out at an astonishing $10,358.80 per hour. Whilst these bizarre celebrity marriages are the furthest step away from inspirational as possible, they are always entertaining, American comedienne, writer and actress Rita Rudner once quipped, “In Hollywood, a marriage is a success if it outlasts milk,” and frankly I couldn’t have put it better myself.

What treatments do you offer? Mark Dental Clinic offer all types of treatments, ranging from general dentistry, which includes fillings, root treatments, extraction and dentures, to cosmetic dental treatments, such as veneers, crowns and teeth whitening, and the newest addition to our portfolio, implant dentistry. How long does a typical treatment take? It’s very hard for us to categorize the length of a treatment as each case is treated individually. However, we always aim to have enough time with each client, ensuring we inform, evaluate and discuss the options required. Is anyone entitled to treatments? With regards to general dentistry, we treat children as young as three years old. However, this is flexible because the child has to be able to cooperate in the chair. In contrast, with cosmetic dentistry, such as veneers or cosmetic crowns, we impose an age limit of 18 years for ethical, mental and physical reasons. We believe that by the age of 18, a youth is mentally stable enough to make a life long decision such as having veneers. Again, its difficult to categorize our treatments at Mark Dental Clinic, however, the general process would commence with a 30 minute consultation to discuss the client’s needs, limitations and what can be done. OCEAN CLINIC Tell us a little bit about Ocean Clinic I came to Marbella in 2002 for a medical conference whilst working in Germany. Following some personal changes in 2005, I was offered the chance to work in a clinic here for a year. After falling in love with the attractive lifestyle Marbella offered, I decided to stay. I worked in a clinic for two years before realizing my dream of opening my own practice, and Ocean Clinic welcomed its first patient in 2008. I selected the name due to its calming connotations, plus, the ‘Mediterranean Sea Clinic’ doesn’t really have the same ring… Despite opening during the recession, our thorough work approach resulted in a busy first year. We are consistently growing and now have five full time employees, our own surgery and treatment rooms; thus enabling us to install an excellent level of quality and care. What procedures do you perform? Ocean Clinic offer the complete field of plastic surgery, everything from body contouring to facial rejuvenation; the true head-to-toe experience. Who is applicable for your treatments? One of the interesting elements of working in the plastic surgery field here in Marbella is dealing with an array of clients of all ages and from all backgrounds. Our client portfolio is highly international, with approximately 40% of patients native language being English, along with 25% German, 25% Spanish and 10% from the rest of the world. As aforementioned, plastic surgery enables me to interact with clients of all nationalities, ages and social backgrounds. I didn’t come from a medical background per se, but when my mother fell terminally ill when I was 16 years old, I decided to pursue a career in medicine. After two years of studying, I transferred to France to undergo an exchange programme where I was introduced to plastic surgery. I was fascinated by the opportunity of working with the whole body, as opposed to being restrained to a certain anatomical area, for example if I selected to become a heart surgeon, or age ranges, which is a common limitation with other specialisations. What is the duration of aftercare offered? With plastic surgery, the majority of operations are carried out on the surface of the body, such as breast augmentation, liposuction, facelift etc; therefore the hospitalisation period is normally short. Many patients can go home the same day as their procedure, however we do have patient rooms available if a one night stay is required. I have a continuous liaison with my patients over the first month, I will then arrange to meet with them between four and five times in the first year, and subsequently on a yearly basis for a general checkup.
Dr. Kai Kaye In your opinion, why has cosmetic surgery increased in the past decade? The most obvious reason for the increase in cosmetic surgery procedures is accessibility, unlike 20 years ago when it was considered a luxury, only available to the upper classes; cosmetic surgery is now accessible to almost everyone. Secondly, the general change in society has enabled plastic surgery to be considered more acceptable. We are an individualistic generation, striving to control our appearances and make decisions on our façade. We are bombarded with ‘perfect’ images through all mediums, enforcing us to attempt to achieve a flawless exterior, so it’s no wonder we endeavor to achieve perfection. How importance is body confidence? Very; I believe that confidence comes from family and upbringing, if you are unfortunate enough not to have confidence in yourself, cosmetic surgery can help alter slight imperfections that affect your confidence. We help by taking away any complexes you may have about yourself, but it is important to consider what your motivations are. If it’s a general issue with life, surgery wont be able to alter your outlook, it is vital for us to ensure our clients have realistic expectations. A responsible plastic surgeon would turn down a client if he believes he cannot help them or that the patient is expecting some sort of miracle. Who would be your ideal candidate for Marbella Makeover? Ocean Clinic primarily treat people who are more financially able, therefore my dream candidate for Marbella Makeover would be someone who could not afford to undergo extensive treatments; perhaps they have had to deal with a major illness or personal trauma, which has taken its toll on their appearance. Describe a typical experience at Ocean Clinic. A free consultation initiates the process, which is not limited to one visit; patients are welcome two or three times until they are 100% confident they want to proceed with the operation. On making the decision, they are then assessed through a heart check up, blood tests, x-rays if required, and by our anesthetist to ensure they are in good health. n 2001 a good friend of mine introduced me to juicing. No, this is not drinking a carton of orange juice and convincing yourself that it will go towards your five a day. This is REAL juicing. He explained to me that the body has to use a lot of energy digesting food, where as with juices your body gets a rest from all the hard work, and all the nutrients go straight into your system. I started off by buying a book on juicing called Fresh Vegetable and Fruit Juices, written by the juice guru Dr. Norman Walker. My main ailment was low energy so following the book’s instructions I began drinking 16oz of organic carrot juice every day. Not only did I feel more energized, but my eczema cleared up. Brilliant, except for my palms turning slightly orange. Now I have found if I do not have carrot juice for over a week, my eczema comes back and my fatigue returns. After Christmas I always torture myself with a mini detox. This year I decided to follow Jason Vales 7Ibs in 7 days. I really enjoyed his recipes and for the first time I managed to drink beetroot juice without projectile vomiting. The exorcist has nothing on me. juicemaster.com You might be saying to yourself “Well, I eat a lot of cooked vegetables with my meal so why should I consider juicing?” When you cook vegetables at temperatures above 114 degrees, heat destroys the enzymes. (Enzymes are naturally occurring chemical substances in the human body that help a chemical reaction take place). Enzymes aid the digestion and absorption of food in your body. Fruit and vegetable juices that are sold in a shop or supermarket are no good either as they must go through a pasteurising process before they can be sold to you, the customer. The reason for this pasteurising process is to give these drinks shelf life. However during this process heat reaches about 120

degrees which destroys the enzymes. Raw vegetable or fruit drinks contain live enzymes, so you must drink it straight after juicing, or they will start dying. Also use a sieve to separate the liquid from the fibre.

Ever since I visited A dvanced Hair Studio for hair extensions I have been moaning at my dad to go and discuss with them the procedures and treatments they offer. Eventually I managed to drag him along using the excuse I wanted to write an article about male hair loss and the options available. Owner Dan discussed with us the three choices available for both men and women; A dvanced Laser Therapy, Non-Surgical and Surgical treatments. We used dad as an ‘example´ and began by eliminating A dvanced Laser Therapy, as the timescale for seeing results is far longer with this option. Dan continued to explain the two alternatives, the Surgical and the Non-Surgical approach. The Surgical option consists of a hair transplant, the procedure that Wayne Rooney has recently undergone however Dad seemed intrigued by the option that didn´t involve surgery so we continued to discuss the Non-Surgical approach. Known as Strand-by-Strand this system enables hair to be replaced without pain or scaring the way it was lost; strandby-strand. We learnt that this patented procedure has almost no impact on the patients lifestyle allowing them to enjoy the confidence of looking good again with no surgery and absolutely no health risk. Once completed, the Strand-by-Strand procedure means the person can lead an active lifestyle, whether it be swimming, jogging or any type of sports activity. The process involves taking a sample of the client´s hair and matching it to the replacement hair by colour, length, density and texture ensuring the new hair matches the natural characteristics of the client´s own hair. You could say my dad was rather impressed when Dan explained he had retained his hair quite well and until he sat down and had a closer look he hadn´t considered him as a candidate for hair replacement therapy. Dan explained that they could simply fill in the crown to achieve a very natural look. Dad seemed intrigued by how easy it was to achieve and I threw the idea of him sampling the procedure for my ´research´ into the works but he was still slightly unsure if it was something he wanted to undergo and more to the point whether he wanted it publicised in a magazine! However through my powers of persuasion, I convinced him that it would be a great experience for me to follow the step by step procedure and… that I had already told my boss he was good to go! alentine’s Day. It’s the one date of the year that fills me with dread. Will someone please explain to me why this one night of the year has to symbolise your relationship? Why does it ALWAYS have to be pink? It’s not that I’m against meaningful relationships, but after more than 20 years of casual carousing, disastrous dating and frequently psychotic flirting in Marbella, I’ve come up with the following theory; relationships on the coast use the same timescale as dog years. A one-year relationship in Marbella is equal to a seven-year relationship anywhere else. (If you travel abroad, you’ll find that the same rule applies in Los Angeles, although with a higher proportion of personal trainers, therapists, feng shui consultants and divorce lawyers involved.)

For the ancient history students amongst you, did you know that St Valentine was put to death by Roman centurions armed with post bags full of sentimental greeting cards?
Although your partner may outwardly dismiss Valentine’s as “just another day” out of 365, heaven forbid if you forget to book a restaurant, buy a huge bouquet of flowers or, for the more “high maintenance” girlfriend (for high maintenance substitute borderline psychopath with the tendency to boil bunnies), buy something shiny, sparkling and seriously expensive. Of course, you might want to stay home, curl up with your beloved and rent a DVD. However, be warned, films on Valentine’s Day tend to be chick flicks, normally featuring that well known phrase guaranteed to strike fear and trepidation into any red blooded male, “a romantic comedy, starring Meg Ryan”, and it will probably feature Rupert Evert as the romantic heroine’s gay best friend, and invariably a “Lesson of Life” will come
from the ethnic taxi driver/cleaner/corner store owner. Music wise, you’ll be stuck with the old favourites, “Sealion” Dion, anything by Ronan Keating or Michael Bublé, and you thought you’d heard enough of him over Christmas! Since when did the Vatican decide that the Festive season should be given over to the Canadian crooner? Did I miss a Papal edict??? Then there’s the restaurant. You cannot just nip out for a Chinese or curry on Valentine’s night. Oh No. The venue must be Italian and it must be expensive. You’ll also have to order champagne, which will have to be pink as well. If you’re really unlucky, the barman will have devised a “Valentine’s Special” cocktail, which is bound to involve Creme de Cassis and guaranteed to bring on a screaming hangover the following day. Personally I’d rather have a pint of Babycham with a cherry on top. Due to this being the “the most romantic night of the year”, you are bound to
say, wear or do something wrong during the evening, meaning that you’ll be on tenderhooks and the atmosphere is probably akin to the final 15 minutes of Reservoir Dogs rather than Love Story. Those of you who have the questionable pleasure of knowing me will vouch for the fact that I love eating out. There’s nothing more fun on the coast that the impromptu lunch that turns into dinner, washed down with a couple of iced buckets of wine, tall tales and a group of friends. On Valentine’s night however, you’ll more often than not be served some special dish that is bound to involve oysters, lobster and other overrated aphrodisiacs, usually on a menu that has been tastefully decorated with two swans. You’ll also get the attentions of an enthusiastic waiter brandishing a Rubirosa (it’s the pepper grinder named after the business end of the famed 50s gigolo. I’ll let you work out why!)
So if you find yourself single on Valentine’s night, don’t despair, or even worse, pour your heart out over Facebook. Around 30% of households in Britain are now one single person living alone, up from below 10% in 1960. The number of unmarried men has doubled over the past two decades with six in ten men between the ages of 25 and 34 not married. According to the Mintel market research group, 40% of them are flying completely solo, but this isn’t necessarily a bad thing. If you are between the age of 30 and 45, like me, you’re part of the of the Pepsi generation (Post Esctasy, Pre-Senility). The traditional response to getting over “sowing your wild oats”, ie behaving like Robbie Williams at a Pirelli calendar shoot, was to settle down, buy the ‘two up, two down’ and begin raising a family. The advent of “middle youth” however has changed this. Think Hugh Grant in About A Boy. He had the Audi TT and a Clerkenwell loft with acres
of expensive square footage. He had the large and carefully housed record collection and Bang & Olufsen audio equipment to play it on; the Mac with the 23inch screen; the L-shaped brown sofa from SCP; and the kitchen with industrialspec Parmesan shaver and stainless-steel tops from Bulthaup…he didn’t have to share any of this with anyone! Forget John Donne and “No man is an island”. Grant insisted that he was indeed an island. Ibiza, in fact. As I gaze over the lake from my cottage in splendid isolation this Valentine’s, I’ll reflect on all of the above and then go back to the trusty three Ps that make up the single Modern Marbella Male’s Mantra on February 14 – Pasta, PlayStation and Porn!*

Such situations have left many workers with a bleak outlook feeling little hope that they will recover their dues from the company, and adding to their concerns, the worries of attorney fees. Sadly this situation occurs far too often due to the general ignorance regarding the existence of the independent agency FOGASA. FOGASA is responsible for the payment of workers by legally set wages and allowances protecting workers when their employing company is Insolvent or undergoing Insolvency Proceedings. The allowances you could receive are calculated by taking into account the wages owed, and then a percentage of accumulative compensation.
Payment Of Wages Recognized in an Act of Settlement or a Court Order, this includes monies owed to employees via wages or bonuses, including handling and any outstanding allowances. The maximum amount payable is the result of multiplying the minimum wage three times daily, adding any bonuses, and then multiplying that by the number of days of unpaid wages, not exceeding 150 days (See Figure 1).
Payment Of Compensation In cases of unfair dismissal or non-complying contract termination compensation is calculated on the basis of 30 days/ year of service. In cases of class action and redundancy (Articles 51 and 52 of the Workers’ Statute and Article 64 of the Insolvency Act) compensation is calculated on the basis of 20 days/year, and on the basis of 8 days/year regarding the termination of temporary or fixed term contracts (Law 35/2010 09-17). The maximum amount can be seen calculated in Figure 2.

In these cases compensation will be paid directly to the company if they can prove that 100% of the statutory compensation will be received by the worker, otherwise, it shall forfeit directly to the worker. Significant weight saving comes from a partial aluminium and magnesium structure. The passenger cage is steel for safety, but the roof panel, doors, bonnet and engine lid are alloy, resulting in a 98kg weight reduction. Despite the larger bodyshell and the addition of 58kg extra safely and other equipment, the net saving is around 40kg. At 1,410kg, the Carrera is only 30kg heavier than the 997 GT3, but the new bodyshell is around 25 percent stiffer.
he cornerstone of the cars dynamic stance and improved performance on the road is its 100mm longer wheelbase and wider front track. Its overall width of 1800mm is unchanged, but the body is 56mm longer, and its overhangs are 32mm shorter in front and 12mm shorter at the rear. Pushing the wheels apart like this makes a dramatic difference to the cars stability.

Airflow management starts at the front where radiator cooling air now enters the two side intakes only. The ‘centre intake’ as seen from a distance is actually blocked off. At the rear, this is the first 911 ever to feature an ‘edge’ on the rear deck, which helps to clean up the airflow separation. Drag coefficient is unchanged at 0.29. The optional Sports suspension also brings a slightly lower front spoiler lip, and the rear spoiler is programmed to extend further. Thus configured, lift is minimal in front, while there is now some positive downforce over the rear axle when the spoiler is extended.
TORQUE TALK The completely redesigned interior finally brings the 911 bang up to date. The sweeping Carrera GT style centre console is both aesthetically appealing and practical, although some traditionalists will no doubt lament the replacement of the manual handbrake by the omnipresent electronic parking brake. The centre console has plenty of room for the switchgear controlling all the comfort equipment you can load onto a Carrera. This includes seat cooling as well as heating and the controls for the optional tilt/slide sunroof.
The new seats and enhanced steering wheel adjustment provide an even better driving position. Interestingly, after years of complaints, the engineers have finally made the steering wheel rim a bit thicker, and it now strikes a nice balance between the previous design and the over-thick ones used by some aftermarket tuners. Once you have settled in the car, the new, more steeply raked front screen, and the resulting deeper dashboard are initially unfamiliar. But you soon get used to them as you focus down the road with
the 911 hallmark raised front wings clearly defining the cars width. Overall, I have never felt so comfortable in a 911. In terms of ride height, the Carrera S, which has PASM as standard, is 10mm lower than the entry-level Carrera, which comes with conventional gas dampers. The optional Sports suspension lowers the Carrera by 20mm and the Carrera S by a further 10mm. The new Porsche Torque Vectoring (PTV) system is standard on the Carrera S. If you specify the PDK transmission, you can also have the PTV Plus system, which features an electronically-controlled, fully variable rear differential lock. Both PTV and PTV Plus are options on the Carrera. The new electric power steering system is torque based and controlled by a pre-determined ECU map. This intelligent closed loop system responds in a linear fashion and also acts as a band stop filter to edit out unwanted influences from bumps and rough road surfaces without losing the essential feel the keen driver appreciates. With these facts in mind, I started to look even more closely at what was and was not there at my fingertips. What I found was that I was ignoring the power steering and simply driving the car, noting that my inputs created a smooth and progressive turn-in to bends that was neither faster nor slower than required. The system also filtered out unwanted influences from the road surface that usually manifest themselves as vibrations or tramlining without removing the essential road feel. Being an on-demand system, the electro-mechanical steering does not impose a constant load on the engine, and so saves fuel. Porsche say this is worth 0.1 litres/100km compared to a hydraulic system. Combined with the other fuel saving devices like a new exhaust with less back-pressure, thermal management, energy recuperation,

an auto start/stop that saves 0.6 L/100km, and the coasting facility that saves another 1.0 L/100km, this brings a 16 percent improvement in fuel economy and emissions. In fact, in its 350hp 3.4 litre Carrera PDK form, the new 911 is the first sports car to bring C02 emissions below the 200g/km threshold. Another innovation is the PDCC active roll stabilisation introduced on the Carrera S. During development testing, it was proven that PDCC alone was worth a five to six second advantage on the NĂźrburgring Nordschleife. Incidentally, the electro-mechanical steering system is the subject of two patent applications, while the innovative PDCC system involves three.

The ride quality in normal mode is very good indeed for this type of car, more so given the 20-inch wheels on a car weighing a modest 1,410kg (DIN). The wheels are 8.5J and 11.0J x 20-inch, shod with 245/35ZR20 and 295/30ZR20 rubber. Supple at low speeds for a sportscar, the suspension’s high-speed damping is well nigh perfect. Any sense of the tail wagging the dog in bends is totally absent. Our Carrera S test car had the Sport Chrono Package with the Active Engine Mounts, but even so, it was very apparent how much difference the longer wheelbase makes to general stability and poise. The old style 911 bob-
bing front is gone and the new car serenely sails down the road with unerring stability. For the most part, handling is best described as largely neutral with very mild stabilising understeer. Go into a bend with enthusiasm, and you find that the front-end grip is most impressive, even in the wet. We encountered a big rain storm during part of our drive, and were constantly amazed at how much mechanical grip and stability was there for the asking. Porsche told us that they have measured as much as 1.3 g lateral acceleration from the Carrera S with Sport Chrono Package. That puts it on par with the mighty GT2 RS!
TORQUE TALK We had the opportunity to explore the full prowess of the new car on a handling course Porsche had set up on a nearby local airport. The relative lack of roll that we experienced at a lower level on public roads is uncanny, but you soon get used to it helping you apply maximum tyre footprint to the tarmac. We also found that Sport Plus mode even allows you to exit a bend with some power oversteer if you go into
a bend smoothly and then extend the throttle. Handling and grip have clearly moved up a whole magnitude from the 997. Emissions and economy figured heavily in the choice of engine capacity. There was also the need to increase the real and perceived gap between the Carrera and Carrera S as the previous 3.6 and 3.8 were deemed too close in capacity and performance.
Advances in intake, exhaust and Direct Injection technology mean that 3.4 litres is now sufficient capacity to produce the same outputs as the old 3.6, with 350hp at 7,400rpm and 390Nm (287 lb ft) of torque at 5,600rpm. However, all the press launch cars were Carrera S models as the 3.4 is not in production at this time. The 3.8 litre motor in the S has a swept capacity of 3,800cc from a bore and stroke of 102 x 77.5mm.
Output is 400 hp at 7,400rpm, with 440 Nm (328 lb/ft) of torque at 5,600rpm on a 12.5:1 compression ratio, and the rev limiter is set at 7,800rpm. Specific output is 105.3 hp/litre, which is very impressive for a mildly tuned naturally aspirated motor with such impressive fuel economy and emissions. The raw performance numbers are impressive. The manual seven speed Carrera S accelerates to
100km/h in 4.5 sec, with the PSD chopping 0.2 sec off that time. The Sport Chrono Package with its Sport Plus and Launch Control brings this down to 4.1 sec. Top speed is 304km/h or 188.9mph in manual form and 302km/h or 187.7mph with PDK. Active Engine Mounts are part of the Sport Chrono Package, and in this form, the Carrera S boasts a NĂźrburging lap time of a stun-
ning 7 min 40 sec. This is a dramatic 14.0-second improvement over the previous model. As we already saw from the second generation 997 Carrera, direct fuel injection enhances the crispness of the throttle response, especially so in Sport mode, and power and torque delivery are strong and progressive. From the driver’s point of view, the engine is refined at cruise on a light throttle, but makes all the

TORQUE TALK right flat-six noises when you open the tap wide. The engine sound is enhanced in Sport mode by the so-called Sound Symposer, a passive device that amplifies the sound reaching the cabin. To this, you can add the optional sports exhaust system, for an even fruitier acoustic. But while this sounds terrific on full throttle on the open road with the valves open, we found that the added noise can be slightly intrusive at slower speeds when you are not in the mood. Then you simply use the Off button. The latest tweaks to the sevenspeed PDK transmission have turned it into a faultless device. The ZF-made PDK dual-clutch transmission bowed in with the 997 in 2005, and the second-generation software followed on the Panamera and new Cayenne. The new 911’s PDK transmission benefits from third generation software developed inhouse rather than by ZF as before.

Accelerate hard, from rest or on the fly, and the system fires off instant and seamless cog swaps, responding to demands for up or downshifts as quickly and smoothly as you could wish for. After driving a competitors’ sport-biased automatic transmission the day before, the speed and consistency of Porsche’s dual-clutch PDK was a revelation. Some would argue that polishing out some of the 911’s rawness and edges make it less interesting. I would counter argue that while the blade is now sharper, you are now less likely to cut yourself when you use it! What is very apparent is that the new 911 is now a truly balanced machine in all respects that doles out speed, handling, grip, braking and ride comfort in equal measure. And while the 911 has almost always had the edge over its rivals in fuel economy and emissions, it now gives them an even sounder thrashing.
If the new 911 moves the game on this much in Carrera form, the GT3 version that will arrive in 2013 will surely cause great angst to the opposition. While some purists will always complain that each new 911 generation takes away some of the visceral feel of the older cars, in the bigger picture, the 991 model is clearly a product of Porsche’s far sighted 21st Century strategy. The late great Steve Jobs famously said, “Design is not just
about the way something looks and feels. Design is about how it works.” Take it from me that the new 911 just works. Nearly 40 years down the road, it feels like Porsche’s iconic rear-engined sportscar is only just getting warmed up.

Mine, medium, was just the right amount of pink, not too bloody, and was festooned with a crispy puff pastry casing, which gave for a contrast of tender and lightness when united. The potato mouse moat was smooth and creamy, and combined wonderfully with the vegetable panache and lively port wine reduction.

Kaskada are offering a mouthwatering menu ideal for sharing with your loved one, however be sure to book early as reservations are guaranteed to fill up fast. Before we had even perused the extensive menu, we were presented with an inviting duo, the perfect amuse-bouche. Monkfish adorned with an Oriental dressing, along with crispy seafood ravioli resting on a red lentil salad and chilli vinaigrette, with an accompaniment of turmeric sauce. Another appetizer consisted of a quail praline, the presentation as beautiful as the taste.
To conclude the signature journey, we dined on a delicate peanut soufflé with marinated pineapple and Nueva Kaskada sweet dessert surprise, and boy was it a surprising moment when Alexis and the helpful and professional waiters served our extensive dessert feast. There was a collection of crème brulee, raspberry parfait with a hint of Cointreau and a deep chocolate mousse with a touch of mint. Our starter consisted of a variation of Nueva Kaskada fish entrees. Firstly, an intricate prawn cocktail with a touch of chilli and lemon grass. Light and fragrant, it was a welcome change to the traditional English dish we have all come to know. A beautifully cooked scallop, sautéed with a subtle red curry sauce, tempura langostino, and marinated salmon with ginger and lemon, all accompanied with a soya and chilli mayonnaise dipping sauce. This journey of the sea was truly an experience to marvel at, as all flavours married perfectly together. We were fortunate enough to savour two delectable main courses, the first roasted turbot, flaky and full of moisture, sprinkled with garden herbs. While we were dining, we managed to catch five minutes out of

busy schedule to find out more about the chef de cuisine. Why did you choose Spain to apply your trade? Following completion of my studies at The Superb Catering School in Pfuffendorf, Munich, I began working in Schaffhausen before continuing on to London, Sydney, Shanghai, Singapore, Tokyo and Yokohama, before arriving in Marbella where I was offered a job working in Hotel Las Dunas, part of The Leading Hotels of the World. I then decided to move to Tikitano, where I further enhanced my signature style, before taking my place as Culinary Director at Nueva Kaskada. Although we have all been subject to the recession, the way of lifestyle present on the Costa del Sol is what has kept my attention and enabled me to extract inspiration from my surroundings. To ensure we are constantly evolving and in keeping with client’s desires, we have introduced an additional lunch menu, focused around a more casual concept than our traditional fine dining alternative, allowing us to showcase our flexibility and adaptability in relation to customer needs, ultimately maintaining guest happiness and enjoyment. In Marbella, what local produce are you most excited about? All! Local markets are such beautiful places, with so much inspiration and stimulation. Fish and seafood are the most interesting, as they are exciting to work with. Also, fresh fruit and vegetables. Currently, strawberries are in
abundance as they are in season, so we like to create interesting and though-provoking dishes, as opposed to raspberries that are available all year round. What has been the highlight of your career so far? I would have to say our most recent New Years Eve celebration at Nueva Kaskada; the combination of the food and ambience was a truly emotional moment, especially as everyone was so filled with happiness and gratitude. Some might find my answer surprising considering I have worked for The Royal Family under the supervision of Michelin Star Chef Anton Mosimann, along with inspirational chefs such as Willi Nusser-del Adler in Pfuffendorf and Frank Heppner, who was responsible for the Asian influence apparent throughout my signature style, however, where I am today is my greatest accomplishment. You refer to your signature style, how would you describe this? It took me a long time to answer this question myself, I am not fond of the term ‘fusion’ or ‘East meets West’, as it has developed connotations through the media as almost ‘vague dining’, the name given to a mixed menu. It was my prerogative to discover an entirely unique class of cooking and ultimately add my own signature touch, hence the evolution of my signature style. This way, I can experiment with flavours and textures, thus creating original and innovative dishes when and where I desire. Who inspires you? As previously mentioned, my culinary inspiration comes from the motivational and talent-
ed chefs I have had the pleasure of working with. However, if I was to pinpoint one person who helped me follow my dream, it would have to be my mother, I remember being nine years old and wanting to surprise her and my grand mother so chose to make a soup for them. Thankfully they adored my Ewald-style bisque, commenting “Son, I am sure you will make something of yourself in this life.” Another character I admire is Director, Monika Viglioglia. The minute I walked through the door, we instantly clicked and the restaurant felt like home. She truly is the soul of Nueva Kaskada. Finally, our creative team cannot be forgotten. Their imagination, personality, motivation, constant smiles and kindness are what makes Nueva Kaskada what it is.

A
fter what seems like one of the longest months, February is finally upon us. By now, many of us have given up on our New Years resolutions to exercise more and eat healthily, and I admit that I fall into this category and am no longer on track for an enviable bikini body in time for the opening parties of the summer. For all of you who have fallen off the wagon like me, or for those who have persisted (I applaud you), this month we decided to visit NCT, part of Monte Paraiso Golf in Marbella, to sample their healthy dishes and take a tour of the gym. NCT, New Concept Training, is a company dedicated to the world of fitness and wellness. They focus on the installation of spas and gymnasiums, using only the world’s greatest equipment, Technogym. The industry leader in the fitness and wellness genre, its products are characterized by high technology and design. There are two NCT gyms in Marbella, one part of Estrella del Mar in Elviria and the second, the location of our visit, twinned with Monte Paraiso Golf. The latter is located in one of the most sought out areas on the coast. Minutes from the centre of Marbella, NCT is privileged to have The Concha as its backdrop, offering a breathtaking nine hole par three golf course, an extensive gymnasium, fitness studios,

treatment rooms and a café. There are many different types of memberships, specifically tailored to your needs, and from €65, you can enjoy all of the facilities on offer. Open from 9am until 9pm Monday to Friday, the café serves an array of healthy dishes that are quick and simple to assemble, perfect for refueling after a grueling gym session or an afternoon on the course, but packed with flavour and goodness. The chefs at NCT ensure all dishes are executed with finesse; irresistible to the eye and palate, consisting of homemade varieties, classic dishes, appetizers and freshly made smoothies and milkshake, always with a personal touch. Being part of a renowned gym, it is no wonder that the dishes served throughout are created with your health in mind. As we all know, it has been proven that eating healthy is beneficial to us for many reasons: to control our body weight, facilitate digestion and improve our natural defenses. To maintain the highest level of health, the ingredients are sourced from local markets, where fresh and top quality ingredients are always evident.
Commencing our wholesome spread, a selection of hors d’œuvres were served. The first a homemade chicken nugget, created by the talented kitchen staff, the breadcrumbs coating the moist poultry in a textured casing. The deep fried Brie contrasted wonderfully with the vibrant berry sauce drizzled over the breadcrumb shell. The kitchen also produce their own smooth chicken liver pate, adorned over a slice of crunchy toast, with a tangy jus to diverge with the richness of the terrine. Finally, the classic duo of smoked salmon and cream cheese on a flaky pastry parcel. Each appetizer was only a taster of the complete starter dishes, each starting from €5, a bite size parcel of goodness, each complementing its successor. To accompany, a freshly blended kiwi and strawberry smoothie, cleansing our palate with the purity from the fruit. From the main menu, juicy york ham layered over eggs, served benedict style, with the traditional hollandaise accompaniment. A variation to the standard ‘eggs benedict’ served in many restaurants along the coast, the fried egg, combined with the meaty Jamón, creamy hollandaise and lemony zing created an alternative to the classic breakfast dish.

The wraps NCT have on offer are relatively healthy and extremely delicious. From €8, you are served a bulging wrap, ours was crammed with juicy chicken slices, crispy bacon, smooth cream cheese, spinach, velvety avocado and fresh tomato slices, with an accompanying side salad, sprinkled with a light dressing. The wrap is then lightly toasted, fusing the enclosed ingredients and warming them slightly, so that each mouthful is an explosion of flavours and textures. For all the meat lovers, the NCT burger followed, layered with goats cheese, crisp bacon, ripe lettuce and tomato, caramelized onion and decorated with gherkins. The only gherkin I had savoured previous to this was those found in McDonalds burgers, and I’m pleased to admit that these were incomparable to my previous conquests. The succulent beef and the sharpness from the goats cheese coating, combined with what only can be described as the best fries I have ever tasted made for a perfect meal. To conclude the main dishes, the classic club sandwich. Packed with an array of ingredients, including boiled egg, crunchy lettuce, bacon, tomato and creamy mayonnaise, again accompanied with the infamous chips, drizzled with a creamy goats cheese emulsion. The elaborate sandwiches served at NCT start from €7.50.
Next came the not so healthy deserts. Starting from just €2, we gorged on berry cheesecake adorned with fresh berries, and a gluttonous chocolate mousse, with whipped cream and nut shavings. ADANA, (Association for the Rights of Abandoned Animals) an animal charity on the Costa del Sol run entirely by volunteers, aims to provide facilities for the shelter and care of abandoned, sick and injured animals, assisting the local authorities and promoting understanding, respect and affection for animals. Each month, SOCIETY MARBELLA will share with you a small selection of the dogs and cats housed at ADANA, looking for a new home.

One of hi s sisters has alre ady been adopted but Gordon an d his four other brothe rs and sisters are still looking for ho mes. They really are very cute! Th ey are believed to have been born around the 28 No vember and ar e likely to grow to be small to medium sized dogs. They are vaccinated ready for adop tion.
Tommy, along with his sibling Tom were found in the bins, dumped and abandoned, alone, starved and scared. If they had not been found, they would have died a horrendous death, but luckily their cries were heard and they were rescued and taken to FAMA, where they have been cared for and loved by all the volunteers. They are happy and full of fun, they love to play, go for walks and have lots of cuddles, both are very affectionate. Unfortunately Tommy is only one of many rescued animals looking for a good home and a loving family. She is a strong minded young girl who would probably be best suited to a home where she is the only pet as she likes to be top dog - she was temporarily homed but was bullying their Rottweiller! NEW YEAR FESTIVITIES New Years Day saw the return of the ever-popular performer Mel Williams to the Banana Tree in Marbella. The packed Paseo welcomed regulars and a few holidaymakers, where dedicated owner and host Tommy Heaney had laid on a complimentary buffet for all in attendance. A five hour long performance truly showed that New Years Day doesn’t have to be spent hungover, but can be enjoyed with friends in awe of the superb views of the Mediterranean, and Mel’s warbling vocals.

Over recent years, the Cadiz carnival has become one of the liveliest and most dazzling carnivals in Europe with revelers coming from all over mainland Spain to enjoy the fun.
