CELEBRITY SPOTLIGHT

This month we turn the spotlight on The BRIT School alumni

Adele Everything you ever needed to know about this distinctive sounding and extraordinarily talented artist

16

Adele Laurie Blue Adkins Born May 05, 1988 Soul/Jazz Singer From Tottenham, London

A

dele was born Adele Laurie Blue Adkins and came from a nonmusical family, albeit a very supportive one. Her mother used to set up a stage for her in their home where Adele performed shows for her mother’s friends. Her secondary school life didn’t have a particularly strong influence on her singing career; it was only when she entered The BRIT School she began the route to stardom. Enrolling at the school that had graduated famous names like Amy Winehouse, Kate Nash and Leona Lewis, Adele met an inspirational singer named Shingai Shoniwa who we know as the beautifully talented lead singer of the The Noisettes. Living next door to Shoniwa offered Adele the opportunity to jam with her and develop her musical style. She later confessed that Shoniwa was the reason she “wanted to be a writer and not just sing Destiny’s Child songs.”

CELEBRITY SPOTLIGHT Like many other aspiring singers, Adele opened a Myspace account, using it as a platform to share her passion with the rest of the world. By 2004, she was considered a popular online singer but it wasn’t until two years later that she gained a prominent opportunity to showcase her talent. After graduating from The BRIT School in May 2006, she toured around with friends from the industry Jamie T, Jack Penate, and Davendra Banhart. Through Jamie T’s indie label, Pacemaker Records, she released an album entitled ‘Hometown Glory’ that was only available on seven inch vinyl format. By now, Adele had caught the attention of many record companies, but it was XL Recordings that singed the deal. She released her debut album ‘19’, through the label in January 2008; the LP went straight to number one in the UK primarily due to the extremely popular track, Chasing Pavements. The album was also certified platinum four times in the UK. ‘19’ was then prepared for release throughout the US with a date set for June 10 2008. Her career in the US was boosted by a viewer recordbreaking Saturday Night Live episode in late 2008. Her laid-back and down-to-earth attitude is part of the reason fans adore and relate to her as a positive role model. In 2009, she was nominated for four Grammys and won two of them;

Best New Artist and Best Female Pop Vocal Performance. Two years later, she released her second album ‘21’ on January 19 2011. “I’m very excited, nervous, eager, anxious but chuffed to announce my new album! It’s taken a while and it knocked me for six when writing it,” she said of the new release. “It’s different from 19, it’s about the same things but in a different light. I deal with things differently now. I’m

more patient, more honest, more forgiving and more aware of my own flaws, habits and principles. Something that comes with age I think. So fittingly this record is called ‘21’. The whole reason I called my first album ‘19’ was about cataloging what happened to me then and who I was then, like a photo album you see the progression and changes in a person throughout the years.”

The album received critical acclaim and made Adele a record-breaking success, selling 208,000 copies in its first week in the UK, and debuting at number one on the UK Albums Chart, a position it managed to retain for an astonishing 16 weeks. In the United Kingdom, ‘21’ has been certified 12 times platinum for shipment of 3.6 million units. Adele’s success continued stateside with ‘21’ debuting at number one on the Billboard 200, selling 352,000 copies in its first week alone. Adele is the first living artist to achieve the accomplishment of two top five hits in both the UK Official Singles Chart and the Official Albums Chart simultaneously since the Beatles in 1964. ‘21’ has spent 11 consecutive weeks at number one in the UK, the longest ever by a female solo artist on the UK albums chart, beating Madonna’s nine weeks at number one in 1990 with her greatest hits compilation The Immaculate Collection. Across the pond, the album has spent a total of thirteen weeks at number one on the Billboard 200, the longest an album has held the top position since 1998. As of December 2011, Adele has sold 18 million albums worldwide, 5 million with ‘19’ and 13 million with her sophomore album ‘21’. Somehow we don’t think her phenomenal success will stop here.

Last month SOCIETY MARBELLA revealed People magazine’s sexiest man; The Hangover heartthrob, Bradley Cooper. This month, we are pleased to announce it’s the ladies turn. Jennifer Aniston has been named hottest women in the world, beating Angelina Jolie and the iconic Marilyn Monroe. “Funny is sexy, and Jennifer Aniston is funny,” Mens Health explains, “Her downto-earth persona makes her seem attainable... and her all-too-human love life off-screen inspires sympathy that not even a string of bland romantic comedies can diminish. Other sex symbols drift toward one-dimensionality, becoming flat icons in the process, but throughout her career, Aniston has remained sexy, funny, and unmistakably real.”

her weight, ever since appearing in those micro, mini shorts for The Dukes of Hazard, the press have harassed her over every pound gained. However, it may seem the public humiliation has done one thing a favour… her bank balance. The former Newlyweds star has signed a three million dollar deal with Weight Watchers to become their latest spokesperson. After having her baby, she will begin on the Weight Watchers regime to drop the pounds. The deal works in everyone’s favour, as Jessica will be striving to get into tip top shape for her upcoming wedding to fiance Eric Johnson; I’m sure she will be more than happy being paid to count her ‘points!’ Vogue is renowned as the ultimate fashion bible; predicting trends and showcasing the most prestigious of designers. They recently reached new heights by featuring their oldest cover star in history; truly showcasing that ultimate beauty and style has no age limit. 62 year old Meryl Streep graced the front of the prestigious publication and can now add Vogue cover model to her coveted resume which includes 16 Oscar nominations (two wins) and 25 Golden Globe nods (two wins).

Each month SOCIETY MARBELLA shares a secret with you. It may be the freshest music artist, an exciting new designer or the next A list actress, but whoever it is, you know they are one to watch. This month, Society Marbella has its eyes on actress, LILY COLLINS. own career as one of Hollywood’s most in demand young actresses. Lily was born in Guildford, Surrey, to Phil Collins and his second wife, American-born Jill Tavelman. She is the half-sister of actress Joely Collins and musician Simon Collins, and also has two half-brothers from her father’s remarriage. She is currently a student at the University of Southern California with a Major in broadcast journalism. Collins started acting at the age of two in the BBC series Growing Pains. She moved to the United States when she was five and began performing theatre at the Youth Academy for Dramatic Arts. As a teenager, Collins wrote a column for British magazine Elle Girl. She has also written for Seventeen, Teen Vogue, and the Los

Angeles Times magazines. Collins was selected by Chanel to wear one of its gowns at the 2007 Bal des Débutantes at the Hôtel de Crillon in Paris, which was featured on season three of the reality TV show The Hills, during which co-stars Lauren Conrad and Whitney Port continued their work experience for Teen Vogue by assisting with the prestigious event. She was picked by Spain’s Glamour magazine in 2008 as their “International model of the year” and appeared on their cover in August 2009. Lily continued to dabble in television with two appearances in the television show 90210. It was her role in the 2009 film The Blind Side where she played Collins Tuohy, the daughter of Sandra Bullock’s character Leigh Anne

Tuohy when her career reached new heights. She continued to pursue interesting roles such as the warrior priest’s niece Lucy in the thriller Priest, opposite Paul Bettany, and as Karen in the 2011 action film Abduction with Taylor Lautner. Collins is set to star in the first film adaptation of the New York Times bestselling “The Mortal Instruments” novels by Cassandra Clare, playing sixteen-year-old Clary Fray as well as taking on the starring role in Mirror Mirror, an upcoming adaptation of the Snow White fairytale, co-starring Julia Roberts. With a glowing C.V and exceptionally bright future ahead, keep your eyes out for this glowing starlet… and remember we told you first!

Five months after her tragic death, Amy Winehouse has topped the charts again. Lioness: Hidden Treasures, Winehouse´s third album, reached the coveted spot and features a collection of original songs as well as covers of other artists’ tracks. The album was put together by Mark Ronson and friends who shifted through a large number of previously recorded vocal tracks by Amy. £1 from each copy goes to the Amy Winehouse Foundation, an addiction charity set up after her death at her flat in Camden, North London in July 2011. Amy’s mum Janis revealed, “It’s such amazing news the album’s at No1, and just goes to show what she still means to people.”

SOCIETY MARBELLA´s November cover star, Madonna, has a busy year ahead. It is expected she will drop her highly anticipated album this spring and in February, she’ll not only release her film “W.E.” but she’s also set to take to the stage during the Super Bowl halftime show. The singer/songwriter moved on from Warner Music Group and signed with American record label, Interscope Records last year in preparation for her new release, expect BIG things (as if Madonna could get any bigger!) as Interscope is the brand behind the phenomenal success of Lady Gaga and Eminem. The pop queen is expected to produce three albums under the new flag after performing without new material for five years.

Following Piers Morgan’s departure from US talent show America’s Got Talent, Howard Stern has been announced as his replacement. The American radio personality will provide his feedback on the colourful array of optimistic future starlets who are currently auditioning in major cities around America for the show’s upcoming seventh season. “Howard Stern’s larger-than-life personality will bring a thrilling new dynamic to ‘America’s Got Talent’ starting this summer,” said Paul Telegdy, President of Alternative and Late Night Programming, NBC. “He’s a proven innovator and his track record in broadcasting is truly remarkable. Howard is very passionate about this show and is fully committed to its future success.¨

If they are hooking up or breaking up, we know about it!

TAKE TWO AGE CONCERN Extensive age gaps are common practice when it comes to celebrity pairings but in normality, 32 year old Caroline Flack dating 17 year old babyfaced Harry Styles of One Direction is a little… WEIRD! The Xtra Factor presenter spoke to Now magazine regarding her toyboy, “It’s a social thing that people aren’t accepting of big age gaps,” she said. “What’s hard for me to get my head around is people saying that it’s disgusting... If two people like each other and get on, why does anyone else find a negative in it?” Maybe because he isn’t old enough to order a glass of wine and you are old enough to be his mum!

TAKE TWO

Second weddings usually take place later in life, however in the world of celebland we know nothing quite fits normality! 22 year old Peaches Geldof announced her news to the Daily Mail exclaiming, ¨Yes, I´m engaged!¨ However, is seems she has learnt from her previous relationship faux pas, declaring, ¨We don’t want to get married for a couple of years yet though so don’t expect me in a dress yet. I’m so happy!”

GETTING FREAKY

It’s not often we find out about couples who happily admit they don’t want anything serious, however Cameron Diaz and Sean Diddy Combs are all about the casual relationship! They were spotted making out like teenagers in New York City but insist they are not romantically involved! The word booty call comes to mind!?

SUCCESS

Obsessed with Youth By Christie Holland

ame favour the young and youth is ubiquitous, with stars such as 15 year old Hayley Steinfield and 13 year old Elle Fanning fronting luxury designer campaigns, and 24 year old Megan Fox chosen as the face of Georgio Armani’s Regenessence’s Youth Regenerator and Rejuvenating Cream, marketed as a product for reducing the appearance of wrinkles, today’s society worships youthfulness and the prospect of staying young. Ten years ago, stars usually appeared on our radar in their twenties and then took on their defining roles catapulting them to A List status in their thirties or early forties. For the next generation everything has shifted forward… by about ten years! Tweens and teens are the years to break onto the scene, twenties are

the prime, and 30 is the age they either disappear into semi-retirement or announce their plans to become the next celebrity producer or director. This rather cynical thought process was reiterated in an interview with early starter Ryan Gosling. “If I’m still acting at 46 I’ll be surprised,” a Mouseketeer at 12, Gosling made his film debut at 17 before hitting the A List at 24 taking on the lead role in the Notebook. ¨How many characters can you play?” he asked. “I don’t know how much longer you can really do it for. I’ve been acting since I was 12. If I was just starting now, maybe, but now I’m 30. If I do this for 10 more years I’ll be shocked.” Between the 1960’s and 1990’s, the average age of female Oscar winners remained steady at aged 40/41. In the 2000’s the age dropped to 35 for the first time in 40 years; this was primarily due to wins by Charlize Theron at aged 28 for Monster, Reese Witherspoon at aged 29 for Walk the Line and Natalie Portman at the same age for Black Swan; those are Oscar wins, not nominations, the peak of their careers, not the beginnings.

third most powerful celebrity in the world) and 20 year old Taylor Swift found their way to the top jumping in front of the likes of Simon Cowell, Angelina Jolie and Johnny Depp who have decades of fame behind them, unlike Beiber and Swift who have’t even been on the planet for that space of time. 25 year old Lady Gaga topped the Forbes Celebrity 100 knocking Oprah from her prime position (an occasion that has only happened three times in the seven years she has held the top spot). Despite only hitting the quarter century mark, the infamous Gaga stamped on her competition due to her earning power and phenomenal ability to attract attention, whether it be in a meat dress or an egg. So can Hollywood’s obsession be tamed? Helen Mirren received the coveted accolade of 2011’s Body of the Year. At age 66 she is considered as having the most desirable body in Hollywood, a refreshing proclamation; however if you saw the recent images of Helen in New York Magazine, this announcement should come as no surprise, the Dame is a true representation of the phrase… age is just a number.

In recent years, the rise of young Hollywood has become increasingly evident. Forbes annual celebrity lists are the ultimate definitive when it comes to power and stature and whilst the inevitable Oprah, Elton John and U2 again found themselves in the top ten, newbies 17 year old Justin Beiber (who is considered the

NIP + TUCK Society Marbella brings you the latest buzz from the world of cosmetic surgery. Marco Vricella MD, is the Chief Cosmetic Surgeon at Aria Medical Group. He is a member of the British and Spanish General Medical Council; plus the Gibraltar Medical Board

BREAST AUGMENTATION Talk us through the free consultation... This is designed to give patients the opportunity to find out exactly what can be achieved for them with cosmetic surgery. After taking a detailed medical history, I examine the breasts, discuss the patient’s expectations and explain what can be achieved. When I am clear what the patient would like and that the expectations of the patient are realistic I then explain the procedure in detail. Using illustrations, I make clear to the client the details of the procedure, including the position of the incisions, and whether the implants will be placed in front of or behind the muscle. Patients are encouraged to ask any questions they have and are given as much time as they need to make decisions. What implant type do you prefer? I personally work with McGhan (Allergan) and Silimed cohesive silicone gel implants; as I feel that they provide the highest quality results, with a good guarantee. Using a combination of these manufacturers I can offer a wide range of shapes, sizes and projections to suit the individual needs of the client. This is imperative in order to obtain the best possible result for each individual patient. Aftercare & Recovery Generally, a sports bra is worn for the first four weeks post-operatively;

during which time, heavy lifting / upper body exercise is not allowed. Most of the swelling reduces in the first two to three weeks. I see each patient at one week post operatively and again at two weeks. All patients, regardless of the procedure they have undertaken, are able to call either myself or my Specialist Nurse, 24 hours a day following surgery. At Aria we consider post-operative care to be as important as the procedure itself and patients are seen regularly over the course of the first year and beyond to monitor their progress.

BREAST REDUCTION What are the benefits? Breast Reduction is a surgical procedure used to decrease the size of large, often pendulous breasts. This procedure greatly improves quality of life by relieving back and neck problems frequently experienced in such patients. In addition, self-confidence is enhanced since a lot of women have suffered for many years with embarrassment about their breast size and after the procedure they are able to wear clothes that previously they would not have even considered. Talk us through the procedure... Breast reduction usually takes two to three hours and is performed under a general anaesthetic. After surgery patients need to stay in hospital for two days. The most common procedure involves an incision following the natural contour of the breast. The incision outlines the area from which breast skin and excess tissue will be removed and defines the new location for the nipple. When the excess tissue has been removed, the nipple and areola are relocated to a new, usually higher, central position. Stitches are usually located around the areola, in a vertical line extending downwards from the nipple area, and along the lower crease of the breast.

BREAST UPLIFT Who makes a good candidate? Patients whose breasts have begun to sag and/or have lost volume in the upper part of the breast are good candidates for this type of surgery. In a number of patients it is helpful to perform this surgery with a breast augmentation using small implants to improve the shape, size and projection of the breasts. What results can a client expect? The patient will have breasts which have greatly improved shape, size and position; something that will definitely show at the beach next summer! Can an uplift be combined with other procedures? If the patient is in good general health all breast surgery procedures can easily be combined with at least one other type of surgery. The main advantages of having more than one surgery performed at the same time is that the results are even more dramatic and the cost of two surgeries together is much cheaper than if they were performed separately. ariamedicalgroup.com

Water-jet liposuction with Body Jet: Modern body contouring Dr.Alexander Aslani and Dr.Manuel Ortiz Abello are the consulting surgeons at Cirumed Clinic Marbella; they both also work in the Plastic, Aesthetic and Reconstructive surgery department at Hospital Quiron Malaga. Dr.Aslani is chairman of the department and at present the only non-hispanic surgeon to chair a formal surgical department in Spain, while Dr.Ortiz Abello, a principal consultant, is primarily a facial head and neck cosmetic surgeon. Together they boast nearly 50 years of surgical experience and their aim is to combine their years of international experience with the most modern plastic surgery techniques available.

What can Body-Jet be used for?

Dr Aslani: Body Jet was originally developed as a technique for gentle and atraumatic fat removal. It enables the surgeon to perform fat removal as a

virtually bloodless procedure. The principle of Jet assisted lipectomy is a very precise water jetstream that gently dissolves fat out of its tissue bed. The fat can then be harvested with the Body Jet technique and tranplanted for a natural soft tissue augmentation; mainly in the face, breast and buttocks. The Jet assisted fat transfer technique is further ideal for correction of contour deformities following conventional tumescent liposuction.

How does it work ?

Dr.Ortiz Abello: Body Jet is a minimally invasive procedure; under local anesthetic a fine double lumen cannula is inserted via a mini-stab incision and connected to the Body Jet system. The waterbeam, which works at pressures between 0,5 to 0,8 bar and is extremely precise, exits through one lumen of the cannula, and simultaneous suction of the dissolved fat. The fat is pooled in the so called ¨Lipocollector“ which uses a special filter system to clear the fat, which is then ready for use in soft tissue augmentation if desired.

Lastly, Body Jet is significantly less traumatic and much gentler. Even large quantities of fat can be removed under local anesthetic with virtually no blood loss. We have banned traditional liposuction from our practice, since we regard it as no longer justifiable. The only advantage that traditional liposuction has is that it does not require a lot of technology but a suction tube and a cannula. But this is only an advantage for the surgeon not for the patient.

How does it differ from traditional liposuction ?

What are the benefits?

Dr Aslani: Body Jet differs significantly for three main reasons. Firstly traditional liposuction involves pre-injection of large quantities of fluids prior to suction. This makes liposuction much less precise than Body Jet. In a CME paper by the American Society of Plastic Surgeons, the seven reference centres for liposuction in the United States, have reported average rates for corrective revisions after traditional liposuction to be 20% (a very high percentage,) for Body Jet liposuction, the number is about 10 times less. Secondly, whilst fat harvested via traditional liposuction can be prepared for fat transfer, the success rates of these are very unpredictable, Also the preparation process is very long and thus costly for patients. Body Jet enables surgeons to harvest excellent quality fat grafts without lengthy preparation procedures.

Dr.Ortiz Abello: It‘s a very safe and effective technique of fat removal with the additional advantage of currently being the most advanced and successful technique in fat transfer. The fat can be used as a filler for the face, where it treats age related volume loss and deep wrinkles. It is also used for natural breast and buttock augmentation. The Body Jet technology has been voted as the most significant technical innovation of the decade by the 2011 European Academy of Plastic and Reconstructive surgeons. Finally, all Body Jet procedures are performed under local anesthetic, the procedures are ambulatory and patients go home the same day. cirumed.es

HAIR LOSS DON’T GAMBLE

There are days when you wake up with the hair of a goddess; it’s shiny, it’s silky, everything is perfect. Then there are ‘those’ days, when the hair monster has paid you a visit in the middle of the night. How else could you have got yourself into such a hideous mess? So what should you do when these bad hair days occur? Follow these tips to beat the bad hair day blues.

DRY HAIR

Dry hair lacks the oil and moisture to give it a sheen and softness. As a result, hair will often have a strawlike texture. This is caused by sun, salt, chlorinated water and excessive use of heat and colouring your hair.

• To treat this condition, trim hair every six weeks and try to limit washing because shampooing also eliminates the hair’s protective oils. Combat dryness with a weekly deep conditioning hair mask. • Let your hair dry naturally whenever possible, thus minimizing the use of hot styling tools and always apply a serum. • Quick Fix: Hide dry frayed ends by pulling hair up into a bun.

OILY HAIR

Oily hair sticks together, lies flat and is difficult to style. This is caused by overactive sebaceous glands which produce too much sebum or oil. • The best way to deal with oily hair is to shampoo every day with a mild clarifying shampoo and use conditioner only on ends. • Too much brushing stimulates the oil glands that are already over-active. • Quick Fix: Use dry shampoo for a dry cleanse and a quick finish!

FRIZZY HAIR

Frizzy hair usually affects those with naturally curly and/or coarse hair. Many people simply have naturally frizzy hair, but other causes can be a lack of moisture and protein, environmental elements, over-styling or colouring. • To beat the frizz, don’t shampoo every day. Your hair needs the natural oils from the scalp to reduce frizz. Use a smoothing curl enhancing shampoo with protein and panthenol. Keep hair wellconditioned and when blow-drying, use a diffuser. • Quick Fix: Curl ends with an iron and be sure to use a silicone-based product on the tips. If all else fails cover your bad hair day up with a funky hat or bandana, stick on some sunglasses and with plenty of attitude, walk out the door. Your bad hair WILL NOT ruin your day - if you don’t let it, that is!

FEEL-GOOD FACTOR

THE BEAUTY BOUTIQUE I decided to add microdermabrasion to my treatment list as…

CACI Facials are fantastic for re-educating facial muscles however I felt the need to offer my clients a little more. Many people who have CACI treatments point out blemishes and pigmentation they have developed over the years. Microdermabrasion works on the skin and is a perfect treatment for targeting uneven skin tone, blemishes and pigmentation.

This month Society Marbella delves into the world of CACI beauty specialist, Lucie Lord.

I never thought I’d become... a

beautician. I was working with a friend as a party planner when the credit crunch hit. I already knew the lady who had the first CACI machine in the area and she was winding things down getting ready to retire. I asked her where and how to train and then made the trip to London to obtain my qualifications.

I offer.... a whole range of facials from hands on treatments to a combination of a regular facial plus a hydratone mask which re-hydrates using micro-current charged rollers to allow the products to penetrate deep into the skin. I also offer body treatments using pads for slimming and toning and probes to lift the bust and buttocks. My newest skill is threading. My treatment room is...white with a touch of bright green, the CACI colours, it looks fresh and clean. I have large mirrors along one wall which is useful for seeing the results after a treatment. When you

go for a treatment you expect to look and feel better afterwards. Therefore it is important to create the right atmosphere; I do this with calming music to create a relaxed ambiance.

I like to use… the Caci hydro-moisturiser in winter as it is rich, like a night cream, and works well for the final stage known as feathering. I have a range of natural products with aloe vera which are great during the summer months. For cleansing I love Liz Earle’s hot cloth cleanser, it has a fantastic eucalyptus scent. I love... seeing the results and helping to

make people happy and more confident. I try to listen to each individual and tailor their treatment to meet their needs. I really enjoy working in beauty and I hope that my passion is felt by the people who come to me. ALL GAIN, NO PAIN By Grant Foster

A

s we enter the New Year, many people make resolutions to start exercising for the first time or restart their failed fitness programmes in order to lose weight or become healthier. During the first few months many of these people will suffer from various strains and possible injuries.

• When you are using exercise specific weights, such as a bench press, use a light weight in a controlled manor with a full range of motion; i.e. lower the weight until it touches the chest and then straighten the arms (but do not lock them) for 15 to 20 reps.

Throughout my time as a Sports Massage Therapist, I have come across numerous muscular aches, pains and injuries that could have been avoided by following some simple steps. If you are starting to exercise regularly for the first time the easiest and safest solution is to hire a personal trainer. However if this is an expense you cannot afford, don’t panic, just follow my simple guidelines;

• I am often asked about stretching as research has shown that stretching prior to exercise can prevent an injury. The main thing is warming up and mobilising, which should be exercise/sports specific. Stretching after exercise is the most important part. The reason being that you want to return the muscle to its pre-exercise state. While exercising the muscle becomes contracted (shorter,) if the muscle is not returned to its pre-exercise state the chances of injury are far greater the next time you start exercising.

• First, warm up for at least five minutes, and that means a whole body approach, by mobilising and loosening all of the joints and muscles, i.e. if you are using a gym, utilising the rowing machine or cross trainer would be two excellent choices.

34

• Don’t increase exercise by more than 10 % per week, this will give the muscles time to adapt and not over strain them.

• Rest; this is the most important aspect in all exercise programmes to get adequate rest. When starting exercise more is not always better. • When using weights the correct technique is better and safer than trying to lift a heavier weight incorrectly. • Change your exercise programme on a regular basis in order to stimulate the body ensuring that no areas are neglected. These tips may seem very easy and logical, but it is surprising how many clients I deal with who fail to follow some of these simple rules. Play it easy, play it safe, for an injury free life. fter a gallon of eggnog, one too many mince pies and a whole box of Cadbury Roses to yourself, it’s fair to say that following the holiday season, you may not be feeling your best. The great news is, it’s a new year, so out with the old and in with the new. January is the perfect month to start getting in shape and working towards a healthier lifestyle. I can already see you shaking your head and mumbling, “I am too tired, too cold, cannot be bothered and would rather just sit by the fire with a mug of hot chocolate and an extra portion of marshmallows and whipped cream.” This is where I step in – to MOTIVATE YOU. We generally associate personal training with celebrities or professional athletes, but this shouldn’t be the case. Personal trainers are a brilliant way for anyone to not only get into shape, but also to create a healthy body which performs at its fullest potential. I have been a certified personal trainer for over 20 years. I started as a coach in Sweden for gymnastic girls, then moved to L.A where I worked as a personal trainer for 11 years in YMCA and Worlds gym, finally relocating to Spain in 1998. My clients include everyone from Marbella socialites to athletes and even Saudi Royalty. I like to customize the training by identifying the clients goals and creating a personalized fitness plan. I cater to all fitness levels and needs whether it’s in the comfort of your own home, gym or even the beach.

I wanted to show clients that a healthy nutritious diet does not mean that food needs to be boring. People think that healthy food is eating a salad every day; I show my clients that you can still enjoy your food even when it is packed with nutrients. My philosophy is that health and fitness must be a part of your everyday life, not a chore, so give me a call and see how exercise can be fun and effective. NEW YEAR NEW YOU As the pile of dusty discarded self-help books in the corner of my study will verify, the start of the New Year is the perfect time to reinvent yourself. So as someone that’s undergone more lifestyle changes than Robert Downey Jr, here’s the Giles Brown guide to your New Year resolutions in Marbella.

GET FIT

Recent research, probably conducted from the parking lot outside McDonalds, concluded that over 66 percent of adult Americans are considered overweight or obese by recent studies, so it is not surprising to find that weight loss is one of the most popular New Year’s resolutions, and a quick look at some of the lard buckets waddling around La Cañada on the weekend confirms that Spain isn’t far behind. If having the fat pumped out you at a clinic or an expensive gym membership doesn’t appeal, there are plenty of low cost options available, purely by getting outdoors and enjoying the climate. Along with other members of the SOCIETY MARBELLA team, I climbed La Concha, Marbella’s emblematic mountain, for the first time in 26 years at the end of last year and marked the achievement and my new level of fitness by getting my kit off in celebration. Previously, the only time that I’d ever done the 100 metres in under five minutes was being thrown out of nightclubs by enraged bouncers. As an aside, with the demise of the emblematic Marbella arch, the city is looking for a symbol. Rio has its famed Christ the Redeemer statue, so I’m more than happy for the Ayuntamiento to use the naked photo of me on top of La Concha that shot across Facebook like a virus as a starting point. Normal commission rates apply.

MORE CULTURE It’s the common cry among the great unwashed in Marbella. There’s no culture here! So let’s just explode that one in the next paragraph or so. A quick flick through last year’s diary included an opera festival, piano recitals and a bursting portfolio of art gallery openings, ranging from ceramics in industrial units to international exhibitions, with a smattering of European aristocracy in attendance. Mind you, after the way most of the audience behaved when dance superstar Joaquin Cortes brought his show to Marbella, it’s not surprising that Marbella can seem like a cultural desert. This was the first tour that Cortes had undertaken since the death of his beloved mother, and some parts of the show were obviously deeply personal, moving and quiet, and (understandably) not as raucous and full of joy as his ‘live’ show had been at the bullring a few years ago. But that was no excuse for certain parts of the audience to start shouting out their orders for the VIP bar, speak to the nanny on their iPhones or just get up and leave, complaining that “they couldn’t see his feet”. What the f*** were you expecting? Riverdance? I must make a special mention for the genius at the nearby beach club who decided to let off fireworks halfway through the evening, forcing the diminutive dancer to stop his performance. It’s a wonder Cortes didn’t storm offstage. This, remember, is a man who once dated the uberstroppy supermodel Naomi Campbell.

In case you didn’t notice, Málaga is just over a 30-minute drive from town. As the sixth largest city in Spain, there’s a lot more to it than the arrivals gate at the airport. The Picasso museum, CAC, which has hosted exhibitions by Gilbert and George and the Dinos and Jake Chapman, as well as the Cervantes Theatre, a handful of art house cinemas and the Antonio Banderas Drama School in the pipeline.

TRAVEL MORE Another resolution is to travel more. I’m lucky that my ‘work’ takes me around Europe and to fabulously romantic locations, such as watching Venice’s Gran Via come to life at dawn, a living Renaissance painting and the Full Moon rise majestically over the Sahara. Admittedly, at these fabulously romantic locations I tend to be accompanied by my best mate, photographer Kevin Horn, and he’s not my type, I assure you. (Sorry Kev!). In 2012, I’m planning on visiting Lisbon, Copenhagen and Bogota for the first time. In the case of the latter, it could quite possibly be the last trip I’ll ever take!

SPEND MORE TIME WITH FAMILY AND FRIENDS

No, I don’t mean on Facebook. In the flesh, face to face. Though if you have family and friends like some of mine, Facebook is sometimes a better option. I was once asked why I didn’t follow Eastenders or Corrie. “Have you met the family?” was my curt reply.

HELP THE ENVIRONMENT

As I have said before, to most of Marbella, the most pressing environmental issue is getting a table on the terrace at Terra Sana. With the risk of sounding sanctimonious, I’ve made my own small step to combat the threat to the environment over the years, while at the same time solving one of the EU’s more persistent surplus problems. I used to help out by recycling my old Vina Sol bottles so I was not only helping the planet, but also single-handedly lowering the EU wine lake!

STOP SMOKING AND DRINKING These last ones, ladies and gentlemen, are the most frequent. Those of us who lived in Marbella in the 80’s can remember the smog that used to hang over bars and restaurants. Spaniards used to smoke proper cigarettes, tabaco negro such as Celtas and Ducados, none of this poncey Marlboro Light stuff. I’m sure that I once saw a carelessly smoked Ducados bring down a light aircraft near Coin. But the smoking ban throughout Spain, with the exception of the Asador Guadamina where they are apparently still getting over the fact the Franco is dead and women have the vote and allowed patrons to smoke in a blaze of publicity, has made giving up the dreaded weed (no NOT that one, I mean tobacco) easier. After the endless round of parties, drinks receptions and company bashes that make up the month long Christmas celebration in Spain, giving up drink altogether may seem a more sensible option. However in a country that gave the world the carajillo (coffee and brandy) to ‘get the cogs’ going in the morning, as well as the proverb ‘never trust a man who doesn’t drink’, it’s a tricky one. Perhaps you should just follow the immortal words of Dean Martin, who gave the world this gem. “The rest of the world is two drinks behind me” with his sage advice on how to avoid hangovers. “How do I avoid hangovers? Simple! Stay drunk!”

Q

uay Property Group, owned by John May, has been completing high-end building projects in and around Marbella since 2007. John’s workload is almost exclusively generated from recommendation and repeat custom, due to his unique design and build approach. Quay Property Group continues to deliver first class designs and exceptional quality projects, the perfect example being the recently opened, La Fishita. Situated behind the H10 Andalucía Plaza Hotel in Puerto Banus, this English style fish and chip restaurant is one of John’s latest completed projects. Once again, Lawrence Otterburn teamed up with Quay Property Group, who designed and built La Casita, the stunning and highly successful restaurant in the beautiful village of La Heradia. The design brief for La Fishita was to create a brand new restaurant in Puerto Banus that was welcoming with a contemporary design and efficient working layout. The existing building was completely refurbished and remodelled, incorporating a new electrical and mechanical installation to cope with the requirements for a fish and chip restaurant. ‘’The building project was not short of challenges, but John and his team

found solutions and implemented actions to resolve efficiently. One of the key factors in selecting Quay Property Group for this project was the quality of previous developments, I am please to say we can now be added to that list” says restaurant manager Colin McGeary. A raised terraced dining area was installed with glass folding doors so clientele can dine alfresco. Blue LED lighting to suit the company logo illuminates the perimeter glass and etched logos.

YOUR RIGHT TO CELEBRATE

VACATION ALLOWANCES by Paula Nuñez de la Peña

F

inally the much awaited holiday season has arrived with trees in every corner, lights adorning every window and final preparations for Christmas Eve dinner; meat or fish, turkey or chicken, white or red wine and thousands of other questions in order to make the night perfect. It’s time to get together with family and listen to the old jokes, and renowned war stories of those sat around the table. In every conversation you hear the highlights of the year, the successes, the battles won and wishes for the coming year. But if you sharpen your hearing, it´s mingled with disappointments and concerns. This time last year a member of my own family, knowing my capacity as a lawyer, let me on to one of her concerns. Her maternity leave was coinciding with her vacation time, but the company had denied her request to take her vacation at another time. Before addressing her personal concern, I explained that Act.38 of the Workers’ Statute states that all workers are entitled to a paid annual vacation period, not to be replaced by financial compensation, lasting a minimum of 30 calendar days to be fixed by collec-

tive agreement or individual contract. Companies are required to set the holiday schedule with the worker with at least two months advance notice. This must be planned annually by mutual agreement between the employer and the worker, with any disagreements being presented to the Supreme Court. However, this did not answer her doubt as to whether she was entitled to enjoy her holidays at a separate period to that of her maternity leave. I, quite angry with the performance of the company, started to explain all kinds of details that she might not be aware of, including her rights to challenge the company’s decision. I explained to her that the Spanish Supreme Court gives women the right to take their maternity leave without losing any of their vacation allowance based both on the different interests protected by the two laws as much as the inability to allow discrimination against women. I explained that while maternity leave was in the interest of the rest needed after childbirth and the care required for the newborn child, the interests protected by annual leave were completely different, and were instead to

promote recovery, both physically and mentally, after working all year in the company. Therefore both interests must be protected equally and the company could not deny her request. I informed her that she could not be denied from taking her annual holiday allowances at a different period to her maternity leave, as this would establish a clear discrimination between men and women, since only the latter (theoretically at least), would be discriminated against, seeing their annual leave diminished or eliminated due to their maternity leave rights. Now calmer because she knew her doubts had been resolved and that she was entitled to claim her holidays, she began to throw a missile of questions about whether she could enjoy her holidays next year, what would happen if her holidays coincided with a period of sick leave, if she had accrued vacation and had not enjoyed it before the end of her contract... and so it continued for the night until the clock began to ring and we had to focus all our attention on following the Spanish tradition of eating twelve grapes, one for each chime.

The film charts the life of the Prince and the development of Marbella from a small fishing village to the cosmopolitan city we see it as today. It documents memorable occasions such as the visit of the Duke of Windsor to the hotel, Prince Alfonso’s influence in bringing the King of Saudi Arabia and many stars of stage and screen to the area. Central to the film is an in depth interview with Prince Alfonso, just three months before his death in 2003, talking candidly about his love affair with Marbella and the ups and downs of creating his beloved hotel. It also talks to many friends and family to give a personal account of his extraordinary life and his legacy.

TORQUE TALK

Our in-depth motoring review

Motoring author, racing driver and photo-journalist Ian Kuah reports on the SLS AMG ROADSTER High in the hills above Monaco, a rousing soundtrack echoes off the craggy rock face and into the valley below as our red SLS AMG Roadster negotiates the sinuous road carved out of the very face of nature.

72

TORQUE TALK

TORQUE TALK

T

he deep bellow of its big V8 rises in pitch and intensity with revs, popping and banging on the over-run as unburnt fuel joins the hot exhaust in what AMG engineers term a “controlled misfire.” This is one of finest and most inspirational automotive soundtracks ever.

fixed roof adds a layer of insulation between you and the outside world. In the Roadster however, when its canvas roof is folded away, the sky is literally the limit.

With the small, thick steering wheel of the new SLS Roadster in my hands, I am having the time of my life. While I do enjoy every moment I can steal behind the wheel of the Coupe, the Roadster version adds a whole new dimension to the SLS act.

Like all open cars, the Roadster brings its occupants so much closer to nature and the big outdoors that enthusiasts crave. Hearing the big, four-cam V8 doing its work a step away in the Coupe is nothing like the up close and personal feeling you get during an al fresco drive in the Roadster. It takes the grin factor to the next level and beyond.

The Coupe’s gullwing doors are a constant draw for onlookers, but its

When one of the engineers asked me for my first impression of the new

Roadster after my afternoon’s drive, I told him that if AMG were to bottle this soundtrack, it would surely be the next best seller to Red Bull with car junkies. We discovered the flipside of the SLS Roadster experience when we cruised through the famous Casino Square in Monaco. In this place where people gather to watch the rich and famous in a time honoured ritual, the Roadster was in its element. We stopped for a few photos in front of the Casino, and suddenly every tourist with a camera or camera phone wanted their own Kodak moment. The SLS Roadster may not be as spectacular as the latest Ferrari or Lamborghini,

TORQUE TALK

but its subtler brand of visual panache prompted onlookers to home in for a closer look. While the SLS Coupe woos the crowds with its gullwing doors, the Roadster seems to do the job by just being. Like the W198 300SL Roadster of 1957, it is a pure and simple shape with minimal drama, but a lot of class. You would think that a wide supercar with a 1.57 metre long bonnet would be difficult to place on narrow roads. In dimensional terms it is, but so long as you do not let this thought paralyse you, it is not really that difficult to thread thought narrow streets like the ones in Monaco.

The cars practical downside here is a less than London taxicab small turning circle. This means you have to judge your turning in point well if you want to sweep round tight bends like a pro, whilst maintaining a nonchalant demeanour in front of the chattering classes. Push the button on the centre console and you are just 11 seconds away from either al fresco fun or a snug closed cabin. That is how long it takes for the snug triple-layer canvas roof to deploy itself either way. You can even operate the roof on the fly up to 50km/h, so a sudden downpour while you are in slow moving traffic need not turn into a soaking.

Still on the subject of practical matters, the 173-litre boot has only three-litres less capacity than the Coupe’s, and there is no change to the fuel tank capacity. AMG’s dry-sump 6,208cc M159 V8 motor delivers the same explosive 571hp at 6,800rpm, with 650Nm of torque at 4,750rpm as in the Coupe. Extensive wind-tunnel work has ensured that the drag coefficient remains so close to the Coupe’s 0.36 that top speed is the same 317km/h. The extra 40kg has had no effect on the 3.8 sec 0-100km/h time either. AMG development chief, and Member of The Board, Tobias Moers, explained that his team developed the Roadster in

75

TORQUE TALK

parallel with the Coupe, so the extra structural stiffening required for the lightweight alloy space-frame was on the drawing board from day one. “The front windscreen A-pillars are made from ultra-high-strength, heatformed steel for maximum roll-over protection, while a reinforced bar above the rear bulkhead incorporates the roll-over hoops and strengthens the structure behind the seats,” he explained. “We also use thicker metal with a different cross section for the sills, extra stiffening around the transmission tunnel, and a tie bar between the rear suspension towers. In addition, we have two vertical reinforcing ribs from under the front screen to the transmission tunnel area to help dampen out harmonic vibrations.” The extra structural strengthening only adds two kilograms to the weight of the body-in-white. And at 1,660kg, the Roadster is only 40kg heavier than the Coupe, weighing about the same as its chief competitor, the Porsche Turbo Cabriolet.

76

The torsional stiffness figure is 18,000 Nm/degree of twist. To put that in perspective, the current SL shows 16,400 Nm/degree, while the SLS Coupe is 29,000 Nm/degree. Since open cars usually have around half the stiffness of their fixed-head equivalents, the SLS Roadster’s number is impressive. The structure certainly feels rigid on real world roads with bumps, cambers and potholes. I was looking for signs of scuttle shake on roads still pock marked from last years hard winter, but any sign of movement through the steering wheel was insignificant. This is definitely one of the most rigid roadsters out there at any price. A stiff shell means the suspension can be set up relatively supple without losing the all important handling edge. AMG debuted their new optional AMG Ride Control (ARC) system on the Roadster. This electronic damper control system will also be offered on the Coupe with immediate effect. The three damper settings are activated via the AMG Drive Control’s

Comfort, Sport and Sport Plus settings, but the separate Damper control button on the console means you can choose Sport for the engine and gearbox along with Comfort for the suspension if you so wish. In Comfort mode, the suspension has a low speed secondary ride with a suppleness that suggests you can drive this car every day. The last SLS I drove was a Coupe with the optional Performance Package that I took from this same area to Paul Ricard for a track test. Its low speed ride was relentlessly firm on urban roads in Nice, only smoothing out at speed on the open road. The new ARC system has this level of stiffness as its Sport Plus setting, while Comfort mode is a whole different ball game. “In Sport Plus setting, the ARC system makes the SLS even faster on track. We gained two seconds a lap on the Nurburgring,” said Tobias. “The Coupe will now lap the Nurburgring in 7 min 36 sec, while the Roadster does it in the low 7 min 40s.”

TORQUE TALK

The stiff structure is certainly a boon when you are pushing the car hard on mountain roads like these. In Sport plus, the suspension setting was too stiff, so I backed things off to Sport and found the perfect balance. Similarly, Sport plus on the AMG Drive Unit was too aggressive for road use. It is fantastic on the track where you are normally either on full throttle or hard on the brakes, but on the road, where you use part throttle a lot of the time, it produces a jerky drive. So once again, either Sport or Manual mode was engaged.

Wind is always a problem when you open the roof of a convertible, but the combination of windscreen angle, which is unchanged from the Coupe by the way, side windows and the glass deflector behind the roll over hoops, keeps the cabin relatively draft free up to significant speeds. In my own experience, 180km/h is not a problem, but when I made this remark, Tobias casually replied that the sheer volume of wind noise gets very unpleasant at around 280km/h!

Between and through the countless bends of all radii, second and third gears were the norm, holding the revs for engine braking and only using the powerful brakes for stopping, or washing off big speeds.

Airscarf was introduced with the previous generation SLK, and has since been adopted by the SL, and now the SLS Roadster. It is a box that AMG see almost everyone ticking, although it stayed off on the balmy French Riviera conditions we experienced during the launch event.

In the light of my experience with the system on these roads, I would not order either Coupe or Roadster without the AMG Ride Control. The benefits in both ride and handling are abundantly clear, and it effectively makes the SLS Roadster three cars in one.

Speaking of gadgets, the AMG Performance Media system also makes its debut with the SLS Roadster. Using the COMAND screen, it displays information like lateral and linear g-force, braking, power, torque and throttle angle. Used as a data logger, you

77

TORQUE TALK

can record up to ten laps, with lap and sector times, so it is a useful training aid. Unfortunately, it does not show your lines on track as AMG says the satellites are not accurate enough. When AMG planned the SLS Roadster, they projected a 50/50 sales split with the Coupe. In the event, the actual take-up rate is looking more like twothirds in favour of the Roadster. While that is no surprise, the fact that the original 300SL of 1957 only marginally outsold its Coupe sister, (1,858 to 1,400 units) shows how times have changed. To my mind, all it would take to encourage a prospective buyer to sign up for the Roadster is a drive like the one I enjoyed under warm blue skies with that amazing soundtrack ringing in my ears. That soundtrack, by the way, also makes the SLS Roadster my new favourite car for long tunnels!

Speaking from experience… Bose has introduced the SoundLink Wireless Mobile speaker, a portable speaker that connects wirelessly to any Bluetooth enabled device. Now, the music from a smartphone or tablet can be streamed at the touch of a button and played aloud anywhere with a level of audio performance, mobility and durability that’s entirely new for Bluetooth speakers. With no wires or docking needed, at less than five centimeters thick, and no bigger than an average book, it can easily fit in a bag, backpack or briefcase. For instant setup, its integrated cover unfolds into a stand. Open the cover, and the system is ready to be played. Close it, and the system shuts off. A rechargeable lithium-ion battery supplies power for more than three hours at high volume, and for more than eight hours at typical listening levels, and being able to resist salt, fog, sand, wind, and moisture, it’s ideal for the beach, park, party, home, or office. And using end-caps made from automotive-grade chrome, it will survive being dropped repeatedly. What more could you ask for? bose.co.uk

he Marbella Club Hotel, located in the heart of the Golden Mile is one of ‘The Leading Hotels of the World’ and was once the private residence of Prince Alfonso von Hohenlohe. It features 121 luxury bedrooms and suites, spread over the breathtaking beach front resort, har monizing with 14 Andalusian-style villas speckled throughout 42.000 square metres of lush subtropical gardens, each with their own private garden and heated pool. The Marbella Club Hotel is famed for their Thalasso Spa, which includes a dynamic indoor seawater pool, steam baths and saunas, a solarium and 12 treatment rooms, their stunning private 18-hole Golf Resort, and uninterrupted views of the Mediterranean. Opened in 1954, and steeped in historic beauty it is considered a meeting point for international prominence and Jet set, once attracting Hollywood royalty Audrey Hepburn and Bridgette Bardot.

Open from 10am, MC Café is the per fect choice for any occasion: a morning coffee, a late breakfast or for an invigorating mid-day appetizer (make sure you try one of the gour met pizzas, simply delicious!) Also ideal for a light lunch or a relaxed and delicious dinner, it is continually distinguished by its first rate service. MC Café’s infor mal yet fashionable atmosphere is what differentiates it from the rest. The trendy Euro-Asian fusion cuisine has proven a fir m favourite amongst locals and tourists alike; head chef Juan Martin has been developing his signature food concept since initiating his culinary journey many years ago. With a CV boasting prestigious restaurants such as a Michelin Star kitchen in Tenerife, his passion has matured since childhood; his family being credited for his talent.

COSTA CUISINE dish that is passed out of the pioneering kitchen. The second platter included a selection of sashimi; tuna, butter fish and salmon, each slice wafer thin, allowing the depth of flavour to emerge onto your palate. The accompanying wasabi and ginger developed on your tongue, bringing a piquant tendency to each bite. Considered the finest dish in Japanese culture, we were definitely spoilt! The following was my personal favourite dish; risotto of wild mushroom with a truffle and Par mesan

foam, the earthy tones of the mushrooms marrying per fectly with the rich and porous rice. The refined taste of the truffle and distinctive Par mesan foam gently glazed the body of the meal, allowing for all of the flavours to develop in their own individual time frame. A momentary break from the vegetarian style dishes presented for mally; carpaccio of bresaola, drizzled with olive oil, embellished with a rocket, sundried tomato and pine nut salad, enveloped in a Parmesan parcel. The velvety texture of the salted beef complemented

the crisp rocket, crumbled nuts and brittle cheese disk. Three fish dishes ensued, per fectly grilled salmon resting on a bed of sautéed tomato and crunchy bean sprouts, decorated with a lime butter salsa and dotted with capers. Moist and wonder fully blended with the zesty jus, the salmon flaked away with ease, while the salty capers garnished wonder fully, resulting in an explosion of light but tangy essence upon your tongue. Secondly, roast turbot, a descendant of the flatfish family, drizzled

with a beurre blanc sauce. The delicate flavours of the fish teamed with diced vegetables, blanched asparagus and the emulsified butter based jus combined effortlessly. Their infamous king tempura was served next, the light batter acting as a blanket of crunch over the pump shrimps, with an accompanying sweet chilli dip. Our final main, a tender shank of lamb poised proudly among creamed potatoes, sautéed pumpkin and herb jus. The meat, so juicy, cascaded off the bone onto the awaiting moat of coulis.

Our concluding dessert was a decadent chocolate fondant, oozing with war m coco sauce and topped with a timbale of vanilla ice-cream and a caramel crisp. Gluttonous at its best, we engorged on what can only be described as heaven on a spoon. Prince Alfonso von Hohenlohe’s definition of luxury was a ‘blend of privacy and gardens’, per fectly encompassed within the Marbella Club Hotel and all of its attributes. The cuisine, outstanding, and the service, second to none. If any-

one is suffering from the ‘January blues’, MC Café will be sure to brighten your day. MC Café Marbella Club Hotel, Bulevar Príncipe Alfonso von Hohenlohe, s/n 29600 Marbella Tel: 952 822 211 marbellaclub.com

elaborated by explaining that the initial ingredient, in this case, Pistachio, is not chosen, it essentially chooses them; whether it be the season’s first peas or highest quality fish, the team at Acacia develop their dishes around the fresh produce that becomes available. A sensational pairing found when completing this process was pistachio and camomile, as honey is the primary ingredient in the latter, through a trial process, the team combined the elements and the result; revolutionary. Pistachio and complementary flavours, one of Acacia´s signature dishes, utilizes the above combination via a camomile gel.

eep in the heart of Puerto Banus you will find one of the most innovative dining possibilities Marbella has to offer; Acacia wouldn´t be out of place in any of the world´s most cosmopolitan cities, Los Angeles, London, New York or San Fransisco and that´s not just due to its fresh, contemporary décor. An evening at Acacia is more than first class cuisine and excellent service, it’s an interactive experience. SOCIETY MARBELLA met with the creative genius behind this extraordinary establishment, Victor Garvey, to talk about the development of his creations and the innovative methods and techniques used to produce these mesmerising dishes. Victor began by explaining the concept behind the unique flavour assortments found immersed in each creation, describing the aroma pairing process completed before cooking commences. Every ingredient contains a certain amount of volatile molecules, the higher the percentage of volatile molecules two flavours have in common the more likely they are to complement each other, much like tomato and basil. This concept was first appreciated by Firmenich scientist François Benzi. He had the idea that jasmine and pork liver, which both contain indole, could possibly work well together; despite not being considered as classical complements, the flavours blended effortlessly. Experimenting with salty ingredients and chocolate, Heston Blumenthal discovered that caviar and white chocolate are a perfect match; this is due to the

88

95% of volatile molecules they share. Victor and his team adopt this logic when producing their ever evolving menu allowing them to avoid overused preconceived notions. He explained a visit to Acacia is ultimately a sensory journey and whilst the traditional concept of ingredients such as garlic and squid work together effortlessly, Victor aims to provide his customers with something different, a true avantgarde escapade. A tree of flavours,(see Fig.1) is used to instigate the flavour pairings process. The straight lines dictate ingredients that contain a high percentage of volatile molecules and are renowned as ideal unions, whilst the dotted lines express pioneering combinations that due to their molecular structure have the possibility of a perfect fusion but are not classic couplings. COSTA CUISINE We were lucky enough to be welcomed into the Acacia kitchen to witness some of the cutting-edge technology used to produce the gourmet offerings. From January, an additional agent appearing on this innovative plate, camomile chips, will present a contrast of texture against the camomile gel. The chips are created using a dehydrator. This advanced technology achieves texture without compromising flavour. It’s no wonder Acacia has proven such a phenomenal success. Combining ground breaking technologies, ingenious philosophies and gourmet components has resulted in a revolutionary amalgamation. Attaining comparisons to Blumenthal’s The Fat Duck, Acacia has truly put Marbella on the map.

Why does La Parisienne champion healthy eating?

This type of restaurant is missing in Marbella, whereas there are an abundance of them in Paris; somewhere you can enjoy a tasty lunch without feeling guilty for eating badly. Healthy eating doesn’t only mean eating low calorie options; it’s more about eating food prepared freshly, with quality ingredients, no preservatives or chemical flavours. We source many of our products locally in order to attain the freshest produce. The way we cook our meals is also very important to us. We try to use as little fat as possible, and only good fats; the best olive oil, a hint of butter. Our jams use no preservatives or extra sugars. Our cakes are baked on the premises or in the Cake Couture workshop, using only the best

90

ingredients and once again no chemical flavours or additives. Our bread and pastries are only made with French flour, butter and water, no pig fat or margarine unlike many pastries and bread you can find down here, and they are not imported from France frozen, but baked daily by a local artisan! Our salads and tartines are created to provide a simple, yet delicious, balanced meal.

What tips can you offer readers for eating healthily in 2012?

Healthy eating doesn’t mean dieting unlike many people think. My advice is to eat everything but in moderation. Lots

of vegetables and fruits, meat and fish for the energy... and a bit of cake for the mood! The problem is very often not what you eat, but how you prepare your food; it’s ok to have potatoes, but steam them instead of frying them! Never skip a meal, in France we have a saying, ‘have a king’s breakfast, a prince’s lunch, and a poor man’s dinner.’ All three meals are important, but it is also important to balance them properly.
