diploma in hotel management Year One provides students with a comprehensive overview of food & beverage, rooms division operations, personal communication and professional development which prepares students for a variety of employment opportunities within the hospitality industry. Semester Two provides students with the opportunity to gain paid industry experience within Australia and/or overseas (7 month period). This experience allows students to establish valuable industry contacts for the duration of their academic studies and future career.


YEAR ONE COURSE CONTENT 13

Rooms Division Operations provides an understanding of operational practices and processes for the Rooms Division department within hotel organisations including reception, reservations, communications, housekeeping and concierge. Food and Beverage Operations provides students with an understanding of operational practices and processes within a range of food service organisations, including service skills and procedures, legal requirements, knowledge of control mechanisms and an awareness of food, wine, beer, and spirit products. Communication in Organisations acknowledges the importance of interpersonal and managerial communications within tourism and hospitality organisations by providing theories and concepts as well as practical outcomes for improved communication skills. Professional Development for the Workplace focuses on the skills necessary to secure and maintain employment within the hospitality industry. Included is goal setting, job search skills, résumé writing, interview skills, insights into organisational behaviour and practical approaches to dealing with common workplace issues. NB This is a pre-requisite to Internship Industry Experience.

Introduction to Tourism and Hospitality Management introduces students to concepts, theories and practical examples of organisations and the fundamentals of managing these organisations within tourism industries, with an emphasis on the hotel sector. Environmental Management for the Hotel Industry in hotels examines a proactive approach and a detailed analysis for managing environmental processes, including planning, staff, resource acquisition and allocation, selection of priority areas, implementation and review. Introduction to Tourism and Hospitality Marketing explores the concepts and functions of marketing, such as segmentation and consumer behaviours, knowledge of which is crucial to the successful management of hospitality and tourism organisations. Hospitality Services Management links issues and concepts that have been explored in other subjects, to develop synergies between theories and effective operational strategies and service management techniques for hospitality enterprises. Financial Analysis for Tourism and Hospitality develops an ability to read, understand and interpret financial information, through an introduction to business activities and financial management issues, particularly in service organisations such as hotels. Human Resource Management in the Tourism and Hospitality Industry examines a systematic framework for human resource management including planning, recruitment, selection, training and development, as well as relationships between effective human resource management and organisational objectives.

Tourism and Hospitality Research and Analysis introduces students to tourism management enquiry through developing skills in research planning, design, data collection, data analysis and research report presentation techniques applicable to hospitality and business research. Tourism Theories and Practices develops knowledge and understanding of tourism and of a number of related issues which are applied to business organisations within tourism and hospitality industries. ENTRY/PREREQUISITES Diploma in Hotel Management (Year One) or equivalent plus relevant work experience. QUALIFICATION At the end of Year Two, students have the option to graduate with an Associate Degree in Hotel Management awarded by Southern Cross University.

Subjects such as facility and risk management, financial management, workplace relations, law and business ethics and strategic management provide students in their final year with an opportunity to examine, and be challenged by theories and practices impacting on middle to upper level managers.

Tourism and Hospitality Sales and Promotion examines practical issues involved in carrying out the sales and promotion function including marketing plans, distribution channels, pricing, advertising, public relations, media, and the roles of various sales tools. Hospitality and Tourism Financial Management deals with the use of financial and operating information for management in planning, control, evaluation and decision-making through understanding, interpreting and using management accounting and other financial information.

Elective students may choose from a range of elective options, which include Contemporary Tourism Issues, Conventions, Meeting and Exhibitions Management, Entrepreneurship for Tourism and Hospitality, Event Management and Information Systems for Tourism, Hospitality and Event Management. QUALIFICATION At the end of Year Three students will graduate with a Bachelor of Business in Hotel Management awarded by Southern Cross University.

Law and Business Ethics for Tourism and Hospitality introduces the legislative environment for hospitality operators, their obligations to guests and staff, as well as a foundation from which to explore ethics and ethical conduct of hospitality businesses.

Workplace Relations for Tourism and Hospitality exposes students to a range of contemporary issues impacting upon workplaces, through case studies from Australia and internationally, building a knowledge base relevant to practices in hospitality organisations. Facility and Risk Management for Hospitality Operations examines how organisations manage hotel property infrastructure through development, operational risk processes, asset protection and planning.

lecturer profiles PETER LEWIS DIRECTOR - HOTEL SCHOOLS BTch, BEd.AVE, MMgmt, MAICD Prior to Peter’s academic career, he held a number of General Manager positions in luxury hotels over a period of 12 years including the Ritz Carlton and Milton Park in Australia, New Park Manor in the UK and the Tarantaise Resort in Mottaret host to the USA team for the 1990 Winter Olympic Games, Albertville France. He is currently also a member of the Australian Institute of Company Directors and Southern Cross University Council.

PAUL WEEKS DIRECTOR OF ACADEMIC STUDIES HND in Hotel & Catering Admin, GradDipEd (Trg & Dev), MEd Paul has 17 years experience in hotel, motel and food service management, and has been lecturing in management, services management and information technology with Southern Cross University since 1991. Paul has published widely in academic and industry journals, and has co-authored two Australian industry texts: club management and managing convention businesses. Research interests include IT in hospitality, education, history, convention services and club management.

TRISH FAIRBOURN LECTURER BEc, MITHM Trish has a Masters in International Tourism Management and is a year co-ordinator at The Hotel School Sydney. With a work background predominantly in hotels and resorts, Trish has also completed a Management Traineeship with InterContinental Hotels Group.

DR J.S. PERRY HOBSON VISITING LECTURER BSc Hons, MS, PhD Perry is Associate Professor and Director of The International Centre of Excellence in Tourism and Hospitality Education (THEICE). He is also Editor-in-Chief of the Journal of Vacation Marketing and Co-Editor of the Journal of Tourism and Hospitality Education. He currently sits on the Board of the Asia Pacific Tourism Association (APTA), the Asia Pacific Chapter of I-CHRIE (APAcCHRIE) and has twice been Chair of the Council of Australian Universities for Tourism and Hospitality Education (CAUTHE). Listed in the world’s top 50 international tourism researchers, Perry's teaching interests are in the area of marketing.

VASHTI STIVAL INTERNSHIP CO-ORDINATOR / LECTURER BHosp Mgmt Vashti completed her degree at the University of Western Sydney. She has 10 years hospitality industry experience gained within rooms division and food and beverage areas of Starwood Hotels and Resorts, and special event management at Telstra Stadium. Vashti works closely with key industry personnel, co-ordinating the Internship industry experience program for The Hotel School Sydney.

IAN BAILEY LECTURER Ian has evolved more than 30 years of wine, beer and spirit industry experience into an educational role to ‘return the values of a rewarding career’. In November 2002, Ian, with co-author Ian Powrie, launched ‘A Top Drop; everything you need to know about buying Australian wine’, written for the enthusiastic novice wanting to know about wine and buying for value.

JULIE LUIKER LECTURER BEd Julie has worked as an interpreter and PR consultant in the tourism industry. She has had many years experience at The Hotel School Sydney and currently teaches in the first year program as well as Japanese language and culture.

PERRY NECKERAUER CONSULTING LECTURER Associate Diploma in Adult Education Perry has vast experience as an ambulance officer which enables him to provide senior first aid qualifications to all our students. Perry is an author of the Australian design award-winning Emergency Handbook.

PROFESSOR NEIL LEIPER VISITING LECTURER BCom, MGenStud, GradDipEd, PhD Neil currently serves as an editor on the boards of 6 research journals and as visiting Professor in a number of universities in Europe and Asia. His book, Tourism Management, was a finalist in New York for the ‘1995 Global Business Book Award’; a 2nd edition was published in 2003.

ERIC CLUBB LECTURER MCom, MComLaw, BEC, Grad Cert TEHE, CPA, FTIA Eric is currently undertaking a PhD in the research area of Taxation Law and the Accounting Profession. He is also a part time lecturer at a number of Universities in Sydney and is in professional practice. Eric provides core lecturing and other academic services for the final year of the Bachelor Degree Program offered by The Hotel School Sydney in the areas of Business Finance, Commercial and Business Law and Industrial Relations.

MAXINE HAWKER MARKETING & COMMUNICATIONS MANAGER / LECTURER BBusTourism Maxine has over 20 years of industry experience ranging from hospitality training to hotels, resorts, visitor information centres and conference and event management. She owned and operated her own successful bed and breakfast locum together with a private consultancy business. For over 5 years she was an active committee member for a number of tourism related associations. Maxine has been teaching at university level since 1997 and her research interests include tourism systems, cooperative and collaborative strategies and strategic management.

JULIE ADAMS LECTURER BSc Julie worked in medical research for several years before going on to establish a career in banking. After studying at The Hotel School Sydney in 1995 and earning a Bronze Medal in Front Office, Julie joined The Observatory Hotel in their conference department. From there she has gained extensive industry experience in event and in the conference management and continues to maintain her industry links.

MARIANNE SAULWICK LEARNING SUPPORT CO-ORDINATOR / LECTURER BA, MA (Linguistics) Marianne has extensive restaurant, catering and event experience as an owner/operator. Marianne is responsible for Learning Assistance, and teaches in several areas including Research Methods, HRM and Entrepreneurship.

LAURENCE LUXFORD LECTURER BEd Laurence joined The Hotel School Sydney having 12 years experience in operational and management roles within the rooms division area in Ritz Carlton, Millennium and InterContinental Hotels. Topics include effective communication skills, sales and marketing and training in the workplace and now lectures in rooms division.

NICOLA FIRTH LECTURER BBus HMngmt Nicola has rejoined The Hotel School Sydney after graduating with BBus in Hotel Management in 2006. Nicola has worked with Mirvac, Marriott and Hilton Hotels in various roles within rooms division. She also liaises with key industry personnel in promoting and developing the industry placement program for students undertaking Bachelor of Business in Hotel Management.

JOSEPHINE DAVEY LECTURER B.Ed, Certificate IV in Workplace Training and Assessment Having completed her B Ed at Trinity College Dublin, Jo moved to London to discover her passion for Hospitality industry. Jo has 14 years experience in the industry and has held a wide range of positions in the Food & Beverage area in various restaurants in Sydney, London and Spain. In the past 4 years Jo has moved into the area of Hospitality education holding the positions of Food & Beverage lecturer and program director with responsibilities for first year curriculum and vocational programs.

AUSTRALIA & NEW ZEALAND APPLICATIONS You may apply to The Hotel School Sydney directly at anytime through the Direct Admissions Scheme [DAS] and/or through the University Admission Centre [UAC] guide available in August each year. However, you must have completed Year 12 or an educational qualification deemed to be at least equivalent. When applying through UAC/QTAC for the Bachelor of Business in Hotel Management, The Hotel School Sydney should be listed amongst your preferences. In addition you must also submit an ‘Interview Application Form’ (found at the rear of this brochure) and forward directly to The Hotel School Sydney. Whilst the final tertiary score is used as an indicator of ability to undertake studies at a tertiary level, selection to The Hotel School Sydney is also based upon your performance at interview. Interviews are conducted throughout the year but primarily during October and November each year.

ADVANCED STANDING / ACADEMIC CREDIT/ RECOGNITION OF PRIOR LEARNING Southern Cross University policy allows for the granting of advanced standing for previous post-secondary study, relevant professional experience or demonstrable expertise. To apply you should complete and return the ‘Advanced Standing Application’ located on The Hotel School Sydney website and submit with your application.

FEE-HELP FEE-HELP is a loan scheme that assists eligible students with their tuition fees. Eligible students include Australian citizens; holders of a permanent humanitarian visa who will be resident in Australia for the duration of the course; or the holder of a permanent visa who is undertaking bridging study for overseas-trained professionals and will be resident in Australia for the duration of the course. ABSTUDY / AUSTUDY / YOUTH ALLOWANCE ABSTUDY provides assistance for Australian Aboriginal and Torres Strait Islander students. Benefits for students include the payment of an incidentals allowance to assist with text book and equipment costs. AUSTUDY Payment is an income support payment available to qualifying students aged 25 years or older. It provides income tested assistance to full-time students who are Australian citizens. Youth Allowance is a similar support payment paid to eligible 16 to 24 year olds undertaking full-time study. UNIFORM POLICY Year 1 students are required to wear a uniform. This uniform will need to be purchased prior to commencement of the course. You will receive information concerning the preferred supplier with your Letter of Offer (budget approx $300). Year 2 and 3 Students must attend in business attire.

ACCOMMODATION There are a number of accommodation options available. These can be viewed at: www.hotelschool.scu.edu.au LIBRARY AND STUDY MATERIALS Students of The Hotel School Sydney have electronic access to Southern Cross University’s extensive library and are entitled to reciprocal borrowing rights with most Sydney Universities. Students are provided with extensive ‘Books of Readings’ for most subjects, and should budget $400 per year for prescribed texts. ALUMNI On graduation from The Hotel School Sydney, students automatically become a member of The Hotel School Sydney Chapter of Southern Cross University Alumni program. It now boasts over 30,000 members in many different fields of work, throughout Australia and the world.
