This is it. You’re holding in your hands – or reading online – our most anticipated issue of the year! December reveals the profiles of our 35 Best of Berks winners. This year racked up more votes than nearly any year in the history of Best of Berks voting, so if you’ve earned top honors, wear that badge with extreme pride. Also this year, you’ll see plenty of new, and a healthy amount of familiar, faces. While it’s a lot of work to compile the results and coordinate this issue, it is surely also a fun labor of love. Making the initial calls to notify our winners that they’ve been voted “best” just might be my favorite part of the process, though. Meet the 2021 Class starting on page 29. I want to extend a huge thank you to Marian Frances Wolbers, who helped to gather together this year’s group of Best of Berks writers, many of them Albright College students, as well as the students themselves, for helping our honorees to tell just what makes them stand out amongst their peers. Also integral in the process is our photographer, Heidi Reuter, who has really outdone herself yet again. Wyomissing Teen Makes Mark in the Music Business
Remember the name Noah Gibney. The 14-year-old Wyomissing Junior Senior High School student is aiming towards a career in the music industry, and he’s already made a dent. At just 4 years old, Noah was invited to join in playing with Bob Hassler at the West Reading Farmers Market, tapping bongos and playing the ukulele. Today, he’s promoting his EP, The Serendipity Sessions, co-written with Grammy-nominated G. Love of G. Love & Special Sauce fame. While in quarantine, G. Love was looking to collaborate with other artists, and Gibney reached out. That turned into the pair writing 15 tracks together. Says Gibney, “I picked six of them to record and go on my debut EP.” G. Love recorded two songs for his soon-to-be-released Christmas album. Gibney’s favorite is titled Around the Christmas Tree. Noah’s music also caught the attention of President Joseph Biden, who invited him to a local speaking engagement. Gibney presented the President with an autographed CD, to which Biden replied, “Remember me when you hit the charts!” Find Noah on streaming platforms and follow along on Instagram at @thenoah_gibney. – NIKKI M. Arts Festival Reading is Back
Despite a pandemic pause in 2020, the 9th Annual Arts Festival Reading & Holiday Market is back and planned for Dec. 4 and 5, 10am to 5pm, at the GoggleWorks Center for the Arts in Reading. Even better? Admission is now free! The Free For All Initiative was made possible in part through a new grant program by the Berks County Community Foundation. Says Jessica Santucci, Marketing Director at the GoggleWorks, “By making the event admission free to the public we are hoping to increase accessibility for, and engagement with, the community.” This year, the Market will capture the spirit of the holidays, allowing visitors to discover a haven for shopping. Also featured will be a selection of juried artists from across the country, musical performances, food vendors, live art making demos and workshops and an artist raffle. What’s special about this featured drink? Our rotating OldFashioneds at The Bar Cart (TBC) are meant to highlight new varietals of spirit introduced into a classic cocktail. We enjoy starring interesting infusions in our drinks that are approachable, yet fun! The Bourbon Pecan is no different. We infused Kinsey 4-year Bourbon from New Liberty Distillery in a Sous Vide method (for quickness and accuracy) and hand-picked the sugar and bitters to complement one another! For what occasion would you recommend this cocktail? The flavors are highlighted in the fall, but this can be a year-round sipper with a change to the bitters or sugar. Personally, a brisk fall evening bundled up on the porch petting our dog, Reggie!

BOURBON PECAN OLD FASHIONED Ingredients ◊ ◊ ◊ ◊
Kinsey 4-year Bourbon 2 cups unshelled pecans Orange bitters Demerara simple syrup (turbinado sugar)
Tools Needed:

Jigger (measuring glass) Mixing glass Stirring spoon Strainer Rocks glass
Instructions:
1. Pecan-Infused Bourbon: 750ml bottle of Kinsey Bourbon, 2 cups pecans. We infused the bourbon with a sous vide machine, which really speeds up the process, but it’s easy to do without one. 2. Preheat the oven to 300 degrees. Spread the pecans on a rimmed baking sheet and bake for 20 minutes, stirring occasionally, and being careful not to burn the pecans. (They are ready when they smell nice and toasted.) Allow the pecans to cool, and combine them with the bourbon in a container. Allow to sit for up to a week. Strain the liquid through a cheesecloth-lined wire mesh strainer. 3. .25 oz Demerara Simple Syrup: Combine equal parts turbinado sugar and water into a small saucepan over medium heat. Stir until sugar is dissolved. Let cool, then pour into a glass jar and seal. 4. Into the mixing glass, measure and pour 2 ounces of Pecan Bourbon, a quarter ounce of demerara simple syrup and 2 dashes of orange bitters. Pack the glass with ice and then stir for 20-30 seconds. Strain over fresh ice and garnish with an orange twist and cherry.

meet the needs of local youth throughout the pandemic’s uncertainty. Olivet never stopped during the pandemic. We didn’t have youth at our sites, but we went to them. We provided them with the mental health assistance they needed. We gave them a sense of normalcy. My team members and I couldn’t have made it through the pandemic without each other. What services does Olivet offer? We provide a range of services including arts, sports, academic assistance and counseling. We also work with our community partners to provide food and clothing. Tell me more about your community partners. We can’t offer everything the 84,000 Berks County youths need, so we work with community partners through our Hubs of Hope program to connect youth with services we don’t offer. We also have a Hubs of Hope Care Closet program to help provide clothing and shoes. We work with school districts, local organizations like Centro Hispano, the Boy and Girl Scouts, BCIU, the LGTBQ Center, and with local businesses like Fleet Feet to make these services possible. We also work with local school districts to provide support for students who lose a loved one via our Luci’s Light program.

Chris Winters has always been passionate about community service, particularly serving youth, which he believes is his calling in life. He combines this passion with a love of community in his role at Olivet Boys and Girls Club. Why did you take on this role at Olivet? I was born and raised in Berks County, and I attended college here. I love this community. I took on this role at Olivet because I’ve spent my career working to improve the lives of youth. In my state legislative experience, I worked on legislation to improve their health and safety. I truly believe being able to serve youth when they need us the most is God’s work. I’m happy to do that here with an incredible team. I also played basketball at Olivet’s Mulberry Street club in high school. You started working at Olivet in June 2019, less than a year before the pandemic. What was it like handling the pandemic when you were still relatively new on the job? It’s been an interesting time at Olivet, and we’ve constantly been pivoting to

Are these services available to any youth in Berks County? Yes, Olivet services are available for all Berks County youth ages 6-18. It doesn’t matter where they’re from or what their background is. Youth can come to Olivet to be themselves and learn and grow. Your work at Olivet keeps you busy, but what do you do to relax and have fun? My absolute favorite activity, after spending time with my wife, children and grandchildren, is fishing. I also enjoy hunting and going to the beach.

Olivet programs make an impact on alumni. Many come back to volunteer and give back to the organization, and some are employees.

BLANSKI ENERGY MANAGEMENT The Blanski Family has been a mainstay in the mechanical contracting business since 1962. The company was started by Milton Blanski and Stanley Phillips as Blanski & Phillips Mechanical, Inc.

As time passed, Milton Blanski retired and handed down the company to James (Jim) Blanski, the second generation. Blanski Energy Management has completed numerous sheet metal projects in and around the
Philadelphia area since focusing on sheet metal work. Blanski worked on the Please Touch Museum, Samuel Fels High School, the Jewish National History Museum, two Swarthmore College Dormitories, Girard Music Academy, the Temple Baptist Renovation, the Temple-McGonigle Renovation, and many more projects. Outside of Philadelphia, Blanski has completed projects at Graterford Prison’s Boiler Plant and School, the Northampton Prison Renovation, Yuengling Plant #2, Coatesville 9-10 Center, Lincoln University Science and Cultural Center, 3 Connective Power Plant Projects, and CAD Drafting and Reproductive Science Institute’s Laboratory and Operating Rooms. Recently, Jim Blanski, CFO, has semi-retired and Nathan (Nate) Blanski, the third generation, is now in control of operations as president, continuing the company’s dedication to providing quality services and products. LIVING IN STYLE You might not see Perez running down a main street carrying a wreath and exclaiming “Merry Christmas” as the George Bailey character did in the movie. However, you might glimpse a portion of his huge holiday spirit if you pass by or are a visitor in Perez’s lovely home in Sinking Spring Borough’s Brookfield Manor subdivision.
A Country Feel
From the substantial front porch to the expansive interior, the holidays are on full and glorious display in this home the Perezes purchased in the summer of 2019. The family previously lived off Old Fritztown Road. Though this house is in a subdivision, it offers a bit of the rural essence they wanted to retain. “You get a great country feel here,” says Perez. “When we saw this house, we knew it was for us. There is a playground across the street, and you can see some cornfields just past there. The front porch being the width of the house really sold us on it.” Even in the chill weather of the holiday season, the festive front porch offers a sense of the warmth that pervades the family home.
A sizeable and copiously festooned wreath replete with a couple of friendly reindeer (George Bailey would have struggled running down the street with that!) dominates the burgundy front door while three-foot-tall planters overflowing with greens, berries, ornaments and tartan-inspired ribbons stand sentinel on either side. Cushions on the porch chairs offer messages of “Merry Christmas” and “Believe in the Magic of Christmas.” “It’s important to set the tone,” says Perez. And, from his perspective, it’s also important to start the decorating process early. “I have a busy schedule and so do my wife and daughters,” he says. “When we start with decorating, we consider source and design when we begin shopping for things. Our goal is always to be done by Thanksgiving as we host the Thanksgiving dinner, which is the unveiling for us.”

An Enduring Season
Perez looks for decorations that have “a longer shelf life” and there’s good reason for that. “We keep everything up until after Three Kings Day,” he says. Three Kings Day, falling on January 6, is also considered the 12th Day of Christmas. The prevalence of decorations in the 3,400-square-foot house seems to go handin-hand with the amount of activity during those holiday times. “We have cookie baking days, movie nights, family jam nights; we play Christmas games, and we create many of our own Christmas ornaments,” he says. “We like to keep the house full of kids.” Remember that highly decorated front door? Step inside, and you’ll know you’re in a Christmas wonderland. A beautiful spray on the interior of the door complements the expansive two-story foyer. Both siderails of the stairway feature highly embellished garlands of greens, leaves, berries and ornaments through which a striking red plaid ribbon is woven. Clear miniature lights softly glow as evening falls, bringing an additional magic to the space. At the top of the stairs, in the open loft area, there is a special tree. “My daughters and my mother, Olga Perez, do that together,” Perez says. “The ornaments up there are the older ones, and they’ve been accumulated over the years. I think it’s fantastic that they do this, and I hope it continues and that it will be a tradition for my daughters in the future.”
BRING HOME the Holidays
Taking Heart in Decorations
The heart of the Perez home is the open firstfloor kitchen/living/dining area. The area is bedecked almost to the ceiling and the coordination of the decorations is evident. From the fireplace garland that emulates those on the stair rails, there is a consistency of design elements most especially distinct in the plaid and tartan ribbons generously applied, even wound through the trees. This styling and unity of decor is far from effortless. It is, in fact, professional. For the 2020 holiday season, which this narrative and photography features, Perez turned to the Reading design firm, Luxury Garden Floral Design, located in the 200 block of N. 13th Street, and owners Rancel Hernandez and Wellington Giraldo. Interestingly, the firm is located just blocks from where Jaime Perez grew up at 12th and Oley streets. “I’d seen some photos of trees they’d decorated and was very impressed,” says Perez. “It was clear their passion matched mine when it came to Christmas.” Hernandez and Giraldo decorated the frostedtip tree adjacent to the fireplace and made certain all exterior and interior adornments were coordinated, adding to the open feel and easy flow of the home. The Perez family was very excited at the outcome. Jaime Perez, in particular, praises the designers’ ability to take affordable elements and convert them into showpieces. “It’s amazing,” he says. “Look at those garlands. They were simple garlands from Sam’s Club and look at them now!” And look at the dining room table, too.

First of all, it is set with sparkling crystal, golden flatware and lovely dishes (some of which are plaid, carrying through the ribbon theme). The dark green runner boasts a variety of ornamentation from a metal reindeer, to cylindrical metal trees, to pine cones and greenery (some frosted) placed both lengthwise and in a bowl overflowing with greens and red metallic accents. Interspersed are the requisite candles. Forget about the traditional tapers. Snowball candles on golden pillars and golden votives with small red candles warm the scene and stir the appetite. Under all those items is something equally beautiful, albeit simple: a seven-foot-long Amish hand-crafted wood farmhouse table. To be added for Christmas 2021 will be a complementary bench and China cabinet. The sideboard in the dining room is topped by a three-candle centerpiece and three unique crafted red, white and green holiday trees. Two large stockings hang from the drawer knobs proclaiming “peace” and “joy.” The latter notion is reinforced by another folk-art styled wooden hanging with a small wreath substituting for the word’s middle letter. The service shelf which runs between the dining room and kitchen carries through the theme with metallic trees, ornaments and garland greenery, and is dominated by a reindeer appearing to stare down his dining table rival just a few feet away. Perez loves the multitude of items grouped together. “I think layering decorations is very important,” he says, “and the glass ones really add a special accent.” The family’s strong faith is on display with a Nativity set situated on a bookshelf in the living space. A little less serious are the elves, Jingle and Bell, not always relegated to a shelf. Indeed in 2020, the duo might have just as easily been found hiding on a sled doing double duty as a décor element. The Perezes’ Cockapoo, Astro, marking his first Christmas, not only took all the décor and activity in stride; he actually seemed to enjoy being a focal point of many family photos.
Passionate Planning
Both Perez and his holiday stylists recommend reaching out early to plan for the seasonal displays. “We really need some decent lead time,” says Hernandez. “We need to go to the house, see what is needed and choose the colors. We need to be able to source the materials to finalize the desired outcome.” Perez stressed the need for working with like-minded individuals. “To find someone who matches and appreciates your passion level is so important,” he says. “If it’s just being treated like a job, that takes the fun out of it. I think the passion element is so important…if they don’t have what you’re looking for, they’ll share your passion in sourcing it.” And, of course, it’s clear Perez’s wife and daughters savor their holiday-infused home just as much as the Wonderful Life Bailey children enjoyed their more modest digs in the fictional Bedford Falls. “I really adore Christmas; it’s one of my favorite holidays,” said Tatiana, now a West Chester University freshman. “I love how we put up the decorations early and everyone gathers here. We live in a neighborhood that really gets into decorating. It’s all so special; we even have ornaments with all of our family names.”

P
rivate dinner with Chef Tim Twiford at the helm is an indulgent experience, enhanced and enlivened by this charming, extremely talented culinary artist. But where and what exactly is Chef Tim’s Table? This elegant, multi-course dining experience takes place behind a purposefully crafted, glassed-in dining room within the beer and wine department, which is separate from — yet mere yards beyond — the aisles, shelves and foods of a family-owned grocery store in Wyomissing. This Redner’s store is one of many in a large fleet. It’s situated so that you and your beloved guests, friends and/or business associates are not nearly as visible as you might assume. Indeed, the linened table and entire setup feels incredibly intimate and natural. Best yet, everyone there gets treated to Chef Tim’s presence just on the other side of the glass: you can watch his magic hands at work while he preps a fabulous, gourmet-quality meal. To be sure, Tim Twiford is no novice to this scene. Gary Redner had been a guest at an earlier rendition of Chef Tim’s Table, at the hotel where Twiford previously served as Executive Chef. Redner liked the idea of creating his own Chef Tim’s to further their goals of community support and service, where private dinners are auctioned off to benefit local charities such as Safe Berks and the John Paul II Center. All proceeds from the six-course meal go entirely to the nonprofits. Private individuals may also schedule dinners to celebrate special occasions. Today, Redner’s Prepared Foods division is under Chef Tim’s purview. He produces around 5,000 meals a day from his kitchen — bulk food, all homemade meals — for 44 Redner’s store locations.
Meeting of the Minds, Shared Visions
Gary O’Brien, Vice President of the Perishables Department, works closely with Chef Tim. “When you put a Chef and a VP of Perishables together,” says Chef Tim, “you have a remarkable experience, an experience we create through our food offerings.” O’Brien, he says, deserves a great deal of credit for his vision, his 35 years of experience with perishables, and teamwork. “I’m very, very fortunate to have a mentor like him.” The whole team at Redner’s is integral to their success, he says, as well as the support of the Redner’s family. For this CIA-trained chef, the Table is “my perfect creative outlet.” 62

luscious presentation, with marvelous taste sensations. It’s sprinkled with grated cheese and accompanied by a succulent, thinly sliced cornbread. Two kinds of beans add a special touch — texture and taste-wise. Says Chef Tim, “If you remember, when the chili competitions were in full swing in Berks, this chili was a winner. Blankets of Hope is a cause that offers my Angus Chili to raise money through their ‘Take the Chill Off’ campaign,” he adds. “You buy a bowl, and they donate a blanket to an individual in need. For that, I make 300 tons of chili each year.”
4. Butter Poached Shrimp
One inhales the scent of popcorn as the bowl is set down. Shrimp and popcorn (truly, some popped corn cooked along with the shrimp!) rests atop a dreamy cream sauce also redolent with popcorn flavor. “Butter Poached Shrimp was born out of an Opportunity House fundraiser in which four chefs competed,” says Chef Tim. “We were given popcorn and heavy cream and lobster.
