This month, we’re finding multiple reasons to raise a glass—and 19 of them can be found in this edition’s cocktail contest. We asked our readers which local restaurants make the tastiest variations of their favorite drinks, and they had a lot to say. Turn to pg. 56 to find the results of several-hundred reader votes, along with detailed descriptions (and a few recipes!) of what sets each concoction apart from the rest. Find us on a bar crawl across the Valley as we sip and sample every one of these!

What else are we toasting this month? The six Men of Style that were nominated by their peers and are highlighted on pg. 48. Though, collectively, their daily routines involve just about everything but posing in front of a camera—@jandelcamilo and his social media following of 45k excluded—these guys were absolute naturals, and Style vows to back their modeling careers any day. The men were exceptionally comfortable in their own skin. So while their wardrobes had been primped and prepped for the day of the big shoot, it was their confidence and ease that really stood out to our team, reconfirming that it’s not the outfit that makes the man, but the man that makes the outfit.

Did you always know you wanted to own a business? Growing up, my grandparents, Dora and Harvey Beachy, owned their own business, which was a window shade and venetian blind business called “Perry’s Window Shade Shop.” I would always help them in the shop, making shades, washing or stringing venetian blinds, etc. I most enjoyed interacting with customers and going out to residences and businesses to do installations.

I feel that this exposure was instrumental to me in becoming an entrepreneur.

Did you always have an interest in magazine publishing? My high school, Warren Central in Indianapolis, had the best academic rating in Indiana, so my mother moved us there so that I could take advantage of it. They had a phenomenal new career center, and one part of it was printing. I became very involved in printing and did many projects for family, friends and Perry’s Window Shade Shop, including letterhead, business cards, note pads, brochures, etc. I had a very inspiring teacher, and we did letterpress printing with a manual press, darkroom, stripping, opaqueing, plates, offset printing, etc. It was there that I developed my passion for the printing process.

I was fortunate to work at Mannesmann Rexroth with a great leader, Alfred Krug, after graduating from Purdue University with a degree in Mechanical Engineering Technology and, ten years later, an MBA. I was drawn to starting up a new distributor support department, which had a focus on the company’s printed materials. That led to starting our first magazine from scratch, the Fluid Power Journal.

Tell us about the transformation and growth that has occurred at IDP since the company’s beginning.

IDP has grown quickly, from my wife’s, Lisa Jean Wertman, and my initial dreams and its start-up in our living room, to close to 50 employees and four locations. We have a tremendous staff of people that put together “addictive content,” wonderful graphics and beautiful design, which make this publication a wonderful resource for the community! We feel so blessed to have been able to grow the business and make a positive contribution to our communities, and we plan to continue our growth, God willing.

Outside of Lehigh Valley Style, tell us a little bit about some of the other publications produced

by IDP. We produce three lifestyle magazines in addition to Lehigh Valley Style, including Berks County Living, which covers Reading, Kutztown and the surrounding areas, and Susquehanna Style,

which covers York, Lancaster, Harrisburg and the surrounding areas.

We also produce an international trade journal, entitled Fluid Power Journal, which focuses on the hydraulic and pneumatic industry, and two newspapers: The Blue Mountain Town & Country Gazette, which covers Slatington and Walnutport and surrounding areas, and The Home News, which covers Bath, Nazareth and Northampton and surrounding areas.

What can you absolutely not start your day without? A grateful heart for all the blessings we’ve received.

Tell us about what distracts you from your work.

Trying to do too many different things at once, especially work for our church.

Who/What are your greatest inspirations?

I’m an eternal optimist—that and the Holy Spirit are my greatest inspirations. I love to do, help, create and build.

What do you love most about the Lehigh Valley as a whole? I love the rich history and stone farmhouses of the Lehigh Valley. We were very blessed to be able to purchase a stone farmhouse (a.k.a., money pit) and, finally, after 22 years, we were able to add an addition and make it a stateof-the-art home with rustic character.

What are you currently obsessed with?

The Holy Spirit, Jesus Christ, God and Church.

What advice would you give to an aspiring business owner? Owning your own business is very hard; it takes a tremendous amount of dedication, passion, optimism and long hours. Several people, including loved ones, will try to discourage you and tell you that you can’t or shouldn’t do it. Trust in your vision and pray and “Watch the Giants Fall.”

Work with passionate people that share your vision and celebrate all your successes! Hire people that know the areas that you don’t and, if possible, people that are smarter than you.

Be extremely frugal, don’t sign leases and keep as much cash as you can. Banks typically only want to loan you money after you have been in business for many years and then usually not without major tangible collateral, so you’re on your own and have to be smart with finances. Also, keep in mind you won’t be making any significant returns in your business for many years.

People will be jealous of you and all your accomplishments. They don’t see the long hours, sleepless nights and anxiety, trying to make payroll; stay the course and focus. Remember to take time for yourself and your family, building a business is worthless if you lose sight of the important relationships in your life.

If you like a bit of live music with your evenings out, chances are you’ve heard the mellifluous voice of Whitehall’s Tim Harakal, ubiquitous at casual venues and host of open mics around the Valley.

Not only is his family full of music lovers, but his grandfather played in a four-piece band. “There was always a guitar in the corner,” Harakal says.

“It was only a matter of time.”

With one album-cutting exercise under his belt, he’s in the process of generating another for release this year, full of the bright messages that help cheer us through life. A love of Metallica draws on the complexity, if not the sound, of their arrangements, while his foremost inspiration, Jason Mraz’s early work, is more obvious in the gymnastic musicality of Harakal’s voice and guitar.

It’s the open mic, though, that has given him the greatest reward, ever since his first performance in college. “This guy Butch Imhoff ran an open mic in the food court,” Harakal recalls. “I had really bad social anxiety, and it was huge for me to convince myself to do it.” Now he performs for a living, and pays that transformative experience forward. “One of my main goals is to try to help the local scene along.”

February 23–25 & March 1–3: Less a melting pot than a colorful salad, the U.S. continues to be enriched by and agonize over the diversity within it, yielding explorations like Ayad Akhtar’s play Disgraced, produced this month at Lafayette College.

Four guests at a dinner in New York City bring various salad ingredients to the table for a discussion that doesn’t shy away from topics like religion, immigration, terrorism and national identity. “It is a microcosm of the multicultural world we live in,” says director Suzanne Westfall, “and the constant negotiations we perform to understand and accommodate other religious beliefs, political perspectives, cultural identities, emotional commitments and business relationships.”

While white artist Emily appropriates Islamic style to further her career, her assimilated Muslim husband, Amir, compromises his principles and culture to advance as a lawyer. His black colleague Jory brings her Jewish husband to dinner, stirring up unsettling convictions, secrets and acts. “Jeff Helm, professor of mechanical engineering, has designed us an upscale New York apartment,”

Now through March 11, the National Museum of Industrial History will display the art of Peter Maier. Maier’s goal is to make his work come alive, and he succeeds in creating highly realistic paintings—so much so that they look almost photographic. Maier’s technique is a unique process where he paints on high-tech, fabricated aluminum panels and uses a high-quality waterborne paint, DuPont Cromax AT, which helps create a three-dimensional effect. He uses a multi-layering process that combines industrial paint technology and traditional brushwork. A dozen layers of transparent paint are applied so the previous layer can show through. Additionally, he uses only pure colors, such as blue over yellow to produce green—no premixed colors. Only eight to ten pure colors and 25 or more layers of paint are utilized to produce an entire painting. After the layers are complete, Maier gives a clear coat, which is then wet sanded, and applies one last clear coat.

This allows the depth of layering and the saturation of colors to really show through, giving the painting a distinct luminosity and surface finish.

Enduring Strength OAK Steakhouse Owner of OAK, Mick Gjevuka always wanted to open a classic, old-fashioned American steakhouse.

While the building that would become OAK was under construction in the winter of 2016, a storm caused the east wall to collapse and halted plans. Layout, design, materials and concept had to be reworked. “I vowed that once rebuilt, nothing would be able to take down the building again—not wind, not rain—and that it would be built with the enduring strength of a mighty oak tree, and thus the name was born,” says Gjevuka. The four-level restaurant features an oak tree sculpture in the foyer as well as murals, chandeliers and a retractable roof. Ornate wood, metalwork, leather-tufted seating and many handmade touches create an ambiance that is warm and romantic yet masculine. Some décor was salvaged from the previous structure, including the main-level staircase, exposed joist ceilings and the wooden trellis at the entrance to the kitchen.

As for the food, beef is dry aged in a temperature-controlled room. “All beef is domestic, originating from the best Midwest ranches in Nebraska and Colorado,” says Gjevuka. “Guest favorites include the rooftop crab, thick-cut bacon, baby back ribs, dry-aged Kansas City steak, creamed spinach and sweet potato au gratin.” Top it all off with a slice of cheesecake or the skillet cookie.

Theresa Crandall Operation Help Puerto Rico

The night before Hurricane Maria hit Puerto Rico, Theresa Crandall exchanged messages with her friend, Connie Velez, who was living there, to tell her she was praying for Velez and her family. In the morning, Crandall woke up and read about the state of the island, which was completely out of electricity. “I thought of all the people in Puerto Rico who must have been feeling distraught, stunned and helpless,” she says. Crandall, who has been volunteering since she was a teenager, knew she wanted to help mobilize efforts and came across a Facebook post by Jorge Gonzalez of New Jersey, which said Operation Help Puerto Rico was in effect. Gonzalez was willing to travel to pick up donations and had a means of getting them to the island. Crandall then shared information on social media, with her church, the Puertorrican Culture Preservation in Allentown and the Puerto Rican Beneficial Society in Bethlehem. Many organizations wanted to help and, thanks to Gonzalez, now had a way to get the materials to Puerto Rico.

Social media caused a domino effect. A friend of Crandall’s in Virginia sent emergency food containers to Gonzalez and a cousin from New York donated as well. “We wanted to get the essentials sent out to the island as soon as possible, with the least amount of red tape to let the people know that help was coming and to keep hope alive,” says Crandall.

She also notes that she does not want this recognition to be about her but rather that she is fortunate to live among generous givers. “I am very proud to represent the friends and neighbors in my community who came together and wanted to be a part of helping our neighbors in Puerto Rico,” she says. “Community expands beyond the area we live in.”

Military Tribute SOLDIERFIT

Before Steph Vaughan and her husband, Trevor, opened their own in Trexlertown, Steph visited a SOLDIERFIT on a business trip in Gaithersburg, Maryland. “In addition to the great workout, I was immediately struck by the gym’s culture and camaraderie,” says Steph. “It was unlike anything I’d ever experienced, and I came home and told Trevor that we should bring this to the Lehigh Valley.”

Sure enough, Steph and Trevor are now owners and black hats (boot camp trainers), and after just one month of being open, they had about 180 troops (members).

SOLDIERFIT was founded by military ideals, with every location dedicated to fallen soldiers. Trexlertown’s location is dedicated to two Marines who served with Thomas Karlick, barracks commander (general manager), in Iraq.

SOLDIERFIT offers something for everyone, including boot camp classes, personal training, yoga and a fitness gym. “We have troops ranging in age from 14 to 77, and from fitness backgrounds that run the gamut of competitive cyclists, Spartan racers and American Ninja Warrior competitors, to people who have never belonged to a gym or are just getting back into fitness for the first time,” says Steph. In boot camps, black hats demonstrate an exercise and give a progression and regression, to make the move more or less challenging. “It’s a really positive environment where people are getting great workouts, building each other up and forming friendships,” Steph adds.

Though Alex Campbell’s increasingly wild mop had proven helpful during his work outside at Perseverance Tree Farm in Bechtelsville, he was ready to take a risk with a drastically different look.

Mike Szerling of recently opened Steel District Barbershop sharpened his shears to take this surfer from au naturel to a crisply clipped aesthetic.

before How would you describe your style?

Laid-back, easygoing, low maintenance.

What’s your usual grooming routine?

Typically, not much. I’ll comb my hair when it’s long, and when it’s shorter, usually just running my hands through it does the trick. I’ll shave every few weeks.

How do you feel after such a drastic change?

It took a while to get used to the look, and now it’s got a fresh, clean feel when I see it in the mirror.

When was your last haircut?

Oh, maybe ten or 11 months ago. It’s been a while.

I think I’ve had it cut professionally only one other time in my life.

Tell me about the Steel District experience.

It had an upbeat, talkative vibe, like hanging out at your buddy’s, yet competent and professional.

The guys renovated the space themselves, giving it a nice blend of old school with a touch of modern.

A little bit of Steel City grit, a touch of new-school flash and all-the-way quality materials. They’ve got three refurbished barber chairs that take the whole experience to the next level.

This isn’t really my style, but I’ve gotten some compliments on it already. A few more and I might keep it around.

What do you do for fun in the winter?

I play indoor soccer and work on renovations to my 117-year-old house on the South Side. There might be a surf trip to Nicaragua in my future.

What makes a barbershop like Steel District different than a hair salon?

The biggest difference is that we are indeed a barbershop and not a salon, meaning our expertise is geared specifically for men’s cutting and grooming, allowing for better precision and providing a genuine experience that is centered around our client.

What were you going for with this cut?

With Alex’s cut specifically, we aimed to provide him with a drastic enough difference that allowed for a clean modern look, while retaining some of the length that he’d accumulated.

Does curly hair make your job harder? Easier?

Every client is different, as is each haircut, so it’s difficult to generalize curly hair as being easy or hard. Each client requires a specific approach, which is what makes cutting hair the challenging art form that it is.

What’s your best at-home facial hair advice?

Many men neglect their facial hair. Acquiring and utilizing beard-specific oils, soaps and balms can really go a long way between beard trims.

Your favorite if-nothing-else product for the extremely low-maintenance?

That’s difficult to answer. As barbers, we seek to maintain our own hair as best as possible and encourage our clientele to do so as well. That being said, quality of product is often directly related to its

cost, so we steer clear of the pharmacy shelf brands, which are composed of harmful-to-hair ingredients, and stick to tried and true brands, such as Layrite, which has a diverse product line for all hair needs.

What does it take to look this good long-term?

It’s not as expensive or high maintenance as it may seem. The average 3–4 week visit to a quality barber and a good product is all anyone needs to feel and look as good as they can.

What’s your favorite thing about this job?

It would have to be two things. The service that we provide allows people to feel 100 percent complete, as a quality cut brings everything together. And when combined with the relationships we build with our clientele and community during their experience with us, I simply look forward to coming into work every day.

Fermented Foods What’s Old Is New Again

The explosion of raw fermented foods has opened up a treasure chest of flavors and culinary delights along with key health benefits. This nearly forgotten process produces foods rich in probiotics, enzymes, vitamins and minerals and can be an important addition for improved digestion, disease prevention and even mental health.

Back in Time Fermentation of foods has been recorded as far back as 6000 B.C. and has been utilized in every culture across the globe. Its primary purpose started as food preservation and food safety, but along with that came unrealized added health benefits. The advent of canning—commercial processing using vinegars—and home refrigeration had fermented foods all but disappearing from the American diet. However, recent understanding of the relationship of disease prevention and gut health has brought a resurgence of these nutrient-rich fermented foods.

Fermented Foods 411 Today, the spectrum of fermented foods is vast.

Dairy products include the well-known, like yogurt, but also include a lesser-known rising star, kefir.

Kefir can be thought of as a drinkable yogurt, but a bit more sour. The sour flavor is a result of higher levels of bacteria breaking down sugar.

Kefir contains up to three times as much probiotics as yogurt and much lower levels of sugar. Kefir has moved beyond dairy to now include fermented coconut water kefir.

Raw sauerkraut has found new life and new flavors that can add both a digestive aid and flavor to the plate. Raw “kraut” versions include tasty combinations like red beet and cabbage, smoky kale kraut and curry cauliflower kraut, to name a few.

Kimchi, once only seen in Asian restaurants, has made its way onto the refrigerated shelves as well. A much spicier version of fermented vegetables, kimchi typically contains chili peppers, ginger, garlic and fish sauce. Vegan versions have also become available.

Kombucha, referred to as a “health elixir” in China, is a fermented tea that results in a slightly fizzy, carbonated, tangy beverage. Because of the process, kombucha can contain trace amounts of alcohol.

Have a Healthy Flora The increased bioavailability of vitamins and minerals is an important benefit of fermented foods. Even more beneficial is the spectrum of good bacteria, often termed probiotics. These probiotics help support the flora of good bacteria in your intestines and body. A healthy gut flora is essential for breaking foods into viable nutrients for the body to absorb. It protects the lining of the intestines, releases anti-inflammatory molecules and prevents pathogens from propagating.

More and more research is connecting physical health, mental health and disease with the health of the flora in your gut. Simply put, your health is dependent on how healthy the flora in your gut is. Gut flora health has a dynamic and powerful relationship with the body’s immune system, as well as through gene expression and risk of chronic and acute disease. It also influences the nervous system, depression, anxiety and cognitive function.

Having a diverse healthy flora also helps regulate blood sugar levels and can impact autoimmune conditions, diabetes, obesity and the ability to lose weight.

Is My Gut Healthy?

Chronic stress, medications, dehydration, sugar, artificial sweeteners and exposure to environmental

toxins at home or at work all contribute to creating an environment hostile to healthy bacteria and a healthy flora. The result can be inflammation in the gut, limiting the absorption of nutrients and causing a whole cascade of effects on the immune and nervous systems. Antibiotics kill pathogenic bacteria and viruses, but also the good bacteria.

That is why oftentimes after a round of antibiotics, yeast infections follow. The good flora has been killed off enabling more opportunistic yeasts to multiply.

Repopulating the trillions of microbes in the gut takes time and ongoing effort. Fermented foods could be an additional source of support.

Finding Fermented Foods Fermented foods are live and need a cool environment to survive. Look for them in the refrigerated section with labels that include the words “raw,” “fermented” and oftentimes “live cultures.” If it is canned or pasteurized, there are no live beneficial bacteria and enzymes. Also, pickled doesn’t necessarily mean fermented. When vinegar is on the ingredient list, it’s a sure sign that the product is not fermented.

Making fermented foods at home can be economical and fun, while also giving you direct control over the quality of the ingredients. A good starting point is utilizing organic, non-GMO or locally farmed produce or dairy. For making dairy or teas, consider using the starter cultures now available in grocery stores and online.

Don’t Overdo It Just because something is good for you doesn’t mean more is better. Fermented foods are a supplement to a healthy diet, not a whole food group. Start slowly; introduce a small serving like a tablespoon of raw sauerkraut or kimchi to a meal. Explore different types of fermented foods, as it will broaden the spectrum of healthy bacteria.

Yogurt typically contains only one or two strains of bacteria. There are 300 to 500 species in the complex ecosystem of the gut, so don’t stick to just one type of fermented product.

If you are dealing with a yeast infection like candida, you may want to stick with foods that you ferment yourself, controlling which bacteria strains you use. Kombucha is often made from wild strains of yeast and may be counter to eliminating the candida overgrowth.

The return of raw fermented foods is not only a culinary score for the taste buds, but an easy addition to support our often beleaguered gut.

industry that is Hollywood. “Every day I wake up, and it’s like, ‘Okay, what’s on fire today,’” Bloys says with a laugh. “Some days are more difficult than others.”

But, once upon a time, Bloys was just another young man wandering the halls of Bethlehem’s Freedom High School, pondering a future outside of the Lehigh Valley. “I always felt like [moving to a bigger city] was what I was going to do.”

That’s not to say he doesn’t have fond memories of his old stomping grounds. His parents, both New Jersey natives, settled in the area when his father’s employer, IBM, assigned him to a Bethlehem office. Later, Dave Bloys, a Lafayette College graduate, would go on to co-found the software company Pentamation in the early 1970s.

The youngest of three boys, Casey Bloys recalls palling around with a large group of friends at Asa Packer Elementary School and Nitschmann Middle School, and engaging in some mildly reckless behavior on those long summer days.

“We would all ride our bikes with no helmets to Hanover Pool,” he says.

I got her coffee, egg whites, whatever had to be done.

And I was happy to do it. The most valuable thing you can do is work for someone.

And, as one might expect of a future entertainment executive, the young Bloys spent a lot of time parked in front of the family’s television set. “[Looking back], I am shocked at the amount of TV I was allowed to watch.” He was hooked on re-runs of Leave It to Beaver, Gilligan’s Island, I Dream of Jeannie and The Munsters, as well as then-contemporary fare like The Cosby Show.

Although he may not have known it at the time, Bloys was compiling a mental catalog that would serve him well as reference material in his future career. “A lot of the old shows still hold up now,” he says. “A good show is a good show.”

Of course, watching TV and working in TV are two entirely different things. Says Bloys, “I didn’t understand how the business worked. I did have to figure out, ‘How do you get into TV?’” But Bloys did know that moving to New York City or Los Angeles was always part of the plan, and not just because of his career goals. Bloys says, as a then-closeted young, gay man coming of age in

the 1980s, a bigger city with a more diverse population base seemed a better fit. Plus, he was reared by a former city dweller—his mother had lived in New York City for a while. “I just thought that’s what you did after high school,” he says.

Following his graduation from Freedom in 1989 (Dwayne “The Rock” Johnson donned a cap and gown there the following year), he enrolled at Northwestern University in Illinois and earned a BA in economics. His “in” to the TV biz would come via a job in advertising in New York City.

One of his clients happened to be Paramount Pictures, who offered him a job in Los Angeles in 1996. “I thought, I’ll get out to LA, then I’ll figure out how TV works.” He was a quick study; Bloys was hired as an assistant for an executive at CBS. “I got her coffee, egg whites, whatever had to be done. And I was happy to do it. The most valuable thing you can do is work for someone.”

Bloys has come a long way since those days of fetching breakfast sandwiches and lattes. His tenure at HBO began in 2004, when he was brought on as director of development at HBO Independent Productions. He was promoted to vice president there the following year. In 2006, Bloys was named vice president of HBO Entertainment, where he spearheaded the development and production of comedy series. He earned a promotion to senior vice president in 2009, and was named vice president of HBO Programming in 2013. The network named him to his current post in May of 2016.

When pressed to name the best perk about his high-profile gig, Bloys says it’s being in the trenches with the best his business has to offer.

“The talent that comes in here is kind of extraordinary,” he says. “I’m hard-pressed to name someone I haven’t worked with, who I want to. I try not to forget that.” Among the highlights: David E. Kelley’s 2017 miniseries Big Little Lies brought together a powerhouse female cast, including Reese Witherspoon and Nicole Kidman, both of whom also served as executive producers. Game of Thrones has inspired an almost rabid following among its fans. The Julia Louis-Dreyfus showcase Veep has been a critical darling since its inception; Bloys says the show’s multiple Emmy Award wins for Best Comedy have been proud moments for his team. “A lot of work goes into making a show great.”

Even though he’s a full-time resident of Los Angeles, Bloys makes frequent trips back to the East Coast and to the Lehigh Valley. Last September, he shared his know-how with Moravian College students for a moderated discussion the school dubbed “Inside the Moravian Studio.”

Other trips back home are strictly for R & R. He often has his two children (twins—a boy and a girl) and husband (media attorney Alonzo Wickers) in tow. His parents still live in the area, as does one of his brothers. Bloys says he’s shown his kids his childhood home and his former schools, and marveled at the changes that have encroached on the landscape of his formative years. “There are so many houses now where there used to be cornfields,” he says. And yet, some things have remained the same. Bloys cites Bethlehem’s Main Street as one example. “It’s still really charming,” he says. “They do a very good job of maintaining the charm.”

The Casey Bloys taking in the sights of the Lehigh Valley as one of the most powerful executives in television may have come a long way from the Casey Bloys who was zipping around town on his trusty bicycle, but don’t expect him to rest on his laurels anytime soon. “I tend to think I’ve never made it, because that’s what keeps you running,” he explains. Although he may be loath to appear complacent, as someone who’s been steadily ascending in the industry of his choice for nearly two decades, Bloys has learned a thing or two along the way. “If you want to work in entertainment, you have to go to where the industries are,” he says. “You have to move to Los Angeles or New York. You have to be around the people who do what you want to do.”

And it’s not just location, location, location.

Bloys says part of the deal means embracing every opportunity, no matter how small. “I’m a big believer in working hard no matter what job you have. You can tell when someone is phoning it in.” And yet, Bloys concedes that his path may not be the same path the next big entertainment executive takes. “There’s no one way to do it. It’s not like you go to law school, then you graduate and become a lawyer,” he says.

It’s safe to say, the kid from Bethlehem figured it out.

I feel my best wearing formal attire—black tie, a topcoat and a great fedora. My go-to look could be described as classic. I feel most inspired when I'm playing golf with my sons and still beating them, from time to time. The item I have the most of in my closet is dress shirts and, being a golfer all my life, plenty of Polo shirts. My golf shoe collection is insane!

I could do without sweat pants—not my style. My favorite brands include Ralph Lauren, Charles Tyrwhitt, Cole Haan, Hugo Boss and Thomas Pink. I'm not a web surfer, and I buy what I want if it looks good on me. I am lucky because my wife owns BOUTIQUETOGO on 19th Street in Allentown, and she can sometimes acquire special men's accessories [while she's buying for her store] at market. I love the frames at her neighbor store, Blink Optical Boutique, and the custom suits made

by Valet Custom Tailors in Bethlehem. I tend to splurge on monogrammed shirts from London, designer eyewear, Versace ties and anything golf-related. My style icon is past Secretary of State Warren Christopher. As far as my 2018 wish list goes, I need nothing—until I find it.

The item I have the most of in my closet is shoes, and somehow my wife still has more. Pleated pants and guys wearing their clothing too big is a trend I could do without.

For this issue, Style set out on a search for the best cocktail variations in the Valley. We wondered: Who makes the tastiest margarita? The fruitiest Bellini? The strongest Manhattan? Our first-ever cocktail contest circulated the web for weeks, and hundreds of votes later, we got our answers.

Moscow Mule SOCIAL STILL Social Still’s most popular drink, the Mule has topped the distillery’s best-selling cocktails every night since they opened. What sets it apart from the rest, according to owner Adam Flatt, is that they use Social Still vodka, which has been nationally and internationally recognized as one of the best. DiMaio’s is an unassuming kind of place, one you might drive past or not give much of a second thought to if you were in the strip mall shopping for something else, say, like a pair of pliers at the hardware store. After all, it’s a family-owned pizzeria and restaurant, and you know what to expect—a modest-sized dining room with basic furniture, a large menu with lots of different pizzas and pasta dishes, garlic knots at the ready. Well, yes and no.

INSIDE DISH DiMaio’s does indeed present all of these things upon first glance. “We are a pizzeria restaurant; we are not fancy,” says Anna, who runs the place with her mother, Maria, and sisters Rosaria and Daniela. Everyone pitches in—you can find Anna doing the hiring, scheduling and ordering, but also in the kitchen, cooking, too, and greeting customers. Maria cooks on the weekends, and Anna’s sisters are responsible for kitchen prep.

But don’t let appearances fool you. Yes, DiMaio’s serves good food, done well, without much fuss or fanfare, but it’s also more than what you would expect. All the sauces are made from scratch and the entrées—should you order one—are made to order. There’s no reheating going on here—even things such as calzones and pepperoni bread are prepared when you order them and not simply reheated after sitting out all day. The bread they use for sandwiches and with entrées is made daily in house. It features a crisp crust and a softish crumb, but “it’s not Italian bread,” she says. (Nor should it be, as it has to multitask and serve various purposes.) There’s no semolina in the bread here. Pizza dough is made from scratch, too—that’s fairly typical for pizza joints. You can see where this is going, maybe—DiMaio’s is also the type of place whose “pizza guy,” as Anna calls him, worked there for almost 30 years until he retired two years ago.

The family moved to Pennsylvania from New Jersey and, as Anna tells it, she grew up in the restaurant biz. DiMaio’s has been in the same Hellertown location since 1985, with an expansion in 2002 that took over an empty storefront next door and brought up their capacity to 24 tables— or about 96 people, with about a half dozen outside tables during good weather. Her family ran a restaurant of the same name back in Berkeley Heights, where she’s originally from (it’s still there, but someone else owns it now and has changed the menu). And just to show how rooted the family is here in the Lehigh Valley, Anna’s brother Tony runs Gio Italian Grill in Macungie. “It just got into our blood,” she says.

The fact that the DiMaio family has New York City metro-area roots assures us that their classic Neapolitan pizza is New York-style with a thin crust: You have to be able to hold the slice horizontally and it has to stay that way. You also have to be able to fold it in half down the middle without it collapsing, and walk across the street with it. Those are some of the unwritten rules of New York-style pizza. So far as one can tell, DiMaio’s holds up. “People tell us, because we are closed on Sundays, ‘Oh, we were forced to order Papa John’s,’ and I say, ‘No one is forcing you! Just wait until we are open!’” Anna laughs.

Speaking of pizza, lately DiMaio’s has been doing a brisk business with Nonna Pizza, their version of grandma pie. It’s typically a square pizza with cheese on the bottom and sauce on the top.

But make no mistake, this isn’t a Sicilian pizza served inside out or upside down (also see: Colonial Pizza in Easton). You see it on some menus around here, but according to Anna, “it’s more common in New York and New Jersey.” They use the same dough for all their pizza types, but they don’t let the dough rise as much for this one. So you get a thin crust, 15-inch square pizza, which you can order by the pie or the “cut”—you get nine square cuts per pizza. It’s a well-balanced combination of their sauce, which isn’t too sweet, Romano cheese and oregano. “I think 99 out of 100 people have really liked this pizza when they’ve tried it,” she

says. It’s a more time-consuming bake, because the cheese and the sauce are added in separate steps. “It was a little longer when we first started making it in the summer, but now people can expect it to take about 20 minutes,” she says.

(Just to momentarily confuse matters, DiMaio’s also makes the regional specialty known as tomato pie, which they make in a round shape with tomato sauce, “a tiny bit of Romano” and oregano, she says. It’s not as big of a seller.)

DiMaio’s will feed you more than just pizza, and with 31 years in business, they’ve definitely developed a loyal following. “The chicken Francese is one of our most popular dishes,” Anna says. Nothing has changed in the method or ingredients—flour, egg batter, lemon and white wine—over the years. “It’s not pounded super

thin, like how other places do it. But you can break it with a fork, it’s so tender,” she says.

Maria cuts the chicken right off the breast. Other hits include their version of saltimbocca, called Chicken DiMaio, which they make with spinach and ham instead of prosciutto. “It’s very simple, but has so much flavor,” she says. (It’s also available with shrimp or veal.) You could say the same about their seafood fra diavolo, too. DiMaio’s is also known for its white cream clam sauce— baby clams served over creamy linguine. “It’s rich and kind of an older dish, but people still order it,” she says.

Another specialty is their stracciatella soup, which contains a secret ingredient, along with egg, chicken broth, spinach and Romano cheese. It may sound unusual; the ingredients all get whisked together and then dropped into boiling water, forming the little shreds of ingredients for which it is named. “We won an award for it at the Sands Souper Bowl,” she says. It’s light but filling.

“It became so popular that we had to put it on the menu all year round. My mother used to make it for us when we were kids, if we were sick or it was cold out,” she says.

It’s clear there’s pride in what DiMaio’s puts forth on a daily basis (except for Sunday—“we all need rest!”), all across the board, but pizza gets special love. “I would die if I had to give up pizza,” she says. lehighvalleystyle.com | FEBRUARY 2018 65

In the winter, there’s a second soup. Pizza is always a winner and the Nonna’s Pizza, a square, thin-crust version with cheese on the bottom and sauce on top, is a delicious addition to the menu in the past year. People also reportedly order sides of their meatballs to go regularly—they are about the size of a baseball, baked and fork tender. You can’t miss some of the entrées, especially the chicken Francese, the seafood fra diavolo and the house version of saltimbocca— they use ham instead of prosciutto, and you can have it with veal or chicken.

Other info: DiMaio’s is BYOB, and the restaurant doesn’t charge a corkage fee. They will open and pour your wine for you.

Pickelhaubes The Mint Gastropub

At The Mint, there is no mandate on how you choose to order your food, something that’s made apparent by the noncommittal labels on the menu. Titles like bits and bobs, paws and maws and fork, knife and spoon are how meals are differentiated here. And this particular dish, the Pickelhaubes, resides under bits and bobs, which, at other restaurants, would likely be called appetizers. But The Mint doesn’t like to follow suit with what other restaurants are doing, anyway.

In the creation of the Pickelhaubes, the team was playing around with the idea of fried pickles and meat, but chef/owner Domenico Lombardo was looking to avoid the mess factor of such a “densely fried” food.

Instead, they went the egg roll route, using “this wonderful pastrami from New York.”

He says the creation was on the verge of becoming a Reuben roll, except they swapped out the Thousand Island dressing for some German-inspired mustard.

Staying true to the dish’s

German roots, Lombardo knew it needed an appropriate title, and so “Pickelhaubes” was born—the name of the spiked helmet traditionally worn by German soldiers, military, firefighters and police in the nineteenth and twentieth centuries.

The dish packs the perfect punch of flavor, consisting of the aforementioned pastrami, dill pickle, sauerkraut and mustard. And in the case that there is a tang that might be missing, each order comes with some house duck sauce—essentially, sweet and sour—for dipping. “[The sauce] gives a good amount of spice,” says Lombardo, explaining that this idea of “palate satisfaction” is something always considered at The Mint, ensuring that each dish has that hot, sour, salty and sweet element to it.
