EDITOR’S LETTER

JANUARY 2017

Cheers & Chances

And just like that, 2016 has come to an end. The earth has completed its orbit around the sun, and, as humans on this earth, we wonder if our own progress pales in comparison. We begin to look back at the last 365 days, all we have accomplished, all we wish we had accomplished, and we resolve that next year will be better.

As an editor, measuring growth should be an easy task. After all, I have 12 wonderful issues to look back on. We can track our web hits, our number of social followers and the progress in print subscriptions. Those digits can signal growth, sure, but for our team, that’s not the growth we truly care about.

The growth we work boundlessly to achieve is not so easily measured. Our intent—or resolution, might we call it—is to support and cover all members of this diverse community, the one we are lucky enough to call home. As you flip through the pages of this magazine, we hope that you feel empowered, inspired, represented and valued. We hope that we’ve given you that this year, and we are steadfast on doing it again.

krinaldi@lehighvalleystyle.com @kristen_rinaldi

We also hope to create content that encourages you to make your own resolutions, not just once a year, but also every day. This year, challenge yourself to conquer our ultimate Lehigh Valley bucket list on pg. 34, take advantage of the innovative fitness regimes in the area on pg. 30, detox your body with a local juice cleanse on pg. 27 and, if you’re really feeling the love, celebrate it, like the 12 couples in our annual weddings feature.

Let’s make it the best year yet.

THE KNOT BOOK OF WEDDING LISTS

Carley Roney and the editors of TheKnot.com unveil the ultimate guide to the perfect day, down to the smallest details. This compact guide makes planning a wedding easy with timelines, checklists, ideas and more.

Robert Noonan takes many of his creative cues from the ceaseless wonders of land, air and water. His unique art conjures images of earth’s restless strata, water etching patterns into sand and the arborescent wonders of our world.

At times, his materials playfully mislead the viewer. A piece that looks like wood is actually stone. Another appears to be shale but turns out to be wood. These intriguing transformations add to the art’s appeal and encourage closer examination. Although Noonan has expressed his creative nature throughout his life, the duties of fatherhood made him a better steward of time. The upshot was a memorable body of work. “I remember carving sandstone sculptures as a kid and drawing fantasy property maps at an early age,” he says. “I ‘sold’ my first drawing, a football player with the wildcat head of our middle school mascot, to a fellow athlete in ninth grade for a package of chocolate chip cookies. When I took on the role of stay-at-home dad much later, I started to take my art more seriously, stealing away time during kid naps to draw, in detail, natural artifacts [that] I had collected over the years and animal

subjects from photographs. As time progressed, I was able to spend more hours concentrating on art and my work, though still inspired by the natural world, gradually grew to be more abstract and more three-dimensional.”

Noonan used to struggle with the gap between an imagined work and the finished product. Most of his pieces start out as two-dimensional drawings. The unexpected elements of their three-dimensional fruition were difficult for him to accept, but this tension has served him well. These curious objects possess an organic appeal and maintain a refreshing dissimilarity from every other offering in strong group shows.

music: ROGUE DIPLOMATS

9-11 p.m.

Home to Celtic Classic and many an Irish pub, the Lehigh Valley loves its Old World heritage and the rollicking, romantic music of the Emerald Isle. Sharing their time between New York City and Bethlehem, Rogue Diplomats are a Celtic contingent playing with frequency in the Valley and doing jolly justice to the legends of Irish music.

Most of the five-member bunch either reside in or are from Bethlehem and draw on early experiences in families steeped in Irish ancestry. “My uncle and great-uncle are in Irish bands, so I grew up with the music,” says guitarist and singer Brian Donnelly. “I used to stand on the dining room table and sing Irish songs when company was over.”

Donnelly started Rogue Diplomats with Matthew Breiner and Patrick Marran while they were living in New York City, where they chose a fitting band name from a very unrelated source. Dennis Rodman’s bizarre forays to North Korea had earned him the designation “rogue diplomat” in the news, and Donnelly and Breiner couldn’t resist being the first and only Irish band named after Dennis Rodman.

Together with Christine Scharf Breiner and Nate Diehl, Rogue Diplomats have a roaring good time on stage balancing the humor, solemnity and beautiful three- and four-part harmonies of the music made popular by the Clancy Brothers and the Wolfe Tones, drawing on theatrical backgrounds to engulf their audience in well-rounded entertainment. “Performers like Seamus Kennedy and Timlin & Kane follow this model,” Breiner says, “and having enjoyed seeing them perform for years, it’s a wonderful feeling to carry on the tradition of sharing the simplicity and the unyielding depth and heart that is the core of traditional Celtic music.”

stage: 42 ND STREET

A visiting performance this month at the Zoellner Arts Center at Lehigh University, 42 nd Street is a Broadway musical for the lover of Broadway musicals, replete with big dance numbers, romantic kerfuffles in a backstage microcosm and stardom-seeking sweethearts moved by music.

One draw for local fans of theatre is the first seed of the plot: Peggy Sawyer makes her way to New York City on a bus from Allentown and, through one odd encounter and another, manages to get a role as a chorus girl in a brand-new show. 42nd Street originates and is set in the early 1930s, a time of pin curls and jazzy slang, catty chorus girls and fedora-clad goons-for-hire.

The musical, featuring favorites like “We’re in the Money,” and “Lullaby of Broadway,” was first staged in 1980, harking all the way back to a 1933 film version of a novel by Bradford Ropes. It’s the height of the Great Depression and director

Julian Marsh is endeavoring to put on a successful, glorious, extravagant musical. As a mere chorus girl, it may not seem like Peggy’s got much going for her, especially with a fading star hogging the spotlight and a mercurial director quick to snatch back her chance, but this plucky little dancer proves herself, and with the support of her fellow dancers, she has a real shot at stardom. Thanks to Zoellner’s mission to bring great shows and artists to the Lehigh Valley, residents can catch this spectacular musical only minutes from home and capture the excitement of a hopeful Allentownian making her way in the bright lights of New York.

EMBRACE UNIQUENESS

with Roey’s Paintbox Parties

Roey’s Paintbox Parties has a new location on the Allentown ArtsWalk, created by owner, instructor, illustrator, artist and children’s book author Roey Ebert. “Allentown is where my life story is. I was born here, married here, schooled here and taught here,” says Ebert. “I love the whole vibe of the downtown and especially the ArtsWalk. I am so thrilled to share this spot with my customers. We have so much fun during our painting parties and this new studio just feels like home.”

The fun doesn’t stop at her studio though. Ebert visits schools for painting parties, which allows her to combine her love of art and teaching. “I feel art gives me a tool to teach on so many levels. The colors and visual enrichment offer a vast array of benefits to everyone taking a class,” says Ebert. “Sharing your own art with children and watching them recreate it in their own unique way is such a fun experience for both the teacher and student, and allows you to see how each person or child is completely unique in their own thoughts and ideas, and their uniqueness should be embraced.”

Before Union and Finch opened this past summer, owner Shahnaz Hanna felt there was a void to be filled in Allentown’s West End. “That void was a casual, modern bistro with a mature sense of hospitality combined with a neighborhood vibe,” says Hanna. With the help of her husband and family, Hanna bought the building that housed the former JP O’Malley’s Pub with the intent to fill that void. She also pulled inspiration from some of her favorite local restaurants in New York City from when she lived there with her husband.

“Our food is casual American fare with familiar favorites. You’ll also see diversity in our menu like poutine and shakshuka, a Middle Eastern dish for brunch,” says Hanna. “Believe it or not, our best seller is our chicken and waffle right now. Customers rave about it.” Other popular items include the tuna tacos and Pat LaFrieda burgers. To drink, they offer a classic cocktail list and fourteen craft beers on tap.

Union and Finch has received a great response from customers. “We’re very active in engaging customers for their feedback, and overall, people love the food and open, airy atmosphere of our space,” says Hanna. Visit Union and Finch during happy hours for $3.50 draft beers, $7 specialty cocktails and tasty appetizers.

VOLUNTEER SPOTLIGHT

ASHANTI LITTLEJOHN

University

In 2009, when Ashanti Littlejohn was in high school, she began investing in her college career. She started volunteering at St. Luke’s University Health Network’s main campus with the goal to one day work there, and she has been volunteering with them ever since. “I originally started volunteering at St. Luke’s because it is a hospital I hope to work for when I am older,” says Littlejohn. “Volunteering with St. Luke’s was a way for me to be directly involved with the community and to give back.” St. Luke’s also holds a special place in Littlejohn’s heart because it is the hospital that her mom passed away at. “I hope that I can be an addition to the hospital network that could help save lives.”

Littlejohn has held many different volunteer positions at St. Luke’s. Some responsibilities she has had include transporting patients, putting together discharge packets, changing and cleaning emergency beds and servicing patients’ families in the gift shop. She has also been able to have many conversations with patients and serve as a patient advocate. “From my time volunteering, I learned that the key to gaining someone’s trust is consistency and commitment,” she says. In

addition, Littlejohn says her experiences volunteering in the emergency room have resonated with her the most because she has been in the patients’ shoes and has been in the emergency room when she was very sick. “Seeing familiar faces made me more trusting in the treatment that doctors would suggest,” says Littlejohn. “I know, specifically in the emergency room, there are some patients who come every week because they believe that’s the only place that can help them with their specific problems, especially since the nurses and staff are usually familiar faces.”

This past May, Littlejohn graduated with a bachelor of science in biology from Temple University, and this upcoming May, she will graduate with her master’s in biomedical sciences from The Commonwealth Medical College. She plans to attend medical school, which will bring her one step closer to her goal of working at St. Luke’s.

Yergey Brewing BEER CHEMISTRY

Enjoy artisanal beers at Yergey Brewing, a nano-brewery and taproom, which opened its doors in late September. Owner, brewer and retired chemist Jim Yergey crafts diverse beers such as porters, ales and IPAs; however, it all started with Hoptileitious. This Imperial IPA was the winner of the August 2014 “Be a Brewer for a Day” competition and was brewed at Fegley’s Allentown Brew Works in January 2015 to be served in multiple locations during Lehigh Valley Beer Week the following month. Yergey attended various “Meet the Brewer” events at bars and restaurants to promote his winning beer. “Unlike previous winners who had day jobs and, as such, were only able to go out once or twice, I was retired and was able to go out five of the seven nights, and had an absolute blast talking about the contest, the brewing at Fegley’s and beer in general,” says Yergey. “It was at that point that I knew that I wanted to follow my passion to open a brewery.”

Since opening in September, Yergey Brewing has steadily increased its hours and hopes to keep six to eight beers on tap going forward. “We do intend to have limited local distribution to bars and restaurants that serve a good selection of craft beers,” says Yergey.

QUICK TIPS FROM A LOCAL SPECIALIST

Everything You Need to Know About Juice Cleanses

Sarah Hinsch

Certified Health and Wellness Coach GREENMOUTH JUICE BAR + CAFE OWNER

Eating well should not be painful process. Sarah Hinsch, owner of Greenmouth Juice Bar + Cafe in Easton and Allentown, has tips on how to make eating healthy a regular habit that you choose to do, rather than one you’re forced to do. According to Hinsch, getting your diet back on track starts with a juice cleanse.

1. The Journey

For people with clean diets already, a one-day juice cleanse once a week or every other week

will help them recharge. However, if you’re not eating a clean diet packed with veggies and are new to juice cleanses, a three-day or five-day cleanse is ideal. Hinsch recommends completing a three-day or five-day cleanse a couple times a year or once a quarter in order to clean the digestive system. A juice cleanse also gives the digestive system a rest while reducing bad-habit cravings like sugar, salt and coffee.

Juice cleanses act as stepping stones to health goals. They are beneficial to physical goals like losing weight and emotional goals like being happier. Be committed to the cleanse and focus on the gratifying results it will have on your body. “It’s a mind game, so when you set your intentions, you commit to something and take action, and focus on the results,” says Hinsch, who believes anyone can achieve the five-day cleanse. Health Coach Linda White is regularly available on site as a Greenmouth juice cleanse consultant and can help identify what length of cleanse your body needs.

2. The Mind

Put your body first and remember why you’re not eating during your juice cleanse: Because you care about your body and are taking this step to become healthier. “Food can either be the purest form of medicine or the ugliest toxic poison,” says Hinsch. Your body rejuvenates cells every second of the day and those cells are made of the food you eat; food is fuel.

While most Americans are concerned about macronutrients such as proteins, fats and calories, it is more important to focus on micronutrients, which most Americans are deficient in, like phytonutrients, enzymes, minerals and vitamins. These micronutrients are what prevent diseases and keep your body working properly. “All disease starts in the gut, so the cleaner your gut is, the stronger your immunity is to ward off and fight off disease,” says Hinsch.

ASK THE EXPERT

3. The 80/20 Rule

All human beings have toxic substances within their bodies, whether it is from breathing toxic fumes, drinking chemical-treated water or eating processed foods. Everyone has a different toxic load and it is important to create an alkaline balance within your body by digesting 80 percent alkaline items, like fruits and vegetables, and 20 percent acidic, which should give your body a pH of seven.

“Acidic items are not what you think of,” says Hinsch. “You think of acidic as lemons, but, actually, lemon is an alkaline in your body once it’s metabolized.” Acidic foods include sugar, dairy and flour. The 80/20 rule still lets you eat all your favorites, just in more limited amounts. Counteract the ice cream and your must-have treats with colorful vegetables and fruits that are chock-full of micronutrients.

4. The Cleanse

Three days prior to the juice cleanse, eat a healthy diet consisting of fresh vegetables, fruits, whole grains and eggs, and strive for eight glasses of water a day. This will ease hunger cravings during the cleanse. With the Greenmouth juice cleanse, participants are told to start each morning with a glass of water and a squeeze of lemon, followed by the seven juices to drink throughout the day. All seven drinks serve a specific purpose for the body with their names revealing their purpose such as “Alkalize,” “Energize” and “Immunize.”

The first of the seven is the “Morning Tonic,” “which is alkalizing your gut and giving you a really good flush of high acid from apple cider vinegar and creating that balance in your gut right [off] the bat,” says Hinsch. Each drink becomes fuller bodied and more detoxifying as the day progresses. The last drink of the day is “Cinnamon Vanilla Almond Milk” to make you feel full. Postcleanse diets should be similar to the pre-cleanse diet in order to gradually return to solid foods and hopefully make smarter food choices in the future. Early this month, Greenmouth Juice Bar + Cafe will move their Easton location to 134 N. 2nd St., Easton and will be called “Greenmouth Home.” The new location will be equipped with indoor and outdoor seating and will be able to hold more guests.

Pound AERIAL YOGA

WHO SHOULD TRY IT

Anyone who likes great music, wants to “rock out in their workout,” get a great core, arm and leg workout while having fun.

If you thought dance-inspired workouts were limited to Zumba, think again. There is a new genre of classes that are sure to fire up your metabolism, get your heart rate going and challenge your core.

If you’ve ever found yourself air drumming to a favorite song in your car or at a concert, a Pound class is for you. According to Inner Strength’s owner Wendy Strohl, “It’s like going to a rock concert and being the drummer.” Using lightly weighted drumsticks called Rip Sticks, the class beats its way through choreographed music ranging from rock to rap and everything in between. Strohl says, “The music makes class go fast and people just have fun.” It is done in three positions: standing, seated and on your back so there is no impact. All levels of fitness can do the class, and adaptations can easily be made. Strohl has had members do the entire class in a seated position. Make no mistake, drumming burns a lot of calories. Waving sticks in the air and moving your body for 45 solid minutes builds stamina, strength and core development.

WHO SHOULD TRY IT

Those looking for a new experience, and a change from impact-based activities, with added bonuses of aiding in joint hydration and lymph flow. Yogis and non-yogis alike, interested in exploring postures and movement in a safe, suspended, fun environment.

Yoga has proven to be a mainstay in fitness routines and, therefore, continues to evolve and expand into new variations and versions. The newest version? Antigravity yoga.

Imagine hanging from silk hammocks, floating above the mat in various yoga-based postures and defying gravity. Body movements are supported by a suspended hammock, which helps to increase body awareness and allows for movements that may not be as easily achieved in mat-based yoga. Inversion positions are accomplished without risk of spine compression and allow for increased movement that might not be possible otherwise. AntiGravity Yoga Lab owner Kristine McCreary says, “After some simple instruction, students are able to let go of fear, step out of their comfort zone and experience how amazing it feels.”

For many, the New Year brings stark determination to improve one’s health and overall well-being. It also brings the search for new twists and innovations to keep one’s fitness routine from becoming exactly that: “routine.” The body’s incredible ability to adapt is the reason why variety and change are needed to improve one’s fitness. Doing the same thing repeatedly without change results in plateaus. Some of the latest and most innovative trends, ideas and tools exist right here in the Valley.

WHO SHOULD TRY IT

Anyone who is seeking to move better, whether for improved athletic performance, fitness or daily life, and unlock their movement potential in a new fun way.

Being able to move athletically and without limitations is becoming the latest evolution in fitness. There is an increased awareness and realization that your training and quality of life are only as good as the quality of your movement. Structured training and daily life patterns have limited the true capacity of human movement. Sitting at a desk, poor posture, muscle imbalances and asymmetries create leaks in the systems and can limit how well you move.

The answer is a new breed of training. KiMovement Training™ classes are an innovative blend of cutting-edge Ki-Hara Resistance Flexibility training paired with primal-based movements. Using your own body for resistance and groundbased multi-planar movements gets your body to move in ways it may have forgotten. It will immerse you in flexibility, strength and mobility in a fun, dynamic approach. It can look like play, but it is sure to make you sweat, challenge you and redefine what you thought was possible.

ATHLETIC PERFORMANCE BARRE

WHO SHOULD TRY IT

WHO SHOULD TRY IT

Those with an established level of fitness and form and a desire for intense athletic training, including lifting and explosive movement exercises.

CrossFit and its model of high-athletic performance have shown no signs of slowing down. Incorporating Olympic-style lifting, plyometrics and bodyweight exercises performed at a high intensity, the CrossFit model has created a loyal culture and has influenced the entire fitness industry.

While the high-athletic performance continues to be in demand, there is also a trend toward broadening the experience. South Mountain CrossFit owner Kurt Miller has expanded offerings like cycling and boot camp-style classes that don’t have heavy lifting, as well as recovery therapies like massage and chiropractics. Miller says, “We maintain the core values of CrossFit and are able to provide performance level training for competitive athletes, but we also can provide a variety of fitness level training for those interested in improving overall health.”

Those seeking to tone muscle in a focused manner without impact, use of heavy weights or traditional lifting.

It may look like you are entering a ballet class, but not to fear; tights or ballet experience are not required for a Barre class. Developed by a former dancer and choreographer, Barre classes use small isometric movements until the muscle is worked to fatigue. It is followed by stretching or incorporating larger movements with the intent to create long, lean muscle. Classes concentrate on often-viewed “problem” areas, including hips, thighs, buttocks, abdominals and arms. Pure Barre™ owner Katie Johnson loves the fact that “Since there is no jumping or pounding, it is very accessible to everyone. We have clients from 17 to 75 years of age.”

Barre classes can vary in approach, with new classes adding larger, faster movements for a greater cardio component and complete body workout.

If you don’t have an hour but still want to focus on the hips and core, a 30-minute “Tweek the Cheeks” class at Studio Fitness is an option to tone and tighten those areas around the hips that need a little extra attention. Utilizing bands and bodyweight exercises, the core and hip areas are put to the test in a short concise format.

Sample Flight

HiJinx

Brewing Company

If you’re not sure what to order upon entering the brewery, CEO and Brewmaster Curt Keck will likely recommend the HiJinx Sample Flight, which consists of six two-ounce pours. For a mere $3, customers can try a wide array of beers and find a forever favorite. Originally, Keck didn’t charge anything for the flights because he wanted “everyone to try everything,” and he still does.

The flight samples rotate regularly, based on availability, demand and season, but there are some staples that customers can usually count on, like the Far Darrig Irish RED, CitraSqueeze and Barista’s Choice Coffee Porter. The latter happens to be a favorite of Keck’s wife (who, for the record, hates beer) and is made with real coffee from Taylor Roasted CoffeeHouse in Northampton.

The pours are arranged “based on flavor profile, never color,” says Keck.

Find HiJinx brews at local downtown favorites like The Hamilton Kitchen & Bar, Bell Hall, Grain, The Dime and Queen City BBQ, as well as at Liberty Street Tavern and Jack Callaghan’s Ale House. Additionally, Grille 3501 regularly serves their Dolle Streken, which HiJinx exclusively ages in Jack Daniels barrels for the restaurant, is 10.5 percent ABV and comes with a warning label as it’s said to catch you off guard.

While there are food trucks on occasion, snacks always on hand and talk of inviting caterers, HiJinx is currently a bring your own— food that is. Open Thursday through Sunday, the garage-like space is available for casual gatherings, parties and, on Thursdays, quoits.

Try their Steal Your Face stout and Steal Your Face whiskey, which is a recent collaboration with County Seat Spirits, and whose name is a nod to the Grateful Dead. Enjoy a glass of beer, aged in County Seat’s barrels, a shot of whiskey, and HiJinx’s laid-back vibes and jammin’ music selection.

JUST MARRIED 12 LEHIGH VALLEY LOVE STORIES

taylor & chris

JULY 2, 2016

Taylor Dias and Chris Foundas started out as sales analysts working at different locations for the same company—Chris in Boston and Taylor in Bethlehem. After two years of friendship, they finally went out for sushi and wine. Almost immediately after finishing their spicy tuna, Taylor moved to Boston and they've been inseparable ever since!

After a long winter, Chris planned a trip to Maine, where Chris knew Taylor’s love for the ocean would lead them to the beach. By the first windy day, they were strolling the sand, and Chris dropped down on one knee to ask Taylor to spend forever with him.

With the help of a local designer and wedding planner, Taylor and Chris coordinated a “classic summer romance” wedding. Shades of cream and accents of gold and blush were enhanced by the beautiful Bethlehem summer. For Taylor, a Bethlehem native, this was a wedding she’d only dreamed about, holding the reception at the Historic Hotel Bethlehem steps away from where her parents were married over 30 years ago at the Moravian Chapel. They included their favorite late-night snacks and played every Backstreet Boys hit. At the conclusion of the night, guests took beautiful gold Bethlehem star ornaments off delicate gold trees, each taking a piece of Bethlehem home with them. With a sparkler send-off fit for the Fourth of July weekend, the couple concluded this amazing night surrounded by family and friends.

JUNE 25, 2016

Jillian Bevacqua and Patrick Fligge met as students at Muhlenberg College. Friends throughout their three overlapping years, they reconnected after graduation when Pat returned to work for the college. They shared their first kiss after a summer’s walk through campus, and nearly five years later, the couple said “I do” mere yards away from the spot of that first kiss. Pat and Jillian purchased their first home together in May of 2015. About a month before they moved in, they visited their future Whitehall house to check on some installations. Jillian was excited about the dishwasher, and Pat was excited to get down on one knee, in the middle of their future living room.

As proud alumni of Muhlenberg, their dream was to get married on the front lawn of their alma mater. When it came to choosing a place to celebrate with their 200-plus guests, the choice was clear: Jillian’s employer, Paxos Restaurants, is the family behind Blue Grillhouse and Event Center in Bethlehem.

Jillian and Pat exchanged vows in front of friends, family and the most important member of the bridal party: their Golden Retriever puppy, Steve! The celebrations continued at Blue with signature drinks, beautiful toasts and a performance from Jillian’s brother, who jumped up to sing with the band. Pat and Jillian put their own spin on some wedding traditions by playing a cheeky tune from the Pirates of the Caribbean soundtrack during the garter removal and serving endless cake pops, milk and cookies and a chocolate fountain for dessert.

BIRDS OF A FEATHER PHOTOGRAPHY

JUNE 4, 2016

Michael Furman and Kerri Ann Swan met during their third year at Loyola University Maryland in 2008. Kerri had been studying abroad in England with all of Mike’s best friends and kept hearing his name over and over again. All the while, Mike kept hearing Kerri’s name from his friends as well. Once Kerri returned from England and the two met, there was an instant spark.

In 2014, Kerri was offered an incredible dental residency opportunity at Lehigh Valley Hospital in Allentown, and Michael, a school psychologist, soon followed her there. They fell in love with the countryside and small-city feel all in one beautiful place.

One weekend in July 2014, an impromptu date night turned magical as Michael surprised her with an intimate proposal, hundreds of candles aglow in their little apartment.

With the help of Kerri’s talented aunt-turned-wedding-planner, Maureen, they planned the rustic, nature-inspired wedding of their dreams. Although it rained for days before the big day, the sky was blue by the time their intimate afternoon ceremony began. They exchanged vows under an ancient oak tree, with a simple burlap-and-lace arch draped over a branch. One of their mutual best friends who first introduced them performed the ceremony, and, together with family and friends, they danced the rest of the night away under the stars.

ashley & bill

SEPTEMBER 3, 2016

Ashley Stolte and Bill Audelo grew up ten minutes from each other in northern New Jersey, but they didn't meet in person until a blind date. After that first date, Bill called his future best man to report that Ashley was out of his league. Luckily for Bill, it was Ashley who picked up the phone to request a second date. The dates kept coming and love soon followed.

After two years together, Ashley joined Bill on a trip to Mexico to visit his family. One night during dinner, a 15-piece mariachi band appeared. When the band cut out, what would become their wedding song came on over the speakers, and Bill asked Ashley to marry him.

Not wanting to waste a moment of their lifetime together, Ashley and Bill began planning with only seven months to spare. The couple knew they found their venue the first time they experienced the classic elegance of the Historic Hotel Bethlehem. Being the ever-loyal Jersey girl, Ashley found solace by having the ceremony back home.

When the big day came, the gorgeous weather was only bested by an even more beautiful bride. After the “I dos” were over, Bill and Ashley were joined by their closest friends and family in a celebration that pushed the dance floor (and the bartenders) to the limit. With the sun ready to come up, the party finally ended. Ashley and Bill could not have imagined a more perfect day or perfect way to start their lives together.

JUNE 4, 2016

Rich Wendell met Heidi Hon at the St. James Gate Irish Pub over a Guinness in July of 2013. After several years of dating, they adopted a Vizsla named Max and moved in together. Rich proposed to Heidi on her birthday in September of 2015 over a home-cooked meal, her engagement ring a unique yellow sapphire.

The Bally Spring Inn was a wonderful venue, and its resident wedding coordinator, Stephanie, treated them like family. Oishi Japan's dumplings and sushi were a hit at cocktail hour, and thanks to the discovery of local Aunt Jack's Real Home Baking at the local Saucon Valley Farmers’ Market, a delicious vanilla almond cream cake and pie bar was paired up with succulent ice cream from the Penn State Creamery. Beautiful bouquets, boutonnieres and shepherd-hook vases played up the theme colors inspired by blue hydrangeas, including hints of yellow, greys and blues. The salon team tackled makeup for 11 people with phenomenal skill. The wedding was a true dance party, thanks to the DJ, and included a unique send-off for their one and only Max, who passed away suddenly prior to the wedding, with helium balloons and his favorite treats. The perfect day ended with sparklers and s'mores at a lovely bonfire.

JUNE 11, 2016

Patrick Collins and Michelle Hanna met in September of 2009 in the Moravian College dining hall. On a stormy June afternoon in 2015, Pat wrote a note and placed it in Michelle’s apartment. The note instructed Michelle to meet Pat on the third floor of Comenius Hall. Almost six years after they had first met in that classroom, Pat asked Michelle to marry him.

Pat and Michelle chose to have an intimate wedding ceremony where it all began, Borhek Chapel located in Comenius Hall, Moravian College, after which they rode off in a 1934 Franklin.

Michelle loved restyling her mother’s wedding gown, using one of the sleeves as a detail to be wrapped around her bouquet. The theme was classic black and white with a rustic Italian flair to match the elegance of Folino Estate. The venue boasted a patio with a perfect view of the beautiful sunset as well as the capacity for over 200 family and friends. From the black-and-white polka dot invitation envelope liner to the men’s black-and-white polka dot socks, and the vibrant, textured floral choice including all of the bride's favorites, and the lantern centerpieces, the couple's style was signified with just the right mix of formal and rustic.

Following speeches, dinner and parent dances, the bride’s father, Joseph Hanna, sang his own rendition of “The Way You Look Tonight” a cappella to Michelle, kicking off a night of dancing and celebration. Family and friends joined on the dance floor to participate in the traditional Arabic “Dabke” dance, representing Michelle's Syrian heritage.

Matthew Kamont and Bradley Wilson met in May of 2005 at MainGate Night Club. After hitting it off very well, they rented an apartment in Easton a few months later and have been together ever since. Once same-sex marriage was legalized in May 2014, they really began talking about it. Bradley decided for their tenth anniversary, May 19, 2015, he would propose.

After dinner at Ocean in Easton, Bradley had their closest friends and family waiting in the audience at the State Theatre with signs he made out of glitter asking Matthew to marry him. They held their wedding at the Theatre as well, creating a show with props and a wedding party on stage behind the closed curtain. After the ceremony, they burst into a surprise lip sync to Frozen’s “Love Is an Open Door,” with snow falling onstage! The reception was in the Acopian Ballroom of the Theatre, with centerpiece arrangements made of white standard lilies, hydrangeas and roses. Matthew’s tuxedo sparkled with Swarovski crystals hand-sewn by Deborah Lopresti Designer for Brides.

The reception featured a raw bar, macaroni and cheese and mashed potato bar, carving station and dinner station. Another surprise for the evening was a lip sync battle between the couple. Guests voted for their favorite by applause. Yet another attention-grabber was the cake, made to look like a chandelier. In lieu of a traditional guest book, guests signed stones they placed on top of the sand used during the couple's sand ceremony. Matthew and Bradley's three pups were also present for this unforgettable night in the form of cocktails named after each of them.

JUNE 24, 2016

Victoria Oliva and Joshua Parris met in January 2014 at Lehigh University, where they were both student-athletes. Victoria's research for her psychology thesis used Joshua's football team as its participant pool. Their interactions expanded beyond the research project, and their first kiss was at a Lehigh Track & Field formal.

Joshua asked her to be his girlfriend while watching the sunrise together on the beach of Bay Head, New Jersey, and they began dating in hopes that their relationship would continue to grow and eventually lead to marriage. It was only fitting that Joshua asked Victoria to be his wife back on Bay Head beach watching the sunrise. He surprised her with a new chapter in “their book” titled, “The Proposal,” which concluded with him rapping a love song to her ending in, “Will you be my Mrs.?”

Victoria and Joshua returned to Lehigh University to get married in the same place where their relationship began. Pastor Matt officiated their nuptials, and the ceremony was full of spirit, friends and family. As their reception began, the dance floor quickly filled up until the DJ sat Victoria down for a surprise from Joshua—another rap. He remixed his engagement rap and performed a similar love song telling her he was “never letting go.” To end the night, all 200-plus guests circled the dance floor joining arms to “Piano Man,” a Lehigh Track & Field team tradition. Joshua and Victoria couldn’t have asked for a better way to begin their marriage—being surrounded by friends and family, with a very tangible presence of God among them.

A childhood friendship between Sarah Deem and Keven Derolf developed into a relationship after his steadfast support helped her through the death of her mother.

In May of 2015, Keven graduated from college and left soon after to start his career in the U.S. Army. They talked about marriage in letters, but Sarah wasn't suspecting anything when Keven came home a day early for Christmas and proposed in her home.

Planning long distance while Keven was away, Sarah had the help of her father to coordinate things, and she chose a venue nestled in the countryside with breathtaking views.

The rustic feel of the event was achieved with chalkboards for the seating arrangements, an old ladder holding pictures of the couple and Mason jar centerpieces.

The florist made a special memorial table arrangement for the seat that would have been Sarah's mother's. A homemade cornhole game invited guests to take advantage of the beautiful night and venture out to enjoy the fresh air and beautiful sunset views.

It was a special day spent surrounded with everyone close to them. The whole day went smoothly thanks to Nina, a coordinator from Olde Homestead, and Keven was thrilled to see how everything turned out.

At the end of the night, they made their exit with guests holding sparklers in a truly magical moment.

Shawn Borelli and Allison Walker were set up on a blind date by his best friend's mother. The match was a good one, and they hit it off quickly.

After a romantic dinner one night at their favorite restaurant, Go Fish, they got home, had a glass of wine and Shawn surprised her by getting down on one knee. Shawn had designed a custom engagement ring for Allison and even invited her parents with him to go shopping for it.

It was a warm day with some drizzles but the rain held off for the outdoor ceremony. It was a completely custom event with a minimalist bridal party and both tears and laughter throughout. The bride and groom wrote their own vows and decided to “tie a knot” as their unity ceremony.

The bridal party had an amazing entrance with the maid of honor picking up the best man and swinging him around. Dinner selections were chicken, beef, and sole-stuffed crab and ravioli, which all received rave reviews. The bride and groom exchanged cake very nicely and followed that up with a special dance. Instead of a traditional bouquet toss, the couple opted to give the bouquet to the woman who had set them up on their first blind date. Guests danced the night away and flooded to the photo booth. The night ended with a sparkler exit.

Carlos Samayoa and Samantha Hoell met in 2014 while working together at Victaulic. At first, Sam thought Carlos was too serious, but after a St. Paddy's Day night out with coworkers, she learned how much fun he could be. On vacation the next year in St. Maarten, Carlos proposed on a quiet corner of the beach at night, with flower petals spread under the blue moon.

They went with an elegant, contemporary theme, so the Renaissance Allentown was a perfect venue: a big-city feel at home in the Lehigh Valley, and right in the heart of the revitalizing downtown.

A mariachi band provided lively music for the cocktail hour. Rockin’ Ramaley provided an LED dance floor whose colorful lights guaranteed that guests would be dancing all night long. And, of course, Stitch, their pet Yorkie, made an appearance during cocktail hour. Sam also received a unique gift from a bridesmaid: a custom painting of the happy couple (and Stitch), created by hand by an actual Lilly Pulitzer designer (Sam’s favorite). Their wedding date brought record heat and storms, but that didn’t slow down the party. Guests partied from the beginning of the night until the very end of the reception, after which the celebration continued at The Dime and Roar.

JUNE 4, 2016

Alison Figler and Chad Wasilkowski's story began in July of 2010, when they were introduced through mutual friends at the Outer Banks in North Carolina. They both ended up at Marywood University, and after dating for three years, Chad proposed to Alison while they were making her grandmother's Christmas cookie recipe.

Their wedding vision was of rustic charm, and Lawnhaven at the Stroudsmoor fit the bill. Stroudsmoor's resident wedding planner, Ashley, gave off such an energetic glow and confidence that they knew their day would be perfect.

They were married at the church where Alison grew up, St. Mary’s Catholic Church in Alpha, New Jersey. Alison wore a ball gown wedding dress from the Disney Collection with a cathedral train and veil, navy shoes and sapphire jewelry. Her bouquet, pink peonies and white hydrangeas, was held together with her late grandmother’s rosary.

The cocktail hour was held outside with over a dozen varieties of appetizers. Guests enjoyed custom monogrammed cornhole boards, a photo booth, cigars and, of course, a signature drink, “Sweet Summer Sip.”

In a reception hall decorated with flowers, vines and deer antlers, the tables were decorated with tall centerpieces filled with blue and white hydrangeas along with rustic lanterns and Mason jars. Their four-tiered cake wore hydrangeas and a Mickey and Minnie cake topper. Guests, vendors and the Stroudsmoor went above and beyond to make their special day perfect.

ASK THE EXPERT

QUICK TIPS FROM A LOCAL SPECIALIST

MASTERING THE ART OF THE

FIRST DANCE

What options do couples have when planning for their first dance?

Bridal couples have the opportunity to choose from learning a few dance moves to a fully choreographed dance. Dance lessons are booked four at a time for a half hour each in length. After the four lessons, private lessons are booked one at a time, depending on how much practice is needed.

ASK THE EXPERT

How should a couple embark on choosing the “perfect” song for their dance?

When choosing music, if the future [couple has] their heart set on a certain song, I say “Go for it!” I usually recommend something classic with a good beat like Frank Sinatra’s “The Way You Look Tonight,” “I’ve Got You Under My Skin” or Elvis Presley’s “Can’t Help Falling in Love with You.”

What is your advice for couples that are intimidated by the idea of a public dance or that are lacking in dance skills?

I recommend that a couple come in for a lesson and learn enough moves to be able to look semipolished and comfortable on the dance floor. I also recommend that they shorten the length of their dance. A wedding dance should be two to three minutes. If they’re feeling anxious, they can shorten the length of the time that they are dancing. Dancing is an art form that should be shared with everyone. [It] brings you and your partner closer together in a relaxed, fun environment. Dance is one of the best activities you can do to strengthen your bond in a really healthy way, and it is good for you. You shouldn’t worry about who is watching.

Where in the wedding planning timeline should the first dance come into play?

The wedding dance should be scheduled with the rest of the event details. Lessons are booked five to eight months before the wedding date, and lessons usually begin two to four months before the wedding. The private lessons are 30 to 40 minutes in length. Couples are encouraged to wear comfortable clothes, but many brides bring their bridal shoes to the practice sessions. Videoing the learned dance steps is highly recommended for further practice at home.

What recent trends have you noticed in wedding choreography?

Couples who want to blow the roof off the joint and really knock it out of the park like to mix in a fun hip-hop combination. After they pick their slow sentimental song, I mix in popular hip-hop mixes and teach them a hip-hop combination. I’ve had great success with this approach, and the wedding attendees love it!

Is it ever OK to just skip a first dance altogether?

Dance joins couples together. Over the last eighteen years, I’ve taught many couples, and dance brings joy. Why skip it? In a marriage, you need all the help you can get.

How can a couple make their dance extra memorable?

To make the dance extra memorable, I have seen many brides dance with their fathers, and the grooms with their moms. Flower girls and ring bearers, blended families and the entire wedding party join in! It’s a spectacular way to start any reception!

What is the most rewarding part about helping couples with their wedding choreography?

One of the most magical [times] of your life is the first dance at your wedding—a moment in time you’ll always remember. The most rewarding thing about teaching couples their wedding dance is that I get to see them learn to dance with each other, laugh and be in love. There’s something very special about the month to three months before they say their vows, and I get to be part of that time in their lives. As a dance teacher, this has brought profound joy to my life, and I’m very grateful to have this be a part of a career I love.

HOTEL BETHLEHEM

What is the very best part about getting married in the Lehigh Valley?

The talented local vendors! My husband and I live outside of New York City. Friends of ours who got married near Manhattan were overwhelmed by the sheer volume of vendors and how expensive they were. You can find that same talent in the Lehigh Valley for a much more affordable price. Most venues will even go as far as to recommend their favorite vendors to help you narrow down your search!

Do you have any local cost-saving tips for brides and grooms on a tight budget?

Work ahead of time to chip away at projects that can be done weeks in advance—this way you aren't scrambling and splurging. You can find creative DIY ideas online that will save you money! Also, reach out to friends and coworkers who recently got married. You will be surprised how many former brides have centerpieces, sweetheart table signs and other decor that were only used for one day and will never be used again!

Looking back now, is there anything you would have changed?

Just one thing: We wish we had gotten a videographer! Lay out and rank your wish list. Whenever a budget is involved, not everything will be achievable. Think about what is most important to you. At the time, we didn't think a videographer was necessary, but now that the wedding is over, we wish we had footage to look back on.

Where/how will all future anniversaries be celebrated in the Lehigh Valley?

By reliving our wedding weekend! Dinner at our favorite Italian BYOB, Tre Scalini, in Downtown Bethlehem where we had our rehearsal dinner. Brunch in the Terrace Room at Hotel Bethlehem— a place that will always be dear to our hearts!

HANOVER GRANDE BALLROOM

What is the very best part about getting married in the Lehigh Valley?

It’s home! My husband and I grew up and currently reside in the Lehigh Valley and we absolutely love the area. We wouldn’t have considered anywhere else to celebrate our special day. In addition, the Lehigh Valley has so many beautiful venues, gorgeous photo spots and wonderful vendors available to match various styles and themes to make any bride’s wedding visions a reality. We had a blast attending bridal shows and meeting these vendors in our planning process. I wish it were socially acceptable to still attend them!

What do you think your guests enjoyed most about your special day?

I worked very closely with my venue and vendors to make sure that the ambience of our wedding day defined my husband and me as a couple. I wanted our personalities and interests to shine through so that our guests would look around and think “This is without a doubt Kristen and Joe’s wedding,” and I think they enjoyed that. I’ve also heard rave reviews about my father’s welcome speech (he now thinks he has a career as a stand-up comedian) and our venue’s cheesesteak bar that was opened up toward the end of our reception as a late-night snack.

What advice would you give to newly engaged couples that are about to embark on the wedding-planning process?

Enjoy every minute and make decisions together! The wedding-planning process can be very stressful and making decisions is challenging at times, especially if you have a particular vision in mind. However, it is also very fun and goes by

very quickly! Take time to remember why you are planning this day in the first place and use it as a time to grow closer with your future spouse. Planning together and laughing through the craziness of it all truly alleviated a lot of our wedding-planning stress. Even though we both groan and say “We’re so glad the planning is over,” I know we both secretly miss it!

Where/how will all future anniversaries be celebrated in the Lehigh Valley?

I love the idea of anniversary photo shoots! I want to visit the Malcolm Gross Rose Gardens (where we took our wedding photos) every year in May to document our years together. We have our favorite restaurants (Grille 3501, Corked Wine Bar & Steak House) and are always up for trying new places as well. There are also highly rated B&Bs in the area (Sayre Mansion Inn, Stone House Inn & Spa), which would be perfect for an anniversary getaway close to home!

AUGUST 1, 2015

WOODSTONE COUNTRY CLUB

What is the very best part about getting married in the Lehigh Valley?

Having all of our family and friends able to attend our wedding. My husband and I were born and raised in Easton, so this is home to us. To have our wedding here in the Lehigh Valley with people who helped us grow as individuals and as a couple was so gratifying. We had 150 guests at our wedding and about 95 percent of our list was local. We did include hotels close to our venue just so that our guests had the option to stay close by after having a fun night of partying!

What do you think your guests enjoyed most about your special day?

Long after our wedding passed, everyone told us that our “little touches” made our wedding

so personable and hard to forget. One thing that was important for my husband and me was to have a table at our wedding of photos of our loved ones that had passed away. I had recently lost an aunt, and my husband had lost his uncle when he was young. It was a great way to show our family members and friends how much we miss and love them and that their memory would continue on. We also had a barbershop quartet sing during our cocktail hour. Their style of singing and personality really won the hearts of our guests. From signature cocktails, dancing on clouds and a fireworks exit, we surely kept our guests entertained all night. People still to this day tell us that it was the best wedding they ever attended!

What advice would you give to newly engaged couples that are about to embark on the wedding-planning process?

One thing my husband and I wanted to never lose sight of was the fact that we were getting married. Our wedding day was about our love for one another and the commitment we were about to start together. It wasn’t about the details, the venue or how the weather was supposed to be. It was about our love and how God brought us together for this new chapter in our lives. One piece of advice I would like to give newly engaged couples is to stay consistent with your spouse. A lot can be thrown at you, which can make the wedding planning super stressful and unenjoyable. If you have a specific theme or color palette, stay true to it. Keep to your budget, know what you want and don’t want and always communicate with each other. Communication is key! One thing I recommend is to schedule a couple's massage during your wedding planning and don’t forget those date nights either! Couples can get wrapped up in wedding planning, but at the end of day, it is about you and your spouse and the love you have for each other. That’s all that really matters!

Do you have any local cost-saving tips for brides and grooms on a tight budget?

My husband and I had a honeymoon registry set up with VIP Vacations in Bethlehem. We had bought our home four years ago, so we really didn’t want a traditional home registry. By doing a honeymoon registry, we were able to enjoy our honeymoon in Jamaica with no stress of having to pay for it. The staff at VIP Vacations made our honeymoon effortless and super relaxing. I highly recommend any brides and grooms to have a honeymoon registry!

Rodale Catering & Events has been catering to the public in the Lehigh Valley and beyond since 2012. A natural evolution of Rodale Inc.’s corporate dining services, their mission is to bring great-tasting organic food to clients and support customers in living a healthy life on a healthy planet.

Good food starts in an organic farmer’s field of nutrient-rich soil grown in harmony and with respect for nature and the planet. Quality is ensured through seasonal menu rotation, handson production and a commitment to local organic farmers and producers.

The experienced team of hospitality professionals is excited to craft unique weddings and events that delight customers with how extraordinary and affordable organic can be.

ALLIUM FLORAL DESIGN & EVENT STYLING

Beautiful texture and rich romantic foliage showcase nature’s imperfect beauty and thread their way through all of Sarah’s remarkable floral design. Her private studio is nestled on two acres of wildlands, which serve as inspiration for much of her work. Sarah and her team of artists create and fully style each wedding, offering not just florals, but access to vintage, heirloom and custom pieces specific to one’s design needs. Allium weddings range widely in style from organic/bohemian to elegant/classic and she has a gift for finding ways to make your wedding feel personal and out of the ordinary.

Sweet Gallery

CHOCOLATIER & BAKERY

A family-owned business that believes in baking the old-fashioned way, Natural Sweet Gallery is a European bakery and café that serves up a daily mix of sweet and salty savory treats. Owners Marko, Sally and Milan Golubovic convinced their grandmother to share her sweet-baked deliciousness with the world. Their inspiration comes from time in the kitchen with her and their mom learning their baking secrets. Recipes have been passed down through generations and are made with natural ingredients (when available). Catering for all occasions is offered. The most popular treats include raspberry tiramisu, chocolate cake, Coconut Perfection cupcakes and Burek’s phyllo dough filled with spinach, cheese or meat!
