You got your start with Style in May, photographing students from The Literacy Center in Allentown. Tell us why that project was so meaningful for you.

Nine years ago, I came to the U.S. and did not speak much English. Perhaps it is needless to say, but I felt a little out of place. Despite having a college degree in communications, I struggled to communicate with many of my new neighbors. My initial inability to speak with people actually helped me in finding my passion for photography. I learned about The Literacy Center, where I could take English classes at no cost. I was touched by the dedication of the people there, and I dedicated myself to a few years of classes, practice and trial and error to get to a place where I am comfortable speaking to you today. It was not always easy, but with hard work and the guidance of The Literacy Center, I felt that I could accomplish anything.

What is your absolute favorite thing to shoot?

People, faces, reactions and emotions. If I have at least three of those four, I am happy. Environmental portraits are my favorite because you can meet a person through the spaces around them, too. Really, for me, it is all about the people—real people. I know, we could write an essay about the meaning of “real people”; maybe next time. My mission is always to capture the story and share it through the lens of my camera.

Tell us a little bit about the work you do outside of Style.

Six years ago, I decided to start a business. After coming to a new country, getting married and starting a family, I am the proud owner of a dynamic and growing business right here in the Lehigh Valley. I work with businesses both large and small. Some have a clear brand and image, like PPL, while some are just looking to build a brand based on the stories that I am able to capture for them. I am especially proud of being able to build new relationships in business—relationships like the one we are building today!

DR. WILLIAM STROWHOUER is uniquely qualified as the founder of Physicians Weight Control, the largest diet practice in Pennsylvania. Tal: Beyond Imagination

Now–July 28 : Rounding out Muhlenberg College’s 38 th season of Summer Music Theater, Tal: Beyond Imagination is a world-premiere circus performance igniting the senses of audiences young and old.

Tal is a creation of the Atlas Circus Company, composed of Muhlenberg alumni who are reviving this ancient and playful art for shows that remind us what that childlike sense of wonder and delight feels like. Atlas co-founder Noah Dach teaches at Muhlenberg this year, imparting the arts of aerial acrobatics.

The story of Tal follows a young adult struggling with the eternal question: stable income or highflown dreams? “It’s a very immersive, fun show,” says Dach, “a very surreal dream world we’re going to enter, filled with eccentric and colorful characters.”

Expect the interaction of light with aerial hoops and fabrics, lack of light with glow-in-the-dark juggling balls, characters roaming into the audience and scenery that drapes into the crowd as the show very physically cajoles the imagination to life. “It’s a wonderful dream world to enter and escape to for part of your day,” he says.

If you or your little ones are particularly fired up by the fantastical fun you’ve witnessed, a free 45-minute workshop is held after the show to give audience members a chance to try circus arts, experience movement and work with the cast. If you’re honest, you’ve always wanted to float gracefully over the heads of your family. Dach says, “Everyone gets their picture of grandma flying 20 feet up in the air.”

Whether you try it for yourself or just absorb the action, Tal is a show that will leave you inspired.

NyteXing

The only one of his kind in the area, Allentownbased NyteXing’s “Gamer Not a Gangster” hip-hop brings the relatively obscure genre of nerdcore to the Lehigh Valley, with music that draws on his love of video games and comic books.

Born in Brooklyn, Matthew Mosley moved to the Valley at the age of 14. Despite the lukewarm attention paid to hip-hop in the wider music community, NyteXing is at home here. “When I first started four years ago,” he says, “I started the Star City Showcase at Touchstone Theatre and got a bunch of rappers to perform.” Thanks to his prolific generation of tracks and unflagging activity, NyteXing performs in the area at spots like Sportsmen’s Cafe, Hot Plate Soul Kitchen on Bethlehem’s SouthSide and First Fridays, and outside the Valley in Reading, New York and Maryland.

Performing at the annual video game festival MAGfest was a highlight for NyteXing, whose name is a remix of Nightwing (and pronounced the same way), the name Robin adopts when he moves on from being Batman’s partner to his own superhero. “My dad was a big Batman fan, and my mom was a Marvel fan,” Mosley says, “so they got me into both. I have a lot of respect for my father. He had a tattoo of the bat symbol, and when I was 21, I got a tattoo of the Nightwing symbol.”

The stigma that might once have been associated with interest in anime, video games and comic books has evaporated as a seemingly never-ending stream of superhero movies deluges the box office, so why not filter life into music through references to the media we love? Farm-Fresh Eggs

The Nesting Box

Timi Bauscher was looking for a way to generate income while staying at home to raise her four children on the family farm. In January 2016, she was inspired to start The Nesting Box, selling cage-free, farm-fresh eggs. “As a female agricultural entrepreneur, I wear a variety of hats during my day,” says Bauscher. “I’m a mama, wife of a farmer, operations manager, secretary, director of marketing and logistics coordinator.” In addition to being cage-free and farm-fresh, their eggs are healthier because the hens are fed grains grown from their own fields, allowing their feed to be adjusted according to seasonal temperatures. The hens also gain nutritional benefits by eating fruit and vegetable remnants of their neighboring cold-press juice producer, Stark Juice.

Eggs can be purchased at their farm store in Kempton or at Eagle Point Farm in Trexlertown. “There is an amazing network of farmers and producers in the area that our customers are demanding, and our store fills that void,” says Bauscher. Their eggs can also be found throughout Lehigh and Berks counties at food trucks and restaurants like Glasbern Inn and Cafe Frais. “Locally bought food is the best way to support local farmers, promote health and food safety and keep quality food within a few miles of your homes,” says Bauscher. “Our family farm strives for quality while promoting agriculture to the next generation.” 230

Goodbye, Hassle Hello Baby

With a 2,800-square-foot showroom, Hello Baby is the largest baby store in the Lehigh Valley. After traveling over an hour to get both of their children’s nursery furniture and delivering it themselves, owners Nikki and Jim Brezack thought of the idea for Hello Baby, which celebrated its grand opening in May. Hello Baby is a family-oriented business that handpicks each item in its store for quality and affordability. “At Hello Baby you will find beautiful christening gowns and classic children’s wear that stand the test of time,” says Nikki. “We are also excited to bring you fun, unique items that you won’t see every day.” Hello Baby features nursery essentials that won’t be found in typical big-box stores.

Marty Hacker Toys for Tots

In 1947, Diane Hendricks created the first toy for Toys for Tots: a handmade doll. She told her husband, Major Bill Hendricks of the United States Marine Corps Reserve, to donate the doll to an organization that would give it to a child in need for Christmas. However, since no such agency existed at the time, Bill started one. Bill and Marine reservists distributed around 5,000 toys in the first year. Due to the success, the Marine Corps adopted the program in 1948 and it became a nationwide campaign. Toys for Tots has collected more than 400 million toys for 188 million less-fortunate children for the holidays.

“Everyone deserves a little Christmas,” says Marty Hacker, also a retired Marine, who’s been a volunteer with Lehigh Valley Toys for Tots for more than 30 years. Lehigh Valley Toys for Tots includes Lehigh and Northampton counties, and while their busy season runs October through Christmas, their warehouse in Bethlehem accepts new toy donations year round. Toys for Tots refurbished

old toys until Christmas 1980, when the Marines decided to collect and distribute new toys only. The Marines wanted to give hope to children, and nothing sends that message better than a new toy. Hacker says he meets people that were once victims of fires—they lost everything weeks before Christmas and would receive no gifts if it weren’t for Toys for Tots. “Toys for Tots steps up and makes sure Christmas happens,” he says. In addition to toys donated, Lehigh Valley Toys for Tots purchases a lot of toys, and they hold numerous fundraisers and receive corporate donations. “Every dollar raised and every toy gifted stays in the Lehigh Valley,” says Hacker.

A Eureka Moment Sumo Japanese Fusion Sushi

Before opening Sumo Japanese Fusion Sushi, Jessica Chen worked in Japanese restaurants for 10 years, and Calvin Lin apprenticed under a sushi chef in New York for eight. After getting married, they wanted to combine their knowledge and passion for food by opening a restaurant. “We needed to create something of our own, and we are both still young and able to do so; that is our wealth,” says Chen. The couple briefly lived in North Carolina and were looking to start a restaurant there, but family and friends encouraged them to look closer to New York. When did you know you wanted to get into this profession?

Adventuring around Downtown Easton as a kid, I made friends with a woman whom I often saw braiding her daughter’s hair. I loved the way my “fancy hair” made me feel. I thought the smile on each friend leaving my little hair chair must have meant I passed that feeling along, too.

Best tips for a simple summer look?

Summer is about being natural, not just looking it under lots of makeup. Use a tinted moisturizer and a little coconut oil on your cheekbones and nose for a beautiful glow! have a dog at their place, that’s a close second. I love dogs as much as I love helping clients remember how beautiful they are.

How do you approach a boudoir-shoot look versus wedding-day makeup?

In general, boudoir-makeup looks lend themselves to more drama and sex appeal. Bridal looks are just as alluring, but in a subtler way. Color selection will help distinguish one makeup look from another in this case.

What trends do you see this year in wedding hair and makeup?

The trend with hair is very romantic, whimsical, piecey and lived-in (but pinned to withstand a wind storm). Our brides most often request makeup looks with eyes that pop, lip colors that last and skin that has a natural glow.

Must-have makeup products everyone should know about?

The greenhouse only offers products when it’s time to plant them. Tell us the importance of that. What should residents be looking to plant this July?

We want to make sure we do all we can to make all gardeners, amateur and professionals alike, succeed. July would be the time to start fall vegetables and to maintain your bedding plants.

What are some of the most common plantrelated questions you get from customers?

1. Which is going to come back each year: perennial or annual? Most customers think annual means every year. We explain that perennials usually have smaller bloom time, anything from a week to a few months, but will come back each year. Most annuals

provide color all summer till frost but need to be planted each year. Most gardens are best with a combination of both annual and perennial.

2. Which hanging baskets can go under a porch where it is shady but still bloom all summer? We show them fuchsia, begonias, impatiens and New Guinea impatiens, just to name a few.

3. Does this plant bloom all summer? Most customers want flowering annuals that don’t need maintenance to keep blooming. We try to pick out the easiest self-bloomers and counsel the customers to fertilize every three weeks for annuals.

4. Where are your sun annuals? It is easier to show them the few annuals that won’t take all-day sun—most annuals will thrive in full sun if watered properly while first being established.

What’s something that readers might not know that you offer?

We offer designer dish gardens, a large selection of pots and planters for indoor and outdoor. Our highly creative and innovative floral designers will be happy to help with all of your cut-flower needs (pick-up only).

What’s new or on the horizon for the greenhouse?

We are constantly trialing the newest plants in the industry so we can give our customers the easiest and best varieties for our area. Automation is always on our mind to become more efficient with less labor. We’re also always keeping a close eye on demand to see if we must expand our growing facilities.

How to Home Brew

Pat McCabe, Keystone Homebrew Supply

The craft beer craze isn’t going anywhere, and now it’s easier than ever to roll up your sleeves and take part. From Belgians and IPAs to porters and stouts, learn how to brew your favorite beers right on your stovetop with the expert advice of Pat McCabe from Bethlehem’s Keystone Homebrew Supply.

The Basics

“Beer is really big in the Lehigh Valley right now,” says McCabe. “People go out and try something, and they think, ‘I’d like to make this. How hard is it?’ Relatively easy.”

Most people already have the stove and 16-quart pot where the magic of brewing takes place. An equipment kit from Keystone will set you up with the primary fermenter, bottling bucket, airlock and all the other tools of the trade needed to start your first batch.

After a $65 investment in the True Brew Equipment Kit, ingredient kits run from $35 to $85 and produce about two cases of beer. So, in addition to reveling in your creative powers, you get the beer you love best for a half or a third of the cost.

Most beginners start out with extract brewing, and this was McCabe’s go-to method for the first 15 of his 25 years as a brewer. Using a malt extract that cuts out the mashing part of the beer-making process, extract brewing is much faster than all-grain and still produces a highquality product. Extract and water are boiled on the stove, cooled and added to the fermenter with more water and yeast, fermented for about 10 days, then bottled and left to carbonate for two weeks before the beer is ready to enjoy.

Sounds pretty simple, doesn’t it? That said, McCabe has pointers to avoid some of the common pitfalls encountered by those new to the brew.

Tips

Most importantly, don’t skip sanitizing your equipment and keeping everything clean throughout the process. It would be a shame to let a little thing like stray bacteria spoil your beer.

Another consideration is the drink’s canvas, if you will: the water used to make it. “Well water is typically fine, if it tastes good to you,” McCabe says. “We don’t recommend tap water.” The chlorine from the tap reacts with compounds in hops to affect flavor, and water going through a softener will have salt in it. Distilled water is out, too, because it lacks necessary minerals. Britafiltered or purchased spring water provides a clean base to work from.

Finally, brewers have a saying: “You’re not making beer, the yeast is making beer.” Proper handling of the yeast, from adding ingredients at the correct time to keeping your temperatures in the right range, is the way to get a good result.

experiment. “That’s great,” McCabe says. “That’s good. You can pretty much do whatever you want. Want to make a watermelon beer? You can make a watermelon beer.”

It helps to keep a brewing journal of recipes you’ve tried with any notes on what you might have tinkered with to figure out what worked and what didn’t. Step it up to all-grain and add a few more steps and some more equipment, and you’ll be rewarded with an even better product. “There’s more flexibility in marrying the flavors together,” says McCabe. “You can control different things that you can’t with extract.”

For more hands-on advancement, classes held at NCC and at Keystone get in-depth at beginner, intermediate and advanced levels.

Craft Community

As you begin to explore the world of homebrewing, you’ll find that it’s much more than the key to stockpiles of beer, cider, wine or even honey-based mead. “We’ve made a lot of friends who keep coming back,” says McCabe. “We kind of partner with people and we’re available to consult along the way. When we’re lucky, they bring us some of the finished product.”

The pride in a good brew inspires makers to give it away to friends and family, who stoke their sense of accomplishment with glowing praise. “It’s fresher, and every bit as good as what you get at the store or a bar,” McCabe says.

Often, he finds couples get into the hobby together, especially when they find out that wine isn’t so hard to make, either.

Grilled cheese is perhaps the ultimate in comfort food: it’s oozy, cheesy, crispy and bready, all at once. The Barn—the more laid-back of The House and Barn duo in Emmaus—has developed a reputation for its grilled cheese sandwiches, most of which are served on brioche bread.

These are no diner-level grilled cheese sandwiches; this humble food has been elevated. The Bacon Cheddar has caramelized onion, tomato and mayo; the Shroom and Beef also has caramelized onion (sensing a theme here) along with mushrooms, beef short ribs, Swiss cheese and peppercorn aioli. The most popular, hands down, says general manager Nick Billera, is the Garden Herb: think roasted tomatoes, mushrooms, spinach, balsamic, goat cheese and cheddar. All three are always on the menu, but you’ll also encounter specials. At press time, for example, the Barn was running a special on the "Mean Gene,” a grilled cheese on ciabatta with beef, onions, peppercorn aioli and a special onion-cheddar cheese.

Santa Fe Taco

Mother and son team Gail and Mike Tatasciore opened up Santa Fe Taco in 2007. While the combinations of flavors and ingredients that they put inside tortillas prove that tacos don’t need to have Tex-Mex flavors, you can still find them: They ship in green chilies (the famous Hatch chiles) straight from New Mexico, where the family lived for five years. Their red and green sauces are made from scratch, along with their chicken tortilla soup and beef chili, and many, many other items.

At Santa Fe Taco, the sky’s the proverbial limit: There’s a Santa Fe Dog taco with chili, cheese and onions; a BLT taco and a Greek taco, with lamb and beef gyro-style

meat. The General Tso Taco is great, but you can only get it certain times of the year—it’s a special.

“We go through about 300 pounds of ground beef in a week,” says Mike. The beef taco is the most popular one they sell, followed perhaps by the fish taco, with marinated and grilled mahi-mahi, lettuce, tomato and guacamole. Bethlehem Dairy Store

If you’ve lived in the Lehigh Valley long enough, you may refer to the Bethlehem Dairy Store as “The Cup,” due to its original shape as a large milkshake cup. But regardless of what you call it, it’s a local institution that’s been around for more than 85 years, co-owned by William Burkhardt and Frederick Buckenmeyer. “We’re a popular destination, with grandparents and parents bringing their children and grandchildren through the years,” says Beth Clausnitzer, manager.

At any given moment, more than 50 flavors are available. Homemade, hand-dipped hard ice cream is still a main draw, naturally, and so are their milkshakes. Soft ice cream is available, along with frozen yogurt, sherbet and sugarfree ice cream. Several dozen flavors to choose from makes things tricky and so does a menu that includes banana splits and sundaes. The Bethlehem Dairy Store is old-fashioned with its approach and it still works; ice cream has a timeless appeal and even the bright red, black and white color scheme of its interior seems to reflect that.

Best Cupcake You’ve Ever Tasted SWEET GIRLZ BAKERY

Situated just off of Centre Square in Downtown Easton, Sweet Girlz has been pulling out trays and trays of its cupcakes since late 2011. Owner Kari Kirchgessner and staff are known for their seemingly endless array of cupcake combinations. Imagine everything from candy-inspired flavors like Almond Joy, to classic ice cream flavors like Rocky Road, Chunky Monkey and Minty Cookies and Cream, to cookies and desserts like Sticky Bun, Sugar Cookie and, of course, Chocolate Chip Cookie Dough. Sweet Girlz doesn’t have all of these cupcakes available all the time, but you shouldn’t have a tough time finding something to satisfy your sweet tooth. The most popular? Peanut Butter Bomb, says Kirchgessner. The most unusual? The roasted garlic rendition they made for Easton’s Garlic Fest.

Sweet Girlz has long been an active part in the community; you may have tasted seasonal cupcakes they’ve made in conjunction with Weyerbacher’s beers, or for Easton’s Bacon Fest. What sets them apart? “We bake everything from scratch, on-premises with love. Literally teaspoon by tablespoon by cup by batch. Everything is hand-measured out; no box mixes and no big batches of batter,” she says.

Best Cheesesteak THE BRASS RAIL

This is the cheesesteak that launched cheesesteaks of the Lehigh Valley—and the first one in the region to put a tomato-driven red sauce on the beloved sandwich.

Established in 1931, The Brass Rail is now in its third generation of Sorrentinos—owned by grandson Mark. The sandwich didn’t hit the Lehigh Valley until 1937, however, as “Phil’s Original Steak Sandwich” at the Great Allentown Fair.

That original contains steak, sauce, onions, pickles and hot peppers, but over time, more has been added—all made from a cut near the shoulder called the knuckle (confusing, right?). These days you can have everything from the now-standard chicken cheesesteak to newer additions such as pizza, chili and Buffalo chicken cheesesteaks (with blue-cheese dressing) and the California cheesesteak—with mayo, lettuce, tomato and onion.

Best Crêpes Full of Crepe

Starting the Valley’s crêpe craze in 2012, Full of Crepe is going strong with new ownership, bought by 3rd and Ferry Fish Market’s Rebecca and Mike Pichetto last December. “We stay true to the standard of quality and service,” Rebecca says, “and [we] added some more eclectic offerings.”

This delicate pastry has the fortitude to hold a mouthwatering array of ingredients, be they savory or sweet. The “Bangkok Street,” for example, holds an egg, crispy fried wontons, scallions, cilantro and hoisin sauce, while the most popular dessert crêpe, “Old Faithful,” is stuffed with creamy Nutella and one’s choice of bananas or strawberries.

Gluten-free? Fear not, buckwheat flour from Doylestown’s Castle Mill has you covered. The new option to make any crêpe concoction in panini form uses bread made in the ovens of Easton’s Stoke Coal Fire Pizza for a more substantial sandwich. With fresh, seasonal and, whenever possible, local ingredients, Full of Crepe is a favorite with folks refueling after a busy day at the Easton Farmers’ Market. “A group coming to the Public Market can all get something different,” says Pichetto, “Mister Lee’s, barbecue, crêpes—or eat somewhere else and come here for dessert.”

From fun festivals and jaw-dropping weddings to lunch with the girls or a special birthday dinner, Folino Estate is a location that offers wine lovers a venue for all occasions.

Power couple Andrea and Marco Folino followed in the footsteps of Marco's father, who started the Italian restaurant Valentino’s in Kutztown after emigrating from Italy half a century ago. “I designed the space at Folino,” says Andrea, “and my husband is a builder like his father. We wanted something that felt special. Unique, casual and relaxed.”

The wine-infused menu makes use of the vineyard’s range of Italian varieties, on the drier side and chosen to pair with food. A pairing guide takes the guesswork out of which wine to order with which dish. One of the most popular selections: the fontina and mozzarella grilled cheese drizzled with red wine glaze.

Along with hosting a farmers’ market the first Sunday of each month, Folino is always bustling with events like a floral workshop and yoga meetups, enhanced by wine, of course. This month, their first annual Italian Festival will feature food stations—custom cannoli, anyone?—and live music from an Italian band.

There’s some serendipity involved with Hummus House, as Syrian owners Albert and Samar Hechme—along with their son Tony—are always busy innovating new menu items. It all starts with the hummus options, and the choices are often reflective of shopping for seasonal and delicious ingredients, such as cauliflower, spinach or roasted asparagus. Albert says, “It’s random, based on what comes to my wife’s mind and what we find at the farmers’ market.” Don’t worry though—they always have original sundried tomato, roasted red pepper and roasted garlic hummus, along with baba ghanouj and other flavors of the day. Matthew Robles, the namesake of Matty’s Marvelous Makery, says that it’s “absolutely mind-blowing” to have been voted the winner in this category after just a year in business. He’s passionate about what he does, saying that owning his own bakery has been “a lifelong dream.” Robles bakes out of Common Space in Easton and distributes his bread wholesale to markets, cafes and other businesses in the region.

Haven’t tried his bread yet? Well, it’s everywhere—you just might not know it. Loaves are for sale at the Easton Public Market’s Farmstand (the rosemary asiago is a big seller). He makes a special sourdough just for Tucker at the Silk Mill in Easton. Olive With a Twist’s location in Frenchtown, New Jersey, offers his full range of breads. Thai Avenue

One of Thailand’s national dishes, pad thai is a ricenoodle stir fry whose popularity lies in its savory seasonings and satisfying textures. Thai Avenue has been making top-notch noodles since opening six years ago, when owner Matchima Danto and her husband decided to share their authentic recipes from home. “Thai food is our food,” Danto says, “and we know how to make it right.”

The bold, fresh flavors of their pad thai come from a base of noodles with egg, ground peanuts, scallions and bean sprouts, augmented with chicken, beef, shrimp or tofu. Their fish with ginger sauce is also a winner—just ask Samuel L. Jackson, who visited the restaurant while filming in the Valley. “I think it’s a compliment, because he came twice,” says Danto. “He told us that he loved our food; that’s why he came back.”

Whether you’re a superstar, used to the best of everything, or just someone curious about a new cuisine, Thai Avenue is the place to go.

For almost 50 years, this oddity of a bar and restaurant has been a cozy Allentown haunt loved by locals. In a relaxed environment with TVs visible from every vantage, it’s a place to hunker down for some craft beer and comfort food. The centerpiece: an octagonal bar in the center of the space, surrounding the sunken kitchen. “We call it the Pit,” says General Manager Augie Moore. “It was innovative in the ’70s, before other places started having open kitchens.” You can sit at the octagon and observe the activity as their famous nacho mountains are being prepared. Doritos form the foundation of the indulgent signature snack, loaded with Monterey Jack cheese, jalapenos, guacamole, sour cream and refried beans. Even a “small” order is a force to be reckoned with. One may want to bring a friend or two to help devour the melty mass.

There’s something about sushi—so savory and satisfying without being heavy or filling. It’s the perfect candidate for an all-you-can-eat enterprise, and Lily Sushi Grill offers just that.

With an extensive menu of vegetarian, classic and elaborate signature rolls, Lily’s sushi is served with decorative flair, giving shout-outs to its hometown with the 19th Street, Walbert Street and popular fried Allentown rolls.

At only $10 for an all-you-can-eat lunch and $20 for dinner, it’s not only the Valley’s best sushi, but an absolute bargain, with two pages of menu options that will necessitate return visits. Leave any of the hefty-sized rolls on your plate and you’ll be met with an additional charge, but this answer to overlarge eyes causing food waste is one we can all work around. Though most come for the sushi, Lily’s crab rangoon is also raved about, and for the sushi-squeamish, the regular menu includes pad thai and classic Chinese dishes like lo mein, kung pao chicken and General Tso’s.

Best Pierogi that Tastes Like Your Grandmother Used to Make

Aunt Jackie’s Pierogi

You gotta love a truck whose slogan is peace, love and pierogi, right? Well, Aunt Jackie’s specializes in just that, along with some other favorites from owner Jackie Curley’s Lithuanian heritage, such as kielbosi and halupki. Curley makes the rounds in the Lehigh Valley—maybe you’ve spotted her at Eight Oaks Craft Distillery in New Tripoli on the weekends, or at Galen Glen Winery in Andreas. Or maybe you’ve been lucky enough to hire the food truck for a special occasion.

Aunt Jackie’s was born two weeks after Curley was downsized—she bought the food truck and partnered with her niece Liz Cox, who’s a professional chef, to come up with the menu. You can typically encounter the Shepherd’s Pie Pierogi, with potato, cheddar cheese, peas, corn and carrots, and served over beef (really—like by itself, or beef AND pierogi). And, of course, there’s classic potato and cheddar cheese (Bells of St. Mary’s), Bacon (all of that plus smoky bacon) and, if you’re looking for a twist, you might find one with pastrami, served with beer-braised cabbage. “Our most popular pierogi is Jamaican Me Crazy,” says Curley. “It is Jamaican jerk chicken and plantains on the inside, wrapped in a beautiful Jamaican curried dough and served over sautéed curried cabbage and red peppers.”

Foodies flock to Bethlehem’s Social Still restaurant and distillery—and not just the clientele. Server Lindsay Stewart has been in the restaurant industry for 12 years. When she first signed on with the staff at Social Still more than three years ago, she knew she was in the right place. “I love all the details that go into a restaurant, like plating food, photography and restaurant décor,” she says. “For me, I really have to stand behind a restaurant— or in our case a brand, too—that I work for.” And perhaps Social Still is a little too good at what it does, when it comes to tempting Stewart and her colleagues when they’re on the clock. “The most challenging thing [is] working in a distillery with some pretty amazing cocktails and not drinking on the job!” Stewart says with a laugh. One thing that’s not a challenge: bonding with her customers. “I actually enjoy getting to know them and learning about other people’s walks of life,” says Stewart. “I’ve made so many great friends through my customers, just by being in the restaurant industry, some of whom I would even consider like family.”

Like a beacon across Southside Bethlehem, the pepperoni pizza-shaped sign on the east-facing wall of Lehigh Pizza draws hungry folks to the source of crispy crust and melted cheese, be it for lunch or a midnight snack.

Dianne and Lloyd Burg have been all-in on healthy living for decades. Dianne, a registered nurse, delved into homeopathy and natural remedies as a way to help her patients heal, and together the couple grew organic apples on their tree farm while seeking out other locally grown, organic produce. Despite their best intentions, their resources were limited in the Lehigh Valley. So, rather than depend on others, they decided to lead the charge; the Burgs opened Healthy Alternatives in Trexlertown in 1994. “From the beginning, the goal was to have a service-oriented store that offered the healthiest foods and supplements,” says store manager Ann Sheridan. That’s still the goal today, although the store has since expanded its products and added on a small eatery, Café Santosha (Santosha is the Sanskrit word for “contentment”), which offers a rotating menu of breakfast and lunch items, many made with ingredients from organic farms. “The café’s commitment to a healthier planet doesn’t end with what’s on your plate,” Sheridan says. “The café is built with environmentally friendly materials, from flax floors to counters made from recycled paper and repurposed wood from local barns.”

Long before yoga entered the mainstream, Cathy Cappel and her daughter Leah Naylor were hard at work perfecting their poses. Cappel began practicing and teaching in the 1970s, and Naylor started working on her own sun salutations and downward dogs as a child in the ’80s. It would be some 30 years before they teamed up to share their expertise with friends and family in the Lehigh Valley. When it became necessary to move to a larger teaching space, they opened West End Yoga in Allentown, where the first class is always free, and drop-in rates are $10 after that. Cappel and Naylor acknowledge that one size does not fit all when it comes to yoga; they’re happy to have found their niche among the community of other studios in the region. Katelyn Quigney was born to wield a pair of scissors. “As a child, I was always interested, okay, obsessed with hair,” she says. Her Barbies and American Girl dolls bore the brunt of her early snipping and styling experiments. Eventually, she graduated to human clients—her three sisters, who were game to visit the pretend salon, “Hair Blair,” a young Katelyn established in the basement of the family’s home. After a skin cancer scare prompted her to get her first spray tan, she realized there was much about the process that could be improved. It wasn’t long before her healthy glow attracted admirers. “I began receiving text messages and calls from random people who wanted to get a spray tan by me,” Bravo recalls. “I’d invite them to my home to be sprayed in my shower. “Be prepared” has long been the motto that Boy Scouts live by, but the credo has also been adopted by many a TV news journalist. “I love that no two days are the same,” says Melanie Falcon, of WFMZ-TV, Channel 69 News. “One day, I’m covering a fire. The next, I’m talking about a life-saving cancer drug.” Initially a general assignment reporter for the station’s Sunrise broadcast, Falcon now co-anchors the station’s 4 p.m. show with Jim Vaughn and delves into a variety of health topics for the 5 p.m. edition. She’s not a Lehigh Valley native—she was born and raised in North Carolina and went to college in Boston—but, seven years into her tenure at WFMZ, she says she’s found a lot to like about her adopted hometown. “I love the diversity of everything, from the people, to the weather, to the restaurants,” Falcon says. When asked to offer advice to any budding anchors or reporters who might be watching her on the small screen, Falcon invokes that journalistic mantra, with a twist: “I would tell them to be prepared to work hard, learn every job in the building and always bring a change of shoes!”

Getting inked can be a deeply personal decision for the one on the receiving end of the needle; it’s something Karin and Chris Vangeli see every day in their line of work. “We meet survivors of war, cancer and great loss in their lives, as well as those who celebrate victories, family and love,” Karin says. The Vangelis’ decision to open Amaryllis Tattoo in January of 2013 was prompted by a profound heartache of their own: the loss of Karin’s mother. “As is often the case when someone passes away, you re-examine your life and what’s really important,” she says. What was important to the couple was having a tattoo shop of their own. Not just any location would do; they wanted to set up shop in Palmer Township, where they both grew up and still live today. At the time, Karin had spent more than two decades in banking, and Chris was on his tenth year of work at a local tattoo parlor. Their joint venture would combine her marketing and customer service skills with his ink artistry. The leap of faith proved to be the right choice. “People took a chance on us based on our promises and we believe we have kept those promises,” Karin says.

Black Coconut Ash Soft Serve Vegan Treats

Twenty years ago, Danielle Konya went vegan overnight, and the very first thing that she made was dessert. Lucky for us, she’s still ethically concocting at her bakery, Vegan Treats, which has maintained its location in Bethlehem since 2004.

But it’s not all cupcakes and (vegan) cream here. There’s a notable edge sprinkled in—made evident in the Fatally Yours chocolate boxes, which Konya says are “the most popular thing the bakery makes,” filled with skulls, mummies and bones. Pastries topped with chocolate hearts are also available around Valentine’s Day, but they’re complete with nonsentimental sayings like “bite me,” “no feels,” “zero care” and another that’s too explicit to print.

Black ice cream should be no surprise; it’s completely on-brand for a bakery that celebrates the darker flavors in life, even during the summer. Konya’s always trying to come up with new ideas. “The first time I see any kind of food trend, I think: I want to make this better and I want to make this vegan,” she says. Despite its

subtle vanilla flavor, the black coconut ash soft serve was quick to hit trend status. SERVICE ELECTRIC, THE NAME THAT LAUNCHED AN INDUSTRY 70 Years Ago

SERVICE ELECTRIC CABLE TV has reason to celebrate in 2018, as it marks the company’s 70th anniversary, which coincides with the invention of cable television.

John Walson Sr., the company’s founder, is the man who invented cable TV. An employee of Pennsylvania Power & Light Company, Walson and his wife Margaret also operated an electric appliance store in Mahanoy City where, in 1947, they began selling television sets.

But residents couldn’t receive the three Philadelphia network stations because mountains surrounded the city. An antenna tower was built on a nearby mountain and, in searching for a way to increase TV sales, Walson constructed a line from that antenna site to his appliance warehouse and later to his store. By adding new antennas and boosters and wiring individual homes, Walson created the nation’s first cable television system. In 1979, Walson’s pioneering achievements gained him recognition from the U.S. Congress and the National Cable Television Association.

“John Walson Sr. was a true innovator,” said Jack Capparell, general manager of Service Electric. “He had the ingenuity to overcome obstacles and invent a system to solve the

problem. This enabled his neighbors to enjoy this new entertainment in their homes.”

Today, Service Electric also offers internet, telephone, home security and automation services. Walson’s son, John E. Walson carried on his father’s legacy, serving as president until his death in 2012. During his time as president he introduced a triple play package of phone, high-speed internet, and HD digital cable. His son, John M. Walson, stepped into that role upon his father’s passing, driving the company forward with services that include home security, faster internet speeds and mobile TV Everywhere applications.

“I am honored and proud to carry on my father’s and grandfather’s legacy,” said John M. Walson. “Service Electric continues with the innovative spirit of our founder to remain on the cutting edge of new technologies.”

Service Electric was the first cable company in the nation to offer HBO and first in the state to offer teleradio/telemedicine from a local hospital to doctors, enabling a faster medical diagnosis for patients. It provides a radio dispatch system for fire, police and ambulance communications and a fiber optic network linking schools, libraries and

colleges, enabling distance learning and video conferencing. The company was also a founding partner of C-Span.

Another thing that sets Service Electric apart – it is the source for local high school, college and professional sports, with exclusive rights to broadcast all Phantoms and IronPigs home games on TV2. The company also supports Big Brothers Big Sisters, Valley Youth House and VIA of the Lehigh Valley.

Service Electric is opening an Allentown office this spring to better serve its subscribers. It boasts that all customer service representatives are locally based, not in an overseas call center. For that, Customer Service Manager Phyllis Christine regularly hears praise from subscribers.

“They say, ‘It is so nice to speak with a customer service representative who is right here in the Lehigh Valley. You really understand my needs. I feel like I’m speaking with a neighbor.’”

Service Electric has a history of which to be proud. The foundation of ingenuity sets them on an exciting path for the future.
