They cascaded down as I took the shot, making it appear as if it was snowing at the table.

Summer Howard’s passion for baking emerged through the heartbreak of the loss of her grandmother. “During my grieving stage, I started baking more of my grandmother’s recipes and started doing it for friends and family,” says Howard. “I’m grateful she left her gift with me. From football to fashion, tell us a little bit about your journey to founding All Weather Selvedge Denim Co. (AW). I entered the fashion scene in 2015 while I was playing football in New York. My marketing agent introduced me to a young entrepreneur named Eamon Walsh, who was building a new luxury casual shoe line called OneGround. He wondered if I would be interested in creating a shoe to release alongside his. We came to an agreement and, with his guidance and creative resources, I created the Runningman shoe, an ultra low-top, Spanish handcrafted leather loafer. I was super proud of the product I made and I'd fallen in love with the creative process along the way, but I questioned whether the market needed another shoe and what my drive
for creating it was. Eventually I admitted that the shoe had tons of style but it wasn't unique—the market wouldn't beg for it. I'd only created it because it was cool, not because there was a necessity for it. Either way, the Runningman shoe opened up doors in the fashion world that were unexpected. That following winter I met a brand developer from the city that was impressed with my shoe and my ambition. We struck up a three-hour conversation that left me with more knowledge about apparel and manufacturing from our one by-chance meeting than I had gained in the eight months it took me to develop the Runningman. It was during that meeting that I had the idea for jeans with an athletic fit and months later I was developing the first AW samples. Talk about the mission behind the company—sustainable fashion is important to you. The mission of the company is to usher clothing, mankind's oldest technology, into a new era, in which we dispose of the idea of clothing as a commodity to be used up and thrown away. Instead I believe we can and should adopt a mindset in which the consumer views clothing as an investment, develops a
relationship with it, and works with us to repair, replace and retire our products. As a company, I think we can and should adopt a mindset in which we recognize that business and clothing is as much about service as it is about product. We have a responsibility to our customers and to the Earth to be more intentional about creating quality products that last, be more intentional about developing eco-friendly methods of development and production and be more intentional about creating an infrastructure that can support the recycling of clothing fibers. Explain to readers the meaning behind the name of the company—and the significance of using selvedge fabrics. I named the brand All Weather Selvedge Denim Co. because I wanted to convey the idea that denim, especially our denim, is suitable for all occasions. I chose selvedge denim because it is the old style of denim that was originally patented by Levi Strauss in 1873 back when jeans were intended for workwear and had durability and high quality in mind. The strength of the fabric reflects those ideals. The denim is created on vintage shuttle looms from a single continuous weft yarn that has a clean, finished edge on either end of the fabric. You can notice this "self-edge" when the jeans are cuffed.
However, most denim is now made on projectile looms to save manufacturing time and cost. This comes at the expense of the quality of the denim. The United States no longer has any selvedge denim mills, with the last one closing in 2017, but since the ’50s, Japan has adopted and preserved the art of selvedge denim fabrics. Tell us about the clothing that customers can shop at the store. I offer two denim lines. AW S1 “Workers & Travelers” features three fabrics from three different renowned selvedge mills in Japan. Each fabric is offered in raw, ripe and antique washes for a total of nine styles for men. All styles feature our signature athletic fit, which provides extra space in the thigh and a taper below the knee. DKShin S1 features six styles—three for men and three for women with a fabric from the Nisshinbo selvedge mill that has a composition of 97 percent cotton and 3 percent spandex. The style is contemporary moto; the fit is skinny and includes a treated leather insert around in the knee. The store also carries the Runningman Red Herring shoe in black and white. What made you want to open a brick-and-mortar retail store after previously existing exclusively online? I always tell people that this is the "Bubba Gump Shrimp" moment in retail. If you recall
the movie, there was a storm that knocked all the other shrimping boats out of the water, which made way for Forrest’s shrimping business to flourish. I believe this is a similar situation for me with my denim business. Here I am, finally done with sports, ready to settle down in a great area, and sitting here with a unique product and a story to tell. It is 100 percent time to set up shop. The internet is great but a picture doesn't tell you how it fits— and the fit is everything. Describe the vibe at the store. What is the overall shopping experience like? The vibes at the store are super dope. It is clean, the floor plan is open and it feels very much like an art gallery or a museum. There is much in the store to educate the customer on the history of the fabric, how the jeans are styled and who is wearing them. There is more denim art on display than actual product, and that is because the focus in store is a personal and personable shopping experience as well as experiencing the culture of the brand. It is very much home grown at this point. There are a couple of special discounts on offer. A hole in one on the golf putt challenge can earn you a free pair of jeans. That said, the challenges inherent in any family are present in a family business, along with business-specific permutations, and a lot rides on overcoming them. “If a family in business doesn’t work at being a good strong family,” Garrity says, “all that comes out in the business.” A lack of direction, strategy and communication can lead to dysfunction and inefficiency. “Where so many businesses get in trouble is they don’t communicate,” Garrity says. The older generation keeps things close to the vest, trying to maintain control. Assumptions are made about who’s doing what and why. “Have the conversations,” Garrity says, “because they’re being had.” Whether real issues are festering in covert mutterings or misconceptions are running wild, bad communication erodes a family and demands attention.

An important part of the governance work Garrity leads family businesses through is drafting a Family Constitution. Just like the one framed by the country’s founders, this collaborative declaration sets out the values and rules for the family. “Why do we exist? What do we stand for?” he asks. “What’s our purpose, why are we in this kind of business?” What are your core values as a family? What does it mean to be someone with your surname? “There’s something powerful about putting words to it.” Get everyone on the same page about whether you want a multigenerational business, what your dreams are, whether you’d ever consider selling, etc. Set down traditional activities as a family, like annual vacations to a favorite spot and where holidays are spent each year. This is something concrete to align around, guiding everyone on the same path.
KEEP COMMUNICATING
Garrity’s first comment on communication: “There can never be enough.” Vital to your constitution are the expectations and boundaries around it. Regular meetings are critical, and everyone should feel comfortable having their say. “Agree while things are friendly how to handle conflict,” Garrity advises. “Like if something comes up that starts escalating, you set it aside and tackle it separately.” Whatever rules you choose, the goal is to make necessary conversations easier. A monthly or quarterly meeting provides the assurance that concerns and ideas will be aired in a purposeful forum. An organizationally healthy team can disagree and still commit, feeling that everyone’s been heard out and brought on board.

The way he tells it, there really was never any doubt that Daniel Roebuck would be in the entertainment industry someday. “I knew I was going to be on TV from the time I was six years old,” he says. While childhood musings of fame are often fleeting and abandoned later for more practical pursuits, Roebuck stuck to the plan. Now, more than 50 years later, Roebuck’s resume is a lengthy one, with dozens of notable roles on TV and the big screen under his belt. Lately he’s been busy bolstering his work behind the camera as well, much to the benefit of the film community in his native Lehigh Valley. Ask Roebuck about his childhood in Bethlehem and he practically gushes: “Could there be a better place to grow up? It was just perfect.” He can easily rattle off a list of his favorite haunts as a youngster. A few are long gone, like “Two Guys” department store. Some are almost gone, like the shutteredbut-still-standing Boyd Theatre (“I smile every time I see the marquee and sign,” Roebuck says). And others are still very much a part of Lehigh Valley life, such as The Pennsylvania Playhouse in Bethlehem.
It’s not surprising that a performer in the making like Roebuck would spend many a Saturday hunkered down in the darkened theaters of the Boyd and other local movie houses, taking in the Disney matinee show or catching whatever blockbuster was doing big business at the moment. As Roebuck recalls it, he wasn’t just watching the films—he was studying them, too. But he knew he needed performance experience as well, so he seized upon whatever opportunities came his way, including what would turn out to be perhaps his debut as a screenwriter and producer. He was a first grader at St. Anne School in Bethlehem when—even though he could not yet read or write—he was inspired by a Popeye cartoon to write a play. He took it to his teacher, Sister Kathleen, who Roebuck says was anything but discouraging: “She said, ‘OK, let’s do your play.’” Roebuck has a lot of stories about the homegrown support that surrounded him in his early years. His parents got him a cardboard TV for Christmas when he was seven so he could truly be “on” TV, in his own way. His mother helped him secure what may have been his first paying gig as an entertainer at the age of 12 when he was hired as a clown for the Lions All-Star Circus, which performed weekend shows in Pennsylvania, New Jersey and New York. “You’ll never have a better agent than your mother,” Roebuck cracks. During his time in the circus, he struck up a friendship with Neal Fehnel, known locally as Balloons the Clown, who encouraged him to dream bigger. “He’s the one who said, ‘Maybe you can use this thing you love to make money,’’’ Roebuck recalls. And indeed,
he was making money—$25 a show: big bucks for a teenager at the time. He also acted in local plays and performed as a magician at parties and special events. “As much as I could be an actor in the Lehigh Valley, I did,” says Roebuck. But ultimately, Roebuck knew if he was truly going to “make it” in show biz, he had to go to Hollywood. And so, at the tender age of 20, with his then-wife Leslie by his side, he made tracks for the West Coast. That was in February of 1984. He found work as an extra, and by August of that year Roebuck had landed his first lead role in the movie Cavegirl. “It’s a teenage sex comedy,” he says. “But there were no teens, no sex and no comedy.” He doesn’t mind poking a little fun at what turned out to be a forgettable film because it led to him landing representation and a much meatier role: as the deranged Samson in River’s Edge, which also starred Keanu Reeves, Crispin Glover and Dennis Hopper. The movie put Roebuck on the map just two short years after he decided to pursue acting full-time. “It doesn’t usually happen that way,” he admits. But that doesn’t mean carving out a career in what’s arguably one of the toughest industries around has been easy. Roebuck attributes a lot of his success to his drive. “I never relaxed,” he says. “I was always working ahead.” Or, always working—period. A quick glance at his IMDb page yields more than 250 acting roles over the past few decades. Among the highlights: Robert Biggs in The Fugitive and its follow-up, U.S. Marshals, Jay Leno in The Late Shift, Cliff Lewis in Matlock, Dr. Leslie Arzt in Lost and Arnold Walker in The Man in the High Castle. And he’s still at it—he has several projects

in the works. But in recent years he’s been spending more time getting comfortable in the director’s chair. “I was always going to [direct],” says Roebuck. “It just took me a while to get there.” And lucky for the Lehigh Valley, Roebuck decided to return to his old stomping grounds to film his directorial debut. Getting Grace was shot at several locations across the region in 2016. Roebuck followed that up with shoots for Lucky Louie in 2020, and The Hail Mary earlier this year. So why eschew the sound stages of Hollywood for the neighborhoods of Allentown, Bethlehem, Easton and beyond? “It’s gorgeous,” says Roebuck. “And more than the location, is the people. I have an extraordinary group of people who support us in the Valley. I have people who help us make the movie from the ground up.” Roebuck also uses local actors whenever possible from

I had to go to Hollywood to be a movie star. All Madelyn (Dundon, a Bethlehem native who starred as Grace in Getting Grace) had to do was audition.” The Lehigh Valley is also home base for Roebuck’s non-

profit, A Channel of Peace. Its name comes from the Prayer of St. Francis, and its aim is to produce faith-based, family entertainment. Roebuck attended Catholic school from kindergarten through 12th grade, graduating from Bethlehem Catholic High School in 1981. He says his faith has always been important to him. “It’s one of the things that kept me grounded.” Roebuck envisions a day when he’ll once again have a permanent address in the Lehigh Valley. For now, he divides his time between Burbank, California, and
Tampa, Florida. His now adult children—Grace and Buster, who have collaborated with him in various ways on his Lehigh Valley projects—live in California, and his wife, Tammy, lives in Florida. Not that it really matters where he hangs his hat these days—he’s constantly on the go. “In the last year, I’ve been in that house five weeks,” Roebuck says of his home in California. Even when the cameras are turned off, he’s occupied with various projects. He’s currently working on a book to help actors navigate the industry and find work. And certainly, his years of
experience in what he calls the land of make believe make him uniquely qualified for the job. “Anything you learn in college or in an acting class is 1,000 percent wrong,” he says. He also recently finished writing a children’s book that he’s shopping around. And of course, he has any number of ideas for future films percolating in his brain. So, you can bet he’ll be saying “lights, camera, action” again soon. And you can bet he’ll be saying it in the Lehigh Valley. Says Roebuck: “People always say to me, ‘Why do you choose the Lehigh Valley for movies?’ I say, ‘The Lehigh Valley chose me.’”

Joe's step by step guide
1.
Start by tying the two grapevine wreaths together with bind wire. I use the brown bind wire, as it blends well with the natural grapevine.
2.
Build your bow. Bows are usually the first thing I place onto my wreaths. They are generally the largest piece in the design and, once placed, help me decide how I will move forward with layering my greens and other accessories. I usually use the bind wire to attach the bow but glue works just as well here.

Protect your door! To protect the door that you are hanging this from, glue Spanish moss to the back of the entire wreath. This layer keeps the branches from scratching and damaging your door each time you open and close it. What are you craving this holiday season? Maybe flaky, fresh-out-of-the-oven scones or homemade bread? Cookies and cakes slathered with your favorite flavor of icing? A warm apple dumpling that makes the whole house smell like cinnamon and spice? What would the holidays—or any day, really—be without the perfect sweet and savory treat? A lot of DIY bakers were born during the stay-at-home days of the pandemic. But sometimes, it’s best to leave it to the professionals. Here are a few local bakers who make it worth your while to splurge on those extra calories.
BAKERY & CAFé MISSY BOEHRER-WALTERS

Although owning a bakery may not always have been the end destination on her career path, it was clear from early on that Missy Boehrer-Walters was going to do something in the culinary industry. “I have been food obsessed since day one,” she says. She recalls paging through the simple recipes inside a cookbook that catered to kids and then upping her game with fancier fare like crêpes. “I was always doing little things,” says BoehrerWalters. “It just blossomed.”
“I have been food obsessed since day one.” She also tried her hand at making Thanksgiving pies and Christmas candy; her parents obliged her by taking in order forms for the delicious fruits of her labors to their workplaces. Boehrer-Walters began to get serious about baking in high school when she enrolled in vo-tech classes to help hone her skills. She would later graduate
from the culinary arts school at Johnson & Wales University in Rhode Island and go on to work various jobs in the food industry in the region before happening upon Baked Bakery & Café in Emmaus. “I had kind of stumbled in and said, ‘Hey I’m looking for something different,’” says Boehrer-Walters. Within a month she was named head baker, and, about seven years ago, she became the shop’s third owner. Boehrer-Walters says she’s made it a priority to expand Baked’s specialty cake offerings— but that’s not to say there has to be a special occasion to pay her a visit. “We’re known for our fresh muffins and scones and cinnamon bars,” she says. Think scones are destined to be dried-out and boring? Baked just might change your mind. And her regulars know, the lunchtime menu is jam-packed with yummy sandwiches served on fresh-baked bread. So, whether it’s sweet or savory that you crave, know that Boehrer-Walters is having a ball figuring out how to please every palate. “I love having a new ingredient, stopping in and getting something from a farmer and transforming it into something else. Huma Usmani certainly knows how to make a pretty cake: pastel colors, delicate flowers and icing as smooth as untouched snow after a winter storm. But Usmani also knows how to make… well, unusual cakes. After all, sometimes that’s just what the doctor orders. Literally. “My most unusual request was a liver,” she explains. Yes, that liver—the body organ. It was for a physician. And apparently, she nailed it. “It was a lot of fun to create,” Usmani says. “The customer was happy so I must have done a good job.” Usmani was not always destined for a career in the specialty cakes business. She had a background in economics and finance and was pursuing her master’s degree in Philadelphia when she decided to go to culinary school instead. She got her pastry arts diploma from the Restaurant School at Walnut Hill College. “Something clicked about going there. I took a leap of faith,” she says. And it appears to have paid off. She established Cake as Canvas as a home-based business in 2012 before opening a storefront in Bethlehem in 2020. “I just wanted to have a space of my own,” says Usmani. It’s primarily a call-ahead, customorder operation with some
pop-up shopping opportunities sprinkled on the calendar. Usmani says she loves bringing customers’ ideas to life in cake form. “People always remember the cake. It’s the last thing you have at the end of the night.” Usmani also offers classes so that other aspiring bakers—or, perhaps the more appropriate title would be artists, whose medium is buttercream and fondant—can learn the tricks of the trade, just like she did when she took that leap of faith. “I never knew I had this interest and I’m glad I stumbled upon it,” Usmani says. Katie Gaffney’s career has taken her all around the country. She’s worked for some of the biggest stars in the culinary business, like chefs Francisco Migoya and Thomas Keller. And, long before anyone in the Lehigh Valley had tasted anything crafted by the very talented Lee Chizmar, she was learning the tricks of the trade from him at Great Bay restaurant in her native Boston. When Chizmar and his wife, Erin Shea, moved to Salisbury Township to open the future award-winning restaurant Bolete, Gaffney, a graduate of the Culinary Institute of America, relocated as well, to work alongside Chizmar as a pastry chef. Later, in 2015, following a move to Napa and a wedding to chef Michael George, she was back on the East Coast in the Lehigh Valley, living in Easton but working in New Jersey. But something didn’t feel quite right. Gaffney began to wonder:

“What am I doing to impact my community? I was missing that sense of community. I had to do something closer to where I lived.” And in 2019, she did just that with the opening of The Modern Crumb Bakeshop inside the Easton Public Market. “We’re a traditional French American bakery,” says Gaffney. Expect fresh breads, baguettes, croissants, cookies, danish and more. There are also a number of gluten-free and vegan options as well as traditional custom-order cakes and desserts for special occasions. Everything is made and mixed in-house, which makes for a lot of long and laborintensive days for Gaffney and her small staff at The Modern Crumb. But Gaffney says the repetition is one of the things she enjoys about the job; she sees it as part of the process of polishing her technique. “Every day I try to do it better than the day before,” says Gaffney. Those who can remember digging into mouth-watering delights like apple dumplings, shoo-fly pie and funny cakes at Meyers Family Restaurant in Quakertown will be happy to know that those and other beloved recipes live on at The Farm Bakery & Events. “It truly is a family business,” says Becca Lynde, who owns the property with her husband, Chris. Becca Lynde’s roots at the farm run deep; she was born and raised there, and later returned in 2011 with a family of her own to take over the upkeep of the property.
“It truly is a family business.” In 2016, the family began operating a bakery on the site via a commercial kitchen inside the house; a barn on the property was converted into a wedding venue the following year. The farm is currently home to the Lyndes and their two daughters (the 13-year-old can make a mean macaron, Becca says) as well as Chris’s parents and Becca’s father, Jerry Meyers, who attended the Culinary Institute of America in Hyde Park, New York, and perfected his craft inside the kitchen of Meyers Family Restaurant, which was opened by his parents in
1949. Although the family made the difficult decision to close the restaurant in 2003, The Farm Bakery is bringing a number of its Pennsylvania Dutch classics to a whole new generation. “It’s a nice blend of our past and new recipes, too,” Becca says. The family has added new bakers to the fold, including Kara Wible, who was hired in 2016. “She didn’t have any formal training but she was super talented,” says Becca. Wible made her first three-tiered cake when she was 13 years old. She credits Becca with giving her a chance at her dream job. Also on the team: Lindsey Miller, who interned at the bakery in 2019 and was thrilled to be asked to come back after she graduated from college. Now they’re churning out those Meyers classics as well as specialty cakes and seasonal fare like cookies, pies and muffins. There’s a whole other crew that handles weddings and special events on the property. “One of the things that sets us apart is the team that God brought here to the farm,” Becca says. “They all love to serve. Matthew Robles’ family can be forgiven if they seemed a little caught off guard when he told them several years ago that he was going to become a full-time baker. Although Robles had worked in the food industry for many years when he was starting out, his experience in the kitchen in a professional capacity was limited, and his more recent jobs had taken him in an entirely different direction—think health care supply chain. And yet, Robles was always drawn to food. “I always had a sweet tooth,” he says. “To this day, whenever I eat something, I have to have something sweet after.”
“It's all blood, sweat, tears and love.” And baking, Robles says, had always been a hobby, at least. His family made frequent visits to a bakery in Easton when he was growing up. Robles began trying to recreate some of the delicious delicacies they brought home. “One day, I found the perfect ingredients to come together.” He took his homemade

bread to his family and they loved it. Suddenly, there was no longer a need to take quite so many trips to the Easton bakery, and maybe the idea of Robles as a professional baker wasn’t so crazy, after all. His coworkers in the healthcare industry also became willing taste testers for his freshly baked breads. Their praise—and eagerness to place orders for more—gave him the confidence to think a career change might be possible. “I was like, I can make something out of this eventually,” Robles says. Robles began selling his goodies out of the shared commercial kitchen Common Space in Downtown Easton. Then, at the tail end of 2018, he opened Just Baked in Tatamy with fellow Common Space baker Nicole Amey. It’s two businesses under one roof—Robles operates Matty’s Marvelous Makery, and Amey heads up Elite Sweets by Nicole. THE LUNA FAMILY Luis Luna, Sr. began entertaining the notion of opening his own bakery when he was just a boy in Puerto Rico. According to his son, Luis Luna, Jr., he got his first taste of the business when a bakery owner noticed him eyeballing all of the goodies in the display cases and offered him a job washing dishes. From there, he graduated to frying doughnuts and other tasks. Fast-forward to 2004: Luis Sr. and his family had moved to the U.S. Although he attended culinary school in Puerto Rico, he was employed as a truck driver and still chasing his dream of establishing a bakery of his own. “Once when he was delivering flour, he just started crying,” says his son. “He just wanted it that badly. He prayed to God, he did whatever he could do.” Finally, Luis Sr.’s vision became reality in 2012 when he opened Luna’s Bakery on Linden Street in Allentown with his wife, Dalila Luna. In 2019, they welcomed a second location on Union Boulevard. Luis Jr. and his sister, Jessica Luna, help run both locations, along with Luis Jr.’s wife, Sharon Luna. “It’s a piece of Puerto Rico here in the Lehigh Valley,” says Luis Jr. Luna’s specializes in Latin staples like pan sobado (sweet bread), pan de agua (French bread) and quesitos (cream cheese puff pastries ) that are
made from scratch on-site. Another big seller is an original dessert they call “Cheflan,” cheesecake on the bottom, and flan on the top. Luis Jr. says he’s grateful for the community support that has buoyed both locations. And, while the whole family has to put in a lot of hours to make it all work, he’s happy they’re in the trenches together. “There’s joy in being able to work with your family, being able to help each other out. Not too many people get to wake up and then spend time with your family as your day job. I’ll definitely look back on these times as a gift from God.” 1120 W. Madeline’s delivers the straight-forward classics as well as a few unexpected offerings.

When the first iteration of Madeline’s in Orwigsburg burned in 2012, there was never a question to owners Jay and Nadine King that it would live on. The questions instead involved where, when and how. Their original restaurant, which opened in 2007, was housed in an old stone inn, the kind that’s typically made of Pennsylvania fieldstone and features warren-like mazes of

rooms that all lead into each other. Usually, these older buildings often have beautiful but outdated architectural choices that make a restaurant charming and cozy, but also difficult to navigate in an efficient manner. You might imagine that after a fire, the logistics of renovating and rebuilding such a structure would be a bit tricky, and you’d be right. Plus, there was the
question of parking—but isn’t that always a question? Luckily, Jay works in real estate but also has been involved in food (he’s the former half of King’s supermarket, if you remember them), which turned out to be the magic combination; Madeline’s is built on land he owns. Although it took several years for the process to unfold, once they got started,
construction in Fogelsville was completed in less than a year. It’s tucked away next to a strip mall and a St. Luke’s doctors’ office complex, but won’t likely remain quietly attracting locals for much longer, as there are hundreds of new homes being built on the adjacent land. The new location, which opened in 2019, has an elevator, banquet space, copious parking, a larger bar and extensive outdoor dining space (complete with heat lamps and, as of this writing, a seasonal installation of palm trees). Madeline’s is named not for a person but after two people; it’s an amalgam of Nadine and her sister Melanie, who originally went into the business with their spouses years ago.
Lobster Bake
These days, it’s just Nadine and her husband, Jay, who run the place (one of them is always there, Nadine says), but the spirit of Madeline’s remains. “We always wanted a place that was casual fine dining, where you could come during the week with your kids after soccer practice, for date night with your spouse on Friday, or with your friends on Saturday night,” explains Nadine. The menu certainly reflects the diversity needed to support that approach to hospitality. “We see lots of families with parents eating steaks, and the kids are eating pizza,” she says. If you go, chances are you’ll notice there are various permutations of crab cakes on the menu, and that ought to be your first cue to pay attention. These are a signature item made with real lump crab and “very little filler,” says
Nadine and Jay King Jay. You can order one or two as an entrée, and it’ll come with beurre blanc, whipped mashed potatoes and steamed broccoli—a classic protein, starch and veggie combo. Or, you can have a crab cake sandwich on a brioche bun with arugula, tomato and lemon aioli. And if you truly can’t get enough but you want to put your veggies first, Madeline’s will gladly add a crab cake to your salad. For an all-crab experience, order the stuffed mushrooms appetizer. Guess what they’re stuffed with? Other specialties include their lobster bisque, perhaps the most creamy and indulgent item you can put on a spoon in all of Madeline’s. If you can’t decide what you want, know that all entrées come with soup or salad (garden or Caesar). Yeah, it’s that classic kind of place; you can expect scratch cooking. “Everything is fresh to order, and we buy local whenever we can,” says Jay. As straightforward as Madeline’s is—there’s also filet mignon, chicken piccata and French onion soup—the
restaurant also likes to offer things that are little unexpected. For example, the appetizer menu includes alligator bites, which is not exactly a common offering. And honestly, despite the trope that always seems to get applied to unusual meats, it kind of does taste like chicken. (The fact that it’s breaded, fried and served with a spicy dipping sauce may help the chicken argument.) Jay loves Wyoming, and in homage to the West, Madeline’s also offers a free-range elk loin (Nadine describes it as “mild” in comparison to venison and other game meats). It’s finished with a cranberry glaze, and served with roasted fingerling potatoes and tricolored carrots. The winter months will be even more comforting with Madeline’s wild boar ragu, featuring a béchamel sauce over gemelli pasta. Local foods and spirits figure prominently, too. The spirits menu reflects that choice as the restaurant’s

Grand Stateside Sidecar is made with Philadelphia’s Stateside distillery’s vodka, mandarin liqueur and lemon juice. The cocktail menu is also populated with drinks made from other local spirits, such as Xplorer in Allentown (peanut butter whiskey, peach bourbon liqueur among others) and Faber vodka (Trumbauersville). However, there’s another way to look at local, and that’s with a dish itself. It’s unusual to see this dish on the eastern side of the commonwealth, but the Pittsburgh Salad is on the menu. If you’ve never had it, it’s the perfect marriage of virtue and indulgence: a salad, with steak and French fries. All in the same bowl, with homemade ranch dressing. If you can’t decide between a salad and French fries, the Pittsburgh salad solves that problem for you quite easily and deliciously. Madeline’s sources so much from Pennsylvania; its beef comes from Lancaster, the pork from Leidy’s in Souderton
and the chicken from FreeBird in Fredericksburg. Fruits are procured through local farms and orchards. “Whenever possible, we try to use organic. Our elk is free range and organic,” says Nadine. When COVID-19 hit, Madeline’s had only been open for less than a year, and as Nadine describes it, they hadn’t completely hit their stride before they had to shut down. What surprised her the most about the shutdown was that the customers were so supportive and generous. “We received numerous checks in the mail for our waitstaff, knowing that with our restaurant being closed, they were probably hurt the most. We have a great staff, and the fact that our guests recognized them is heartwarming to us,” says Nadine. A restaurant is, of course, only as good as its people. The kitchen is led by executive chef Gary Rhodes, but Nadine is quick to emphasize that “the entire staff is very talented and contributes to the daily features and menu planning.” And it’s true. A good restaurant benefits from a kitchen leader, but it can’t operate without a skilled and efficient kitchen,
along with a professional and warm front-of-house group, and great food. The Kings are so grateful for their staff, whom they say feel like family—and, as a result, the restaurant is closed on many holidays. Don’t look to book on Christmas Day or New Year’s Day, nor Memorial Day, Fourth of July or Labor Day. They are, however, open on Mother’s and Father’s Day, Thanksgiving, Christmas Eve (until 4 p.m.) and New Year’s Eve. “The restaurant business can be very hard on home life. We don’t want to burn our people out,” says Nadine. After a rocky year or two in the restaurant world, at Madeline’s, things are definitely looking up. Having all that banquet space and ability to accommodate groups helps— especially now that people are starting to cautiously plan small gatherings again. “Events are good word of mouth,” says Jay. But whatever your event is—from a casual lunch, brunch with the family, a business meeting or a full-on wedding or party, Madeline’s can handle it with a menu full of familiar comforts, and a staff that greets you with warmth and ease.

Chilean Sea Bass with Chef/Owner Giacomo Sgroi

Many of the chefs we talk to will credit their families for introducing them to cooking— whether it’s a story about spending the weekends learning a prized family recipe or an evening tradition of making dinner for everyone. Giacomo Sgroi, chef and owner of Nonna Sulina’s Sicilian Kitchen & Grill in Bethlehem, can actually pinpoint his love for cooking and for food to one specific moment in his life. “There are not many food purveyors in Sicily, where I grew up, like there are here in the United States, so as a child my father and I had a tradition when it came to buying the ingredients for his family’s oceanside restaurant in Sicily for the food auction,” Sgroi says. “He would

wake me up at 2:30 in the morning to drive to the peninsula of the island. I would sleep in the car until he would wake me up again with a warm, buttery croissant stuffed with Nutella. My father would put me on his shoulders and with our combined height and my arms, we would bid on the freshest ingredients, from fish just caught that morning to beautiful produce. I remember just turning to my dad saying, ‘This is my life; this is what I love to do.’” Nowadays, Sgroi can be found in the kitchen of Nonna Sulina’s, which opened on March 12, 2020. The restaurant was lovingly named after both of his grandmothers, to
whom he also attributes so much of his love and appreciation for food. “So often when I am cooking I am listening to the voices of my ancestors in my head. I don’t follow recipes or measure anything out,” he says. “It’s that feeling and that guidance from them. A little bit of this and a little bit of that with a ton of love added in.” Here, he is sharing his Chilean Sea Bass with Montalcino Sauce: perfectly cooked fish covered in a fragrant, decadent sauce with pine nuts, crab and wine. This particular dish is partof his family’s Seven Fishes Feast that they do over Christmas every year. Sgroi says his days off are spent concocting new delicious sauces and dinners. “My family and I live right next to my parents. We share a backyard with an outside kitchen, grills and smokers—you name it, we have it,” he says. “You will find my father and I sitting together dreaming up new ideas and flavors.” His love of food has certainly contributed to the success of Nonna Sulina’s. Opening their doors mere days before a global pandemic, and navigating a way through it, has made it a very popular spot for dining and takeout. INGREDIENTS

¼ cup extra virgin olive oil 1 ¼ red onion, sliced 1 ½ Tbsp. red/golden raisins 1 Tbsp. roasted pine nuts 4 large basil leaves, sliced thin ¾ cup crushed and peeled Italian tomatoes with basil ½ cup pinot grigio ¾ cups white clam sauce ¼ cup of water Pinch of salt, pepper and sugar ¼ cup jumbo lump crabmeat
Preheat oven to 450 degrees. Heat olive oil in a medium skillet over medium heat. Add onions and sauté until light brown. Add raisins, pine nuts, basil leaves and crushed Italian tomatoes. Stir frequently and simmer for two minutes. Add white wine, clam sauce, water, salt, pepper, sugar and crabmeat. Stir frequently and simmer for two more minutes, then set aside.

INSTRUCTIONS Pat fish dry with a towel to remove excess water. Season with salt and pepper on both sides. In a medium skillet over medium heat, melt the butter and olive oil until golden. Place the fish gently in frying pan.
Add garlic and thyme. Cook fish for 2–3 minutes on each side, depending on thickness, until golden brown, while continuously spooning butter over fish. When done, remove fish and place in skillet with sauce and spoon sauce over fish until well coated. Add a few sprigs of thyme on top and put in preheated oven for 10–12 minutes. (Oven temperatures and cooking times vary. Start checking at eight minutes for doneness. Sauce will thicken when sufficiently cooked.) Serve immediately. LEHIGH VA LLE YS T Y LE.COM : DECEMBER 2021

“Blue’s Classic Crème Brûlée is made in house in the traditional centuries-old manner,” says marketing director Kaitlyn Haynes. “The sweet vanilla custard is topped with sugar and brûléed to order before being served with a cardamom cookie and strawberry garnish.” Haynes says it’s one of Blue’s most popular desserts and remains a mainstay on the menu. “We do offer variations periodically; however, we always come back to our Classic Crème Brûlée!” The restaurant offers a variety of afterdinner drinks, served chilled or warm, but this winter, Haynes recommends pairing the dessert with The Poinsettia, pictured here.
