Home Sweet Home Swap We have our fair share of influencers in the Lehigh Valley (a story on them has rolled around in Style brainstorms for some time now). When we stumbled onto Dana Carpenter’s Instagram page (@danecarpenter), dubbed a personal blog chronicling her life in the Lehigh Valley, we hit follow. We saw cute family photos, lots of plants (she’s the founder of @fancyplantsclub, which we’ve highlighted in these pages before) and… a house swap?! “Ready for some crazy news??” her caption read. “We’re swapping houses with my in-laws. Yep, you read that right. As in living in each other’s homes.” Now she really had our attention. From the moment I saw that post, I knew the Carpenter family’s story had to be featured in the magazine. Fortunately for us, Dana, her husband, Andrew (and their two daughters), as well as Andrew’s parents, Sarah and John, were on board to participate! They share the story of how this all came to be and dish what a house swap really looks like when you’re going from a whopping 4,000 square feet to a modest
950 square feet—or vice versa. We shot both properties (one in Macungie and the other in Emmaus) on the same afternoon and were equally impressed with the charm, attention to detail and warmth that each home had. Both parties say they’re just getting started—Dana and Andrew have plans for an in-ground pool and Sarah and John will be totally transforming their brick exterior. While these couples are settling into their new residences, there are many just settling into the Lehigh Valley. The pandemic had city dwellers rethinking their leases and fleeing for suburbia. To any of our new Lehigh Valley Style readers, hello, and welcome! While we’ll strive to be your guide to the region each and every month, we’ve created the ultimate newcomer’s Must List for you in this edition’s pages. We hope it inspires you to learn and explore! And for those of you who are not new to the Valley, perhaps even lifelong residents, we hope to remind you of all that there is to love about living in the Lehigh Valley. he July issue of Lehigh Valley Style celebrated Geakers Tacos’ meteoric rise to the top as “Best Taco” in the Lehigh Valley. Since its founding 20 years ago, Geakers’ restaurant and carnival business has flourished, says co-owner Kevin Geake. “Eventually we were doing over 24 carnivals and fairs a year by earning one customer at a time.” Geakers was again featured in August, this time showcasing the opening of Geakers Tacos at the Lehigh Valley Zoo. The new location “brings many smiles to the visitors of the zoo,” says Kevin, and its success is all thanks to the hard work and vision of Kevin’s son Jared, Jared’s wife, Katie, and their daughter, Raegan. Many changes are on the horizon as Geakers heads into its third decade. To start, they will be streamlining their carnival business from 24 events to just four: the Schnecksville Community Fair, North Catty Carnival, Northampton Community Days and Carbon County Fair. The two brick-and-mortar locations will remain. Perhaps most exciting is the launch of a brand-new endeavor: Geakers’ catering! Those same satisfied customers who couldn’t get enough of Geakers’ tacos over the last 20 years wanted the food trucks to come directly to their homes and businesses. In fact, private parties have become so popular that Geakers’ business is now mostly catering. An area in the main restaurant has been set up for children’s birthday parties or business events up to 50 people. “Everyone wanted their employees and family members to experience the best tacos in the Lehigh Valley for themselves,” says Kevin, and Geakers delivered. A Hidden Gem BAR BIX
Tucked away inside the beautiful Townley House hotel in Downtown Easton, general manager Cassondra Ruta calls Bar Bix a hidden sanctuary and a nice respite from the bustling streets of the city. “The outdoor area is lush and green with mature trees, tons of plants and a gorgeous view of the sunset,” says Ruta. “A place to enjoy a few drinks around a fire with your friends. PEDRO’S CAFÉ
Pedro’s Café in Emmaus strives to provide a safe, cozy space for the community to come together, share a meal, read a book or work remotely. “We want to be an example that a small, hometown business can make an impact in the community by being others-focused, supporting other local small businesses and honoring their values,” says co-founder Jaime Bassett. Pedro’s Café boasts a flavorful menu, with coffeehouse staples like lattes, espresso and loose-leaf teas as well as exciting creations using homemade syrups in unique flavors like lavender and basil. Their thoughtful, whole food items are all locally sourced, with fresh bread and pastries from Apple Ridge Farm in Saylorsburg. The family-owned and -operated café fills a hole that was left in the Emmaus community due to COVID-19. “We are honored to have the opportunity to continue the tradition of a café within South Mountain Cycle,” says Bassett. “They ran the café prior and decided not to reopen after they had closed for the pandemic. Catherine Bailey is a beauty industry veteran. With more than 30 years in the business and an impressive resume to match, it’s no secret why beautyblender founder Rea Ann Silva sought Bailey out to manage her multimillion-dollar company. “I spent many years working within

the beauty industry and found it to be one of the most rewarding and fun industries to be part of,” says Bailey. Over the past 30 years, Bailey has held many roles, starting as the executive assistant to the owners of Victoria Vogue, a cosmetic applicator company based in Bethlehem. “After more
than 17 years at that company, I left as head of product development, which is how I connected with Rea Ann Silva,” she says. Rea Ann Silva founded beautyblender in Los Angeles in 2002, after working as a makeup artist in the entertainment industry for years. “Her desire was to improve the application process in her craft,” says Bailey. “She did that by creating the blender and wanted to share this tool and its simplicity of application as well as the superior finished look, with the consumer at large, from moms to working moms and career women.” In 2013, beautyblender moved its distribution center to Bethlehem and never looked back. “After a visit to the Valley, Rea Ann felt this was the place to be and immediately fell in love with the area,” says Bailey. “It was really at that point that the company began to explode.” The success of beautyblender can be directly linked to the tireless work of Bailey, who served as president and chief operating officer until her retirement. Bailey, who now acts as a senior advisor to the brand, imparts this wisdom to young women who have a dream to start a business as successfully as she did. “Have a mission that excites you and fulfills a passion that can be shared with others,” says Bailey. “Building a business takes a great deal of effort and the hard work is not always rewarded at first; that’s where the belief comes in. Additionally, take advantage of all the help you can find. Everyone needs a team and it’s important to be open to the conversation to help you make the best decisions.” Bailey also serves as a mentor for SCORE Lehigh Valley, championing the success of local entrepreneurs.

Tell us about where your love for plants came from! I was influenced as a child by my grandmother and her little garden; I adored the smells, fruits and vegetables and especially the flowers she had growing in her front yard located in the center of Queens, NY. My grandmother passed away when I was a teenager and it took me several years to find my way back to gardening and plants. A few years ago, my husband and my oldest daughter got me a few houseplants and that’s where my love for plants was reignited. What did the journey to opening The Wicked Botanist look like? I started selling plants on Facebook in 2018, mainly from my personal collection that I propagated and divided. This

office spaces, commercial settings and everything in between. Some plants we carry are philodendron, pothos, sansevieria, syngonium and many, many more. I also create custom soil blends designed with the plants we carry in mind as well as a variety of plant supplies like moss poles and fertilizers.
helped me to share my plants as well as allowed me to afford to purchase more and grow my collection. I then decided to start plant purges, which are plant sales but performed almost like an auction. I introduced the purges to a group that I was a member of on Facebook (Lehigh Valley Plant Exchange) and it took off. I started selling weekly since there was such a demand, then decided after much encouragement from my newfound plant friends to open a storefront (with the love, help and encouragement of my husband, children and amazing friends). Why Bethlehem? When I first moved to Pennsylvania from New York City, we moved to the city of Bethlehem and I remained there for about 20 years. I love the charm that Bethlehem offers so I really felt I needed to have my store in Bethlehem. I looked around for a while but after about a year we found our location and made the leap.
What’s the overall vibe at the shop like? The shop is designed around my interests, my lifestyle as a pagan and my deep respect for nature. Our shop boasts an eclectic vibe that is welcoming to all and is curated with hand-selected items that speak to a lover of both nature and mysticism. Describe the range of plant offerings available at the shop. We really have quite the range of plants to meet the needs of all levels of your plant journey. We start with your staple low-care and low-light plants, and from there we go to our collector plants that are hard to acquire but are truly stunning. We have something for everyone, including plants for terrariums,

You will find hand-poured candles that I make myself, mugs made by my daughter, trellises made by us, macramé, reusable tote bags, pottery, handmade jewelry, various paintings or prints with whimsical images of witches, moons and magical themes, crystals, sun catchers, wind chimes and many other items. These items are handmade by other woman-owned small businesses, as we feel strongly about supporting other women in business. Is there anything readers may be surprised to find at the shop? We get some stunning framed insects, reptiles and bats in from time to time, which are an amazing addition to our shop. But it is an item that sells out quite fast!
What are you looking forward to at the shop this fall? We have so much fun planned, ranging from pumpkin activities to special classes designed to create one-of-a-kind autumn décor, special sales and merchandise as well as some really great collector plants. Tell us about your online Etsy shop! We carry some of the items you will find in store on our Etsy shop, such as our handmade custom plant trellises, my custom soil blends, some fun hand-stamped keychains and plant accessories (another item I make myself). A fresh, outdoor event might start with the inclusion of greenery at each place setting, and a special brunch might build off of a certain thematic food or ingredient. For a

When plotting your place settings, consider a general dinner party rule: the more items on the table, the more formal your event. And whatever’s on the table, be it silverware or glasses, should be used at some point in the meal to avoid unnecessary clutter. “If you’re not serving coffee or tea,” Cecchi says, “leave out the teaspoon.” Conversely, if you’re serving wine, guests will also want water, so be sure to provide glasses for that. Practicality aside, you can get creative in how these implements are arranged. Get on YouTube and learn some cute napkin origami, tuck a flower into each napkin fold or tie bundled flatware with a silk ribbon.
CENTERPIECE SUGGESTIONS
The design of a gorgeous dinner party doesn’t have to start with the centerpieces, but if you include them, there are a few rules to remember. Centerpieces can be wildly creative and outside the box, but you can never go wrong with the traditional fresh flowers and/or candles. Just be sure to choose unscented candles and flower varieties without a strong fragrance that will interfere with the meal. Decorative bowls of fruit, pine cones or other cute items are a classic option, too. “Just be sure the height and size of centerpieces doesn’t disrupt guests’ ability to see and talk to each other,” Cecchi says.

With so many outdoor events necessitated by the pandemic, garden parties and luxury picnics have flourished. “I love the mix of being outdoors and casual/rustic but creating a tablescape that is elegant and upscale,” Cecchi says. Guests expect an outdoor event to have the laid-back feel of a barbecue, but when they arrive and find fancy stemware, china and thoughtful décor set up outside, it really sets the event apart and signifies how special it is to spend time together.

That said, Cecchi urges us to always take weather into consideration. Whether you have heaters or fans at the ready or an indoor space as a plan B, be ready for wind or rain to shake things up.

Create a cohesive ambience by considering what surrounds the dinner table. “I love a good bar cart,” says Cecchi. And if you don’t have one, Lovely Luxe has several in inventory. A signature cocktail can be a thing of beauty and a nod to some element in the theme or decoration, so consider showcasing a drink. Sideboards or bar carts in the gathering area should be tastefully laden and not overcrowded with liquor bottles or all the tchotchkes that might ordinarily roost there. Alex Michaels PRESIDENT & CEO OF DISCOVER LEHIGH VALLEY He didn’t know it at the time, but 1984 was a big year in the life of Alex Michaels. That was when he started down a path that eventually would lead him to the top job at Discover Lehigh Valley (which, coincidentally, was founded that same year). It was also the year that introduced him to pierogis and polka, courtesy of Musikfest (also founded in 1984). It all began with a move to the Lehigh Valley—a move the then-teenaged Michaels freely admits he didn’t want to make. “I kind of came here kicking and screaming,” he says.
Michaels was on the job with Discover Lehigh Valley for just over a year when COVID-19 landed its sucker punch to the heart of tourism bureaus everywhere.

INSIGHT His parents, employees of the now defunct Lucent Technologies, which operated a facility in Allentown, relocated the family from northern New Jersey to Whitehall. “Going up MacArthur Road back then, it was all cornfields,” Michaels recalls. “I really thought we were living in the country.” He says the change of scenery took some getting used to, but eventually he made friends and became acquainted with some very Lehigh Valley happenings, including that inaugural Musikfest. “I can remember going to the German tent or the polka tent or whatever it was and seeing people do the Chicken Dance,” he says. “I’d never seen anything like that.” Michaels graduated from Whitehall High School in 1987 and moved on to East Stroudsburg University, where he met his now-wife, Tara, a Salisbury High School alumna. He studied exercise physiology

and toyed with the idea of opening his own gym someday, until Mickey Mouse threw him a curveball; he and Tara relocated to Orlando, Florida, for a college internship program through The Walt Disney Company. “That’s where I got the hospitality bug,” he says. It was a hands-on crash course in how Disney does business. “It’s like being on a college campus without the books.” Fast-forward to 1997: two years after tying the knot, the couple was expecting a child (daughter Madison), and Tara was missing her old stomping grounds. “She started getting homesick for the Lehigh Valley,” Michaels says. He took a job with a wholesale travel company based in Scranton that kept him on the road for some 30 weeks a year. When that company closed in 2001, he was at a crossroads. “I really didn’t know what to do with my career at the time,” he says. “Then I got this harebrained idea that I wanted to be in the military.” Michaels jokingly

refers to it as his “midlife crisis”; he was 32 years old at the time. His enlistment date with the U.S. Navy was September 11, 2001. That morning, Michaels was in Harrisburg, undergoing a final physical before being sent to boot camp alongside his fellow recruits when news broke about the terror attacks. He says there was pandemonium in the room when the second plane struck the World Trade Center in New York City: “It was like something out of a movie.” The officer who was supposed to swear them in gave them the option to back out at the last minute. Recalls Michaels: “I thought about it multiple times. But we all stayed in the room. It was surreal. We didn’t know what we were getting into.” Michaels completed his stint with the Navy in 2005 and then dove back into the hospitality industry, first with the Daytona Beach Area Convention and Visitors Bureau in Florida, and later with Visit Jacksonville (also in Florida) and Visit Virginia’s Blue Ridge. In 2018 he was in the process of interviewing for a handful of CEO jobs around the country when he learned that Michael Stershic, president of Discover Lehigh Valley, was retiring. Michaels says his wife encouraged him to throw his hat into the ring. “We got really excited to come back to the Lehigh Valley,” he says. “You come back with different eyes and see all of the beauty and opportunity. There’s so much new development.”

And certainly, the Lehigh Valley that Michaels had left in 2001 was not the same Lehigh Valley that he returned to 17 years later, this time as the head of an agency in charge of promoting the region’s amenities and tourist attractions. He says he was pleased to see that Allentown’s downtown had blossomed into a destination for young professionals to live and socialize. Bethlehem had added the SteelStacks campus and Wind Creek (formerly Sands) casino to its stable of entertainment offerings, and Easton was welcoming a resurgence on its restaurant scene. Michaels was on the job with Discover Lehigh Valley for just over a year when COVID-19 landed its sucker punch to the heart of tourism bureaus everywhere. “The last year was incredibly stressful and incredibly reflective for everyone, but especially the hospitality industry,” he says. “For six months of the pandemic, we were really concerned that life would not evolve back to the way it was.” So what does an agency do when there’s a collective “closed” sign on the places it prides itself on promoting throughout the year? Regroup, and plan for better days ahead. “We realized how we really have to hone in on what makes the Lehigh Valley special,” Michaels says. “Destinations are going to be chomping at the bit to bring people in, so we really have to step up our game.” That means reintroducing the region to those who live here, and doubling
down on efforts to brand it as a must-visit destination for out-of-towners. And so Discover Lehigh Valley is branching out in several new ways, including revamping its website, expanding its marketing efforts, launching a tourism ambassador program and even moving into new digs at Easton’s Simon Silk Mill complex. Already, there are reasons to hope that the pandemic’s stain on the local tourism industry won’t be indelible. Michaels says May’s hotel occupancy numbers in the Lehigh Valley were very good—equal to

pre-pandemic levels. “We’re cautiously optimistic,” he says. “I know there’s a lot of pent-up energy to get out and live life again.” The option to work remotely, which became a reality for many during the pandemic, also has helped; it’s easier for visitors to decide to extend their weekend stay if they don’t have to worry about reporting to an office come Monday morning. While Michaels may know the ins and outs of all the Lehigh Valley has to offer, when asked about his favorite local destination, he keeps it simple: Allentown’s Trexler Park. It was a popular hangout spot during his courtship with Tara, and it was one of the first places they visited when they moved back to the area for good. “There’s not a lot of Trexler Parks around the country. It’s one of those amenities you take for granted,” says Michaels. And he should know. He’s lived in 11 different cities in eight different states. But somehow, all roads seemed to lead back to the Lehigh Valley. “This is the first time in my life where I actually feel at home,” Michaels says.

HGTV may have a lock on all things related to the home buying and renovation experience—the good, the bad and the ugly—but there’s a different kind of real estate story that could add a unique twist to its lineup. Call it Home Swap: Lehigh Valley. Andrew Carpenter and his wife, Dana Carpenter, arranged a permanent switch with his parents, John and Sarah Carpenter. But there is one thing that separates their story from a typical HGTV plot line: there’s no drama. All parties involved are not only still speaking to each other, they’re raving about the changes made to their now former dwellings.

It really came down to a matter of space: Andrew and Dana needed more of it, and Sarah and John needed less of it.

While swapping two different households may sound complicated (and in some ways it was, of course), the idea behind the move was simple. It really came down to a matter of space: Andrew and Dana needed more of it, and Sarah and John needed less of it. “We were living in 950 square feet of space,” Dana says, of her now former home in Emmaus—a ranch home with three bedrooms and one bathroom. Continues Andrew: “… which was great for the two of us, but when we had kids, it became
tough.” Something clicked when they were attending a family gathering at the Macungie home of Sarah and John a couple of years ago. Dana recalls: “Andrew and I both kind of looked at each other and said basically the same thing at the same time: ‘What if we lived here someday?’” Andrew later broached the subject with his father. By that time, all three of the Carpenter children (Andrew, Ben and Christina) had moved out of the nearly 4,000-square-foot family home, which, along with
the acre-plus property it sits on, was becoming a hassle to maintain for Sarah and John. “They weren’t ready yet, but it put the seed in,” Andrew says of his parents. “We agreed to take a year, think about it, pray about it and then come back to it,” concurs John. That conversation was followed by many more conversations, along with some soul-searching on both sides. Andrew says: “The biggest wild card for me—I knew I would be happy—was would my parents be happy in our old home?”
By January of 2019, both couples were on board, but it would be more than a year before the move could take place. “It was like figuring out a giant jigsaw puzzle,” Dana says. There were loose ends to tie up on both sides, including ensuring that Andrew’s two siblings didn’t have any objections to him taking up residence in the family home. That came off the to-do list with ease—“They were glad to see Andrew and Dana get it,” John says—but another project would prove to be much more time consuming: downsizing. “I’m a collector,” Sarah shares. “Our basement was full of stuff. That was the hard part—giving up the space, the storage.” Many of those items had been amassed as part of Sarah’s business as a designer and event planner, but going through the downsizing process with her own parents ahead of a move to Florida was

an eye-opener. “They had 45, 50 years of stuff to go through. And we thought, we cannot be doing that,” she says. Beyond the obvious benefit of Andrew and Dana having more elbow room for their growing family, another reason for wanting to keep the Macungie home in the Carpenter family was strictly sentimental—in 2003, while he was still in high school, Andrew helped his father build the home. “We did all of the electric, the framing. A bunch of the grunt work. It’s
always been a fond memory for me,” says Andrew. “I learned everything I know from my dad, just watching him. He knows how to do pretty much everything.” As it turns out, John, who works for Walker Technical Company in Center Valley, learned a lot of what he knows from his own father. “We were always building things,” John says, and he’s pleased that the tradition continues with his son. “Andrew is very much like me. making it their own That knowledge and DIY gusto came in handy for both couples as they settled into their “new” homes in February of 2020. “Nothing needed to be done,” Dana says. “It was more so making the space our own.” Among the changes made inside the four-bedroom, three-and-ahalf-bathroom home: gutting the master bathroom and renovating two of the bedrooms for their young daughters. The couple’s oldest daughter, Ava, has moved into Andrew’s old

room. “It’s still weird to me to lie there and read her a story thinking, ‘this is where I used to sleep,’” Andrew says with a laugh. One of the biggest projects they tackled outside the Macungie home was adding a patio in the backyard. Hardscaping just so happens to be an area of expertise for Andrew, who is co-owner of an Emmaus-based landscaping company, Still Waters Grounds Maintenance. They have other plans for the outdoor space,
including installing an inground pool. But there’s no rush. “We have plenty of time to do things,” Dana says. In between renovations, she uses the home’s ample natural lighting to cultivate her growing collection of house plants, a hobby that took root during the pandemic. She shares her caretaking secrets on her Instagram page (@fancyplantsclub) and blog (fancyplantsclub.com). The biggest challenge for John and Sarah was figuring out
how to use every available inch of space in their smaller digs. They finished the basement, which now includes an office, TV room and laundry room. They also converted the garage into a workshop and installed extra shelving in the kitchen. Eventually, they may combine two of the bedrooms to create a master suite with a separate bathroom and walk-in closet. “We thrive on this kind of stuff. We’re worker bees,” Sarah says.

Both couples say there are no hard feelings or buyer’s remorse when they visit their now former homes. “It’s a younger, fresher feel,” Sarah says of the Macungie property. “The house needed that.” And John agrees: “When we go over there, it feels like we are visiting Andrew and Dana’s house. It doesn’t feel like our house anymore.” Dana also has a lot of praise for her in-laws’ ingenuity in adapting to a smaller space at the Emmaus home. “Andrew and I have looked at each other so much and said, ‘why didn’t we think of that?’ They picked up the baton and finished it.” While a home swap might have worked for this particular family, it may not be such smooth sailing for all families. “I wouldn’t recommend this for everyone,” says Dana. A strong relationship forged long before moving day helped both couples navigate what could have been a delicate situation. “They’re so wonderful and easygoing,” Dana says of her in-laws. “They’re the most supportive people and cheered us on as we did things.” And it seems accurate to say they’re adaptable, too; both have embraced this new, somewhat unexpected chapter in their lives as a fresh start. “Things are falling into place and it wasn’t even our plan,” Sarah says. Echoes John: “We feel like we simplified our lives, and that’s been a very good thing for us.”

Easton’s downtown might best be described as urban and up-and-coming. New retailers, restaurants and places to live are always popping up. Easton’s roots stretch back to the 1750s, but there’s a young crowd and a modern feel throughout the city.
For more than 20 years, Savory Grille has delighted diners in its intimate, countryside setting. The offerings change seasonally, but you can always expect to find some iteration of sea scallops and duck on the menu as customers can’t get enough. Known for their extensive list of appetizers, Apollo Grill encourages a “grazing and sharing” dining experience. Apollo’s been around since 1999. Enjoy unique New American cuisine at Grille 3501, whether you’re dining indoors, al fresco on their patio or grabbing a seat (and a cocktail!) at the open-air bar. The restaurant will celebrate 20 years this November. (Its much younger sister restaurant in Southside Bethlehem, ZEST, offers rooftop views and is also worth checking out.)
YOU MUST
A Yocco’s hot dog is like a rite of passage around here. A tried-and-true tradition since 1922, there are six locations in the Lehigh Valley. Yocco’s is run by the Iacocca family, which is where its name came from—you see, the Pennsylvania Dutch population pronounced it “Yo-co-ca.”

Order Komé Fine Japanese Cuisine’s Saucon Valley Roll. Aptly named for the restaurant’s location inside the Promenade Shops, the spicy tuna roll is topped with avocado, tempura flakes, spicy mayo and eel sauce.
Bethlehem Dairy Store, referred to by natives as “The Cup,” is a local institution that’s been around for nearly a century. The ice cream is homemade and available in around 50 different flavors at any given time. You’ll be hard-pressed to find the shop without a line wrapped around it in the summer.
Josh Early Candies has been delivering the Valley specialty chocolates for decades through its two locations. Their signature nonpareils combine decadent chocolate and crunch, and are perfect for gifting or endless snacking!
Around here, Cali Burrito has a cult following. Check out their menu for an inventive array of burrito offerings, including breakfast and an option to build your own.
Khanisa’s Pudding Bar hasn’t been on the map for quite as long as some of the other establishments on this list, but their decadent pudding quickly garnered a following like no other (23k on Instagram to be exact).
Geakers Tacos’ gator tacos— that’s right, alligator meat straight from a farm in Louisiana—are an adventurous eater’s dream come true. The Valley clearly loves them, as these have been known to outsell Geakers’ more traditional offerings.
Served by the skillet, The Bayou’s mac and cheese comes in a variety of different flavors including classic, Nashville (with fried chicken and hot sauce) and brisket.

Homemade Sauce with Chef Vito Spinelli
It’s tradition for Spinelli’s family to make a year’s worth of sauce every Labor Day weekend.
Cooking is a family thing for Vito Spinelli. “Growing up in an Italian/Colombian family, eating is what we did and still do best,” he shares, laughing. Family meals are the memories that stand out most. Spinelli’s family would start the prep for their big meals one day prior and then spend the following day cooking and eating. “Cooking is kind of like an Olympic sport in our house,” he says with a smile. These days, you will find his siblings, parents and even his nieces helping at The Brick, known for its delicious specialty pizzas with fresh ingredients and a family-friendly atmosphere, where Spinelli has been the chef and co-owner for almost eight years. “My favorite thing about cooking is that it brings everyone together. Dinnertime is such an important part of who I am as a person and who we are as a family,” he says. Every Labor Day weekend, it’s tradition that Spinelli’s family makes a year’s worth of sauce. They work around the clock—it usually takes about 36 hours to make and can all of it. “The kitchen always brings the family together not only in the restaurant but also on days off. I know I am biased but no one works harder than us,” he says. Spinelli is sharing that prized sauce recipe, which can be used for pizza or pasta. The memories he’s made making it with family and sharing it with friends have been such a gift, and he wants to share that gift with others here. “For as crazy as it can get, we end every night with our family meal together,” says Spinelli. “Our night wouldn’t be complete without it.” 1 W. INGREDIENTS 1 bushel San Marzano or plum tomatoes 1 onion 3 basil leaves Salt to taste
INSTRUCTIONS Rinse tomatoes and let them air dry. Once dried, cut them in halves and place them in large saucepan. Add onion, basil and salt. Cook on medium heat for 20 minutes, until boiling, while mixing so tomatoes don’t stick to bottom of pan. Pass cooked tomatoes through tomato sauce processor (you may have to pass the cooked tomatoes through a few times until all seeds and skin are removed). Put the mixture back into the saucepan and cook for about 30 more minutes. Pour sauce into warm jars and immediately close jars. Boil jars to seal. Keep all the jars covered under blankets until cooled.

Limeport Inn IT'S ALL IN THE FAMILY AT THE
Long-running family restaurants are remarkable in and of themselves; their very existence contains multitudes. Ones that employ the same chef for many years, along with other restaurant kitchen and front of the house staff, are even more telling. And eateries that survive a pandemic are worth commending, too (along with our patronage). Although in the grand scheme of things, the pandemic is perhaps a very small blip on the radar for this very old establishment. It still

feels worthy of a pause, though, to say that the Limeport Inn is a place that embodies all of those characteristics. If you’re not sure what to expect, let it surprise you. Like so many of these bucolic roadside establishments, the Limeport Inn in Coopersburg is historic, dating to 1842 as a stagecoach stop. Naturally, it’s seen many changes through the years—its name being one of them, as it used to be known as the Country Carriage Inn
and Limeport Hotel. This revered spot has been owned by Mark and Angel Jamison for the past 20 years, and its day-to-day operations are the responsibility of their daughter, Emily Fischer, 27, and chef Ashley Stull, 37. Within minutes of talking to them and tasting their food, it’s apparent that Fischer eats, sleeps and breathes this place. From as early as six years old, she would sit on the kitchen milk crates and watch the prep work, an activity that seems
to have ordained her future. “I was never pressured, but once I expressed an interest, I was supported,” she says. Stull grew up down the street from the Limeport, making it easy to find a job as a dishwasher when she was a teenager. Now she’s in the kitchen, although her official restaurant training is front of the house. When they talk, they finish each other’s sentences. When they stand next to each other for a photograph, they convey a commanding presence, but an ease, too. Fischer and Stull relate in a seemingly effortless way that develops after working together for years, from long hours logged behind the line and bumping into each other
in a tiny restaurant kitchen. But it’s also something more intrinsic than that. “We can communicate with each other without speaking,” says Stull. When things get crazy in kitchens, as they’re wont to do, such interpersonal ease is a blessing. The pair works in tandem to develop and refine the menu. The Limeport Inn is known for its New American menu, but some vestiges of its previous Irish pub status are still in place, at least superficially: the sassy signs above the bar, the Celtic tile work on the tables around the bar and the general comfortable rustic aesthetic. And although there are also some old-world Belgians on tap now, Guinness remains. “That’s something if we removed, the people in town would march in with pitchforks,” Fischer says, laughing.
ASHLEY STULL
One key benchmark for a restaurant’s inventiveness is its appetizer menu. If you find yourself indecisively agonizing over which appetizers to order and you haven’t even so much as looked at the entrées, you know you’re in the right place. This is the experience at Limeport. There’s a creative interpretation of a Middle Eastern fattoush salad, rendered in satay form. And the crispy calamari are surrounded by Mediterranean flavors, with Kalamata olives, sun-dried tomato aioli and a caper salt— the latter accentuates the brinysalty essence. (“There’s no sad soggy squid on the plate,” says Fischer.) While we’re talking about starters, people also dig the turmeric roasted cauliflower, which takes a curry onion relish, spiced ginger cashews and whipped ricotta. To keep themselves engaged, and to keep things fresh, they reinvented a popular menu item that can be found at a lot

of places—baked Brie en croute. Imagine, instead, gooey Brie surrounded by layers of crispy flakiness in the form of spring rolls, with an apricot bacon jam, roasted pistachios and hot honey. It’s a much lighter and more enjoyable way to experience this classic starter. “We respect the favorites of regulars, and we’ll always tweak things in a manner that appeases the crowds, and feels like an improvement,” says Fischer. Order those apps or maybe one of their dozen or so pizzas (they did a brisk business with them during the pandemic), and sit outside on their beloved landscaped patio, complete with requisite relaxing water features. Menu items change periodically and carefully, and specials often make good use of seasonal produce. Please don’t miss the French onion ribeye grilled cheese, which is so simple it’s shocking how tasty it is.

Rumor has it the BLT is fabulous, too, and with thickcut bacon and a farm-fresh egg, how could one go wrong? Bigger appetites should check out Limeport’s version of pad Thai, which goes right for the umami—and loads up on lots of fresh seafood, with shrimp, scallops and mussels. The entrées also include some pasta dishes, along with sea bass, salmon, New Zealand lamb,

filet and a bourbon-barbecueglazed meatloaf, too. It’s probably not a surprise to disclose that everything is scratch-made here, including the sauces and dressings, and the food is locally sourced, whenever possible. Beef comes from a family farm upstate, Fischer says, and the eggs are collected from the Jamisons’ own 60-plus acre farm. “They’re all free-range, happy chickens. They lay the best eggs,” she says. Let’s not forget dessert, shall we? This course receives special treatment, too. Angel Jamison is in charge of all things pastry, and the way Fischer tells it, her mom is of the belief that you cannot have enough dessert options. So at Limeport, there’s a plethora of selections including cheesecake, chocolate items, vanilla bean crème brûlée (“it’s phenomenal,” says Stull), Meyer lemon panna cotta and pound cake served in a jar with fruit and ice cream and carrot cake, too (the candied
ginger makes the carrot cake a standout). Ice cream is the rare item that’s brought in; but it doesn’t travel far, from Longacre’s Modern Dairy in Barto. At some point during our interview, it’s revealed that the Limeport’s success is truly word-of-mouth—they’ve never advertised. This stops the conversation in its tracks; it seems so unfathomable. The family vibe is undoubtedly responsible for the longevity of this place; Fischer started working there “as soon as I was legally able to work the line,” and Stull since high school. “As long as I’m still learning, I’ll be here,” says Stull. During the pandemic, many restaurant families grew closer, and that’s certainly true for the Jamisons and their extended workplace clan. “They treat you like you are part of the family. They did not want anyone to go without or have difficulty during the pandemic,” says Stull. The two pause, sensing a need to observe quiet for a moment. “There is a special energy in this building,” Fischer says.

What to Order People really adore the pizzas, creatively rendered types such as wild mushroom and Gruyère, a vegetarian pesto pizza, smoked bacon and ranch chicken and, of course, margherita. Don’t miss the calamari, the fried Brie spring rolls or the burger (everyone loves a good burger). An incredible indulgence at lunch or dinner is the ribeye grilled cheese, with provolone, and served on a Parmesan-crusted sourdough. It’s satisfying, simple and wellexecuted; it’s worth driving a long distance for, it’s that good. Cocktails are a sure bet, too—everyone upped their mixology game over the pandemic. The grapefruit gin fizz is especially refreshing.

The one-and-ahalf-foot-tall tower holds 88 ounces of mimosa.
There’s brunch with mimosas and then there’s brunch with a mimosa tower. At Zest, it’s the latter, offering a boozy, Instagrammable experience like no other. The one-and-a-half-foot-tall tower holds 88 ounces of mimosa—approximately 10–13 glasses. “There are two full bottles of champagne in the towers,” says general manager Anthony Trapani. “It is a little less than two-thirds champagne to one-third OJ.” Designed to be shared, it will cost you $75. The tower is available exclusively during Zest’s Sunday brunch from 10:30 a.m. to 2:30 p.m. “We were looking for a way to offer mimosas on a grander scale for our brunch service when I saw a friend post one from a California restaurant, and I thought it was the perfect fit for us,” says Trapani. (Like we said, Instagrammable!) He recommends pairing it with their chicken and waffle sandwich or their Caprese Benedict. And don’t worry if someone in your party isn’t a big mimosa fan— there are plenty more brunch cocktails to choose from on the menu at Zest. Trapani recommends their espresso martini (Svedka vanilla vodka, Kahlúa, Baileys and chilled espresso) or strawberry Bellini. “We also have our signature ZEST Bloody Mary that is topped with a piece of bacon and grilled cheese.” 306 S.
