Nurture Nature As we’ve come in and out of quarantine and the season of hibernation, getting outside and reconnecting with nature has started to feel more and more like a luxury. When I recently set the goal of achieving ten thousand steps a day (with my pup, Koda, in tow), I was only thinking about the benefits of moving my body (and tiring out said pup). But the benefits of getting outside and breathing fresh air are aplenty, which is why Bethlehem-based counseling center Reset Outdoors strives to reconnect clients with nature through its daily work. Learn about their practice as well as some of the benefits of “Earthing” on pg. 27. And if your idea of connecting with nature only goes as far as a backyard oasis or a styled picnic experience, we get it. On pg. 48, Leigh Ehrlich takes readers inside, or rather

outside, her “E Retreat,” located right in the backyard of her Lower Macungie home. The project was 16 years in the making—and it does not disappoint. Then, on pg. 36, Cindy Rizzolino of Penn Picnics shares her tips for curating an Instagram-worthy picnic. After a similar experience in Lake Tahoe, California, Nazareth-based Rizzolino knew she had to bring this concept to the Lehigh Valley. And we’re so glad she did! Frustrated by her own experience of dining out with food restrictions, owner Felicia Rocchino set out to provide a place where people with similar challenges could eat freely. “It is very hard to dine out, because gluten spreads,” she says. “Even when precautions are taken.” Indigo 52 in Nazareth offers vegan, gluten-free and dairyfree options. Rocchino names the Socca pizza, stuffed French toast with jam and cashew cream, vegan shepherd’s pie, borscht, Brussels sprout latkes, and pasta with sun-dried tomato vegan “cream” sauce as standouts on the menu. She says the restaurant has been well received by the community. “People with allergies are excited to finally have a place to eat. For everyone else, it’s just the opportunity to experience a really unique, upscale menu.”

Opening a brick-and-mortar location was not part of the plan for owners William and Marylou Seixas. “It was entirely unexpected, as we were set on just operating our food truck and bringing our food out to the public,” they say, “but the truck didn’t seem to have the same idea, as the engine blew and the transmission followed right after.” Now, they’re serving up all of their original Ecuadorian street food offerings on solid ground in Bethlehem. The restaurant’s name speaks to the feeling one gets after enjoying their meal, but also to the Seixas’ love for the root vegetable. “We embrace the potato with a fresh, well-balanced plate,” they say. Best sellers like the braised pork shoulder fritada, chicken breast sofrito and chili with Ecuadorian chorizo are all offered as plates, bowls, overstuffed in empanadas or on top of their seared mashed varieties. OWNER OF UNION AND FINCH Ed Hanna and his wife, Shahnaz, didn’t start out in the restaurant industry. “I worked in the music industry and Shahnaz was a paralegal in New York City,” he says. Still, they both grew up in families where the door was always open to all, so they knew they wanted to do something in hospitality, but they also knew New York was a very tough market. In 2011, as their family was

growing, the couple decided to move back to the Lehigh Valley, where Hanna is from. Hanna had been a very big fan of JP O’Malley’s Pub, which, upon his return to the region, would soon become Union and Finch. “The location and space reminded us of the neighborhood restaurants we were accustomed to in New York City,” he says. “We bought the building in 2010 and opened our doors in 2016.” The restaurant offers a menu that’s different yet relatable, and at an accessible price point. Hanna says they love the community of being in Allentown. “People are passionate about this city, as they should be. We feel there’s so much untapped potential being only 90 miles away from New York City and 60 miles from Philadelphia.” Hanna strives to give back to the community that he and his wife love so much. “We try to do quite a bit with the schools in the city,” he says.

“There are a lot of homeless and underprivileged kids that need our help, so we try to give back as much as we can during the year to different areas in the Allentown School District. We also work with other organizations like Camelot for Children.” He’s proud that Union and Finch has made it into year five of business, despite not having any experience starting out. “It certainly wasn’t easy,” he says, “especially after the last two years.” But Hanna says coming back to the Valley, raising a family and contributing to the community is one of the proudest personal successes for him and his wife. While he isn’t sure that another restaurant location is in the cards for them right now, he says never say never, and shares that they’re in the very early stages of a new project. “We’re thinking about another business that is tied to the city of Allentown.”

Tell us a little bit about the journey to opening Mosaic Home & Garden! Post-undergrad, I spent several years working in the corporate sector doing sales. It was there that I started to conjure up my plans for business, which would inevitably turn into the Mosaic & Company brand. After leaving the corporate world, the idea for a home and garden center began to take shape. I spent nine years thinking about it and originally planned to tackle this project with my late father. We spent several years searching for the right location together, and after losing my father five years ago, I stopped looking and refocused on expanding our current business, which at the time focused solely on wedding planning, floral and event design. Then, unexpectedly, the right location found us out of the blue. Our current home and garden center location became available—and was only a short drive from our current studio. It was then that I pulled the trigger to make the dream a reality.


The greenhouse was previously known as “Hickory Grove,” and was a Lehigh Valley staple for more than 100 years. Talk about the significance of that and how Mosaic Home & Garden has been received by locals. Hickory Grove Greenhouses was indeed a staple in the area! My family and I used to shop there annually for our garden veggies. It feels really good to reopen the space and welcome the community back to the greenhouses they loved so much! I have been flabbergasted by the warm welcome we have received from customers throughout the Lehigh Valley. The positivity and encouragement was a huge motivator for us as we prepared for the spring season. What can shoppers expect to find in-store? Our customers can expect to find a unique variety of tropical houseplants, pottery and home décor to spruce up their indoor spaces. Customers can tackle their outdoor spaces too, as we grow (on-site!) and provide

annuals, perennials, trees and shrubs. For the avid or novice gardener, you’ll be delighted to find a large selection of plants to cultivate a successful veggie and herb garden at home. After all, there is nothing better than fresh veggies grown at home with your own two hands! Is there something that readers may be surprised to hear that you offer? A lot of customers have been surprised to hear we offer fresh-cut floral for delivery in Allentown, Bethlehem and other areas throughout the Lehigh Valley. They have also been surprised (and delighted) to hear we are offering classes and workshops on several garden- and floral-related topics. It’s a great way to gather with your friends and family and a wonderful way for us to meet more members of our community. Tell us more about the workshops we can expect in 2022. We will be offering workshops on creating kokedamas, terrariums, bonsai, spring and winter wreath-making, succulent pumpkins for fall and much more. As they become available, the workshop schedule can be found on our social media channels and website. What’s the overall vibe like at the center? The space continues to evolve and grow—no pun intended. Its overall vibe is very relaxing, warm and inviting. Did you know that just 10 minutes in a garden can elevate your mood?

Talk about the Mosaic & Company umbrella. How does the greenhouse fit into all of it? It’s crazy to believe that February 2022 marked 10 years for us in business! Though we initially started the business photographing weddings and events, our goals and priorities have shifted as we have evolved in the industry and honed in on our strong suit and passion. Floral design and wedding planning are now at the forefront of what we do. The greenhouse is a continuation of our love of floral and nature. It’s giving us the privilege to explore the rooted side of things and not just the splendor of fresh-cut flowers.

Yes, tell us about your Allentown studio location. We’ve got some big plans for our Allentown studio located on Cedar Crest Boulevard. Currently, the studio is being utilized for our wedding and event consultations and production. Over time, we plan to develop that into a retail location that will include an additional garden center, restaurant and a café/ gelateria. Food is precious and perishable, with about 40 percent to 50 percent of waste taking place at the consumer level. Instead of sending our wilted greens, stale leftovers and eggshells to the landfill to make methane, here’s advice from the Nurture Nature Center’s (NNC) Garden Director Pam Ruch on reducing waste and transforming scraps into gardening’s own black gold through composting.

EAT WHAT YOU BUY

“When you plan your meals, think about how you’ll incorporate the leftovers into the following day,” Ruch says.

“Make smoothies with old fruit and greens. They can be frozen for use, along with good broth ingredients like vegetables, sprouting onions or garlic, apple cores and Parmesan rinds.” A thermometer in your fridge can show whether the temperatures are giving your food its longest life. “The fridge should be 37–39 degrees and the freezer zero.”

THE VALUE OF COMPOST Since the pandemic got us into new hobbies and shaken by the whims of the supply chain, seed sellers have noticed a huge uptick in home gardening that

hasn’t flagged. Composting is a great way to feed a garden’s soil and give food waste a second life while adopting a zoo of organisms. “One thing to realize is that your compost and your soil are alive,” Ruch says. “You’ve got earthworms, millipedes, pill bugs, microscopic insects, fungi, bacteria. Your job is to keep them fed and happy.” The product of a thriving compost community is material for the garden that helps retain moisture, suppress plant diseases and improve soil health. “As for making your own,” Ruch says, “you may as well.”

A simple heap could be all you need, with a shovel, rake or pitchfork to turn it, but in order to produce garden-amending material, a bin is recommended. “You can make one with recycled wood, using free pallets wired together,” Ruch says. “Even four-foot wire fencing on posts, just make sure you can open one side.” She’s not a fan of plastic bins, for obvious reasons. Constructed from leftover lumber, the compost bin at NNC’s garden on Pine Street is exemplary, with good air circulation between slats and a removable front for access. The ideal location is in part shade, so the compost doesn’t dry out.

THE RIGHT RATIOS

For an efficient and effective compost, some maintenance is required. First, in the form of what you add. “You need a mix of materials,” Ruch says. “Food waste, grass clippings and manure are high in nitrogen, while leaves, straw and newspapers are high in carbon.” Aim for a ratio of one part nitrogen-rich to three or four parts carbon. Ruch’s countertop scrap bucket is lined with newspaper, so every time she empties nitrogen-rich scraps into her compost, some carbon-rich paper goes too. Then, turning the compost every month or so allows the mini-critters to work more quickly. Old grass seed past germination, pet and human hair, the contents of your vacuum bag and natural fabrics like cotton, wool and linen are all among the refuse that could end up feeding your garden!

HEATING UP

Most home composts don’t reach these heights, but at a size of 3’x3’x3’ or, even better, 4’x4’x4’, the center of a compost pile can get very hot, which works to kill or break down contaminants. “If you’re serious,” Ruch says, “you want a hot compost.” The heat can reach as much as 170 degrees, while an optimal center temperature is about 130–140 degrees.

WHAT ABOUT A WORM BIN?

A worm bin or vermicomposter is just another venue for old food to find new life. A population of purchased red wigglers (not wild outdoor worms) sets up shop in a layered bin and sets about scarfing scraps and producing rich worm castings, which are great in the garden and also good for supplementing houseplants. Worm bins do best between 55–75 degrees, so they love a good basement. Start your bin three-quarters full of “bedding,” which can be moist newspaper and a layer of soil, and bury your scraps in there. The bin should only smell like good soil, and in this pleasant microcosm, your worm population can double in only three months. “With zero-waste Facebook groups, it’s easy to find extra worms a new home,” Ruch says. Chances are you have gardening friends who would love to adopt some red wigglers.

Earthing, of course, is not a new practice, but rather a reflection of how much we have removed ourselves from our natural environment.

Reconnecting with the Earth Having been confined in our homes at various times over the past two years, we have become increasingly aware that our environment has a direct impact on our health and well-being. Reconnecting with the Earth and being in nature may be one of our best medicines to improve our physical, emotional and mental health.

A NEW PARADIGM

Connor Moriarty, MS, LPC, founder of Reset Outdoors, an innovative counseling organization that incorporates the natural outdoor environment into its practice, had an epiphany several years ago. Years of working as a trauma specialist in very intense settings had taken a

In addition to being in contact with the Earth, there is a whole host of Earthing/


grounding technology, including mats, mattresses, pads, sheets and clothing. These products are designed to simulate the same electromagnetic field as the Earth; while initial studies show some benefit, more studies are needed. And the fact that many of these technologies are plugged into outlets can bring with them a host of other problems.

EMF PROTECTION

If you are concerned about EMF, some nocost or low-cost things you can do to reduce exposure include turning off your Wi-Fi in your home at night while you sleep, getting an EMF protective cover for your smart meters and watching how you use your phone. It is good practice to keep your cell phone away from your body and out of your bedroom when sleeping at night. Additionally, use your speaker phone or EMF-friendly headsets to keep the phone away from your head.

TAKE ADVANTAGE

We can all create more outdoor opportunities vital for our well-being. “Living in the Lehigh Valley, unlike most urban areas, we are fortunate to have a multitude of parks, trail systems and green spaces within a 10–15 minute access to most everyone,” Moriarty says, noting that two hours a week outdoors is the sweet spot for optimizing our health. It doesn’t have to be in the middle of the woods, or on top of a mountain—the key is getting in natural light. If there is a mobility issue or a safety concern preventing you from getting outside, taking a break and allowing yourself to gaze at an image of a beautiful landscape and listening to a nature soundtrack can still offer benefits. Earthing, of course, is not a new practice, but rather a reflection of how much we have removed ourselves from our natural environment. The exact mechanisms of how being in nature provides tremendous health benefits may not be fully understood, but what is known is that being in nature and experiencing nature is key in supporting our mental, physical and emotional well-being.

Copper House welcomes people year-round for day-long retreats or immersion weekends, an invitation for reflection, relaxation and connection with those sharing the space.

There’s a reason why copper is appealing to both contractors and craftsmen. Not only is it highly functional because of its malleability and conductivity, it’s also quite aesthetically pleasing. For centuries, some artists have preferred copper to canvas as a painting surface. But even when copper itself is the centerpiece, it commands attention, morphing from a shiny reddish-brown hue to the green-blue patina known as verdigris. Change also is on display—literally and figuratively—at the Copper House in Upper Bucks County. Copper panels are an integral part of the home’s exterior architecture. But it’s inside this boutique retreat space—or among the sprawling, arboraceous grounds that surround it—that a much more personal kind of transformation is possible. Pam Anderson and her husband, David, purchased the property that would become Copper House in 2003. At the time, they were moving out of the New Hope/Solebury area and into Connecticut. But they always had plans to

return to Bucks County, where they had lived since 1992. Anderson says they always found the area appealing. “It’s a lot of different kinds of people coming together and getting along—farmers, artists, pharmaceutical reps,” she says. When they started construction on the home in 2007, Anderson was at a crossroads in her career. She had made a name for herself as a New York Times bestselling author of several cookbooks, such as The Perfect Recipe, How to Cook Without a Book and Perfect Recipes for Having People Over. She also served as executive editor of Cooks Illustrated magazine as well as a food columnist for USA Weekend, and Runner’s World and Better Homes and Gardens magazines. In addition, Anderson had showed off her skills under the hot glare of TV studio lights with appearances

on shows like Good Morning America, CBS This Morning and the Today show. Prior to making a name for herself in the food industry, she ran her own catering company in Chicago. But even though she had a resume that many would envy, she wasn’t feeling inspired. The publishing world had changed, and she knew she wasn’t interested in writing another cookbook at the time. “I wasn’t sure what was next,” Anderson says. “But I knew I had a history of cooking and decades of hospitality experience between [the catering company] and years of hosting events, big and small. And I knew I had a unique property.” Pam and David added to the home over time. At first, they only spent weekends and special occasions in Bucks

County. But in 2019, they moved back for good and decided soon after that they wanted to share the peace and tranquility they felt in their home with others. A few months later, they hosted their first guests for a weekend yoga retreat. Now Copper House welcomes people yearround for day-long retreats or immersion weekends, an invitation for reflection, relaxation and connection with those sharing the space. The itinerary is fluid and depends on the guests and their goals, but might include activities such as yoga, art, meditation or a walk through the woods. “We tailor the experience,” Anderson says. “It’s not a cookie-cutter experience.” Anderson says she works with several partners to bring the vision to

fruition; she and David help out as needed in the hospitality department. “When people come, we tell them, it’s our home, but it’s your home for the day,” Anderson says. And, as you might expect of someone with Anderson’s background, food and cooking are certainly on the menu. Anderson was never formally trained as a chef, and she considers that an asset—it keeps her in touch with all the home cooks out there, she says. Regardless, cooking is something that has interested her all along, beginning with her childhood in the South. “I was born with it, I think,” Anderson says. “I always tell people, I fried my first chicken by myself at the age of 12.” She can recall “playing restaurant” with a young friend—the friend was the customer, and Anderson was the chef. An only child, Anderson says she happily assumed some kitchen duties from her mother, for whom cooking was more chore than cherished hobby. Anderson recalls a deal her mother made with her: “She said, ‘I’ll make you a dress today if you’ll make dinner.’” Anderson’s two daughters,

Maggy Keet and Sharon Damelio, have inherited her passion for food. The trio collaborated on a book: Three Many Cooks: One Mom, Two Daughters: Their Shared Stories of Food, Faith & Family. They maintained a website and blog together until other commitments began to pull both daughters in different directions. Keet is the founder of Planetarian Life, a website and online community that promotes plant-based eating as a way to combat climate change. Anderson assists with recipe development. The idea of dipping a toe in the vegan or vegetarian pool might seem daunting to some, but Planetarian Life aims to make the shift as seamless as possible by providing easy-tofollow tutorials that take the guesswork out of everything from stocking the pantry to grilling portobello mushrooms to preparing essentials like sauces and dressings. And a “planetarian,” Anderson says, isn’t necessarily someone going full gusto on a no-meat, no-animal-products regimen. “Maybe it’s trying a Meatless Monday or eating plant-based


meals once or twice a week,” she says. “It’s not a rigid, strict thing.” And while she’s been gravitating more toward plant-based cooking in recent years, Anderson is not exclusively vegetarian. “We still enjoy a good roast chicken,” she says. Damelio is the director of development for WhyHunger, a nonprofit that aims to end hunger and help communities come up with workable solutions to food insecurity. Both Keet and Damelio live in New York City, and Anderson says they get together often. And naturally, provisions are never an afterthought at those gatherings. “We plan out every meal, every dish, every cocktail,” Anderson says. “It’s not only our work, it’s our love.” Preparing the cuisine at Copper House is an opportunity for bonding as well. A spacious kitchen inside the main house has more than enough elbow room for a group that wants to carry on conversation while chopping up vegetables or tossing a salad. Some guests like to be part of the preparation process, others leave it to the professionals (i.e., Anderson). There’s a kitchen outside, too, complete with two gas grills and a wood-fired pizza oven. Guests are encouraged to stretch their own dough and slide it into the belly of the beast. Anderson likens her home to a play set, meaning it can be changed and manipulated in such a way to accommodate the needs of whatever group she’s hosting. With its large, open rooms, the floor plan veers away from the traditional. Towering windows offer ample views of the greenery that surrounds the home; a gathering room on the main floor is nearly solid glass on two sides. Outside, with a cooking area, lengthy wraparound deck and fire pit, provides plenty of room to roam or relax on comfy chairs, benches and loungers. When Pam and David aren’t entertaining or working, they’re busy with the upkeep of the massive 11-acre property. It’s hard work, but not unwelcome work. Anderson says, with many new things, it’s not unusual for the “shine” to wear off. But that’s not the case with Copper House. “We adore this place,” she says. “But we also don’t want to keep it to ourselves.”

Penn Picnics originated while on a family vacation in Lake Tahoe during the summer of 2021. “My daughter’s birthday overlapped with our trip. While searching Instagram for celebratory activities in Lake Tahoe, I discovered @posh_picnic and booked a sunset picnic surprise on the beach,” says Cindy Rizzolino, owner. “Our family loved the experience and I was instantly inspired to bring the concept to the Lehigh Valley. I combined my passion of flower arranging and decorating with a few initial picnic materials to style a few set-ups and launched the business on Instagram.” Rizzolino says the business’s moniker was inspired by her grand-dog, Penn, who enjoyed the Lake Tahoe vacation with the family and is named after the state of Pennsylvania. Penn Picnics was launched in fall 2021, with locals booking to celebrate birthdays, anniversaries, date nights and friendships, and Rizzolino says that each and every client has been a delight to meet. “I’ve been honored to provide this experience for some of life’s

most treasured moments,” she says. “My favorite part is hearing about the unique experience Penn Picnics is able to provide for some of life’s most cherished moments, and my hope is that each picnic is a cherished memory of celebrating life with the people who are near and dear to them.” Penn Picnics provides the flowers, the complete set-up, clean-up and even captures

a few photos of the occasion. Several packages can be found online, ranging from $195 to $525 and two to 12 guests. The offerings are customizable, with several add-ons available. Suggested locations include Ballas Park, Jacobsburg State Park, Tatamy Trail and the Arts Trail, but can also be accommodated in one’s home, backyard or the Lehigh Valley destination of choice.

BY AMY UNGER | PHOTOGRAPHY BY MARCO CALDERON It’s often said that good things come to those who wait. And that certainly seems to be the case when it comes to the outdoor oasis dubbed the “E Retreat” at the Ehrlich home in Lower Macungie. It’s been more than 16 years since Bill and Leigh

Ehrlich first began the process of transforming their backyard into a unique, welcoming hangout space for friends and family to enjoy during the warmer months (and sometimes the not-so-warm months). That’s not to say this was a project plagued

by delays and setbacks—quite the opposite. The slower pace and fluid planning turned out to be just right for bringing the family’s ultimate vision to fruition. “Over time, the way we saw ourselves using the space changed,” Leigh says.

The Ehrlichs are a family of five. But when Bill and Leigh started kicking around ideas for a backyard renovation in 2006, they were a family of four— youngest daughter Claire hadn’t come along yet to join sisters Olivia and Jillian. They had just purchased the home in Lower Macungie the year before. It was brand-new construction with no landscaping behind the home; a sliding glass door opened to an expanse of open space. “It was a completely blank canvas,” Leigh recalls. “It was nice in a way because we could start from scratch. At the same time, it was a bit overwhelming.”

Enter Scott Rothenberger, owner of landscaping and architectural design studio PLACE. He came on board and helped the Ehrlichs come up with what he calls a master plan—a wish list, of sorts, to guide the transformation of the space. They started modestly in year one, with the construction of a patio outside the back door as well as steps leading down to a lower patio. The second year saw the addition of a pergola,

followed in subsequent years by bigger undertakings, such as an outdoor kitchen, grill and a twosided fireplace. “The fireplace was something we didn’t even think about when we sat down for the original plan,” says Leigh. And yet, it became an essential feature of the finished design, creating cozy outdoor “rooms” on either side. The in-ground pool, the last large-scale piece of the puzzle, was added in 2018.

The second year saw the addition of a pergola, followed in subsequent years by bigger undertakings, such as an outdoor kitchen, grill and a two-sided fireplace.

There were some years when there were no major additions or construction projects on the agenda, in keeping with the slow and steady pace. But the landscaping was an ever-growing, everchanging composition from day one. “So often we focused on the hardscaping and those elements,” Leigh says. “I can’t overemphasize the softness [the landscaping] added to the space.” The family wanted privacy but didn’t want a traditional fence around the perimeter of the property, so they created a natural barrier with a variety

of plants, trees and shrubs that matured as the project progressed. And they relied on Rothenberger’s expertise to integrate essential elements such as the fence around the pool that’s required by Pennsylvania law. “He’s masterful at taking things that are necessary, but then making them disappear in the landscape,” says Leigh. Adds Rothenberger: “I really like to try to get as much foliage and greenery in a pool design as possible. Otherwise, it feels too sterile.” The goal, he says, is to inspire a feeling of lounging at a resort, rather than in a backyard.

Over the years, as the layout took shape, a friendship bloomed between Rothenberger and the Ehrlichs. They even took some trips together, including a vacation to California where they visited the famed Huntington Botanical Gardens in Pasadena. One particular meadow on the grounds made an impression. “Leigh stood there and said, ‘I want this in my backyard,’” Rothenberger recalls. One problem: some plants that thrive easily in the California sunshine, like agave, wouldn’t fare so well during a freezing cold Pennsylvania winter. Rothenberger had to make some swaps, like using yucca plants in place of agave (“It can have the same architectural feel, but we can grow [yucca] in our climate,” he says), but he was able to recreate the meadow that Leigh was so enamored with on the backside of the pool. The design is meant to be a feast for the eyes that spans more than one season. “Something is always changing in my landscapes,” Rothenberger says. As the calendar turns, so does the color palette; evening primrose unfurls as a lush, pink carpet in late spring while Echinacea, Calamintha and Tamarix are in the spotlight during the summer. In the fall, it’s time for aster ‘Snow Flurry’ and Muhlenbergia grass to shine. Leigh says Bill has taken on the caretaker role for the landscaping, which has become a nearly year-round job. “It’s a love-hate relationship,” she says, laughing. In addition to the cutting, trimming, pruning and pulling of weeds, there have been some re-dos, too—one of the hazards of a

Leigh says a dogwood tree planted in memory of a beloved family pet— Linus—had to be dug up and relocated more than once. Although major construction on the project wrapped up with the completion of the pool, finishing touches have been added more recently, including the décor and furniture. One such acquisition is a farmhouse table that was made using the Japanese technique of shou sugi ban, in which the wood is charred for weatherproofing and preservation purposes. There are several seating areas dispersed throughout the backyard, enclaves that invite relaxation and conversation. No two arrangements are exactly alike in appearance, and that’s intentional; Rothenberger says he believes that outdoor furniture, like any pieces you’d use inside your home, should look like they’re part of the same collection, but not necessarily be a matching set.

Ever since the “E Retreat” officially opened for business, the family has been making as much use of the space as possible. “We’re summer-loving people, warm-weather-loving people,” Leigh says. But their idea of “warm” weather might be considered a little liberal to those who are reaching for a sweater or a hoodie before the leaves start to change colors; Leigh says they open the pool in April and wait until the week after Thanksgiving to close it down for the season. The attached elevated spa helps make the chillier evenings more bearable. And as long as the rain clouds stay away, the entertainment possibilities are endless. Leigh says they’ve hosted a number of outdoor

dinner parties and birthday parties for family and friends. They’ve opened up the space to the public as well with events like a fashion show last fall. “That was really fun and different, and without the space I wouldn’t have thought about hosting,” Leigh says. “This inspires me to do so many different things.” Members of the Parkland Garden Club also checked out the greenery during their 2021 “Gardens of Inspiration” tour. Now, with more than a decade and a half between them and the conception of the outdoor retreat, are the Ehrlichs finally ready to hop off the renovation merry-go-round? Yes and no. “We’re moving inside and doing things there,”

Leigh says. Although they nixed a traditional pool house as part of their plans, they discovered that asking guests to traipse through the house to change and use the bathroom during larger gatherings wasn’t exactly ideal. And that’s why Rothenberger once again found himself at the Ehrlich house for the start of another year: a basement renovation was next on the to-do list. They’re creating a lower level that’s both a guest house and a hangout space, an extension of the vibe they’ve established in the backyard. And Rothenberger says he’s more than happy to again devote his time and talents to these clients who are now his friends. “It becomes a relationship,” he says.

Hands down, Shawn Doyle has the most famous laugh in the Lehigh Valley. His joyous nature and love of making sure each person at his restaurant, Savory Grille, is having a wonderful experience adds to his already notable, locally sourced, farmfresh kitchen. “My fondest memories of food are always associated with the smell. The smell of fresh bread baking or the rich smell of homemade stock simmering on the stove. Those aromas give you no choice but to smile,” says Doyle. “My grandmother made the most perfect lasagna. She was an Irish woman living in an Italian neighborhood, and every time she made it, it was an event. The smell of the homemade sauce cooking all day with fresh herbs is something I will always remember.” His birthday meal of choice was his mother’s homemade chicken noodle soup for that same reason: the smell of the rich broth. “It is comforting and it is why I love cooking broth to this day.” Growing up, Doyle was always immersed in with the restaurant industry. His uncles gave him his first job in their restaurant at the age of 12 as a dishwasher. He was also taught to cook the late-night sandwich menu—and from that moment, he was hooked. Savory Grille in Macungie has been open for 24 years and Chef Doyle is one of the most respected, well-known chefs in the Lehigh Valley. So, what does he make at home on his days off?


Here, he is sharing his recipe for chicken and dumplings, where perfectly fluffy dumplings accompany a chicken gravy that can only be described as “velvety.” “I love this dish for many reasons,” he says. “But also because whenever I cook at home, I am all about one-dish wonders—the less dishes to clean the better. And bonus: this dish is delicious.” Along with this chicken and dumplings recipe, locals can reduce their dishwashing experience even more by ordering Doyle’s ready-to-heat “Savory at Home” dishes each week. CHICKEN INGREDIENTS ½ cup vegetable oil 4 lb. boneless chicken thighs 1 large Spanish onion, largely diced 1 large carrot, largely diced 2 ribs of celery, largely diced 2 large Yukon Gold potatoes, largely diced ¾ cup all-purpose flour 2 ½ quarts hot chicken stock or broth Salt to taste

Add the chicken stock and bring to a boil. Cook for 12 to 15 minutes before adding dumplings. Add salt.

Add the vegetable oil, the vegetables and chicken in a warm large sauteuse. Stir occasionally and cook for approximately 12 minutes. Add the flour and incorporate fully.

Drop the mixture by the spoonful into your sauteuse. Cover and cook for approximately 20 minutes.

The Taste Smokers BRING THE FLAVOR FROM ONE SOUTH SIDE TO ANOTHER

The restaurant can be best described as an artist’s salon meets barbecue pit.

Jerk Chicken, Brisket, Pulled Pork and Elote We have seen this story play out a few times during the pandemic: food-truckbased business launches brick-and-mortar location (The Flying V, Randevoo) in bustling neighborhood; brick-and-mortar location adds something special we didn’t know we needed to the food landscape. So, whether

that’s imaginative poutine, inventive Asian fusion-fusion or something called Chicagostyle barbecue (we’ll get to that later), we now have all of those things. And we have them all in Bethlehem. Owned by husband-andwife duo Quartez and Veronica Moore, The Taste Smokers started in October 2018 as a

food truck operation here in the Valley, with regular stints at breweries such as Hop Hill (whose beer is now on tap at The Taste Smokers). The real roots of the business, however, were laid down in college, when Quartez developed a reputation for smoking meats for his friends and fraternity brothers in Illinois.

The business is named after the Windy City’s beloved “Taste of Chicago” food festival. Quartez is from Chicago’s South Side area (Veronica’s from the West Side) and the pair bonded over their love of food, art and community building when they met. They brought that love to the region in the form of smoked meats, delicious sides and lots of great music, art and community consciousness—and a ton of awesome plants (from The Curious Plantaholic in Nazareth) vying for whatever sunlight comes through. About three years later, in October 2021, thanks to a commercial leasing program presented to them by the Community Action Committee of the Lehigh Valley (CACLV), they opened in Southside Bethlehem. You’ll find them nestled in a row of eateries that also includes Molinari’s, Mister Lee’s and The Hummus House. But food is at the heart of it. “Smoking meat was always part of our family. You smelled it as you were driving up to the house,” Veronica says. And that’s why The Taste Smokers is different. It’s the kind of comfortable, rustic space that looks like what you’d find outside, next to a smokehouse: a picnictable vibe with lots of long, communal-feeling seating. The menu is written on the requisite chalkboard, making it easy to add specials and subtract items (ribs, brisket, etc.) when they run out. “Barbecue culture is ‘We have what we have until we sell out.’ We suggest that people come early [if their plans allow] or order ahead so that we can prioritize their orders over walk-ins,” she says.

With smoked meats, you can’t just go back to the kitchen and whip something up really quick. When it’s gone, it’s gone. That being said, they smoke about 300 pounds of meat for about 30 hours when they’re open, with brisket and pulled pork occupying eight to 10 of those hours. “When we’re open, something is always on the pit,” she says. So, if you’ve heard of Texas, Kansas City and Memphis barbecue, along with North and South Carolina styles, you may be wondering what exactly Chicago-style barbecue is. (After all, we know there’s Delta blues and Chicago blues, so does music parallel food here?) Chicago’s barbecue identity isn’t nearly as deep− rooted as the aforementioned styles, perhaps because it can be a medley that stems from the migration of African Americans in the South, to the city’s South Side along with Eastern European immigrants to Chicago’s North Side. As Quartez describes it, it’s “a hodgepodge of everything— all the influences of barbecue, Memphis, South Carolina, but Chicago, because we do what we wanna do,” he says. He’s not necessarily being flip. Urban environments organically create a confluence of influences and offer an expansive, collaborative approach to the creative process. What this means, in ‘cue-speak, is that you’re more likely to encounter dry rubs rather than lots of sauces. They smoke what you’d expect—beef brisket, ribs and pork—but you’ll also see smoked salmon loaded with herbs. Salmon is not a requisite item at barbecue joints, at least not how they’re usually rendered here in the Northeast.

Another addition that’s not your stereotypical side can be found with their iteration of sides. Instead of presenting elote, the popular Mexican street food, on the cob, the corn is sliced off, drizzled with mayo and sprinkled with cojita (or Parmesan) cheese. Slaw is gently vinegar-based, (which is not unusual) but not mayo— along with some oil and, depending on what’s available, mango, pineapple or peach, or some combination thereof. Collards, green beans and Walker’s beans round out the side dishes, but we’d be remiss if we didn’t mention mac and cheese. Or, to be more specifically: GourMaQ and Cheese: house-made, and topped with a protein of your choice, which includes jerk chicken, brisket, pulled pork, ribs or sausage (Yes, that’s right. See also: Chicago). But back to that brisket. It’s fall-apart tender, the way smoked meat should be, if it’s done right. And the sauce offers a balance of tangy, sweet and sour flavors. “Sauce is always on the side. You wanna taste it. You spend 12 hours on a brisket,” says Quartez. In other words, don’t be drowning your brisket in sauce before trying it. The Moores envisioned an event space before they ever even thought about a food truck, “but not a space with food, but now we have both,” says Veronica. Everything is coming full circle. The Taste Smokers can be best described as an artist’s salon meets barbecue pit—a place where people meet over great food, live music, local art and any other kind of creative expression that needs to be amplified with the help of a microphone (and maybe backing musicians, too). “We are artists

ourselves, and it’s important for this element to be a regular part of the ambiance. We want people to experience more than just a restaurant when they enter our space,” she says. It’s clear they’re just getting started, too. “The Lehigh Valley is really a smallbusiness incubator, there’s great grassroots support here. People are always working on their brand,” says Quartez. They’ve already made their mark on the community in just a few short months—don’t miss the spoken word events, which pull Quartez from the pit to the stage for hosting duties, food for first responders, and local art and music. When we

arrived, Veronica was nestling her small but mighty newborn son in a sling while talking to us. It would be enough to handle a new business and a newborn (and a kindergartner in school), but Veronica has a few side hustles, including an empowerment-based biz called F.E.A.R. and Brown Skin Plant Mama, a plant therapy nonprofit biz that helps teach kids mindfulness—both of which have been featured in these pages. As Veronica describes them, “Before we were restaurateurs, we were community advocates.” It's hard to go wrong when your heart—and your barbecue pit—are both in the right place.

What to Order Well, here’s the deal. If you want takeout, you can take your chances, or order ahead and reserve the time you’re going to pick it up in order to be guaranteed you’ll get what you’re craving. They serve what they serve until they run out, a totally normal practice for barbecue joints, as you cannot rush a smoker. Dry-rubbed smoked ribs, brisket that’s fall-apart tender, slaw, beans—it’s all good. While you’re there, you can order a beer on tap from Hop Hill Brewing Company in Lower Saucon.

Lemonade PEDRO’S CAFE

At Pedro’s Cafe in Emmaus, all lemonades are made in-house with fresh and simple ingredients: fresh-squeezed lemon juice, house-made syrup and water. “Our syrup selection is changing constantly but you can usually expect five to six options,” says Jacquelyn Bassett, manager. “We like to switch them up seasonally.”

Bassett says the syrups are made with organic cane sugar and real ingredients, so instead of using “flavor,” they’re using real basil or lavender and infusing them into the syrups for a more natural taste. “Our favorite syrups to add to a lemonade are lavender and basil.” Pair your lemonade with the café’s Mediterranean Toast— toasted seeded sourdough from Apple Ridge Farm, topped with house-made hummus, tomato, basil and a drizzle of olive oil. “Our Mediterranean Toast pairs very well with all of our lemonades,” she says. “Especially our basil lemonade.” Serving fair-trade coffee and thoughtful foods, the café is committed to becoming a paper- and plastic-cup-free business, but Bassett says that, unfortunately, the ongoing supply chain issues have made that increasingly difficult. “We are no longer able to get the jars we originally sourced and are struggling to find replacements,” she says. “We offer compostable bamboo cold and hot cups when we can get our hands on them and highly encourage customers to bring their own cups when they can.” This spring, keep an eye out for more events at the café, as Bassett says that’s something they’re really excited about. 318 Main St., Emmaus 484.232.8383 pedrosemmaus
