Substance, Style 34 & Sustainability When we talk about Lehigh Valley Style, sometimes those unfamiliar willautomatically assume we’re all about fashion. Flattering, sure, but we are not a fashion magazine. That’s not to say we don’t appreciate fashion or haven’t enjoyed celebrating local style over the years—we certainly have and will continue to do so!—but at our core, we are a magazine that celebrates the Lehigh Valley and those who live and work here. So, when it came time to talk about this year’s annual women’s feature, which has, over the last five years, continued to transition from focusing on fashion to concentrating on the woman behind the clothes, we decided to name it “Women of Substance,” calling on readers to nominate a woman who inspires them, not for her clothes, but for all of who she is. We wondered: Would readers get it? Would we receive any nominations? How was this going to go? As the nominations poured in, we realized that not only did readers get

it, they exceeded our expectations. As we read through all of the nominations, every one struck us as so real, so heartwarming and so incredibly personal that we chose to feature each nominator alongside the nominee, publishing their candid written submissions in this edition. Turn to pg. 40 to get to know these local inspirers and just a few (of the I’m sure many) that they’ve inspired. And you can add me to the list of inspired. Whether we’re speaking of style or substance, the topic of sustainability remains at the forefront of all of our lives. For the last 17 years, the Cancer Support Community of the Greater Lehigh Valley (CSCGLV) has supported more than 45,000 visitors in over 10,000 programs. Their mission means the world to executive director Amanda K. Buss, and for a good reason. “I was diagnosed with breast cancer at age 28,” says Buss. “As a mom to a young daughter, I was overwhelmed by emotions and concern. I had no idea the journey I was about to embark on, but knew I needed to educate myself and find support to help me get through it.” On a visit to her oncologist, Buss found a brochure for CSCGLV and immediately signed up for her first program: kids’ support. “I wanted my

daughter to know she wasn’t the only child with a mom undergoing treatment,” says Buss. “I wasn’t the only bald mom and that it is helpful and encouraged to talk about your feelings. Almost immediately, I knew we both were getting the emotional support we needed.” Now, 14 years and 12 cancer recurrences later, Buss leads the charge in supporting this amazing organization so that no one faces cancer alone. “Serving as executive director of CSCGLV has fulfilled me both professionally and personally. When you can marry your passion with your work, you can achieve amazing results.” In 2016, the CSCGLV partnered with the American

Cancer Society for an important goal—to conquer the side effects of cancer. Their wig salon was founded with the mission of fostering confidence and restoring a sense of normalcy to those facing cancer. “Clients are fitted in a beautiful boutiquestyle room adorned with a crystal chandelier,” says Buss. “Our wig fitter, a retired cosmetologist, is trained in fitting and caring for the synthetic wigs we provide— again, at no charge to anyone in treatment for cancer. She advises clients among the many wig styles and hair colors.” Men or women who are interested in getting fitted are encouraged to call the CSCGLV office to schedule an appointment.

ared Geake was six years old when he started helping at Geakers Tacos’ first restaurant in Wind Gap, standing on milk crates at the counter. To prepare for opening his family’s current restaurant in Bethlehem Township—and knowing that education is the key to success—Jared furthered his education in management and marketing. It was during this time that he met his wife, Katie. After eight years together, they got married and started a family. Fast-forward several years. Once their daughter, Raegan, started school, Jared and Katie decided to take on a new project: Geakers at the Lehigh Valley Zoo. It opened in 2019. “Jared took this venture on and ran with it,” says Kevin Geake, co-owner of Geakers Tacos and Jared’s dad. 2021 so far has been wildly successful. “Everything really took off this past year, especially when everyone was beyond ready to get back out and do things.” When schools went online and hybrid, young Raegan was able to go to work with her parents. She’s learned all sorts of new skills by standing on milk crates behind the counter, just like her dad did when he started out. Says Kevin: “Raegan loves to help. Tell us about your journey to opening Pie + Tart! Both of us had been interested in food and cooking for years, and we each had formal training—Lisa in an apprenticeship program in Australia, and Anne at the Culinary School at Kendall College, then in Evanston, Illinois. Skip ahead a decade or two, and we both were inspired to return to the kitchen after years of doing other things, like raising kids, moving hither and yon, and the like. Fate stepped in, and we found ourselves back at it at Common Space, a commercial kitchen space in Downtown Easton. It took slightly more than a fortnight to realize how much we had in common, and a split second later, plans to join forces were hatched. This month, peaches will dominate the menu at Pie + Tart.

Describe what you mean when you say that Pie + Tart is “an urban bakery.” The phrase refers to our desire to draw inspiration from the energy, sophistication and foodways of not only great cities we’ve both been lucky to visit and live in, but also to recognize the vibrant little city of Easton.


Tell us about your range of offerings. How much does “This Week’s Bake” menu vary? We do have a few items that can almost always be found in the shop: sausage rolls, chicken pot pies and apple turnovers come to mind, though we stick to categories rather than having the same set menu items. This means the customer will always be likely to find a vegetarian dinner pie, a choice of meat pies and an ever-changing selection of fruit, custard and crumb-crusted pies. Customer favorites might rotate more frequently, but there will be plenty of new things, too. You specialize in Australian pies and sausage rolls. Tell us about those! For whatever reason, the English tradition of meat pies was kept alive in Australia to a degree that did not survive here in the U.S., at least

not much past the alwayscomforting chicken pot pie. Down Under, handheld meat pies are a staple at sporting events, as road food at gas stations and on every school’s lunch menu, while sausage rolls effectively take the place of hot dogs, in all possible scenarios. What kind of seasonal treats will be available this month? Peaches, peaches and more peaches will dominate the selection this month, along with all of late summer’s bounty, like nectarines, berries and the first of the new season apples.

Few things cause more fights and sleepless nights than fears about finances, but with curiosity and attention, money can become more of an opportunity than a source of stress. Kathryn M. WHY IS MONEY SUCH A FRAUGHT FIELD?

Because most people don’t receive consistent education on how to manage money, we’re left to form beliefs and feelings about it in a

haphazard fashion. “We learn about finances from the people around us,” Brown says. “How our parents manage or don’t manage money, experiences that we have had or we have heard of others having. People are looking around to see what everyone else is doing.” Along with this anecdotal data, talking about money is almost taboo. Without clear and open conversations, we concoct our own assumptions and anxieties. To get a grip, start with your budget. “You don’t have to track down to the penny,” Brown says, “but understand what’s going into your bank account each month and

what’s going out.” A general rule is that if you can set aside and invest 10 percent of your income throughout your life, you’ll have a great jump-start on retirement.

UNDERSTAND STOCKS AND BONDS

Basically, buying stocks is buying part of a company, and their worth is tied to the company’s success. “If it does well,” Brown says, “you earn money alongside the company. If it goes out of business, you could lose your investment.” Bonds, meanwhile, are loans to companies, municipalities or governments that pay you back interest with the promise to

ASK THE EXPERT ultimately return the principal in full. Bonds are typically less risky, but the trade-off is a cap to your earnings potential, as compared to stocks. Putting your money into a broad mix of these minimizes risk. Feel free to ask the tough questions: What happens if you lose your job? What happens in the event of a market sell-off? What is going on with Bitcoin? There are answers behind the fog of financial confusion, and with a little research and good advice, you can start putting your money to work for you.

There’s a reason countless kids with basketball on the brain wanted to “Be Like Mike” in the late 1980s and early ’90s; “His Airness” was simply one of the best to play the game. And if those same kids were coming of age in the Lehigh Valley, there’s a good chance they wanted to “Be Like Michelle,” too. Michelle Marciniak didn’t garner nearly as much ink inside the pages of Sports Illustrated as Michael Jordan, of course, but she did snag a spread in the magazine in 1991 as her remarkable basketball career at Allentown’s Central Catholic High School was coming to an end. She stayed in the spotlight in the years that followed, first as a Lady Vol at the University of Tennessee with a mission to win a national championship alongside legendary Coach Pat Summitt, and then as a professional ball player in two different leagues. Now, following a leap of faith that landed her in the business arena, Marciniak has shifted her focus from jump shots and zone defense to what happens after the final buzzer has sounded and the sun has set— more specifically, how athletes (or anyone, really) can get a more restorative night’s sleep.


Marciniak’s love affair with all things sports related didn’t begin on the basketball court; instead, it was gymnastics that had her jumping, twirling and tumbling, starting at the age of three. Marciniak was born in Silver Spring, Maryland, in 1973. She moved to Macungie with her parents and two older siblings (sister Kim and brother Steve) when she was five years old and trained at the famed Parkettes gymnastics center in Allentown until she was eight. But even then Marciniak knew her days in a leotard were numbered. “I was never going to be an elite gymnast,” she says. Still, she credits gymnastics with laying the foundation for her success in other sports. A young Marciniak could be found breaking a sweat not only on the basketball court, but also on the baseball diamond, the soccer field, the volleyball court and the golf course— oftentimes the only girl among a gaggle of boy competitors. “I was taught at a very young age that you can do anything a guy can do in the sports arena,” she says. “So, I didn’t know any better.” And she never felt out of place. “I could hang with the boys,” says Marciniak. In fact, so impressive was her athletic prowess that Marciniak was considered for Most Valuable Player honors in the boys’ soccer league during her freshman year at Central Catholic. But, recalls Marciniak: “They didn’t want to give MVP to a girl, so they did a co-MVP [to include a boy].” But Marciniak was truly in a league of her own on the hardwood. “I was obsessed with becoming the best basketball player I could,”

she says. “I knew I was good enough to become a really great player. I knew it inside of me.” Her parents laid down a slab of blacktop and put up a hoop and a spotlight outside the family home so she could practice day and night. Marciniak recalls setting up her boom box in her sister’s bedroom window, cranking up her favorite music and going to work. Basketball was everything. “I had no interest in going out,” says Marciniak. “No interest in things normal high school kids would do.”

Marciniak calls herself an introvert and says she tries to avoid the spotlight, something that became harder to do as she racked up point after point inside Central Catholic’s storied Rockne Hall. The Sports Illustrated article that came out in 1991 dubbed her the “ponytailed princess of hoop.” That same year, she closed out her career for the Vikettes with 3,025 points and was named the National High School Player of the Year. She was heavily recruited by colleges from across the country, including the University of Tennessee. Just how badly did the school want Marciniak to work her magic inside Knoxville’s ThompsonBoling Arena? The prior year, a very pregnant Coach

Summitt continued her recruitment visit with the Marciniaks at their home even after her water broke (according to Sports Illustrated, she gave birth to a baby boy after returning to Tennessee that evening). Marciniak spent one year at the University of Notre Dame before transferring to the University of Tennessee and joining Summitt’s Lady Vols. She led the team to three appearances in the NCAA Tournament, including two Final Four championship games. In 1996, the Lady Vols captured the NCAA title and Marciniak was named the NCAA MVP. Marciniak then played for the now defunct ABL (American Basketball League) and the WNBA before ending her professional career in 2002. She joined the University of South Carolina Gamecocks as an assistant coach for the women’s basketball team under Susan Walvius. Marciniak says she was pondering her next move a few years later when a new opportunity presented itself—and it all began with a pair of athletic shorts. The shorts were a favorite of Marciniak’s: “They looked great, they felt great. I liked the way they draped,” she says. She gifted a pair to Walvius, who was also a fan. Marciniak recalls what happened next: “She said, ‘I’d love to sleep in this fabric.’ I looked at her and said, ‘let’s do it.’” And that’s the idea behind SHEEX. There’s a reason athletic wear became the go-to wardrobe staple for many during the often-dreary stay-at-home days of the pandemic—it’s comfortable, it’s cooling and it’s soft against the skin. SHEEX aims to replicate that same sensation in the bedroom. “It’s the feel. When people go to bed, they want that cozy, soft feel,” Marciniak says. The company, which Marciniak and Walvius officially launched in 2007, offers performance bedding and sleepwear, with a goal of putting an end to overheating and other sleep-disrupting temperature fluctuations. “Everyone thought we were crazy,” Marciniak says, “but we thought we were on to something.” Two years later, the Lehigh Valley got its first taste of the SHEEX experience when some of the products went on display inside the merchandise tent at the U.S. Women’s Open at Saucon Valley Country Club. It was a full-circle moment for Marciniak; Mimi Griffin, the founder and president of MSG Promotions,

Marciniak calls her a mentor and a friend. SHEEX opened its first brick-and-mortar location at the end of 2019, but then the COVID pandemic struck, and the storefront inside the King of Prussia Mall was forced to close. Marciniak says the company is currently trying to raise enough capital to try again down the road; she’d love to see a SHEEX store at The Promenade Shops at Saucon Valley, but nothing is set in stone. It’s what Marciniak refers to as a “reset” moment—a moment when life picks you up and plops you down at the starting line for a new beginning, whether you like it or not. Learning to deal with those moments is a skill that Marciniak says translates from the basketball court to the business world. “There’s this persistence and resilience. Just being able to bounce back,” she explains. “Basketball taught me how to win, and how to lose. Most importantly, how to lose. How you react to losing will dictate how successful you are for the rest of your life. On the court, you’re working hard, you’re working smart. But you’re not going to win all the time.” sheex.com

Home Recycling is an admirable goal, but reduce and reuse come first for sustainability. Lightweight, cheap and waterproof, plastic has been a game changer for food safety, packaging and transporting almost every single product we buy, but the sheer volume of it produced in the last 60–70 years has completely overwhelmed our ability to process it. Nadia has always been a strong advocate of community work. I met Suzie about six years ago when I was giving her a private cooking lesson, which turned into her asking me, ‘What would you do if you could do anything?’ I wasn’t used to anyone asking me questions like that, because my job was to make other people happy. I said, ‘This.’ And while we were laughing at her rendition of cooking a turkey burger by dropping it into a pan from midair, I realized she was as authentic as one could be. She talked about her work in establishing a life coaching

business as she, a publicschool teacher, understood burnout and that life happens. She successfully did this, and added a podcast over the years. One day she walked in looking all svelte and it turns out she decided to get her yoga certification. I was unwilling to accept that yoga was amazing until she convinced me to come to one class of gentle yoga. When I left, I felt like I had the best massage ever and the tension was gone. She recently let me know that she’s almost done with her training to become an officiant, her latest endeavor. I envision this woman who is quirky and funny and beautiful inside and

out meeting a couple who are in love, and they will fall in love with her, as they do yoga during life coaching sessions, and then she performs their ceremony. And they will feel alive. Because even through remote teaching a reading class, COVID, a life coaching business, yoga and now her newest endeavor, Suzie is the definition of substance. A solid person who loves people in a deep way and makes them feel like they are worth something. EMANJarrah My sister, Eman Jarrah, is a true woman of substance. Eman, my younger brother, Chad, and I are all close in age, with only three years between us in total. Growing up, she has always been the quietest, but also the strongest—she was never afraid to do the right thing, even when it wasn’t the easiest choice. She acted as the voice of reason and good conscience during those long summers of our youth when freedom was plenty and common sense less so. I laugh when I think about the trouble we could have gotten into had Eman not been there to appeal to our better natures. Eman continued to grow into a kind and thoughtful woman. She is intelligent, driven and has dedicated her life and career to helping others. She is a successful lawyer, serving as the Deputy Solicitor for Lehigh County for the last 14 years. It’s not a flashy job, and certainly less lucrative than a career in private practice, but it’s an important job, and not one that many could do. She has set an example that diligently working behind the scenes can have a substantial impact on our community. She has dedicated her career to making a

difference in the Lehigh Valley, by counseling the agencies that provide much-needed services to older adults and individuals with mental health issues or an intellectual disabilities diagnosis. Due to the nature of her work, we never talk details, but I know she has seen many heartbreaking cases—cases that deal with abuse, neglect and exploitation of our most vulnerable citizens, cases that require strength, sensitivity and grace. It’s easy to become disillusioned when dealing with difficult situations regularly, but she always puts in the work, provides sound and fair counsel and treats everyone she meets with kindness, respect and dignity. She does this every day, while balancing her home life with her wonderful husband, Dave, and two beautiful young children, Quinn and Emi. She also helps our elderly parents with their needs, and acts as a shoulder to lean on for my brother and me (and our very large extended family). She is a wonderful example of how being kind, fair and mindful of community needs, as both a public servant and a private citizen, can inspire us all to be better and do better.” -DIANE BE ASLE Y

Skye was one of the first people I saw out in the world when salons were permitted to reopen last summer. I was so hesitant, because we still didn’t know a lot about COVID then. Skye let me know that she had extended her hours for people who wanted to be solo in her intimate Easton salon, The Beauty Exchange. She had figured out how to make sure people felt safe and supported as they made their way out into the world again. And to be honest, the simple gift of having my hair styled and being with another human again felt so incredibly precious, and is one of the early, post-shutdown memories I will cherish for years to come.

Over the years, while in the chair, Skye and I have had so many conversations about life and our businesses. Raising kids, marketing, anxiety, perfectionism, our upbringings, our deepest joys and fears and, even, what we hope for the world as we celebrate our differences—nothing is held back. She doesn’t shy away from hard conversations, and her vulnerability is truly a gift. When Skye does hair and makeup for weddings, I know that she helps people feel supported and looking fabulous on what can sometimes be a very stressful day. She also sits on the board at Metro Beauty Academy, helping to shape the future of so many young stylists.

It’s that kind of whole-person support and healing that her upcoming venture taps into. She is preparing to launch Herb & Board, a private supper club, where dishes are infused with cannabinoids, enhancing the health and wellness of the diners. I can’t wait to see where this incredible venture will take her. And in the meanwhile, I feel so thankful for our friendship and for the way she generously shows up with her whole self, every time I sit in her chair. Our conversations leave a lasting impression and I so often leave feeling like the best version of myself—recharged, renewed and thinking a little bit harder about how we walk through the world.”

In 2019 and 2020, 75 percent of HLV homeowners were single mothers. Not a day goes by at HLV that doesn’t empower women. Here, women work hand-in-hand and side-by-side with construction staff to build homes and to enrich their community and each other’s lives. The number of women in the construction industry is growing, and HLV supports their endeavors in building, philanthropy and homeownership. With events such as Women Build Week and She Nailed It!, women learn critical home building and repair skills and give back to the community at the same time. HLV’s Women Build Week offers construction volunteer opportunities and introductory lessons in basic carpentry skills. She Nailed It! is a fast-paced nail-hammering relay competition that allows women to fundraise for HLV, form relationships and engage in the camaraderie of a shared passion for helping others. When women are helping others, they are the creators of great work. Their empathic and nurturing natures find solidarity with other women in their desire to help the most vulnerable of communities. Female philanthropists are investing more in solution-based organizations, becoming the largest force for change for those in need in marginalized and underserved communities. Here’s what The Farmer and the Chickpea is, and what it isn’t. The Farmer and the Chickpea may be new to Quakertown, but it’s not by any means new; it’s been operating out of commercial kitchen space in New Jersey and serving farmers’ markets in the Garden State for at least a decade. And The Farmer and the Chickpea may serve lots of dishes with farm-fresh veggies and its namesake legume, the chickpea, but it’s not an exclusively plant-based eatery; meatloaf is one of its biggest sellers. As of January 2020, The Farmer and the Chickpea, owned by Ashley Stratton and Jillian Godfry, found a new home in a rustically renovated former garage in Quakertown. Opening a business that can seat almost 300 people at a time when people wanted delicious food to go (hello, pandemic) of course presents its own challenges, but The Farmer and the Chickpea was met with such runaway success it necessitated a parking lot expansion. “We had the busiest eight weeks of our lives,” says Godfry. “We thought it would be a slow trickle. But it was like Mick Jagger was in the store. The line of cars never stopped,” says Stratton. The Farmer and the Chickpea seeks to redefine your expectations when it comes to food. It’s a café, but it’s also a store and, currently, it’s also an ice cream stand. By the time this is published, other elements best described as “attractions” will


undoubtedly be added to the experience of this charming and welcoming spot, one with lots of delicious comfort foods you can either eat there or take with you. Have a seat at one of the upcycled tables and chairs, clearly designed to evoke a farmhouse experience, or peruse the marketplace full of small-batch purveyors of the likes of soap, maple syrup, pickles and more. The way Stratton tells it, she and Godfry accidentally began their career in food when they were working as event planners at a bridal shower and the caterers didn’t show up one day. “It was chicken salad. I thought, ‘How hard can this be?’’’ asks Stratton. That

question crystalizes Stratton’s philosophy. What started as a simple foray into chicken salad led to the acquisition of a “beat-up oven, a stainless steel table and a Pepsi refrigerator,” she says. That equipment—and then some—enabled the team to bring an ever-evolving, veggie-loving vision via pop-up Tuscan table dinners, farmers’ market appearances, ad hoc takeout set-ups and more. Much has happened in 10 years, but it’s easy to see that things grow exponentially proportionate to the degree that Stratton can come up with ideas—and Godfry and the rest of the crew can brainstorm and execute. (And sometimes, it seems, faster than that; greenhouses were in the planning stages when I arrived and the coffee bar was in the works.)

“I want people to get the food that I have in my mind. I am over the top, I can’t be mediocre,” says Stratton, laughing, who is nothing if not self-effacing. So, back to the name. If it’s not exclusively a plant-based business, as the name might suggest, what’s in the name? “We have to give street cred to the farmers, because without them, we wouldn’t be here,” says Stratton. They source from Tri-County Cooperative Market in New Jersey, a cooperative wholesaler, and will continue to buy as fresh and local as possible. The chickpeas? “I’ve been doing chickpeas for years,” she says. The humble legume occupies some beloved spots on the menu and reflects a Mediterranean approach; Stratton, who’s self-taught in the kitchen, grew up around the fresh fare of her mother and Sicilian grandmother, who always cooked. It was just the way.

The namesake, of course, carries through with the presentation of the food. Yes, it’s farm-fresh and yes, it’s made from scratch. And yes, it’s made with love. But perhaps instead of falling in love with each other over lunch, they’re falling in love with veggies, as Stratton tells it. But it’s something more mysterious, yet really more basic, than that. “Someone came into the store recently and asked me, ‘What do you put in this food?’ I told him, ‘I put ingredients in it!’” Stratton says, laughing. Suffice to say, people don’t expect the food you order in a fast-casual setting to be delivered with sit-down dining execution—both in terms of quality and quantity. Take, for example, the brunch board, loaded with everything you could probably

want (and then some) for brunch, designed to be shared. Think fresh fruit, hunks of French toast, waffles, the tallest and fluffiest quiche wedge you’ve ever seen and probably at least a half pound of Applegate bacon. (“Some things are so good, I don’t look at the prices,” says Stratton.) It would easily serve four people. Or, for example, their house lasagna, which rotates flavors, but at this writing came in cheeseburger form (complete with some manner of Russian/Thousand Island dressing on top). This is no rinky-dink fourby-four lasagna square. It’s a pasta and meat-based commitment the size of a small barge that slides into dock at your table and requires more than one person— or more than one day—to finish it off. “Ash is Sicilian and she’d rather have to roll you out of here in a wheelbarrow than see you leave here hungry,” says Godfry, laughing. Italian hospitality standards certainly play into the largesse here, but portion size also reflects the business name. Agricultural workers expend a lot of calories, and The Farmer and the Chickpea could legitimately feed farmers in the morning fueling up for a day’s work in the fields, or replenish their energy with a hearty lunch. More likely, though, you’ll be popping by in the morning for coffee and chocolate croissants before work, perhaps, or sharing the options on the brunch board or the enormous sandwiches for lunch. (But if you are a farmer, they could totally feed you, no problem.) If you go, there’s lasagna, fresh salads, soups, pot pies, meatloaf, inventive sandwiches and so forth, but we’d be remiss if we didn’t discuss one of the signature dishes, one that sells out consistently at farmers’ markets: the roasted parmesan chickpea bake. Imagine a very thick crust made of just three ingredients:

mashed chickpeas, Parmesan cheese and olive oil. It’s then topped with a rotating cast of characters (i.e., veggies), depending on what’s going on; at my visit, it was topped with kale, Parmesan cheese and very red, fresh tomatoes. This versatile gluten-free base definitely requires a knife and fork, and it’s unique and delicious. The modus operandi with this duo seems to be “don’t think, just do”—Stratton says she doesn’t “plan stuff out with spreadsheets and stuff.” But she knows what she’s doing, and it’s not to say the team here is so whimsical that all caution and preparation go

out the window. (Someone’s gotta mash those chickpeas.) It’s more about trusting your own ideas and having an awesome team around you to help visualize them. “We never want it to be about us. It’s about the food and the people who work for us, and our customers,” says Stratton. Team effort comes up repeatedly in conversations with both Stratton and Godfry, who operate in a remarkable creative flow—one that’s possible through trust and good communication. As we are talking, I’m hearing about the sand that was dumped in the back of the lot to create “Milkshake Beach” adjacent to their walk-up window, just a few days before. It’s the latest add-on to the business, The Frozen Farmer. Yes, you’ll get milkshakes, but again, there’s nothing run-of-the-mill about them. Instead, they’re “shovel shakes” because you’re at the beach and you need a shovel to dig into them. A simple straw will not suffice. And by the time this is printed, you can guarantee other things that neither of them have thought of yet will have surfaced in this expansive space. That’s because The Farmer and the Chickpea is the direct


result of the generosity of its owners and the team they’ve assembled, and the community that makes it possible—the farmers, purveyors and any veggie-curious person who walks through the door wondering what it’s all about, or who’s come back for more. It’s a freewheeling creative space where you’ll receive a great meal full of veggies and simple ingredients. It’s not fast, but it’s definitely casual. It’s an experience to savor.

Some of Luciano Burriesci’s earliest and most cherished memories are from his days spent as a child in the kitchen of his father Sal’s restaurant. As a youngster, Burriesci and his brother, Stephen, would stand on upside-down tomato cans so they could reach the sink to help wash dishes. It was never something that they were asked to do, but something they wanted to do. Burriesci grew up with the idea that you are always there for family, and helping in the kitchen was just that. But restaurants have long hours, and by the time his father would get home, the family might find themselves eating dinner at midnight. The time on the clock never mattered as much as the fact that they were together having a meal. The recipe Burriesci is sharing here was one of his favorites growing up. He remembers his father would grill up some lamb chops with garlic and oil and his mom would prepare some pasta with bread crumbs and broccoli rabe. (It should be noted that the bread crumbs were made from homemade bread and that same tradition holds true in the Burriesci household as well as at Sal’s Pizza. “The bread is made for bread crumbs,” he says.) Sal’s Pizza in Wind Gap is a made-from-scratch kitchen as well as a longtime local favorite. Their slogan says it all: There’s only two places to eat... Sal’s and home. “We are old-school in both kitchens— ours and at Sal’s,” he says. “It is 100 percent us. All the prep is us… it is all made with love because cooking for our immediate family and our customers who have become family is our love language.” His life is indeed full of both cooking and romantic love, as he recently married his longtime sweetheart and next-door neighbor, Alexa Sabatino, in 2020. “The best thing you can do for a person is give them a hug and a kiss and feed them. Grilled Lamb INGREDIENTS 2 racks of lamb Sea salt Black pepper Olive oil

Garlic, sliced Rosemary Oregano

INSTRUCTIONS Slice lamb into lollipops and season with sea salt and black pepper. Grill to medium rare. During the last 30 seconds of cooking, brush each piece of lamb with a mixture of olive oil, sliced garlic, rosemary, oregano and black pepper.

Capellini with Anchovies & Bread Crumbs INGREDIENTS

INSTRUCTIONS

1 bunch broccoli rabe 2 cups bread crumbs 4 Tbsp. olive oil 1 Tbsp. butter ½ cup Pecorino Romano cheese 2 cloves garlic, chopped ½ white onion, chopped 7 anchovies, chopped 1 lb. capellini pasta, cooked al dente Crushed red pepper

Blanch and shock one bunch of broccoli rabe, set aside. Toast bread crumbs in a pan with 1 Tbsp. of olive oil and 1 Tbsp. of butter on low heat until bread crumbs are browned. Turn the heat off and mix in Pecorino Romano cheese. In a separate pan, sauté garlic and white onion with 3 Tbsp. of olive oil.

Once the garlic and onion start to soften, turn the heat off and mix in chopped anchovies. Add in broccoli rabe, one pound of capellini pasta (cooked al dente) and one cup of starchy pasta water. Toss together with half of the toasted bread crumb mixture and more olive oil (as desired). Before serving, top with more bread crumb mixture, Pecorino Romano cheese and crushed red pepper.

Get your rolls and bowls at ChopFin, the new, clean alternative in the fast-casual market. “All ingredients are prepared daily in our kitchen and made to order,” says owner Stephen Kilroy. The Pineapple Express poke bowl comes with sushi-grade salmon and tuna, ChopFin’s seaweed salad, organic edamame and pineapple, topped with unagi sauce and tempura crisps. Everything on the menu is customizable, and the Pineapple Express can be ordered as a sushi burrito or as a poke bowl. “All of our house signatures or create-yourown options are available as a sushi burrito or poke bowl,” says Kiloy.

“The burrito wraps come in either a seaweed wrap or a soy wrap. The bowl bases are sushi rice, organic black rice or spring mix.” To create their own, customers choose from an assortment of fresh veggies, fruits and proteins. “We have more than 40 items every day to choose from and over 15 different sauces.” ChopFin also has a variety of rotating seasonal drink offerings, including Black Cherry Mint, Ginger Pomegranate Blueberry, Pineapple, Mint and Cranberry. 1403 N.
