The year 2020 is one that most of us are eager to put behind us. But as we head into 2021, we could all still probably use a little more comforting. Food, to be exact. As you stay cozied up at home this winter, know that you can depend on our list of 17 local comfort foods that will keep you feeling warm and snug. Ramen, milk rolls, lobster bisque and grilled cheese are just the beginning of this delicious list on pg. 28. It could also be argued that the year 2020 was a bad one for nuptials. The industry took a major beating, and wedding bells stopped ringing for couples all across the country as they grappled with postponing, rescheduling and canceling the happiest day of their lives. At the same time, we saw so many couples proving that love itself
could not be canceled, as they pivoted their plans and opted for microweddings with their absolute nearest and dearest. So when it came time to work on our annual Lehigh Valley Style Weddings edition, this inspired us to focus on the magic of micro-weddings. We enlisted the expertise of our creative friends Alison Conklin and Sarah Petryk, who have devoted their lives to celebrating beautiful weddings—Sarah through her next-level floral stylings and Alison through her coveted photography. Together, they dreamt up the most enchanting photoshoot, on pg. 68, and are sharing why they think micro-weddings may have more pros than cons. (Hint: It’s all in the details!) Dr. Mark Erickson
PRESIDENT OF NORTHAMPTON COMMUNITY COLLEGE
Growing up in a military family, Dr. Mark Erickson learned from a young age the impact that travel and new cultures had on his perception of the world. He would take these early lessons with him throughout his entire career. “I grew up during the civil rights movement of the late ’60s, which has had a profound effect on my commitment to issues of diversity, equity and inclusion,” says Erickson.
During his undergraduate years, Erickson enrolled at Princeton University, later graduating with a 4.0 GPA. “My time at Princeton was all about pushing my own boundaries, exposing me to new possibilities, stretching my thinking and learning how to learn,” says Erickson. It was during his time at Princeton that Erickson met his mentor, assistant dean of students Carl Wartenburg, who would have a profound impact on his career. “He literally changed my life,” says Erickson. “I thought ‘Gosh, I want to do what he does. He’s making an impact on people’s lives.’ So that is what started me down the road to higher education.” After receiving his master’s in education from Harvard University, Erickson spent his career growing in his field, starting as a residence hall director at Framingham State College, becoming the assistant dean of students at the University of South Carolina and later spending 22 years
working six different positions at Lehigh University before becoming president of Wittenberg University. “I have never really looked back,” says Erickson. “I have had the good fortune of spending pretty much my entire career— spanning several decades, in academia, on both the public and private sides—working in nearly every sector of higher education.” Erickson, who has now spent the last eight and a half years of his life as president of Northampton Community College, understands the innovative and impactful education that a community college has to offer. “Community colleges are truly at the nexus of higher education,” he says. “And what community colleges do best—providing educational access, fostering entrepreneurship and stimulating economic development—is exactly where a large part of the discussion about higher education is focused right now, especially as we begin to think about a post-pandemic world.”

Tell us about what initially inspired you to open Ebert Furniture Gallery. After spending a decade working in the home furnishings industry, I felt there was a need for a store that provided a higher level of goods and services but that was also a value. On one end, the Lehigh Valley consumer had to choose from low-quality imports at the big-box stores as well as established furniture stores that had traded down to compete with the big boxes. On the other end, the consumer had small interior design shops with overpriced products that also lacked the capacity to deliver and service those products. The majority of our interior design service is provided by Carolyn Crew, who has been our principal designer since we opened in 2004. Carolyn has a design degree from Drexel University as well as over 25 years’ experience in the design field. We offer full-service interior design and color consultation complete with floor plans. The design service is offered on location in your home or business as well as in our showroom. This service is fully customizable to achieve the goals of how you wish to utilize the space where
you live or work! The customization is virtually unlimited and we offer reupholstering and refinishing as well. Where can locals find your work in and around the Lehigh Valley? How has your business had to pivot and adjust during the pandemic? We have enhanced cleaning protocols, mandated mask wearing and social distancing is always practiced. Other than the safety measures, we didn’t
change the way we do business. After weathering the mandated three-month shutdown, we reopened the showroom for in-person shopping as well as offering after-hours appointments for those high-risk customers. What are you looking forward to this winter? My wife and I are looking forward to spending the holidays with our six kids as they all head home for their school breaks. I’m also looking forward to seeing our longtime repeat customers who have become friends as they head back out after the quarantine. I always enjoy meeting new people who venture into the store for the first time and learning about them. The interaction with customers is my favorite part of the business and what I missed most during the COVID shutdown. We have been blessed with terrific customers over the years and those relationships are what keep this business interesting and fun. Mandy Marquardt TRACK SPRINT CYCLIST Idleness has never come easy for professional cyclist Mandy Marquardt. Like so many others across the globe, she’s had to adapt to a new normal that was necessitated by the relentless onslaught of the coronavirus pandemic. In her case, that’s meant more time hunkered down on her bike at home in Upper Macungie, and less time traveling from one elite competition to the next. “It’s the first time I’ve been home in six years,” she says. With top-tier races on hold indefinitely, she’s keeping her focus on training as vigorously as she can under social distancing conditions. Of course, Marquardt, a track sprint cyclist who’s an 18-time U.S. National Champion, a three-time American record holder and an Olympic hopeful for the (now 2021) Tokyo Games, has dealt with speed bumps before—and not just in the literal sense. She was 16 years old when she received an unexpected and life-altering diagnosis while undergoing routine testing and bloodwork. “The tests showed I had elevated blood sugar levels,” she explains. Marquardt can

still recall her initial reaction upon being told she had type 1 diabetes: “How do I have diabetes? I’m an athlete.” That was followed by a mix of frustration and uncertainty about what would come next. “I met a doctor who told me I’d never be able to compete in a high level in my sport,” she says. “I thought it was the end for me.” By that time, Marquardt was already several years into a promising cycling career. Born in Mannheim, Germany, in 1991, Marquardt moved with her mother and father to Plantation, Florida, when she was six years old. Her parents were both athletic and encouraged Marquardt to be active. Early on, she tried swimming and tennis—she even toyed with the idea of seeking out a professional career in the latter. Cycling was nothing more than a minor blip on her radar until she decided she wanted to up her pedaling prowess to compete in a triathlon around the age of 11. Suddenly, the young athlete had found a new niche. “I kind of left everything else behind,” she says.

“It’s definitely possible to live a normal life,” she says. “You just have to manage the condition.”
Luckily, she wouldn’t have to travel far to hone her craft; the Brian Piccolo Park Velodrome was near her family’s home in Florida, and it was there that training for Marquardt’s competitive career began. In 2003, she competed at the U.S. Junior Women’s 10–12 Road National Championships and took home two gold medals (criterium and time trial) and a silver (road race). Four years later, Marquardt moved back to Germany to live with her father. She continued to compete in endurance road and track cycling events. It was while she was living in Germany that she was told she had type 1 diabetes; postdiagnosis, Marquardt had to rethink her entire routine, both off and on her bike. “It was so tough. I would go through denial periods,” she says. “It makes you grow up quickly.” Type 1 diabetes is a condition in which the pancreas produces little or no insulin, which is a hormone needed to help blood sugar enter the body’s cells, where it can be used for energy. Without insulin, blood sugar can’t get into those cells and instead builds up in the bloodstream. According to

the Centers for Disease Control and Prevention, type 1 diabetes is much less common than type 2; about 5–10 percent of people with diabetes have type 1. It’s a chronic condition, and there’s no cure. It can only be managed by lifestyle changes. “It was a lot of trial and error,” says Marquardt, of her initial struggle to balance her new medical needs with a demanding training schedule. And that’s because, she explains, it’s not just about what you eat and drink. So many outside factors can impact blood sugar levels, such as physical exertion, time zone changes and sleep schedules; all things a busy, on-the-go athlete must contend with on a regular basis. Marquardt credits her doctors and her parents with helping to get her through some of the rough patches. And she had the benefit of adding another support system in 2010, when she found her tribe in the cycling world: Team Novo Nordisk is the first professional cycling team made up entirely of riders living with type 1 diabetes. “It was incredible when I first met them,” says Marquardt. “It was like, ‘Oh my God, I’m not alone. There are so many other people.’” The team aims to educate and inspire others living with type 1 diabetes, which is a cause that resonates deeply with Marquardt. “It’s definitely possible to live a normal life,” she says. “You just have to manage the condition.” The Lehigh Valley chapter of Marquardt’s life began in earnest in 2010, when she enrolled at Penn State Lehigh Valley. Marquardt had spent time in the region previously for competitions at the Valley Preferred Cycling Center in Trexlertown. She says she always found it appealing; parts of it reminded her of Germany. She raced collegiately for Penn State Lehigh Valley and began working with coach Andrew Harris of Edge Cycling, who helped her arrive at the decision to make the transition from endurance to sprint cycling. “I made the switch because my endurance career wasn’t excelling and I always preferred

shorter events,” she says. “After some testing, Coach Andrew identified that my strength and capabilities were better suited for sprint.” Marquardt says after graduating from Penn State in 2014, the decision to stick around the Lehigh Valley was an easy one. “Why am I going to leave? I have a coach; I have a team.” She also had a special someone in her life: her now-fiancé, Jamie Alvord, a former pro cyclist himself who still rides recreationally and helps Marquardt train, and training is something she does a lot of, pandemic or not. “It’s pretty much year-round,” she says. She’s at it six days a week, for up to 35 hours, and then there are recovery/maintenance must-haves like massages, physical therapy, sports psychology and chiropractor visits that also must be made a priority. “Everything I do revolves around my sport. It’s hard to do anything else,” Marquardt says. But the nose-to-the-grindstone approach is paying off—beyond her achievements on the track, she’s snagged sponsorships with Factory in Bethlehem, Texas-based Mammoth Creameries (a keto-friendly ice cream brand co-founded by a man with type 1 diabetes) and nutritional supplement company Klean Athlete, just to name a few.

She does still find time, though, to share her inspiring story of perseverance with others. In June of 2020, it was announced that Marquardt was partnering with St. Luke’s University Health Network to help promote diabetes awareness, women’s sport and a healthy, active fit lifestyle. As a St. Luke’s Sports Ambassador, she has a voice in the local diabetes community, and she intends to use it. “I think it’s important to be that example and show them that it’s nothing to be ashamed about,” she says. “Keep following your passion. This winter, kick your hot cocoa up a notch! Enjoy a cup of delectable hot chocolate spiked with Franklin Hill Vineyards’ black cherry Fainting Goat wine and topped with whipped cream. “Chocolate and wine are a match made in heaven,” says owner Elaine Pivinski. The spiked hot chocolate is available at all Franklin Hill locations during the winter months, “or on extra-chilly fall days when we all could use a nice cup of hot chocolate,” says Pivinski. They love mixing their wines with different drinks, and Pivinski notes they sometimes add spirits from Social Still, which is owned and operated by her son, Adam Flatt. Their choreographed first dance to Ray LaMontagne’s “You Are The Best Thing” thrilled guests with dips and turns, and shortly after, Nicole changed into outfit number two with a hairstyle change to match. JULY 18, 2020 HO W I T S TA R T E D From eighth-grade science class to senior prom and a LDR spanning their college years, Lauren Almonte and Khalil Johnson orbited each other inexorably until Khalil won her hand with an elaborate scheme to propose on a wooded trail surrounded by their families.
T HE B IG D AY Two years’ worth of perfect plans went out the window when COVID hit, but they chose to seize the day. Living in California, they turned the trip across country from a single day’s travel to a safer road trip. Their micro fairy-tale wedding in the Pocono mountains accommodated a blended family with a bilingual ceremony, and boxed to-go dinners made feasting safe as well as special. Despite the tweaks, the soul of the event was unchanged, and Khalil and Lauren danced their first dance to the same song they swayed to at senior prom, thankful for such a beautiful experience in the midst of tragic times.

When the couple was strolling to Bethlehem’s VegFest one day, Alex’s talk of her dream wedding sparked an unexpected response. “Well, if we’re going to talk about our wedding,” Rob replied, “we have to get engaged first.” She looked back to find him on one knee.
T HE B IG D AY What had been a guest list of 145 people was adjusted to an intimate lakeside wedding of 12. A custom-made dress included lace from Alex’s mother’s wedding dress, and Rob’s bespoke suit held their wedding date embroidered in the collar. The script for their ceremony was written by Rob and Alex, and there wasn’t a dry eye in attendance—including the photographers! Guests enjoyed charcuterie and champagne, and a first dance to “I Wanna Grow Old With You.” In true pandemic fashion, the couple later included family and friends with a Zoom call.

AUGUST 27, 2020 HO W I T S TA R T E D Madeline Zurn and Keith Holtermann met at a bar, where Madeline made the first move and Keith ran with it, planning the next date before the first was over. The private proposal plan (Madeline is an ugly crier) was coffee, flowers and a ring Sunday morning, but when the florist texted Saturday night to confirm, Keith couldn’t wait any longer.
T HE B IG D AY Their April wedding was pushed to January, but as the pandemic kept raging, they decided a microwedding was right for them. Inspired by the “just because” bouquets Keith wooed her with, they created a lush garden in front of their Downtown Easton home, a natural oasis in an urban setting. Embracing lockdown life, it felt appropriate to elope there, just the two of them, their dog, Seamus, and their cake made of cheese. A someday wedding with family lies ahead, but in the meantime, their union is what matters most.

SEPTEMBER 14, 2019 HO W I T S TA R T E D After falling for each other at a CrossFit gym, Chi Chi and Chelsea Nieves of Blandon decided to take on a partnered fitness competition together. Chi Chi had planned for friends and family to come watch, and they surprised Chelsea after the last event with T-shirts that said “Will you marry Chi Chi?”
T HE B IG D AY The two set their “destination” wedding in the backyard of a house rented beside sparkling Lake Naomi in the Poconos, bringing a U-Haul of handmade décor for their luxurious five-day stay. On the big day, a Panera-catered breakfast accompanied pleasant preparation, and the wafting smell of brisket being smoked on-site got guests’ mouths watering. After a short and sweet ceremony, heartfelt speeches carried the glowing couple into a reception of nonstop dancing and food that wowed even the chefs in the family—a day of effortless, beautiful fun!

They were staying at the Omni Resort of Bedford Springs when Tim surprised Melyssa in the hotel room with a proposal. Champagne followed, and a call to share the wonderful news with family.
T HE B IG D AY Theirs was one of the first weddings to be celebrated at the Easton Wine Project at the Simon Silk Mill, a small venue perfect for their intimate ceremony. A ring warming station allowed guests to bless their rings before being seated to hear vows the couple had written themselves. A photo interlude in Downtown Easton before the reception included their favorite mural. At the reception, a special dollar dance gave the couple a chance to speak with each guest, donating all of the proceeds. Doughnuts, cupcakes and a Pittsburgh cookie table took the place of a traditional cake, satisfying guests with decadent variety.
