Over the years, we’ve pretty heavily covered the many ways to get outdoors in the Lehigh Valley, from stand-up paddle boarding, to glamping, to river tours. But we’ve always focused on ways to celebrate the region’s outdoor activities when the weather is its most welcoming. This winter, you may feel tempted to stay curled up inside, but there’s so much beauty to explore and fun to be had. And with eternal goals for a healthier new year, we’ve rounded up all the ways to get you out of your comfort zone and keep your fitness flourishing! Find out where you can snowshoe, cross-country ski, ice fish and more this season on pg. 26. And don’t miss our 2022 edition of Lehigh Valley Style Weddings. I plan on spending my time at Valley Wellness Center! They have so many activities that I have no plans of hibernating.
I actually prefer running outside in colder weather than during the summer months. There is no heat and humidity to contend with, and there’s just something special about a quiet winter morning that makes me want to be outside. But if there’s snow on the ground, forget it! I love cooler weather and winter never disappoints. To stay active when the air stings the skin, you might find me skiing, hiking or shoveling snow from our driveway.

I tend to stay cuddled up inside during the cold months, but I keep my mind active by reading a good book or learning a new hobby! Last year, I took up candle-making.
For me, it’s all about taking those long walks with my dogs and getting out to enjoy the cold crisp air.
Getting overheated on a strenuous hike and shedding layers is a great feeling on a cold winter day!

MATTHEW CANNON Contributing Photographer While setting up for the Eat This photoshoot, I accidentally dropped one of my very small lighting accessories into my camera bag. I reached in and grabbed the item and, upon pulling it out, bam! Much to my surprise, the magnets on the accessory latched onto another item in my bag, and the sharp metal corner of that accessory hit me square in the lip! With a napkin in my mouth to suppress the bleeding, I finished the photoshoot. I was fortunately healed up enough by the end to taste the loaded yam fries, which were incredibly delectable—and I will always remember how strong those magnets are.

Thalia Irizarry and Duane Randolph launched Rampage Co. last September as a way for locals to get their aggression out. “We are free-spirited souls,” they say. “What better way to release some rage and heighten those feel-good endorphins than in your very own safe and private rage session?” The pair cultivates a judgementfree zone, providing customers with helmets, face shields, ear protection, eye protection and disposable coveralls as well as cutresistant gloves. There’s an experience for everyone, with packages ranging from five minutes in Baby Rage, to 10 minutes in Everyday Rage, to a 25-minute group session in Rampage.

Bitty and Beau’s Coffee has created a path for people with disabilities to become more valued, accepted and included in their communities. “This journey has surpassed every expectation we had and has brought us so much joy,” says co-founder Amy Wright. “We’re thrilled to be opening shops all over the country, creating more jobs for more people with disabilities and giving our guests a glimpse at what’s possible.” Wright says from the moment they announced that they were opening a shop in Bethlehem, they’ve experienced an outpouring of support and the shop has been packed daily. “We plan to open shops in every state across the country and eventually in countries across the globe.” 74 W. After realizing that her six-year-old son, Jace, was more likely to eat his food if she made it look “pretty,” Arielle Ammary was inspired to start delivering her beautiful charcuterie creations to the Lehigh Valley with Beyond the Board. “No two boards look the same because they are always created using an in-the-moment vision,” says Ammary. Every creation is made on the same day as delivery, so products are as fresh as they can get. Options range from $12 personal mini-creations to larger boards that start at $125. Ammary calls grazing tables the new and improved way to cater and recommends them for intimate celebrations of 20 or more. beyondtheboardlv.com LEHIGHVALLE YST YLE.COM : JANUARY 2022

Laurie Gostley Hackett didn’t always know that she was destined for a career in philanthropy and community relations, but says she loves every single second of it and feels incredibly lucky to have found a career with Air Products that is a perfect fit with her personality, work style, competencies and interests. “The opportunity to represent the company and be fully engaged in the community is unique and rewarding,” she says. “There are so many creative and strategic partnerships and programs that connect the higher purpose of Air Products with the needs of our community. And what an honor it is to work with so many dedicated business,
community and nonprofit leaders to solve the problems that face the Lehigh Valley.” A recent initiative for the company is the Air Products Fresh Food Promise in partnership with United Way. “Our goal is to expand access to healthy food for thousands of local kids, families and older adults,” she says. “One out of 10 families do not have reliable access to affordable, healthy food and may not know when or where they’ll get their next meal. We all believe that no one should wonder where their next meal is coming from and families should not have to worry about food insecurity.” Gostley Hackett says this community is very special and she believes people feel a deep responsibility to roll up their sleeves and serve.

“The call to action and sincere engagement by volunteers throughout the Lehigh Valley is truly inspiring,” she says. Still, there’s more to be done. “Our community needs you and there are so many ways to serve. The key is to find an agency with a mission and purpose that matches your own.” Gostley Hackett serves on many boards and dedicates her time to Miller-Keystone Blood Center, Greater Easton Development Partnership, the Greater Lehigh Valley Chamber of Commerce’s Diversity, Equity and Inclusion Collaborative, IronPigs Charities and Phantoms Charities. THE TASTE SMOKERS
Photos by Touch of Heart Photography
The Taste Smokers has been operating as a food truck since October 2018 and, despite the pandemic testing and nearly debilitating their business, Veronica and Quartez (“Q”) Moore took a leap of faith when the Community Action Committee of the Lehigh Valley approached them about their commercial leasing program. “We worked hard to get to where we are now,” says Veronica. “Q put in long hard days, sometimes doing so alone, to ensure that no matter the obstacle, The Taste Smokers would prevail.” They credit their amazing team with the restaurant’s success and hope to serve as an incubator for others looking to get into the food industry or to explore entrepreneurship. “We are creatives at heart. We want patrons to walk into the space and know they are in for an experience, not just a good meal,” says Veronica. “We want people to feel inspired by our space through the collaboration of visual, audible and food art.” Promising the best smoked meats available, all of the food is made with love and attention to detail. Fan favorites include their brisket, dry-rub smoked ribs, GourMaQ & cheese, smoked salmon and Watcher’s baked beans. 318 E. 3rd St., Bethlehem | thetastesmokers.com

The Knitter’s Edge
Shop, take a class, attend an event or just hang out at The Knitter’s Edge in Bethlehem! All levels are welcome and are encouraged to give knitting, crocheting or weaving a try.
AMANDA EVANS & JOANNE TURCOTTE Owners
Amanda Evans, pictured, owns the shop with her mother, JoAnne Turcotte.
Tell us about the products/ merchandise sold at the shop. The Knitter’s Edge sells a wide variety of yarns, knitting needles, crochet hooks, notions, accessories, knitting bags and more. We strive to have something for everyone’s budget and needs. One benefit of being a mother-daughter team is that we often view yarns or patterns differently; this leads to the shop carrying a broader selection of products. Our staff is always happy to assist customers in finding the perfect materials for their project—or the perfect pattern for their yarn. The shop has thousands of handknitted and crocheted samples on display, so it’s easy to get inspired and see how that sweater or hat will fit. We have finished garments for nearly every single yarn; our customers always know how a yarn will look and feel before they leave the shop. Is there something that readers may be surprised to hear that you offer? Many may not know that we also offer weaving classes and sell rigid heddle looms. These are great portable weaving looms meant to be used at a table or on a stand in the living room. Many knitters and crocheters think of
16
JANUARY 2022 : LEHIGHVALLE YST YLE.COM
these as fun toys to play with. Weaving on a rigid heddle loom uses the same yarns as knitting and crochet, plus you can make a scarf or shawl very quickly. Weaving is incredibly forgiving, so it’s another great way to tiptoe into the fiber arts. Describe the variety of daily classes offered. The Knitter’s Edge currently offers more than 20 classes every week. Most of our classes are open-ended, meaning anyone can work on almost anything they desire and get assistance from our teachers along the way. There are several that are strictly knitting or strictly crochet, but for the most part they encompass both crafts. Beginners are started with the “Knitting 101” and “Crochet 101” folders, which contain several free patterns, tutorials and project recommendations that build in difficulty. While the suggested projects are great because they help students grow without becoming overwhelmed by too many new techniques, we always encourage students to make what excites them. What do you think people enjoy most about the classes? The camaraderie and social aspect, all while getting assistance on your knitting or crochet project! Our customers have created an amazing community to share the craft, life
and support for one another. The Knitter’s Edge is like a family! For only $10 per session, people find a lot of value in the two-hour class sessions. While we are currently asking students to sign up, we don’t charge until you come to class; plus, you can sign up for as many—or as few—as you like! What’s the overall vibe like at the store? It’s a hangout spot for so many. Before the pandemic, there was always food and drinks to share, and many classes brought wine on a regular basis. The energy is inspiring and welcoming; our staff and customers make The Knitter’s Edge a fun place to be! We welcome all people from all walks of life. What are you looking forward to as we head into 2022? As we come out of the pandemic, we look forward to expanding our class offerings to include children’s classes, specific technique sessions and
programs with outside teachers. We also hope to hold more events, such as “Yarn Tastings,” which are kind of like wine tastings—you get to sample the yarn and, of course, there’s wine! We also have several events with other local businesses and artisans, such as pop-up shops, in the works. January is officially “Knit for Me” month, and we’re planning a “Spoil Me” event because we all need some serious self-care after the holidays. What advice do you have for someone looking to take up knitting or crochet? Come on in! We’d be delighted to get you started. Handson assistance, especially at the beginning, is extremely important. There are so many projects that can be done with just one stitch, so you can add to your “stitch repertoire” at your own pace. Our staff is always happy to help you with a dropped stitch or with selecting a new project appropriate for your skill level. Our list of weekly classes can be found on our website.
What do you like about being located in Bethlehem? I grew up in Bethlehem, so this is home! We love the area, so close to downtown, but far enough away that we have our own parking lot. This area is so rich in history and culture, and much of that history includes knitting. We do a lot of outreach with our “Community Knitters” for local charities and donate year-round—whether that’s knitted and crocheted hats for the babies in the hospital, hats for local schools in the #HatNotHate movement or scarves and hats for local homeless shelters. The Knitter’s Edge is also a drop-off point for the Animal Food Bank of the Lehigh Valley and we organize our yearly collection of personal care items for the local soup kitchens to distribute. We’re always looking for new ways to give back to the local community that we know and love. 1601 W. Broad St., Bethlehem 610.419.9276 | theknittersedge.com

Self-Care
RESET DIXIE LINCOLN-NICHOLS Founder & CEO, Inside Outer Beauty Market dixielincolnnichols.com
Self-care connoisseur and beauty entrepreneur Dixie Lincoln-Nichols is adept at coaching clients in how to find their most fulfilling lives. Here’s her input on using the turning of a new year towards the tending of a healthier, happier you.
RECONSIDER RESOLUTIONS
Does the tradition of starting a new year with self-improving resolutions ever feel like a recipe for punishing disappointment? “I don’t subscribe to resolutions at all for that reason,” LincolnNichols says. “They’re trendy as opposed to long-term and intentional, and they fall by the wayside within two or three months.” Instead of biting off the whole year to come, she advises setting intentions on a manageable scale: daily, weekly and maybe monthly. Small increments and a repeated return to intention help stave off the intimidation of bigpicture goals, which can feel like all or, very quickly, nothing. “Decide you’ll stick to something for a week, then add another, and another. Those small steps add up.”
Eight years ago, Dixie quit her job and embarked on a self-care sabbatical.
LEHIGHVALLE YST YLE.COM : JANUARY 2022
19
ASK THE EXPERT Lincoln-Nichols is also a fan of the accountability inherent in shared challenges. Social media is replete with seven- to 30-day challenges, which can help you build the habits you’re aspiring toward.
PILLARS OF SELF-CARE
Lincoln-Nichols uses a system of six pillars of self-care with clients to identify the areas of life in most need of attention. These are sustenance, relationship, finances, recreation, purpose and restorative practices. You may be eating well, keeping fit and happy in your relationships and work, but are you carving out enough time for fun?
PILLARS OF
SELF-CARE Sustenance Relationship Finances Recreation Purpose Restorative Practices
Keep cozy and stay informed with
“We need to start with being honest with ourselves about what we need,” she says. We often know this all too well. Whether we’re willing to tend to it is another matter. “Selfcare is anything you do to optimize mind, body or spirit, and no self-care act is better than the other.”
Getting ready to say, “I do?” It’s time to talk finances. Try a shiny new joint checking account on for size. GOLD Medal Checking1 is the perfect fit for combining finances. 1 Credit union eligibility and Membership are required prior to opening an account. To maintain eligibility for a GOLD Medal Checking account, Members must have a minimum of $850 per month in deposits, $750 per month in withdrawals, and an active GOLD Debit or Credit Card. If the account does not meet these requirements for six consecutive monthly statement periods, the account will be converted to the GOLD Standard Checking account by the end of the seventh monthly statement period. Fees could reduce earnings; see fee schedule. See credit union for additional terms and conditions.
THE LENS OF SELF-CARE
“I used to have anxiety around finances,” Lincoln-Nichols says. “I learned that I was looking at finances through a lens of scarcity, where fear about not having enough to get by was causing anxiety.” Whether it’s getting in shape, budgeting or finally starting therapy, fear and shame about where we’re starting from makes it harder to proceed. “When you think of it as self-care,” she says, “it makes a difference.” Anxiety about money disrupts our hormonal flow and increases cortisol, just like all stress, and learning to manage it allows us to feel better and ease tension. Starting a budget could have the same kind intention behind it as running a bubble bath! See if this perspective makes it easier to look honestly at what you want to explore.

As the world around us has shed its foliage and gone into a dormant stage, we can take some tips on our own energy. “Our bodies are more in tune with the season than we know,” Lincoln-Nichols says. “We try to fight nature, while what our bodies want to do in winter is to sink, root and ground. It’s a time of winding down, finishing the year well, but not adding stress, not beating ourselves up,” Lincoln-Nichols says. “Reflect on what you’ve accomplished and not accomplished, celebrate the wins, know that you get to try again.” Slowing down and resting doesn’t always come easily in our culture, but it’s a valuable practice to cultivate energy for spring and begin to sow the seeds of our next endeavors.
GOOD-TIME GOALS
“Joy is something that we all deserve,” Lincoln-Nichols asserts. And we don’t have to earn it. It’s great for our health and wellness to laugh, smile and explore. “We need to revisit the way we were as children, excited on a cellular level.” So, consider intentions to take a trip, a staycation, a new hobby. “I decided to learn to ride a motorbike,” Lincoln-Nichols says. “It brought up a lot of fear, but it was so much fun. Something I’m going to learn to do this year is jump rope.” Find things you’ve always wanted to do, or want to do more of, and treat them like the integral part of life that they are!
RITUALS
Be it a morning habit of journaling with tea, a family trip every year to the Outer Banks, a weekly qigong class or a monthly dinner date with friends, designing these activities with intention and calling them rituals turns what might simply be a schedule into self-care. “It’s good to have those things that you look forward to every day, week, every year,” Lincoln-Nichols says. “I am constantly looking forward to something!” Reminding ourselves that we choose these practices and events for our well-being makes it natural to see them as something to savor, enjoy and luxuriate in with mindful attention. Try this mindset on for size in the new year and see if it brings greater ease and fulfillment.

INSIGHT
BY AMY UNGER | PHOTOGRAPHY BY ANDREW TOMASINO
Ed Rabinowitz knew he’d be going down a rabbit hole when he decided more than 40 years ago to find out more information about his birth parents. But he had no idea just how confounding his journey would be. “It was a lot of dead ends,” he says. Still, he put in the work, and now this teacher and author not only has answers to many of the questions that puzzled him for decades, he also has an incredible story to tell. Rabinowitz says he found out he was adopted when he was around 10 or 11 years old. At the time, he was living in an apartment building in the Bronx with his parents, Sarah and Sy Rabinowitz, and his younger sister, Shelley. Sarah had confided in another mother in the building about the adoption. When Sarah learned that the family’s “secret” had been repeated to someone else, she worried that the revelation eventually would make its way to the ears of an unsuspecting, young Ed, so she and her husband decided to deliver the news themselves. Ed took it remarkably well. “I couldn’t wait to tell my friends,” he recalls. “[I thought] this is neat, this is cool.” Although the discovery didn’t incite any feelings of rancor, it did compel Rabinowitz to try to learn more about his biological roots.
Rabinowitz is also an adjunct communications professor at Lehigh Carbon Community College and Penn State Lehigh Valley.

Initially, it was a mission carried out somewhat in secret; Rabinowitz says his mother felt hurt and somewhat betrayed by his curiosity. “It was like a slap in the face [to her],” Rabinowitz says. Also complicating the search: Rabinowitz began playing the part of private investigator in the late 1960s and early ’70s, long before at-home DNA kits, Google searches and ancestry.com would make it a lot easier to do any kind of amateur sleuthing into one’s past. His father, though, tried to be helpful and told him the names of the two people who he believed to be Ed’s birth parents. Those names seemed to check out with information Rabinowitz later found in the “baby book” (records from the maternity ward) at the hospital in Liberty, New York, where he was born in 1952. But, alas, Rabinowitz would later learn the names weren’t quite right. “I spent 10, 12 years looking for people who didn’t exist,” he says. But at the age of 28, he was chasing down a fresh lead. An article he wrote about his quest that was published in a newspaper in the Catskills ended up in Sarah’s hands.
She relented and gave him the name of the man who she believed was his birth father. Finally, about six years ago, Rabinowitz began to make real connections and started communicating with three women he thought were blood relatives: two nieces and a half sister on his biological father’s side.
I spent 10, 12 years looking for people who didn’t exist.
From them, he learned more about the somewhat shady character they all had in common on their family tree; Rabinowitz says he likely was a member of the Jewish mafia and died a mysterious death at the age of 48. In 2018, one of the nieces suggested they take a DNA test from 23andMe to prove they were truly related. They did. And—here comes another plot twist—it turns out, they didn’t share a blood relative after all. Just
like that, Rabinowitz was back at square one. And yet, while the test results seemingly snuffed out one fledgling family tree, it planted the seed for another: Rabinowitz’s report from 23andMe confirmed a half sister, Linda. When he connected with her, she told him she had a full brother—Larry— meaning Rabinowitz had at least one other half sibling. “That started the avalanche,” he says. “It seemed like every other week, more dominoes were falling into place.” After Skyping with Linda and Larry, he arranged to meet when Larry and his wife would be traveling on the East Coast. Rabinowitz says he expected the meet-and-greet to be brief; instead, the two spent five hours together, swapping stories and getting to know one another. “At that moment, I thought, ‘OK, this is great,’” Rabinowitz recalls. “This is what I found. I figured that was the end of it.” It wasn’t. The next relative to emerge on his radar was an aunt, the sister of his biological father. She was able to fill in many of the gaps in Rabinowitz’s personal origin story. He learned that, at the time of his birth, LEHIGHVALLE YST YLE.COM : JANUARY 2022

his mother and father were married to other people; Rabinowitz believes, for this reason, they may have altered the names they provided at the hospital. “So, I suppose my natural parents just flipped the names as a way to hide who they were, since neither had finalized their respective divorces yet,” he says. These were the names that appeared in the “baby book,” and the names given to him by his adopted father. Then, his newly found aunt dropped another major piece of information on him: three years after Rabinowitz was born, his biological parents did marry each other and have another child—a boy named Richard. Rabinowitz had a full sibling. Eventually, the two made contact. “He was shocked,” says Rabinowitz. “He was kind of confused and
angry that he had a brother out there that he was never told about.” The two started bonding and building a relationship via Facebook Messenger, Skype and phone calls. “We kind of got into a routine where we would talk every Sunday morning for an hour,” says Rabinowitz. They met face-toface for the first time in March of 2019. Rabinowitz has now connected with a total of seven siblings (one full sibling and six half siblings) who range in age from 45 to 72. The fact that his quest to find his birth family had all the drama and twists and turns of a gripping page-turner wasn’t lost on him. Rabinowitz, a freelance writer and adjunct communications professor at Lehigh Carbon Community College and Penn State Lehigh Valley, already had two books under his belt: The Road to a Record, the story of a record-setting win streak by Northampton Community College’s women’s softball team, and One More Dance, the real-life story of a couple’s battle against brain cancer. But Bloodline would be his first novel. He describes it as a history-based, characterdriven depiction of not just his story as an adoptee doing a deep dive into his past, but also the personal histories of his seven siblings. “It’s 90 to 95 percent true,” he says. The names of his siblings have been changed in the book, but many of the personal tragedies described—tales of infidelity, sexual molestation, heartache, divorce and death—happened to them in real life. Rabinowitz finished writing Bloodline in April of 2020 and self-published the book through Amazon. Rabinowitz, of Bangor, is married with two grown daughters and four grandchildren. His biological parents and adopted parents are all deceased. He never had the opportunity to meet his birth parents, which he describes as disappointing. But even now, the “new” family that Rabinowitz has cobbled together continues to grow. He still gets emails stemming from his initial 23andMe search about potential relatives. Recently, he connected with some cousins on his birth mother’s side. And so, the family tree continues to bear new fruit. “It’s instant family,” says Rabinowitz. It’s also a lot of new birthdays to remember. “I keep Hallmark in business,” he says.

GET OUTDOORS
BY AMY UNGER
When the weather outside is frightful… spending time with Mother Nature can still be delightful! Should you attempt to slog through a 5K in a blizzard, or traverse a frozen trail after dark? (Oh, how we miss those later sunsets!) Of course not. Safety first! But just because the warm, welcoming days of spring and summer seem far away doesn’t mean you should hunker down until sweater weather is in the rearview mirror. Here are some ways to keep your fitness goals on track during the winter months, and maybe even have a little fun while you’re doing it.
ICE SKATING Indoor rinks have made it possible to channel your inner skating diva any time of year, but if unpacking your wooly hats and gloves during swimsuit season seems like too much of a hassle, there’s no shame in waiting until wintertime to hit the ice. The Lehigh Valley has options both indoor (The Rink in Whitehall, Steel Ice Center in Bethlehem) and outdoor (Earl E. Schaffer Bethlehem Municipal Ice Rink). If you’re going old school and trying out a frozen pond or waterway near you, such as Lake Nockamixon in Bucks County, remember to test the thickness of the ice before venturing out on it. The PA Department of Conservation and Natural Resources says ice should be at least four inches thick if you’re skating solo, or seven inches if you’re bringing along some buddies.
Snowshoers can burn anywhere from 420 to 1,000 calories per hour!
Remember to test the thickness of the ice before venturing out on it.
THE BENEFITS
OF GETTING OUTSIDE IN THE WINTER Soak up that Vitamin D! Cold temperatures or not, getting a little sunlight in your world may be key in avoiding seasonal affective disorder, a type of depression that strikes during the winter months. You may be able to burn more calories in colder weather. Since you’re not contending with the heat and humidity that can make your summertime workouts feel like a drag, you may be able to put in a few extra laps or reps. Exercise may boost your immunity during cold and flu season. According to the Centers for Disease Control and Prevention, just a few minutes of activity a day can help prevent simple bacterial and viral infections.
Snowshoeing
You might feel like a toddler wearing a pair of sneakers that are two sizes too big the first time you strap on a pair of snowshoes and try to make your way across a wintry landscape. But once you get the hang of it, you might enjoy your newfound ability to “float” on the snow— something the snowshoeing veterans call flotation. There’s a serious calorie burn here, too—according to an independent study conducted by the University of Vermont, snowshoers can burn anywhere from 420 to 1,000 calories per hour. Get your feet wet (or snowy) at Promised Land State Park in Pike County. Snowshoes are available for loan from the park office with a photo ID, weekdays from 8:30 a.m. to 3 p.m., as long as there are six inches or more of snow on the ground.

SAFETY TIPS
TO KEEP IN MIND IF YOU’RE VENTURING OUTSIDE
Layer up! A well-thought-out ensemble is your best defense against Mother Nature’s chill. But avoid cotton if you can. Once cotton becomes wet with sweat, the moisture is trapped and will actually make you feel colder. For your first layer, pick something that wicks moisture away, like a high-performance, athletic fabric. From there, you can add a layer of something heavier, like fleece, and finish with a thin, waterproof layer. Know the signs of frostbite and hypothermia. According to the Mayo Clinic, early warning signs of frostbite include numbness, loss of feeling or a stinging sensation. For hypothermia, watch out for intense shivering, slurred speech and fatigue. Get out of the cold and seek medical care if you’re experiencing any of these symptoms. Don’t forget the sunscreen. Just because your flip-flops have been packed away for months doesn’t mean you can’t get a sunburn—especially if you’re exercising in the snow or at a high altitude. The Mayo Clinic recommends wearing a sunscreen that blocks both UVA and UVB rays and a lip balm with sunscreen. Also, protect your eyes from snow and ice glare with dark glasses or goggles. Keep the fluids coming. Harvard Medical School says you are more likely to get dehydrated in cold weather because cold air tamps down thirst. Experts recommend drinking water before, during and after your workout.

Ice Fishing Ice fishing can be just the pick-me-up your mental health needs.
Parking your derriere on a frozen pond for a couple hours might not do much for elevating your heart rate, but ice fishing can be just the pick-me-up your mental health needs—think quiet and tranquility amid a winter wonderland. But remember, any anglers 16 years and older will need a valid fishing license from the state. And checking the thickness of the ice ahead of time is a must. Some spots to try where the fish are (hopefully) biting: Lake Wallenpaupack in Hawley, Deep Creek Lake in Green Lane Park in Montgomery County and Hopewell Lake at French Creek State Park in Berks County.

HAWK MOUNTAIN SANCTUARY

Obviously, it’s not advisable to attempt to traverse a rocky, tree-root-laden trail after any kind of weather event, but if the only thing stopping you from partaking in a wintertime hike (or run or walk) is the frosty temperatures, layer up and get out there! Consider the benefits: chances are, the trails will be much less crowded than in the warmer months, and the views will be different, too. Plus, won’t a steaming hot cup of coffee or cocoa taste even better after you’ve earned that warm-up? Top spots to try: Lehigh County’s Trexler Nature Preserve offers 18 miles of trails. There’s also Hawk Mountain Sanctuary in Berks County, which offers several trails and loops of varying difficulty; and Jacobsburg State Park in Nazareth, with more than 18 miles of trails, including stretches that are approved for mountain biking and horseback riding.

Nothing says wintertime in Pennsylvania quite like keeping a white-knuckle hold on whatever sled or inner tube you dug out of the garage as you careen down a snowcovered hill while the world whizzes by. You might not burn many calories on the way down, but you certainly will on the trudge back up to the top. Of course, if you want to take some of the work out of it, leave it to the professionals: Blue Mountain, Bear Creek and Camelback are just a few of the resorts in the region that offer snow tubing for the whole family.
It’s no secret that the many skiing and snowboarding resorts in the Lehigh Valley and Poconos offer an abundance of downhill trails—from bunny slopes to black diamonds and everything in between. But if you prefer your terrain a little flatter—and your pace a little slower—cross-country skiing might be your winter sport of choice. Places like Beltzville State Park and Lehigh Gorge State Park in Carbon County offer miles of trails. If you’re willing to travel a bit farther, Crystal Lake Ski and Outdoor Center in Sullivan County offers 30 kilometers of trails specifically groomed for cross-country skiers as well as equipment rentals for kids and adults. In terms of winter workouts, this one is hard to beat. Cross-country skiing is a cardio blast as well as a fullbody muscle builder.
GO OUTSIDE YOUR
COMFORT ZONE Ready to wield a broom in a whole new way? The Bucks County Curling Club in Warminster is looking for new members. They play year-round, with new league sessions starting every quarter. Check out the winter scenery in the Poconos like never before from the driver’s seat (or passenger seat) of a UTV (utility task vehicle). Pocono Outdoor Adventure Tours offers one-hour guided tours on the property of Pocono Raceway, which includes wooded trails, a challenge course and a close-up view of The Tricky Triangle itself. Mush! Arctic Paws Dog Sled Tours at the Shawnee Inn and Golf Resort may be the closest you’ll ever get to experiencing the Iditarod. A UTV subs in for a sled if there’s not enough snow on the ground. Bonus: BYOD (yes, Bring Your Own Dog) is an option if your furry friend is a certain Northern breed. No girls allowed? No way. The Lady Patriots operate out of the Bucks and Montgomery County area and are all about introducing girls and women to the world of ice hockey. They offer several teams and programs and welcome all ability levels.

Parmesan Risotto with Chef/Owner Joey Jurkivo
32
JANUARY 2022 : LEHIGHVALLE YST YLE.COM
Chances are, if you already know about the deliciousness of Fiamma Italian Grill, then the chef and owner Joey Jurkivo knows you and your family by name. He knows to ask about your child’s recent soccer game and how your vacation was. “My relationship that I have with my customers is the most important thing and it is the key foundation of my restaurant,” Jurkivo says. “This isn’t a chain restaurant. We adjust our menus seasonally and by knowing what our customers are craving.” At 11 years old, Jurkivo started working as a busboy to help support his mother and two younger brothers. He continued to work hard and, although he had two full-tuition scholarship offers to college by the time he was a senior at Liberty High School, he chose to stay in the restaurant business. (Fun fact: At 14 years old, Jurkivo was a busboy at the same building that he now owns as Fiamma Italian Grill.) Beyond his talents in the kitchen, his work ethic and his genuine care for people, spending just a few minutes chatting with Jurkivo will also reveal his resilience and strength. He has had two kidney transplants, his first being as a 16-year-old, and open-heart surgery in his lifetime. The health struggles in his life have given Jurkivo a beautiful perspective that so many people don’t have. His gratefulness for the blessings in his life is something he loves sharing with everyone.
Whether it is frontline workers he creates family meals for in the midst of a pandemic, charities he is helping fundraise for or simply a family sitting at the table next to the window at his restaurant, Jurkivo shares his food and his inspiring love of life with everyone in his path. “It just makes me so happy to make people happy,” he says. “I could be cooking something as rustic as pasta and meatballs or as fancy as Filet Oscar—as long as it makes people happy, then I feel good.” Here, he is sharing a recipe for his decadent Parmesan Risotto. The creamy, flavorful dish is a favorite on the menu at Fiamma Italian Grill. With sautéed garlic, basil and cream, this dish is one that should definitely be ordered out and recreated at home. Loaded Yam Fries COAL WINERY & KITCHEN
READY TO TRY IT? Tag @lvstylemag and #livelvstyle!
Under the “Starts and Sides” section of Coal Winery & Kitchen’s menu, guests will find several uniquely delectable options. The loaded yam fries, which come with unlimited toppings, including bacon, beef, chicken, sour cream, onions, peanuts and cheese, are a great choice. The menu notes that this dish has limited availability, and according to chef Kofi Armah, that’s because: “In a nutshell, not all yams make good yam fries.” Coal, which serves authentic, contemporary West African fusion and Ghanaian cuisine, imports its yams from

Ghana, but even when they are available, they may not be the ideal type for frying. “Yams are denser but are as crispy as a French fry,” says Armah. “To achieve crispiness, we need yams that have a low water content.” Armah says that yam fries—or fried yams—are a snack served on the streets and in the households of many countries in the West African region, including Ghana. Coal’s loaded rendition of the dish is their own unique twist. While diners can pick and choose which toppings they’d like, Armah says that “The Everything” is the most popular combination ordered.
He recommends pairing the dish with Coal’s house-made zinfandel. “We added a winery on site that makes wine for consumption in the restaurant,” says Armah. “This harvest, we did four different wines: a chardonnay, viognier, riesling and rosé (made from grenache, syrah and merlot).” Guests can look forward to the release of Coal’s 2021 vintage wines as well as a wine club that’s in the works. 81 W. JUST MARRIED
BY DAISY WILLIS
Abigail & Sage EMILY ROEBUCK PHOTOGRAPHY
THE PROPOSAL
Mutual friends brought Abigail Guman and Sage Karam together at a Lehigh/Lafayette tailgate. It wasn’t long before Sage was designing an engagement ring with a Nashville jeweler. At favorite vacation spot OBX, with family physically and FaceTime present, he surprised Abigail with a dreamcome-true proposal.
THE BIG DAY
It was a scorching hot Friday when Abigail and Sage married amid the rolling green hills of a private estate, officiated by Dr. Jarrod Spencer, friend, mentor and sports psychologist for the Philadelphia Flyers and Phantoms. Touches from Sage’s Lebanese heritage enhanced cocktail hour, while the couple’s signature drinks were named for their two doodle pups, Drake and Fetty. Sage’s Road to Indy championship cars and a black-and-white checkered dance floor reflected his racing career, balancing perfectly with the event’s modern, elegant theme. A dream team made it possible, whom the couple adore not just as vendors, but as friends.

Poornika & Tanner LINDSEY FORD PHOTOGRAPHY
THE PROPOSAL
Poornika Kakkanaiah and Tanner Savidge met at Virginia Tech, both members of the marching band. By the end of one December day, Tanner’s gift of an indulgent winery spree saw Poornika nodding off in the car. She awoke at Savidge Farms, with a light-bedecked barn setting the stage for Tanner’s proposal.
THE BIG DAY
With their original plan derailed by COVID-19, Simon Silk Mill provided a convenient wealth of vendors. The micro-gathering feasted on doughnuts, pumpkin cake and mini pies made from scratch by Poornika’s mother. “If the World Was Ending” by JP Saxe and Julia Michaels made for an all-too-fitting first dance! Honoring the couple’s weekly cone tradition, a visit to Owowcow Creamery ended the reception before the party continued at the Grand Eastonian. In a way, the pandemic necessitated a more breathtaking day than they could have imagined, which the couple reprised a year later with the full contingent of guests.

Olivia & Adam RAVEN AND THE WILLOW
THE PROPOSAL
Olivia Brown and Adam Jaindl met at a work event held at Musikfest, but sparks didn’t start to fly until Adam’s persistence paid off with a second meet-up. They got engaged on Christmas Day in 2019.
THE BIG DAY
Romantic blush and white flowers filled the mansion where the couple staged their wedding, touched by the cozy glow of candles and twinkle lights for an intimate fairy-tale feel. Peonies all the way from Alaska made Olivia’s bouquet ambitions a reality, and a portrait of the couple’s pets conveyed the four-legged family’s blessing. A custom wedding crest made the programs, menus and custom cocktail napkins unique, and turkey from Adam’s family farm was shared with guests as a tasty touch at cocktail hour. In spite of the unpredictability of the pandemic, their dream day was perfect, best of all graced with the happy and healthy attendance of their dearest friends and family.

Chris & Mykal PETRA SOMERS PHOTOGRAPHY
THE PROPOSAL Chris Keating and Mykal Poole met on a dating app back in August of 2011, and set their first date along the creek in Monocacy Park. Chris proposed on the steps of their first apartment together, while a neighbor leaned over the kneeling groom-to-be to check his mailbox! Mykal returned the favor by proposing right back.
THE BIG DAY
The wedding party prepared at Mykal’s mother’s house, where engraved pocket watches were gifted to the couple’s attendants. Due to COVID-19, they took their guest list from 100-plus to a cozy 25, which made their day all the more intimate—and affordable! Homemade fall-themed decorations outfitted McCarthy’s Red Stag Pub, where the couple was married by a close friend/officiant. They danced their first dance to John Legend’s “All of Me” sung live by DJ Vira. Scrumptious Irish cuisine, warm speeches and heartfelt toasts sent the party into a favorite pastime, singing their hearts out with karaoke.

Kerri & Rey HA ZEL LINING PHOTOGRAPHY
THE PROPOSAL
Kerri D’Emilio and Rey Jimenez met at a high school house party over a game of flip cup. On a future Thanksgiving together, what started out as Rey offering a prayer to bless the food turned into a long speech giving thanks for each person at the table, culminating in a proposal to Kerri.
THE BIG DAY
Kerri and Rey planned a moody, farm-chic wedding surrounded by open fields and nature, aiming for inviting, fun and not overly orchestrated, staying in a nearby hotel to give their weekend the feel of a destination wedding. Kerri tackled the seating chart, mirrored welcome sign and invites with a Cricut, staining the paper herself and adding a wax seal. What was supposed to be a backyard barbecue vibe complete with pulled pork, ribs and brisket was drenched beyond recognition by torrential rain, but while the weather put a damper on the day, dramatic photos made for a beautiful silver lining.

Tia & Brendan ELLE STUDIOS
THE PROPOSAL
Brendan Cunningham and Tia Jones found a bright side to social distancing during the pandemic, meeting each other over Instagram interactions. They were engaged at Asbury Park in New Jersey after just two months of dating.
THE BIG DAY
The couple chose an auspicious day for their wedding, the birthday of both Brendan’s mother and Tia’s late father as well as being Memorial Day to honor her father’s career in the USAF. A sweet first look with Tia’s 12-year-old son, Battle, set him up to walk her down the aisle, where he was the one to give her away. Celebrity officiant Reverend Roxy led a ceremony full of laughter and tears, and “Taps” played in memory of Tia’s father ensured there wasn’t a dry eye in sight. As a stylist in the industry for 13 years, it was Tia’s turn in the spotlight, enlisting her favorite vendors to celebrate her own love story!

INSIDE OUR WEDDING EDITOR’S
Lehigh Valley Wedding BY KRISTEN WAGNER | ALISON CONKLIN PHOTOGRAPHY As editor of Lehigh Valley Style and Lehigh Valley Style Weddings, I’ve spent years reviewing hundreds of local wedding submissions and working with countless regional vendors to curate our annual feature. This past September, I lived out my own happily ever after and married my husband, Will. Here’s an exclusive look inside our special day.
The first thing I did after confirming our venue was book Alisha Nycole & Co.’s team and studio. Her space is so dreamy and is exactly where I envisioned getting ready with my girls.
If you’re on the fence, I would 10/10 recommend doing a first look. It was without a doubt the most special, intimate moment of our whole day. Neither of us could stop crying!
MY SOMETHING BLUE
Can’t say “I do” without you—my nieces and my nephew were my very special “something blue.” I initially asked each of them with a box of blue Josh Early nonpareils!
68 2 0 2 2 : L E H I G H V A L L E Y S T Y L E W E D D I N G S . C O M
We had a very small wedding party, which made the day feel so intimate and extra special. My bridesmaid and maid of honor wore Jenny Yoo dresses in shade “Latte” from Bella Bridesmaids Allentown. Guests could seriously not stop complimenting their gowns!
Will surprised me with a stunning radiant-cut engagement ring from Murphy Jewelers, so we returned there to purchase our wedding bands.
Sarah Petryk of Allium Floral Design created the most magical floral arch for our day. It was the perfect touch to the ceremony scene.
SOMETHING SWEET
Our delicious cake was from Sweet Girlz Bakery and was half cookies & cream and half reverse Oreo.
Guests love a drink suggestion! Our signature cocktail was a whiskey sour named after our dog, Koda. One of my best friends designed the sign for us, and it’s now a permanent fixture on our bar at home.
My dad is a school bus driver so, as an ode to him, we chose Leon A. George II School Buses as our guests’ mode of transportation to and from the venue.
Any time someone asked me what the “theme” of our wedding was, I would say: champagne. A champagne cart greeted guests before the ceremony and, later, a wall of champagne place cards led them to their seats. We did a champagne tower during the reception and have since learned that one bottle does not cut it! Always pre-pour those bottom tiers, friends.
Several Style girls made an appearance, and we even convinced Style photographer Alison Conklin to hand off her camera to husband and photographer Geoff and hop in a pic. One of the best in the biz, we felt so incredibly lucky to have Alison, such a dear friend, capture our day.
They don’t call it The View at Morgan Hill for nothing! The venue provided so many photo-ops throughout the day. And one perk of getting married on a golf course is the opportunity to plan a golf cart exit!

When it comes to wedding contracts, it’s easy to get lost in the sea of legal jargon. A relatively small amount of money spent having an experienced contract attorney review your wedding contracts prior to signing could save you thousands on the back end. So if the “unthinkable” happens or plans just change, often the difference between getting back that “non-refundable” money and fending off unreasonable damages comes down to your understanding of the law.
