March is Colon Cancer Awareness Month: Colon Cancer Screening Now Recommended at Age 45
Colorectal cancer (CRC) remains the second most common cause of cancer death in the United States. However, unlike common malignancies of other organs such as lung, breast, prostate and pancreas, colorectal cancer is preventable with proper screening. The incidence of colon cancer has been increasing between the ages of 40 and 50, however, prompting a change in the recommendation of when to begin screening.
A
lmost all colon cancers begin as benign polyps. Screening can prevent colon cancer by detecting and removing these polyps before they progress to cancer. Colonoscopy is the gold standard for colon cancer screening. It has the highest polyp detection rate and is the only screening test that allows polyp removal (which can be done during the initial procedure). In cases where colon cancer has already developed, screening can improve prognosis by identifying early-stage cancer that is easier to treat and has a higher survival rate than cancer detected after symptoms develop. However, these screening tests must be done before symptoms develop to be most effective. Due to its widespread colon cancer screening program, the U.S. has one of the highest survival rates from colon cancer. Up until now, CRC screening has been recommended beginning at age 50. This latest recommendation now includes CRC screening in average-risk individuals ages 45-49. “Average Risk” is defined as no family history and no prior colon polyps. This decision to begin screening earlier is based upon the increasing incidence and mortality from CRC in individuals under age 50. This recommendation to lower the screening age to 45 rather than 50 is based on the U.S. Preventive Services Task Force decision to

capture those with early cancers. There is sufficient evidence that the benefit of screening younger individuals outweighs the harm and overall cost based on modeling studies. This guidance is consistent with multiple other professional societies, including the National Comprehensive Cancer Network and the American Cancer Society. As of January 1, 2022, almost all insurance carriers are now covering this new recommendation. For individuals ages 76 to 85, the decision to start or continue screening should be individualized and based on prior screening history, comorbidity, life expectancy, cancer risk and personal preference. Screening is not recommended after age 85. EPGI has partnered with LVHN to create convenient options for colonoscopy. In addition to several hospital locations, there are now two Ambulatory Endoscopy Centers, one in Lehigh County (Eastern Pennsylvania Endoscopy Center or EPEC) and one in Northampton County (Nazareth Endoscopy Center or NEC). Ambulatory Endoscopy Centers allow patients to have their colonoscopy in a safe, comfortable, patient-friendly setting. They are a high-quality, low-cost option preferred by patients and insurance carriers alike. Newsweek once again named EPEC as one of America’s Best Ambulatory Surgical
Centers. In order to provide that same level of care and comfort in Northampton County, EPGI recently constructed NEC in the Health Center at Easton at Routes 22 and 248. More information is available online at the EPGI website.

Jean Blanc SR. QUALITATIVE ENGINEER, PECO
Jean Blanc was working as a purchasing manager at International Paper Company when a Pennsylvania-based recruiter reached out to him about an opportunity at PPL Electric Utilities in Allentown. “It was a lot to consider at the time. I was living in Pensacola, FL, and was part of IP’s Leadership Development Program,” says Blanc. “Although I loved the lifestyle that the Emerald Coast of Florida offered, I missed being on the innovation side. I had a Senior R&D with the largest robotics and automation company in
the world, so paper making just didn’t cut it. I also saw it as a full-circle moment, as all the companies I’ve ever worked for were large stakeholders in the electric utility industry.” Blanc says that the Lehigh Valley reminded him of how he grew up and was only a short trip from his hometown of Boston, MA. “When I lived in the Lehigh Valley, I loved the combination of grit and future-forward thinking,” he says. “There’s lots of growth potential, and I’ve met some incredible people doing phenomenal things. There’s something for everyone, and its proximity to the mountains, big cities and parks makes it a hidden gem.” During his time at PPL, Blanc worked in standards asset management investment strategy and operations. “I had a phenomenal work experience at PPL,” he says. “PPL has a corporate environment where people really care about safety and quality of work and where C-suite leaders are accessible to the employees, driving continuous improvement.” Blanc says his time there also
allowed him to stretch beyond his comfort zone and lead in areas where his core values aligned with theirs, such as performance excellence in innovation, corporate citizenship, diversity, equity and inclusion. Now, Blanc leads the Distribution Integrity Management Programs and Gas R&D Innovation at PECO, an Exelon company, headquartered in Philadelphia. “Transitioning from PPL to PECO was the smoothest professional transition I’ve ever made,” he says. “The role mirrors what I did at PPL, just on a bigger scale. Exelon is the largest domestic electric parent company and regulated electric utility.” When asked his advice for someone struggling to reach their professional ambitions, Blanc says not to think of your goals as binary. “One of the revelations I got working in data analytics is the incremental productivity gains and importantly losses that accumulate over time,” he shares. “Changing your environment as well as the system you have in place to execute the goal also helps.”

Tell us a little bit about your relationship with tea. How did your love/appreciation for it begin? You can say it was the family business before it was officially a business. As a child, my mother and grandmother were always putting herbal concoctions together to cure everything from headaches to stomach aches. Our pantries and cabinets were always overflowing with herbs and supplements, so it was something that I naturally carried with me through adulthood. I even had the nickname “Mother Earth” at a previous job because people knew I was all about holistic healing.
What is the meaning behind the name Tshikovi Tea House? Tshikovi is a hybrid name honoring both sides of my family. Tshinguta is my maternal grandmother’s middle name as well as mine. Tekovi is my father’s middle name. Explain the significance of being a certified master herbalist, a tea master and a celebrity “tea tender.” At first glance, people think creating teas and tisanes is easy. You just throw things together and they either taste good or bad. My teas are delicious, but I also pride myself on creating teas that are intentional health aids as well. With that purpose, you have to know what the components of different teas and herbs are. You have to know what herbs you can’t combine and which you can. You have to know how different people will react to certain herbs based on their backgrounds. You have to be willing to give as much information as possible to your clients. That’s what I do. Sure, you can go to the supermarket and pick up a box of herbal
tea, but will that box tell you that it might not be the best choice for you if you have a ragweed allergy? No. That’s the significance. Describe the variety of teas offered at the shop. Our tea varieties are endless! We have teas for energy, teas for sleep, teas for joint pain— the list goes on. Is there something that readers may be surprised to hear that you offer? Our wine-infused tea is always a pleasant shocker! Can you talk about how the shop celebrates Black women? I always feel it is important to honor the Black women before me. Some of the teas are named after women like Toni Morrison, Maya Angelou and Miriam Makeba. Others are named
after family, like my daughter (Zaura’s Blend), my mother (Gaby’s Blend) and my motherin-law (Ileta’s Blend). And others are named after hip-hop/R&B classics (Sweetest Taboo, Purple Rain, Electric Relaxation). Tell us about the importance of shopping at a shop like Tshikovi Tea House versus a big-box store or chain supermarket. How does the quality of tea differ? Big-box stores are not giving you the best-quality tea. By the time it is imported from whatever country to their shelves, it has already been six months or more. Then it is on the shelf until customers buy it. You are not getting the freshest possible tea leaves. Most of the time, you are also not getting full tea leaves, especially if you are buying tea bags. With Tshikovi Tea House, there is no middle-man box store. Our teas and herbs are coming straight from our trusted suppliers to your
home. We make everything in small batches to maintain the integrity of freshness. We also dry all of the fruits used ourselves! What’s the overall vibe like at the store? When you walk into our store, it feels like a hip home—tons of natural light, chic colors, flowers, velvet couches and hip-hop legends in Renaissance paintings. Is there anything else you’d like to mention? We appreciate the support that we have received since we started! A lot of people were skeptical if the Lehigh Valley area would take to the idea of a tea house boutique and we were told that we had a slim chance of lasting. But we’re still here and thriving. So what are our homes crying out for in the month of March? Provided the snow has cleared and the freeze has thawed, it’s time to take stock of any damage done by winter’s harsh weather. Inspect your roof for missing shingles, damaged or missing pipes, and anything that seems out of place. “If you notice anything needs a closer inspection,” ChavanneWilliams warns, “be sure to call a roofing expert!” Concrete and asphalt go through the wringer as they repeatedly freeze and thaw, and Chavanne-Williams points out that if you’re selling, sidewalk damage can get flagged during city inspection. As the weather warms, prepare for the deluge of spring rains by having gutters and downspouts cleaned, making sure they aren’t allowing water to drain toward your foundation. Spring is the time to have your AC serviced and freshen up the filter so you can take future heat waves in stride. “No one wants to be surprised with a broken air conditioner when they need it the most,” Chavanne-Williams advises.

Sweep away the musty winter mess with a manageable morsel of spring cleaning this month (after all, spring continues across April and May). Chavanne-Williams suggests the following items: 1 Wash linens—think of all those blankets lying around, stuffed in the closet or draped over the couch. 2 Wash your windows and put in screens—it’s time to open them up and let in the fresh air! 3 Flip your mattresses. 4 Deep clean the kitchen—clean the backsplash, wipe down cabinets inside and out, clean under appliances, wipe down and disinfect your microwave, refrigerator and other high-traffic appliances. 5 Organize the pantry and be sure to throw out expired products. 6 Spot-clean your furniture. 7 Clean out the garage—plan for a yard/ garage sale!

Think about the last medical office you visited. What color were the walls? What did the furniture look like? How would you describe the décor? If you’re drawing a blank, don’t fret. It’s not often that these types of places make a lasting impression. White walls, worn carpeting and humdrum chairs and couches seem to be the norm: bland, at best; downright dreary, at worst. But maybe there’s a different way. A better way. Just ask Linda Magnavita, founder and owner of Little Black House, an interior design studio based in Philadelphia.

Last year, her team completed an overhaul of the Aether Medicine office in Wayne. The finished product is bright, bold and welcoming—think boutique hotel, rather than drab health center. “It’s like nothing you’ve ever seen,” says Magnavita. In short, if you’re one of the practice’s patients, you might actually enjoy spending time in the space, rather than counting down the seconds until your appointment is over. Magnavita has always had a flair for the creative, although it took a little time to figure out how to best cultivate those budding aspirations. “I was always obsessed with design. I just never put the two together [as a career],” she says. She moved to Allentown with her family when she was in kindergarten. She first attended Central Elementary School and then Raub Middle School.

I was always obsessed with design. I just never put the two together [as a career]. As a child, she was a gymnast and a cheerleader and developed an interest in the visual and performing arts. She recalls making many trips to the Allentown Public Library and checking out book after book from the art section. Her drawings and paintings won awards. Magnavita moved away from the Lehigh Valley for high school, and then, soon after graduation, enrolled at New York City’s American Mime Theatre to study the performing arts. Magnavita found herself consumed by the omnipresent eye candy of the big city; she describes herself as “obsessed” with interiors. “It was the height of the restaurant scene,” she says. “You could start to see all of the design elements [in the buildings]. I can remember walking around the city and peeking in windows and thinking, ‘look at that lighting, look at that floor.’ That was when it all clicked.” Magnavita decided a change in vocation was needed (another realization: “I didn’t

want to be a starving actress,” she says). But there would be one more stop before she went all-in on design: business school. She recalls watching the movie Wall Street and being taken with the fast-paced, highstakes action that plays out on the stock exchange floor. She enrolled at Kutztown University but admits now the change in focus wasn’t a good fit. Still, lessons learned in the business and financial realm would come in handy later. She transferred to Beaver College (now Arcadia University) in Glenside her senior year, and that’s where she says she finally felt at home: “My gosh, why didn’t I do this earlier?” She earned her Bachelor of Fine Arts degree in interior design and found work right after graduation as a junior designer with Styer & Associates in Norristown. She was heavily involved in one of the studio’s biggest gigs in 2002, getting the brand-new Lincoln Financial Field in South Philadelphia ready for its high-profile tenants, the Philadelphia Eagles. Styer & Associates was in charge of all of the FF&E (furniture, fixtures and equipment) at the stadium, everything from then-coach Andy Reid’s desk to the trash cans surrounding the field to the locker rooms used by the players. In 2003, Magnavita joined the studio of Main Line interior designer Barbara Gisel, which specializes in high-end homes. “I got to see the crème de la crème of residential interiors,” she says. She also got to put her talents to work in Sin City, when the studio took on an interior design project at Caesar’s Palace Hotel and Casino on the Las Vegas strip. But Magnavita says the

end game was always establishing a design studio of her own. “I knew I was never going to grow my own style unless I worked for myself,” she says. In 2006, she did just that, with the founding of Little Black House. But the decision to strike out on her own didn’t spark any of the second-guessing and jitters that sometimes can accompany such a bold move. “I’m a risk taker,” says Magnavita. “It was exciting and fun.” It also probably helped that she’s not averse to change. “I encourage it,” she says. “I get so bored with things.” She started small, first operating the business out of her home before moving into a space in Allentown’s Cigar Factory Artist Studios building in 2018. Two years later, Little Black House relocated to its current home in the upscale Chestnut Hill section of Philadelphia. Magnavita leads a team of four with a goal of creating unique interiors that inspire and excite. She likens a successful design to combining all of the ingredients for a new recipe. “Every project has multiple tasks and although the process is always the same, the end result is always different,” she says. “Seeing it come together is incredibly satisfying!” Little Black House’s portfolio includes work across the residential, hospitality and commercial sectors. The studio’s overall style might be described as bold, simple and fresh, an approach that transcends traditional. And of course, every project presents its own unique set of opportunities and challenges.
“It’s never about me,” says Magnavita. “It’s always a collaboration between the client and myself. When clients let us get to know them, amazing things can happen.” She also believes design, when executed properly, can truly impact lives. “It’s an experience,” Magnavita says. “Design can create so many different feelings for people.” She cites the Aether medical office as an example of how a carefully constructed interior can build upon its utilitarian function. “The owner was interested in creating a space that was fun,
Design can create so many different feelings for people. functional and fashionable. Those were the three words he gave me,” says Magnavita. The office blends elements of the natural world with shades of blue to conjure up the calming effects of the ocean and promote an atmosphere of healing. Another recent project was the Nailplay Studio in Downtown Allentown, with a black-and-white color scheme that was sparked by the building’s concrete floors, which Magnavita insisted remain as part of the finished product. The design combines industrial, modern and masculine elements, but Magnavita says the goal was crafting an interior that promotes a welcoming, spa-like vibe. A long communal table in the center of the salon is meant to invite conversation, an experience similar to sitting around the dining room table with family. “It’s this community moment for everyone, to be fun and playful,” Magnavita says. You can be sure there’s much more to come from Little Black House. And LBH likely won’t remain “little” for much longer, if Magnavita has her way. She envisions moving her team to a bigger space and bringing nearly a dozen more designers into the fold. “The only way is up for us,” she says. littleblackhouse.com

However, many older adults do not know how to make this hope a reality. Pathstones by Phoebe was designed to help older adults put their wishes into a solid plan of action. With an office in Lower Macungie Township, Pathstones by Phoebe is part of Phoebe Ministries. This continuing care at home (CCAH) model combines the key features of care coordination, wellness services and long-term care insurance to help members navigate the aging process. Executive Director Lisa Hoffman believes good outcomes are the result of good planning. She uses her more than 30 years of experience in the long-term care and insurance industries to help older adults plan for their future needs. She initially joined Phoebe in 2009 and became the Executive Director of Pathstones in 2019. She oversees Pathstones’ operations and membership services. Membership Coordinator Jessica Hardiman spends a great deal of her time in communication with Pathstones members. She organizes member events, including a recent afternoon wine tasting at Black River Farms vineyard and winery in Bethlehem, and a day trip to the American Music Theatre’s Winter Wonderland Show in Lancaster County. As health care needs change over time, Pathstones is there to help shoulder the burden of coordination that would normally fall to friends and family. Pathstones by Phoebe also helps older adults protect their financial assets. Someone turning 65 years old in 2020 has a nearly 70 percent chance of needing some type of long-term care services. Regardless of where these services are provided, long-term care services are expensive and costs will only continue to rise. A meticulously maintained historic home on a generous plot of land that’s tucked away in a quiet community is many a homebuyer’s dream. And, to be clear, Carolyn Dunham is more than a little bit in love with the Center Valley property she and her family purchased seven years ago, even though it wasn’t exactly what they had in mind when they were shopping around for a new place to live. “We
had our eyes on a fixer-upper,” she says. “That’s not what we got with this.” But they did get something unexpected and ultimately, appreciated: the chance to write the next chapter for a place already steeped in more than two centuries’ worth of history; and, for Carolyn Dunham herself, an opportunity to dig into a longsimmering passion for design and antiques in both her personal and professional domains. Dunham, a native of the Bethlehem area, has always had an eye for interiors. “I’ve been into décor my entire life,” she says. “I loved decorating my room when I was a little girl.” But later, as a busy wife (her husband, Brad, also a Lehigh Valley native, is a pilot and Navy reservist) and mom with four young children underfoot, moments of free time for dreaming up designs were few and far between. And not only that—Dunham says her home at the time, which she describes as “a very 1990s house” on a small, quarter-acre lot, didn’t exactly inspire creativity. “It was never something I was excited about or gave thought to,” she says. But all of that changed in 2015 when she first laid eyes on a fully restored farmhouse on West Hopewell Road. “It was like a flip was switched,” Dunham says. Funny enough, she had passed the property countless times in the past without giving it a second thought; at the time she and her family were living just a few miles away, and her parents’ home was nearby as well.

But the farmhouse is set back from the road and shielded from view by hedges and trees, so, as she explains it: “It doesn’t have a lot of curb appeal.” Still, when her realtor mentioned the property was for sale, Dunham decided to check it out. “We knew within four hours it was on the market and we scooped it up,” she says. “We were like, ‘Done. Put the offer in.’” One problem: the Dunhams already had signed a contract to purchase a different home in Center Valley, one Carolyn says she had her eye on for a long time. After years of going back and forth with the homeowner, the wheels were finally in motion to make a deal. Long story short: the deal fell through, the contract was voided and Carolyn and Brad became the proud owners of a five-and-halfacre “gentleman’s farm” and everything that came with it, including the main house and a number of barns and other structures of various sizes. “It’s a maze of different levels and different barns and they’re all connected,” says Dunham.

The primary living space— the farmhouse—was move-in ready. “It was in immaculate shape. There was nothing [the previous homeowner] didn’t touch,” she says. That included making three additions to the house that wrap around the original structure, meaning the stone walls that used to make up the home’s exterior are now inside, adding a rustic air. The additional square footage allowed for the creation of several new spaces, including a family room, sunroom, foyer, office and screened-in porch. The 4,500-square-foot home also has four bedrooms and four and a half baths. There are large windows throughout, suffusing

the home with a natural, inviting light. The blend of old mainstays, such as the original hardwood floors (“Our goal is to not ruin those,” Dunham says; they have three dogs) and new architectural flourishes, conveys both comfort and character, making the home ideal for cozy family time as well as for entertaining guests. But just because the home didn’t need any alterations doesn’t mean the family hasn’t been busy. “I’ve lost track of how many projects we’ve done,” Dunham says. The kitchen was the first major renovation they tackled. Again—this wasn’t a must-do; the kitchen that came with the home was perfectly

fine and functional, she says. It was more a matter of making the space their own. They put in a new copper farmhouse sink, switched out the existing countertops for quartz countertops, installed subway tile throughout the room and replaced all the light fixtures. Swapping out the island in the center of the kitchen was a bit trickier; when Dunham couldn’t find what she was looking for at her usual haunts, she had one custom-made. The Dunhams also did a major gut on the master bathroom. “It was taken down to the studs,” she says. They pulled down the drywall to expose the original stone wall—formerly an

exterior wall—underneath. They also installed a vaulted ceiling and a bigger window. Other projects inside the home have been more minor undertakings: new paint, new fixtures, a new powder room vanity made from an old barn beam. “We’ve tried to use them wherever we can,” she says of the beams. The décor is all Carolyn Dunham—finally, a clean palette upon which to unleash her inner designer. “From the get-go, my wheels were spinning,” she says. She’s been interested in antiques for years. Ninety percent of her home’s furnishings are what she describes as “somewhat used”—antique or vintage. Dunham says it’s rare for her to
buy retail: “I live at flea markets, antique stores, estate sales.” Her influence is everywhere in the home, from the paintings on the walls to the curios carefully arranged on tabletops and bookshelves. But the goal isn’t filling the home with trivial trinkets or inconsequential “stuff”; Dunham is drawn to items that tell a story or have meaning. If she purchases something that doesn’t quite jibe as she hoped it would inside the home, she adds it to the inventory of Petersell 1808 Home, the business she’s operated since 2017 out of a restored bank barn on the property. It’s not a typical antique store, it’s more like a
specialized pop-up shop that hosts just a few sales a year. “I want it to be an experience,” Dunham says. “The end game isn’t for me to make a sale. I want people to come and feel transported.” She hopes that being inside the barn, wandering from one carefully curated vignette to the next, will send a message to those who might feel a bit overwhelmed at the thought of going antiquing for the first time. “I’ve done all the picking for you,” Dunham says. “This can give you an idea of how you can do this in your own home.” The next barn sale will be held in April. Petersell 1808 takes its name from the farmer (Peter Sell) who built the barn back in—you guessed it—1808. A white stone on the barn’s exterior is emblazoned with the name and year. Dunham believes Sell himself traced it there with his finger. Uncovering the history of the property has been another source of enjoyment for her. She’s still filling in some of the gaps, but she believes the main farmhouse may predate the Petersell barn by a few years. Sell, she says, was a German immigrant. The property was a working farm—most likely a dairy farm—for five generations. A cathedral barn that’s adjacent to the 1808 barn and much larger in size probably was constructed sometime in the 1920s or ’30s. The Dunhams have used that barn as an event space for the weddings of family and friends as well as other private functions like sports banquets for the four Dunham children: Julia, Ethan, Isabelle and Eli, who range in age from 17 to 24 years old. Sometime in the 1960s or ’70s, the property was used as a wholesale pharmacy business. A guest cottage on the site once served as the business’s office. Dunham says she’s given tours to previous employees who have returned to the property to reminisce in recent years. Perhaps the most modern addition to the homestead is the in-ground pool and pool house the family installed in
2016 and 2017, respectively. The pool house, though far removed from the original plans of Peter Sell and his descendants, was designed and constructed to match the look of the other structures. A sizeable French garden became part of the landscape in 2019. Previously, another barn had been on the site, but when the Dunhams moved in the land was an overgrown field. The Dunhams’ design was inspired by the sprawling, symmetrical gardens of the Versailles palace outside Paris. Beyond a wrought iron entryway, paths lined with pea gravel lead to a central fountain, which is flanked by eight garden boxes, four on each side. White roses climb the stone perimeter. It’s a tranquil space, one of the many outdoor enclaves on the property. “There’s nothing I love more than to be out in my garden or looking for a new project,” she says. While the large-scale renovations required the hiring of professional contractors, Carolyn and Brad have tackled many of the tasks themselves, including installing the entire French garden as well as building five sets of sliding barn doors. Dunham says the entire process has been empowering. “It’s been such a fun, positive experience,” she says. “It’s brought out qualities, skills and gifts we didn’t know existed.” And, as most homeowners will attest, there’s always another project waiting in the wings. Since Dunham both lives and works on the property, she’s keenly attuned to that neverending to-do list. But she’s learning to slow down and enjoy the ride. “It doesn’t have to happen all at once,” she says.

Gusto Group’s Creative Director Kate Gjevukaj remembers her first impressions of a run-down old townhouse. “Although it was falling apart, the building itself was incredibly inspiring,” she says. “Original remnants and details you couldn’t recreate today were still there, and we were able to clean it up and let that shine.” With guests at multiple much-loved venues setting Gjevukaj’s ear to the ground, she’d been hearing the clamor for years: “People say they love to come to Easton for the weekend, and where can they stay? We took this on to offer highly personalized service to people drawn to the city’s historical character. This is not a place where you just go and crash.” While the original facade adheres strictly to the historic district’s regulations, new construction off the back creates a hybrid structure and almost a sense of time travel, flowing seamlessly from the cozier front section replete with Victorian detail to the modern rear, opening into higherceilinged, light-filled space. What’s consistent throughout is a weaving together of color, art and history. “We took our cues from the building,” Gjevukaj says. “Easton is known as really being an arts city. You walk in and want to look at every wall. There’s something to see everywhere you look, and that’s reflective of the architecture and culture of Easton in general.” Gusto has recently purchased both the Detwiler and Jacob Mayer buildings in Centre Square, so watch for these properties to reemerge with fresh identities rooted in Easton past and present.

Gjevukaj was able to preserve the built-in cabinet in the Lounge, replacing its twin with a necessary egress to the courtyard. In keeping with the homage to the woman who once owned the property, touches like the warm blush red walls and feminine art make this a soft place to land during your stay.

Gjevukaj climbed a ladder and arranged each succulent by hand in the TH emblem featured in the hotel’s back entrance, set off by a grass paper backdrop. The rough-hewn bench below is meant to look startling in this highly polished place, juxtaposing a fine finish with the process that created it. “It’s from a tree we had to take down in the back,” Gjevukaj says. “You do risk getting a splinter when you sit on it!”

“This pattern is a personal favorite,” Gjevukaj says. And if the tagged IG posts are any indication, guests agree that this riotous room demands attention. The photos framed in the powder room recall stages of Townley House’s restoration in an effort to acknowledge every artisan and worker whose contributions made the finished product.

Approaching from the back of Townley House, the luminous arches of the bar’s overhang offer an enticing glimpse of the visual adventure inside. Grace Bixler, a relative of Easton’s famous silk manufacturer Herman Simon, bought the building in 1916. “We were really inspired by that,” Gjevukaj says, “so we used the name for Bar Bix.” The eddying installation was conceived of, sketched out and created just for this space, growing gold out of dim lighting to anchor the room beautifully.

The ivy-wrapped pieces arcing up from Bar Bix’s central pillar are intended to wear a different décor as the seasons change, acting as an “upside down tree” that echoes the verdant flora of the courtyard. The wall is glass for maximum sunshine and opens up in warm weather to blur the line between indoor and out.

“We simply needed to store the wine by the bar,” Gjevukaj says, “so that was built as an afterthought.” But like a lot of the impulses this design team follows, it’s resonated beyond expectation with guests. A spotlight is going in on behalf of all the people asking about and taking pictures of this wine rack’s striking herringbone simplicity. “It’s been really gratifying to see how much people appreciate these details.”
the COURTYARD
Passing through a spruced-up original (or at least very old) grocer’s gate, a tunnel-like alley leads to the courtyard and rear entrance. One of a pair of salvaged clawfoot tubs holds pergola-climbing vines in the summer, when this area is a hidden oasis. “We added the beams to create a more intentional space,” Gjevukaj says. “Otherwise the only way to go is up!”

THE MOLDING THE CHANDELIER Anyone who has been to Gusto’s Three OAK Steakhouse knows this team will devise whatever custom-made, large-scale light fixtures are necessary to bring the desired ambiance to life. This tiered chandelier with ranked rows of glowing orbs is another lovingly crafted centerpiece drawing attention to the soaring height of the ceiling, suspended for a side view alongside the second- and third-floor staircase and sitting areas.
“The picture molding is specific to the time,” Gjevukaj says, “and there was so much of it.” They were able to restore what was there and, in building the new addition, recognized it was what was missing from fresh drywall halls. That texture helped to warm up a liminal space that often goes bare.

HALLWAY MURAL
“Nature is a huge theme in all our projects,” Gjevukaj says. The mural as you come in from the 3rd Street entrance was painted by the same artist who did those at OAK. The tree symbolizes rebirth for a building that came into existence in 1866 and was reborn in 2020 as Townley House. Across the hall, the side table continues the tree below ground, a root system painted in metallic cast for an elevated vibe.

“I love the irises in The Parlor,” Gjevukaj says of the pretty pink tiles surrounding the fireplace in Room 101. “They’re lovely.” The many original fireplaces in Townley House are confections of elaborate molding, most so intact they only needed cleaning to spruce them back up. One reason this place lends itself so well as a boutique hotel is the unique touches built in with tile. Mercer tiles from Doylestown’s famous Tileworks lend old-world personality, like in The Shakespeare room. “That was an easy naming process,” Gjevukaj laughs. “All the tiles represent Shakespeare plays.”

Some rooms, like The Peacock room, have art that reflects the motif, and where there isn’t art, there are photographs depicting areas of Easton. While it provides a sanctuary from the city streets, the hotel won’t let you forget what you’re here for! Gjevukaj chose a muted jeweltoned palette for the walls with historic preservation in mind as well as letting those headboards shine. The walls also acknowledge the views from the rooms’ windows, with charcoal balancing the courtyard view and some not-soleafy lookouts getting green walls to make up for it.

Gjevukaj worked with a Gusto team member who built the headboards’ unique shapes: scalloped, undulating, even crenellated in Room 205, The Queen’s Castle. Many of the vibrant prints came from Spoonflower, where artists offer custom patterns for fabric and wallpaper. Pignoli Cookies with Chef Salvatore Cardamuro
Pignoli cookies are available year-round at Mario’s Italian Eatery.
Chef Salvatore Cardamuro grew up in the service industry. His parents always owned restaurants, and his earliest memories are helping out in the busy kitchen as a child. “I have worked back of the house to front of the house and everything in between. It has truly given me a complete understanding and perspective of how to make a restaurant run smoothly,” he says. “I remember making sauces and kneading dough as a kid in my parents’ restaurant. I loved to be part of it all and never dreamed of any other career.” Cardamuro’s Sicilian and Neapolitan heritage is important to him and his cooking style is greatly centered around that. “What I love most about cooking is being able to share my culture with everyone.” Here, he is sharing a recipe for “the most popular Italian cookie,” the Pignoli. Cardamuro remembers visits with his grandparents as a child, playing cards with his grandfather and baking these cookies with his grandmother—traditions that have become some of his fondest memories. The charm of this cookie is the intense almond flavor with a chewy center and crisp outside studded with pine nuts. Pignoli cookies are a staple at any Italian bakery and are available year-round at Mario’s Italian Eatery at Simon Silk Mill in Easton, where Cardamuro has worked since February 2021 as the executive chef. It is a recipe he knows by heart, is super simple to make, uses fresh ingredients and is one cookie that he is confident everyone in your family will love. In the western end of the Lehigh Valley, you’ll find a great restaurant in what is perhaps a seemingly unlikely destination—a Hyatt hotel. Westside Grill, which opened in December 2021, is worth seeking out. But let’s get this out of the way first: yes, there’s definitely an old stigma against restaurants in hotels—at least ones that are in more suburban or even side-of-the-road destinations, as opposed to ones in fancy hotels in major metropolitan areas. Even with its location at Hyatt Place and Hyatt House, Westside Grill resists the stigma easily. The first impression of Westside Grill? You don’t really feel as though you’re in a hotel. The restaurant is easily accessible from the hotel, but it seems to occupy its own discrete wing—there’s a dedicated entrance separate from the rest of the property (same goes for the event center). Your first impression surpasses the average hotel restaurant, too, as it consists of some spectacular interior design with a neutral greengray, a hue that’s bound to give the gray tones of the past five years something to think about. The interiors were designed by esteemed New York-based Champalimaud Design, and the result is a space that imparts touches that feel both modern and a bit vintage but in a seamless, classy way. Good design creates interiors that feel like their own world, and that’s been achieved here. The hotels and restaurant are owned by the family-run Jaindl Land Company, and operated by TKo Hospitality. David, Jackie and their son Adam Jaindl gave careful
thought to the project, whose wheels started to turn in 2019, before the pandemic. However, Air Products built a brand-new headquarters right across the road from the hotel and restaurant, and more development is planned, making the 200-plus-seat restaurant (and its extensive outdoor seating areas) a smart, informed move. But at the end of the day, as Jackie put it, “We wanted a place that served the kind of food we like to eat.” It’s really as simple as that— and if you could, wouldn’t you do the same? A hotel needs to feed its guests, and even if some of those rooms contain small kitchens, anyone who has traveled at some point wants a break from the four walls of

their temporary space. When there’s a welcoming spot onsite, so much the better. But Westside Grill is bringing people in, whether they’re local or passing through. Either way, the impetus on the part of the restaurant is typically the same. “I’ve always been a food and beverage person, and making someone feel at home when they're away from home, whether it’s after a wedding, out with friends or while traveling, is gratifying,” says Scott Craver, restaurant manager. Craver is a hospitality industry veteran and Lehigh Valley native who’s worked in the region for many years, including many on the board at Discover Lehigh Valley. Along with Kevin Knauss, food and beverage manager, and chef

Ian Beard, who’s cooked at Shula’s and Edge, the place is in more than capable hands. Upon first impression, you might be tempted to describe Westside Grill as a steakhouse, because it does offer a variety of cuts from prime filets and aged New York strips to black Angus bone-in rib eyes to the very fancy prime tomahawk for two, served dramatically on a butcher block with a choice of two sides and a flourish of arugula or other greens. Although Craver describes Westside Grill as a “modern American steak and seafood restaurant,” it’s more than that—but most importantly, it’s not as fancy and specialoccasion-only as steakhouses tend to be. You’ll find chicken and lamb along with scallops, wild Atlantic salmon and lobster tails. The menu includes some customary nods to the Jaindl family’s longtime association with
turkey farming, with a turkey pot pie and a turkey soup on the menu. But don’t miss the blackened sirloin tips (they’re so good as a bar snack, or order them with the wedge salad, served with a decadent housemade blue cheese dressing). Other standouts include the seemingly endless pot of chicken and seafood paella. Westside Grill serves breakfast to its hotel guests, but it offers lunch and dinner seven days a week due to the nature of its location. That means you’ll also find sandwiches (burgers, crab cakes, French dip, etc.) and plenty of salads. Look for an old-school classic Sunday brunch to hit their schedule soon; there never seems to be enough places for brunch. Oh, and don’t sweat it if you’re vegetarian or vegan, or will be coming in with a diner who eats that way. Feel free to call ahead and see what they can do; chef Beard knows his way around

There’s a demand for these multistep craft cocktails,” says Knauss. The soda is put to creative use in desserts, too—you can order a flight of ice creams (from Batch Microcreamery in Allentown) and one of them will include a sorbet using orange cream soda from A-Treat. You can of course buy wine by the glass (and the bottle, too), and there are about a dozen beers both locally and nationally recognized on tap. But let’s face it; many of us have a soft spot for A-Treat. “They just produce some really great flavors and we wanted to incorporate them into our menu,” says Craver. Speaking of flavors, Westside Grill is still so new, but it shows much promise. The flavors are sure to evolve as word gets out, people start to respond to what’s being served and the region’s farms and purveyors start to play various roles in the development of the menu. “We’re on the right track,” says Knauss.
Jackie & David Jaindl that fare and will make you something more special than pasta and veggies, which is the altogether too common restaurant default menu item for these dietary preferences. But honestly, whatever you order is going to both look and taste great. Beard, who has enthusiasm for his craft in spades, knows that the power of food lies in what you see and smell first. “That is the beauty of culinary,” he says. “You are engaging all those senses before you even taste anything.” And so, the plates are presented in a creative yet straightforward manner; you’re not hunting for ingredients or left to wonder, upon its arrival, what exactly you ordered in the first place. One of the unique aspects of the restaurant involves cocktails that use A-Treat soda. Longtime residents of the region may remember that the brand recently almost went out of business until the Jaindl family purchased it. If you're looking for an adult dose of nostalgia, the Double Bubble cocktail is a sweet sip consisting of Three Olives Bubble, lemon juice, cranberry and A-Treat bubble gum soda. Garnished, of course, with a nugget of bubble gum. The Pineapple Colada Punch similarly presents a combination of cream of coconut, rum, pineapple juice, Luxardo maraschino cherries and a dash of pineapple A-Treat soda. “People are happy to try something new.

What to Order If you want a cocktail, start off with the Smoky Maple Old Fashioned, with Knob Creek maple bourbon, orange bitters and still smoking upon delivery. Appetizers not to miss include the seared ahi tuna and the Bang Bang Shrimp, the latter of which is so addictive, you might need two orders if you don’t want fights at the table. Someone in your party will want the Pineapple Colada Punch, which features A-Treat soda; its tropical presentation and taste are sure to please. Oh, and dinner? Wedge salad, cioppino, paella, or try the aged beef. Fish lovers, be sure to ask about the catch of the day, but the bar menu offers some fantastic shrimp tacos with a jicama slaw if you’re craving something more straightforward. The lobster mac and cheese is never a bad idea; it’s a decadent side regardless of whatever else you order.

After realizing just how popular sliders were amongst Blended by Brü Daddy’s guests, executive chef Gil DeGruccio worked with Cassie Ryan, VP of food and beverage, to develop an entire line of 14 different sliders. “We wanted to match our menu to the way people want to eat when they are out with friends and family,” says CEO and president Richard Ryan. “They want variety, they want to share food and they want smaller portions. The Blended Slider Bar allows us to meet all those needs.” Most diners opt for the Phantom Hat Trick, which allows them to select any three sliders on the menu. Ryan says guests love the Allentown Hot Chicken, Bourbon Bacon Burger, Turkey Apple Brie and South Philly Cheesesteak. The restaurant has plans to rotate the offerings seasonally, featuring

heartier varieties in the fall and winter and lighter ones in the spring and summer. “We also see totally new ones emerging yearround,” says Ryan. “The Slider Bar allows us to create on the food side of our business and offer our guests the variety they are looking for.
