Each November, we celebrate the region’s culinary offerings with our reader-voted Restaurant Awards. And it’s fitting, right? Because when I think about an idyllic fall evening, I think about an espresso martini from Grille 3501, or a giant bowl of gnocchi from Fiamma, some hot stew at McCarthy’s and a glass of red wine near a fire pit on the rooftop of Three Oak Steakhouse. It’s the season of cozy, and what’s more comforting than a good meal? Turn to pg. 42 to find your next one. You’ll notice that we’ve expanded our categories and our reach this year, so you’re sure to see some new favorites on the list—like The Barbecue Boys in Phillipsburg, NJ, run by two young brothers who started smoking meats professionally during the pandemic, or Family Chicken & Waffles in Easton, serving up seafood and soul food, including the most incredible fried chicken and Oreo waffles you’ve ever seen. While we love shining a light on the area’s incredible restaurants, we recognize that many residents do not have access to fresh, local food. In November 2015, we did a piece on the local food insecurity, and the United Way of the Greater Lehigh Valley shared that 75,000—or one in 10—people in the Lehigh

Valley are hungry, meaning they are suffering from malnutrition or are eating foods that are not good for them. In this edition, we’re highlighting the strides of the Bethlehem Food Co-Op. Ten years and one thousand members later, the co-op has begun construction on its first brick-and-mortar grocery store—a major milestone for the community-run organization that seeks to fix our broken food system. The grocery store will support the co-op’s mission of making healthy, affordable, locally-focused food and educational offerings available to all (particularly those who don’t have immediate access to these options). Read more about the team leading the charge on pg. 32. We hope this month’s issue inspires you to support our region’s wonderful restaurants as well as the organizations making fresh, healthy food more accessible to all of our neighbors.

Lehigh Valley Style hosted the 2021 Women’s Networking Event in support of The Perfect Fit for Working Women on Thursday, August 26 at the Renaissance Allentown. Her role as executive director means no two days are the same. “I work to fund our mission through three staple campaigns: the Heart Walk, the Heart Ball and our Go Red for Women campaign and luncheon,” says Silfies, noting she also works hand in hand with their staff and volunteers to facilitate awareness days and months. “The people, the stories, the mission, the results and the drive towards ‘longer, healthier lives’ are enough to keep me pushing forward every day,” says Silfies. “My heart is full from a day’s work at the AHA.”

Owner/Designer Talk about your career as a fashion designer prior to opening your shop. Growing up, I always had a great interest in all types of fashion but very specifically fashion design. I started sketching designs quite naively as far back as I can remember. In order to gain the skills needed to begin a career in the fashion industry, I attended the American College of London. It was there that I gained my Bachelor of Fine Arts degree in both Fashion Design and Marketing.

Throughout her design career, Bly has spent time working in Los Angeles, New York City and the Middle East.

What was the journey to opening Lara Bly Design Studio and Boutique in Bethlehem like? When I began the process of creating my own fashion brand, I decided to rent a studio at the Banana Factory in Bethlehem, where I stayed for seven years gaining experience and building my clientele. The most meaningful part of my career came in January 2019, when I left my studio and got my very first boutique. As the store prospered, I needed to find a bigger and better location, which I did when I finally moved to my dream store in June 2021. Originally built in 1914, this historic building reflects the Lara Bly signature look, combining the beauty of art deco and art nouveau with a chic, modern twist.


Tell us about the clothing that you create. The collection is broken into two main categories. The first category is basics. Lara Bly basics are made from extremely soft rayon jerseys and have a flowing and romantic vibe to them. I absolutely love color, and you'll find that the moment you walk into the store. We all love our little black dress but I strive to offer a collection that's vibrant and full of personality. What I am really known for is my signature Lara Bly eveningwear collection filled with sparkles, flowing silhouettes and extreme comfort. I want people to feel like they are wearing luxury while feeling totally unrestricted and at ease. I'm always on the lookout for innovative and glamorous fabrics. Who is the Lara Bly customer? The Lara Bly customer is not dictated by age but rather a lifestyle. She is a woman who cares about how she presents herself while not wanting to blend into the monotony of mainstream fashion. She wants her clothing to have individual flair while showing off her personality. She wants to be comfortable while also feeling “pretty.” She wants to show her best self each and every day. Most importantly, what this brand offers encourages a woman daily to feel just a little bit better about herself.

What else can readers expect to find in store? A truly unique experience, it is both a fashion design studio and boutique. Everything is created and made right in the store. Customers can see the complete process of design, illustration, fabric choices, pattern making, cutting and sewing. At our new location, we also offer additional brands that have been carefully selected to coordinate with the Lara Bly collection. This allows us to offer many different styles and additionally many different price points to the customer. My goal is that there is a little something for everyone!

What's the overall vibe at the shop like? The overall vibe of the shop is beauty and romance. The natural light that comes in through the corner store with 14 windows is simply stunning. The architecture of the outside and the inside of this store adds to the aesthetic of an art deco/ art nouveau era. High ceilings, glistening chandeliers and accents of gold and silver are found throughout the store. What can we look forward to in fashion this fall and winter? There will be seafoam-colored crushed velvet highlighted with metallic rose gold. Gun metal spandex with metallic foil prints. Full skirts cascading to the floor in iridescent indigo paired with romantic deep V silhouettes. Snakeskin sweater knits with touches of gold. Bronze, fully flowing maxi dresses and silver maxi skirts—think Studio 54! As always, lots of glamour and shine. Lizzy Latinsky, owner of Org Theory, has an impulse to organize, which makes revamping her clients’ closets and clutter a breeze. Here’s her advice on getting your home shipshape as the seasons change.

TIDY TRANSITIONS

“I believe that organization is the foundation or starting

point for creativity and efficiency,” Latinsky says. “And with the holiday season coming up, it’s a perfect way to bring a little order to what can be a chaotic situation.” In general, and especially as our activities and needs change moving into new seasons, we tend to accumulate more and more stuff. The holiday season can

especially mean an influx of gifts and toys adding to our inventory. And while a fresh start can come at any time, the turn of a season is a natural time to transition.

ASK THE EXPERT With all the entertaining of the holidays, set yourself up for success by organizing your kitchen. “Go through your spices and dry goods,” Latinsky says, “and get rid of expired stuff. Make room for baking and seasonal cooking items.” For folks who can see themselves committing to a streamlined organizational system, it may be worth investing in sets of canisters and jars. “Sometimes the boxes and bags that food comes in aren’t optimal,” Latinsky says, “and decanting products into containers creates more room in the kitchen.” Festive feasting also leads to leftovers, so go through your fridge and make room for the holiday haul by cleaning out expired, spoiled and unpopular items.

ADDRESS YOUR NEST

Cold weather often comes with a switch to heavier duvets and flannel sheets. “On Amazon, they have these storage bags specifically made for comforters and pillows,” Latinsky says. “When you throw a comforter into the closet, it’s going to become unfolded and take on a life of its own.” In a designated bag, your warm-weather bedding stays safe from the elements in an attic or basement, and stacks easily. Clean first and stash in a storage solution like ChaosCleared’s lightweight, washable bags.

CLOTHING CLEANSE

Packing away unseasonable clothing is a great way to make your closets and dressers spacious and easy to navigate, and seasonal swaps are a perfect time to go through your clothes and see what you didn’t wear. Latinsky has a trick for identifying the items that aren’t getting play. “Hang all your hangers backwards and as you take clothes off to wear them, turn the hanger around. At the end of the season you’ll see the backwards hangers and realize how many things you didn’t wear.” For the hats, gloves and scarves coming into rotation, Latinsky suggests bins. “Anything that can’t be folded nicely, put it in bins or baskets.”

DECLUTTERED DÉCOR

Classifying items as high-touch or lowtouch helps inform where to store them. Things like holiday décor that we only reach for once a year can go on the highest shelves or the deepest reaches of the attic. High-touch items can be placed where they’re easy to get to. Just because it can be especially sentimental doesn’t make holiday décor immune to purging. “Just like clothing or toys,” Latinsky says, “it’s easy to just acquire and it can get out of control. Employ the one-in, one-out rule with holiday décor to keep it manageable.”

CLEAR SPACE, CLEAR MIND

As the weather chills and the days shorten, many of us start to feel a mental gloom as well. Even if it’s not full-on seasonal affective disorder, it’s still worth protecting our moods in the darker, colder seasons. “Prioritizing organizing and cleaning ahead of the winter is foundational,” says Latinsky. “It really has an impact. Your home is your sanctuary, and when you’re feeling your best in your space, you’re going to be at your best for the people in your life.” Latinsky loves the idea of not just spring cleaning but fall cleaning. Get ahead of an influx of visiting family and friends with a deep clean, and make room for gifts and holiday décor while laying the groundwork for a more buoyant mindset.

It’s an exciting time to be a member of the Bethlehem Food Co-Op. Ten years after the idea for the co-op first took root, the group is celebrating two important milestones: welcoming its 1,000th member and overseeing construction of its first brick-and-mortar grocery store. “I gotta keep pinching myself,” says Kelly Allen, a member of the co-op and outgoing board chair. “It feels amazing.” How did they get here? No recollection of the highlights of those past 10 years would be complete without the Red Pepper Story. Back in 2011, one of the group’s founders was reminded of the need for more easily accessible fresh food when a trip from her Bethlehem home to the grocery store to fetch a red pepper that was needed for a recipe took 40 minutes. When she shared her gripe on social media, she found quite a few sympathetic ears. But there was more than that—there was real talk about what could be done about it. A month later, about 100 community members packed a meeting room at the Bethlehem Area Public Library to explore the idea of a food cooperative.


So, what is a co-op, anyway? It’s an organization that’s owned, operated, governed and financed by its members. One name that’s relatively well known (even if its status as a co-op is not) is Recreational Equipment Incorporated, or REI. “It started out with a few people who wanted camping equipment and couldn’t get it,” says Allen. He and his wife, Meg Mikovits, joined the food co-op in 2013, the same year the organization filed its incorporation papers. “We knew it could be a game changer

for the Lehigh Valley,” Allen says. “We saw a broken food system where there were certain demographics that were being left out of the conversation.” Opening a community grocery store stocked with as much locally sourced food as possible was the end goal, but getting there would take more than a little perseverance. “It’s quite an involved process,” says co-op member Carol Burns. “We’re volunteers starting a brand-new business.” Adds Allen: “I don’t know if anyone understood how much work this would really take. We’ve had to learn as we go.” But a 10-year timeline for getting a food co-op up and running certainly is not unheard of; both the South Philly Food Co-Op and the Kensington Community Food Co-Op (also in Philadelphia) opened grocery stores in recent years, each one the culmination of 10 years of persistence, planning and fundraising. The Bethlehem Food Co-Op has been in location-scouting mode for several years. Members had several criteria in mind, including accessibility: the store had to be easily reachable by foot, by car and by bicycle. Ideally, it would be positioned to serve a community that doesn’t have immediate access to fresh and healthy food options, an area often dubbed a “food desert.”

Finally, the big announcement was made in March of this year: the co-op’s grocery store would call 250 East Broad Street home. An existing building on the site would be torn down to make way for a new, four-story building. The co-op will rent the first floor, and residential units will occupy the upper levels. The co-op anticipates getting its first crack at the space next year, with a target opening for the grocery store sometime in the first quarter of 2023. It’s progress that’s being cheered on by many, and not just those within the group. “We really have enjoyed good support from the community and from the city itself,” says Burns. Bethlehem Mayor Robert Donchez was among those celebrating the announcement in July that the city had secured a $2.9 million federal grant in support of the construction of the grocery store. Donchez called the project an “important catalyst” in neighborhood revitalization plans in the area. The grocery store will be a full-service, one-stop-shop destination. And it will be open to anyone, not just members of the co-op. “We really want the store to be a hub, a community hub,” Burns says. “Not just the place you go to buy your lettuce or your toilet paper.” They hope to include a community room and a kitchen for food preparation and educational demonstrations. In addition, the grocery store will continue the co-op’s mission of supporting regional growers and producers: buy fresh, buy local. Allen says the danger


of depending on the availability of food being trucked in from across the country was exemplified in the early days of the pandemic, when many store shelves were bare. “Our local food system made this massive pivot and people were able to get the food they needed,” he says. Even though the Bethlehem Food Co-Op has made some major strides as of late, there’s still plenty of work to be done. Co-ops depend on a membership base that is constantly growing, not static, so the group is always in recruitment mode. Prior to the pandemic, the co-op held house parties in which members were encouraged to bring nonmembers who might be interested in joining. “It was pretty cool, just sitting down

and eating cheese and crackers and talking about the co-op,” Allen says. Those events have gone virtual for the time being. But it’s still possible to connect with a co-op member, face to face. The group is a constant presence at farmers’ markets in Bethlehem and Saucon Valley. Also, the co-op aims to connect with families through its Community Hubs program, a partnership with local schools. “That’s the co-op meeting the community on the community’s turf,” Allen says. A block party in July drew a crowd to the site of the future grocery store. And Allen says they hope to hold a similar event at Friendship Park in the future.

But even those who are still laying low amid the pandemic can be in the know about all happenings related to the co-op. The group’s website (bethlehemfood.coop) is chock-full of information about its history, its mission and its plans. There’s also a biweekly newsletter (The Sprout) anyone can subscribe to. The co-op maintains a robust social media presence as well. The one-time cost to join the co-op is $300 per household. “We know that’s a heavy lift, so we offer several options,” Burns says. The fee can be paid in monthly installments; full and partial scholarship programs are also an option. And membership does have its perks, even before the brick-and-mortar location opens—several local businesses offer discounts and freebies. Finally, an ongoing challenge for the co-op, as it forges ahead with its grocery store and continues to add to its ranks, is constantly re-evaluating its identity. “The Lehigh Valley is a very diverse community. To really say who we are, what we’re about and how we’re going to serve the community is a tricky thing to do,” Allen says. The co-op is striving to add more diversity to its ranks, as most of its current members are white and middle class. Another part of the process of becoming a true representation of the community is simply listening; Allen says the co-op is interested in hearing about the “wants” of its neighbors. “We need to engage in conversations with those who will use this grocery store. We need to make sure anyone can walk in and say, ‘I belong here.’” bethlehemfood.coop

Too often, Indian restaurant food is associated with lunch buffets. But it can be more than that—and at Aman’s, which specializes in North Indian Punjabi cuisine, it certainly surpasses all expectations. And that’s a result of careful, dedicated intent. “We are not like the typical Indian restaurant where many things are half cooked and come out in less than 20 minutes,” says Baljeet Singh Bansal, one of the owners. Everything at Aman’s, which has been located in Downtown Easton since August 2019, is scratch made. It’s family run—say hello to Baljeet, Sukhjeet, Amandeep, Jasmeet and Gagandeep Bansal the next time you’re in for some butter chicken, lamb korma, saag paneer or Madras veggie curry. “What makes our restaurant different is our commitment to using high-quality, fresh ingredients, some which are sourced locally based on seasonal availability. We grind our own spices, make our own marinades and bases, even all our appetizers are made in house. We take this a step further with fresh, made-to-order entrées, breads, rice and tandoori (clay-oven baked) entrées. It takes a bit longer to prepare, but 99 percent of guests love it and will wait for the food to come out,” says Bansal. During the pandemic, Aman’s distinguished itself by conducting fundraisers to benefit food pantries in the region, delivering more than 300 family grocery bags and donating more than 4,000 meals. It’s a core tenet of their Sikh faith—Vand Ke Chakna, “to help those in need from the fruits of our labor,” says Bansal. “We are ever so grateful to the community and our patrons who have constantly supported our restaurant and enabled us to continue paying it forward,” says Bansal.

LITTLE MISS KOREA There is nothing like walking past the dumplings sizzling on the portable grill of Little Miss Korea’s farmers’ market stand. It’ll stop you dead in your tracks if nothing else will— and there’s a lot of competing delicious aromas. It all started in May 2018 when proprietor Lobynn Cha had the opportunity to buy the former Bada Bingg space at the Allentown Fairgrounds Farmers’ Market. “Opening a Korean restaurant has been a dream of mine since I was 12 years old,” she says, and credits her mother with much of the vision of opening her shop. “We emigrated to the U.S. in 2004 and my mother never lost touch of her culinary roots,” she says. You can find evidence of those culinary roots at the Emmaus Farmers’ Market and the Downtown Allentown Market—and, up until recently, the Easton Farmers’ Market (they had to stop due to staff shortages). Casual Dining UNION & FINCH Every neighborhood ought to have a place like Union and Finch—though it's admittedly a bit of a gamble for the establishment. “Everyone wants to be on Main Street,” says Ed Hanna, who runs the restaurant with his wife, Shahnaz. But being ensconced in a neighborhood gives you an edge, and if you’re doing it right—like Union and Finch is—the ability to really make a home for yourself among the people. And those are the people who come back several times a week. Folks love Union and Finch for its elevated pub fare with a

decidedly Middle Eastern bent, a welcome twist to the typical eatery. During the pandemic, they set up an outdoor patio and it’s here to stay. Come for the Burger and Beer special on Thursdays ($12 for a burger and beer or milkshake), or hang out and watch an ’80s movie in the background while you eat dinner, and forget what’s going on in the rest of the world for a little while. Walking into The Bookstore, a Prohibition-era-styled speakeasy, is like stepping back in time. Phillipsburg, NJ THE BARBECUE BOYS Just across the Free Bridge in Phillipsburg, next to a hot dog stand, you’ll find some of the best pulled pork, brisket and ribs—straight up barbecue fare—around. Everything is smoked to perfection using a real smoker. “We don’t use that liquid smoke stuff. All our barbecue is authentic American barbecue, the way it should be,” says co-owner Dean Zannakis, who runs the spot with his brother Andrew. Don’t let the new-ish status of this business, which opened in 2020, throw you off. The Barbecue Boys has likely been a long time coming. “My brother started smoking meats in the backyard when he was 10, and through trial and error, was able to master his craft around the age of 16,” says Dean. The dry rubs used, along with the sauces, are all house-made. Jill Oman, head chef at McCarthy’s Red Stag Pub & Whiskey Bar, didn’t always know she wanted to be in the kitchen. She graduated from college with a criminology degree that had her working in that field in Boulder, Colorado. However, she felt that there was something else she should be doing, and with the encouragement of her mother, she enrolled in The Art Institute of Colorado in Denver and received her BA in culinary management in 2004. Once graduated, she returned to the Lehigh Valley, where she had grown up enjoying classic Pennsylvania Dutch recipes. Oman’s mom had always made these types of dishes as well as pies. “When I think about what I loved about food, it always comes back to what my mother would make and her delicious pies,” she shares with a smile. On Oman’s days off, she spends time with her eight-year-old husky, Mia, and enjoys crafting. You won’t actually find this chef cooking when she’s not at the restaurant. “I never cook for just myself,” she laughs. “What I love about being in the kitchen is creating a dish for someone else and showing them you care. To me, that is the most gratifying thing.” Here, she is sharing a dish that is comforting and traditional: Cottage Pie. The difference between a traditional Cottage Pie versus a Shepherd’s Pie is all about the meat that is used. This recipe is an old family heirloom from the grandmother of McCarthy’s owner Neville Gardner. The handwritten recipe is a favorite dish served at the Irish- and Scottish-inspired pub. It is a warm and comforting dish with beef, carrots and onions. It is best served with some traditional brown bread, which you can buy the mix for at the Donegal Square shop connected to the restaurant. 5 lbs. ground beef 2 cups diced onion 2 cups diced carrots 2 Tbsp. oil 1 cup HP sauce (available for purchase from Donegal Square) 1/4 cup Worcestershire sauce 2 Tbsp. garlic powder 2 Tbsp. onion powder 2 Tbsp. salt 2 tsp. pepper 2 cups brown gravy (Oman uses Red Stag’s onion stout gravy— their super secret recipe) 2 Tbsp. brown sugar 2 Tbsp. thyme

Brown meat in large pan until half cooked. Drain fat and set aside. Meanwhile, sauté onions and carrots in oil until tender. Add ground beef. Mix well. Add all other ingredients. Mix well and simmer on low for 20 minutes. Put into a casserole dish. Top with mashed potatoes.

1350 grams flour 7.5 grams salt 38 grams baking soda 215 grams rolled oats 175 grams steel cut oats 381 grams whole meal flour (available for purchase from Donegal Square) 2500 grams buttermilk

Sift flour with salt and baking soda. Add all other dry ingredients and mix well (leave about 1/2 cup of rolled oats to the side for garnish). Add buttermilk and mix until just combined. Do not overmix. Spray five loaf pans with nonstick spray. Fill each pan 2/3 of the way. Sprinkle tops with remaining oats.

Bake in 350-degree oven for 10–15 minutes to heat thoroughly and brown top. Serve with gravy and buttered peas.

Bake at 350 degrees for 25 minutes. Rotate and bake an additional 25 minutes. Allow to cool.

Pumpkin Brûlée Latte JAY’S LOCAL At Jay’s Local in Allentown, every cup of coffee is special. “When searching for a coffee roaster, we knew we wanted someone local and with great quality beans,” says owner and operator Lyell Scherline. The coffee beans at Jay’s are roasted in Kutztown and personally delivered by the owners of Four Monkeys. “We always know when they arrive, as you can smell the freshly roasted beans as soon as they walk through the door,” says Scherline. When determining their seasonal specialties, Scherline says they like to think outside the box: “We understand that customers have a variety of options when it comes to restaurants, so we like to provide that little bit of novelty in our menu that you normally would not see elsewhere.” This fall, the Pumpkin Brûlée Latte is introduced to the menu. Made with 24-hour cold brew (from Four Monkeys) and pumpkin spice, the drink is then topped with whipped cream and house-made maple brûlée chips. It’s available hot or iced, “for those who still enjoy a cold beverage all year round,” says Scherline.

While the latte will pair nicely with just about anything on their menu, Scherline recommends their Southwest Avocado Toast to balance it out with something savory. Of course, diners can’t go wrong with the fan-favorite Waffle Muffin, a delicious merging of a waffle and a muffin, served with whipped cream, berries and a side of honey bourbon maple syrup with honey from Funny Farm Apiaries in Mertztown. “If our Waffle Muffin is your go-to, we highly recommend trying the seasonal versions like the pumpkin version in the fall, sufganiyot version during Hanukkah or the carrot cake filled with sweet cream cheese in the spring,” he says. Be on the lookout for the restaurant’s weekend pop-up shops, featuring local artists, vendors and small businesses to shop, and Thursday open mic nights hosted by Kris Fried and Tyler Rothrock through the fall and winter months. “Supporting and offering local is an important part of why Jay’s Local was established,” says Scherline. The restaurant recently began offering doughnuts and baked goods from Vegan Treats, Mary Ann Donut Kitchen and Lusitania Bakery. “Pair them with any of our classic drinks for a quick treat.” Keeping customers constantly excited and guessing what they’ll come up with next is extremely important to the team at Jay’s. “We take great pride in our weekend specials, which usually consist of items derived from our staff.
