Well, Well, Well I’ve been thinking a lot about wellness lately and how it seems like a state of overall wellness is something that we’re all constantly trying to achieve or to improve upon. I will always click on an article or listen to a podcast relating to the subject of wellness. And I know I’m not the only one perpetually trying my hand at new skin care products, fitness routines or healthier recipes. These all seem to be evergreen topics in our society. Is that because true wellness is some unattainable myth? Or, because wellness really is something that’s ongoing, for which we’ll never reach an ultimate finish line? I would say it’s the latter. I can’t think of much else in life that never gets old. And how cool is it that the thing that we don’t get sick of, and are eternally interested in, is ultimately just bettering ourselves?

It’s one of the reasons why I love this edition so much—and why I hope you will, too. Think you’ve actually got this whole wellness thing mastered? A wellness retreat takes wellness to a new level. Lehigh-Valley-based photographer Marco Calderon is an expert at crafting the perfect shot. “I am inspired by the energy and motion of the Lehigh Valley, my adopted home for the past 13 years,” says Calderon. As a commercial and lifestyle photographer, Calderon is happily living out his dream, but not without humble beginnings. “When I came to the U.S., I did not speak much English,” explains Calderon. “Needless to say, I felt a little out of place, and despite having a college degree in communications, I struggled to communicate with many of my new neighbors. My initial inability to speak with people actually helped me in finding my passion for photography. Where I could not necessarily communicate in words, I could communicate through images.”

And communicate he certainly has. Calderon’s work spans a large portfolio of various people, food, business owners and weddings. Currently, Calderon is pushing himself to improve his interior and exterior architectural photography skills. And while he thought it would be easier, Calderon is always eager to take on a new challenge. For him, it’s the experience that his clients have that always takes center stage. “My clients or subjects should always remember that I am here to help,” says Calderon. “The basic idea is incredibly simple: selflessly help others, in particular your peers, to achieve their goals, and you’ll achieve your own goals, right alongside them. There are some important nuances to discover, but the fundamental concept is as simple as that. If they achieve their goals, I am consequently achieving mine.”

At Retriever Brewing Company (RBC) in Orefield, there are plenty of treats in store for both humans and their furry friends. RBC opened in July and features a large 200-person beer hall as well as a sprawling outdoor patio with picnic tables, Adirondack chairs, cozy fire pits and plenty of space. “First of all, we hope everybody loves the beer,” says owner Matt Anderson. “Second of all, a big part of this project was getting a great atmosphere together for people to hang out and spend time outside with their dogs.” Currently, RBC is featuring a variety of local food trucks on their property as well as their handcrafted beers, assorted wines and canned cocktails to go. Talk about your commitment to quality and to clean, organic, cruelty-free sources. Our goal is to make an effective product with the least amount of ingredients, while maintaining the cleanest possible end result.

Sober Curious: WAKING UP TO A HEALTHIER WAY OF LIFE For many, the start of the pandemic made drinking alcohol a regular event. Alcohol sales increased by 243 percent as we looked at happy hour at home as a way to self-medicate from the stresses of increased child care, shifting work environments and chronic uncertainty. As the pandemic has continued, we’ve begun to examine our habits—both healthy and unhealthy—more

closely. That examination has extended to our relationship with alcohol. “Sober Curious” is a growing movement that provides an opportunity to reevaluate the role alcohol plays in our physical, emotional and relationship health.

TRENDING AWAY FROM ALCOHOL Taking a break from alcohol as a healthy detox has been growing in popularity, beginning with

“Dry January,” which first started in 2013. Now, nearly one in seven Americans participate in the month-long abstinence from alcohol. While Dry January’s focus is more of a detox from the holiday excess, being Sober Curious delves deeper into our personal relationship with alcohol. First trademarked by British author Ruby Warrington, who published Sober Curious in 2018 and The Sober Curious Reset

A Sober Curious lifestyle puts a pause (temporary or permanent) on drinking and looks to find more life-affirming activities and habits.

THE HEALTH IMPACT OF ALCOHOL Feeling the morning hangover is an obvious signal of alcohol’s poisonous effect, but even in moderation, alcohol can have a significant impact on one’s health. The morning lethargy and brain fog may very well be due in part to the cocktail the night before. Alcohol increases inflammation, causes weight gain, impairs memory, weakens the immune system, disrupts sleep and exacerbates insomnia, depression and anxiety. Cancer risks increase everywhere alcohol touches, from the lips to the colon, as does heart disease, liver disease and stroke. It is especially problematic for women, as women process alcohol differently and less efficiently than men, which makes them more susceptible to the adverse effects.

Being Sober Curious puts a fresh lens on the messaging we are consuming. Advertising assures us that the best way to have fun, to be fun, is with a drink in our hands, but is that really true? “Work hard, play hard” normalizes excess drinking in spite of the health damage, and in the last two decades the alcohol industry has pushed hard to increase the female market. It has been what’s called “pinking” the alcohol industry, with products like rosé wine, skinny cocktails and fruit-flavored liquors, all specifically targeted to increase alcohol consumption among women. It’s no surprise that, as targeted marketing to women has increased, so has their alcohol consumption. Countless memes flood social media glamorizing a drinking lifestyle while promoting the idea that the best way to de-stress and relax is with a drink. Being Sober Curious means taking a closer look at those notions as well as the marketing drive behind it.

Looking back on it now, Erin Miller realizes that anxiety has always loomed large in her life, even when she was a child. “I was an overachiever,” she says. “I was really stressed out if I achieved under. It’s just how I’m wired.” But the racing thoughts and sleepless nights really reared their head after Miller became a mom (two times) and was running herself ragged trying to get a new business off the ground. It was only after she had the courage to take a step back and hit the reset button that Miller was able to heal herself. Now she’s helping other moms do the same. Miller grew up in central Bucks County. She says she was always inquisitive and asked a lot of questions. “I always wanted to understand ‘why,’ so I could understand the root of things,” she says.

Miller is helping women restructure how they’re showing up to their own lives.

INSIGHT Later, she became interested in how a shared experience can elicit a variety of responses. She uses her own family as an example. “I was a child of divorce,” says Miller, who grew up with two biological brothers and one stepbrother. “We all experienced it differently and coped with it differently.” She earned her bachelor’s degree in psychology from West Virginia University in 2005, followed by her master’s in counseling from Holy Family University in 2010. By that time, Miller and her husband, Dustin, an Emmaus native, were living in the Lehigh Valley. They welcomed a daughter, Hannah, in 2013. Miller was on maternity leave from her job as a school counselor at an elementary school when she realized she had to make a change. “I just had this nagging gut feeling that I could not go back,” says Miller. “I was feeling this was not my path. This was not my course.” She took a leave of absence to figure it out. During that time, she became pregnant with her second child, a son, John Paul, and began to get serious about photography. What began as a hobby to document her daughter’s earliest days was emerging as a new career opportunity as friends began to

take notice of her artistic eye, and Erin Joyce Photography was born. Miller says she found her services in high demand, and she was eager to oblige: “I took on every single job that came my way.” And yet there was a dark side to that success. “I built this photography business in a very hustled way and burned myself out,” she says. “I really drove myself into the ground. But no one knew it.” Never was that more apparent than on a March day in 2016. Miller was on her way to a photoshoot when she feared she was suffering some kind of serious medical episode. “I physically just could hardly function,” she recalls. “My hands went cold and numb and so did my face.” She had dealt with invasive symptoms of anxiety before, but this seemed different. She told a friend, “I think I’m not OK,” and then drove

herself to an urgent care facility, where she was diagnosed with a panic attack. She was given prescriptions for anti-anxiety medications and sent on her way. But even as that very red flag was waving in her face, she was unsure about how to change her day-to-day reality. After all, she was still a wife and a mother with a long list of responsibilities inside and outside the home. Miller remembers jumping back into mom mode as soon as she returned home from the medical center, giving her two children a bath and starting the bedtime routine. The following month, Miller finally sought help, beginning with a visit to her primary care doctor. She also began talk therapy, and later enlisted the guidance of a hormonal nutritionist who helped her understand the correlation between what she was eating and how she was feeling. “I knew in the back of my head, I’m not feeding myself the right way,” Miller says. “My lunch was like the two chicken nuggets my kids didn’t eat.” Miller says it took about six months for her to start feeling better; ultimately, she spent about two years on self-help. “Through my journey I was so alone,” says Miller. “I was so ashamed. It seemed like everyone else had everything together.” But conversations with other mothers revealed cracks in that façade. Miller realized that, despite the stories being told by carefully crafted social media posts, there were lots of other women who were suffering in silence. “We’re conditioned to get straight A’s, get the perfect job, the big house,” she says. But the pressure that comes with the pursuit of perfection can be exhausting. Miller found a kindred spirit in Heather Chauvin, an author, podcast

host and CEO and founder of Mom Is In Control, which aims to empower mothers to live joyfully and become leaders at work and at home. In 2018, Miller launched a Facebook group called Same Boat Huddle—a virtual safe space where women could find support from peers who were in the (yep, you guessed it) “same boat.” The “huddle” part of the name conjures up an image of a sports team coming together to talk strategy before breaking away for a big play. Miller says the same approach can be applied to motherhood: “We’re all living our individual lives, but we still have each other.” Miller later started a podcast of the same name and moved into the world of coaching and mentoring with a fourweek curriculum designed to help women manage their schedules energetically, rather than just slogging through what can seem like an endless to-do list. Currently she offers a five-month program that she’s dubbed the Layered Growth Academy, which tackles everything from self-care to nutrition to setting boundaries to creating achievable goals. “It’s restructuring how you’re showing up in your life,” Miller says. Miller expands on the Layered Growth Method and shares her own struggles and triumphs in her first book, Motherhood Stripped, which was released in November of 2020. As she helps other women better manage the highs and lows of motherhood, her healing process continues as well. She’s constantly working with her own coaches and taking courses to further her personal growth and understanding of how women can take control of their own destinies. “You teach what you need to learn,” she says. “I’m growing and learning just as hard as I’m teaching.” But she’s come a long way from those days when prioritizing everything but her own well-being was the norm. “I learned that my worth is not in the laundry pile,” Miller says. “My worth is how I love myself and love my children.” And she wants other women who are standing where she was a few years ago to know that joy is very possible. “Sometimes we have to go through some bad things to get us to the peak of the next thing.” erinjoycementoring.com

The ultimate spiritual awakening awaits at Harmony Mountain Institute. Accommodations at the Himalayan Institute could be described as minimalist. Simplicity is encouraged at the facility, where guests are invited to free their minds from distractions and let go of the business that encumbers everyday life. The Institute offers a number of multiday or weekend wellness retreats, all designed to foster physical and mental well-being. Programs range from simple relaxation to more in-depth detoxification and rejuvenation, and focus on everything from diet to gut health to movement to cleansing techniques. “We run the gamut and people can figure out what they’re looking for,” says Kristina Pugh, director of marketing. When you come up with a good idea, it’s tempting to replicate it many times over—that’s how chain stores are born, and restaurant franchises are created. It makes a lot of sense. The same is true for Rakkii Ramen, a business started by chef-owner Marco Lu in December 2018 on SouthSide Bethlehem. He runs it with his son, Bryan, who attends classes at Lehigh, within paces of the restaurant. “I think secretary is a good metaphor for what I do, handling any logistical issues or customer service, and offer consultation for business operations. Anything Marco can’t do or doesn’t have time for, I’ll take on,” says Bryan. Within a few years of massively hard work, Marco and Bryan have replicated and tweaked this business model in other destinations, with Rakkii Ramen locations in Doylestown, New Brunswick, New Jersey, and Smithtown, New York, along with quick-service restaurant Takkii Ramen in Allentown, Quakertown and, soon, Slatington. “I love ramen. This was my dream. I wanted to bring something new to the area,” says Marco, who studied ramen in Japan before opening his businesses here in the Lehigh Valley. Restaurant ownership was a new thing when he undertook it a few years ago. But for Marco, the love of food started early— he was able to cook meals for his family when he was in middle school. And although he ran an importing and exporting business for many years, good business sense translates to other businesses, it seems. Perhaps, though, he ordained his own success with bowls of ramen: in Japanese, “rakki” translates as “lucky.”


It’s lucky, then, that the Lehigh Valley has more than one place for ramen. Rakkii offers both traditional and modern takes on ramen and Japanese fare, prepared expertly, and with meticulous attention to presentation— which is something you’ll discover even if you order ramen to go. The noodles and broth are packed completely separately, with at-home assembly instructions included. (Note: Marco made no fewer than three bowls of ramen during the shooting, styling and tasting of his food by Alison Conklin and me, such is the attention to detail.)

Marco also made sure that if someone at the restaurant has leftover food that they don’t go home brothless. (This is like handing out liquid gold.) It’s such a small gesture to a customer, but it’s an example of how to go the extra mile, and why businesses such as Rakkii Ramen have managed to attract and maintain such a strong following—even through a pandemic. (Global health crises seem to make people want to consume comfort food.) The broth, of course, is the backbone of ramen, and perhaps the most important ingredient. It is also the most time-consuming part; in order to create those layers of flavor, it takes about 10 hours. It is the definition of a labor of love. “We closed one day because we ran out of broth. People were shocked,” says Marco. The entry level ramen—and, naturally, the first one on the ramen menu, is the tonkotsu, a dish with pork belly, corn, scallions, fish paste and

soft-boiled eggs. If you want some extra heat, opt for the spicy miso. It brings a spicy hit initially that gradually dissipates. The ramen noodles are fresh and thin; Marco says they are similar to what you’d get in Japan if you ordered ramen. Other ramen varieties are worth seeking out, such as the fried chicken ramen and Osaka beef ramen. (Rakkii also serves udon, those chewy, sturdy noodles in broth, too.) If you’re a vegetarian, there’s a ramen for you with a vegetarian broth with tofu, scallions, pickled ginger, bean sprouts and bamboo shoots. (It wouldn’t be a vegetarian ramen broth without mushrooms.) And of course, you can customize and add ingredients to your ramen, such as egg, karaage chicken, fish cakes, scallions and so forth.

Marco set up the belowgrade shop in a building that had, in the estimation of a neighbor across the street, been vacant for decades. The location is perfect: adjacent to Lehigh University, subject to lots of foot traffic. The interior is spare, modern and subtly Japanese— it’s not full of stereotypical Asian décor tropes. Marco used reclaimed wood from the existing structure throughout his restaurant. They got to work quickly, and since its inception, their ambitions manifested rapidly, considering the growth of the Rakkii brand in just three short years. Each restaurant has its own subconcept—Cup o’ Rakkii, a Japanese take on Taiwanese bubble tea with fresh fruit teas, bubble teas and what they call dirty tea. The Lus also own another adjacent food business, Oahu Poke, in the Quakertown Trolley Barn Public Market.

Hawaiian poke is full of fresh veggies with raw or cooked proteins and served over rice or lettuce. You can mix and match the ingredients (like you would at Chipotle or even Playa Bowls, for example) and pick your own dressing. “We are always looking to bring this to new places,” says Bryan. The expansion can at least be partially attributed to the serendipity of Kevin Patton, a customer who kept coming in on nearly a daily basis over the course of a few weeks, and who helped get the Doylestown location off the ground. “He wanted to bring traditional Japanese ramen to as many places as possible. As an expert in business, he was able to succeed in our expansion. He is one of our good friends and a great business partner who we see eye to eye with in the realm of ramen,” says Bryan. Marco definitely spends time here in Bethlehem, but is frequently working with his staff in those other locations to help automate processes and streamline things—along with maintaining the quality that Rakkii Ramen is known for. And of course, there’s always the scouting of new locations. When asked if he sleeps, Marco says dryly, “I try, about four hours a night.” That diligence translates into bowls of high-quality ramen executed with fine attention to detail, with fresh, well-prepared ingredients. If there’s one thing they want you to know about eating ramen, it’s that you’ve gotta make some noise. Slurp those noodles. It’s a sign of respect—and a compliment to the chef, says Bryan.

What to Order Ramen, of course! Tonkotsu ramen, the spicy miso ramen—any of them! Seafood ramen adds fish cake, shrimp and mussels, in a soy dashi. In the “before noodles” menu, you could sample karaage chicken, which is breaded lightly and fried and is incredibly flavorful. (That same chicken appears in the popular curry chicken rice bowl.) Another option? The noodle wrapped shrimp, which is deep fried, with spicy mayo and Okinawa sauce. For dessert? There’s definitely mochi (flavors rotate); don’t miss the classy and understated mango crêpe cake, comprised of delicate cake layers and a yuzu cream and dusted off with vibrant, grassy matcha powder. Wash it down with some lychee rose or passionfruit Japanese iced tea, if you want something cold, or opt for something more immediately traditional and warming, such as green, jasmine or brown rice tea.

Random detail: If you use the bathroom, you’ll notice an unusual, although logical, addition for a restaurant: mouthwash. Marco thought that it might be a nice touch. “You know, if you’re eating a lot of garlicky or spicy things, and you’re on a date,” he says.

Endless Summer Vegetable Salad with Chef/Owner Heidi Borelli

Borelli believes in a pretty plate and salads that excite.

As they say, to know Heidi Borelli, owner and chef at the Greenhouse Enoteca in Allentown, is to love her. Her calming voice and kind spirit are apparent to everyone she meets. Her story with food didn’t start the way of so many other chefs. Her mother was a single parent who was an incredible example to Borelli. She worked many

jobs to make ends meet and was one of the very first female engineers at Mack Trucks. She also had a beautiful garden where Borelli’s love of seasonal, fresh-grown vegetables started— but it wasn’t until her early twenties, when she lost her grandmother and inherited her old cookbooks, that her love affair with cooking began.

The loss of her “apple pie granny” was what made Borelli want to bake a pie for the first time. There was something about the focus and precision of measuring that she fell in love with. “I used cooking as a way to work through the grief of losing my grandmother. Being able to nourish people and make people happy was therapeutic,” she shares. “Cooking was all I thought about and I loved it.” When she started dating her now husband she gained even more inspiration through his mom. “I would spend days with her in the kitchen just completely intrigued by how she would put together a meal so beautifully.” Here, she is sharing what she calls her Endless Summer Vegetable Salad. “It is full of magical seasonal ingredients that last from summer to early fall in Pennsylvania,” says Borelli. “I believe in eating a pretty plate—thoughtful food consumption is beautiful. Salads should not feel like a compromise for eating healthfully or depriving yourself of other foods you may love to indulge in. Salads should excite you for the culinary adventure you are fortunate enough to explore.” Sunday is always family night for Borelli, with her husband and three children. A homemade meal is paired with her family’s longstanding tradition of “tell me one good thing and one bad thing that happened today,” which has allowed for memories, connections and conversation to happen over shared plates and delicious food. At the very popular West End Allentown treasure Greenhouse Enoteca, Borelli focuses on fresh seasonal ingredients with modern inspiration of Italian food and shares her wanderlust spirit with each plate. “Food is nostalgic,” Borelli says. “Memories of childhood, travels and wonderful times come flooding back with just the smell of garlic hitting the pan.”

1 cup olive oil 2 lemons, juice plus zest 1 Tbsp. fresh oregano 3 scallions 2 Tbsp. Dijon mustard 1 Tbsp. honey Salt and pepper to taste

Combine in blender. Borelli typically doubles this recipe to make enough for the entire week. Or use your favorite high-quality bottled dressing.

VEGETABLES 2 cups butternut squash, cubed 1 cup artichokes 1 cup eggplant, cubed 2 shallots, sliced 2 Tbsp. fresh rosemary 2 Tbsp. thyme 2 Tbsp. brown sugar Olive oil Salt and pepper Preheat oven to 400 degrees. Toss all veggie ingredients with enough olive oil to coat. Add salt and pepper to taste. Mix fresh rosemary, thyme and brown sugar. Toss with veggies. Roast on a sheet pan until golden, stirring occasionally.

Cook orzo until al dente. Once drained, spread onto a sheet pan, add vinaigrette and combine with orzo. Allow to cool.

SALAD Little Gem and/or butterhead lettuce(s), or two of your favorite 1 yellow squash 1 zucchini Juice of 1 lemon 1–2 Tbsp. fresh garlic ¼ cup fresh dill, chopped ¼ cup fresh parsley Salt and pepper While veggies are roasting, wash, dry and chop lettuce. Using a mandoline or veggie peeler, peel yellow squash and zucchini into ribbons. Toss with lemon juice, garlic, dill and parsley. Salt and pepper to taste.

Once roasted veggies are cooled, add all ingredients to orzo. If you love cheese, add a ball of burrata! Drizzle the burrata with your favorite herb oil or balsamic glaze, sprinkle with edible flowers and Maldon sea salt.

Pretzel Charcuterie & Cheese Board EASTON WINE PROJECT “As a winery, offering a charcuterie board was a given. However, we wanted to make our charcuterie board special, something to remember,” says Amanda Thatcher, general manager of Easton Wine Project. “We wanted it large enough to share, really pleasing to look at and super satisfying to eat with wine or beer.” That something special became the pretzel charcuterie and cheese board. The dish includes five different cheeses to sample, which change regularly, and a variety of cured Italian meats. “We like to use locally sourced items whenever we can. We feature cheeses from Klein Farms in Easton,” says Thatcher. But what really sets the board apart is that the cheese and meats are nestled inside a jumbo Bavarian soft pretzel that is warmed to perfection. The board is served with Easton Wine Project’s housemade beer cheese for dipping, which Thatcher describes as “out of this world.” Two to four people can easily share this as an appetizer, and should pair it with a wine tasting.

“With a tasting, our guests have the opportunity to choose five different wines, allowing them to decide which wine they like best with the variety of meat and cheeses offered.” The menu changes seasonally, so guests can expect to find fresh ingredients or new dishes that reflect that. Don’t miss the Autumn Grilled Cheese, made with cheddar, apple butter and caramelized onions sandwiched between buttery, goldenbrown Texas toast, served with kettle chips and pickles. “Nothing screams sweater weather like a warm grilled cheese. The apple adds additional fall flavors that I think our customers will keep coming back for.” Easton Wine Project also prides itself on offering glutenfree options and Thatcher says they hope to include more vegan options in the future as well.
