You can add any protein, whether it’s chicken, shrimp, steak or salmon, or coconut tofu or coconut cauliflower. The latter two proteins are vegan and flash-fried with a coconut crust; they also offer vegan cheeses. “We always use fresh ingredients, and a major difference is that we make our dressings from scratch,” says owner Marcel Bedoya.
