Tacos, let’s face it, are like religion for some people. And there are many places where you can get a great taco around here. But El Jefe's has a strong following and ardent devotees for many reasons. One big one? They’re open late. Way late! This small-scale taco chain seems to specialize in locations in college towns, but here in Bethlehem, the taco options include shrimp, carne asada, carne molida picante (spicy ground beef), carnitas, chorizo and chicken. And of course, vegetarian. They come with rice, too (Mexican or cilantro lime), and several different kinds of beans, and so, so many different toppings.
