TECHNOLOGY INFRASTRUCTURE Kevin Dellicker Kevin Dellicker was working for a technology company when he had an idea to help schools bridge the “digital divide.” He pitched it to his boss, but it wasn’t a good fit. So he and his wife, Susan, took matters in their own hands and started Dellicker Strategies in the basement of their home. It was a simple idea, says Kevin.

“If schools would cooperate on major technology purchases, they could enhance their capabilities while reducing their costs.”

To date, they have cared for hundreds of thousands of COVID patients—every one the way they would care for their own families. That care included nationally-recognized, groundbreaking medical and operational innovations such as convalescent plasma, antivirals like Remdesivir, virtual care and monoclonal antibodies, to name a few. MOBILE CATERING George Pitsilos George Pitsilos has been satisfying the Lehigh Valley’s appetite for tasty tacos for a long time. Fresh out of college in 1977, he opened his first Take a Taco restaurant in Fullerton with help from his parents.

The restaurant moved to Grape Street before closing, but by then his famous soft shell tacos had become a staple at local festivals, such as Musikfest, Celtic Classic and The Great Allentown Fair.

“We use an eight-inch, hand-stretched flour tortilla that we lightly fry and fill with our standard beef, chicken or tuna salad,” George says. Another crowd favorite are the Pierogi Fries: deep-fried homemade pierogi wedges tossed in a garlic Parmesan or Buffalo sauce.

Pitsilos came back full-time when the Take a Taco food truck hit the road in 2018.

He also offers quick-service and full-service catering for private and corporate events year-round. “Menu items range from our soft shell tacos to a full-course meal consisting of appetizer, prime dry-aged steaks and scrumptious desserts,” he says. “We’re more than just tacos.”
