MOBILE CATERING George Pitsilos George Pitsilos has been satisfying the Lehigh Valley’s appetite for tasty tacos for a long time. Fresh out of college in 1977, he opened his first Take a Taco restaurant in Fullerton with help from his parents. The restaurant moved to Grape Street before closing, but by then his famous soft shell tacos had become a staple at local festivals, such as Musikfest, Celtic Classic and The Great Allentown Fair. “We use an eight-inch, hand-stretched flour tortilla that we lightly fry and fill with our standard beef, chicken or tuna salad,” George says. Another crowd favorite are the Pierogi Fries: deep-fried homemade pierogi wedges tossed in a garlic Parmesan or Buffalo sauce. Pitsilos came back full-time when the Take a Taco food truck hit the road in 2018.
