People of the Valley With every edition of Style, we aspire to tell the stories of the people of the Valley—those native to the area, ones who’ve never left and others just arriving. In January, we introduced you to eight local couples who recently tied the knot in the region. In February, we named six distinctive gentlemen our Men of Style, and we interviewed an HBO exec hailing from Bethlehem. In March, we told the stories of two senior sensations living in the LV; local business owner Vanessa Ungvarsky lit up our cover; and Katie Couric’s go-to organizer, Jeffrey Phillip, reminisced about life in Nazareth. Last month, a new breed of farmers graced our cover and the soulmate sisters behind Gifts for the Good Life talked business. We strive to shine a light on the Valley’s many individuals through each Insight column, restaurant review and retailer Q&A that we publish. There’s no shortage of stories to tell, but there are only 12 issues a year. That’s why we decided to dedicate an entire edition to you, the people of the Valley. On pg. 62, we invite you to get to know three individuals who are new to the Valley: Jhancarlo, Nour and Abdelhak. Though they’ve all fled their homelands for different reasons, these LV transplants have one very significant thing in common: the Valley’s Literacy Center. With students from 57 different countries, speaking 28 native languages, the Center has been a safe haven for adults in search of language, life and career skills for more than 40 years. Students learn these crucial survival skills, but they also form deep bonds and lasting friendships—the stuff that truly matters most. And because we know that life is all about who you share it with, we created the ultimate guide to dating in the Valley, pg. 56. Whether you’ve found your significant other or are still searching for love, we’ve curated a list that will make the process a little simpler and a lot more fun.

What’s one Style project you worked on that you particularly loved? The first piece I did. I love capturing artists in their off-stage element. Who are your greatest inspirations? Martin Schoeller. His portrait work is unreal. I base most of my portrait work on his style. Björn Olsson and Matt Christine are two of the top concert photographers in the world. I learned a lot from Matt when I was first starting out, actually, and I shoot shows with him fairly often.

SwingTime Dolls

From the classic costuming to the complicated harmonies, the SwingTime Dolls take their audiences back in time with the swing and big band hits that kept a country’s spirits up during one of the worst wars of the past century. Founder and manager Jillian Rossi took inspiration from her grandmother, a singer during World War II, when she decided to form SwingTime Dolls in 2016. She and the Dolls are all veteran Valley performers who love to lose themselves in the wartime era onstage. “We specialize in intricate vocal harmony,” Rossi says, “and that’s what keeps us on our toes and keeps performing as a group fresh.” To replicate the style of the era for an immersive show, the Dolls have studied the substantial effort that ’40s women put into their presentation, 20 MAY 2018 | lehighvalleystyle.com
from the victory roll, the pin curl and the bold, tidy makeup to choreography scoured from Fred Astaire and Ginger Rogers films. While the Dolls always take special pride in performing for elders and veterans, their sound is popular all over the Valley at summer concerts, theaters, restaurants and clubs. Featured nationally on NBC during the Phillies Alumni ceremony last year, they’re in high demand around Memorial Day and will be performing in Times Square for Fleet Week. “The most rewarding moments for us are when we encounter a World War II veteran at our shows,” Rossi says. “It’s so emotional and heartwarming to see them reminisce over the songs and stand at attention when we honor our military.” The

Tuesdays with Morrie By Daisy Willis
May 4–20: The bestselling memoir Tuesdays with Morrie celebrated its 20th anniversary last year, and after two decades, its resonant wisdom on life and death is still fresh food for the spirit. Reprising a production it put on 10 years ago, Civic Theatre of Allentown presents the play based on the memoir with the same actors returning to their original roles. Sports journalist Mitch Albom is reconnecting with an old mentor who’s been diagnosed with ALS. Morrie Schwartz, a professor of sociology in declining health, now shares lessons on the human experience and what really matters in the end. “For me, the play is about connections,” says director Bill Sanders. “Connections with people who are great influences and simpler connections, which we often take for granted.” Experiencing a story like this one in the intimate setting of live theater brings the message of connection another layer of compassion and empathy. On an abstract set, a composite of Morrie’s life adds a constant context to seamlessly present what is essentially a memory play. The impact our lives can have on one another is almost unavoidable in the presence of the actors. This year, Civic Theatre is undergoing extensive renovation, so its productions are presented at Cedar Crest College’s Alumnae Hall Auditorium, a large and comfortable space that’s allowing Civic to continue putting on excellent shows while revamping its historic space. “The auditorium will be completely restored to its original grandeur,” says Sanders, who is also Civic’s artistic director. “All of the gold leaf and the ceiling and wall coverings will be restored.” And perhaps most significantly for audience members: new seats! If you loved the book when it first came out or are discovering the story now for the first time, Civic’s production will inspire you to celebrate the relationships you have and maybe even reach out to someone you’ve fallen out of touch with.

Joseph Marlin Plant a Row Lehigh Valley After graduating from college, Joseph Marlin was looking for a way to get involved with helping others. “A friend asked me, ‘What is something the world would be less beautiful without?’ and I immediately thought of gardening,” he says. “I am most at peace when I am outside, creating beauty with nature.” That’s when Marlin found Plant a Row, a national gardening project that helps feed the hungry. Plant a Row Lehigh Valley was launched in 2016 as a chapter of the national Plant a Row for the Hungry program, serving Lehigh and Northampton counties. This program is run by local gardeners to help benefit those in the Lehigh Valley who are in need of a meal. “Since we started two years ago, gardeners from Easton in the east to Fogelsville in the west, and New Tripoli in the north to Coopersburg in the south, have donated over 8,000 pounds of fresh vegetables and fruits to the hungry,” Marlin says. These donations have benefited food banks, meal centers and homeless shelters in Allentown, Easton, Bethlehem and across the Valley.

Many of our clients come to the city to visit us and then enjoy the surrounding restaurants, bars and other activities that are happening downtown. It’s a really exciting area to be in. We’re getting that metropolis feel without all of the drama. How did you know you were destined for this field? I’m a pretty even mix of nerdiness and artsiness. I have always loved to make people happy, to spread positive energy; plus, I love hair, makeup and fashion. The combination of how fun this industry is with the opportunity to make people feel great about themselves—sometimes, I can’t believe this is my job!

When do you feel like you look your best? I definitely feel like I look my best with second-day hair! I love to use a medium curling iron to create a natural, loose texture in my hair. Add some texture spray/dry shampoo, and I’m feeling pretty. Plus, I have a pretty solid makeup routine that I do each morning. I love getting ready! What’s your favorite service to perform offered by the Blow Dry Bar? I really enjoy blowing out hair, it doesn’t matter what type! I really like creating a more natural, lived-in look with my blow-drys and hot tools. Also, I’m learning to spray tan from one of my coworkers, Tanya. They are super fun! Which celebrity’s style are you loving right now? Funny enough, I don’t really have a favorite celebrity style currently. I’ve always loved Drew Barrymore, Jessica Biel, Ciara and, the queen of hair, Jennifer Aniston. Sienna Miller has a great blonde color and always the best bangs, no matter what length

they are. I really like that I can actually now follow those celebrities’ hairstylists on Instagram! Is there a hairstyling trend you’re seeing more of lately? Lived-in, pretty hair. That’s where it’s at. I know the unicorn hair thing is still going on, but I’ve noticed that subtlety is really returning to hair color, not so much high contrast. At Love Obsessed in Quakertown, she’s able to spread love daily with fresh merchandise and inventory that make every customer’s shopping trip a positive experience!

Stacy Dill Owner/Buyer Tell us about how Love Obsessed came to be, and where the name came from! Love Obsessed was born at my dining room table in January of 2012. I started designing my own line of jewelry and wanted to open an Etsy shop for it—just needed a name. I was a new mom to my six-week-old son, Nicholas, and I was planning a Valentine’s Day-themed party for my family at the time. As I was sitting there trying to come up with a name, I was just thinking of how in love I was with love. And [the name] Love Obsessed just popped into my head. What are some of the shop’s most popular items that fly off the shelves? Wow, this is a tough one to answer, because, honestly, we have so many styles that come into the store and sell out in a matter of hours. And if we show it during our Facebook Live Sales on Wednesday nights, it sells out in under a minute! But if I had to pick a few, it would be our cage tanks, lace knee leggings and KanCan jeans. Our customers love our denim! Women who normally live in leggings most of the time, I give them a few styles of KanCan to try on, and they instantly fall in love. What are some items that readers may be surprised to learn the store carries? We have an amazing selection of shoes and tons of gift items. Customers always comment that when they are in a pinch and need a last-minute gift, they always head to Love Obsessed because they know they will find something. But I have to say one of the more unique items we sell, and a best seller, would be our boob stickers. For tops or dresses where no bra will work, the boob stickers are a godsend. And I can’t forget about the magnetic lashes, they sell out every time we restock them. What types of occasions do people shop the store for? The majority of our customers shop our store weekly. They know that what is there one day is often gone the next—and we put new styles on the floor daily. I think they are coming in that often because we not only sell pieces that you will wear every day, but we sell pieces that you will fall in love with—and that you won’t find anywhere else. I always say you know how good your wardrobe is when you are packing for a vacation. If you don’t have clothes you want to take away with
you, then that’s where we come in. Ladies always tell me that when they go on vacation, 90 percent of their suitcase is filled with Love Obsessed. I think our customers know that no matter what the occasion, they are going to find something amazing to wear at LO. Tell us about the second location in Souderton. The second location in Souderton was like a dream. I was born and raised in Souderton, so I always knew that I wanted to open a store there. When I found my location, I knew I had to do it. Even

though it was only 15 minutes from my other store, it’s home for me, so it just felt right. It’s always scary opening a second location, or opening any business for that matter, but my customers are so supportive, and they wanted that Souderton store. I signed the lease and said let’s do this. I carry totally different inventory at both locations, so most customers shop both stores. It makes me so happy to be able to own a store that people love to shop at, and when you can shop in the same community that you live in, nothing is better. My goal is five stores in five years—working on store number three right now. Mother’s Day is just around the corner. What’s a gift that you would suggest? We have hilarious mugs! One says, “Mom, no matter what life throws at you, at least you don’t have ugly children.” And we just got this new hand-poured soy candle line in; it’s a small, womanowned business based in California. Her scents are so unique, like Moonshine and Mermaid. And the labels say things like, “Hey mom, sorry about my teenage years,” and “Hey mom, thanks for the ridiculously good looks.” But honestly, if you know your mom’s wardrobe really needs an update, get her a gift certificate. She can come in, we’ll take good care of her, and she’ll leave feeling amazing in the new clothes she just got. The shop hosts many events throughout the year. What’s the best part about those? We do host a lot of events, but I would have to say our Fashion Show Fundraiser that we do twice a year—in April and November—is the best one. It’s a blast! Tickets always sell out. We have a packed house, the energy is amazing and the music is pumping. When the models start walking out in the latest fashions, people fall in love. That’s obvious when it comes to rear-ending an ice cream truck because you were Instagramming your kids being cute in the back seat, but what about feelings? Beleno teaches that health, happiness and even wealth are manifested through peaceful, joyful emotions, while anger and fear call pain and difficulty into your life. “The key is to realize that you have a choice to consciously create or inadvertently create,” she says. With her help, clients become “conscious creators,” aware of what they’re feeling and empowered to manifest what they want in life by managing their emotions and expectations.
How We Go Wrong One of the most devastating feelings in life is powerlessness, and if you pay attention, it’s remarkable how often people choose powerlessness for themselves. Beleno describes a “bad movie” we play over and over for ourselves that creates a rut in behavior and expectation. Sabotaging belief patterns like, “I can’t be happy until XYZ happens,” or, “I can’t leave my job because there’s not another one out there for me,” put off our pursuit of happiness sometimes indefinitely.

“Typically, the stories involve guilt, regret and remorse,” Beleno says. These emotions feed into subconscious patterns and what Beleno calls the “I’m not worthy” syndrome. Feelings like these are all too seductive and can drown out what your gut tells you, and what your heart wants. Life becomes something that happens to you, and often disappoints.

To begin to change a stubbornly unsatisfying life, Beleno coaches clients in cognitive retraining techniques and fosters a new attitude towards intuition. “Not following what our hearts want is the number one reason happiness is sabotaged,” she says. “Our guts and hearts know exactly what is best for us, but we tend to allow social norms to rule us instead.”
For example, when your boss asks you to work overtime and your instinct says NO but your mouth, putting others’ expectations or opinions first, says “Sure, no problem,” you’re the one who will suffer physically and emotionally in the long run. You knew it, on some level, and yet you chose it. It’s denying what your heart wants, over and over in life, according to Beleno’s teaching, that leads to illness and injury. Taking the mind-body connection a bit further, Beleno teaches that our bodies are constant barometers of our emotional balance. “If you experience dis-ease,” she says, “then, quite simply, you are emotionally imbalanced, holding onto emotions that are fear-based.” Listen to your intuition when you are not feeling emotionally “quite right,” and you can stave off the manifestation of that cold or flu or broken bone.

Meet the New Owners of

Not everyone gushes about the ins and outs of their daily routines like John and Traci Torrillo. But then again, not everyone has a gig as sweet as the Montgomery County couple. “I’m not selling copiers. I’m not selling insurance. It’s supposed to be fun,” John says, with a grin that’s evident even through the telephone. He and his wife purchased the Sandt’s Honey

Company in Easton three years ago—they got the keys to their new livelihood on April Fool’s Day of 2015. As one can easily deduce from the name, their family business used to be another family’s business. The company’s founder, Floyd Sandt, got his start in the beekeeping business back in 1918, with the acquisition of four hives. He had previously worked as a farmhand on what was then known as the Wagener orchard and homestead; Wagener is the name of the road on which the business is located today. By 1974, the company was managing some 400 hives, as well as supplying beekeeping equipment. But, just two years later, Sandt’s relinquished its hives to focus on the processing and distribution arm of the honey business.

Sandt’s was owned and operated by the same family into the twenty-first century, until, according to the Torrillos, the family’s patriarch passed away, and the current generation decided to pursue other interests. Luckily for them, the Torrillo family was waiting in the wings. “I feel very fortunate that we found the company and were able to continue the legacy,” John says. By the time Traci and John were signing on the dotted line in 2015, they had searched in vain for a business to buy for three years. Finally, John recalls: “I came across a listing that didn’t mention [Sandt’s] name. I ended up following down that lead.” Prior to that fortuitous find, neither John nor Traci imagined they’d wind up working in the food industry, let alone managing a honey business. They didn’t know it at the time, but they were signing up for a membership in a somewhat exclusive club. “When we came into the honey business, the people were like, ‘Who are these people?’” says John. Adds Traci: “It’s a very small industry. Everyone knows everybody else.” John and Traci were both finance majors when they met at Penn State. After graduation, they waded into the corporate world, rising in the ranks at both Fortune 500 companies and small, privately owned businesses until they determined a career change was in order, and they went on the hunt for that perfect place that would fit the bill. Once they came across the listing for

Sandt’s, their decision about what to do next, they say, was not a difficult one. “It’s a 100-year-old company,” says John. “There aren’t too many of those around anymore.” Still, could a pair of business aces hack it in honey? They were about to find out. “We just dove in,” Traci says. Beyond their own substantial business acumen and ability to adapt, they were aided by some of the best teachers in the business. A production manager who had been with the company for 23 years would continue on with the Torrillos as part of the deal. Also, the Sandts themselves agreed to help with the transition. The two families forged a friendship that is still strong today. “[Sandt] family members still stop by,” Traci says. Adds John: “It’s been a win-win for everybody. We’ve given it the TLC they wanted it to have.” In this case, the T in TLC might stand for technology. Although the Sandt family had done an admirable job of maintaining the reputation of the brand and the quality of the products it produced, the Torrillos say the company was in need of some modern enhancements. Mission number one was updating the company’s logo and website, as well as its marketing strategies. “[When we took over], there wasn’t even a phone number on the website,” John recalls. They also had to revamp the processing and packaging facility with newer, state-of-the-art equipment. John says that walking into the building on Wagener Lane for the first time was akin to stepping into a time machine; the labeling and capping of the honey containers was still done by hand. The Torrillos purchased machinery to expedite the packing process, and more recently added a new hot room—think of it as a sauna for honey, and a key component in the process of bringing the sweet stuff from hive to home. After the raw honey is delivered to Sandt’s from beekeepers both in and out of the U.S., the product is heated for two to three days before it’s strained. The key word there is strained—not filtered. That, according to Traci, is one of the hallmarks of Sandt’s honey, and something that sets it apart from others brands on the shelf. While other companies may purposefully remove pollen,

particles or other gifts from Mother Nature, Sandt’s keeps it all-natural; those “goodies” are what give Sandt’s honey its cloudy appearance. Sandt’s also refrains from adding in extenders. As the company likes to tout, customers can be sure they’re getting “unfiltered, raw honey—as the bees intended.” And, even though Sandt’s offers a number of varieties, like blueberry, alfalfa and clover, the Torrillos are quick to point out that the shift in taste is not the end result of adding artificial flavor to the batch. “The flavor comes from the flower itself,” Traci explains. When pressed to pick a favorite, she says she prefers the citrusy taste of the orange blossom varietal, while John is partial to the wildflower. Following the upgrades to the Easton factory, the five-member team at Sandt’s can now crank out anywhere from 2,500 to 10,000 pounds of honey a day at the more than 3,000-square-foot facility. And that honey is winding up in kitchens and cupboards around the country, thanks to the reach of one of its chief purveyors, Amazon.com. While the Torrillos say the vast majority of their business is wholesale, Sandt’s honey can be purchased locally at stores like Valley Farm Market in Bethlehem, Calandra’s Cheese in Nazareth, Queen’s Nutritional Products in Allentown and at the Allentown Fairgrounds Farmers Market. It’s not uncommon for a first-time client to become a longtime client. “Some of our customers, we’ve had since the 1970s,” says Traci. When it comes to the division of labor in this family operation, John is often rolling up his sleeves on the factory floor, while Traci is working the phones, whether she’s in the office or not. “I’ve already taken orders on my cell phone in the grocery store,” she says. She’s also the de facto marketing manager and brand ambassador. “I always carry honey in my purse and I give it away for free,” she explains. John says he gets a kick out of recounting his routine to friends who still work in corporate America. “I go to work in jeans and shorts,” he says. “These guys are still wearing suits.” Besides keeping business buzzing for their honey company, John and Traci are also juggling a plethora of activities at their own “hive.” They’re the parents of three active teenagers—Paul, 18, Lia, 16, and Nick, 14. They say their youngest, Nick, has shown an interest in the honey business. More than a year ago, he and his mom began maintaining some beehives at their Montgomery County home. He’s also pitched in at the factory in Easton; a promising sign, perhaps, that Sandt’s will continue to thrive as a family business, as the brand that honey connoisseurs know so well marks 100 years and counting. sandtshoney.com

he selection of the contemporary HoudenHAL home and the change to calling it an “Idea House” has taken SOTA in a different direction from their Show Houses of the past. HoudenHAL is their first LEED-certified house. It is constructed totally from sustainable materials and is powered by a wind turbine, solar panels, and geothermal wells. The home owners, Hersh and Robin Ruhmel will give a seminar about energy efficient building on May 10th at 6:30pm at the Idea House, which will be open to the public. Each and every room of HoudenHAL offers different architectural features, moldings, window designs, countertop materials, cork floors, bamboo floors and bamboo custom cabinetry. The Foyer and Main Stair Systems combine maple art deco spindles and customdesigned metal fabricated by P.J. Huddleston. The designers must use zero VOC paint so as not to compromise the LEED certification, and SherwinWilliams and Benjamin Moore are graciously donating the paint for their use.

This year, there are several designers who are new to participating in a SOTA Show House project: Love Your Room (Shoshana Gosselin and Jennifer Bonner), Kemble Richards (Lauren Farrell), WW Designs (Willy Byrd and Wandra Cain in collaboration with Jason Martin of J. Poplar Decorative Painting), The Design Studio at HoudenHAL (Robin Ruhmel), and SpunDesign (Amy Bloom Coleman). In addition, all closets, the mudroom and the laundry room have been designed by Robin Ruhmel and furnished by Creative Closets (Ellen Gellar-Elstein, The Closet Lady). Several long-time supporters of SOTA’s Show House fundraisers have returned, namely Scott Rothenberger of Scott Rothenberger’s PLACE, Lia Papasimakis of House Splendid, and Russ Schulley of Millcreek Landscape Design. Sharon Kimmerle Interior Design is partnering with Divine Resale (where Sharon also volunteers) and using her specialty in recreating donated items to furnish and decorate the living room. On May 3rd at 6:30pm, Sharon will host a seminar at the Idea House where she will be demonstrating how to reupholster dining room chairs. As part of the Idea House opening, Robin Ruhmel will be unveiling The Design Studio at HoudenHAL, located in the basement of the home. People touring the Idea House will be the first to experience Robin’s comprehensive Design Studio. The third floor, which has been outfitted by the builder to be a home theater, will be home to SOTA’s Attic, the group’s resale boutique. SOTA’s Attic will offer the best of gently worn handbags, jewelry, scarves, wallets, household decor plus much, much more. John and Kayla grew up five minutes away from each other, but they never actually met due to a county line dividing their neighborhoods. Kayla went to Whitehall High School and John to Parkland High School. After graduating from college, they both moved back to the Valley. One night, through mutual friends, sparks flew over boneless Buffalo wings and Blue Moons at P.J. Whelihans. Shortly after meeting, John was offered a job (that would pay for his master's degree) in Northern Virginia, and the two moved out there, under one condition: when John finished his program and met the retention policy, they could go wherever Kayla wanted. After four years and one fur baby (a French bulldog named Knox) later, they talked about what would be next for them. They married in October 2017, honeymooned right after and moved to New York City—where Kayla had dreamt of living ever since she was a little girl. Though they’ve lived in three different cities over the course of the past five years, their roots in the Lehigh Valley are a constant reminder of staying humble and remaining true to themselves.
Despite being the vice president of the business and diversity councils for the Greater Lehigh Valley Chamber of Commerce, Angela never expected to meet her boyfriend at a YPC meet and greet. She now admits that it's actually the perfect place, as the events bring together local professionals with similar lifestyles: career-oriented, mature and social, a combination that is sometimes hard to find. Angela and Zachary met (and instantly hit it off) at YPC's June 2016 meet and greet, which took place at Bell Hall in Allentown. He initially reached out via a message on LinkedIn, asking how he could get involved with the Council. She stayed afterwards to have a drink with him, and they’ve been inseparable ever since! They share a passion for traveling and live in Downtown Bethlehem together, with their two cats, Aaron Samuels and Stevie Nicks. They also share an alma mater, Moravian College, but because of their four-year age difference, never knew each other during their time at school.

They are strangers in a strange land: men and women the tourist found his bride-to-be; she was a friend who make the bold choice to leave behind the only of his cousin’s. Nour Sayegh
Discussing her native Syria brings tears to 33-year-old Nour Sayegh’s eyes. Like so many of her countrymen and women, she watched her nation be torn apart by a civil war that began in 2011 and continues to rage today. She and her family toughed it out as best as they could, but she and her husband, Elias Makkad, were married for just two months when the factory that they depended on for their livelihood was destroyed in the conflict. “We tried to make it work in Syria. We couldn’t do it,” Sayegh says. They knew they had to get serious about leaving their homeland. “We had to start a new life, a new everything.” They came to the U.S. two years ago. By that time, they had another reason to seek out a fresh beginning: “I wanted a better life for my son,” she says.
When asked what she likes most about the U.S., Sayegh replies quickly and bluntly:
‘It’s safe.'
A friend told them about Whitehall: “Good schools, good community,” says Sayegh. They bought a home there, and both Makkad and Sayegh began taking classes at The Literacy Center. Sayegh says she immediately felt at ease with her peers and her teachers. “Different cultures, different countries, but when we come here, we are all family.” In fact, her husband, Makkad, can call the staff at The Literacy Center his official work family—he was hired as the center’s controller in 2016. Sayegh, meanwhile, has been boning up on her English in the hopes of joining the local workforce herself. “I think I need a little more [class time], but I think I’m ready,” she says. Sayegh is a woman of many interests; she says she has her master’s degree in psychology, so teaching could be an option. But she’s also very interested in fashion and interior design, so those are possible career paths as well. Even while she talks excitedly about what the future may hold, Sayegh has not forgotten her roots. Her parents also made it out of Syria; they immigrated to Canada. But her grandparents are still in Aleppo. Although Sayegh can speak to them by phone, she knows visiting them is out of the question for now. She worries about them, and about what will become of her birthplace. When asked what she likes most about the U.S., Sayegh replies quickly and bluntly: “It’s safe.”

For Algerian natives turned Allentown residents, Abdelhak Mimoune, 38, and his wife of eight years, Sihem Boubesla, 36, immigrating to America was like hitting the lottery— literally. They were selected in the Diversity Immigrant Visa Program, also known as the Green Card Lottery, which seeks to diversify the immigrant pool by selecting applicants from countries with low rates of immigration to the U.S. The program offers as many as 50,000 visas a year. According to U.S. Citizenship and Immigration Services, winners are chosen at random. Mimoune remembers how he felt when he got the news that he and his wife would be going to America: “I felt like I was just born!” He also remembers the exact day in 2015 when the pair arrived on U.S. soil. “I told her [Boubesla], November 15 can be the first day of the rest of our life,” he recalls. One problem: neither spoke a word of English. “When I came the first time, I couldn’t do anything in the USA,” says Boubesla. “I speak Arabic and French in my country.”

Enter The Literacy Center. “All of the teachers are the best,” Mimoune says. “They support us. They treat us like family.” Mimoune credits the center with imbuing him with the tenacity he needed to earn his commercial driver’s license from Lehigh Carbon Community College. Now he travels around the country he’s proud to call his own, taking in the sights from behind his tractor-trailer’s substantial windshield. “That happened because I came [to The Literacy Center],” he says. Boubesla says she, too, found an inner confidence that helped her adjust to her new life, thousands of miles away from home. “Now I can go out without my husband, I can speak with people,” she says. “I try to sharpen my English.” Although they acknowledge missing family members who are still in Algeria, both Mimoune and Boubesla are enthusiastic and grateful for this new chapter in their lives. Mimoune can’t help but grin when he remembers the stroke of good luck that gave him and his wife a one-way ticket to America back in 2015. “USA is the dream for everybody,” says Mimoune. These, says Bauder, are just a few of The Literacy Center’s success stories. And, while the importance of the skill building can’t be overstated, perhaps it’s the fellowship building that happens outside of classroom time that’s even more essential. “They have baby showers for each other, birthday parties for the students. It’s amazing to see that,” she says.

It takes roughly 1,500 hours of instruction for a non-native speaker to become fluent in a language. That's about seven years, from beginner to fluency. The student population of The Literacy Center represents 57 countries and speaks 28 different homeland languages. The Literacy Center staff and adjunct teachers are also multi-cultural, representing five countries: Syria, Jordan, Egypt, Hungary, Dominican Republic and Puerto Rico (a territory of the U.S.). Twelve students earned U.S. citizenship last year. To become a citizen, you must pass the naturalization test, which is comprised of an interview session and an English and Civics test of 100 questions focusing solely on U.S. history and government. The application fee is $725. It is not a multiple-choice test. A sample question would be: Who is the Chief Justice of the United States today? There are four sections to the GED (General Equivalency Diploma), each requiring a passing grade: Language Arts, Math, Science and Social Studies. A typical math question would be to simplify this expression: -5x + 16 - 8x - 14 + 10x The Literacy Center has changed the lives of 28,000 people over the course of 41 years through community-based instruction in ESL and GED preparation.

Artisan Chocolates & Gourmet Pastries DOLCE PATISSERIE Many consider chocolate as their passion, but just a fortunate few, like Alan Pitotti, have careers that are chocolate-coated. He’s the owner of Hellertown’s Dolce Patisserie, a shop where artisan chocolates and other displayed goodies dare patrons to leave without a nibble. Dolce Patisserie has satisfied the community’s sweet tooth for a while, celebrating its tenth anniversary in 2018. Pitotti makes everything in house, from scratch: chocolates, special occasion cakes and pastries. His signature cake, the Dolce, is a chocolate cake with vanilla crème brûlée layer, fresh raspberries and chocolate mousse. He also caters weddings, showers and other events. So often he hears his creations are almost too pretty to eat; the key word here is “almost.” Pitotti always enjoyed cooking with his mother, but it wasn’t until culinary arts study at Northampton Community College, and later at the Culinary Institute of America, that chocolate became his passion. “I enjoy bringing an artistic display to gourmet chocolate,” he says.

Chances are, you’ve heard about Oak, the new steakhouse restaurant in the Valley. Before it even opened, there was a buzz—Oak was and is a tremendous undertaking, occupying four floors of a building in Downtown Easton, just off Centre Square. It’s owned by Mick Gjevukaj, along with his brother Bekim and Arti Kamberaj. (You probably know other restaurants that share some degree of ownership with Oak—River Grille and Ocean.) Oak climbs up two additional floors beyond what you see when you walk through the door to the 128-seat restaurant—and goes down a level, too. It’s atypical for a steakhouse—guests won’t encounter excessive formality in the service or table settings. “This place doesn’t feel like a stuffy steakhouse,” says chef Ryan Kor (formerly of Ocean), who runs the very open kitchen with chef Steve Schwier. “People are sharing steaks; it gets warm and cozy in here.”

It’s possible to spend hours in the space and not see everything.
The name fits on many levels, notwithstanding the metaphorical value of calling your restaurant after a tree that stands tall and weathers any storm. But it also hints at the outsize nature of the structure, whose design was helmed by Easton architect Jeff Martinson. So much wood has been repurposed. There’s a faux tree inside and each floor offers varying degrees of dining and lounging options (groups and business meetings are welcome here). An inviting rooftop lounge with a retractable glass ceiling offers a bar, soft seating, high-top tables and plenty of greenery. Enormous barn doors separate sections of the second-floor dining room for private events (there’s also an outsize fireplace in that space). Detailed murals by New Jersey artist Lily Solis tell the restaurant’s story, from possession of the building to celebration of its completion, and position Oak within the history of Easton, too. It’s possible to spend hours in the space and not see everything. It’s also possible to work there and not see everything, as both chefs attest.
Tomahawk Steak Many visitors are so smitten with the interior that a certain section of the restaurant receives repeated requests for seating—far more than what can be easily accommodated. Bekim and Laura Streubel, the general manager, were reluctant to tell where, exactly, in the restaurant this referred to, for fear of adding to an already insatiable demand. “We try really hard to grant all the requests,” says Streubel. Restaurants, if well designed and executed, create their very own world, one that sharply contrasts from our everyday lives. It’s culinary
escapism, often with an element of theater at work. At Oak, steaks are the main draw, naturally, and all of the aging takes place in house in a temperature- and humidity-controlled room lined with giant blocks of pink Himalayan sea salt, which Kor says add to the flavor. Kor and Schwier are in there several times a week, rotating the several hundred pounds of different cuts and putting in new ones. The beef options start at a six-ounce petite filet ($24.95) and run up to the 48-ounce porterhouse steak for two ($79.95). steakhouse. The tuna is served with a flavorful seaweed salad and wasabi. The menu also includes items such as a half chicken and swordfish with jalapeño corn cake. Salmon, scallops, crab cakes and a bone-in pork chop round out the entrees for those who want something other than steak. Another popular starter is the charred, thick-cut bacon—sliced so thickly it resembles ham. It’s served with just enough maple syrup to complement the sweetness of the pork. “You can’t go wrong with the bacon,” says Schwier. (He’s right. It’s a substantial cut and incredibly flavorful.) There’s an incredible attention to detail that pervades the service at Oak. When you order a steak, it is delivered on a plate that may be up to 500°F—the steak will be sizzling in a pool of unsalted butter and salt and pepper. Sometimes the plate is still fairly warm, even after a customer has finished eating. Delivering on a hot plate keeps the steak that way, but don’t worry—the steak doesn’t continue to cook, nor do you need to wait to cut it. “It arrives rested, but hot. It took a lot of work to figure that out,” says Kor. “We’ve evolved steak on a stone to steak on a plate,” jokes Kor. Of course, steaks are what people come into Oak for, but the quality translates into other proteins, too. “We sell a lot of seafood and fish for a steakhouse,” says Kor. Their chickpea fries are hugely popular with the vegan crowd, anyone looking to limit their gluten or starch intake and general health nuts alike. Chef/owner Domenico Lombardo accredits the dish to his father being born and raised in Sicily, where chickpea cake was a commonly enjoyed “peasant food.” He himself grew up eating it sliced between bread, so, when looking to put a gastropub spin on it, he decided to cut it into French fries. The shape is really where the French fry comparison ends, though. He says the consistency is more like mashed potato or falafel, but the skin does make it a chewy, crunchy bite. The dish is low on spice, with zero additives, and true to the chickpea flavor—all they add is salt, parsley, pepper and olive oil. Because Lombardo says the chickpeas don’t retain oil the same way potatoes do, he suggests pairing the appetizer with something bubbly, expertly recommending a glass of rosé champagne at dusk on their patio by the fire pit this summer. 1223 W. Beer is cool and all, but Union and Finch decided to up its flight game with a creation that allows for endless champagne-and-juice pairing. Yep, that’s right, a mimosa flight. Standard flavor selections— orange, cranberry, pineapple and grapefruit—are always available, but this spring, look out for surprise infusions like raspberry, blueberry, citrus and pomegranate, which will be rotated weekly. The flight is available any time but is, of course, most popular during brunch, which the restaurant offers Saturday and Sunday from 10 a.m. to 2 p.m. Owner of Union and Finch, Shahnaz Hanna recommends pairing the flight with the Croque Madame (sourdough bread, topped with fried egg, prosciutto, Gruyère and hollandaise, served with

a side of greens), one of their most popular brunch dishes. “[It has] a vast flavor profile,” she explains. That said, Hanna assures that one can’t go wrong with a mimosa flight and any of the newly expanded items on Union and Finch’s brunch menu.
