Fox Meadows Creamery & Country Market BY M. DIANE MCCORMICK

Bob Fox gave his sons Chad and Cory a plot of land to tend. The young brothers planted fall produce and sold the harvest at a roadside stand. Hard work, they learned, resulted in people who thanked them by giving money in exchange for their goods. “There’s no such thing as instant results or instant success,” Chad Fox says today. “You have to plant. You sow. You continue to do things right and serve people well, and eventually, Lord willing, you reap.” That stand still sells fall pumpkins, recalling the humble origins of Fox Meadows Creamery & Farm Market. The family that once churned ice cream on the back porch now produces 40,000 gallons a year. Their third-generation farm in Ephrata is a destination blending tradition and innovation to deliver fresh tastes, all with an eye on sustainability. Bob Fox grew up on a small farm around New Holland before starting his own in Ephrata. His sons pursued outside careers—Chad in accounting, and Cory in procurement for a local hardware store—but the entrepreneurial spirit instilled by their dad brought them back to the dairy farm. “This is where it gets kind of funny,” says Chad. Seems that the brothers married sisters, the daughters of a pastor. “My brother and I are in partnership, and we all work together. We see a lot of each other.” Cory’s wife, Krista, took the Penn State Ice Cream Short Course and creates any flavors the others can dream up. Chad’s wife, Andrea, is HR director, nicknamed “the people whisperer”. “That’s our secret recipe,” says Chad. “It’s not the ice cream. It’s the people.” The original idea to expand dairy operations emerged from the question of how a small farm could support more than one family and continue into the next generation. A creamery was the natural choice.

In the winter of 2014-15, with a building built but no commercial ice cream produced yet, the team developed a repertoire of flavors, “several of which we definitely will not repeat,” says Chad (one customer said he threatened his misbehaving kids with spoonfuls of the superspicy chocolate sriracha). Today’s menu of naturally sourced ice cream balances classics, such as Madagascan vanilla and vine-ripened black raspberry, with creative new tastes. The honeyed lavender is a cult favorite. “We use quality ingredients and take a lot of care with our flavors to make them extra wow. We love to create, and that’s what makes ice cream so much fun.” During the pandemic shutdown, business churned away. “We feel really blessed,” says Chad. “Folks are looking for comfort and sources of joy in tough times.” For guests, the custom-built creamery engages all the senses. The dipping case dazzles with 24 types of ice cream and sorbet. Ice cream artisans do their magic behind a viewing window. The scent of homemade waffle cones wafts through the air. The wraparound porch overlooks the fields where cows are making the milk for scoops of Wilbur Chocolate, coffee flavor, and Belgian cookie butter. Bob Fox infused the operations with intentional stewardship of the land. Farming practices minimize runoff into the Chesapeake Bay. Strong partnerships include a teaming with Lancaster County Conservation District, which helped procure funding. The thriving compound employs dozens of people. The country market offers locally made treats. Lunch menu highlights include scratch-made soups, sandwiches, and burgers prepared from local angus beef. “It always pairs with ice cream,” Chad notes. A Leola location opens—“hopefully, Lord willing,” says Chad—in 2021. Business progresses on a foundation of core values—faith, hospitality, service, teamwork, leadership—wrapped up in quality products and a memorable experience.

“You work those elements, and it seems like our guests have thanked us by continuing to come out,” says Chad, echoing the days of the brothers’ produce stand. For summer 2020, watch for seasonal ice cream tastes such as blueberry crumble and peach cobbler. Campfire s’mores flavor, a customer favorite, will return. “The best way we know to get the true toasted marshmallow flavor—we actually torch all of our marshmallows by hand,” says Chad. And his favorite flavor? He doesn’t hesitate. “My favorite is cookies and cream. You can’t go wrong with cookies and cream.”

Home brewing has gained in popularity over the past few years—but 2020 just might blow the lid off this trend, thanks to this year’s stay-at-home lifestyle. Whether you’re new to home brewing or have already given it a whirl, Brad Moyer’s tips can help you up your home game.

Let’s start at home plate: What supplies will I need to begin home brewing? Honestly, the best thing is a Brewer’s Best equipment kit which has every piece of equipment you need, from a 5-gallon stainless steel kettle to the syphon hoses—it’s a one-stop shop for $139, to make 5-gallons of beer. And then you’ll have all the equipment you’ll ever need. In terms of supplies, ingredient kits range from $20-$45 for 5-gallons’ worth of ingredients.

How long does the process take? It takes two and a half hours of time. And if you can boil water, you can make beer.

Home cookin’: What types or flavors of beer are possible?

What is the most important piece of advice when it comes to home brewing?

It can be as wild or as mild as you want to make it. Everything from light beer to dark, hoppy, mild, fruited, low alcohol content, high alcohol, things that incorporate everything from chamomile to hibiscus— there are so many versatile things you can do. And with the ingredient kits, everything is pre-measured, weighed out, like the Blue Apron of brewing.

Have fun with it—don’t make it stressful. Beer is boiled—it’s aseptic, so you’re not going to get sick from it. The famous godfather of homebrewing Charlie Papazian—he’s in the Smithsonian now with his original homebrew kit—his saying is, ‘Relax, don’t worry, have a homebrew”.

Is there one common mistake homebrewers make—and how can you avoid it? The biggest thing is sanitation. The equipment kit comes with a good food grade sanitizer, and that’s want you want to use— no dish soap, no weird aftertaste.

While we often hear advice regarding sunscreen and skin care during these sun-splashed summer days, there are many summer health tips that are often overlooked. Stay cool with these hot tips from Christina N. L. Doll, MD, of WellSpan Health.

MADE IN THE SHADE Seek shade whenever possible, especially between the hours of 10 a.m. and 2 p.m., when the sun’s rays are the strongest. Up your shady stylin’ game with a wide-brimmed hat, lightweight and longsleeved shirts, full-length pants, and don’t forget to protect your eyes. “According to the American Academy of Ophthalmology, you should opt for sunglasses that block both UVA and UVB rays. These will be labeled as offering UV400 or 100% UV protection,” says Doll.

HYDRATION DEDICATION Eight 8-ounce glasses of water daily is the general rule, however… “A number of factors impact a person’s fluid needs, including baseline health status, activity level, and environment. Remember, if you are sweating, whether from exercise or heat, you are losing water,” advises Doll. “Generally, to prevent dehydration, it is a good idea to keep water nearby at all times. Drink a glass with each meal, and aim to drink a glass between meals as well.”

5 BARRIERS TO BUGS Dr. Doll offers five basic ways to say, “Bug off”. 1. Clothing is a barrier! 2. Use insect repellent containing diethyltoluamide (DEET) 20-50%, picaridin, or oil of lemon eucalyptus. 3. Eliminate areas of standing water in your yard. 4. Do a “window check” to ensure your screens are intact. 5. Bathe and check for bites, particularly ticks, after spending time outdoors.

ASSESS YOUR HYDRATION SITUATION “Take a peek at your urine. If it’s colorless or pale yellow, your fluid intake is likely adequate. If it is dark yellow or amber, consider increasing your fluid intake,” Doll says. Although rare, it is possible to drink too much water. Reach out to your primary care physician with your questions.

BUG BASICS Insects can be a summertime nuisance, but some bug bites are serious. Mosquito-borne viral infections include West Nile virus; tick-borne illnesses include Lyme disease, ehrlichiosis, and Rocky Mountain spotted fever. “To prevent bites and potential illness, the most important strategy is vector avoidance,” says Doll. “Wearing protective clothing, particularly during periods of high insect activity, can help reduce the likelihood of bites. Mosquitos are usually most active from dusk to dawn. Ticks tend to be daytime feeders.” JULY 2020 | SUSQUEHANNA STYLE

It’s almost 180 feet in air, where food, drink, and views combine to encompass the Lancaster experience. When The Exchange opened on the rooftop of the Lancaster Marriott at Penn Square, guests said they were proud to live in or visit such a breathtaking place. “There seemed to be an overwhelming sense of spirit or pride in this community,” says Director of Sales and Marketing Josh Nowak. “The Exchange evolved into a place for meeting friends, having a drink, and never stopping staring at the view.”

The Exchange opened in July 2019, created as the Marriott reignited its dining and drinking options to keep pace with Lancaster City’s rejuvenating food and beverage scene. The renovated hotel’s rooftop offered the ideal setting for something new and world-class. The design team created an indoor-outdoor bar with windows opening to the patio stocked with intimate seating and firepits. An “eyebrow” roof provides shelter from the elements, for cozy evenings in any season and any weather. Guests enjoy shareable plates and sample new cocktails, local beers, or wine while they soak up the glorious views. In the distance are the green fields of Lancaster County. Up close are Lancaster City’s architectural and historical treasures. “Lancaster is well regarded for its Pennsylvania Dutch countryside, but we wanted to continue to further the Lancaster City experience,” says Nowak. “You get this amazing blend of modern food that’s locally sourced, and you’re overlooking the oldest continous-running Lutheran church and one of the oldest continuous-running Episcopal churches. Central Market, the Griest Building—these remarkable elements have great stories along with them, and you have unobstructed views.” Executive Chef Ryan McQuillan created the menus for The Exchange and the Marriott’s new first-floor restaurant, Plough. Married to a Lancaster-area native and brought in from the renowned Talula’s Table in Kennett Square, he leveraged his experience with Chester County farmers to bring stepped-up Pennsylvania Dutch cuisine to Lancaster. The menu “keeps your mind and imagination going, so people can be proud of where they’re from,” says McQuillan. “It’s not so much a composed plate. It’s a little more playful and fun. We just want to take things that are familiar and make them a little bit better.” Even Lebanon bologna makes appearances in sliders and a new fried rice. Lebanon bologna is like a spicy mortadella from Italy, “but it’s from here,” says McQuillan. “It’s one of those meats we should be proud of.” Meat, seafood, and produce from local and regional farmers and purveyors inspire seasonal specialties. The summertime blistered shishito peppers are so popular that the restaurant orders “cases upon cases” of them. The Exchange’s burger features prime dryaged ground beef with a “nice meat-to-fat ratio —just enough where it gets crispy but melts in your mouth.” For vegans and vegetarians, a tomato pie or crispy tofu fits the bill. Pizza choices from the wood-fired oven include McQuillan’s favorite—the wild mushroom pizza, topped with Berks County mushrooms and arugula. The beverage menu invites exploration. Pair your nosh with a local draft beer, such as the Lancaster-brewed Wacker Bohemian Pilsner, or a “bubbles” from Italy. Experiment with a cocktail that’s tangy, sweet, or earthy, depending on your mood.


Dessert might be the chocolate chip ice cream sandwich with huckleberries, or the buttermilk pie topped with corn ice cream, as devised by sous chef Robbie Courtney. With time on their hands during the pandemic lockdown, the team experimented with remaking another Pennsylvania Dutch classic, so watch for a funnel cake with blueberry sauce. Of all the great restaurants McQuillan has worked in, The Exchange is “probably the prettiest.” Nowak recommends a visit at sunset. From the rooftop, “you get to see the seasons change,” he says. It’s part of a Lancaster-based story that’s especially compelling because “we don’t have to manufacture any of it.” “We’re a big town or a great small city,” he says. “You can look at us and not see a concrete jungle. We have a lot of character in how our city was laid out and how it has changed over the years.” And it all unfolds before your eyes from 178 feet up.

Grilled Prosciutto Wrapped Shrimp with Basil Yield: 4 entrĂŠe servings or 6-8 appetizer portions

DISH IT UP

Get Grilling!

20 jumbo shrimp (about 1 pound), peeled and deveined with tail on 1 tablespoon olive oil, plus more for brushing 1 teaspoon Dijon mustard 1/4 teaspoon kosher salt and freshly ground pepper, to taste 20 small- to medium-size fresh basil leaves 10-12 pieces thinly sliced prosciutto Skewers for grilling, soaked in water for 20 minutes if wooden 1. Preheat the grill to medium-high heat. 2. I n a small bowl, whisk together the 1 tablespoon olive oil, Dijon, salt, and pepper. Place the shrimp in a large bowl and pour the oil mixture over top, gently tossing to evenly coat. 3. S lice each piece of prosciutto in half lengthwise to form two long, narrow slices. Place a basil leaf at one end of each prosciutto slice. Place a shrimp on the basil leaf and roll the prosciutto around the shrimp as securely as possible. (It isn’t necessary to cover the entire shrimp.) Place on a baking sheet, seam side down, and repeat with the remaining prosciutto, basil, and shrimp. (Advance prep option: The unskewered shrimp can be prepared to this point, covered, and refrigerated for 6-8 hours or so.) 4. W hen ready to grill, thread the shrimp onto the skewers. (Tip: To prevent the shrimp from spinning around on the skewer, first stick the pointy end of the skewer through the tail end, just above the shell, and then thread again through the thickest part of the shrimp.) Brush both sides of the shrimp with olive oil. Alternatively, you can spray both sides with an olive oil mister. Ann Fulton is a recipe developer and food blogger at FountainAvenueKitchen.com. Easy Grilled Sausage, Pepper & Corn Dinner Yield: 4-6 servings 4-8 ears of corn or 1 pound baby potatoes (1 to 1 1â „2-inches in diameter) 4-8 sausages (I like a mix of Andouille, kielbasa, bratwurst, and turkey or chicken sausages.) 1 pound mini bell peppers or assorted small, seasonal sweet peppers Olive or avocado oil Kosher salt and freshly ground black pepper, to taste 1. Preheat the grill to medium-high heat. 2. I f using corn: husk it. If using potatoes: In a large pot of boiling salted water, cook the potatoes until just barely tender, about 5 minutes, give or take depending on size. Drain well. Tip: Potatoes may be prepped several hours in advance and left at room temperature. 3. B rush the corn or potatoes, sausages, and bell peppers with olive oil. Season with salt and pepper, to taste. 4. P lace everything on the grill, turning occasionally until cooked through, 4-5 minutes for the corn or potatoes, 8-12 minutes for the sausages, and 7-10 minutes for the bell peppers. (I like the vegetables to have just a hint of char, although the peppers should be tender, not mushy. The sausages should be cooked through with a little snappy crispness on the outside.) 5. Transfer to a platter, and serve. The sausages may be sliced into smaller pieces or served whole.

Pickle Brine Pork Chops

with Liquid Gold Sauce Yield: as many as needed Liquid Gold Sauce recipe yields 1/3+ cup Pork chops, bone-in or boneless (can substitute diced boneless, skinless chicken) Dill pickle brine (could try horseradish, spicy, or garlic pickles) Salt (optional) and pepper For the Liquid Gold Sauce: 1/4 cup yellow mustard 1 tablespoon plus 1 teaspoon apple cider vinegar 1 firmly packed tablespoon light brown sugar 1/4 teaspoon each Worcestershire sauce and hot sauce (I like sriracha) 1/8 teaspoon vanilla extract Pinch (1/16 teaspoon) kosher salt and freshly ground black pepper 1. For the pork or chicken: place the pork chops and/or chicken pieces in a large zip-top bag, and pour in the pickle juice. Seal the bag, lay it flat on a rimmed baking sheet (to catch any leaks), and refrigerate all day or overnight if possible. Try to remember to flip the bag several times. 2. W hen ready to cook, drain off the marinade and discard. Sprinkle optional salt and pepper on both sides of the meat. (Brines vary in their level of saltiness. I enjoy a light sprinkle of salt.) 3. Grill over medium heat until the chops or chicken are just cooked through. Time will vary based on thickness of chop or breast, presence of bone, etc. Look for an internal temperature of 145° F for pork chops and 165° F for chicken. Be cautious not to overcook the meat, or the tenderness provided by the extended steep in the pickle juice will be lost. Allow the cooked meat to rest for several minutes before cutting, and then enjoy with spoonful of sauce, if desired. 4. F or the Liquid Gold Sauce: In a small bowl, mix all of the ingredients, stirring for a minute or so to dissolve the brown sugar. Cover and refrigerate until ready to use. Sauce will keep for several weeks. If you prefer a sweeter sauce, feel free to add more brown sugar to taste.
