KC's Italian Ice Brings a Touch of Philly to Lancaster BY RACHEL CURRY PHOTOGRAPHY BY KARLO GESNER
What makes a city? For some, it's the big things, like political figures and corporations. For others, it's the details—like independent corner stores and italian ice shops. KC's Italian Ice of Lancaster just so happens to satisfy the palate on a personal scale. Fred and Lynette Waller started KC's three summers ago. The shop is named after their two daughters, Kylee and Cheyanne, setting the family atmosphere in stone from the get-go. Lynette and Fred both grew up in Philadelphia before coming to Lancaster more than two decades back. "In Philly, you can get italian ice a lot of places right in the neighborhood," Lynette says. "We wanted to do that in Lancaster." Not only did they bring the italian ice (or "wooder ice", as folks in Philadelphia tend to say), but they also brought the soft pretzels that Philly is all about. As an accountant, Fred is the one who brought the "entrepreneur bug" to his family of four. Lynette's career in education (she currently supervises student

teachers at Penn State Berks) means her summers are free, and Fred's tax season winds down by May. For the family, it was a perfect concoction for an italian ice endeavor. Plus, it was a way for Fred to get his business fix without compromising family time. Kylee and Cheyanne were always a big part of the picture. Lynette says part of starting the business in the first place was to help give their daughters "a sense of ownership in something". The girls have been involved since the beginning, painting the signage on the outside of the store and creating videos for social media. They've even introduced a scheduling app so Lynette doesn't have to write staff schedules by hand. Lynette says, "We wanted them to see the value of when you own something, you put your heart into it." The Waller's daughters aren't the only teens and young adults finding their way to KC's. They're mindful of hiring teenagers from the community so they can provide an opportunity for growth for other kids, too. As a pair of former school teachers, Lynette says she and Fred "both have a heart for investing in youth." As their staffers grow up and graduate high school, KC's shares their successes with the public (like college departure announcements on the shop's social pages). They often donate a portion of their profits to local organizations helping youth. In the past, they've promoted Bright Side. The family behind KC's is already thinking about what's next for the small, Opportunities Center and The Mix at Arbor Place, two Lancaster staples. With all their efforts, it's clear that the Wallers are really backing their community by creating a space of positivity. After all, Lynette says it's "like a little bit of sunshine." What's it like running a business alongside family? "This isn't all kumbaya," Fred says, but it works. They're able to function like a team, making their family unit more dynamic. Plus, the customers love Kylee and Cheyanne's energetic personalities. "We have great italian ice, but a lot of people really enjoy the family atmosphere," says Lynette. JULY 2021 | SUSQUEHANNA STYLE

PEOPLES & PLACES For those out-of-towners making their way to Lancaster from places like Philadelphia and New York City, the italian ice feels nostalgic. Even for small town natives, Lynette says that "It reminds them of where they're from and what they had when they were a kid." There is something unifying about such a simple treat, one doused in flavors from all ends of the spectrum. With options like mango, coconut, and root beer float, Fred refers to the rainbow flavor. "I don't care if you're black, you're white," Fred says. "We all can reminisce about the rainbow pops that we all had."

"I'm looking forward to experimenting with more italian ice flavors and making our own," says Fred. And if he has anything to do with it, the family will make more hot cocoa bombs over the winter like they did last year. "My husband likes to make me work a lot," Lynette says before laughing.

Heat radiates and flames soar from an open concept kitchen inviting guests to be a part of the purposeful spectacle that goes into making their meal. Blackworth, a live fire grill housed in the former Wilbur Chocolate Factory in Lititz, offers an upscale and unique dining experience that is somehow also accessible and familiar. The restaurant is directly tied to The Wilbur Lititz, a Hilton Tapestry Collection hotel. While Blackworth can be accessed from within the hotel, their main entrance on Broad Street warmly welcomes outside guests.

Blackworth is the linguistic fusion of Tamworth and Large Black pigs, an ode to owner Eric Hoover’s family history. The origins of the restaurant can be traced to its successor, Foundry Craft Grillery in Lebanon. When Eric and Vickie Hoover became aware of The Wilbur Project, a large-scale renovation to revitalize the Wilbur factory, they were drawn to the historic nature of the project along with the modern pull of being part of a region that is constantly trending upwards. They seized the opportunity and focused their efforts on Blackworth, which opened its doors in September 2019. Stepping into Blackworth feels like entering a well-curated space that is simultaneously modern and timeless. The seamless combination of materials from wood, tile, and brick creates a bright and inviting atmosphere. Trendy bar seating and indoor tables are available, along with the seasonal option to sit outside right in the heart of Downtown Lititz. No matter where you choose to sit, at some point your eyes will be drawn to the six fires roaring from the kitchen. Executive Chef Max Fanton was born in France, but grew up in Northern Italy where woodfire cooking is a strong tradition. Some of his earliest memories of food center around fire. He has gone on to travel, eat, and cook around the world, Anthony Bourdain style, and lived in China for eight years prior to arriving in the United States. Relocating to Lancaster County in July of 2020, he has loved settling into a region where local ingredients are abundant and the food scene continues to grow. The main draw, of course, was stepping into a position at Blackworth that felt a lot like coming home. “The heat can be brutal, but you have to love it to do this job,” Fanton explains while pointing out the intricacies of the stark black grill, which is fed by oak wood that is sourced weekly from a local Amish farmer. Each day the team arrives well before opening to get the fires going, and they continually feed it throughout service. He discusses the challenge of creating dishes that work over a live fire and the efforts that go into achieving temperature consistency. Faced with this task, Fanton and his team have simply excelled. Fanton would describe Blackworths’ cuisine as rustic, recognizable, and simple. He sees the menu as an opportunity to engage with travelers staying at the hotel and locals of Lititz, and to get the city to come out to the country rather than the other way around. “I want to
FOODIE FINDS reward people for deciding to try something new. I do this with dishes like the Charred Avocado. The sound of it might throw you off, but once you take a bite it becomes comfortable and familiar,” he explains. The menu is full of Fanton’s rewarding surprises. The smoky eggplant starter with labneh, pomegranate, and crispy chickpeas is a cozy blend of Mediterranean flavors, while the beef tartar tastes light and fresh. A selection of grilled proteins is available such as The Lititz Cheeseburger, Salmon Teriyaki, and Hollander Mussels. The Signature Porterhouse has the option for 100% PA Wagyu, the crown jewel of beef. Sliced and served with a variety of sauces and accoutrements or small sides that complement the dish, it is worth every penny. To try a little of everything, MeatStravaganza is available on weekends and includes wagyu, local sausage, chicken, and the mangalitsa pork. The pork is grilled with cayenne, maple syrup, and coffee rub from a coffee that is harvested in Guatemala. Proceeds from purchasing the pork go towards funding an orphanage in Guatemala, a partnership the team is proud of. Do not forget to pile on a few delicious sides such as the brussel sprouts or cast-iron cornbread with maple butter. To finish the night off with something sweet, the burnt cheesecake is crispy, smokey, sweet, and moist all rolled into one. For something decadent, the Chocolate Mousse is made with rich and airy layers of Wilbur Chocolate as an ode to the building's history. Blackworth also features a global wine list, select beers, and a combination of both innovative and classic cocktails such as the Flight of Italicus made with di Bergamotto, fresh lemon, rosemary simple syrup, and Prosecco.

FOR THE HISTORY LOVER: NEW CASTLE, DELAWARE
If you’re a colonial-era history lover and are looking for a laid-back setting, then you’ll enjoy a trip to New Castle, Delaware. Filled with old-age charm, this town was founded in 1651 and features a town centre teeming with history at every corner. While you’re there, head to the Read House & Gardens where you’ll find an 18th century grand mansion with stunning views of the Delaware River—if you look hard enough you’ll even be able to see New Jersey in the distance. For food fuel, the New Castle Farmers Market has a variety of foods and shops that everyone will enjoy exploring.
