Crisp, Clean, and Oh So Flavorful

Harrisburg's KRISPwtr is changing the flavored water game one sip at a time

A convenience store is more than just a place to watch the world go by. For Sean Banks, it was where he did his market research. "I used to be a store manager for Rutter's convenience stores, and I was constantly filling up the water coolers," Banks says. With an eye for trends and a knack for creativity, he saw his chance. Banks asked customers questions about why they liked flavored water as he rang them up, but he noticed that a lot of the options weren't as healthy as they seemed. He eventually gathered enough demographic data to make a move. By 2019, Banks went all in on his business: KRISPwtr—a Harrisburg company slinging artfully flavored spring water with no artificial ingredients or sugar. KRISPwtr products cover the bases. The Flavas line offers a subtle flavor splash with concoctions like strawberry pineapple and organic blueberry lemon. The Fruit-ish line, including coconut and watermelon flavors, is more of a full-flavored beverage, but "you can drink it after playing basketball or working out and it doesn't sit on your stomach weird," Banks says. This isn't Banks' first business move. As a kid, he printed and sold his own t-shirt designs. He once had a denim line that sold in 40 stores as far west as Chicago. "It taught me a lot," Banks says. "But it kind of got me ready for where I'm at today." A native Pennsylvanian, Banks knew he wanted to source his water as locally as possible. His spring water comes straight from the Locust Mountains at six parts-per-million. Banks says that's "one of the cleanest spring waters out of the source that you can get in North America." Being a fresh player in the beverage sector has its obstacles, and Banks says that's only emphasized as a Black person. "I'm an anomaly," he says about his role in the industry. Shortly after

American Diabetes Association tells us that the rate of diabetes in Black people is 11.7%, whereas it's 7.5% for White people. Food deserts play a major role in this, but so does advertising. According to the Rudd Center for Food Policy & Obesity at University of Connecticut, Black teens view 119% more food ads than White teens, half of which come from fast food companies. That's why Banks says, "Our mission is to give two percent of our profits back to organizations that aid in fighting diabetes and obesity in underserved communities." Banks is generous with his profit in more ways than one. He intentionally misses out on some revenue so he can keep his prices below the competition. At $1.29– $1.89 per bottle, he says customers can get a bag of chips and a KRISPwtr for $2.50. "That may not be the healthiest thing for you, but at least you're not getting a bag of chips and a soda," he says. Banks knows little things add up, which is why KRISPwtr packaging is made from 100% recycled plastic bottles. He says, "We need to do our part and try to reduce the plastic intake and the waste." For Banks and his family, building KRISPwtr has been nothing if not worth it. As for his favorite flavor, Banks says, "it's like asking what kid is your favorite." But it didn't take long for him to settle on grape from the Fruit-ish line. "It reminds me so much of when I was a kid drinking grape Kool-Aid," he reminisces, "though without all the sugar to go along." the police killing of George Floyd, Banks had an encounter at his warehouse alongside his wife and two daughters. "We're wrapping up these pallets of water," Banks says, "and we notice a car driving by and staring at us." Next thing he knew, the cops arrived and questioned his presence, informing him they got a call he was stealing stuff out of his very own warehouse. Banks complied and provided all his information, but not before trepidation sank in for his family. Despite oppression, Banks has pushed his way through in the healthy beverage arena. As for what makes health so important for Banks, it's two-fold. There's his mother, who was diagnosed with diabetes around the time he started KRISPwtr. "We knew we had to make a shift for her," Banks says. Then there's his community. Banks understands the effects that systemic racism can have on health. The JUNE 2021 | SUSQUEHANNA STYLE

DRESS LIKE A SWELL Sustainable vintage fashions get better with age. Look casual but sharp in khaki chinos or broken-in jeans, a classic OCBD (that’s Oxford cloth button-down), and denim trucker jacket, says Andy Kintzi, owner of The Midtown Dandy, Harrisburg (themidtowndandy.com). For workfrom-home ease without the sweatpants, try Vietnam War-era OG-107 sateen fatigue trousers, and roll up the sleeves of an iconic “Urban Cowboy” pearl-snap western shirt that’s as comfy and cool as a t-shirt.

CHANGE THE NIBBLES Don’t overhaul. Start small. Completely upending your diet is a recipe for failure. It’s the little changes that last, advises Erin Dunleavy, registered dietitian for Weis Markets (weismarkets.com). Swap steak for seafood night. Choose a handful of nuts over that bag of chips. Add a side salad to dinner. Vary your protein regimen with plant-based sources. Fight disease with fiber, heart-healthy fats, and vitamin-packed foods. “These simple changes can eventually become lifelong habits,” says Dunleavy.

CHECKING UP Guys, your life expectancy is trending downward. Regular physical exams, starting around 40 years old, can reveal those undetected notes of heart disease or cancer that ravaged your dad and uncles. Depending on your age, habits, and family history, exams can screen for high cholesterol, prostate cancer, colorectal cancer, and—if you’ve ever smoked tobacco—abdominal aortic aneurysm and lung cancer, says Dr. Matthew Silvis, family and community medicine physician at Penn State Health (pennstatehealth.org).

HAIR TODAY Longer hair, good. The inexplicable return of mullets, bad. The popular crop cut that’s long on top and short on the sides gives the best of both worlds. Then, switch out the gel for texture powder, for that slightly messy lift. At the intersection of a local pub, a craft brewery, and a fresh seafood restaurant sits The Watershed Pub— The Millworks owner Joshua Kesler's newest farm to table experience. The name intentionally comes from the Chesapeake Watershed, forging a direct connection between restaurant and food source. The best part? It’s right here on Market Street in Camp Hill. It is the first pub in Camp Hill since prohibition, making its historical location in a late 1700s farmhouse even more fitting. With an interest in historical preservation, Kesler catered to the original structure of the building while undertaking a sizable renovation to accommodate a modern industrial kitchen. The space offers ample indoor and outdoor dining, bar seating on two floors, and a beautiful wrap-around porch.

Camp Hill is the perfect location due to Kesler’s personal ties as a town resident for almost a decade. The location also supports his sustainable business model, thanks to the walkability of the area. While the hope is that customers will continue to drive in from all over Central Pennsylvania and beyond, Kesler notes, “I want people to view this as their neighborhood pub—to kick up their feet after work with some happy hour oysters and half-off drafts, and walk home feeling satisfied.” The ambience itself is meant to emulate a friendly neighborhood environment for all who enter. Having studied German in college, Kesler uses gemutlich to describe the desired feel of The Watershed Pub, explaining, “It’s an important word in German culture. Without direct translation, it essentially means the light is right, the atmosphere is right, the beer is right, the friend is right.” Sustainability is at the very heart of each of Kesler’s establishments. This is not just because it is a trending topic, but “because of how pressing human impact on the environment and how

massive our individual footprint is,” he explains. He has always been an environmentalist. As a college student, he recalls starting a campaign to rid the mess hall of plastics. Emerging into the food and beverage scene from real estate, he saw the importance of integrating ethical consumption into the Greater Harrisburg restaurant scene. By raising awareness and offering a responsible seafood dining experience, The Watershed Pub is a direct response to Central Pennsylvania's historical impact on the Chesapeake Watershed. Ties between the Susquehanna Valley and the Chesapeake run deep, stretching back over one hundred years. When Kesler purchased The Millworks in downtown Harrisburg, he found oyster shells all over the floor, and a neighbor confirmed that they were brought in fresh every day for urban consumption. With overfishing posing a serious threat to waters around the globe, The Watershed Pub creates a menu that considers seasonality of fish (and recovered populations such as swordfish), monitors fish populations through resources like the Monterey

Bay Watch, and sources directly from sustainable, ethically harvested fisheries. The result of monitoring the local footprint on the Chesapeake is a diverse and delicious menu that may not be quite what visitors are expecting, straying from traditional crab legs and shrimp to options like Morroccan spiced monkfish cooked over a wood fired grill and marinated afterwards to sustain flavor. Kesler’s personal favorite menu item is the Swordfish; served with stone ground raw milk cheddar grits, wilted kale, tomatoes, roasted kennett square mushrooms, and malt vinegar beurre blanc. Grilled Ribeye Steak with Mambo Onions and Roasted Potatoes Ribeye steaks 1 ¼ to 1 ½ inch thick Steak seasoning (I prefer Montreal) Grill spray Butter 1. Let steaks come to room temperature. Allow them to sit for at least 30 minutes. 2. Heat grill to 450-500 degrees. 3. Season steaks right before placing them on the grill. Grill for about 6 minutes per side. For a medium rare steak, you want an internal temperature of 140 degrees. For less pink, 155 degrees. 4. Once the steak is grilled to your liking, rub the cutting board with butter, and place steak on top. Allow the steak to rest for 5 minutes before slicing.

Mambo Onions 4 large red Vidalia onions 1 bottle of Original Sweet Mama’s Mambo Sauce 1-2 tbsp butter 1. Slice onions very thin. (I use a mandoline.) 2. O n your stove or on your grill, over medium heat, add butter to a cast iron skillet. 3. Add onions and cook until tender. Add mambo sauce and cook an additional 1-2 minutes.

Roasted Potatoes 3 lbs Yukon Gold potatoes Olive oil Salt and pepper 1. Cut potatoes into halves and then quarters. 2. Toss potatoes in olive oil, and generously season with salt and pepper. Grilled Jerk Chicken with Rag’n Island Sweet Mama’s Mambo Sauce Served with Garlic Cilantro Rice & Pineapple Salsa

Chicken thighs & legs Dry jerk seasoning Olive oil Rag’n Island Sweet Mama’s Mambo Sauce Grill spray 1. Rinse chicken, and pat dry with a paper towel. Put chicken into a ziplock bag, add olive oil (enough to coat chicken) and jerk seasoning to taste. Close ziplock bag, and massage chicken. Refrigerate overnight. 2. P reheat oven to 400 degrees. Place chicken on a baking sheet. Brush with Rag’n Island Sweet Mama’s Mambo Sauce. 3. Bake chicken for 40 minutes. 4. Preheat grill to 375-400 degrees. 5. Remove chicken from the oven, and add more Rag’n Island Sweet Mama’s Mambo Sauce. pray grill; grill chicken for 3 to 5 minutes 6. S per side. Internal temp should be 165 degrees.

Cilantro Rice 2 cups long grained white rice 4 cups chicken broth 1 tbsp garlic salt 2 tbsp Goya Adobo Seasoning Salt 1 tbsp butter ½ cup fresh chopped cilantro 1. I n a large pot, add rice, chicken broth, garlic salt, seasoning salt, and butter. Put on high heat, and bring to a boil. 2. Once rice is boiling, reduce heat to medium low and cover with the lid. 3. Cook rice for 35 minutes. 4. Remove the lid when the rice is cooked, and fluff with a fork. Stir in cilantro.

Pineapple Salsa 3 cups fresh pineapple, diced 1 red pepper, chopped 1 yellow pepper, chopped 1 orange pepper, chopped 1 red onion, chopped 2 jalapenos (seeds removed), chopped finely ½ cup fresh cilantro, chopped Juice of one lime Salt and pepper, to taste 1. I n a large bowl, mix pineapple, red pepper, yellow pepper, orange pepper, onion, jalapeno, and cilantro. Toss all ingredients. 2. Add lime juice and salt and pepper to taste. 3. Refrigerate up to 5 days .

Baby Back Ribs with Pop’n Peach Sweet Mama’s Mambo Sauce

Served with classic potato salad and dill pickles

2 slabs of baby back ribs (make sure there is no back membrane) Cajun seasoning 2 bottles of Sweet Mama’s Mambo Sauce Pop’n Peach 1 to 2 cups of chicken broth 2 tbsp apple cider vinegar 1. Season ribs all over with cajun seasoning. Cover and refrigerate overnight. 2. Preheat the oven to 250 degrees. In a roasting pan, combine broth and apple cider vinegar. Add ribs to the pan. Brush on Sweet Mama’s Mambo Sauce. Cover with cellophane and foil. Bake for 2 hours. 3. Preheat gas grill to medium. Remove ribs from roasting pan. Add more sauce to ribs before placing them on the grill. 4. Grill for about 5 minutes on each side until brown and slightly charred. 5. Top with some additional sauce to taste.

Classic Potato Salad 1 lb Yukon gold potatoes, cubed 8 hard boiled eggs ½ cup diced white onions ½ to 2/3 cup sweet relish 1 cup mayonnaise 1 ½ to 2 tbsp yellow mustard 1. Boil potatoes until tender. Drain from water, and allow to cool. 2. Combine all ingredients until mixed well, and salt and pepper to taste. (Try Tony Chachere’s for Jen’s favorite!)

Quick Refrigerator Dill Pickles 2 cucumbers 1 cup water 1 cup distilled vinegar 1 tbsp kosher salt Pinch red pepper flake (optional) 2 tbsp crushed garlic 2 tsp black peppercorns Several sprigs fresh dill Mason jars with lids

1. Slice cucumbers thin with a mandolin. Place in mason jars with some peppercorns and some of the dill. Heat water, vinegar, salt, red pepper flakes, garlic, peppercorn, and some fresh dill in a pot. 2. H eat brine until salt is dissolved. Bring to a low simmer. 3. I mmediately pour brine over cucumbers in mason jars. Allow to cool around 30 minutes. 4. Put lids on mason jars and refrigerate at least 30 minutes before serving. Store in your refrigerate for up to a month.

So take me out to the ballpark—I’m ready for peanuts and Cracker Jack, hot dogs and cold beer, for cheering and jeering, for mascots and ballcaps. SCOUTING REPORT: REVS TO WATCH Pitcher Casey Lawrence, a hometown favorite and Delone Catholic grad, is a former Major Leaguer “coming back to York, to try to get back to the majors,” says Henry. Darian Sanford, center fielder, is one of the top stolen base leaders in Atlantic League history. “He did all of that in Lancaster and signed with us during the off-season, jumping sides on the rivalry—and at one time he played for Harrisburg as well,” Henry notes.

“Definitely our chicken tender and fries are #1,” says Sarah Dailey, Revs marketing manager. The stand “Love Me Tenders” offers 10 different dipping sauces, plus a grand slam of seasonings and toppings for fries. BBQ and soft pretzel sandwiches are also popular. Local brews include Hanover’s Sign of the Horse Brewery.
