We use it to check the weather, make appointments, keep in contact with love ones, and even purchase gifts and groceries. What we have failed to learn is what we post on our social medias can affect our jobs, families, and future endeavors. What we post online directly effects our persona. With the recent election, people are posting articles from unreliable sources or that were published years ago. Many of us post articles based on the title and do not read the article or sometimes even open it. This piece of information is now posted with your name on it stating you are supporting whatever the topic may be. We also fail to realize that even though we have our profiles marked as private, companies can require you to show them your social media page during an interview. Horses & Horizons Thereapeutic Learning Center Honors Volunteers And Riders Submitted by ELAINE SMITH

At its recent Year End Celebration, Horses & Horizons Therapeutic Learning Center, Inc. named Christine Schilling the organization’s Volunteer of the Year for 2016. Seth Grube received the honor of “Volunteen” of the Year. This was Schilling’s second year of volunteering since her return to the non-profit therapeutic horseback riding program for the disabled. She was a lesson volunteer all during high school and business school in the late 1990s. After she married, Schilling left the program for more than a decade to raise her two sons. Now she once again serves as a horse leader during lessons. Earlier this year, she accepted a position on the organization’s board of directors and took on the position of acting treasurer when the post became vacated. She has since been elected to treasurer of the board. Schilling is employed full-time by Effective Controls in Snyders. For the past three years, Grube has volunteered as a side aide in lessons during all three sessions of lessons from April through October. This year, he volunteered on Monday nights along with his mom. Grube then returned on Wednesdays to sidewalk with a physically challenged rider who needed his height and strength to help provide her with a safe lesson on the horse. According to H.H.T.L.C.’s Executive Director, Harvey Smith, “Volunteers generally love assisting riders in the lessons, but it sometimes is not as easy to get people to help with the other chores. We could always count on Seth to also lead horses back to the barn from the pasture and to put away equipment when the lessons were finished for the evening. ” 4

Grube also won the “Volunteen” of the Year Award in 2014. He is a senior at Blue Mountain High School. He recently enlisted in the U.S. Airforce, and will begin his military service after he graduates next year. H.H.T.L.C.’s Year End Celebration was held on Sunday, November 6 at the Zion’s Stone Church of West Penn Township. The purpose of the event was to show appreciation of the organization’s many volunteers, and also to recognize the achievements of its riders. The highlight of the event was the premiere showing of the documentary film, “Horses & Horizons: A Journey of Hope and Resiliency” by Michael C. Rock of Fredericksburg, VA. The 33 minute film featured three of H.H.T.L.C.’s riders: Sydney Marko of Mountain Top, Cory Heckman of Tamaqua, and Hannah Tervo of Orwigsburg. The documentary was Rock’s thesis project for his P.H.D. in film making at American University in Washington, D.C. He spent many hours filming both during lessons and in the riders’ homes. Rock plans to complete a longer version of the documentary sometime next year with remaining unused footage. In addition to the film, Smith and his wife, Elaine, H.H.T.L.C.’s Program Director, awarded the organization’s more than fifty volunteers with certificates of appreciation and its twenty-five riders with certificates of achievement. The event also featured a potluck dinner, and fun and games. Horses & Horizons is a registered non-profit organization. operated from Harvey and Elaine Smith’s Helping Horse Farm, which is located between Tamaqua and New Ringgold. The therapeutic horseback riding program is staffed entirely by volunteers. It serves riders who range in age from three years old to seventy with a wide variety of physical, mental, and emotional disabilities. Therapeutic horseback riding has been shown to improve balance, posture, strength and coordination. It also helps to increase self-awareness, selfconfidence, attention span, and independence.

Crock Pot Cheesy Potato Soup INGREDIENTS 6 c. potatoes, peeled and cubed ½ c. onion, diced 32 oz. chicken broth 1 c. water 3 Tbsp. flour 1 c. milk 8 oz. cheddar cheese Sliced green onions and ¼ c. bacon cooked and crumbled for garnish DIRECTIONS Peel and cut potatoes into cubes. ½ cup Diced Onion. Pot potatoes and onion in crock-pot. Add chicken broth and water. Cover and cook on low for 6-7 hours.

Mix together flour, salt, pepper and milk. Pour mixture into crockpot, turn on high and cover to cook for another 20-30 minutes. Once soup has thickened, add cheese and stir until cheese melts. Garnish with bacon and green onions. This soup turned out very good and I would make it again, however with some changes. This recipe could have used more bacon (can you really go wrong with more bacon?). The flavor was nice but I was missing more stuff in the soup other than cubes of potatoes. I would have liked the soup a bit thicker too, and I even added some heavy cream and an extra tablespoon or so of flour. Now that the cold weather has officially arrived, this recipe is perfect to warm away winter blues!

If you’re starting to feel like nothing but a very full, strong pot of coffee will get you out of bed, join the club. Holiday bills are high, temperatures are low, and the days are way too short. Here, scientifically proven ways to lift your spirits and ease the mid-winter doldrums. 1. Make your environment brighter. When your body is craving more daylight, sitting next to an artificial light—also called a light box—for 30 minutes per day can be as effective as antidepressant medication. Opening blinds and curtains, trimming back tree branches, and sitting closer to windows can also help provide an extra dose of sunshine. 2. Eat smarter. Certain foods, like chocolate, can help to enhance your mood and relieve anxiety. Other foods, like candy and carbohydrates provide temporary feelings of euphoria, but could ultimately increase feelings of anxiety and depression. 3. Simulate dawn. People with Seasonal Affective Disorder, a form of depression that usually begins in late fall or early winter and fades as the weather improves, may feel depressed, irritable, lethargic,

and have trouble waking up in the morning—especially when it’s still dark outside. Studies show that a dawn simulator, a device that causes the lights in your bedroom to gradually brighten over a set period of time, can serve as an antidepressant and make it easier to get out of bed. 4. Exercise. A 2005 study from Harvard University suggests walking fast for about 35 minutes a day five times a week or 60 minutes a day three times a week improved symptoms of mild to moderate depression. Exercising under bright lights may be even better for seasonal depression: A preliminary study found that exercise under bright light improved general mental health, social functioning, depressive symptoms, and vitality, while exercise

2016 Pennsylvania State 4-H Horse Show submitted by JANICE MARTIN

The 56th Annual Pennsylvania State 4-H Horse Show was held October 28 through 30 at the Pennsylvania Farm Show Complex and Expo Center in Harrisburg, Pennsylvania. More than 700 youths from all counties participated in 75 performance classes throughout the weekend. There were over 1,200 entries shown by youth that qualified for the show. The state show is the final competition of the year for 4-H horse members enrolled in performance horse projects. To be eligible for the show, members must advance through qualifying competitions at county and district levels. Events include showmanship, horsemanship, equitation, pleasure, over fences, driving, western riding, reining, trail and timed events. A therapeutic riding division for riders with special needs is also included. There is also a miniature horse division. Results and photos from the show are available on the Pennsylvania 4-H Horse Program website. All class champions in the show were awarded champion ribbons, pewter plates, and embroidered jackets. Reserve champions in each class received a ribbon and a grooming tote donated by Perri’s

Leather of Lincoln University, Pa. All exhibitors in the therapeutic riding division received medallions donated by Hoy’s Trophies and Awards of Export, Pa. Several sponsors donated items for the silent auction with proceeds to benefit the 4-H Horse Program. Show management and participants appreciate the continued support and generous donations from Perri’s Leather and contributions from all show sponsors. It is an exceptional accomplishment for any 4-H Horse Club member to qualify for the Pennsylvania State 4-H Horse Show. The state horse show is a prestigious opportunity for today’s youth to showcase their talents and to culminate the 4-H Horse Show season. To be eligible for the show, members (and their equine counterparts) must advance through qualifying competitions at county and district levels. Forty plus 4-H members competed in the Northampton County Round-up on August 7, 2016. The Round-up was a very competitive event, with only 1 to 3 exhibitors in each class qualifying to move on to the District Horse Show. A total of thirty-five Northampton County 4-H members qualified to compete at the

Saddle Horses. Amber Ponikter of Bath qualified her Miniature Horse Peanut Short and Sweet in Western Grooming and Showmanship and was unable to attend the state 4-H horse show. The 17th Annual State 4-H Model Horse Show was held on Saturday in its new location in the small arena. The Model Horse Show provides a means for youth to learn and perfect the hobby of collecting and showing model horses, while also learning about horse breeds, history, tack, equipment and related horse information. The model show is an opportunity for youth that may not be able to own and show live horses to participate in the show and learn more about the horse industry. Northampton County was represented by two members from Backtrackers 4-H Horse & Pony Club at the 2016 Model Horse Show. Sheridan Taylor of Pen Argyl and Alayna Rozynek of Wind Gap placed in many of the 4-H Model Horse Show classes and brought home championships and reserves in various classes. There are over 6,500 4-H horse projects involving youth throughout Pennsylvania. Programs are designed to develop life skills in youth and knowledge of horse production, use, and management. Saint John Neumann Regional School recently had the privilege to welcome someone very important back to Palmerton. Sergeant Major of the Army, Daniel Dailey visited our school to relive his experiences here. He grew up in Palmerton and attended school at Saint John Neumann Regional and Palmerton High School. When our school heard he was coming back, we all knew something special had to be done. Many veterans and friends joined our students and faculty who gathered at an honorary assembly where SMA Dailey told everyone all about his life before and after school, saying his moral compass was developed by his mother and the teachers at SJNRS. Everyone from fourth through eighth grade and the faculty were intrigued by all of his exciting stories and about his travels to so many new countries. It was really an honor to have someone who traveled all over, talk about how much growing up in Palmerton meant to him. It made all of us realize how lucky we are to be in such an amazing school. Our school was lucky to have his wife, Holly, also speak with us. She inspired a lot of the girls here, and made us all realize that women can do anything that men can do. At the

Old cookie cutters A little old basket always stood up on the attic. Once a year that little old basket was brought down and then we children knew that the Christmas season was underway again. In that little old basket were those little tin cookie cutters. Was this ever a happy time! When we came home from the school, it always smelled so good. The whole house had a pleasant aroma from various kinds of spice: from cinnamon and clove and nutmeg. – I can still see Mom, how she stood there for hours and cut out the cookies with those cookie cutters. We always stood next to her and looked on and waited till that tray with the cookies was pulled out of the oven, and afterwards we neatly piled up those cookies for her. We were allowed to eat the broken ones. There were all sorts of figurines among them: leaves, hearts, stars, little birds, chickens, geese, a man, a woman and also a camel. Long afterwards we found out that these figures had a religious meaning to them. They say that our ancestors had baked such a type of cookie, before Christianity was introduced to them, little pictures of their old German gods, and then later when they became Christian, they also just baked cookies, but the stars and hearts and sheep and people and camels got a new meaning from Christ’s birthday. When our ancestors came over the sea to their new homeland they also baked such cookies, and wherever we come upon PA Dutch people , whether in Ohio, or Nebraska or in Canada, there we also come upon those little Christmas cookies. It is a nice old custom that the people of today should uphold. Yes, the lovely childhood years are now far behind us and much water has run (walked) over the waterwheel since that time and Mother already sleeps for a long time out in the church cemetery; with her every day would of course be Christmas! But those old cookie cutters – when they are fetched again, they would weigh heavily here on the heart. They make me feel so homesick for that nice childhood place. They are just made of tin, those little old cookie cutters, and some are broken and rusty, if we just view them so with ordinary eyes; but I don’t know, sometimes it seems to me as if those little birds are again cracking their wings, the leaves become green and the hearts become red. Everything comes to life, the dogs, the sheep, the camels – O, how the stars shine so brightly, especially that one there! Grant Given to Scouts submitted by ALISTA BLOSE

The PPL Foundation presented a $6,000 grant to the Minsi Trails Council Boy Scouts of America on November 16 at William Allen High School in Allentown, to improve the lives of economically disadvantaged youth through specialized programs. The first program, Scoutreach, brings the fun, character building, leadership development, and achievement benefits of scouting to disadvantaged youth. Scoutreach helps ensure that scouting is available to all youth regardless of economic ability and provides a safe environment for youth to participate right in their own schools. This grant will also support the building and expanding of the career education program, Exploring. Exploring is a co-ed program for youth ages 14-20 that matches specific career interests of students with adult mentors in a work-site based program. The Exploring program offers a variety of real life experiences. Current programs range from health care services, emergency response services and law enforcement to aviation and technology. New Roof For Playground Refreshment Stand submitted by ROBERT STETTNER

In late October the refreshment stand building at the Walnut Street Playground, Slatington was the recipient of a new roof. The previous roof, original to the building constructed in 1997 was 19 years old and was starting to deteriorate and leak. Fortunately, the Walnut Street Playground Association was awarded a number of grants and donations which helped fund the roof replacement project. The association would like to publicly thank the following civic organization and individuals for their generous grants and donations towards the project: Rotary Club of Slatington, Slatington Lions Club, Vigilant Fire Company No. 2, and the late Arthur “Ted” Kistler. The association also wishes to thank Doug Myers and Myers Contracting for replacing the roof, and working with the association.

Woman’s Club of Slatington Arts Contest Submitted by BECKY LIENHARD

It’s not too early to think about the Arts Contest the Woman’s Club of Slatington is sponsoring on Monday, April 24, 2017 at the Slatington Public Library. The club is sponsoring a juried arts and photography contest. Both contests are open to the public, club members, and students in grades 7 through 12. The photography contest is also opened to grades 3 through 12. Contest rules detailing entry categories are available by contacting the members listed below,

forms are available at the Slatington Public Library. All entries are due no later than April 8, 2017. Please note entries are limited to one per category. This is a great time of the year to work on your art or photography project to have it ready for the April display in the library. We invite you to participate. A Heartfelt Thank You submitted by ROBERT STETTNER

On Veteran’s Day, November 11, 2016; one man’s idea, the persistent drive of an eight member committee, a year-and-a-half of work, and six short months of fundraising culminated in the dedication of the Slatington Veteran’s Memorial. Sunny skies, but a howling wind greeted an overflow crowd of over 300 people packed into the Slatington Memorial Park for the hour-long dedication and unveiling ceremony. A solemn, but patriotic ceremony followed Pastor Henry Distler’s welcoming address. The ceremony included the Pledge of Allegiance; our National Anthem sung by Northern Lehigh High School student Victoria Lear, and several patriotic songs sung by the Northern Lehigh High School Choir; laying of a wreath by Mr. Charlie Rowlands, a 21-gun salute and Taps. Retired Marine Corps Colonel and Lehigh County Court of Common Pleas Judge James Anthony was the guest speaker. Slatington Mayor Walter Niedermeyer received a ceremonial key from Committee Chairman David Altrichter; signifying the completion of the Veteran’s Memorial, and the return of the park to the Borough of Slatington. Following 46

the key presentation, the memorial stone was unveiled by Slatington American Legion Post 16 Commander George Burke and American Legion 14th District Commander Denise Harner. Special recognition was given to the 30 men from the Northern Lehigh area who paid the ultimate sacrifice in service to their country. Committee member Dean Cunfer read each name aloud as fellow committee member Tony Gnas rang a bell. After acknowledgements from David Altrichter, an emotional moment occurred when the families of Arthur “Ted” Kistler and Richard Mantz were called up to the memorial. Two plaques, mounted on the meditation benches located in front of the memorial, with the names of Arthur and Richard were unveiled. Both families requested that donations in memory of Arthur and Richard be sent to the Slatington Veteran’s Memorial. The program concluded with the memorial prayer and benediction. A large crowd gathered to view the memorial stone and the 600 plus engraved bricks installed in the brick beds. Lehigh Carbon Community College will offer a Winter Session for new and current students wanting to get a head start on the spring semester. New students who are interested in improving their job skills, positioning themselves for a promotion or just beating the winter doldrums by taking a class online are invited to enroll as well. The following credit classes will be offered online and will run from Dec. 23, 2016 through Jan. 26, 2017. New, returning and continuing students can register now. Tuition is due Dec. 7 or at time of registration.
