Lavender Cupcakes with Honey Frosting COOKING WITH CATHERINE DIRECTIONS

INGREDIENTS Cupcakes • 1 stick butter, softened • 1 cup sugar • 2 eggs • 2 tsp. vanilla extract • ½ tsp. red and ½ tsp. blue food coloring • 1½ cups all-purpose flour • ½ tsp. baking powder • ¼ tsp. salt • 2½ Tbsp. dried lavender buds • ⅔ cup cold milk Frosting • 1 stick unsalted butter, softened • 8 oz. cream cheese, softened • 4 cups powdered sugar • 2 tsp. vanilla extract • 2 Tbsp. honey, plus extra for drizzle

Cupcakes Preheat oven to 350 degrees. Line muffin tins with cupcake liners. In the bowl of an electric mixer, cream the softened butter and sugar together. Add the eggs one at a time, beating after each egg. Stir in the vanilla and food coloring. In a separate bowl, stir together the flour, baking powder and salt. Chop the dried lavender buds into fine, small pieces. Stir into the flour mixture. Add the flour mixture to the butter mixture. Stir in the milk. Scoop the batter evenly into lined muffin tins. Bake for 18-24 minutes, or until toothpick comes out clean. Let cupcakes cool in the tins for 5 minutes, then remove to rack to cool completely. Frosting In large bowl of an electric mixer, beat the butter and cream cheese together. Add powdered sugar one cup at a time, mixing on low, until frosting is smooth and creamy. Beat in the vanilla extract and honey. Frost the cooled cupcakes and lightly drizzle a little on top. This was a rather interesting cupcake. The flavor of my cupcakes came out pretty good, however the cake was dense and heavy; baking is not my forte. I did not use lavender buds, rather one single drop of doTERRA lavender essential oil. I wasn’t willing to risk two drops; no one wants to feel like they’re eating a flower. I was told that my cupcake tasted like Fruit Loops, I’m not really sure if that’s a compliment though…! As long as you don’t overdo the lavender, I think this cupcake has potential to be a light, delicate, unique dessert for a fun occasion.

Palmerton native trains to become a U.S. Navy pilot submitted by MC3 AMANDA L. OWENS

A 2011 Palmerton High School graduate and Palmerton native is playing a key role in the lengthy and rigorous training process that transforms U.S. Navy officers into Navy pilots. Ensign Jarrett Kleintop is a student pilot with the “Rangers” Training Squadron (VT-28), based in Corpus Christi, Texas, that operates the T-6B Texan II aircraft. As a student pilot, Kleintop is responsible for learning how to safely operate military aircraft to prepare him for a career as a pilot in the Navy. “Being a pilot challenges me,” said Kleintop. “It has taught me a lot about myself and is very rewarding to see what I can accomplish when I am focused and dedicated.” The T-6B Texan is a training aircraft that is powered by a 1,100 shaft horsepower, free-turbine, turboprop single-engine, four-bladed propeller, with a cruising speed of 310 mph. VT-28’s primary mission is to train future naval aviators to fly, as well as instill leadership and officer values, Navy officials explained. Students must complete four phases of flight training in order to

graduate, including aviation pre-flight indoctrination, primary flight-training and advanced flight training. After successfully completing the rigorous program, naval aviators earn their coveted “Wings of Gold.” After graduation, pilots continue their training to learn how to fly a specific aircraft, such as the Navy’s F/A-18 Hornet Strike fighter jet, the P-8 Poseidon maritime patrol aircraft or the SH-60 Seahawk helicopter. They are later assigned to a ship or land-based squadron. Many of the pilots will fly aircraft which take off from and land aboard aircraft carriers, a unique capability which allows the Navy to operate anywhere on the world’s oceans. Recently, Navy attack aircraft operating from aircraft carriers sailing in the eastern Mediterranean Sea and from Middle East waters have launched hundreds of strike missions against terrorist targets in Iraq and Syria. Thank you to everyone who attended the special PA Dutch day sponsored by the Lehigh Township Historical Society in August. Fritz and Belva Williams presented a very interesting musical program. Walnutport Artist Crafts Painting Using Spray Paint By Justin Sweitzer

A stroll through the streets of large cities may often lead passersby to discover a captivating experience in the form of spray paint art. Rather than using acrylic paints or watercolor techniques, these artists use cans of spray paint to express themselves -- crafting colorful images of landscapes, figures and just about anything else they can think of.Videos of such artists have circulated social media in recent years, garnering an amazement and appreciation of spray painting as an art form. Fortunately for Walnutport residents, they don’t have to travel to the streets of urban areas to experience this art form that has captivated audiences because Walnutport resident Bernie Kressley has created a home for it in the Blue Mountain area. Kressley tried his hand at the medium as recently as this past winter, gaining interest from videos he saw online. He emulated the the techniques and styles of those artists, while reaching into his own interests for inspiration to create work that is uniquely his own. “My extent of spray painting knowledge came from car models,” Kressley said. His limited 20

experience with spray paint didn’t stop him from pursuing his latest challenge. “I learned as I went along,” he said. His paintings feature comic book characters, picturesque sunsets, and depictions of otherworldly galaxies that he puts up for sale to those interested in purchasing. His art often reflects influences in his life, including his faith, elements from artistic role models such as H.R. Giger and Vincent van Gogh, as well as his own personal interests. “I try to be original,” Kressley said, noting the difficulties in creating truly unique work in modern art.“I have pictures in my head and I try to get them out.” Kressley was not a stranger to art prior to gaining interest in spray paint art. He is also a tattoo artist, musician, and acrylic painter. His interest in art came at an early age due to his interest in comics and tattoos. “I grew up walking into tattoo shops with my dad,” Kressley said. “I always felt at home with tattoos.” Kressley’s interest with art extends across multiple mediums, and he expressed the urge to continue to experiment with new forms and styles. his spray paint work is concerned, he eventually wants to make the switch from poster board to canvas, and even create mural-type work. He’s also interested in creating mixed media art, mixing spray paint and acrylic paints to create a style he has never seen done before.

THE TWIN TOWERS

The Twin Towers were tall, standing high in the sky, Way up among the clouds where the eagles would fly. They were known across the country, a highlight of New York, They stood for power and prosperity, the result of hard work. They swayed in the breeze, yet provided a vision so strong, Construction marvels to job providers; their history was long. The skyline of New York previously was just fair, But that soon changed, once the Twin Towers were there. They would have stood forever, until that dreadful day, When hatred and terrorism just took them away. Thousands of lost lives when the Towers went down, It could have in theory, wiped out the whole town. But from the moment of despair there arose such a theme, The country just came together and formed a hell of a team. Patriotism was renewed, and came forth from every town square, Along with all kinds of support, there was many a prayer. The healing will take time, for some a lifetime or more. People never expected such terror to ever reach our shore. Where once stood the Towers, now is called Ground Zero. And soon a new structure, where faith and patriotism will grow. Fall Care for a Healthier, Better Looking Lawn by MELINDA MYERS

As summer fades into fall it is time to help lawns recover from summer stress and prepare for the winter ahead. Continue to mow your lawn as long as it continues to grow. Grow cool season grasses like bluegrass, fescue and ryegrass 2-1/2 to 3-1/2 inches tall. Warm season grasses like bermudagrass, carpetgrass, centipedegrass and zoysia should be grown at 1 to 2 inches tall, while St. Augustine should a bit higher, 2 to 3 inches, for best results. Taller grass is better able to compete with weeds. And there is no need to cut it shorter for the health of your lawn. Mow often, removing no more than one third the total height. Leave these short clippings on the lawn. They will quickly break down, adding organic matter, moisture and nutrients to the soil. And as you mow you can take care of all those fall leaves at the same time. Shred the fall leaves and allow them to remain on the lawn. As long as you can see the leaf blades through the shredded leaves your lawn will be fine. And just like the clippings, they add nutrients and organic matter to the soil. Fertilize your lawn with a low nitrogen, slow release fertilizer like Milorganite (milorganite.com). University research has shown that fall fertilization is the most beneficial practice for home lawns. Less disease problems and slower weed growth means your lawns - not the weeds and pests - benefit from the nutrients. Fall fertilization also helps lawns recover from the stresses of summer because it encourages deep roots and denser growth that can better compete with weeds and tolerate disease and insects. Those in colder regions growing cool weather bluegrass, fescue and perennial ryegrass should fertilize around Labor Day and sometime between Halloween and Thanksgiving, but before the ground freezes. Homeowners in warmer climates growing warm season grasses like centipede, Bermuda and zoysia

should fertilize around Labor Day. Apply a low nitrogen slow release fertilizer then and in early October if overseeding the lawn. Make sure the last fall application is at least one month prior to the average first killing frost. Fertilizing later can result in winter damage. Weeds often gain a foothold in the lawn during the stressful summer months. A healthy lawn is the best defense. Even with proper care weeds can bully their way into the lawn. Try digging, root and all, to remove small populations of weeds. Weeding can be a great tension reducer and physical workout. If this isn’t possible, consider spot treating weeds

or problem areas with a broadleaf weedkiller. Those looking for more organic options may want to try one of the more eco-friendly products with the active ingredient Fehedta or Hedta. Whether using traditional or environmentally-friendly products read and follow label directions carefully. All these products are plant killers and can cause damage to other plants if not applied properly. Fall, when the lawn is actively growing, is the best time to core aerate or dethatch northern lawns suffering from thatch build up or compacted soil. Thatch is a layer of partially decomposed dead grass plants that prevents water and nutrients from reaching the grass roots. Use a dethatching machine to remove thatch layers greater than one half an inch. Or core aerate the lawn to create openings in the thatch layer and help reduce soil compaction to encourage root growth and allow water and nutrients to infiltrate the soil. Overseeding your lawn in the fall helps increase thickness and improves the overall health and appearance of the lawn. For best results, overseed directly after aerating. Begin implementing some of these strategies and soon you’ll be on your way to a healthier, better looking lawn for the coming growing season. Bumbe-block: A block at the bottom of a well that pump rests on; that will ‘wet’ the scythe! Dippel-dunisch Bohne: Why spotted beans only to the roosters; I missed something here. (If you are on to this one, please let us know.) Seiohr-bledder : Pig ear leaves are a weed; interestingly, some people actually used these to make a porridge.

Reading’s Black Crown Initiate rising through the Ranks of heavy metal By Justin Sweitzer

Reading, Pennsylvania is known for quite a number of things. It’s the home of the Reading Fightin Phils, a minor league affiliate of the Philadelphia Phillies. It’s the birthplace of the York Peppermint Patty, and the random home of the Japanese-style Pagoda which overlooks the city from atop Mount Penn. Surprisingly, the city is also making a name for itself as a birthplace of death metal bands who are making waves within the subgenre of heavy metal. One band, Black Crown Initiate, formed in 2012 and has already made great strides toward establishing themselves as a future death metal titan, by combining elements from multiple genres into an identifiable and unique sound that has garnered them an international fanbase. In the four short years of their existence, Black Crown Initiate has toured with prominent death and heavy metal bands, building a following outside of Pennsylvania and even outside the country. They have shared the stage with bands such as Behemoth, Crowbar, Napalm Death and Cattle Decapitation. The band additionally has an upcoming tour with

And while the names previously mentioned might sound frightening to listeners not familiar with more extreme variants of heavy metal, Black Crown Initiate’s work offers elements to appease any listener, drawing influences from progressive metal and ambient music, while effortlessly switching between clean and harsh vocals to avoid a repetitive drone that often leaves many death metal songs blending into one another. The versatile nature of the Pennsylvania death metal group is apparent in their second full-length album, Selves We Cannot Forgive, released in July of 2016. From the album’s opening track, the intensity of the band is on display through their use of strong, harsh vocals, ground-shakingly heavy guitar riffs and impeccable solos. The fact that the band couples these skills with melodic interludes, guitar-driven melodies and clean vocal choruses only adds to the strength of the album by the progressive death metal powerhouse. The album’s second track, “Sorrowpsalm,” displays the band’s ability to fluidly mix heaviness with a softer sound. The following track,“Again,” showcases the more mellow side of the Reading-based five-piece with ambient sounds and jazzy guitar solos accompanying the clean vocals present throughout the track. The band truly keeps the listener guessing as to what will come next. atmosphere that beautifully contrasts with the power of death metal. “Belie The Machine,” takes the listener on such a journey throughout the nine minutes of the song, the longest track on the album. The album’s title track, “Selves We Cannot Forgive,” features a piano introduction, a bluesy guitar solo and impressive drum work to boot with their harsh, guttural vocals, establishing the group as a fierce death metal mainstay who equally dabbles into unexplored, progressive territory. The album is a true headbanger, one that any fan of heavy metal will hold dear in their collection once given a listen. Judging by the band’s relentless touring with metal bands of all kinds, Black Crown Initiate is poised to grow their fanbase even further as the year continues. State Agency, Environmental Groups, and Universities Partner to Implement Precision Conservation in Pennsylvania submitted by JODY COUSER

The National Fish and Wildlife Foundation (NFWF) awarded funding to the Chesapeake Conservancy for a major restoration and conservation initiative in the Susquehanna River watershed to be conducted in partnership with the Pennsylvania Department of Conservation and Natural Resources, Susquehanna University, Bloomsburg University, and the Chesapeake Bay Foundation. The threeyear initiative will pilot a new approach to conservation with local partners in Pennsylvania’s Centre and Clinton counties to reduce nutrient and sediment pollution from nonpoint sources to improve water quality and scenic beauty. Once complete, the project may serve as a national model. The NFWF grant provides funding to help local partners plan their restoration projects using new high-resolution land cover and LiDAR datasets to better determine precisely where projects will create the highest-impact opportunities for conservation and restoration. The project will also help measure
