Skillet Cornbread In the bowl of a stand mixer with the paddle attachment, pulse to mix: ◊ 1 cup cornmeal ◊ 6 cups all purpose flour ◊ 2 ¾ cups sugar ◊ 2 tbsp, 1 tea baking powder ◊ 1 ½ tea kosher salt
In a separate bowl mix: ◊ 1 ¼ cups vegetable oil ◊ 2/3cup unsalted butter, melted ◊ ¼ cup clover honey ◊ 8 large eggs ◊ 3 ½ cups whole milk
Add half of the wet ingredients to the mixer, pulsing until just incorporated. Add the remaining wet ingredients and pulse until just mixed (batter will be slightly lumpy.) Heavily butter skillets before filling 2/3 full. Bake at 350°F for 15 minutes, then rotate front to back and top to bottom. Continue to bake for 6-8 minutes more, until tops are golden brown and begin to crack. At Decades we finish our “Northern Style” cornbread with Cinnamon Seared Pork Belly, Chipotle Grilled Apples, and Honey Brown Butter.

My inspiration for this cocktail involved using some fresh local ingredients with my favorite rye whiskey to create a cocktail that satisfied multiple different palate types. One of my favorite story books as a child was “James and the Giant Peach” by Roald Dahl. That was my inspiration for the cocktail name. I will have this cocktail featured at the Belvedere through the fall so stop out and give it a try!

John and the Nutty Peach INGREDIENTS ◊ 1 1/2 oz Knob Creek Rye ◊ .5 oz Intense Ginger Liqueur ◊ 1oz white balsamic shrub infused with local peaches, thyme, honey, and ginger ◊ 1.5 oz cold pressed blood orange and peach juices ◊ 1 fresh egg white ◊ 4 dashes of black walnut bitters
INSTRUCTIONS ◊ Add rye, ginger liquor, shrub, juice and egg white (no ice) in a shaker and DRY shake for 45 seconds vigorously. Add ice and shake for an additional 30 seconds. Double strain in a coup glass and add four dashed of the black walnut bitter on top. ◊ Garnish with a slapped thyme sprig and a dried blood orange wheel.

Lemongrass Halibut en Papillote (Serves 4)
INGREDIENTS
◊ 4 raw halibut filets, skin off ◊ 1 stalk lemongrass (bottom 5” only), peeled, pounded and minced fine ◊ 1 can coconut milk ◊ 2-3 kaffir lime leaves ◊ 2 carrots, peeled & julienned ◊ 1 -2 tbl of canola, grapeseed or avocado oil (neutral flavor) ◊ 1 bell pepper (any color or a mix), julienned ◊ 1 clove garlic, peeled & sliced ◊ 2 tsp fish sauce (more or less to taste depending on how much salt you prefer) ¼ cup white wine (for deglazing) ◊ White pepper to taste ◊ Cilantro for garnish
INSTRUCTIONS
The French word,“Citronnelle” means lemongrass in English. This fragrant herb grows all over the world, making it a truly global ingredient. One of our favorite fish dishes is a lemongrass and coconut milk infused halibut with sautéed vegetables “en papillote” (in parchment paper). This dish is fragrant, light healthy and absolutely delicious, perfect for summer.
1. Preheat oven to 400 degrees 2. Sauté julienned carrots and bell peppers in the canola oil until tender. Remove cooked vegetables and place in a separate bowl. 3. D eglaze pan with white wine, coconut milk, kaffir lime leaves and fish sauce. Lower flame and cook sauce on low heat for about 5 minutes until reduced half way. 4. T ake a piece of parchment paper that is about twice the width and length of the fish filet and place it on a baking sheet (sheet tray). 5. Place a portion of the cooked vegetables onto the center of the parchment paper, and then place 1 filet on top of the vegetables. Pour a 1/4 portion of the reduced sauce on top of the fish and vegetables. 6. Bring the two edges of the parchment paper to the center above the fish and fold it down a couple of times until closed. Do the same to the ends, folding the paper towards the center of the fish. This will create a “pouch” for the fish to steam in. epeat step 6 for the other filets, placing them on the 7. R baking sheet. 8. B ake for 10 minutes (or 7 minutes for every inch of thickness of the filet). 9. Remove from oven and open pouch carefully, as hot steam will escape once paper is open. 10. S prinkle white pepper and garnish with cilantro before serving. ENJOY!

Scallops,Carrot Puree, Late Summer Succotash INSTRUCTIONS
1. B efore beginning we pat 4 u 10 scallops dry between 2 towels and let come to room temperature before cooking. Slightly salt each side. 2. For our Carrot puree gather the following, 500 grams carrot, 100 grams water, 90 grams butter, 8 grams salt, 8 grams tumeric, 8 grams salt, 1 lemon. 3. Cut carrots and place in pot with all listed ingredients but lemon. Bring to a boil then lower to medium heat and simmer while covered. Cook until carrots are tender. Place all ingredients into a blender and blend until completely smooth and velvety. Add lemon and adjust seasoning if necessary. Set aside and keep warm. 4. Cook 200 grams (mixture of your choosing eg. Shishito pepper, Jimmy Nardello peppers, black eyed peas (cooked until tender), red onion, and radishes. Season with salt, aleppo pepper and 30 grams olive oil. Roast for 15 minutes 375F. Add to pot and add 30 grams butter, 5 grams lemon juice, 2 grams apple cider vinegar. 5. Finally heat a cast iron pan until very hot and oil begins to shimmer. Add scallops and cook until golden brown on eash side (roughly 2 minutes each side. 6. Plate the dish by placing 2 spoonfuls of carrot puree in the center of the plate. Place a nice dallop of of succotash in the center and plate scallops on top. Pair with a beverage of your choice and enjoy! The reason why we decided to showcase this dish is because we feel that it captures the vision and integrity of Plough. We pair meaty NJ Viking Village Diver Scallops with a rich, velvety and buttery carrot puree and a late summer succotash. The succotash changes freqeuntly depending on what is grown and in season from our friends at Fifth Month Farm and Fields Edge Farm. Each week we order from them and use different produce in our succotash. For instance we typically use some form of pepper, herbs, tomato, black eyed peas, and summer squash. What makes this dish so good is really great products during the peak of the season, prepared simply and when executed properly all of the flavors sing.

Lancaster Sweet Corn Soup with Basil Pesto SOUP
◊ 1/2 lb butter ◊ 8 sprigs of thyme, tied into a bundle ◊ 2 yellow onions, feather cut ◊ 2 garlic cloves, shaved ◊ 8 ears of corn, off the cob ◊ 2 cups milk ◊ 2 cups heavy cream ◊ 1 tsp turmeric ◊ 1 tsp salt ◊ 1 tsp white pepper 1. In a sauce pot, combine the butter, thyme, garlic, onion and sweat until cooked but no color. 2. Add the corn, simmer 1 minute 3. A dd the milk and cream and simmer until the corn is cooked, 5 minutes. dd the turmeric, and blend in 4. A a blender until smooth. (Make sure to remove the thyme bundle first) 5. Season to taste, add pesto (see below) & serve chilled.

The Chicken Nuggets at Exchange are one of our most popular items on our menu. They are a play on the Japanese dish Karagee Chicken which is a light and delicous way to eat chicken thighs and pairs perfectly with a lot of cocktails on our menu. We use corn starch to make the chicken extra crunchy and a pickle brine to evenly season and tenderize the chicken. They are a fun and approachable finger food that we put a lot of love into making.
Chicken Nuggets, Pickles, Togarashi Ranch, Hot Honey INSTRUCTIONS
1. P ickle Brine: 100 grams water, 75 grams distilled vinegar, 5 grams mustard powder, 5 grams tumeric, 15 grams salt, 15 grams sugar. Bring all ingredients to a boil and turn off heat and let cool to room temprature. 2. Divide brine in half and use one half for pickles and the other half for the chicken nuggets. Add 200 grams ¼ inch cucumber to pickle brine and store in an airtight container until ready for use (best if used covered after 48 hours) Add 300 grams trimmed and cubed chicken thighs and refrigerate brined chicken 24-48 hours. 3. H ot Honey: Simply mix 1 cup honey to ¼ cup sambal and stir until combined. 4. Togarashi Ranch: Combine 1 Cup Mayo, ¼ Cup Yogurt, ¼ Cup Buttermilk, 1 teaspoon chipped dill, 1 teaspoon chopped parsley 1 teaspoon cilantro, 1 tbsp togarashi powder. 5. Drain brined chicken thighs and place in corn starch for one hour before frying. Preheat canola oil to 350F and fry until cooked to 165F (about 5 minutes). 6. Place cooked chicken nuggets onto dry towel and season with salt and aleppo pepper. Stack in bowl and swerve with 4 oz pickles, 2 oz togarashi ranch, and 2 oz hot honey. Garnish chicken nuggets with thinly sliced scallions and enjoy!
