How We Got Rolling The passion behind How Do You Roll? is that of the two Yung brothers who have very complementary backgrounds. Together, the brothers combine more than 20 years of experience in business and food service and they put all of their talents to good use when they opened the first How Do You Roll? restaurant in Austin, TX. It quickly became the go-to choice for hungry locals for quick, tasty sushi, along with salads, soups, beverages, and even a Japanese ice cream for dessert.
Why How Do You Roll? Is So Special When people are craving sushi — but have little time for a meal — what are their choices? Grocery store pre-made sushi that may not be the freshest? YUCK! Pre-packaged big box store offerings? BORING! An expensive, time-consuming sit-down meal at an upscale sushi restaurant? OVERKILL! How about FRESH maki rolls, custom-made while they watch, using the freshest possible ingredients and with a variety of toppings and proprietary sauces they choose to create one-of-a-kind combinations?

A special rice mixer prepares rice, our exclusive maki machine presses the rice into perfect squares ready for further preparation – including adding seaweed or soy wraps and the selected fillings, then the hand-rolling process – while a third machine cuts the long rolls into 10 precise pieces. Yuen has been a successful Certified Financial Planner® with a B.A. in business administration from the University of Texas at Austin. The How Do You Roll? concept was his original vision, and as the Co-owner, his knowledge of management and finances has been crucial to developing a streamlined, effective restaurant concept. Meanwhile, brother Peter is a veteran restaurateur who started at the age of 8 by helping in his parents’ restaurant after school. As he grew and matured, he became an expert in Japanese cuisine with a special love for sushi and its ingredients, its special sauces and toppings.
